FROM THE EDITOR-IN-CHIEF
Welcome to a new year!
Today was a “snow day” here on the Island. Nevertheless, I bundled up my two-year-old and we headed outside for a brisk, blustery walk. And while yes, it can sometimes feel pretty cold and bleak during the winter - days like today, with a fresh blanket of perfect white snow, a travel mug of homemade cocoa, and an adorable toddler in tow act as a reminder that every season has its magic. Welcome to our winter issue of PEI Living: we’re excited to share it with you. This will be our second winter edition to offer our Bride Guide! It’s always so much fun delving into the world of bridal, and the Island certainly has much to offer. Starting with our cover feature, Stewart Travel Group. This grassroots travel agency is a wonderful example of building success from the ground up. With an overwhelming selection of vacation packages, from destination weddings to sightseeing adventures, Stewart Travel offers a professional experience with a personal touch. I love their story, and I’m sure you will too.

In our Home & Cottage section, Susan Snow delivers a beautifully renovated home located in the heart of Charlottetown. It’s a perfect family abode - blending artsy, chic styling with cozy comfort. I love the fun pops of colour and personality put into this design! Our Food & Drink section offers a great feature on eating locally called Living La Vida Locavore, and is another shining example of the innovation and resilience of Islanders. From local products to year-round fresh produce, we’re so fortunate to have a home rich in agriculture, offering some of the best food and drink in the country. And, I must say I am absolutely loving our new Arts & Entertainment feature by Kristen Johnson, the Book Report. In this issue, she shares her favourite books with movie adaptations to be released this coming year. I’m always amazed by her vast knowledge of literature. Choosing what to read can sometimes feel daunting, but Kristen herself certainly has a way with words, making the whole process easy, enjoyable and fun. And with ‘reading’ at top-of-mind, enjoy doing just that with this - our latest issue. I look forward to 2019, and all that it brings!

WINEMAKING Submitted by Chris Howard, White Oak Cellars

www.pei-living.ca WINTER 2019
With wedding season just around the corner and summer only a few months away, entertaining friends and family is something we're looking forward to after a long winter. Sharing a great bottle of wine is a great way to celebrate any occasion - or make a wonderful meal even better - but, having a cellar of wine at your fingertips was once an expensive investment. That's changed with the option of on-premise winemaking and winemaking has come a long way!
On-premise winemaking has become very popular. You can always have a great bottle of wine on-hand for a fraction of the cost as each kit produces approximately 30 bottles of wine in as little as four weeks. So, how does this work and what can you expect from the experience? The process of making wine on-premise starts with choosing the type of wine you want to make and what quality of wine kit you want to use. The wine options are varied with the kits, there is something for every taste or occasion. Most of the wines have a dry finish, but you can adjust the levels to your taste and there are sweetness indicators next to the wine names. The alcohol level in most wines ranges from 11 per cent to 14.5 per cent. There are so many options to choose from in addition to the many reds, whites and roses including specialty wines like dessert wines, ice wine styles, and uniquelyflavoured varieties such as chocolate orange, cucumber melon and strawberry watermelon. You can also choose a premium kit offering exceptional wines from some of the world's most renowned winegrowing regions. The LCB requires that you, the customer, own the ingredients and begin by sprinkling the yeast on the juice to begin fermentation. We assist you at all times to whatever extent required. After the batch is started you have no further obligations until the wine is ready to be bottled. When you arrive for your bottling appointment you need to sanitize your bottles, fill and cork them and finish by applying labels and
shrink caps. All the necessary equipment and assistance for you to accomplish this with ease is provided.
Not too hot, not too cold.
If you are looking for a more hands-on experience you can also make your own wine at home. You don’t need a lot of space and most kits include easy-to-follow instructions.
Store your wine in a spot with a consistent cooler temperature, around 12-15 C, to allow for steady aging and prevent oxidation or premature aging. If you store wine in your basement, keep it off the cement floor. Also, never store wine on a heated floor.
About four to six weeks later, you’ll have about 28-30 bottles.
Clean your wine bottles as soon as you can.
For special occasions you can use a customized label - what a wonderful idea for weddings, anniversaries or any significant date.
Rinsing out your wine bottles as you finish them and soaking for a few minutes to remove the label will make things easier when it's time for a new batch. If possible, store your empty bottles upside down - it keeps out the dust and bugs.
Winemaking is easy and fun, but we've all made mistakes! We've gathered a few winemaking tips we've learned over the years for you when aging your wine. Keep the cork moist. For the first three to five days, store your wine upright. Then after those first few days, store your wine on its side to keep the cork damp. Try to maintain a relative humidity of 50-70 per cent in the room to prevent the cork from drying out or becoming too wet and encouraging mold. Store in a dark place.
Sulphite is your friend. Sulphite solution is handy to spray on your equipment after sanitizing at home. This inhibits bacteria growth while storing your equipment. You can also use the sulphite solution in your airlock to help repel fruit flies. Chris Howard is the owner of White Oak Cellars in Summerside. White Oak Cellars offers brew-on-premise services as well as retail wine and beer kits and all the equipment needed to brew at home!
There is a chemical reaction that takes place when the wine has constant exposure to light that causes the wine to deteriorate. White wines and champagnes are the most susceptible to this reaction.

T
he Culinary Institute of Canada (CIC) recently unveiled their newly renovated restaurant, The Dining Room. Through the CIC’s three programs, Culinary Arts, Pastry Arts, and International Hospitality Management (IHOS), students hone their culinary and service skills under world-class instructors. Students are centre stage, and part of the experience for guests is having a front row seat on that educational journey. “The open kitchen lets you watch the students as they create your meal,” says Chef Instructor, Kimball Bernard, “You can feel the passion and see the excitement on their faces.” “The Dining Room is our classroom, and we 8

want to show people what we do here,” adds Robert Jourdain, IHOS instructor. “The culinary and hospitality students work together in order to learn and provide the best experience for our guests.” In the two-year Culinary Arts program, students begin with the basics of cooking. In their second year, they study a variety of subjects like charcuterie, international cuisine, and the latest food trends. They also work both lunch and dinner service in The Dining Room. “Their classroom is the kitchen,” explains Chef Kimball. “They get to practice their skills and develop their palate every day.” The students of International Hospitality
Management, also a two-year program, learn restaurant and bar management, training, and supervising, as well as hotel and business operations. Students even step into the kitchen to learn about food production, furthering their understanding of the industry. Before graduation, IHOS students will challenge two EMERIT exams; EMERIT is a nationally recognized tourism standards certification. “When they graduate, they will have worked over 1000 hours,” explains Jourdain. “That’s a six-month job already on their resume. At the end of the day, there’s always going to be people in need of hospitality, whether they’re hungry or sleepy. The tourism and hospitality

industries aren’t going away; it’s not a parttime job, it’s a full-time professional career.” All programs have a low student-to-teacher ratio, which provides plenty of opportunities for one-on-one training. “Students appreciate the small class sizes,” says Chef Kimball. “They get to know their instructors, and we know them all on a first-name basis.” Chef Kimball teaches International Cuisine, in which students learn about ingredients and cooking techniques from around the world. “The atmosphere that is created by using new ingredients, as well as cooking, tasting and discussing them, is exciting,” says Chef Kimball. “It’s a very fulfilling subject to teach.” Both the students and chef instructors
come from all over the world. Over a dozen geographic regions are represented in the programs, including Africa, the Bahamas, Bermuda, China, Europe, and India, to name a few. “We have students who are straight out of high school, mature students who are on their second career, and people who just want to learn more about cooking,” says Chef Kimball. CIC graduates have a 98% job placement rate, and are currently working in top restaurants and hotels across the globe.
The Dining Room is open year-round, and reservations are recommended. For hours of operation, please check the website: hollandcollege.com/dining

Espresso Cocktail INGREDIENTS 50 ml vodka 35 ml coffee liqueur 1 shot (25ml) of espresso Ice coffee beans orange wedges METHOD Pour the vodka, coffee liqueur and espresso into a cocktail shaker. Fill the martini glass with ice to chill and then fill the cocktail shaker with ice as well. Put the other half of the shaker on top and give it a good tap to lock it in, then shake the living daylights out of it. You want the ice to smash up while chilling the liquid down; it's what creates the frothy top. Try to use fresh-from-the-freezer ice, as melting ice is too watery and will dilute the martini. Once shaken, tap the side of the shaker to break the vacuum seal. Empty the ice out of the martini glass, then place the strainer on top of the shaker and pour the contents through a sieve directly into the glass. Using the strainer and the sieve helps create a rich, smooth, froth. Garnish with three coffee beans and orange wedge and attempt to contain your delight.
KEEP IT LOCAL Use a local fresh roasted coffee bean for this recipe and try Strait Vodka made right here on the Island.

