Maybe it’s the beautiful décor, extravagant centrepieces, the food, or maybe it's just all the love in the air. There's just something about weddings. It doesn't matter who's getting married, I know I'll be crying like a baby before the ceremony is finished. Seeing two people, surrounded by their closest friends and loved ones, dedicating a day to their love; it's just such a special thing. All weddings, big or small, extravagant or simple, are so incredible because it's a celebration of their commitment to each other. During the winter holidays, Christmas, Valentine's Day, New Year's, many people pop the question to their partners. New engagements bring a flurry of excitement, and a multitude of questions. Where will the wedding be? Who will cater it? How about the dress? Suit? What about the wedding party? And it's for this reason that a large section of our winter issue focuses on all things bridal. We are thrilled to offer a bride guide for our readers that's completely local. We showcase Island boutiques, venues, caterers, jewelers, photographers, florists, and pretty much everything else you need to plan your perfect day on the island. This is why it was such an honour to be a part of this issue. Because, let's be honest, PEI is the perfect place to get married. lemon curd cheesecake
with strawberries
This cheesecake is pure heaven and perfect to serve to your sweetheart on Valentine's Day. This version is topped with delicious strawberries - substitute with your favourite fruit or try the cranberry orange sauce for a special touch. Usually, you have to let cheesecake sit out for a little while so soften up the texture, but I found this one to be quite soft, so feel free to serve it straight out of the fridge.
METHOD
Make lemon curd: Whisk together zest, juice, sugar, and eggs in a two-quart heavy saucepan. Add butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of whisk and first bubbles appear on surface, about six minutes. Force lemon curd through a fine-mesh sieve into a wide shallow dish, scraping bottom of sieve, then cover surface with wax paper. Cool completely, stirring occasionally, about 30 minutes.

Make and bake crust:
For lemon curd:
Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan (to make it easier to slide cake off bottom), then lock on side. Stir together crust ingredients in a bowl, then press onto bottom and one inch up side of springform pan. Place springform pan in a shallow baking pan and bake 10 minutes, then cool crust completely in springform pan on a rack.
1 tsp finely grated fresh lemon zest 1/2 C fresh lemon juice 1/2 C sugar 3 large eggs 1/2 stick (1/4 C) unsalted butter, cut into small pieces For crust: 1 1/3 C finely ground graham cracker crumbs (5 oz) 1/3 C sugar 1/8 tsp salt 5 tbs unsalted butter, melted For filling: 3 (8-oz) packages cream cheese, softened 1 C sugar 3 large eggs 3/4 C sour cream 1 tps vanilla Special equipment: a 9- to 91/2-inch spring-form pan 2 pints/baskets of strawberries Cranberry Orange Sauce: Combine one cup fresh cranberries, coarsely chopped, 1/4 cup granulated sugar and two tablespoons orange juice in a small saucepan over medium heat. Bring to a simmer and cook, stirring frequently, until the sugar is dissolved and the cranberries start to break down. Remove from heat and cool completely before serving. Top cheesecake before serving.
Make filling and bake cheesecake: Reduce oven temperature to 300°F. Beat together cream cheese and sugar in a bowl with an electric mixer at medium speed until smooth, one to two minutes. Reduce speed to low and add eggs one at a time, beating until incorporated. Beat in sour cream and vanilla until combined. Pour two thirds of cream cheese filling into crust, then spoon half of lemon curd over filling and swirl curd into filling with a small knife. (Avoid touching crust with knife to prevent crumbs getting into filling.) Bake cheesecake until set 1 1/2 inches from edge but centre trembles when pan is gently shaken, about 45 minutes. (Centre of cake will appear very loose but will continue to set as it cools.) Transfer springform pan to a rack and immediately run a knife around top edge of cake to loosen. Cool completely, about two hours, then chill, uncovered, at least four hours. Cut strawberries into 1/4 inch slices. Glaze the cheesecake with the remaining lemon curd. Top the cake with strawberry slices, starting from the outside and working your way in.

Author Michael Pollan once said, “Serve the kind of food you know the story behind.” It’s a concept many have embraced as of late, and one that Terre Rouge, one of PEI’s top restaurants, has wholeheartedly adopted, as well. Since opening its doors on the island in 2012, Terre Rouge has established itself as one of PEI’s restaurants to watch. Its menu, carefully and thoughtfully developed with the local food movement in mind, is what gets customers in the door at first, but always keeps them coming back for more. Whether it’s the restaurant’s signature mac and cheese (to die for, I assure you), the creamy chowder, or the delectable mushroom toast, the menu is filled with tons

of personality, endless flavour, and plenty of locally-sourced food. The best part? It’s changed up every six to eight weeks (with the exception of a few fan favourites, of course, such as the dishes above). “We are surrounded by countless local producers,” explains Alex Smith, Terre Rouge’s general manager. “There’s plenty of unique produce, dairy, meats, veggies, and seafood. We believe it’s best to support people around you, so you are aware of where everything has come from.” Customers are responsive to the restaurant’s unique take on food, and it’s earning Terre Rouge a place on the world stage. In 2017, it was named as one of the best places to eat in Canada by Oberon Press. “Being listed in magazines and articles holds us to a certain standard of quality
which we are proud to uphold,” says Smith, placing a steaming plate of white wine and garlic mussels (is your mouth watering yet?) on the table between us. “It makes us want to reach a little bit further and see where else we can get our name out there.” It seems they are doing something right; they were listed as one of the top 100 restaurants in the country in 2016 (they were the only restaurant on the island to make the list), as well as one of the top 10 places to eat in Atlantic Canada. While the restaurant’s immense popularity has a lot to do with the fresh, locallysourced ingredients, there’s another important element contributing to Terre Rouge’s popularity. And her name is Lucy Morrow.
Terre Rouge’s executive chef, Morrow was born and raised on a farm in Nova Scotia, and, lucky for PEI restaurant-goers, is very familiar with the farm-to-table concept: how animals are raised, what produce is in season, and how to use it. “This is our mantra, and having a capable chef who understands this is imperative to the goal of Terre Rouge,” says Smith. “Lucy is always creating unique dishes with many flavour combinations that you normally wouldn't have just laying around the kitchen at your house. This makes for a very memorable evening out, and hopefully leaves you wanting to come
back and try something else.’ Mission: accomplished. It seems there’s nothing this charming restaurant hasn’t thought of. From the homemade ketchup to the unique and inviting atmosphere (you won’t want to leave once you’re settled into one of the cosy booths by the fireplace!), customers want for absolutely nothing. “Get out of the norm,” encourages Smith. “Come check us out and see how we use all local supplies to create very interesting dishes. Our menu, our cocktails and our atmosphere stand out in this city! Many
people who come for the first time are very surprised when they come in the door and see what we offer.” Having recently undergone plenty of change — including new staff, modern renovations, a menu overhaul, and new wine and cocktail menus, for starters — locals and visitors alike are sure to be nothing short of impressed after their dining experience at Terre Rouge. “We look forward to people coming in and letting us give them an experience they will remember and leave them wanting to come back for more.” Our advice? Start with the charcuterie board…and don’t skip dessert.

