MATTHEW KORN: A PASSION FOR ECLECTIC DESIGN By CARA S. TRAGER IT ’S IMPOSSIBLE TO IMAGINE Matthew Korn working in any field but architecture. More than his avocation, architecture is Korn’s passion, and it’s evident in whatever he does and wherever he goes — whether pouring over blueprints on his sleek granite-topped conference table, reading issues of Architectural Digest and Architectural Record, navigating leafy back roads or traipsing among urban spires. “My eyes are never shut,” said Korn. “Whenever I am driving, traveling and walking, there’s never a moment when I am not looking at the architecture or photographing it with my phone.” Since opening his eponymous practice 21 years ago in Roslyn, Korn has left his artistic imprint on Long Island’s residential landscape, as well as in Manhattan, Westchester, upstate New York, Connecticut and New Jersey. He designs some 15 new homes a year — not including countless interior renovations and additions, such as dens, secondfloor dormers, cabanas, gazebos and 10-car garages. His 12 SHAWN ELLIOTT LUXURY

drawings can translate into construction costs that range anywhere from $200 per square foot to more that $500 per square foot, excluding landscaping. Among Korn’s largest and most elaborate assignments was a 16,000 square-foot custom residential home in Oyster Bay Cove. Completed in 2008, the mansion features a plethora of architectural features, including a spacious

courtyard framed by the main house, a three-car garage and conservatory. About a decade ago, in Old Westbury, he adjoined two houses on adjacent properties with a breezeway. Its bluestone path served as the rooftop of a tunnel that linked the structures underground and led to a subterranean racquetball court, indoor pool and spa. Word-of-mouth recommendations account for the lion’s share of Korn’s projects, and oftentimes, satisfied homeowners also contract Matthew Korn Architecture, P.C. for their corporate and professional addresses. Residential projects account for 80 percent of Korn’s business while commercial venues, such as office buildings, restaurants and medical offices, represent the balance. In his designs, Korn favors a “site sensitive” approach, employing architectural techniques that coalesce to maximize light and views to enhance a home’s enjoyment and luxury sensibility. A recent project for a 10-room waterfront estate in Sag Harbor brought the sunlit ocean indoors, with most of the living spaces, including many of


the five bedrooms, overlooking the sea and its seemingly seamless connection to an infinity pool. The Brooklyn native credits his father, who owned a driving school but was handy around the house, with giving him the crucial tech gene while his youthful fascination with construction sites fueled his interest in building and architecture. Summertime work with a carpenter near his family’s Catskills vacation home turned those interests into his passions. After graduating from New York City’s gifted Brooklyn Technical High School, Korn majored in business economics in college, and in 1986, he earned a master’s degree in architecture at the University of Buffalo. Korn has since developed a signature style that runs to eclectic American design. His projects incorporate a range of architectural elements, such as sculptural masonry chimneys and turrets capped with copper roofs, which come together to form dwellings with extraordinary curb appeal. “It’s a melting pot of styles, but it must have an architectural clarity,” said Korn, “and the same amount of time I spend on developing an interesting design for the home’s front I also give to all sides of the home’s façade.” Interiors are fashioned for a luxe lifestyle. His drawings provide a “specific axis throughout the house,” as in open foyers or large galleys, which are designed for flow and for people to experience the space “emotionally and physically,” Korn said. “It feels good and people don’t know why.” In recent years, his residential projects, particularly those on the North Shore, have become more complicated and detail-oriented. Media and billiard rooms and bars are commanding large spaces as home offices and libraries

get down-sized. Increasingly, too, Korn’s blueprints are providing for athletic amenities 10 feet below the basement. These underground spaces typically include an indoor pool and racquetball and basketball courts that require ceilings as high as 22 feet, he said. In such instances, an elevator is often de rigueur. “With architecture,” said Korn, “it’s very evident what you create — because you see it and experience it, which is the best thing about the profession.” Korn’s corporate digs — a charming yet spacious stone-facade house on Old Northern Boulevard in Roslyn — showcases his vision and creativity. Its muted tones, 10-foot coffered ceilings and heavyweight, eight-foot, three-panel doors convey a transitional scheme with a tilt toward modernism. The corner property reveals

Korn rents out a portion of the two-story, 5,000-squarefoot space to four companies — a window and door supplier, a landscape architect, a furniture showroom and a real estate developer. “There’s a certain synergy among us all,” he said. For Korn, architecture is more than form following function. It’s a people profession, and as he tells it, his creations aren’t a solo act. Rather, they are a “composition” of his design, input from the homeowner and the talents of a myriad of individuals, including builders, landscape designers and his five employees, he explained. “Architecture is a team effort,” said Korn, expressing gratitude for “the wonderful people” around him. Away from the drafting table and the design magazines, he enjoys creating fusion dishes in the kitchen, boating on Long Island Sound on summer evenings and enjoying the fresh mountain air of the Catskills. Korn, who lives in Roslyn with his wife, Zina, and their three children, also seeks to make a difference and voluntarily designs handicap-accessible homes for wounded veterans. His charitable efforts support the mission of Building Homes for Heroes, a non-profit organization that retrofits and builds homes for veterans who have been severely injured and disabled in the Iraq and Afghanistan wars, and their families. DESIGNER SHOWCASE GREG LANZA HAS A PASSION for the “unexpected.” Setting a bronze rabbit on a foyer table; putting tubular light bulbs in a classic chandelier or placing a driftwood lamp in a formal living room reflect the Gold Coast interior designer’s signature “outside-of-the-box” style. Eclectically mixing traditional with contemporary insures that “you don’t get a tiresome look, while avoiding overly trendy,” said Lanza, who was raised in staid Locust Valley. He points out that contemporary is not “thrown in just to be modern, but it must be modern with a history.” Take for example, contemporary design motifs found in today’s textiles, stone and metal work. Typically, these decorative designs “have historical roots, referencing a pattern from a Venetian cathedral or a Moroccan mosque,” ex-

