EDITORIAL Wow, how time flies...we’re coming to the end of 365 days and as we look forward to another 52 weeks, somehow I feel a lot of hope and inspiration. Yes, we’ve weathered the most of 2009 on a global recessionary climate and it’s time of the season to be more positive and to make a lot of pragmatic resolutions. One New Year resolution I’ve never failed to make: To rise above from the last....and indeed, to rightly rise to the occasion. Pushing myself to meet the requirements of my career resolution every year has gathered an assortment of sentiments: New refreshing experiences, much quality on the road and, of course, not forgetting the painful ones. A New Year resolution, in my view, is a genuine commitment that I make to a project or the reforming of a habit, often a lifestyle change which I will interpret as advantageous. These commitments normally go into effect on the stroke of midnight of January 1 and remain until fulfilled or abandoned. I will start with a cup of coffee, a paper and a pen, and reflect: What kind of New Year resolutions will I set for myself before the end of the year? Aiming for things that are truly important to me, not what I think I ought to do or what others expect of me. I must be realistic in setting achievable goals. Experience shared, I’ve to admit that nothing big can be accomplished over 1,440 minutes every day, it requires probably 1,000 tiny steps to happen throughout 365 days. A New Year resolution is only a starting point. I must prepare to revisit my plans and expect them to change, for better or for worse. Indeed, life has a funny way of throwing the most unexpected things at us, and flexibility is required to complete anything but the simplest goal. Sometimes the goal itself will even change. Most importantly, recognise partial successes at every step along the way. Just as a resolution isn’t accomplished the day it starts, neither is it accomplished the day I reach my goal. Rather, it’s accomplished in many small increments along the way. So, let us be pragmatic and acknowledge these incremental successes as they come. A good ‘ole truism goes: Where there is a will, there is a way. Never give up on your resolutions. Never give up on the dream just because you think you cannot rise to the occasion. Believe in miracles and, most importantly, believe in yourself. My friends, are you ready for the right route to your 2010 resolution?

I opted for both facial and body treatments for our review. After consultation, I tried the Screw Driver Shocker, which was designed for deep, soothing tissue massage. Black Obsidian was chosen as the accompanying crystal whilst Rose Quartz was used for the facial.

I discovered that the advantage of using crystals is that they are able to reach into certain tissues of the body more deeply than bare hands. The cool and smooth surface of the crystals also created a different kind of sensation that is both soothing and relaxing. After the treatment, I noticed a flattering glow in my skin. Class X’mas with

sparkling Cristal A

t first glance, it is easy to see Cristal Lim as only a rich “tai-tai” with an enviable life. It is hard to imagine that the graceful lady with an amicable smile on her face would have gone through any hardships in life.

But her inner circle of friends know the real secret: Cristal’s success in life was forged from a life of dramatic war-torn ups and downs, perfectly worthy of a Hollywood movie script.

FROM ARISTOCRAT TO REFUGEE

Cristal was born in a well-to-do family in Vietnam but good days did not last long as the Communist regime took over and confiscated the family’s assets. Her father was arrested and jailed, which left the family broke and homeless. Her mother had to burn the midnight oil to support the children and the future of the family (which was deemed capitalist) in a communist country was bleak. The only sane option was to flee the country by boat once her father was released. Travelling by small boat was a life and death decision in those days. Tears welling in her eyes, she says: “We took a family photo even though we were so poor because we wanted something as a keepsake in case any of us we did not survive the trip. To make our clothes for the photo-shoot, we ripped down the curtains!” After several failed attempts, Cristal’s family finally escaped to France after being picked up by a passing Dutch ship. There, a new life began as the family struggled to survive, with absolutely no knowledge of foreign language and culture.

But it was a question of life-or-death and education was the most realistic option to a better life. A fervent desire to succeed pushed her through school by working and fighting for scholarships. Taking inspiration from her gutsy parents, she graduated from a prestigious university and began her climb up the corporate ladder. When she met her husband, who was then a young lawyer, she gave up everything in Europe and moved back to Asia, where she literally started from scratch. “It doesn’t mean that you are poor, you will always be poor. If you want something, you can have it as long as you have faith and integrity,” she says passionately. Cristal is truly a crystal role model. Her life experiences have made her believe in living life to the fullest. As the Business Development Director for Delfi Wines Singapore, work took her to fancy dinners where she rubbed shoulders with the upper echelons of society. In between busy work commitments, she found quality time for family, friends, charity and personal hobbies, such as yoga and painting. “Cristal would be busy with work but she’s capable of coming up with this at the end of the day,” says one of her closest friends, referring to the beautifully set-up table complete with romanticallylit candles. The food that Cristal prepared matched restaurant standards. A special skill she perfected from the love of hosting guests.