The restaurant saves as many of the scraps as it can (such as stems, leftover vegetables, meat, etc.) to preserve them, dry them, grind them into dust for garnishes, or to use them for the nightly amuse bouche. What can’t be used gets returned to a local farm for feed or for compost. “This requires a lot of work,” says Smith, “but it is definitely something we pride ourselves in.” Diners are only faced with one difficulty when they arrive: deciding what to try first. Valentine's Day is just around the corner and it's all about impressing your sweetheart with a genius level of romance. This year, ditch the chocolate and kick that teddy to the curb! Nothing says romance like a sexy cocktail for two, and if you're chilling solo this year, nothing is more satisfing than a cocktail for two - for one. We've chosen our favourite cocktails that are fabulous for sharing with your favourite squeeze or if you choose not to share - they're great for one! Sassy Lassie 2 oz. Blended Scotch whisky 1 oz. Amaro Lucano 2 Strawberries Dash of chocolate bitters Garnish with shaved dark chocolate and a strawberry Add strawberries and bitters to a mixing glass and muddle. Add ice, Scotch and Amaro and stir.. Strain into a coupe glass and garnish with chocolate shavings. Fit a strawberry slice to the rim of the glass. Flirty Fizz 1 oz. Strait Vodka 2 oz. Lemon-lime soda Splash of cranberry juice Mix over ice and serve. Hugs and Kisses 1.5 oz. Patrón XO Cafe Dark Cocoa 1/2 oz. Aged tequila 2/4 oz. Homemade cinnamon-orange blossom syrup* 3/4 oz. Fresh lemon juice 2 oz. Upstreet Commons Pilsner 8 Dashes Angostura bitters Shake all liquid ingredients in cocktail tin with one ice cube until it melts. Strain into large-footed Snifter glass and top with crushed ice and chocolate-dipped orange.
*Make cinnamon-orange blossom syrup by combining 1 cup sugar, 1 cup water and three sticks cinnamon in a sauce pan over medium heat. Simmer until sugar is completely dissolved and a prominent cinnamon flavor develops. Transfer to a glass jar and Let cool. Add 1 tsp orange blossom water, stir to combine, and store in refrigerator up to one month. French Kiss 1 oz. Strait Gin 3/4 oz. Matos Orange Liqueur 1/4 oz. Aperol 1/4 oz. Fresh lemon juice Top with sparkling rosé Garnish with orange twist Shake first four ingredients with ice and strain into a coupe glass. Top with sparkling rosé and garnish with an orange twist. Hanky Panky 1.5 oz. Vermouth 1.5 oz. Bombay Sapphire gin Garnish with an orange peel Stir ingredients in a mixing glass, strain into a chilled martini glass and garnish.
The Love Affair 1.5 oz. Prince Edward Distillery Vodka 2 oz. White cranberry juice 1 oz. Mint simple syrup* 5 oz. Fresh lemon juice Club soda 3 Dashes rhubarb bitters Garnish with candied rhubarb Combine ingredients in a mixing glass and shake with ice. Strain into a snifter filled with ice and top with club soda and garnish. * Make mint simple syrup by combining 2 to 1 sugar to water ratio and simmer on low heat uncovered until syrupy (1/4 water reduction). Add mint, remove from heat and let steep for 20 minutes. Broken-hearted beeting Margarita 2 oz. Tequila 1.5 oz. Sour mix 1/2 oz. Muddled beets 3/4 oz. Blood orange juice Salt, sugar and cocoa for rim Garnish: a heart-shaped beet Stir and rim half the glass with a salt, sugar and cocoa. Garnish with the heart-shaped beet stabbed through the middle.

Chef MacKinnon has been actively involved in the local culinary community throughout his career, and currently serves as President of the Prince Edward Island Chef’s Association. The Location While admittedly, some guests may have a hard time leaving the inn once they have settled into their luxurious suites, Charlottetown has plenty to offer to its visitors. The History The main Notre Dame building — overlooking the Hillsborough Square — was constructed in the mid-1800s to serve as an educational facility. Throughout the years, additions were added, making the already beautifully imposing structure even more so. It remained as such for nearly 120 years, until 1971, when classes ended as new schools were built to meet the needs of a growing community.
Following the school’s closure, the property became a retreat for the nuns, and a portion of the building acted as a nursing home for the aging sisters. It was 2013 when the decision was made to close the convent, which was, at the time, home to nearly 30 nuns. By 2014, the building was officially closed, and placed on the market the following year. This is where the story begins. As the property was viewed, the investors knew in their core that the structure was meant to be something special; something remarkable, memorable and nothing short of extraordinary. “The thing that intrigued me the most standing on the sidewalk and looking at the property was how timeless the building was,” MacPherson explains. “The lines were simple and clean. Masked behind tall maple trees, it was almost an unknown property to many people.” Despite showing no signs of life, the building had a certain aura about it. Something that, at the time, was hard to put a finger on. All MacPherson knew was that while it had a storied past, its future would be even brighter.