environment lasting longer than a four-hour event,” said Lanza,. He went on to establish Greg Lanza Interior Design in 1994. Working from an office in his 1900s federal-style home in Glen Cove along with two design assistants, Lanza plans the interiors of roughly eight to 10 homes each year from Manhattan to the Hamptons and West Palm Beach. The bulk of his time is spent working on ground-up construction and major renovations primarily in the North Shore communities of Muttontown, Mill Neck and Lloyd Harbor. Less frequently he tackles smaller decorating projects, though sometimes when he’s initially hired to redecorate one room, he ends up overhauling an entire residence. Additionally, he consults on interior design for the restaurant and retail industries in Long Island and Florida.

Determining clients’ decorating and design preferences typically comes down to asking a few simple questions: “I ask them what vacations inspire them or their favorite vacation destination, be it Italy, Spain or France,” Lanza said. “I’ll ask them about their favorite restaurant interior or a hotel they love staying in.” Earlier this year the designer opened an accent furniture and home accessories boutique in Locust Valley. Lanza said he rarely shops with clients but will show them a portfolio of “images and inspirations” on his iPad, detailing a couple of interiors with a chandelier or two, a rug, paintings and a table. “It’s more of a montage and the presentation gets tightened as we go,” he said. “I give them my vision of the interior first and I’m spot-on 99 percent of the time because I read people very well.”

plained Lanza, who has worked on designer showcases in Manhattan and the Hamptons. “For contemporary design to be successful, it must reflect or incorporate an element from a notable past source.” Creativity helps. The designer sometimes embraces materials not traditionally used in home decorating, such as recycled vinyl for a wall covering, recycled wood or stainless steel and relishes “mixing things.” “I might use something that is dedicated for a commercial application like a restaurant or hotel and make it work in a residential setting, without making it look like Vegas,” he said. Some of the latest design trends making a comeback already figure into his design repertoire, such as mixing traditional lines with organic shapes, such as the “Egg chair,” which made its debut in the 1950s, he said. “Ten years ago, people brought modern into their traditional; now they will soon be bringing traditional into modern.” But when it comes to choosing a color palette, this unconventional designer tends toward neutrals like beige—not the muddy café latte colors or the mocha and espressos in vogue 10 years ago— but the tan or sand with crisp whites and a “punch of color.” A blue room with solid masses of blue, gray and brown void of patterns, he explained, can also have a “neutrality to it because there’s not a lot going on.” “People have told me I am a master of color and space relations. It’s an inherent quality,” said Lanza, who hails from a family of commercial artists, illustrators, couture designers and chefs. After studying design at New York Institute of Technology, Lanza had his sights set on a career in advertising. Instead, he went to work for a friend designing venues for “large budget” parties, such as the New York City Ballet’s Opening Night Gala and celebrity birthday bashes. “Creating designs for special events was exciting, but I felt it would be more rewarding to create an

When his clients’ tastes are at odds with his penchant for clean lines he “challenges himself.” Once when a client requested Art Deco, a style to which he’s not partial, he researched the design details of the period and “wowed them with something they didn’t expect.” Designing a space, Lanza said, is not merely filling a room but “creating an environment and an overall feeling when you walk into a room. JERICHO. They are sexy. They are sleek and oh so sophisticated. If you have to ask the price, you probably can’t afford one. James Bond drove a Bentley. In fact, Ian Fleming’s secret agent 007 owned several, starting with a 1930 Bentley convertible. Shaquille O’Neal’s has a Superman logo on the front grill. L.A. Lakers star Kobe Bryant, Law and Order SVU star Ice-T and rapper Jay-Z also drive Bentleys. (By the way, the rapper Ludacris owns one in platinum.) But the regal Bentley is not just for the guys. The Queen of England received two for her Golden Jubilee, the 50th anniversary of her reign as Queen. At her request, the rear doors were heightened so Her Majesty could stand before exiting the royal vehicle. When it comes to owning a Bentley, Rolls-Royce, or Lamborghini, check out the merchandise at Bespoke Motor Group in Jericho. Bespoke Motor Group’s 9,200 square-foot space is the largest Rolls-Royce showroom in North America and the second largest in the world. Bigger by a mere 300 square-feet is the one in Abu Dhabi. “A different demographic,” says David Archibald, President of Rolls-Royce Motor Cars North America. Indeed. The world’s largest collection of Rolls-Royce motor cars belongs to the neighboring Sultan of Brunei. Not quite your average oil sheik. Here at home, Donald Trump collects them, of course. American Idol talent judge Simon Cowell is also a devotee. Sylvester Stallone owns a platinum Rolls-Royce Phantom, and Snoop Dog has a white Phantom. Elvis owned a 1966 Silver Cloud and Michael Jackson owned three: a Phantom, Silver Spur, and a Silver Seraph. John Lennon had his painted in psychedelic colors with a back seat that converted to a double bed. An irate Londoner waved her umbrella at him, shouting, “How dare you do this to a Rolls-Royce?” (And no wonder: As a journalist in London, I saw pedestrians stop to gaze in reverence whenever a Rolls-Royce moved majestically down a narrow English lane.)