A
celebration of fine dining in downtown Charlottetown, Winterdine features prixfixe menus designed to showcase the best of our city’s dining. Participating chefs create unique threecourse, dinner menus consisting of an appetizer, entrée, and dessert offered at two price points, $28 or $38 per person (plus taxes and gratuities). Winterdine, introduced in 2006, is your chance to experience some of Charlottetown’s best dining experiences, explore new restaurants or revisit old favourites. Dawn Alan, executive director of Downtown Charlottetown explains, “We wanted to create an event in January which would encourage people to come out into the cold, support local restaurants and socialize with friends, while enjoying a great meal at an excellent prix fix price.” Because Winterdine is price-driven they’ve taken the guess out of “how much will it cost." If you’re on a budget or a young couple with not much disposable cash eating out can be scary. The great price point also means that rather than going out to eat once a month, you can take in all three weekends. Running for three weekends (Thursday to Saturday), Winterdine begins January 24 and finishes off on February 2.
FOOD & DRINK
“People have made a 'gathering tradition' of Winterdine,” said Alan, “The same group of friends start in January to plan their Winterdine agenda. Because people choose where to go based on the menu of their choice rather than their favourite restaurant, they’ll try new restaurants which might become their new favourite.” This event provides an opportunity for chefs to shine but, reservations are a must as most restaurants are fully booked for this event – book reservations for all three weekends in advance to ensure you are able to sample each restaurant's Winterdine menu. Each participating chef creates special menu items for the event, some include vegetarian, vegan or gluten-free options as well as wine parings. 14
www.pei-living.ca WINTER 2019
“We don’t want them to present something from their regular menu at a Winterdine price, they must produce an exceptionally creative and delicious Winterdine menu to stand out in this crowd.” said Alan. Winterdine has become a winter-must in downtown Charlottetown. It's win-win for diners or restaurant owners, it's a toast to winter. Visit www.downtowncharlottetown.com for a list of participating restaurants and their menu offerings for Winterdine 2019.

Lobster Gnocchi
Submitted by Chef Seth Shaw Photos courtesy of MHG
“You can recreate this dish with many different vegetables, proteins, or starches.” - Chef Seth Shaw Brickhouse Kitchen & Bar 16
www.pei-living.ca WINTER 2019
LOBSTER GNOCCHI (Yelds 4 portions)
GNOCCHI (Yelds eight portions of 6 oz)
INGREDIENTS
INGREDIENTS
2 whole lobsters, cooked and shelled, tails cut in half 1 bunch kale, picked and washed 1/2 cup (113 grams) baby spinach 1 ½ cups halved cherry tomatoes 1 medium-sized red onion, sliced thin 2 Tbsp grated parmesan 1 bunch fresh basil, chiffonaded (sliced thin) 1/2 cup butter 1/2 cup white wine (preferably Chardonnay) 4 cloves garlic, finely chopped 4 portions gnocchi 4 Tbsp canola oil Salt and pepper
2 lbs Russet potatoes 3 egg yolks 1 cup all-purpose flour 1 Tbsp salt
METHOD Use one very large sauté pan or two large pans. On a medium-high heat setting, heat your oil and then add gnocchi and onion. Sauté until gnocchi is browned and onions are soft. Add garlic and lobster, then sauté for a minute or until the lobster is heated through. Remove from heat, add your wine, and toss. Place back on heat, add spinach, kale, and cherry tomatoes. Reduce your wine until a little less than half of the original amount remains. Remove from heat, add basil and butter, and toss until butter is melted. Season with salt and pepper and plate immediately. After plating, dust with grated parmesan and serve.
METHOD Bake potatoes at 350°F for an hour, or until soft. Let cool. While still warm, split cooked potatoes, scoop out insides, and run through a potato ricer. If you do not have a potato ricer let the potatoes cool completely, then peel and use a hand grater. Place the riced potatoes on the counter and make a well in the center. Place a layer of a 1/2 cup flour in the well, add egg yolks, then another 1/2 cup layer of flour and a quarter of the salt. Mix the riced potatoes, eggs, and flour slightly, for about one minute. If you overwork the dough it will become too heavy. Shape the dough into a ball and roll lightly in flour. Pull off a section of the dough, roll it by hand on a lightly floured surface. Roll it into a snake about 1/2 an inche thick. With the pastry knife cut into 1/2 inch pieces. Roll each piece into a ball. Roll each ball on gnocchi board - you should have an oval piece with grooves all the way around. A dinner fork can replace the gnocchi board. In batches, place gnocchi in a pot of boiling water that’s been salted with the remaining salt. The gnocchi are cooked 30 seconds after they rise to the surface. Use a slotted spoon to remove them from the pot and cool in an ice bath. Drain them on a towel and then lightly cover in oil. They can be stored in a fridge for up to two days. You can also freeze them in a single layer, wrapped, on parchment for up to one month.
This is one of my dishes that has been with me throughout my career in different variations. It started at my first job at River Drivers in Maine. Chef Herman Armorman had a classic Shrimp Scampi over Linguini with a Basil Butter Sauce, and it was one of the first dishes that I learned to cook. As a young cook I was eager to show family and friends this dish. I love that it is simple and versatile along with rich flavours and looks amazing when brought to the table. You can recreate this dish with many different vegetables, proteins, or starches. The secret is in the sauté method – I use the French Laundry Gnocchi recipe, the best one that I have used. This dish is also one that my wife and I make together frequently throughout the year; it’s her favourite… or at least most requested. We often substitute the gnocchi for penne and omit the lobster and add asparagus. Enjoy!

Seared Atlantic Scallops with black currant gastrique and roasted vegetables Submitted by Chef Adam Loo Photos courtesy of MHG As a born and raised islander, chef Adam Loo knows a thing or two about eating seasonally on Prince Edward Island. As the son of P.E.I.’s most well-known, boundary-pushing organic farmer, Raymond Loo, who passed away suddenly a few years ago, Adam also knows the work ethic and drive required to succeed in the restaurant industry. ► Chef Adam Loo, Culinary Operations Manager MHG 18

BLACK CURRANT GASTRIQUE INGREDIENTS 1 Tbsp butter 1 small red onion, finely diced 1 cup of blackcurrant 2 Tbsp sugar 3 Tbsp dry red wine 2 Tbsp red wine vinegar METHOD Melt the butter in a small pot over medium heat and add the red onion. Cook until tender but not dark, just translucent. Add the blackcurrant, sugar, and red wine, then increase heat and once the mixture begins to boil, reduce heat to low and let simmer for approximately one hour. Remove from heat. Strain the mixture through a fine sieve or cheesecloth and place back in a small pot. If mixture does not coat the back of a spoon, continue to reduce the mixture until it does. Finish by adding the red wine vinegar and let mixture cool before use. ROASTED VEGETABLES INGREDIENTS Baby new potatoes (good for roasting) Zucchini, cherry tomatoes, yellow beans, baby onions olive oil, salt and pepper METHOD Preheat oven to 425° F (220° C). Coat potatoes lightly with olive oil, salt, and pepper then roast in oven until golden brown and tender, approximately 25 minutes. For the yellow beans, simply bring a small pot of water to boil and cook the beans until just tender, remove and toss in butter and salt and pepper. Large-dice the zucchini, remove stems on beans, peel baby onions, and wash the carrots and cherry tomatoes. In a large bowl, add the prepared vegetables listed above and coat in olive oil, salt, and pepper. Spread out on a baking sheet with parchment and roast in the oven until vegetables are tender and lightly caramelized. Remove potatoes and vegetables and set aside for plating. ASSEMBLY Remove scallops from fridge and with a clean, food-safe towel, pat the scallops dry. Preheat a non-stick frying pan on high heat with a vegetable or canola oil. Once pan is very hot, lightly season the scallops and place them in the pan one by one, be careful not to overload the pan as this will cause the temperature to drop and the scallops will not sear properly. (There should be a loud sizzling noise as you place the scallops in the pan.) Allow the scallops to cook but for just 45 seconds to one minute approximately, the scallops should be dark brown but soft to the touch. Turn the scallops and remove the pan from the heat, allow to cook for another 45 seconds then remove the scallops from the pan and let rest. To assemble the plate, take a soft brush and dip it into the blackcurrant gastrique then spread it across the bottom of the plate where you want the scallops to be placed. Once the scallops are placed, add the potatoes and vegetables in any order you prefer to the plate and serve.