“Once inside the building, I was amazed at how the sisters had respected and maintained the property. The building inside was as original as the day it was built,” he says. The hardwood flooring, detailed stairways, solid wooden doors, and detailed window and door trim lent a certain ‘something’ to the remarkable space, and a plan was set in motion to reveal the building’s true splendour. “The investors wanted to develop an understanding, an appreciation and respect for what this property stood for,” explains MacPherson. “Whatever direction they were to take, it was necessary to create a harmony between the past and the future vision they were to develop for this property.” From beginning to end, it was a process that took much more time than MacPherson ever expected, but with the support of the City of Charlotteown Councillors, the Mayor, the neighbourhood and the Sisters, he had the confidence that was needed to pursue the dream. The goal? To create a property that reflected an appreciation and respect for the environment, and to bring the property into the 21st century, all while maintaining its historical charm.

One of the advantages of purchasing a custom home is the opportunity to select features and finishes that reflect your own personal tastes and lifestyle. Too many choices - so what’s a buyer to do?
Once you’ve chosen the house plan you’d like to use or have a concept drawing arrange to meet with your builder to discuss changes or amendments to the floor plan. Buyers who want to add rooms or garages, move doors or add a fireplace or recessed lighting, for example, need to make their structural changes early in the process because those changes may impact the building permit pulled by the builder. These types of changes — as well as any electrical or plumbing changes that would require walls to be opened — would also be costly to make after the home is completed. 2. Upgrades Remember that it might make sense to make certain upgrades after the build has begun. Cosmetic features in particular, such as paint, landscaping, lighting and plumbing fixtures, epoxy garage flooring, crown moulding, chair rails, window treatments and even certain appliance upgrades can often be made afterwards, particularly by homeowners who have a budget. 3. Follow your builder’s timeline to select other options or upgrades. Your builder will give general allowances for finishes and fixtures, i.e. a budget for flooring, lighting fixtures, etc. If the homeowner is concerned about budget this is an opportunity to take advantage of sales and bargains in the local market such as utilizing discount centres and even local thrifting options like the Restore or online shopping. Before making any second-hand purchase be sure to check with the builder to ensure the
product is suitable and safety checked. Getting a fantastic deal on a doublewide refrigerator is great, but if it requires changing the layout of the completed kitchen – the bargain isn’t such a great deal. 4. Start a Dream Board As you’re planning your new build go online or look through home décor magazines for ideas and collect everything in a binder or bookmark the pages online. Sites like Houzz. com allow you to search images, save your favourites and shop or source your picks. 5. Prepare a Budget Prepare a budget — and stick to it. Walking into a design centre is a little like being a kid in a candy store. You’ll see cabinets and granite and top-of-the-line flooring. To avoid overspending — and overextending yourself — prepare a budget before your shopping starts. 6. Needs Versus Wants Be flexible. Remember that you have a budget and that you may not be able to afford all of the extras you’d like, so prepare a list of must-haves and want-tohaves. 7. Resale Value Don’t over-customize. Of course, new-home buyers want their homes to reflect their personal style and taste. But, it’s important to consider the resale value, as well. Those lavender granite counter tops in the kitchen that you’re thinking about may make your home difficult to resell in a few years.

The Davies family originates from England; having vacationed here in 2008 they fell in love with the place and decided to make it their home in 2011. sing plush textures such as velvet will add depth to the room and is a simple way to make your space more interesting. Layering different textures is very important, you don’t want your room falling flat when it comes to texture. Adding some extra details to a piece can take it from good to amazing in no time. There’s little details that can be done to help create a more tailored piece. Adding nail heads, tufting the back cushion or even adding piping around the edge. Piping may not seem like it would make a big difference but trust me, it will take it to the next level. We are moving away from grey-brown earth tones and introducing rich jewel tones. Jewel tones have been on the rise for some time and I don’t see them slowing down anytime soon. The rich vibrant tones provide drama to a room, while adding style and colour to a space. Navy blue, emerald green and canary yellow are strong, bold colours that will make any piece stand out in the crowd.

Pattern is a great way to personalize a chair or sofa and to make it your own. Bold vibrant patterns are on the rise for upholstered furniture and are a great way to add a pop of colour and style to any room. Try using a large-scale pattern on a chair and a complementary smaller scale pattern on a toss cushion. Mixing patterns will give you that designer look. When you are ready to redo that old chair that was passed down from generation to generation, there’s one thing that is so important to consider. That’s why I am putting comfort into one of my trends. This is the time to decide if you want a firm seat or back. There’s many options to choose from which include different density of foam, memory foam, down wrapped, new springs, softness of fabric and cushion wrap to name a few.