The New York metropolitan area is one of the top three U.S. markets. Not surprisingly, the other two are Florida and southern California. “We have coverage in Manhattan and Jericho is easier to get to than the Hamptons,” said Mr. Archibald. “Long Island clients own homes all over the U.S. They spend part of the year in the Hamptons and months of the year following the sun. They take their cars with them.” Michael Todd, manager of Bespoke Motor Group’s Bentley division, said, “We have the wealth and assets so it’s the perfect demographic for the luxury client.” The past two years have been good for sales. “If the economy is growing at 2 percent, Bentley has grown at 30 percent,” said Antoine Dominic, owner and operator of Bespoke Motor Group. “Productivity, corporate earnings and profitability are growing.” More positives in the upper brackets translate to favorable shifts in social attitudes among the wealthy. “For a very short period after 2009, we felt that a lot of clients didn’t even want to take their cars out. It was a social acceptance thing,” said Mr. Todd. But the tide has been turning. He said, “We are seeing a lot more social acceptance come back in a big way.” That translates to busy times for Bespoke. “We delivered a Bentley to a 24-year old who sold an app to Apple. He’s taking a couple of other cars, as well,” said Mr. Todd, who described their customer base as “a wide selection of people.” Celebrities, entrepreneurs, and executives now gravitate to the redesigned Rolls- Royce Phantom and Bentley Continental GT and GTC. As Mr. Dominic put it, “This is not your father’s Rolls-Royce.” Bentley and Rolls-Royce are known for an exceptional level of customization dubbed the “bespoke experience.” Senior sales specialist Nichole Ehlers uses an advanced computer modeling system called “The Configurator” to build a digital version of your fantasy car that is accurate down to the cross-stitching on your future seat belts. “Clients enjoy this process because when the car comes in, it’s theirs,” she said. Recently, an interior designer from Manhattan spent four hours building the car of her dreams. “We want to make sure that customers leave here saying, ‘Wow!’” said Mr. Todd. To that end, the Bespoke team also introduced an club concept with an onsite café. En route to the Hamptons, customers can take a break from traffic at the seasonal Bespoke Friday barbecue. “We want customers to bring their friends and enjoy,” said Mr. Dominic. “At the end of the day, these two brands make a statement about being successful. And who doesn’t want to be successful?” SE

These days, the beauty of fire can be anywhere. Instead of a stack of artsy books, a vase or candlesticks adding interest to your cocktail table, imagine flames leaping from a tabletop fireplace designed to be used indoors. Or, rather than hanging a painting on the wall, flames dance inside the frame of a ventless fireplace. “It creates an ambience,” said Anthony Mendola, manager of NYC Fireplaces and Outdoor Kitchens in Maspeth, Queens. While fascination with fire has never dimmed, today’s fireplaces have morphed from a needed source of heat and light to an alluring accessory designed to be a tranquil focal point in any room, with warmth as a bonus. Once upon a time, indoor fireplaces only burned wood. But that meant finding the proper wood, chopping it, hauling it indoors and trying to get it stay lit. Too much trouble, too much mess, homeowners said, and often didn’t bother to use it. Along came natural gas burning fireplaces. At first the flames were puny and the logs were a poor imitation of wood, Anthony said, but

with time the resemblance improved and the flames that flickered and danced at the touch of a remote control looked realistic. The gas fireplaces came in a growing number of styles, many contemporary and linear. They leaped in popularity for fireplaces in living rooms, family rooms and master suites, whether just to gaze at the flames or for additional heat. Electric fireplaces could be wall mounted and have a traditional look, but they didn’t fare as well: the flame just looks too fake. “It’s a ribbon that reflects the light and makes it look like a flame, but it doesn’t look like a real flame,” Anthony says. Then the outdoor fireplace craze began, with an emphasis on firepits to gather around as well as large fireplaces. Soon there were “fire features” to dazzle guests poolside, incorporating waterfalls and fire. And in outdoor living room areas, firetables -- dining tables with center firepits fueled by gas or propane that burned sparkling, reflective fire resistant glass -- provided ambience and warmth,though making s’mores is not advised lest the marshmallow drip on the glass chips or burner. Smaller outdoor tabletop fireplaces with cut glass or gems were designed to sit on end tables or coffee tables; others were wall mounted.

In the last three years new technologies have made it possible for fireplaces to be used as outdoor accessories or inside any room in the house with neither smoke, odor nor ash. Fueled by corn-based , eco-friendly bio-ethanol poured into a small reservoir or as gel like the sterno units for heating buffet trays, they produce a ribbon of flame. “You light the flame there and it makes the flame twirl in the glass enclosure,” Anthony said. Some styles are perfect for centerpieces, others small enough for a shelf, built into cocktail tables, or large enough to stand on the floor or be wall mounted. While the bio-ethanol doesn’t heat up a room, standing in front of it provides some warmth. “The technology is there,” Anthony said. “You can put a fireplace in any room; before you had to pick up specific spot and frame out a wall.” The new tabletop models come in a variety of styles. Some are contemporary with stainless steel and tempered glass in square, angular and round models; others resemble vases or rocks on fire. “It adds atmosphere,” Anthony says. “It could be a focal point of a room. And it’s a place to gather around.” The effect is serene, like putting candles around the room, but as Anthony put it, “It’s a nicer flame and they have nicer enclosures.” SE

Turning your Dining Room into a Designer Showcase By LINDA SASLOW So... you’ve decided to host a dinner party or have family and close friends over for a Thanksgiving holiday dinner. The menu is planned, the guests invited, and now it’s time to focus on sprucing -- and spicing -- up your dining room for the holidays. Long before the appetizer will be served, your taste in home décor will make a first impression on your guests. The tabletop will likely be the first thing they notice. From the plates, silverware and glassware to table linens, floral arrangements and accent pieces — every detail is an opportunity to showcase your personal style, set the mood, and make your guests feel warm and welcome. Transforming your dining room into a designer showcase in time for the holidays can be a cinch. Here are some ideas from several of Long Island’s most creative experts.

