A

ll these years, I knew my dad as a man of few words. One sentence he did often say was: “Son, be careful when you are away from home.” When I was younger, these few simple words did not mean much to me and I hardly paid any attention to it. How time flies! Today, as a father of 4 children, I will tell my kids something similar before they step out of the house: “Be careful, call me or sms me when you arrive at the venue.” Whenever they did not contact me, my mind would feel uneasy. Worries would affect my emotions and I would lose concentration in whatever I was doing. As I am overseas more often these days, I would call home every day just to listen to their voices. It was after listening to their voices and knowing they were safe and happy in whatever they are doing that I would feel a sense of happiness and peace. I now understand the love between a parent and his children is a powerful bond that many things in this world cannot replace. Whenever my determination falters from the challenges of making a living for my family and myself, it is my commitment to my children that give me the extra strength to overcome tough times and look forward to better things. Dear Dad, now I understand what you meant when you said, “Son, be careful when you are away from home.” Thank you for giving me this special love and care. I cherish it even more after becoming a dad myself. Friends, Father’s Day is close. Do you have any plans to spend time with your dad? Try to recall food and places they like because this simple gesture will mean a lot to them. That’s coming from someone who is also a Dad. Remember the days when Dad was always our hero and we will listen to their stories wholeheartedly with our innocence of youth? Today, he might speak slowly so do give him time and listen attentively. However there’s something that doesn’t change no matter how much time has passed: My Dad has been, is and will always be my hero.

Father to a Father

Dear Dads of the world, Do you remember the day you stepped into fatherhood and realise that your life has changed completely from that moment forth? Are you at the stage where you are watching your children grow and hoping that they will go on to lead happy, fulfilling lives? Or are you at the stage where your children have grown up and lead independent lives away from you? Are you perhaps the father of a child whom you do not wish to be in contact with, whether voluntarily or involuntarily? Or are you like me, a father who is guilty of spending too much time on making a living rather than spending a little more time on building my child’s life? As Father’s Day comes round, I ponder: What does it mean to be a Dad? A child is a unique combination of his or her parents and bears the genetic signatures of the generations before them. More than cells and genes, each child embodies and carries the hopes and dreams of those who have walked the path of life before his or her entrance to the world. Jun - Jul 2011 eMAG

I used to think I was the one who had much to teach them but I learnt that as much as we educate our children to prepare them for the world, it is our children who teach us the beauty of living. As we grow older, we become more weary and wary. We enrol our kids in more and more courses so that they may be able to survive under the relentless pressures of society. Yet when I see my children marvel at animals at the zoo and break out in heartfelt laughter over harmless tickles, I am reminded that life isn’t always about moving ahead. It is also about being able to pause and find beauty in the smallest things. While we may have hopes for their future, our children also represent the power of dreams and imagination. Whether you are 5 or 50, they remind us that innocence remains a precious virtue that is vital at any stage of life.

Yet, I often wonder if I had done enough? After all, no amount of kind advice or guidance from books can prepare you for fatherhood because every child is different. There were times when the words “tomorrow” and “next time” popped up in my head or in conversations with my children. It is only after that I remember that missed opportunities of being with our children are irretrievable and irreplaceable. It is only when time is lost that I begin to truly understand the impact of

procrastination. The absence of a parent in a child’s life creates a void that is hard to fill yet it also the same void that only we can try to soothe.

In being a father, I revisited the meaning of being a son. My father was a traditional man who spoke little. Now I begin to wonder if he too, had wished for more communication between us. I wonder if he too, had wished he had reached out more to us and that we had reached out more to him in return? That being said, past disappointments should remain where they are – in the past. It is far more important to use this past as a guideline for the future. A hug today means much more than giving the latest toys to your kids because the pain of neglect hidden deep within our children’s hearts is something that may never go away. Time invested with your kids will reap rewards beyond imagination. Fatherhood is risky business. There is room for lots of trial and errors. There are no guarantees that putting in your best will produce the results you want. Yet, it is all that we can do. Perhaps like my dad, I hope that my children will remember that between all the things I have forgotten to say or do, that I love them more than anything in the world. So Dads of the world, Happy Father’s Day. As you celebrate this important role of your life, please take the time to show some love to the people who made it possible for such pride and joy to exist – your beloved children.

inca Marisanchez is one of most stunning and idiosyncratic vineyards in the Southern area of Castile La Mancha. Located in the historic fields of Campo de Montiel, it has preserved, from medieval times, the three quintessentially Mediterranean crops: the grapevine, the olive tree and cereals. It is in the heart of Finca Marisanchez that the second generation family cellar, Bodegas Real, has stood since 1989. Our goal, from the beginning, has been to transfer the concept of the “Chateau” to the lands of La Mancha and to make wines of high quality from our own vines. FLORA

The environment where the Marisanchez property is located is dominated by the typical sclerophyllous forest sub Mediterranean, in which its predominant species is of the Quercus (holm oaks, shrubby oaks, oak trees etc). All kinds of plants and herbs such as thyme, rosemary, sage, marjoram and broom also flourish. One can also find leafy poplar groves and bulrushes along the watercourses. These, together with the diversity of the spices that inhabit this zone, make a unique and spectacular habitat.