Study habits that work. One of the most frequently asked questions by parents and students is, “What’s the best way to study for tests?” Although there isn’t a single guaranteed way, there are study tips and techniques that almost always work in combination with dedication and determination. Encourage your child to try these out before their next test!
Cramming doesn’t work. The “all-nighter” is a time-honoured strategy for getting through tests, right? Wrong! The human brain just isn’t made for cramming. If you want to learn something, put in the time to practice and master it. Just ask any accomplished athlete or musician. Neither does multitasking. Multitasking is a myth. It’s okay for everyday chores and activities, but for important tasks like studying, you cannot give 100 per cent of your attention to more than one thing. It’s simple arithmetic. Budget your time. Based on what kind of learner you are decide what routines work best for you. When are you at your best: Morning or nighttime? Take control of your time, your learning and your grades by dedicating yourself each day to keeping up with your studies. Be sure not to procrastinate! Keep up with the reading. Newsflash! You can’t keep up with class material, discussions or projects if you’re not up-to-speed. Do the daily drills and practice. Read the daily assignments. Make a list of things you don’t understand so you can ask about them. Be involved. Be active. Be in control.
Anticipate the test questions. It’s usually not too difficult to know which questions teachers will put on tests. Pay attention to what is stressed during class. What major points keep cropping up? What are favourite and recurring themes? What skills are stressed? What are the book’s chapter headings? If you were the teacher, what would you put on the test? Anticipate your answers. Prepare some possible answers, especially for short and long answer questions. Do you have enough information to fully answer the question? If not, keep working on them. Star athletes anticipate challenges, so do the same thing. Think ahead. Organize yourself. No matter what you’re working on in life, organization is guaranteed to help. Keep a planner with important test and assignment dates in it. Schedule study times alone and with study buddies. Keep notebooks and electronic material organized, so you can easily find what you need. If organization isn’t your thing, ask for help from friends, parents, or teachers. Take good class notes and review them regularly. Write or type the major themes and important information in class each day. Then, just like star reporters, interviewers and writers do, review them as soon as possible to make sure you’ve got it!. If you don’t, ask follow-up questions. Set goals. Be determined that this time you’re going to be serious about improving your test grades. Take care of yourself. Get enough sleep, eat sensibly and use your common sense. orrie Jollimore always thought she would be a teacher. As her graphic design career blossomed, however, it seemed unlikely. And then everything changed. Jollimore’s interest in neuroscience started when her daughter was diagnosed at 11 months with Cerebral Palsy, resulting from a brain injury at birth. Seven months later, Lorrie became aware of the Anat Baniel Method (ABM) NeuroMovement. Endorsed by Neuroscientist Dr. Michael Merzenich, the father of brain plasticity, NeuroMovement relies on movement and awareness to develop, enhance or build or restore function.
trying to move his body using his neck only, causing painful spasms. Through gentle movements, Jolliemore is helping him map connections between his brain and body and he is now moving his arms, legs, back and pelvis. “He is less spastic and doesn’t arch as much, and sleeps through the night,” reports his mother Emily. “He coos, reacts to sounds, smiles – and has really come to life.”

Four-month-old William, a premature twin born with a neurological disorder, was

Due to a motor vehicle accident, Jollimore’s student Paula had lived in pain for more than 25 years, prematurely giving up her nursing career. After trying acupuncture, physiotherapy, osteopathy and chiropractic treatments, she finally got pain relief from NeuroMovement lessons. “I began to feel different right away. Lorrie gently worked with my legs and hips, ‘showing’ my brain what movements could be done. That night, for the first time in many years, I was able to swing my right hip into bed smoothly and without pain,” said Paula. “Through ideal movements, my neural network learned different patterns and possibilities, allowing my body to start healing itself.”
This interest led Lorrie to a major career change, and she did begin to teach — but her classroom, students and lesson plans were not anything like she expected.
Normally a baby’s nervous system intelligently maps movements into its brain so they become natural. Babies born with physical impairments are unable to do this mapping; however, through NeuroMovement, the infant learns and maps ideal movement.
Continuing speech work has led to an increased vocabulary and a boost in the girl’s self-confidence.
Despite intense physiotherapy, stroke victim Carol was left with a spastic left hand and an inability to walk on her left heel. Through lessons with Lorrie, eight years after the stroke, Carol remapped her left body and ultimately achieved her goal of walking confidently on the grass for her daughter’s outdoor wedding. Bathurst, NB, mother Anna credits NeuroMovement with her daughter Rowan’s improved speech. While addressing physical limitations, Jollimore began incorporating different sounds into lessons and the girl started distinguishing between them and using them to form words.
Jollimore is thrilled with her new career and continues to be amazed at the results of her lessons. She operates Movement and Vitality at McKinnon Wellness in Charlottetown – and her daughter happily runs with her friends. WINTER 2017

we age, it becomes increasingly difficult to maintain a healthy body; there’s menopause, for starters, but many of us also have busy schedules, and lack the energy needed to exercise. And yet, we can’t stress enough why it’s so important to “commit to fit” – it’s about more than looking great. Here are just five reasons to maintain your fitness after 40. 1. Muscle Burns Fat, Even While Resting A body’s metabolism has a large role in how food is converted to energy. Those
who have a higher degree of muscle mass burn calories even when they’re at rest. As a person ages, metabolism naturally slows down, leading to gradual weight gain. Muscle is a great way to counterbalance the body’s natural slowdown, and the earlier a person starts, the easier it will be to maintain that muscle over time. 2. Building Muscle Delays Bone Loss As a person grows older, bone loss is inevitable, especially for women after menopause. This can cause bones to
break more easily, feelings of fatigue and weakness, and reduced tolerance to physical activity. Weight-bearing exercises strengthen bones, helping minimize natural bone loss and reducing the risk of injury. When a person lifts weights, it also builds strength and balance, which can help prevent falls. 3. Muscle Toning Improves Balance Balance has benefits beyond preventing injury. It comes into play no matter what you’re doing, whether it’s carrying groceries or climbing a set of stairs. Through strength training, you can more easily accomplish these tasks even as you get older. Muscle

CrossFit 782 is a true success story. This local gym didn’t just outgrow its previous address—its membership has virtually doubled in about a year.
B
oth Mike Ives and his CrossFit 782 co-owner, Brett Roberts, seem excited that their gym now has more than 200 members. They’re especially enthusiastic about members’ diverse ages, genders, and fitness levels. “It’s open to everybody,” emphasizes Ives. Ages range from seniors to teens; Roberts coaches a 3:30 p.m. class especially for teenagers. Among people unfamiliar with CrossFit, Ives acknowledges, misconceptions about workout intensity aren’t unusual. However, he doesn’t describe CrossFit as punishing or elitist. Rather, he says, it’s a straightforward system consisting of efficient, varied workouts emulating natural body movements. “Workouts are sometimes long, sometimes
44
short. They combine gymnastics, weightlifting, running, and lots of other things.” While CrossFit is accessible, it’s also challenging. It’s “very popular with athletes and first responders,” Ives notes. Members can tweak workouts for their strengths and weaknesses, and the atmosphere is far from highpressure. On the contrary, members keep each others’ morale high. “The workouts are great. The coaching is rocksolid. But overall, CrossFit 782 is about community.” “It’s a positive, supportive environment people want to belong to,” agrees Roberts, who says members’ visits bolster “both physical and mental health.”