Add warmth with a palette of autumn colors. Regardless of whether your dining room is modern or traditional, great autumn colors can re-invent the room. Andrea Correale, owner of Elegant Affairs, said that earthy tones such as deep orange, rust, and goldenrod — in solids, plaids, or interesting

patterns — can be used in tablecloths, napkins and floral arrangements to bring instant warmth to your dining room. For a pretty touch, try amber water glasses or dessert plates. Charger plates in autumn colors are a great addition for the holiday, and can be changed with every season. Accent pieces make the biggest difference. Dressing a table is like dressing yourself, said Harley Scheck, manager of Sedoni Gallery in Huntington. Start with the little black dress, and invest in accessories to individualize the look. You can set the mood for the season by taking cues from nature. A beautiful glass bowl filled with walnuts or dried fruit, or a deep wood toned bowl filled with apples, are representative of autumn. And Harley’s favorite: large scale, footed hurricanes used individually or in groups of three. Layer sand in them and place a candle on top, use them as vases, or fill them with bunches of gourds for the holiday season. They add drama and color to a table, with a seasonal touch. Add height to your table to create interest. This is a great way to add visual interest to a table, said Harley, and can be done with a pedestal, footed bowl or candlesticks of varying heights. But, she cautioned, make sure that guests are able to see one another. Corrine Futerman, owner of Corrine’s Concepts in Catering, suggests creating a bi-level table by placing a box in the center, covering it with beautiful linens and highlighting the platform with a floral arrangement or a glass vase filled with apples. A second level is also a perfect addition to a buffet table. The platform can even feature a decorative basket filled with rolls. Candles, candles, candles! It can be votive candles strategically placed on a table, scented candles in a pumpkin spice to go with the season, or electric candles that won’t drip. A grouping of candlesticks of varying heights adds interest to any table. Harley’s rule: always group in odd numbers! Lighting changes the mood of a room. A dimmer is a must in any dining room, Andrea said. If your dining room has lamps, using amber bulbs changes the total look. Warm, beautiful lamp shades that can go

over a chandelier are a good investment to set a special mood. For a large table, twin chandeliers are all the rage. Mix and Match. Everything doesn’t have to be matchymatchy, said Harley. Mixing modern glass and metal with rustic pottery can give your room a fresh look. Set a reclaimed wooden basket on a table along with your fine china and crystal to add interest. Personal place cards make your guests feel special. Following cocktails in the living room, when guests head to the dining room for dinner they may not be sure where to sit, said Andrea. Having named place cards at each setting can alleviate any tension, and at the same time, add a decorative touch to the table. Printed menu cards will tantalize your guests. For a sit-down dinner, Harley suggests placing a menu card at each guest’s table setting. It lets them know what is coming and sparks conversation. For a buffet, a decorative frame on the table adds interest, helps guests identify the foods, and is tantalizing! For guests who are watching their weight, there are subtle ways to set a table for success. Holiday time can be especially challenging for many who are trying to watch their weight, said Pnina Mohr, a registered dietician and nutritionist. But there are helpful strategies in setting a table. Among Pnina’s suggestions: use tall and narrow drinking glasses, which are esthetically pleasing but hold less. Serve a holiday dinner on nine-inch plates instead of the traditional eleven inches. And for dessert, use smaller bowls, while saving the larger ones for salad. If your holiday dinner is a buffet, Pnina recommends setting it up by starting with colorful vegetables and salads, allowing guests to begin to fill their plates with healthier choices, and leave the comfort foods for the end of the table, when their plates will be almost full. Add a collection of oil misters to your holiday table, which can be filled with a variety of olive and sesame oils, as well as gourmet vinegars, to be sprayed on salads in a controlled amount instead of the more fattening dressings. They look like perfume bottles and are not only practical, but also a “must have” for a beautiful table. SE

A NEW WORLD OF SPORTS AND ENTERTAINMENT …IN BROOKLYN By LINDA TAGLIAFERRO THOSE LOOKING FOR LUXURY in a sports and entertainment venue need venture no further than the new Barclays Center in — yes — Brooklyn. Just a brief drive from the North Shore of Long Island, the new major sports and entertainment center opened with a splash on September 28 with a performance by the rapper Jay-Z. The new home of the Brooklyn Nets, Barclays Center puts a greater emphasis on sumptuousness with five levels and more than 100 luxury suites, 18,200 seats for basketball games and 19,000 seats for concerts as well as a variety of clubs and restaurants. A star-studded schedule including over 200 events is planned for the

first year, including performances by Andrea Bocelli, Barbara Streisand, Bob Dylan and Justin Bieber. For more intimate entertainment, the immense arena can be transformed into a 6000-seat venue within its walls: the Cushman & Wakefield Theater at Barclays Center. “A curtaining system comes across the lower bowl and literally cuts the arena in half,” said Fred Mangione, the venue’s Chief Marketing Officer. The theater opens with a performance by Grammy Award-winning R&B singer/songwriter John Legend on October 29, 2012. Unlike arenas with penthouse level suites far above what’s happening, “A Level” luxury suites at the Bar-