FAUNA

The proximity to the Jabalón River and the dam of the “Small Head” make the

Marisanchez land a unique and wellknown wildlife reserve. It is also the family’s game preserve. We can find species of small game, like rabbits, hares or wood pigeons. It is also possible to run into the occasional fox or wild boar. The queen of this environment is, without a doubt, the coveted red partridge, to which Bodegas Real has dedicated its founding emblem. Due to the proximity to water, there is an abundance of aquatic birds, including mallards, ducks, heron y egrets, and even storks. Birds of prey such as eagles, kestrels and owls are also common. Marisanchez also features an abundant aquatic life made up of cyprinids, carp, flench, tench and barbell, pike, black bass and the ever present American red crab. It is clear that the Marisánchez Estate is a privileged natural enclave that is maintained and preserved through time.

descendent from a family of chefs, it appears Chef Chan Kwok from Hua Ting Restaurant was born to cook. Having honed his skills in acclaimed hotels and restaurants across Hong Kong, Macau, Australia and Singapore, Chef Chan is no stranger to culinary greatness.

As one who believes in commitment and passion towards one’s work, Chef Chan has continued to uphold traditional Cantonese cuisine while pushing new frontiers by embracing new and exciting ingredients to create unique dishes. We caught up with the warm and humble man, who is also three-time Asian Cuisine Chef of the Year and this year’s Chef of the Year at the recent Asian Gastronomic Awards of Excellence, over tea and find out the secrets behind his success.

How do you feel after winning the awards, especially since this is your third time winning Asian Cuisine Chef of the Year? Of course the whole team and I feel very happy. I wasn’t expecting it but it was made possible with the whole team’s effort. It is a great honor to win the award three times.

Do you feel greater pressure to excel after winning the awards? There was definitely greater pressure after winning the awards previously. However, even without the recent win, the pressure to continuously improve ourselves also exists in our daily work. New breakthroughs are important but it is very important to maintain the consistency and quality of one’s work as well.

How do you continue to create breakthroughs for yourself? It is necessary to have expectations for yourself and work closely with your colleagues by listening to their opinions and also sharing your expectations with them so that everyone can be on the same pace. In order to present different experiences for customers over time, I do research and exchange ideas with my peers. Different people, like our seniors, will be able to give us different perspectives to think about.

What are the qualities that a successful chef should possess? To me, dedication is very important. It is also necessary to listen to others’ opinions and be open to suggestions and ideas from other people. Being a chef is a tough and dirty job but if one is willing to work hard, one would definitely improve over time.

n recent years, there’s been a growing trend of restaurants setting up shop away from the hustle and bustle of town, preferring instead to leave their footprints in quieter, more “rural” neighborhoods such as Dempsey and Rochester, which have become the new hip places to eat, play, see and be seen. Seafood veteran, House of Seafood, has joined this trend by opening its third outlet at Cosford Road in March this year. “Taxi drivers who didn’t know that there was a restaurant here were shocked to see the long line of cars parked outside.” says the staff.

Garden Dining Unlike its earlier branches, House of Seafood at Cosford adopts a garden dining concept with both indoor and outdoor dining areas on a spacious piece of land in the middle of natural greenery. “It was a big decision but our customers have been requesting for a bigger dining space. Personally, I also wanted to provide a different dining experience for 22

our customers with more space and free parking.” says owner, Mr Francis Ng.

The outdoor area consists of spaced out individual pavilions where diners will be able to enjoy their dinner with greater privacy. The landscaping, which took over a year to complete, was thoughtfully designed by the owner himself. Besides lots of greenery, the alfresco area also includes water features, a children’s play area and even a rabbit pen which proved popular with kids when we were there. One would also be able to watch planes take off without worrying about noise as the restaurant faces a runway but remains far enough for the sounds to be kept to a minimum. Walking around the garden feels more like strolling in someone’s backyard than a restaurant. The overall feeling is calming and welcoming but still classy. If outdoor dining is not your kind of thing, step into the air-conditioned indoor dining area. One is still able to witness the natural environment outside and the calm from the outdoors continues into the tastefully decorated dining hall. Despite having opened only barely a few

months ago, the restaurant has quickly won a following of fans. When we were there, all the tables were already reserved for that evening. It is little wonder why. House of Seafood is famous for their black pepper and chili crabs. In fact, the Chinese name of the chain, 螃蟹之家, literally translates into “House of Crabs”. Besides crabs, there are many other wonderful dishes to complete your dining experience. We particularly loved the Pork Ribs with Honey Sauce, which according to the chef, is requested by nearly every table when they visit the restaurant. While this dish is found in many Chinese restaurants, the chef has managed to add a mysterious touch that sent us packing more of it home to share with the folks. The chef also believes in constantly finding ways to produce more intriguing and delicious food for the restaurant’s customers. We’re certainly going to be one of those heading back again!