New arrivals at CrossFit 782 get their bearings at a complimentary intro class, subsequently learning the ropes through a private or semiprivate three-class Fundamentals Program. Following the Fundamentals Program, they’re free to attend classes and “open gym” hours as often as they choose. Both Ives and Roberts have trained in CrossFit for years —which, apparently, isn’t rare. “We have members who’ve been with us for a decade,” Ives says. However, “We want everyone to leave every class better than when they arrived, whether you’ve been with us ten years, or ten classes. At the end of the day, it’s you against yourself.”

link and you might miss Blake Caissie Signature Blonde Salon, an exclusive hair salon tucked onto the second floor of a condo-style building amid the hustle and bustle of Queen Street in Downtown Charlottetown. The salon may not be front and centre, but it offers an individualized one-on-one experience second to none to its loyal clientele base. Sitting in the chic and cosy entryway of the salon, Caissie explained how he knew he always wanted to be in the hair industry, following in the footsteps of his mom who was a hairdresser years ago. “I was a little unclear of the industry on PEI because going into it, there wasn’t a lot of male hairdressers. It was a very undervalued industry as far as men,” he says. Following his studies in hairdressing at the acclaimed Marvel Beauty School in Yorkville, Toronto, Caissie worked for a leading high-end salon. He returned to Charlottetown where he has now taken his brand to new heights with his signature blonde balayage services at the Island’s only signature salon. The salon focuses mainly on blondes because Caissie knows the value in a client’s satisfaction when they leave his salon with the perfect customized blonde and exclusive hair treatments just for blondes. “Clients come in and say they’ve never been happy with their blonde. That makes why I do what I do,” he says. “Clients want the new, of-the-moment look or to achieve the level of blonde that they’ve always wanted, so hopefully I can do that.” One
hundred per cent of Caissie’s clients leave the salon feeling amazing, selfie ready, and with the hair goals they came in for. “I wanted to create the experience of where you’re getting what you want in your first visit and then you can maintain that with low maintenance.”

It’s me just creating my brand on these girls, and some guys, but it gives you that look that is going to look classic and effortless.” In a world of social media, Caissie has also been able to tap into a major following on Instagram and Facebook by sharing photos of his work. He looks to his role models from a high-end salon in Los Angeles called Ramirez Tran Salon who started the whole before-and-after transformation posts on social media. “When I started doing beforeand-after photos people saw it on real people, on their friends. We all think we want that perfectly filtered look, but in the real world everyone is so individualized and I think that’s what makes us unique.” As trends come and go, Caissie is constantly educating himself on new techniques and tips of the industry, which he says is one of the most important things a stylist can do to stay relevant. “I think the hair industry has changed so much in the last three years, at least, where it’s not about coming in

Her “Fashion Mobile “as she calls it, has been popping up at events and private parties on the Island for the past year as part of her business, Go Girl Fashions & Accessories.

Go Girl’s innovative Fashion Mobile is 25 feet long and has been retrofitted as a full boutique with change rooms inside. The Fashion Mobile is a fun and convenient option for women, especially in an era when the way people shop is constantly changing. Barke says that “While online shopping is convenient in many ways, being able to bring the actual product to women so they can touch and feel it and see what it looks like has its advantages. We are able to take our store on wheels straight to our customers providing them with the convenience of shopping from home with the benefit of actually seeing the product in person. We can customize the bus for private parties, festivals and any other events our customers want us to attend”. The Go Girl Fashion Mobile has stopped for events all the way from Tignish to Souris. In the spring of 2018, you will occasionally find the Go Girl Fashion Mobile across from the Charlottetown Farmers' Market in the UPEI parking lot. Barke started Go Girl Fashions & Accessories in August of 2009 by doing “pop up’s ‘' on PEI at the Credit Union Place in Summerside twice a year. As the business grew, she felt it was time for a “brick and mortar” location. This would allow her to regularly engage with customers and the business community of Summerside. With the encouragement of her husband and family, Paulette opened her permanent

Perfect Venues and Menus MHG Catering & Events It’s impossible not to appreciate Prince Edward Island’s surreal beauty. When it comes to elegance and romance, the Island equals Niagara Falls or the Eiffel Tower. That makes PEI perfect for weddings—and, through Murphy Hospitality Group (MHG) Catering & Events, PEI-based nuptials can be celebrated in venues as charming as the Island itself. Charlottetown’s PEI Brewing Company is one such space. MHG Catering & Events General Manager Kelley Gillis calls the Brewing Company “extraordinary,” describing a mixed-media woodwork and brickwork interior that could easily complement diverse decorating schemes. Couples looking to highlight this unique venue might treat guests to a brewery tour, or a draft from a customized cask of beer. MHG Catering & Events’ RiverShed venue lies a short distance from Charlottetown, in the Oyster Bed Bridge area. Despite its 150-person capacity, this waterfront space strongly resembles one of the Island’s beloved “getaway” cottages, and features firepits perfect for late-night entertaining. Couples planning a winter wedding will likely fall for Fishbones (in warmer months, this capacity-120 event space is one of PEI’s finest seafood
restaurants). Fishbones’ interior could easily lend itself to a metropolitan, warehouse-style wedding: it’s a stylish--yet relaxed and unpretentious— space. Fishbones, the RiverShed, and the PEI Brewing Company all feature a menu by Culinary Institute of Canada graduate Chef Lincoln Key. “We focus on fresh, local products from local suppliers,” Gillis says. “Whether the event is for 30 or 300, guests still get restaurant-quality food.” The drink selection is chosen just as carefully. “The bar menu includes local, handcrafted ales,” says Gillis; at the PEI Brewing Company, “guests can drink beer that’s brewed in the same building!” The menu on MHG Catering & Events’ website speaks to Chef Key’s gift for chic, playful wedding fare. Couples can tempt guests with lobsters, smores, and even off-kilter delights like mashed potato martinis. And since MHG Catering & Events caters offsite, it’s possible to enjoy Chef Key’s menu even if you’ve already booked a venue. MHG Catering & Events builds “relationships” with clients, says Gillis, that can last 12 months or more. And—venues and menus aside—the company’s most appealing quality may well be their remarkably personal approach during that time. “We’re able to be part of someone’s big day. That’s the most exciting, special thing for us.”