clays Center start 23 rows up from the event floor on the sides of the building. The arena’s 100-plus luxury suites dwarf the Nassau Veterans Memorial Coliseum cache of 32 luxury suites. In Queens, Citi Field’s clientele choose from 39 Empire Suites and five Party Suites. “Our suites are located in a circular platform in the building,” explained Mangione. “Above the A Level, the B Level Suites run, as we say in basketball terminology, from baseline to baseline.” General seating is positioned above the two suite levels. “In many other arenas, even though their suites are luxurious, you’re further away from the action. Here, we offer the unique opportunity of luxury plus proximity to events.” The most discerning patrons may consider the top 11 exclusive suites, dubbed “The Vault,” at the event level. “It’s backstage and underneath the building,” said Mangione, “where suite holders can entertain pre- and postevent.” These softly lit, 300-square foot suites, replete with flat-screen televisions and ultra-modern lounge seating, intimate bar and tables, accom-

modate eight guests. Vault suite holders are entitled to eight tickets in the first 10 rows to all events. They also have exclusive access to the Armand de Brignac Champagne Bar and a private club and restaurant. And even their own door. The suite holder experience starts with a dedicated VIP entrance. “You’re led to a concierge who awaits your arrival,” explained Mangione, “and escorted to your suite.” For help with reservations for black car service to and from the arena, suite holders can use Barclays Center’s Luxury Attaché concierge service. Arena clubs include the Courtside Club adjacent to The Vault and the North/South clubs for premium ticket holders. The most elite offering, the 40/40 Club & Restaurant, is reserved for suite holders desiring a formal sit-down dinner before events. Its contemporary design incorporates superb views of the basketball court, and a sleek, illuminated amber resin bar counter. Prices average $250,000 annually for general suites and $550,000 per year for The Vault suites, which tops CNBC.com’s number one on its list of

the most expensive luxury suites, the $500,000 suites at the 2012 Super Bowl at Lucas Oil Stadium in Indianapolis. “We like to get an idea of the person’s needs, what they’re looking for, how often they plan on utilizing their suites,” Mangione said, “and from there, we’ll walk them into one of our products.” The 675,000 square foot center is the first of its kind in the metro region since 1968 when the latest incarnation of Madison Square Garden opened. Following the convenient to public transportation theme, the Barclays Center is located above the Long Island Rail Road’s Atlantic Terminal at Atlantic and Flatbush Avenues. The $1 billion arena is poised to become the centerpiece of a 22-acre housing and office complex called Atlantic Yards, a project of developer Forest City Ratner Companies, whose credits include the contemporary Manhattan headquarters of The New York Times on 41st Street. The development, which will be built over the next two decades, promises to transform a once lackluster section of Brooklyn into a vibrant hub, with 16 high-rise buildings anchored by Barclays Center. The arena’s iconic design features a

gleaming glass-and-steel latticework façade. A huge canopy spans 85 feet beyond the main entrance and passersby can view the scoreboard from the imposing main entrance. It is a collaboration between architectural firms AECOM and SHoP Architects. Family-centered shows include Disney on Ice. Sports run the gamut from major equestrian show jumping to boxing, tennis and professional hockey matches. Food offerings are varied, depending on the event,” Mangione said. “For basketball games, high-end cuisine will include premium steaks and the like, but for children’s events, the menu will reflect that audience’s preferences.” And those wishing to turn a jaunt to the new venue into an overnight getaway can reserve a room a mile away at the New York Marriott at the Brooklyn Bridge, which is partnering with the Barclays Center. FOR STEPHEN SIEGEL, a Gold Coast gastroenterologist, nothing compares to a golf getaway with his son and son-in-law. “We don’t have to put the cap on the toothpaste if we don’t feel like it,” he says. “It’s a little window of being able to do what we did in the days before we were all married.” Burt Rapoport, an entrepreneur, restaurateur and avid golfer, says the outings are “all about camaraderie,” he explained it this way: “It’s about hanging out with the guys, laughing, not showering if you don’t want to, and not hearing any nagging for a few days. The Boulders: Scottsdale, Arizona Voted as two of the top 20 golf courses in Arizona by Golf Week Magazine, the Boulders, a desert hide-away, is a semi-private country club for resort guests and club members. Its two 18-hole championship courses, nestled among 12 million year-old granite boulder formations in the Sonoran desert, have won Golf Magazine’s Gold Medal Award multiple times. The Boulders is one of only five resorts awarded this prestigious award every year since its inception in 1988. times than any other venue, and host for its 25th time in 2015. In the 1700s, the Old Course consisted of 22 holes with golfers playing the same 11 holes going out and in. But the golfers decided that the first 4 (which were also the last 4) were too short, and should be made into two holes instead of four. This reduced the number to 18. The number stuck, and that is how today’s standard round of golf was created. The Old Course is at the heart of the links, but alongside are five other 18-hole courses. Booking tee times is easier than you might think – they can all be reserved in advance. SOMETIMES A MANI-PEDI and lunch with a buddy just isn’t enough. That’s when Karen Kurland of Great Neck heads, best friend in tow, to Atlantic City. At the Borgata Hotel Casino & Spa and its adjacent sister property, The Water Club, the action in the casino is non stop, the boutiques are trendy and the indoor pool is an oasis, making a spa break even sweeter. “It’s enjoyable,” Kurland says. Kurland goes on at least two spa weekends a year, with her BFF on one jaunt and joining her mom and daughter on the other. They play roulette and slots, dine at restaurants like Wolfgang Puck and Bobby Flay, and relax in the quiet 32nd and 33rd floor Immersion Spa, with its lounges with sweeping views of the Atlantic Ocean, a 25-yard infinity edge pool, whirlpool, steam room and a wellappointed fitness center. 38 SHAWN ELLIOTT LUXURY