living la vida
LOCAVORE Words by Story Sheidow
The Island offers such an amazing abundance of food. Our waters are ripe with nutrient-rich dulse, kelp, and sea mosses, as well as many types of fish, fowl, and crustaceans; sea salt can be harvested, offering healthy doses of minerals from the Atlantic Ocean; our iron-rich soil offers a vast assortment of produce, from potatoes to beans to watermelon; and our forests, fields, and marshlands are home to many berry varieties, such as blackberries, blueberries, and cranberries.
20
www.pei-living.ca WINTER 2019
These bountiful treasures lay the framework for our ample selection of locally-made products; they’re something our Island prides itself on, and with good reason. When it comes to the Island’s fresh produce, seasonal and local eating take some careful planning. With the many resources available, however, it is not only possible, but also pleasurable, to eat seasonally, even in our colder climate. With all this in mind, here are some tips, tricks, and tools to help you eat “the Island way.”
Winter Produce? It’s a Thing! Fortunately for us, many of the veggies grown on the Island store well, making them accessible all winter long. Potatoes, winter squash, beets, carrots, and other root vegetables are relatively hearty crops that store easily, making them delicious and nutritious options during the cold winter months. Garlic and onions also keep well, and are quite simple to grow, or purchase locally. Garlic can be stored by hanging it indoors to dry, adding a lovely, decorative touch to your kitchen or pantry. If it’s leafy greens you’re after, you can choose from offerings such as cabbage, kale, dandelion greens, and collards. These greens can be harvested late in the fall or well into the winter, depending on their growing environment, and are stored and sold throughout the cold season by many local farmers. They are far more nutrient-dense than their leafy lettuce counterparts, iceberg and romaine, so try swapping them into your salads and other dishes. Don’t forget fruit! We’re lucky to have many great apple orchards on PEI, such as MacPhee’s in the east and Arlington in the west. I highly recommend visiting one and picking your own apples for winter storage. Not only is it fun (especially for the kiddos), but it’s also far more affordable, and choosing from a huge selection of unique heritage and hybrid varieties is deeply satisfying.

Island Products Beyond the Farm Eating locally means more than just produce. Many people would be surprised to discover the vast array of locally-processed edibles and beverages made here at home. Preserves are a Maritime specialty, and few off-Island preserve producers offer quintessential classics like chow chow and mustard pickles – East Coast delicacies that have been cherished for generations. Island meat producers are plentiful, and often sell through market stores and farmers’ markets. Many small local butcher shops also sell ”meat boxes” several times a year, offering significant variety at a great value.
By purchasing boxes several times yearly, you can cut down on your annual meat costs without compromising quality. Where to Shop Locally, All Year Round From sea salt to skincare, Islanders really do it all, and do it well. Brick-and-mortar market stores, such as The Riverview Country Market, 22
focus primarily on retailing local products, offering everything from produce, preserves, teas, and coffees, to cheeses, chocolates, and even local bath and skincare products; they cover all your bases. Such market storefronts are great for folks who want a “one-stop shop” experience with a local emphasis. In addition to the Riverview Country Market, visiting the Charlottetown Farmers' Market held each Saturday at their location on Belvedere Ave. gives you access to a variety of local producers and artisans. Our Island is home to some of Canada’s best cheeses, wines, craft beers, and preserves, and the Farmers' Market offers a generous cross-section of vendors
to choose from. It's a great place to meet your producers face to face, giving customers a personal experience that makes sourcing food locally much more meaningful. Building relationships with local producers helps us to, not only understand growing factors and availability, but also forge a deeper appreciation for the food we eat and where it comes from.
www.pei-living.ca WINTER 2019
Signing up for a local CSA (Community Supported Agriculture) basket is also a great way to simplify your switch to local foods and produce. Soleil Hutchinson, of Soleil’s Farm, provides winter CSA baskets supplying produce, meat, and fermented foods weekly. “Local farmers are working so hard to create new farming systems and techniques. Supporting farmers as much as possible will ensure that we stick around, learn from our mistakes, grow better food, and create better local food security,” says Hutchinson. Signing up for local CSAs can provide you with better product diversity, as basket contents are often sourced from multiple farms, all with their own unique products and specialties.
So whether you start small, or dive in headfirst, making the move to eating locally is sure to make you feel good – both in body and in soul.

Melanie Shaw started her career in real estate 30 years ago in Toronto. “I always loved homes. When I was at university during a summer break I decided it was a good idea to take the real estate courses to see if it was a good career choice.” says Shaw. “At the age of 21 I decided that it was something I really wanted to pursue and I never looked back.” In 2014 Melanie and her husband, Graeme (an Islander) along with their son, Brett made the decision to make the Island their permanent home after years of making it their annual vacation destination. Melanie joined Royal LePage Prince Edward Realty in Charlottetown and started her real estate practice on the Island. “The Island is such a wonderful place to live or invest in the real estate market. There are so many beautiful unique custom built homes combined with more affordable not
inflated housing prices compared to other parts of Canada," says Shaw. Shaw sets very high standards for her business practice and believes that everyone deserves an exceptional real estate experience. After so many years in the business Shaw still approaches each day as a new experience where she has the opportunity to learn something new. “I love helping people and I truly enjoy how each and every day is unique. The vision was to create a family home that is fresh and timeless, practical yet pretty, modern and comfortable, spacious while still feeling cozy.
â–˛ Mixing it Up A mix of traditional, modern and rustic furnishings makes the dining room feel at once elegant and inviting. The addition of plants, flowers and minimal accessories give it a serene updated casual vibe. (â—€ Dining room - Before) 26
www.pei-living.ca WINTER 2019
◀ Family Matters The new white kitchen with its oversized island is a natural gathering space for this family of five. A durable quartz countertop and loads of counter space make it the perfect place for preparing meals, doing homework and crafts and sharing meals.
Following a year of extensive renovations the main floor living space was reinvented with the removal of all the interior walls and a new extension across the entire back of the home. The addition made it possible to add a much larger kitchen, a kids' tv/playroom, a powder room and a main floor laundry room. The result is a cheery open plan space flooded with natural light and perfect for family living.
▲Creating Flow A colour palette of warm creams, pastels and white dominate the main floor, its furnishings and window treatments. The wood tones of the oak flooring and wood furniture warm up the all-white colour scheme. The fireplace is the new focal point and was upgraded with new built-in shelves and a propane gas insert. Double floating sofas provide lots of seating space. (◀ Living room - Before)
With the new layout the sight lines throughout the main floor were vastly improved.
◀ (Kitchen - Before) Prior to the renovation the kitchen was small, feeling dated and cut off from the rest of the main floor. ▲Classic Kitchen Style Making this kitchen stand out: Shaker-style cabinetry, custom-built range hood, gas stove, pot filler, white three by six inch subway tiles, oversized lantern pendant lighting, recessed ceiling lighting, white quartz countertops, farmhouse sink, industrial pull-down faucets and wood flooring.
► Let there be light The new floor plan called for a five foot window over the sink filling the area with light and providing a pretty view to the backyard.
◀ Divide and Conquer What was once a long narrow bonus room was reconfigured into a master bedroom with walk through closets leading into a luxurious master bathroom. The bedroom is large enough to accommodate a king size bed.
◀ (Master - Before) The tile ceiling was removed and replaced with a vaulted ceiling adding volume to the sleeping area.
The bedroom is restful and relaxing with its clean hotel chic style. Bright coloured floral cushions and accessories add a sophisticated pop of colour.
▲Suite Dreams ◀ Bar Service With plumbing already in place, what was once a small bathroom made it natural fit to add a beverage center. It’s a great spot to prepare morning coffee or happy hour drinks.
Although the footprint of the bathroom is merely fourteen by eight feet, it packs in a lot of wow factor. Bathed in white marble floor tiles the ensuite features a six-foot double vanity with a storage tower, a five-foot walk-in shower, a glamorous claw-foot soaker tub and a make-up vanity. The marble tile is carried onto the shower walls for a seamless look. The shower is decked out with a rain head, a sliding hand shower bar and built-in niches for toiletries. WINTER 2019