Creator of Sand Band A minimalist wedding band embossed with sand, Kuriosities is perhaps best known for its Sand Band, which is created with sand from the picturesque beaches of Prince Edward Island. “Many clients choose to gather their own sand from beaches that are dear to their hearts,” says McIntyre, who is passionate about honouring each of her clients’ stories. “Each may have their own special beach embossed, or choose to have a beach that is part of their love story.”
Why sand? “The ocean is an integral part of every Islander’s life,” explains McIntyre. “The rhythms of the tides, the salt in the air, the crashing waves. “To me, it means home. I use it in my work to honour that connection we have as Islanders to our home. Many of us travel away to find work, to study, or to follow our dreams. It is a tangible symbol of our Island home that we can carry with us until we can return.”
Whether you choose your band to be created from sterling silver, or yellow, rose, or white gold, Kuriosities places a huge focus on using recycled metals whenever possible. A History in Creation McIntyre has been passionate about art and storytelling for as long as she can remember. “I was never without a notebook, sketchpad or paint,” she says. From the time she was just a little girl, there was also always something about gems that she found fascinating. “I fell in love with an amethyst bracelet, and through my obsession with it, decided I needed to uncover how it was made,” she explains. “That started the whole ball rolling 16 years ago, and I have never looked back.” Part of the draw is that there is always something new to work on in jewelery, a new skill to master, a new teacher to study under, a new trick from fellow jewelers. “It is endlessly fascinating to me,” says McIntyre.
A Passion for Her Craft For McIntyre, there’s no such thing as a dull day at the office. “I never stop designing in my head,” she says. “It is never quiet in there! There is something immensely satisfying in taking the pictures from my brain and making them tangible. To me, it is magic. I am constantly excited by what I do, and always striving to reach the next level. I love it all.” It seems this PEI jeweler is doing something right. Her pieces are worn by more than 75 thousand people, including many wellknown musicians and celebrities. It’s not a number — or an honour — she takes for granted. After all, nothing beats knowing her bands are worn by couples in love. “It is so exciting to be included in their special day, and to create pieces that they will wear daily for the rest of their lives together,” she says. “I love when couples come into the shop after their wedding and show me their wedding photos, and love watching as their new families grow. It has made me fall even more deeply in love with this Island, and our community.”

Twenty-five years ago, a young jewelry designer set out to do something a little differently. Her goal was to create pieces that not only reflected the wearers’ core values, personality, and style, but also held deep personal meaning, would stand the test of time and never go out of style. Fast-forward to 2017, and it’s clear Jeanette Walker — who comes from three generations of metalsmiths — has done just that, and more. Her studio, co-owned with her husband Lindsay and located in an historic building in Charlottetown, is filled with jaw-dropping examples of finely-crafted pieces, each collection a testament to the designer’s true artistry and raw, unparalleled talent.

Thank you for making this most beautiful artistic expression of our momentous day!" - Client ▲ Jeanette Walker (Photo: Lans Photography) Designed with the Earth in Mind Walker takes care to design and create her one-of-a-kind pieces in a sustainable manner. “Being kind to the Earth and its creatures is important to me,” she says. “It’s important to me to minimize my footprint, while creating romantic, nature-inspired pieces that keep Earth in mind.” Indeed, Walker is not concerned with chasing the latest trends or creating staid, uninspired pieces. Rather, she strives to design jewelry for nature and ocean lovers. “My business focuses on being eco-ethical friendly,” she says. “I’ll often repurpose a client’s heirloom or outdated jewelry.” All of the diamonds she uses are recycled or laboratory grown, but she also uses a lot of customers’ diamonds passed down from family. “I’ll take peoples’ materials and design around what they have,” she explains, showcasing a gorgeous stacking ring she created for a customer using vintage diamonds and gold. It’s been especially popular for those seeking a one-of-a-kind engagement ring or wedding band. “Adding a loved one’s gemstones or gold is a beautiful way to honour the past and imbue your new piece with personal history and meaning,” she says. Since heirloom jewellery often carries precious
memories and emotions, it’s an honour for her to listen to the stories behind these pieces. “It’s what makes my work meaningful,” she says. Walker also specializes in redesigning anniversary pieces. “People who have been married for 20 years will bring in their original wedding set and then I’ll melt that down and make them something new.” Ancient Techniques, Modern Masterpieces Using ancient jewellery-making techniques, Walker has perfected the art of sand casting, amalgamation of metals and granulation. “These slow techniques create collections of modern sophistication,” she explains. “However, each piece of jewellery carries a flavour of the past and has a unique old-world appeal.” Jewelry Designs with Personality and Soul

Test-drive different shades Certain shades look better on different skin tones, so test out different shades in the months leading up to the big day. For an elegant look, try a classic French manicure. Once you've found your perfect shade stock up. One for the salon, one for your wedding day emergency kit and one to pack in your honeymoon bag.
It isn't the end of the world if you chip your polish. Use the tip of the brush to fill in the hole, then let the polish dry for 30 seconds. Next, brush on a second coat of polish and finish with a thin clear top coat.
To Gel or not to Gel Note that some traditional nail polishes are chip “resistant” but not chip free. A Gel polish sets (or cures) under a UV light. Sometimes Gel is known by some of its brand names like “Colour Gloss” or “Shellac”. Lastly, a gel top coat is applied and the nails are again set under the UV. Gel polishes should be done only one or two days before your wedding. While many adjectives have been used to describe Clinton Hills — from stunning, to breathtaking to magical — there’s perhaps only one way to describe this rustic wedding venue: an absolutely pictureperfect place to get married.