Great spas and resorts with spas can be found from Montauk to the Maldives. But for a quick or weekend getaway, there are plenty of choices nearby. And a few hours in the car can be enjoyable, a time for in-depth conversation or singing all the way. Here are a few other favorites, easily accessible places for a girls’ spa break: At the Mayflower Inn and Spa in Washington, Connecticut, spa director Helen Brown says some groups of girlfriends have been coming for several years, originally for one woman’s birthday, and now for each of their celebrations. And on a more solemn note, girlfriends gathered at the spa for a last hurrah and to say goodbye to a friend who was terminally ill. Sometimes just two best friends book a spa break together; for significant birthdays and other special occasions, some reserve all of the inn’s 30 rooms, each of which is outfitted with a queen bed. A few also have thick futons. Besides pampering treatments, the women can go hiking, biking, kayaking, cross country skiing, snow shoeing or do archery or go flyfishing in the Shepaug River at the nearby Steep Rock Nature Preserve. Among the more sedate activities at the inn are watercolor classes, a knitting circle and flower arranging or walking the inn’s labyrinth, Shakespeare garden and poet’s maze. Some girlfriends go for makeup lessons together; others take Zumba, yoga, a barre class or go for a swim in the indoor or outdoor pool. Afterwards, they gather on the porch or in the library for cocktails or go shopping or to galleries in nearby Washington or Litchfield. While the usual stay is two nights, Brown encourages guests to come earlier than the 3 p.m. check in and stay past the noon check. “It really extends their stay on either side of their room nights.” At Canyon Ranch in the Berkshires, “girlfriends getaways are one of the main reasons guests visit,” says Meredith Ford, a spokesperson for the Lenox, Massachusetts resort, including mom getaways, birthdays, family reunions and multi-generational trips including mother, daughter and granddaughter. They can share in activities together like seasonal snowshoeing and skiing, and in warmer weather, group kayaking or stand up paddle boarding. Or the ladies have the freedom to explore their personal interests such as a high ropes challenge course, an energizing World Beat” drummers fitness class, hands on healthy cooking classes , arts and crafts and pampering spa treatments, as well as for the “incredible food.” “We have something for everyone.” And there’s a 15 percent discount for groups of five to seven; more for larger groups. Though a stroll on the beach may require bundling up this time of year, the Sea Water Spa at Gurney’s Inn Resort Spa & Conference Center in Montauk is warm and cozy. The spa uses sea water in the Olympic-size indoor heated pool and Roman baths and there’s also a sauna and steam room. Afterwards, guests schmooze while they gaze at the Atlantic Ocean, “sunbathe” or relax on a lounge in the glass-enclosed pool deck or workout in the fitness center. Skiing Vermont’s Great White Ways By e. a. caruso FROM THE TOP OF KILLINGTON PEAK in Central Vermont, they say you can see five states and Canada. But I’m focused on a different direction -- down. With a slight nudge from an arctic gust, my hunt for trails of untracked powder is on. There’s a lot to love about Vermont once the deep chill sets in. Its ice-fishing sheds, the fences built of old skis and the circa-dated colonial homes jeweled in icicles--the permanent decoration of the season. Towns have a Saturday Evening Post kind of patina. The tallest peak in the Northeast is actually in New Hampshire’s White Mountains, and yet, Vermont gets the crowds. Vermont has 18 destination ski areas, among the greatest concentrations of skiing facilities anywhere. Every moun40 SHAWN ELLIOTT LUXURY

tain has an endearing quirk. At Stowe, in the north, most of the trails were cut by hand decades ago, some with the help of oxen rather than by bulldozers, which gives each a

handcrafted, no-two-alike quality. At Mad River Glen, you can ride a rare single chairlift. You’d have to go to Alaska to find the only other one. Killington, the East Coast’s largest resort, was founded by a 25-year-old named Preston Leete Smith on a shoestring budget. Smith’s many contributions to the industry, from snowmaking innovations to the introduction of the ubiquitous wire ticket wicket, led to his induction into the U. S. Ski and Snowboard Hall of Fame and Museum in Michigan. The sport is integral to the state’s economy and its psyche. Evidence of this Yankee love of schuss is everywhere. There’s a Vermont Ski Museum with its own Hall of Fame in Stowe. And among the state’s historic markers, a special one in Woodstock commemorates the site of the


country’s first rope tow in 1934. The first chairlift was installed six years later on Mount Mansfield. Even snowboarding has its origins here. An enterprising snow bum named Jake Burton Carpenter is credited with pioneering the modern day incarnation of the sport in Londonderry 35 years ago. Killington is known for its deep natural snow and extensive snowmaking system. The arsenal of snow canons kicks in with the first freeze of the fall. Killington can’t compete with the Rockies in elevation but it boasts an impressive stat nonetheless. Its vertical footage—the difference in elevation between the top of the highest lift and the bottom of the lowest lift—is chief in the Northeast and not too shabby compared to some of its western counterparts. Killington’s vert is 3,050 versus, say, Aspen’s at 3,267. On this particular day, Vermont is cold. So cold that the U.S. Postal Service is delivering cocoa and coffee to letter carriers along their routes. An arctic air mass from Canada has temperatures dipping below zero at the peak. This goes with the territory. In frostbite weather, the secret of subzero happiness on lengthy runs is foot warmers--and the heated express gondolas that whisk skiers to the summit. Actually, one of the summits: Killington consists of six mountains. Get separated from your skiing buddies and you can wind up at an entirely different base. That’s about the moment you stop thinking about the plummeting mercury and start appreciating about how sweet it is cruising down narrow, tree-lined trails with only the sound of your own edges