EXPERT ADVICE - HOME BUILDER
BUILD vs Buy Words by Darren MacKenzie
In the market for a new home? Not sure whether you should purchase a home or custom build? Here's a few questions to help decide the "build vs buy" debate. 32
www.pei-living.ca WINTER 2019
LOCATION? Resale homes: • Established neighbourhoods. • Access to urban transit. • Established infrastructure that gives you the ability to walk to neighbourhood stores, schools, community centres and places of worship. Custom-built homes: • Offer a brand-new community complete with new roads and utilities. • With a custom build you can choose not only the location - but the placement of the build within the location. • Neighbourhood amenities are being newly developed, often catering to the specific desires of the new residents - i.e. golf courses, parks, attractions. THE PURCHASE PRICE? Resale homes: • On a square-foot basis, resale homes are typically less expensive but can be affected by "market demand" inflating some values. • Resale homes mean that price is negotiable, but with increased demand there may be fewer to choose from and finding your dream home could be difficult and you may need to compromise.
• If you do plan on renovating you will need to take into consideration not just the remodel costs, but additional costs to bring your home up to current building codes or to address unforeseen problems. For instance, if you plan on adding a second floor, you may be required to rewire all the existing electrical wiring in the home. • If you want to remodel, but keep your home’s current character, you’ll need to take into consideration that matching and replicating older building materials can be quite hard and quite expensive. Custom-built homes: • New builds are built to current building code standards. But, discuss the details of any upgrades you would like included to eliminate surprises with the final cost. • You won’t need to budget quite as much for annual maintenance or upkeep because the home is new. If there are defects you can usually get them repaired under the home’s warranty (just be sure to check the warranty guidelines and time limits). YOUR WISH LIST?
Darren MacKenzie Master Builder/Owner MacKenzie Builders Services Ltd.
Resale homes: • You almost always have to compromise something on your wish list when buying a resale home. • When buying a home you may need costly renovations to have the important things on your wish list.
Custom-built homes:
Custom-built homes:
•Typically the price is set but, you can negotiate the cost of upgrades.
• Obviously a custom home is built "custom" for you and your family. Choosing finishes or making revisions to floor plans mean the build is exactly what you wanted.
OTHER COSTS? Resale homes: • Over the years you will consistently spent more on maintenance with a resale home.

Solar energy is steadily gaining popularity, and its use has nearly doubled annually in recent years as power rates have increased. Homeowners are searching for innovative new ways to increase energy efficiency and save money long-term. Installing a solar array is a great way to do just that, and solar itself is now more accessible than ever. Technological advances have created smaller, less expensive, and more powerful panels. Now, it’s possible for nearly everyone to acquire a solar energy system array. Words by Story Sheidow
Renewable energy sources such as solar are great options for homeowners, and are suitable for both new builds and existing homes. One key advantage of solar power is its minimal environmental impact. Since solar energy is a renewable resource, it produces zero emissions, so its carbon footprint is minuscule compared to finite resources like coal and gas. That in itself is an undeniable reason to consider solar energy.
HST is charged when you utilize stored energy credits, and any unused credits with the electric company are zeroed out at the end of the year, aiming to produce slightly less than your needs can lower your installation, operation, and maintenance costs. That maximizes solar power's value for owners, and simplifies metering practices.
But How Does It All Work? Net Metering Will Save You Money Through the local electric company, an energy budgeting program called “net metering” is available. This program stabilizes homeowners’ energy needs and maximizes the advantages of shifting to solar power. Because solar energy relies entirely on available sunlight, energy intake can vary widely from day to day. Net metering enables excess energy created on sunny days to be banked and carried over throughout the year, allowing customers to use stored energy credits on days when their production is low. Net metering can make solar power more reliable for Islanders, often evening out their yearly production/consumption ratio. Matt Eye, of M.B. Eye Electrical, is a certified solar installer specializing in energy-efficient electrical options. He offers some of the most innovative site-specific solar energy solutions available today. “Homeowners should strive not to produce more solar energy then they consume,” Eye advises. Since
34
www.pei-living.ca WINTER 2019
Solar panels can be installed either on your home’s roof, or on specially designed ground level racks. Which style you choose is contingent on the size of your required solar array, how many panels your roof can accommodate, and how much direct sunlight your home receives. You can determine your solar needs based on your average daily energy consumption, which can easily be calculated using your past year’s electric bills. In Eye’s experience, “The average home consumes 25 to 30 KWHs per day, or about 11000 KWHs per year.” Based on those estimates, homeowners can ideally expect to require an approximately 30-panel system to balance production and consumption. With all this in mind, there are many reasons to choose solar energy. As finite resources rise in price and solar costs decrease, many people are now making the shift to this renewable resource. On-site solar consults are generally free, so consider reaching out to explore your options, and taking part in the clean energy movement.

unk beds have been a household staple for years and for good reason. Besides the fun factor they are a functional and practical solution for creating extra space for growing families and guests. Add them up and the advantages of bunking up are plentiful. Gaining space. Using vertical space that would otherwise be unused just makes sense when you are short on space. You can free up valuable floor space needed for playtime and other bedroom furniture. Developing closeness. Experts say that siblings that bunk together grow together, learning life lessons through sharing, bedtime chats and playing together. Fostering imagination. They make great play spaces as they open up children's imaginations to forts, tree houses and towers plus they make cozy reading spaces.
Abundant styles. Bunk beds come in all shapes and sizes. Loft style, single over queen, single over single, double over double, bed over desk, Murphy beds and custom built-ins. Guest Accommodations. Although they are a fantastic option for kids' sleepovers they need not be only used for children. Guest rooms, rentals or bunkies outfitted with bunk beds provide loads of extra sleeping quarters. Smart choices. Choosing a double-sized bed over a single bed (above) makes a space that will last for a very long time allowing room for growth, cuddling and future sleep overs.

his year marks the show’s 35th edition, with no signs of slowing down after three and a half decades of growth. Right now, business is booming on the island according to Show Manager Denise Miller. “This is an event Islanders really trust when it comes to working on their homes,” says Miller. “Visitors continue to come out in droves year after year, which means our exhibitors don’t want to miss out either. C OVER THE THRESHOLD Beck’s Home & Heating Helps Newlyweds Perfect their Homes
Words by Rebecca Spinner Photos: Evan Ceretti Photography
Carrying the bride “over the threshold” is one of the bestknown wedding traditions. Designing the home that awaits beyond that threshold is also key to modern wedding planning.
hoosing and designing a new home as a team can constitute unfamiliar territory for many newlyweds. Alisa Beck, who helms the interior design department at Beck’s Home & Heating, urges couples to undertake the challenge hand-in-hand. “When I help design a home, I prefer to have both members of the couple involved,” she says. “Designing a shared space has to be a partnership. There’s give and take, like in a relationship.” Alisa advises her clients at Beck’s Home & Heating to find shared aesthetic touchstones to build on. Those might include individual decor elements, such as a specific type of hardwood or tile flooring “that both are attracted to,” or general colour and style preferences: light versus dark, warm versus cool, contemporary versus craftsman-style. “An interior designer can help blend two personalities, and two sets of style and taste, together,” Alisa explains. Once those touchstones are established, couples can diverge selectively, adding personal details to enhance the overall decor while representing both members of the couple as individuals. She reminds newlyweds moving into “starter” homes to consider splurges carefully, avoiding overly distinctive permanent elements. “For a starter home, I wouldn’t suggest investing in, say, a cherryred granite countertop. If you make finishes and updates too personal, you narrow the market.” A better approach, she says, is to “keep permanent elements neutral, so if you removed your personal belongings, the home would appeal to 95 per cent of the population. Then ‘pop’ it up with accessories and furnishings in bold, personal colours.”
40 40
www.pei-living.ca WINTER www.pei-living.ca WINTER 20192019
Another reminder Alisa offers? “Make sure your home is warm and cozy in more ways than just the decor.” A new build’s blueprint stage is a chance to invest in a forced air heating/air conditioning setup. “Before you start building, you can map out the perfect duct system,” explains Alisa. “It’s definitely possible for the team at Beck’s to install forced air heat in renovated homes; we’ve done that many times. Still, installing it in a new home is the most effective, efficient approach.” High-quality ventilation, such as Beck’s Home & Heating’s Greentek HRV Systems, is imperative when it comes to new builds. “For the first year in a new home, there’s a substantial amount of moisture, as the concrete’s still drying,” explains Alisa. Telltale window condensation or mold indicate that a home requires more powerful air movement, which can be confirmed by Beck’s Home & Heating’s inspection team. Forced air heating offers a number of advantages, Alisa adds. “It can be 100 per cent electric... no messy oil tank or wood to deal with. Very clean. And homeowner’s insurance tends to cost less. Forced air units are extremely economical.” The “smart” forced air systems installed by Beck’s Home & Heating can be connected to Wi-Fi, and managed by phone. Thus, there’s no need for a couple to return from their honeymoon only to shiver in a chilly house. “You can use your phone to adjust your home’s temperature from the airport,” says Alisa. “Your house could be warm and cozy by the time you arrive!”