By combining rustic country charm with contemporary personal conveniences, Clinton Hills is redefining the traditional country venue, says Maribeth Roberts, who co-owns the venue with her husband, George. “The barn, with its cathedral ceiling, rustic beams, and original wood floor creates a warm, homey feeling that is priceless,” she says. Whether couples choose to exchange their vows in the enchanting woods, while overlooking the spectacular panoramic views of the Southwest River, or in the courtyard next to the barn, they’re guaranteed one thing: dazzling memories that will last a lifetime. “Our goal is simple: to create an occasion or an experience for all attending that is memorable, heartwarming and has that ‘wow’ factor for years to come,” says Roberts. The main loft, which presently accommodates 165 people on the main level and another 20 in the upper section, is what Roberts proudly calls the venue’s “showcase.” This winter, Clinton Hills will be undergoing a number of renovations, which will only elevate the already stunning venue. “We’re getting ready for an exciting 2018 season,” says Roberts. Changes include the addition of a brewery, landscape updates (including a new pond and a romantic fire pit), and the enlargement of the already gorgeous loft. Once the renovations are complete, the breathtaking space will have the ability to hold 200 people.
It seems the venue is onto something. In 2017, Clinton Hills was named by Weddingbells magazine as one of Canada’s Loveliest Venues; it’s an honour Roberts is justifiably pleased with. “From our very humble beginnings in 2011, when we started to transform a tired, and neglected dairy barn, I can’t begin to tell you what it has meant to us to be bestowed with this distinction,” she says. “It is truly an honour to be chosen from wedding venues from across the country from coast-to-coast.
“Our goal is simple: to create an occasion or an experience for all attending that is memorable, heartwarming and has that ‘wow’ factor for years to come.” The main dish promises to be just as spectacular; there’s everything from steak and salmon dishes to stuffed bell peppers and traditional lobster dinners. Shawn LaVie, wedding photographer extraordinaire, uses images to tell stories – but he’s a storyteller, not a story maker. At each wedding he photographs, he lets moments unfold on their own and captures them with his camera, as opposed to setting up posed shots. LaVie, a native of Souris, P.E.I., runs his business with his wife, Jennifer, a wedding expert in her own right. She created her wedding planning business, Kiss The Bride, in 2007, and LaVie is an integral part of her business as well, as they have worked together as a team for the past six years. The couple know how much work and how much pride rests in every wedding “and that gives us a huge advantage when photographing a wedding,” says LaVie. He says one of the keys to shooting a wedding successfully is getting to know the clients beforehand. That includes getting to know about their family and their weddingday vision. “This helps me to be able to anticipate the moments of the day and to be on the lookout for those key things that, unless you knew about them, otherwise may not be captured. It helps with my clients’
comfort level on the day of the wedding as well.” While LaVie is a creative person, he doesn’t aspire to shoot “perfect” wedding photos. “People sometimes get intimidated by styled photos that are seen online, and worry that their wedding will never look that way. They are probably right. My ideal client is not concerned with wanting everything to look ‘perfect’; rather they understand that what makes their wedding perfect is the imperfection, the uniqueness that is only their relationship, their day,” he says. “I like to say that I see perfection in the imperfection and always try to approach each wedding with an editorial mind frame. There’s nothing like capturing true emotion in a photograph.”
And Prince Edward Island often provides him a great backdrop for capturing great moments. “P.E.I. is home and always has been,” he says. “Having worked along side of my wife for the last six years in the wedding industry here, I can honestly say, it is also one of the most amazing places to come to have a wedding. It’s a huge destination wedding location in Canada. So many people who have absolutely no ties at all to the Island are coming here and bringing hundreds of people with them for their weddings. Who can blame them? We get to live in a place where — especially in the summer — everywhere you look there is so much beauty.”

Not everyone wants to leave an inheritance. But several studies over the last few years have shown that some boomers plan to spend what they have instead of passing it on. While Canadian data on this subject is sparse, a recent Australian study* found that one-fifth of baby boomers plan on dipping into their kids' inheritance to take trips. A 2016 U.K. study** found that one-sixth of people between 50 and 70 plan to spend all of their money before they die, while a 2014 report*** indicated that 66 per cent of people between 50 and 65 would rather spend their money than pass it on to their children. Christine Van Cauwenberghe, Vice-President, Tax & Estate Planning at Investors Group says that, in her experience, most boomers still want to pass down something to their children but many will likely end up spending a much larger chunk of their savings in retirement than their parents would have. "When boomers do a financial plan, it might become clear that they'll need the majority of their assets to support themselves, especially as they age and the need for costly medical care escalates.
Another option is for boomers to hang on to their house until they die or until they have to move into an assisted living facility. The children can then sell the home and take the proceeds as an inheritance. This option can become difficult when the boomer parents have their retirement money tied up in their house — meaning they'll have to sell to access those funds. Whether to spend what they have now or pass some of it down is a decision that should be made through frank discussions between boomer parents and their kids. "Everyone should know what's happening," says Van Cauwenberghe. "Explain your motivations and be sure your true legacy is not just about money, but support for everyone's plans for the future." Rock’n’roll Chameleon Two years ago, Islanders were surprised and impressed by Billy McGuigan, a performer that took on the ambitious challenge of a rock’n’roll survey show – all the way from 50s hits to the psychedelic 60s, through to the groove of the 70s and 80s – and he rocked it! Billy McGuigan’s Rock Show is also interactive – tell him what you want to hear at the top of the show or intermission and see what the chameleon comes up with! Relative Zones of Comfort If getting off your couch means moving ever so slightly out of your comfort zone, then Confederation Centre’s 2018 Live @ the Centre line-up is designed for you. Montréal-based band from Chad H’SAO has been capturing a lot of attention lately. The band’s blend of modern sound and traditional African musical influences draws from gospel, soul, R&B,
reggae and Chadian music. Come down to The Mack and meet brothers Caleb (guitar), Mossbass (bass) and Izra L (keyboard) along with their childhood friend Dono (drums). Conversant with classical, or down with hip hop? Why not change it up and check out how the other musical half lives? Atlantic String Machine are already turning their February 24 show “on its ear” by reversing the room: the audience will be seated on the Homburg Theatre stage while the talented string musicians perform on the thrust edge. On April 27, Classified, the platinum-selling rapper from Enfield, NS, presents a stripped-down acoustic show for one night only. Classified’s lyrics deal with topics like personal struggle, fatherhood, and his artistic journey; this special performance will also feature invited guests and musical collaborations. Insider Tip If you have never attended a concert in Confederation Centre’s Art Gallery, please take our advice and book tickets now for the May 8 performance by Geneviève RB and Alain Barbeau. The small venue and artsy surrounding make for a very exclusive atmosphere. This performance by pianist Geneviève and guitarist Alain Barbeau offers up a fusion of folk and pop music from their album On est les deux.