crunching on the hard pack. There are more than 140 trails at this resort served by 22 lifts. For mogul lovers, Killington has the steepest bump run in the East, the notorious Outer Limits. Snowboarders? A terrain park called The Stash with more than 50 nature-inspired features. In his book “It’s a Slippery Slope,” the late Spalding Gray wrote this about skiing: “During those rare moments when I’m in balance, I feel hints of perfection.” For me that perfect moment comes riding up in the mountain. The snow is beginning to fall, and chunky flakes start drifting inside the window of my glass-enclosed gondola. Who needs some dime-store snow globe to remember this? I’m living it. I admit to loving the end-of-day exhaustion that feels like the best combination of a good massage and a warm Jacuzzi. After wearing myself out on the mountain, the slope-side Killington Grand Resort Hotel with its massive fieldstone fireplace is a great place to wind down. Over a bar-menu plate of pork spare ribs in--what else?--maple barbecue sauce, I study the trail makeup. That’s all it takes to get a conversation going. A mophaired 40-something named Hank has an opinion. “Tomorrow, you have to try Outer Limits” he says. Hank lives an endless winter fantasy. He spends six warm-weather months working in construction, a job that serves to subsidize his transcontinental ski habit. He’s got a season pass to Killington in the East and one to Steamboat in the West. I locate Outer Limits on the map. It’s that hardcore double diamond mogul slope. I hesitate, but Hank will hear none of it. “You can do it, “ he says. The bartender refills my beer glass and nods. And tomorrow I think I will. SE

I N dulging in C av iar , the F inest D elicac y By CARA S. TRAGER Caviar has long enjoyed worldwide cachet as the uber-luxury delicacy. Its scarcity, prices and the way it’s traditionally served — on an elegant mother-of-pearl spoon – imbue “the sea’s black gold” with all the markings of the good life. Considered an acquired taste, the tiny, salty sturgeon eggs — not surprisingly — were once reserved for the royals. But in the 19th century when rivers in the United States were flush with sturgeon, America’s saloons dished out free lunches with caviar to induce thirst and pump up brew sales. And well before the royals and the cowboys, in the 4th Century BC, philosopher Aristotle wrote about caviar at elaborate Greek banquets. The fact is, caviar has been around longer than mankind, dating back 250 million years. Its prehistoric roots and scarcity afford the miniscule eggs a mystique that few, if any other, edibles enjoy. “There’s so little supply available,” said Ilya Panchernikov, managing director of Caviar Russe, which operates a Manhattan retail boutique and fine-dining restaurant, as well as mail-order and web-order businesses. Since 2005, the United States has banned the import of beluga sturgeon from the Caspian and Black Sea basins and any of its products, including the renowned beluga caviar. The measure is designed to protect beluga sturgeon, which is considered a threatened species under the U.S. Endangered Species Act. It affects beluga caviar from such places as Azerbaijan, Bulgaria, Georgia, Kazakhstan, Romania, the Russian Federation, Serbia and Ukraine. Caviar also owes its limited inventory — and resulting aura of exclusivity — to the whims of Mother Nature; it takes sturgeons anywhere from five to 14 years for females to harvest eggs. And because of “the volatile nature of the caviar business, prices can fluctuate dramatically on a year-to-year basis,” said Panchernikov. While caviar traditionally refers to eggs from sturgeon, it has also come to encompass other types of fish roe. According to Panchernikov, more than 20 different kinds of caviar exist. To connoisseurs, the delicate eggs most 62 SHAWN ELLIOTT LUXURY

worth their salt are Osetra, Sevruga, Siberian, Sterlet, Pacific Sturgeon, American Hackleback and American Paddle fish roe. Prices for top-shelf caviar can run as low as $30 for an ounce of American Paddle and soar to $595 per ounce for the exceptionally rare Almas Osetra, whose distinctive appearance — relatively large eggs with a golden albino hue — is matched by a light weight. Just like pricey diamonds and other fine gemstones, caviar is best purchased from a reputable source. They are highly perishable and have a limited shelf-line. “You want to make sure it isn’t lying around for awhile,” said Charles Gagliardo, who buys caviar for Citarella, the gourmet emporium and caterer in Manhattan and East Hampton. When customers purchase caviar at Caviar Russe, they are advised to store the product no more than 10 days in

the coldest part of the refrigerator and consume it with within three to five days of opening. Caviar Russe allows customers to taste the caviar before they purchase it, said Panchernikov, “so they know what they are walking away with.” As one of life’s finest indulgences, caviar makes any occasion a sumptuous event — whether a small holiday party, marriage proposal or milestone celebration. But at larger affairs, such as bar mitzvahs and, to a lesser extent, weddings, prices have increasingly driven caviar off the menu and sushi has taken its place, according to Andrea Correale, president of Elegant Affairs Inc., an upscale catering and event-planning firm in Glen Cove. It’s the rare party — one in 10 — where Elegant Affairs serves caviar today, she said. Yet when a host opts for it, only quality roe will do.