FRENCH ASIAN HEART

Being Asian by birth and European by upbringing has influenced Cristal’s cosmopolitan life in many ways. She says: “People who do not know the French may think them as arrogant but once you know them, you’ll realise that they are one of the most warm-hearted people.” It is this understanding of both Asian and French cultures that has allowed her to deal successfully in business. As a classic example, authentic Vietnamese food would be alongside real French ratatouille on Cristal’s dining table. Christmas is usually celebrated in deep French tradition. The custom of lighting candles is a heartwarming practice her family started in France even as they maintained Vietnamese customs at home because her father believed that it was the “soul of a meal”. Now for the main course: We tried Cristal’s authentic Vietnamese Spring Rolls and loved it so much that we asked her for the recipe to share with you. Healthy and easy-to-prepare, this will be the perfect starter dish for your Christmas and New Year parties. Remember to light some nostalgic candles for a complete celebratory mood to feel the “soul of a meal”!

Authentic Vietnamese Spring Rolls with Prawns and Pork (“Goi Cuon”) with Yellow Bean Curd Sauce and Chili Dip. Ingredients: -

1 cup of warm water 500g of small prawns peeled, deveined & cut in half length. Cooked pork belly & cut into small dices of 2cm. 20 pieces of rice paper 200g of rice vermicelli 1 cup of fresh mint 1 cup of Basil leaves 1 cup of Coriander leaf 1 cup of bean spouts 1 medium head of head butter lettuce 1 bunch of Chinese chives, cut into 6-8cm lengths.

Preparation:

Put water and one tablespoon of cooking oil to boil together. Add in the Vietnamese rice vermicelli for three minutes, take it out and drain with cold water to keep it fresh and prevent them from sticking together. Wet the rice paper with warm water to soften it and wait for one minute before placing a bit of fresh mint, basil leaves, coriander leaf, bean spout and the lettuce leaves on top. Place four pieces of diced pork and two pieces of prawns on these vegetables with the Chinese Chives on top. Add about one tablespoon of rice vermicelli before rolling them up firmly. Serve with yellow bean curd sauce.

GENTLE ʻFUNʼ WINES W

ith names like Sticks & Bones , Wild Pixie and Cenosilicaphobic Cat, it’s hard not to take a second look when you spot d’Arenberg wines on the shelves.

Getting to know their classic labels is akin to knowing the family of winemakers behind it. Every label bears a story that is personal to the wine or the family. For example, The Laughing Magpie was fondly named after the kookaburra pet belonging to the chief winemaker’s daughter.

That approach has yielded much for them even though it might be more labour-intensive and time consuming. They were named the Winery of The Year 2009 by Wine and Spirits magazine, an elite honour that adds to their long list of global awards. FUN WITH WINES “We are serious about making wine but once it hits the bottle, itʼs about having fun. We want people to remember the fun side of it. We want to give the wines some personality.” Nick explains the choice of unusual wine names.

The reactions to the names have been mixed but before you dismiss the move as frivolous, listen to winemaker and brand ambassador, Nick James-Martin’s prophetic words: “The names may be funny but we are dead serious about the wine inside.”

The first wine we tried was a 2009 sauvignon blanc named Broken Fishplate. There was certainly nothing fishy. It was refreshing and fruity. After the wine breathed a little, it revealed more of its charms through a sweet bouquet and light taste. Just perfect for warm evenings and cosy gatherings.

FAMILY IN WINE The d’Arenberg legacy started in 1912 when Joseph Rowe Osborn and his son, Francis Osborn, bought two sections of land in the hills just north of Gloucester and Bellevue, now known as McLaren Vale, and started their business in grapes and vineyards.

The red we had was The Laughing Magpie, a dark-looking 2007 Shiraz (90%) and Viognier (10%) blend. The wine was full-bodied and smooth with an intense aroma. Definitely a great addition for the Christmas dinner table.

Now, nearly a century of winemaking and four generations later, the Osborne family continues to uphold their tradition of gentle winemaking. No fertilisation, cultivation or irrigation is used wherever possible, thereby achieving natural soil flavours with very low yields. All grapes are basket-pressed and the age-old technique of foot treading can still be found in their winery. Using smaller parcels of land to capture the unique small-batch character of wines and the true flavour of the McLaren Vale region, the result is a staggering collection of 38 labels with varieties and blends not commonly found.