easy to understand why Island couples love “destination” weddings. For one thing, there’s no need to count on the infamous local weather with Mexico and the Caribbean only a short flight away. Tempting tropical climates, however, are just one advantage. “To me, a destination wedding’s biggest benefit is the chance to spend a week with the people you love and most want to be with,” muses Paula Stewart, who co-founded Stewart Travel Group alongside husband Travis Stewart. When it comes to getting married abroad, Paula’s an authority. “I’ve specialized in destination weddings for nearly 15 years. I’ve also been to the Caribbean over 60 times, which provides our brides and grooms with terrific resort insight,” she says. In fact, she recently attended her daughter’s Punta Cana nuptials. “It was a perfect wedding. I’ve never seen a bride and groom so laidback and unworried.” As couples embark on destination wedding planning, actually picking a destination can feel impossible. Fortunately, Stewart Travel Group is skilled at helping clients choose between dozens of sunny islands and hundreds of hotels. “Our advisors can pinpoint the best resort by asking a few simple questions,” explains Travis Stewart. The team adjusts recommendations based on clients’ desires regarding nightlife,
Ultimately, Paula and Travis say, many couples choose Cuba, the Dominican Republic, Jamaica, or Mexico. “The most popular destination is really Punta Cana, in the Dominican Republic,” Paula notes. To couples bound for the Dominican Republic, Stewart Travel Group often recommends Majestic’s Colonial, Elegance, or Mirage resorts. (A planned resort in Mexico will soon expand Majestic’s selection.) They’re confident about the Majestic team’s talent for staging flawlessly opulent, intimate weddings.

“We have an amazing team presently. They provide an exceptional amount of experience and input that help us go in the right direction.”
In fact, Paula says, Majestic staff actively advise and assist couples in planning. “Once a client chooses a destination and property, I contact their Majestic resort wedding coordinator,” she explains. The coordinator guides the couple, helping to fill in the brushstrokes on their day. “Everything at Majestic is basically taken care of before the client even departs,” Travis confirms. And while Majestic’s wedding “packages” streamline preparations, they afford plenty of choice, such as setting (beach, chapel, gazebo), floral arrangements, and reception venue. As clients finetune their plans, Stewart Travel Group offers additional resources, such as personal, prearranged airportto-resort transportation, as well as a booking website that allows couples to promote their wedding to their entire guestlist. “I believe we’re one of the only travel agencies on PEI using that web technology,” Travis notes. “We also pride ourselves on working after regular business hours with our clients, since

they could be calling from anywhere in North America. We want to be there for them when it matters,” Paula adds. Destination weddings are especially advantageous for clients adhering to firm budgets, says Paula, and Stewart Travel Group can help plan genuinely affordable festivities. “Destination weddings are economical, and there are additional steps to bypass certain costs,” she says--for example, completing legal paperwork at home before they depart." In fact, Travis adds, “Resorts may even offer free weddings to guests who meet certain criteria--number of rooms, number of nights, number of guests.” Couples hosting a destination wedding, says Paula, often don’t bother to arrange a honeymoon elsewhere: they simply extend their post-wedding stay, staying behind when guests have said goodbye. When it comes to more complex arrangements, however, Stewart Travel Group is an exceptional resource. Couples frequently honeymoon in destination wedding settings--“The Caribbean is definitely the most popular honeymoon spot,” confirms Travis--so there’s overlap between Stewart Travel Group’s “wedding” and “honeymoon” clients. Other honeymooners, however, opt for classic European locales with Transat like Croatia, Greece, Italy, and Portugal. Compared to beachside honeymoons, Travis says, “Europe is definitely more active.” Thus, it’s perfect for energetic couples who want their honeymoon memories to revolve around adventure, rather than leisure. And, given the effortlessness of European travel, a European honeymoon is easily expanded into a multi-country getaway.
Stewart Travel Group frequently depends on their partner Transat Holidays, a prestigious Canadian operator, for destination wedding and honeymoon flights. Air Transat maintains over two dozen separate European routes, as well as flying to a variety of traditional destination wedding locations. Air Transat’s Option Plus program offers perks that are perfect for honeymooners, says Stewart Travel Group Advisor Frances Gertsch: from an expanded baggage allowance, to indulgences like a glass of wine and cozy blanket. “They’re nice touches that make the whole trip smoother.” In addition to flights, she adds, Air Transat also offers “bundles” that can include luxurious resort accommodations and even airport-to-resort transportation. Air Transat has clearly mastered the ability to offer an exceptional experience to destination wedding parties and honeymooners. The tempting list on their website includes “carry-on luggage” status for wedding dresses, as well as financial perks, like “excursion credits” for additional destination activities. In some cases, Air Transat itself even whisks couples off on an additional “wedding planning trip.” In addition to Air Transat’s “official” wedding and honeymoon offerings, Travis says, “We have a very strong relationship with Air Transat’s groups department, so we know our clients get the best support possible.” Wherever clients are bound, Stewart Travel Group considers appropriate travel insurance crucial. “We offer one of the best plans on the market: Manulife’s Premium Protection Plan,” says Frances. “It’s a comprehensive package that includes the ‘cancel for any reason’ benefit.”
Since its founding in 2014, Stewart Travel Group has been affiliated with The Travel Agent Next Door (TTAND). Stewart Travel Group was cofounded by husband-and-wife travel professionals. “We have over 45 years’ combined experience,” Travis notes. As they approach their fifth year, Paula and Travis hope to grow their roster of advisors. They’re passionate about Stewart Travel Group’s healthy, welcoming workplace culture.

Stewart Travel Group is a full-service travel agency that also specializes in escorting groups around the world.
“We want to create an environment where our advisors are comfortable, supported, and feel backed up by their team,” Paula says. “We offer support and mentoring to help them obtain success and work-life balance.”
They have been recognized as TTAND's Top Canadian Travel Agency for three years running and have also won multiple awards with suppliers. Stewart Travel Group now partners with 14 Trusted Travel Advisors throughout the Maritimes, and plans to continue to grow.
“We have an amazing team presently. They provide an exceptional amount of experience and input that help us go in the right direction,” Travis adds. Frances Gertsch, who has been with the company two years, praises the workplace the Stewarts have cultivated. “I joined Stewart Travel Group for its values,” she says. “Clients come to see Paula and Travis as friends--and they see the clients as friends, which is invaluable.” WINTER 2019

Since 1887, Island audiences have visited King’s Playhouse for vaudeville acts, community theatricals, and professional productions. Throughout the 2010s, the Playhouse has also become an increasingly popular setting for private celebrations. Today, it’s one of the Island’s most enchanting wedding venues. “It’s sort of a hidden gem,” says King’s Playhouse Interim Executive Director Catherine O’Brien. Not so hidden, however, that it hasn’t been booked long-distance by out-of-province wedding parties. “We’ve welcomed lots of locals, but we’ve also welcomed people from across the country,” confirms King’s Playhouse Executive Director Haley Zavo. A number of potential ceremony and reception settings are available at the Playhouse. The wooden deck, lush A. A. MacDonald Memorial Gardens (featuring a gazebo and fountain), and even the Playhouse’s proscenium stage are perfect backdrops for intimate celebrations.
O’Brien. “It’s a lovely spot for the wedding party.” She adds that guests may also book one of the Georgetown area’s cottages or bed-and-breakfasts, or the Rodd Brudenell River Resort in Brudenell, just down the road from the Playhouse. Couples have complete freedom when it comes to catering arrangements, and the Playhouse offers convenient on-site culinary services helmed by Red Seal Chef Amil Zavo. “Chef Zavo can design a plated meal, buffet, or light snacks,” says O’Brien. “He’s excellent at preparing vegan dishes and catering to food allergies. He can adapt to anything.” The kitchen is beverage-licensed, and complimentary bartending is provided to wedding groups who book the fully-stocked bar. Couples can also arrange to serve guests a custom cocktail or wine vintage of their choice. Although King’s Playhouse accepts wedding bookings year-round, the venue’s calendar of ticketed

performances influences scheduling, so planning ahead is advisable. “Most people like to book almost a year in advance,” confirms O’Brien. That said, “If somebody called last minute, and a date was available, we would certainly try to accommodate them.”
Wedding parties and their guests are encouraged to take advantage of the Playhouse’s facilities before and after the ceremony. Playhouse staff provide the earliest possible access to the venue to allow the party to decorate, and are happy to assist in the process; wedding party access to the theatre’s dressing rooms is also included in the booking.
There’s a fairy tale quality to the King’s Playhouse. Countless “happy endings,” both matrimonial and theatrical, have passed within its walls. “In theatre, we’re in the business of making magic happen,” says O’Brien. “We leave wedding guests with that special magic.”
“Brides and bridesmaids can use the dressing rooms to prepare,” explains Zavo. “When it’s time for the ceremony, they simply walk downstairs.” As couples fine-tune the details of their day, King’s Playhouse offers support and flexibility. The team is happy to recommend local photographers or nearby accommodations. “The Historic Georgetown Inn is located directly across from the Playhouse,” notes

When Mother Nature is your event designer, there's really no need for a lot of additional decoration. Unusual elements like these little bud vases tied with twine or natural wreaths woven from twigs and ferns lend some visual interest to the already breathtaking scenery.
Long family-style tables are perfect for an outdoor reception. Mismatched tables and chairs add to the casual charm so don't bother renting anything fancy.
Forest weddings call for a more natural, bohemian sense of style—leave that ballgown at home! This bride got her forest wedding dress so right: an exquisite wedding gown with long sleeves and delicately tattooed lace.
Gorgeous forest wedding flowers are more beautiful when they're a little undone. Messy sprigs of silver dollar eucalyptus and big, bold florals like protea and amaryllis stand out next to towering maple, pines, or other surrounding trees.