“People who go to the caviar bar are aficionados,” said Correale. There are many ways to serve caviar. Elegant Affairs, for example, offers the fish roe on potatoes and deviled eggs as well as in a dish with nachos, crème fraiche, chopped red onion and capers. Caviar Russe serves the exquisite eggs in a glass ramekin, on ice, and with toast points, crepe blinis, Yukon gold potatoes, crème fraiche and chives. A mother-ofpearl spoon enhances the experience. Panchernikov suggests pairing caviar with Dom Perignon champagne, a fine wine or an ice-cold premium vodka. As an extraordinary edible, caviar is blissfully enjoyed in a slow, deliberate manner. Citarella’s Gagliardo advises against chewing caviar in favor of placing the diminutive roe between the tongue and upper palate — not only to savor their taste and texture but to luxuriate in their gentle, flavorful burst. Chris and Tony’s -Matty Sorrentino Helps Create a New Family-Style Favorite By M.C. SUSSMAN

LOOKING TO OPEN A NEW RESTAURANT? Want to serve your classic eggplant parmigiana to a different crowd every night? You might want to talk to Matthew Sorrentino. Matty, as Sorrentino is known, is a restaurant consultant at the new Chris and Tony’s Restaurant and Lounge in Syosset as well as the more established 388 in Roslyn, Serrata in Long Beach and Oyster Bay and Ciros in Kings Park. He earned his restaurateur pedigree at family-style Matteo’s, where he worked for his brother, Andrew, and his dad, Salvatore. His family opened the first Matteo’s in Hewlett in 1990, eventually growing the chain to eight locations. After the Sorrentino family sold Matteo’s in 2008, Matty went on his own as a consultant in 2010. Chris Tarsi, an owner of Chris and Tony’s, hired Matty for “his knowledge; his experience.” “He knows the business inside and out,” says Tarsi. Sitting at a table near the open doors at Chris and Tony’s on Jericho Turnpike on a recent afternoon, Matty says he eats out 7 nights a week, each at a different client. “I’m on call 24/7,” he says. “Like a psychiatrist.” His job includes a bit of pepper and a bit of salt: dispensing advice, redesigning the kitchen and dining room, decorating, training staff, weighing in on the menu and working with purveyors. The secret to running a good restaurant, Matty says, is “cleanliness, niceness and great food.” People want service when they go out to eat. The restaurant’s job is “to treat people as you want to be treated. You want to be treated nicely when you come to a restaurant; no one likes to hear ‘no.’” Matty says. His job is easy “when you have a good kitchen backing you up.” Even those who can’t be pleased, his toughest critics, “we kill them with kindness.” The similarity between all the restaurants Matty consults for is comfort and coziness. “I make them feel like home, make it a pleasant experience. lot of money to go out and enjoy themselves,” whether they dine out once a day, once a month or once a year. With the “rough economy,” and lots of competition, he advises restaurants to cater to everyone and make the experience worth repeating. “You want them to have a memorable time; you want to do whatever you have to do to have them come back,” he says.

At Chris and Tony’s, that includes flat screen televisions throughout the dining rooms, and not all on the same channel. “It’s hard to get kids to come out when their show is on, a game is on, “Dancing With The Stars” or a political function or an awards night. If they are watching sports, the husbands don’t want to come out of the house. We want to make them as com-

fortable as possible -- as if they were in the house,” Matty adds. The restaurants he consults with all have party rooms and outside catering. They attract couples, singles, friends and families. At Chris and Tony’s, they’re prepared for the health and diet conscious and all sorts of fussy eaters: the menu includes a “healthy corner” and several salads, includ-

Food is served family style, though 1/2 portions are available for those who don’t want to share. “Nothing is pre-cooked. If you don’t want salt or pepper or a spice in there, it is not a problem. The menu includes gluten free pasta, whole wheat pasta and a large selection of fish, including grilled branzino. For kids, there’s mac and cheese, mini sliders and chicken fingers with French fries.

Chef Tony Ambrosio hails from San Guiseppe Vesuviano, near Naples, Italy. He is adding a Mediterranean touch to the Italian restaurant with dishes like Shrimp Alessandra -- grilled shrimps with Mediterranean herbs in a Francesestyle sauce or his ‘ famous’ Orecchiette barese pasta with florets of broccoli rabe and homemade shredded veal sausage in a light garlic and oil. Then there’s his veal chop stuffed with fontina cheese, porcini mushrooms and prosciutto de

parma served in a porcini mushroom reduction sauce. And to capture that feeling of family, Sunday dinner and comfort food, new world dishes such as kobe meatballs, sliders, chicken dumplings and braised short ribs are on the menu, along with tiramisu and zabaglione with berries for dessert. Chris Tarsi explains it this way, “We made it a one stop place for everybody -- make your wife happy, your girlfriend happy, basically satisfy everyone.”

More than 300 nattily dressed Rolls Royce aficionados attended the trendy launch cocktail party at the new uber-luxury Rolls Royce Long Island showroom in Jericho on May 31, mingling with David Archibald, president of Rolls Royce North America and Antoine Dominic, the owner and operator of Bespoke Motor Group’s 9200 square foot dealership. Highlighting the evening was the unveiling of the new Phantom Series II. A manager from Rolls Royce’s leather

factory in England gave a bespoke demonstration on different finishes. As the band New York Minute played, guests sipped two signature cocktails -- a rose champagne mixed with mango juice called The Spirit of Ecstasy or the Phantasm --a mixture of Grey Goose le Citron and seltzer with a splash of white cranberry juice and a twist of lime. They nibbled on passed hors d’oeuvres such as sesame tuna boxes, lime shrimp avocado shots, filet mignon with caramelized shallots and asparagus and gorgonzola canapés. A dessert buffet included lemon bars, mini cheesecakes, mini chocolate ganache cakes and rice pudding. A photo booth provided a dollop of fun and keepsakes from a memorable evening. And a new party venue was born. SE