HOT 105.5 PEI’s New Music Showcase By Rebecca Spinner Photos Story Sheidow Hot 105.5’s listeners never waver from the station’s flawless playlist of great new music: Hedley, Taylor Swift, Bruno Mars, and the rest. But “hotties” (as listeners are called) also keep an ear open for the station’s irrepressible on-air hosts—Ashley Bee, Johnny Novak, Angela McNally, Matt MacLeod, and Hot Dan. The “Morning Hot Tub” with Ashley Bee and Johnny Novak provides hit music, topical conversation, and more from 6 a.m. onwards. Ashley and Johnny (both Ontarians) are relatively recent Island arrivals; Novak hails from Ottawa, Bee from New Hamburg. However, program director Matt MacLeod notes, Bee recently purchased a home locally. Matt himself is originally from Uigg, and worked in multiple Atlantic locales (“I call 88

it ‘the Maritime tour,’” he jokes) before returning home. He originally hosted Hot 105.5’s morning program; now that he’s awaiting his first child, he’s switched to helming the afternoon broadcast. Music director “Hot” Dan Gallant also hails from PEI; a Holland College alumnus, he snagged his spot at the station through an exceptionally successful internship. Hot Dan handles the station’s evening entertainment, including the Hot 6 @ 6 spotlight (“PEI’s only daily countdown of the day’s hottest songs,” Matt notes) plus the latter part of the Saturday Night Throwdown. Midday host Angela McNally takes Hot 105.5’s reins from 10 a.m. to 2 p.m.; she presents the throwback-focused 30 Minute Lunch Jam. Angela originally arrived here from Moncton. Now, Matt says, she’s lived
in PEI for years. “She’s really in touch with what’s happening in the community,” he notes. That’s important, since Hot 105.5’s “Hotties” are integral to the station. In fact, the station’s storefront studios, located on Great George Street, allows listeners to glimpse the hosts in action. Hosts are also happy to swing by local events in the station cruiser. Broadcasting an impeccable music selection (and handling everything from birthday requests to blizzard warnings) Hot 105.5 is PEI’s new music touchstone. While you’re enjoying music from Sia, Demi, and Ed, it’s a pleasure to catch up with Ashley, Johnny, Matt, Dan, and Angela, Hot 105.5’s motley crew.

Q: How long have you been painting?

Born in 1967 on Prince Edward Island, Lindsay Walker is self taught, and has been creating art as long as he can remember. His first sale was a drawing at the age of seven. Walker was introduced to the art of Robert Harris in the archives of The Confederation Centre of the Arts at an early age, and it left an impression on him that he would never forget. He absorbed the great care everyone was taking with the paintings, the white gloves, the awe of the work, and learned that this fellow Islander had been long gone, but his art would always remain. It turns out to be a philosophy of his to this day, to create art whose admiration can stand the test of time. His work is a reflection of his surroundings, and simpler times.
I've been painting since 1997 or so. I painted in school as well, juniour high and high school art classes. But I really caught the bug around '97, and I've been painting full time since 2003.
Q: How did you get started as an artist? Well, I had a Government job in downtown Toronto all of the 90s, which is where I met my wife Jeanette. I showed her some of my old drawings, and she asked me to draw a wolf for her, and so I did that Christmas of '96. It was shortly thereafter she bought me a brand new set of oil paints and brushes, and I've had paint on all my clothes ever since. It's all down to her encouragement and pushing me to go for it really.
Q: What inspires you? I would say, Mother Nature's endless beauty, and simple times.
Q: How long does it take to complete a painting? It depends on the size and the amount of detail. I usually stretch all my own linen as well. So I'll figure out a subject, and make a canvas size to suit it. Generally, I would say the average painting would be a few months of 10-hour days. I have had one six foot piece on my studio wall for more than ten years now. I've got to finish it. But hey, Mona Lisa's smile took ten years to perfect too right?
Q: Do you do commissions or custom work? I do. I love doing murals. I've been lucky enough to be commissioned to help paint the pediatrics ward at the QEHospital here on the Island, a Canadiana sport theme in Fort McMurray, Alberta that took six months to complete, and two great restaurant projects in Greenwich, and Manhattan NYC.
Q: Do you now or do you plan to have an exhibit of your work? If so - when and where? If not - where can the public see your work? I am going to have a show in the spring at our studio space in Charlottetown. My work can also be found at The Dunes and Ellens Creek Gallery on the Island, and my website Lindsay Walker Art.com .
Q: What goals do you have an artist for the future of your work? I'd love to travel some more and create large murals again. I always love challenging myself with something totally new. I love growing, and learning new things. But mostly, I'd love to be lucky enough to just keep painting.
Q: Do you have a favourite painting? Yes, I do, and it's always been the same. My next one.