FOREVERMARK X Because a Diamond is Forever Words by Alana Lauren Photos: Story Sheidow and Forevermark
Some say that beauty comes from symmetry. The beauty of a snowflake, when carefully examined, is derived from superior symmetry. In diamonds, too, the symmetry results in stunning optical performance and beauty, valued by all who see it.
Nortons Jewellers Ltd., has served Charlottetown for nearly half a century, meaning that this iconic Island-owned and family-operated jeweller has long been a part of Islanders' celebrations. Peter Norton and his son, Craig are continuing the tradition that began in 1974 and has made Nortons Jewellers the place where Islanders get engaged. "We always search out the very best for our customers," said Norton. "That's why we're so pleased to be able to offer Forevermark diamonds to our clients." Forevemark presents a new generation of diamonds with the Black Label Collection, cut with supreme symmetry and unprecedented accuracy to release a dazzling light. Available in round, square, cushion, oval and heart shapes, the Black

Along with being able to capture light and its hypnotic force with individual shapes, each Forevermark diamond comes with the promise of being beautiful, rare, and responsibly sourced. As part of De Beers Group, Forevermark is committed to supporting the advancement of women, ensuring each diamond is natural, untreated and conflict free, and preserving and protecting the natural world, making a Forevermark diamond something you can be proud to own and wear forever. Getting engaged to the love of your life is one of the most important moments in your life and Forevermark Black Label diamonds are the perfect diamond to represent that milestone. This year, brides-to-be are leaning towards simple settings, specifically solitaire engagement rings, allowing the diamond to be centre stage.

Halo settings continue to be popular and can make a centre diamond appear larger than it is.

A GRAND SENSES EXPERIENCE AWAITS YOU Words by Patricia Foster Photos: Evan Ceretti Photography
It’s a spa, salon, and boutique, but it’s also so much more. Located in the luxurious Holman Grand Hotel in downtown Charlottetown, Grand Senses is a quiet retreat from the chaos of a busy life. It’s a place for brides to be pampered and energized for their special day; a place where all guests can be welcomed to a soothing experience that will delight their five senses. Virginia MacIsaac, the general manager of Grand Senses, stresses client experience above all else. “There are always opportunities to be better,” she says, which is why her staff undergoes constant training. “As a destination spa, we have a responsibility to stay above the rest.” With clean, modern decor in a palette of gentle creams and turquoise blues, the two-level spa is wheelchair-accessible and equipped with eight hairstyling stations, five spa therapy rooms, two mani-pedi rooms, and four Aqua Therapy Massage Beds imported from Europe. The boutique only stocks botanicallybased Aveda products, including the ever-popular Shampure Dry Shampoo & Conditioner, as well the Botanical Kinetics Intense Hydrating Mask. With Aveda, says MacIsaac, customers can have confidence in the quality and integrity of their products; the bottles are biodegradable, the ingredients are fair-trade, and nothing is tested on animals. “Our mission is to care for the world we live in.” For bridal parties and bachelorettes, the private room across the hall from Grand Senses allows for a more boisterous, intimate atmosphere. “We’ll cater for you,” says MacIsaac. Guests can have a more social atmosphere while receiving manicures and pedicures. One of the spa’s highlights is its ability to cater to the whole bridal party in a holistic way. For a wedding, Grand Senses’s bridal team can even drive up to their client’s hotel or Airbnb. Nails, eyelash extensions, therapeutic massages to deal with
stress; they do it all. “We’ll make sure you get that picture-perfect hair,” adds MacIsaac. Grand Senses has hosted bridal parties from locations as varied as Florida, California, and Australia. Their core bridal team is composed of four specialists: Brooke Sanderson, the lead, as well as Lorren Assyag, Maryam Kalhor, and Katrina Wilcox. All the ladies have trained with renowned hairstylists and makeup artists, including Janell Geason, Aveda’s Global Artistic Director for Makeup. MacIsaac praises her team’s respect for their clientele and their commitment to quality service. “We’re not perfect, but we’re always quick to rectify our mistakes.” With everything from aromatic skin treatments that hydrate and detoxify your body, to hair-colouring and stylish updos, Grand Senses is a place that’ll leave you feeling inspired and fabulous, no matter how hectic your schedule becomes. It’s a place to close your eyes, breathe in the sweet floral aroma of Shampure candles, and relax into a therapeutic massage or an infrared sauna. It’s the perfect end to a busy week, or the perfect start to a new chapter of life.

