And seeing that eating is such a great “passion” with most journalists, the editorial team at the PE Express was truly inspired by all the different food programmes that were showcased on television this year. In particular we were mesmerised by the talent on Masterchef South Africa and it was fast becoming an institution to discuss and analyse the pre-

Needless to say, it was quite a highlight for us when one of our favourite contestants (apart from the winner, Deena) – Sarel Loots (“Sarel van Sabie”) – shared a mouthwatering sweet chicken dish with us for our readers. And we also had the opportunity to interview Masterchef SA judge, Pete Goffe-Wood, and he too shared a tasty fillet of beef recipe with us for Braai Day. That is why when planning for

So we threw in a name for our “chefs” (the Express Chefs), mixed in some Christmas to the theme and added a dash of flair and came up with the

idea of Cooking for Christmas! So this brings us to the exciting part – sharing some of our favourite recipes that you can prepare for your family this Christmas. We each prepared a dish for the photo shoot – Nceba Dladla prepared the starter,

Chicken livers can provide that delicious starter (meal) for Christmas that you would want to share with the people you love. I call this a recipe with simplicity. It is simplicious!

This recipe is ideal for a summer salad with a whole lot of zing. It can be served hot or cold. Add beef mince or chicken strips to serve as main meal.

This recipe will entice even the fussiest of eaters to ask for seconds. What is especially nice, is that it is a one- pot dish that you can place in the oven and forget about until it is cooked. One can also replace the vegetables used in this recipe with any vegetables of one’s choice.

A TASTY leg of lamb is always a must at our family’s Christmas table and a while back I discovered Jeremy Mansfield’s delectable Leg of Lamb á la Grecque (Zhoozsh!).

Ingredients

1/2 packet noodles (screws) 1 green pepper, diced 1 onion, diced 2 tsp hot curry powder 7ml salt 15ml cooking oil 1 tin (115g) tomato paste 1 tin Indian Style diced tomatoes 125ml sugar, 125ml vinegar 125ml oil

500g Chicken livers A big onion Salt and Pepper Oil Fresh rolls Side plate Lettuce Tomatoes Cucumber and Salad dressing

Method

Wash your chicken livers and Fry them till they are golden brown Add salt and pepper to taste Fry for 10 to 15 minutes. For a Green Salad you have your tomatoes, cucumber and lettuce. Grate and add Salad Dressing. And Enjoy!

Ingredients

250g butternuts, chopped 250g baby marrows, chopped 4 potatoes, chopped, peeled and half cooked in microwave for about 8 minutes 1 punnet of mushrooms, sliced 1 packet of brown onion soup powder 250ml cream 250ml milk Garlic

Cook the noodles until soft but firm. Heat oil in a frying pan and fry onion and green pepper until onions are transparent. If you would like to add meat to the meal, add the meat of your choice to the green pepper and onions and fry. Add salt and pepper and fry a little. Add curry powder and cook. Add tomato paste and Indian Style diced tomatoes and cook through. Add sugar, vinegar and oil. Cook through. Let mixture cool a little. Pour over noodles and mix.

Method

1. Place butternut, baby marrow, potatoes and mushrooms in an ovenproof casserole dish 2. Mix soup powder, cream, milk and garlic and pour over the vegetables. 3. Cover and bake at 160 to 180 degrees Celsius for about 1 hour or until vegetables are cooked through

4kg Leg of lamb (I used a smaller one) 10 Cloves of garlic 1 Cup of flour 3 Teaspoons salt 2 Teaspoons pepper 3 Lemons 6 Tablespoons olive oil Approximately 2000g fresh origanum

Method

Take the leg of lamb and make about 10 incisions in the lamb. Crush the garlic and mix in 4 teaspoons chopped origanum. Stuff the lamb with this mixture. Mix the flour with 2 teaspoons of salt, 2

teaspoons pepper and 2 teaspoons chopped origanum. Turn the lamb in this coating. Heat some olive oil in a baking dish on the stove and seal the entire leg. In a blender, mix the juice of 3 lemons, 6 tablespoons olive oil, 1 teaspoon salt and 100g fresh origanum, until thick. Pour this mixture over the lamb and cover it with tin foil. Place it in an oven at 100°C for 12 hours*. Turn over once to re-cover with the sauce. When you are ready to serve, remove the tin foil and bake at 200°C for 30 minutes, turning once. , I did not have the time to cook the lamb for 12 hours, so I just turned up the temperature to 180°C and cooked the lamb for about three hours (or until done) and it still came out juicy and tasty. , All the ingredients were generously sponspored by Checkers (Greenacres). And seeing that worldrenowned chef Gordon Ramsay himself said “Now that’s a butchery I’d buy from!” we were much excited to try out their Certified Natural Lamb.

AS a busy mother of two young children, I decided to opt for a quick and easy dessert, and this recipe was just perfect. (Serves 8-10 people)

Ingredients

1 x 200g packet ginger nut biscuits ¼ cup (60ml) margarine, melted 1 tin (395g) Caramel Treat 2 cups (500ml) Ellis Brown Creamer ½ cup (125ml) boiling water

Method

Crush the biscuit finely and mix with melted butter or margarine. Press it into a deep 20cm pie dish. For the filling: Combine Ellis Brown Creamer and boiling water. Stir until smooth. Chill. Beat Chilled Ellis Brown Creamer until thick and creamy. Add caramel condensed milk and beat until smooth. Pour the mixture into the base and refrigerate or freeze (preferably overnight). Decorate with a dollop of cream if desired (best to add this just before serving).