Both wines can be found at wine shops and the affordability of both wines makes them accessible for regular drinking or gifts. If you would like to know the stories behind the labels, go grab one and read behind the bottle! There’s bound to be big smiles in polishing the bottles…

It was incredible to visit the workshop to feel the sense of handcraft tradition, where some extraordinary craftsmen worked the fine leather, recreating the magic that belonged to the Gucci family.

TODS PRESENTATION FOR MILAN FASHION WEEK One of the highlights of the Milan Fashion week: The respected Italian house of TODS presented their collection in the beautiful Villa Necchi Campiglio at Via Mozart. This was a very modern villa for the Necchi industrial family of the late 1800’s, with influences of modern ideas of luxury and elegance: The grand décor consisted of prestigious materials, central staircase with deco motifs and a beautiful garden where the ‘fashionistas’ paraded. As I emerged into the main hall of the Villa, there was an amazing display of the ‘D’ Bag Collection in various leathers. A casual and elegant tote in Calf and Crocodile!

TRIP TO MOSCOW FOR RUSSIAN FASHION WEEK The Russian capital was an intriguing experience: Moscow, the pulse of the new Russia provided the thrill of tasting its excesses and a heady mix of historical atmosphere and here-and-now action. The Russian Fashion week proved to be a success. Their niche market for the super-rich especially for the fur and exotic leather industry was eye-catching. Italian renowned designer Vinicio Pajaro had a glamorous catwalk showcasing his FW2010 collection. But what caught my eye during a recent trip was not the bustling No. 1 city, Seoul, where the capital’s heartbeat beckons, but at Gyeongju, where I had the privilege to climb Mount Namsan. Located about 400km from Seoul, Gyeongju was the capital of the ancient Silla kingdom which ruled most of the Korean Peninsula between the 7th and 9th centuries. It is home to so many royal tombs, archaeological sites and cultural properties that the city is known as the “museum without walls”, making it one of the most popular tourist destinations. Climbing up a mountain is not a piece of cake and after taking tips from our hanuk (traditional Korean housing) owner, we got going to a popular hiking route on Mount Namsan, situated in the heart of Gyeongju National Park. It’s like a dream come true: With nearly 40 valleys winding down from Geumobong Peak (468m), Gowibong Peak (494m), and other peaks, Namsan is home to over 100 temples, 80 stone Buddha statues, and 60 stone pagodas scattered across the mountain. It was considered sacred by many during the Silla Dynasty. For Singaporeans unfamiliar with mountain-trekking, make it a point to get the right hiking gear. We learnt the tough, if not painful, way never to go up the mountain without hiking shoes. The uphill section of the climb was relatively easy although it did call for a little bit of stamina. Other than some high steps, the route was rather populated and we met many friendly locals along the way.

We reached the Geumobong Peak after 90 minutes and was amazed at the lush scenery from the top while we had a picnic. The view was a natural watercolour painting of green, red and yellow shades drawn by the hands of autumn beauty. The magnificence of nature was humbling. Yet, it was on the way down that really marked this trip, with a genuine lesson in mountain-hiking! We were shocked to find the absence of a reasonable path for the way down as recommended by the hanuk owner. Instead, we were confronted by slippery sandy slopes and rocky surfaces. And the incompatibility of our shoes began to show from this point onwards as we struggled not to slip off the smooth sand and rocks. Luckily, we received help from a few locals during two of the most difficult downhill stretches. They were like Good Samaritans and showed up right when we needed them and left for their picnic just when the going got easy. But they later caught up and helped to get us to ground-level. Yes, along the way, we slipped, fell and literally struggled our way down countless slippery and steep slopes. It was then I realised that climbing a mountain is just like life: When left with no way back and only one way ahead, you can and will go forward. We were so overjoyed when we reached ground-level that we jumped and hugged each other for joy. Yes, after conquering a mountain, you feel like you can do anything in the world. Despite the harrowing debut experience, I look forward to the challenge of another mountain climb. But surely with a good pair of hiking shoes!