STYLE STYLE
Cashmere wool fiber for clothing and other textile articles is obtained from the neck region of Cashmere and other goats. Historically, fine-haired Cashmere goats have been called Capra hircus laniger, as if they were a subspecies of the domestic goat Capra hircus. However, they are now more commonly considered part of the domestic goat subspecies Capra aegagrus hircus. Cashmere goats produce a double fleece that consists of a fine, soft undercoat or underdown of hair mingled with a straighter and much coarser outer coating of hair called guard hair. For the fine underdown to be sold and processed further, it must be de-haired. De-hairing is a mechanical process that separates the coarse hairs from the fine hair. After de-hairing, the resulting "cashmere" is ready to be dyed and converted into textile yarn, fabrics and garments.
silver fox Words by Jacqui Chaisson
Silver Hair? Don't Care! Women are choosing to embrace their silver tresses and revelling in the freedom. Here are five steps to fabulous!
Going gray used to be a sign of aging and most women were quick to dye their hair back to their "natural" colour. Recently, it's become on trend for young women to wear their tresses in fifty shades of grey and silver - mature women are following this trend by simply letting their true colours shine through - and they're loving it!
3. Just do it
There comes a time, for most women anyway, when the dyeing and highlighting and lowlighting and root touch-ups become too much of a chore. So what's wrong with going grey? Well, nothing as it happens. Grey is the colour of the moment. Grey is cool. And with a swathe of powerful and inspirational women in the public eye choosing to go au naturel and let their real colour come through, more and more women are ditching the dye and embracing the gray.
4. Lose the yellow
Depending on the current colour, especially if you dye your hair a dark hue, the process can vary. If your hair is blonde or light-coloured, you may simply let the gray grow in over time. Darker hair will shown the dreaded "zebra stripe" as it grows out - but, there are ways to transition and still look chic. But how do you go about it? Unfortunately, there's no quick fix as there will inevitably be a period of "in-between" time when your grey comes in and your colour grows out. Here are just a few ways to minimize the zebra effect.
With advice from a professional and a few hours (or more) dye your hair silver. A few weeks before the big event let your roots grow in so your stylist will have a better idea of what shade will blend in with the new growth.
Grey and white hair can skew yellow or look dull easily—due to pigment loss—when not kept in tip-top condition with the right shampoo. Invest in one of these shampoos formulated just for grey and white hair to avoid dull, yellow, or brassy strands. For most, a violet-tinted shampoo will work wonders when used just once or twice a week. (Use an ultrahydrating shampoo formula for the rest of your weekly washes.) 5. Start regularly masking for healthy, hydrated grey hair. Grey hair, be it from years of hair colouring or just the toll of time, can be coarse or dry. The best way to make your gray hair look softer, shinier, and healthier is to regularly use hydrating and smoothing hair masks. This three-ingredient hair mask is the easiest deep conditioning hair mask for damaged hair you’ll find. All you need is avocado, coconut oil, and honey.
1. Shorter style Ingredients: Growing into your silver hair will be quicker and easier if you choose a shorter style. Talk to a professional about your goal and ask how much hair you'll need to cut to bring yourself closer to 'natural'. It may be as simple as cutting the dyed hair away to reveal the fabulous new you. 2. Slow and steady If losing your length is a deal-breaker have your stylist begin the process with strategic highlights that will minimize the harsh transition between silver and processed. Gradually lighten your overall colour until the silver blends beautifully.
1/2 avocado 2 tablespoons coconut oil 2 tablespoons honey Instructions: Mix all three ingredients together in a bowl and apply the mixture to damp hair from top to bottom. Tie your hair up, cover with a shower cap or towel, and let it sit for 30-45 minutes. Then, rinse with your regular shampoo and conditioner. Don't fear the silver - let it be your signature and stay sassy!
EXPERT ADVICE - FINANCIAL
2019 is here and so is RRSP season! 8 ways to help lower taxes and boost retirement savings Submitted by Evan Patkai, B.B.A. | Sun Life Financial - Patkai & Son Financial Services Inc.
R
educing taxes can go a long way in helping save for retirement. Here’s how to make it happen. 1. TFSAs For low- to mid-income earners, consider the tax-free savings account (TFSA). In lower tax brackets, the registered retirement savings plan (RRSP) deduction isn’t worth as much — it gets less bang for the buck. And at withdrawal time for a TFSA, there’s no tax slip – so if you are still lower-income earners during your retirement years, you’ll be more likely to receive increased government benefits. Also, lower-income earners, especially younger earners, often like the liquidity of the TFSA. What happens if you need to withdraw money for a vacation, car, home or for an emergency? When you take money out of a TFSA, you’re not taxed (unlike a withdrawal from an RRSP). 2. RRSPs RRSPs are a sound option, especially for higher-income earners. Ultimately, the pros and cons of a TFSA versus an RRSP contribution may depend on whether your tax bracket in retirement is lower or higher than it was when you made the initial contribution. Another consideration involves Canadians working past age 65 and even into their 70s, who could be in a higher tax bracket when withdrawing money from an RRSP (not an ideal situation).
3. ASSET ALLOCATION
business income
As you approach retirement, it may be beneficial to put assets taxed at a higher level into tax-sheltered accounts. This might mean allocating bonds primarily to RRSPs and TFSAs, because interest is fully taxable. Those with remaining RRSP or TFSA contribution room after purchasing all their bonds could then consider buying stocks. Just remember to take care when allocating foreign stocks that pay dividends inside a registered account. The ability to claim the withholding tax on foreign payments is lost when held inside an RRSP or TFSA. For this reason, it’s sometimes beneficial to hold foreign stocks that pay dividends in non-registered accounts, allowing you to maintain the ability to claim a foreign tax credit on your Canadian tax returns.
• Consult with a tax expert before committing to any of these or other options. 5. RETURN OF CAPITAL PROTECTION In the non-registered investment environment, you may want to consider using annuities and segregated fund contracts with guaranteed income (for return of capital features and protection for longevity risk). Along with being tax efficient, they can offer insurance protection. 6. TAX-LOSS SELLING
As a general rule, it’s a good idea to hold Canadian dividend-paying stocks and investments that generate capital gains in a non-registered account, since these have preferential tax treatment.
From a tax perspective, if you hold an investment that’s lost value at the end of the year in a non-sheltered account, it might be a good idea to sell it. The loss can reduce capital gains on other investments. It can also be carried back up to three years, or carried forward indefinitely. Talk with a tax expert to learn more.
4. INCOME SPLITTING
7. INCORPORATION
For higher-income earners, income splitting — redirecting income within a family unit — can be one of the most powerful tools for families to reduce their tax burden and keep after-tax dollars in their hands (versus more of their income going to the Canada Revenue Agency).
If your business can qualify as a small business corporation in Canada, incorporating it can give you the ability to access the small business corporate tax rate. Other advantages of incorporating include:
Income splitting opportunities permitted under current legislation include, but aren’t limited to: • Opening a TFSA for all family members over the age of 18 • Loaning funds at the prescribed rate of interest to a spouse1 • Making a gift to an adult family member • Having the higher income earner pay family expenses • Using the benefits of a registered education savings plan (RESP) or registered disability savings plan (RDSP) • Investing child tax benefit money in the child’s name • Pension splitting with a spouse • Loaning money to a spouse to produce
pension income or a lot of money in RRSPs that need to be converted into a registered retirement income fund (RRIF) or annuity, there may not be much they can do to minimize the OAS clawback. Consistently monitoring your taxable income each year helps ensure government benefits aren’t clawed back. LESS TAX CAN MEAN MORE RETIREMENT MONEY Today you need more income-producing assets in retirement than previous generations, especially because we’re living longer. RRSPs are often the first choice because they provide upfront deductions and deferred taxation, but other good options are available. With regard to tax planning, do it regularly (consider at least an annual review). Most government benefits in Canada are incometested, so if you can plan tax efficiently for retirement, you’ll be more likely to maximize your overall retirement income and send less money to the government.
• Limited liability • Tax deferral and control of personal income payments • Income splitting opportunities • Access to the small business deduction • Access to lifetime capital gains exemption

8. OAS CLAWBACK ▲ Evan Patkai, B.B.A. Financial Advisor Member of Advocis
In retirement, a popular tax-minimization goal often becomes avoiding clawbacks of Old Age Security (OAS). Because TFSA withdrawals aren’t considered taxable income, they don’t affect your eligibility for OAS. For example, for 2018, if you are receiving the OAS and have income over $75,910, the government will claw back some of their OAS benefit, and the benefit completely disappears at the $122,843 annual income level.

The Cadillac XT4 Crossover is different from what Cadillac has done in the past. Cadillac, known worldwide for its luxury vehicles, has branched out to include a small SUV, a first for the company. This luxury sports model has twin clutch all-wheel drive and 237 horsepower which, says Hillside General Manager Neal Noseworthy, “is very responsive and uses enhanced AWD to direct power to the wheels, where it’s needed.” “While it is a four-cylinder turbo engine,” enthuses Noseworthy, “It has what’s called ‘active fuel management,’ so it switches back to two-cylinder under certain conditions for enhanced fuel efficiency. The fuel economy is really good; its nine-speed transmission can either give you lots of power, or great fuel economy.” The Cadillac XT4’s exciting available features include a hands-free lift gate, auto-braking, a rear camera mirror showing a high-definition image of the space behind your vehicle, and

Herbs for Children's Health Words by Story Sheidow
As we all know, kids get sick – a LOT. Here are a few herbs that can be used to treat some common ailments in youngsters. These three herbs are widely considered safe for use in children above the age of two. That said, as with any medicinal remedy, it is always recommended that you consult a healthcare professional prior to using these herbal treatments.
ELDERBERRY
MARSHMALLOW ROOT
Elderberry is a nutrient-rich herb, chock-full of immune-boosting properties. High in antioxidants and vitamin C, elderberry can help fight respiratory and sinus infections, ease allergies, and strengthen the immune system. Most easily administered to children in syrup form, elderberry is frequently used to treat coughs and colds. Studies show that taking elderberry regularly can dramatically shorten the duration of a cold or flu, and reduce the severity of the symptoms.
Rich in mucilage polysaccharides, marshmallow root soothes, moistens, and relaxes the mucous membrane tissues of the respiratory, digestive, and urinary systems. It provides a protective layer over the tissue, and contains chemicals that can decrease coughs and heal wounds. It is beneficial in the treatment of bronchitis, persistent coughs, and asthma, and can ease digestive issues such as constipation or an upset stomach.
CHAMOMILE
Marshmallow can be made into a mouth rinse for sore throats, cankers, and other oral ulcers. It can be taken internally as a tea, or prepared as a cold infusion. Topically, marshmallow root can be applied to burns or other external wounds as a poultice, and can both soothe pain and speed healing.
Chamomile is a mild sedative, safe for all ages. With no side effects (provided your child is not sensitive to ragweed), it is proven to be a safe remedy for stress and anxiety, and to promote sleep and relaxation. Chamomile can be taken long-term without any issues, and is recommended as a gentle and effective treatment for ADHD in children by the Canadian Pediatric Society. Chamomile is great for your skin, providing relief to itchy, dry, and irritated areas. This gentle herb can be used topically to treat eczema, bug bites, and other skin irritations. It can be added to bathwater, applied as a poultice, or infused in an oil.

Hand Knit Sock
The humble hand knit sock has an incredible history that is hard to pin down but by the time Elizabeth 1 took the throne in 1558, knitting was becoming a widespread craft. Each area produced a different type of sock depending on the fibre available. Wool socks of today are a far cry from the coarse stockings of the past but the result is the same satisfaction in a job well done and warm toes. Nothing says ‘I love you’ like hand knit socks.
Belfast Mini Mills, established almost 25 years ago, offers a large selection of yarn from a variety of fibre sources, ranging from sheep and alpaca, all the way to more exotic fibres such as camel, muskox, yak, and even long-haired German Shepherd.