Christmas party at Dora Nginza’s Burns Unit NCEBA DLADLA THE Burns Unit at the Dora Nginza Hospital in KwaZakhele held a Christmas party for all its patients on Thursday last week. Both young and old patients had a ball singing Christmas Carols and dancing as well as being treated with presents from Santa Claus. “This Christmas Party was organised by the Burns Unit Staff in conjunction with the Hospital Board members to make the patients in this painful ward feel very special,” said Assistant Deputy Nursing Services Manager Patricia Magida. Seven year-old Philasande Maleke’s mother Nombuyiselo thanked the hospital for the good gesture. “This is wonderful. I did not expect it,” said Nombuyiselo (47) of Motherwell. “It’s not only for the present that I am so happy. It’s about the love and care. I’ll be going home a happy man,” said Vusumzi Xotyeni (40) also of Motherwell.

According to Magida, the Burns Unit’s patients come from Region A which starts in Port Alfred to Somerset East up to Graaff Reinet. “In this region we are the only hospital that has a 24-hour specialised unit dedicated to assist burn victims,” said Sr. Magida, adding that their current number of patients was less than the 48 the hospital caters for - as it was summer which means a decrease in burn incidents. The unit is a multi-disciplinary facility and has doctors, physiotherapists, occupational therapist, dieticians, psychologists and other professionals working together with family members to ensure the total healing of the victim.

Meet Isipho, our front page Christmas Baby NCEBA DLADLA PE Express Indaba’s 2012 Christmas baby Isipho Kombana brought joy to his mother, father and the rest of the family when he was born on 18 January. Isipho, who is the second child of Monwabisi (33) and Yandiswa (30) Kombana of KwaZakhele, is a very happy and playful child who has given his father hopes that he will represent South Africa as a Bafana Bafana player one day. “If he is not a star musician,” said Monwabisi proudly. Isipho’s name means “The Gift”. “He learnt to say mama, tata, baba very early in his (young) life,” said Yandiswa who has learnt to play second fiddle to her Abadare Cables employee husband, Monwabisi for Isipho’s attention.

Thunzana launches debut gospel album at Nangoza Jebe Hall NCEBA DLADLA SINGING teacher Nomthunzi Siyongwana will be launching her debut gospel album at the Nangoza Jebe Hall in New Brighton this Friday 21 December. Siyongwana of Algoa Park, otherwise known as Thunzana to friends and music lovers, has just released “Ndim Lo Ndiyabulela”, a 9-track album which was recorded at De La Rey Recording Studios. It was produced, mastered and engineered by Mzwanele Maqosha. “Music lovers have been asking me when I will be releasing the album, and now here it is,” said Thunzana of her African Rhythm Gospel album with a jazzy feel. Thunzana, who is a teacher at Lungisa High School in KwaDwesi, penned almost all the songs. “This is a thanks-giving album with songs that give hope in a hopeless situation,” said a proud Thunzana who also had a stint as a teacher at Cingani High School in Motherwell. She says that she has been receiving a posi-

tive response from people from across the province, who have had an opportunity to listen to the CD. Supporting acts at the launch include True Worshippers of Motherwell and Mzi Bebula. The show starts at 6pm and admission is R65.

KwaZakhele elderly treated to a feast NCEBA DLADLA MORE than 300 unemployed community members from Kwazakhele in Port Elizabeth enjoyed a scrumptuous meal last Tuesday afternoon, thanks to an NGO, Dorcas Poverty Alleviation and Meals on Wheels. The event was held at Khalipha Senzangabom Community Hall. Meals on Wheels Manager Ester Ngcingolo who organised the event said her organisation, assisted by the Seventh Day Adventist (SDA) Church, in the Daku area known as eMagaleni decided to feed the hungry in the spirit of Christmas. “Of course, this is what we do every day. We provide meals to HIV/Aids patients in the Dora Nginza, Livingstone and Provincial Hospitals. We also feed hundreds of community members in KwaZakhele, Zwide and Veeplaas areas. “But, this one was special in that we were thinking of the elderly who might not have an opportunity of a three course meal and snacks

this festive season. We wanted to make them happy,” said an overjoyed Ngcingolo. “This is very good. I want to thank the organisers and the speakers,” said gogo Nomonde Sandlana (61). “I did not know about this. Somebody called me as I as was going past. I am so happy,” said an unemployed Headman Monelo (52). According to Ngcingolo, some of the elderly do not receive any social grant or old-age pension pay-out from government; while others are victims of abuse who were robbed off their cash by their children and grandchildren. “I am so happy for the elderly members of our community. They must know that we love them and care for them, said Pastor Mphuthumi Sojola, adding that he was hoping this care for the elderly was shown everyday. I want to thank the SDA which is proving to be a progressive church in this area. They are working hard to assist members of the community and making things easy for us, the government,” said Cllr Nombiba.

BSA calls members for licensing NCEBA DLADLA BOXING South Africa (BSA) Director of Operations Loyiso Mtya has urged members of the boxing fraternity to start paying for their licences on 8 January 2013.

“BSA has set 8 January 2013 as the date to start the licensing process for the 2012-2013,” said Mtya, adding that this was meant to ensure that all individual groups of boxers, trainers, managers, promoters and ring officials, including referees, judges, gloves stewards, time keepers, ring

announcers and medical doctors, are licensed in time for financial management, sanctioning as well as insurance purposes. “31 March 2013 will be the final date for the process and all late applications will be forced to pay a penalty,” warned Mtya.