THINK of Big O, drool-worthy and heavenly desserts come to mind. But there’s a lot of delicious spice beyond the American-styled desserts in the wholesome food with authentic European influences. One unsung hero in the Big O kitchen is the Rotisserie cooking method. This is a style of roasting where meat is skewered on a spit - a long solid rod used to hold food while it is rotated and cooked slowly over steady heat. The juice from the meat continues to glaze over the meat because of the motion of the rotation which prevents the juice from dropping off the meat, eliminating the need for additional saturated fat, oil or butter. This method is not only healthier but also produces flavourful dishes with a distinctive aroma. Relish the super feel of the meat becoming so tender that it literally falls off the bones and melts in the mouth. Try the Mustard and Rosemary Marinated Lamb with tomato chutney and ratatouille of vegetables. The meat is marinated with a secret recipe of herbs and spices for about 24 hours before it is slowly roasted to perfection in the rotisserie. IFE is literally sweet at the newly-opened Dessert Asylum, or popularly known as Tobyʼs at Parkway Parade.

A staggering number of over 20 different desserts and many more main course choices makes it the perfect candycoated venue. The first thing that caught our eye was Toby’s high ceiling or more accurately speaking, the lack of one. Located on the second floor overlooking the main lobby area, Toby’s is inviting with its bright and airy open concept layout. The interior is mainly decorated in black and purple with touches of funky artwork, creating a casual but modern and stylish ambience. Go for the best: Try the Stewed Pork Burger. Instead of a regular patty, you will find a slab of succulent stewed pork that some may recognise as the Chinese “kong ba”. The heart of this East-meets-West dish is the dark sauce which is savory with hints of sweetness. It’s a sauce you will not find anywhere else – the secret recipe originates from the owner’s mum. Remember to leave lots of room for your sweet tooth. Sink your fork into the Leaning Tower of Toby, an impressive

tower consisting of layers of feuillete, fresh cream, fresh berries and finally piled high with vanilla ice cream. Feel free to have some fun. The owner, Miss Wendy Choh, says that this is one dessert meant to be eaten “messily”. Mudpies are commonly found in dessert menus but the Lord Vader mudpie is anything but common. Made from rum and raisin ice cream with double choc ice cream, chocolate chips and waffles bits, the dessert made us sit up with the unexpected addition of Grand Marnier. This fragrant liquor balances the other ingredients and compliments the occasional burst of sweetness from the raisins in the ice cream. Sinful perhaps, but absolutely heavenly! If you prefer something lighter, order the Sour Puss. This bright yellow tart, made from real lemons as insisted by Miss Choh, is an elegant dessert that will create a light but refreshing finish to your meal. Despite being new, Toby’s already has a list of passionate reservations.

RAMEN noodles are worth their weight in gold for Japanese food lovers.

And now right at your doorstep in Singapore, you can experience one of the best in the world, in arguably the first place outside Hokkaido to serve these legendary specialties. Welcome to Tampopo Restaurant at Liang Court. The owner, Mr Takagi, explains that serving this celebrity-status original noodles became a reality after crispy negotiations with the governor of Ebetsu City, famed for its superior flour, and where throngs of people make a cherished gourmet-trip for quality Ramen noodles. As a food lover who hopes to share authentic Japanese cuisine, he insists on using as much of original, high quality Japanese ingredients in his dishes. The noodles can be found in the Hokkaido Ramen section of the menu. We tried the Miso Deluxe

MISO DELUXE RAMEN

Ramen, very reasonably priced at $14.80. Each bowl comes with a generous serving of noodles swimming in full-bodied pork bone stock soup. The dish is topped with a large piece of thinly-sliced chashu, half boiled egg, sweet corn and butter which adds a rich and sweet finish to the overall taste. Ramen admirers looking to try something different should also order the Kyushu-style Black Pig Shabu Ramen, which is one of the owner’s creations. The noodles used for Kyushu Ramen are thinner, firmer and served in a pure pork bone stock soup, that takes two days to boil. The Shabu Ramen is served with thinly sliced pieces of Black Pig pork and vegetables. To cater to local tastes, chili flakes are added for an appetising punch to the flavoured dish. Go for the rip-roaring Black Pig Tonkatsu. The owner, with a deep passion for the dish, researched on the right ingredients and preparation methods.

Notably, the Black Pig used is self-imported premium quality pork that is well recognised for its perfect balance of juiciness, flavor and tenderness. The cutlet is fried to crispy perfection on the outside but tender on the inside without being overly greasy. To add a cool compliment to your meal, try the Hokkaido Cold Tofu. Made from Hokkaido beans, the porcelain white, smooth tofu looks so pretty that we almost couldn’t bring ourselves to eat it. Upon cutting into it, we discovered a thick and dense texture which is not commonly found in tofu. The real surprise comes in the taste: Faintly, if not heavenly, like sweet milk.