Your
Best Fit Words by Jacqui Chaisson
We’ve all done it - I actually did it twice in 2018 signing up for a gym membership that I didn’t use. It’s something that fills us with guilt and a sense of regret that is compounded by seeing that monthly fee.
70
www.pei-living.ca WINTER 2019
How can you avoid "membership remorse" and actually commit to a gym you’ll look forward to visiting? We’ve put together a list that will help find the right fit for you. WHAT FITS?
DON’T BE SOLD
Be realistic about what you can commit to and find a gym or fitness regime that works with your lifestyle. Maybe signing up for a weekly cardio class would be the best fit or a drop-in yoga session suits you better than a full membership.
Don’t let a savvy salesperson sell you a membership you know you won’t use. They should ask what suits you not sell what suits them. Membership add-ons like personal fitness instructors, classes or extended access to the facilities may not be options you’ll use, so don’t be convinced you need them.
TRY BEFORE YOU BUY Before signing on the dotted line ask if you can pay-as-you-go for a few months. Many local gyms offer the trial option, a limited membership of up to three months or a drop-in rate. This is a great way to try out a few gyms if you’re having trouble deciding between them. A reputable gym won’t pressure you into signing long-term until you’re ready. BE A GUEST If you have a friend who belongs to a gym you’re interested in joining, ask them to sign you on as a guest. Gyms encourage their members to bring a friend and it’s the perfect way to get an honest opinion. DROP IN SO YOU WON’T DROP OUT Drop in to your local gym around the same time as you think you’ll be working out. Gyms are busy at different times of the day depending on who they cater to and what they offer. Check to be sure you’ll be comfortable working out when it suits your schedule. SERVICES
MEMBERSHIP CANCELLATION Ask about cancellation fees, do they give you a month to try risk-free or is there a cancellation fee if you change your mind tomorrow? Some gyms won’t offer this information up front - instead it’s in the small print - so ask before you sign. FIT IN One of the biggest reasons why gym memberships are unused is because you just don’t feel comfortable. Join a gym that makes you feel welcomed and relaxed regardless of your fitness level. If you’re over forty and just want to work out - don’t join the gym that attracts the under twenty crowd or the serious body builders - look for your peer group. THE RIGHT REASONS Remind yourself why you want to join a gym and follow through for the right reasons. Working out and being fit is good for your overall health and wellness so do it for yourself.
Ask about additional services and amenities offered or included in the membership. If you’re really looking forward to the fitness classes - be sure they’re not an extra cost or unavailable. WINTER 2019

honey H E A LT H & W E L L N E S S
SWEET NEWS FOR YOUR SKIN Words by Alana Lauren
Sweet news, it’s not some crazy new beauty craze: honey is the oldest skin-care ingredient and has been used extensively for both medical and skin-care purposes. If you’ve got skin issues, honey’s a great go-to because it tackles many of the major ones: it has antibacterial properties, antiinflammatory properties, and it nurtures the skin. Honey’s particularly suitable for sensitive skin.
You might not think of the thick, sweet stuff as a salve for breakouts, but honey’s antibacterial powers are so strong that it can help acne. Honey has a very low pH, so a lot of bacterias cannot survive in honey. It’s about a 3.5 on average on the pH scale, and a lot of bacteria needs to thrive in closer to a 7 on the scale. It has magical calming and moisturizing powers as well. Honey is moisture-grabbing because it’s a super-saturated solution, meaning the bees mix a lot of sugars into a little bit of water, so it’s always trying to grab water from the air to balance out the sugar. This is why people use it for baked goods—it keeps them moist for longer. On your face the humectant is gentle enough to use on tender chapped noses from allergies to super red dry, flaky patches. Keep in mind that you need to choose a high-quality raw honey for the best results.

THREE HONEY-BASED FACIAL MASKS AVOCADO, YOGURT, AND HONEY INGREDIENTS: Half an avocado One tablespoon of yogurt One teaspoon of honey Benefits: this mask provides light exfoliation and a super boost of hydration. Rich in healthy fats, vitamins, and antioxidants, avocado is very hydrating, and contains the alpha hydroxy acid lactic acid, which acts as a chemical exfoliant. And finally, the honey adds an extra boost of hydration. HONEY, CINNAMON, AND LEMON JUICE INGREDIENTS: Two tablespoons of honey The juice from one lemon slice One teaspoon of cinnamon Benefits: this sweet blend targets inflammation and dark spots. Honey is antibacterial, wound healing, anti-inflammatory, moisturizing, and an antioxidant. Use the other two ingredients sparingly. Although cinnamon has antimicrobial and antioxidant properties, I recommend using it with caution as a DIY ingredient because it can be very irritating to the skin. People can also develop allergic reactions to it. And as for the lemon juice? It's often recommended in DIY skin care because it has vitamin C, which is a great antioxidant. It also has antimicrobial and astringent properties. But, it can be very irritating to the skin and can also make the skin more sensitive to sunlight. Noted. Go light on the lemons and wear SPF. OATMEAL, YOGURT, AND HONEY INGREDIENTS: Two tablespoons of oats One teaspoon of honey One teaspoon of yogurt Benefits: this mask cleanses and exfoliates the skin. Oatmeal has anti-inflammatory and soothing properties and helps skin maintain its barrier function. A strong barrier is crucial to protect skin from external threats such as pollution and to trap in water to maintain skin’s moisture levels. Yogurt works as a gentle chemical exfoliant, and honey, once again, hydrates.

Seating Arrangements Words by Jacqui Chaisson

www.pei-living.ca WINTER 2019
Choosing the best office chair involves a lot more than what looks good - it should work as hard as you do. Here are expert tips about what to look for when purchasing your next office chair.
Full Back
No Tools Required
Office chairs are essential for productivity and reduction of lost hours due to injury. Office chairs should be comfortable and have a full back. They should provide a multitude of adjustable positions, including lumbar support, height, and recline settings.
Recognizing the importance of adjustable office chairs for employee health, we recommend that chairs should be easily adjustable without a tool. Don’t be afraid to ask for a demonstration or try adjusting a chair for yourself before purchasing.
Waterfall Seats
Great Support Even When You’re Being Bad
The best office chairs will have a seat pan with a waterfall front (one that curves down) that prevents the seat from catching you behind the knees. The seat pan should also be contoured to allow even weight distribution and it should be comfortable to sit on. The edge of the seat pan should be soft and contoured so that it cannot cause compression of the thighs and buttocks. The rear of the seat pan should provide comfortable support.
Your chair should support your back as you sit, it’s okay to recline the chair back slightly, but too much can strain the neck as you try to right your head to view the monitor if you are using a computer.
Comfortable Joints Common signs that an office chair isn’t the right fit for you is if the angles of your hips, knees, and ankles aren’t comfortably at 90 degrees. If your hips are not at a 90 degree angle then the chair is either too tall or too short for you. Same goes for your knees and your ankles. All of your joints should ideally stay at 90 degrees. Breathable Upholstery is Better An office chair’s upholstery must be comfortable to the touch if you’re going to sit on it all day. You don’t want it to be abrasive, itchy, or something that may cause your body to overheat. Easily Adjustable The key to a good office chair is that it must be adjustable in all directions, the seat must adjust up and down, as well as tilt side to side. This is necessary to achieve proper posture when you’re sitting all day.
The Seat Must Fit You for the Backrest to Work If the seat pan is too big or the seat is too high, even where the chair has a backrest with lumbar support you may continue to be exposed to static loading because you cannot take advantage of the backrest. Many respond by sitting forward, instead of against the backrest, so that their feet can be on the ground, thus pressing the spine out of the natural curve and placing pressure on the discs. Encourage Movement Moving, and an ergonomic office chair that encourages it, helps keep blood and oxygen flowing. The best office chairs not only let you move but let you move while giving you the support your body needs. So when you try out a chair, really give it a test drive. Arms and Shoulders Another common sign a chair isn’t right is if you have to shrug your shoulders to get your elbows on the armrests. Similarly, arm and hand positions should offer the same flexibility to avoid developing pain in the shoulder, elbow, and wrist.

HOWATT of Turquoise Trixie

Stephanie Howatt loves hiking, travel, and exploring the outdoors - all of which inspire her design aesthetic for Turquoise Trixie, her homegrown jewellery company. Her extraordinary work uses a process called “electroforming,” which allows Howatt to turn one-of-a-kind natural elements into dainty wearable art. Turquoise Trixie pieces are available in stores on- and off-Island, as well as through Howatt’s Etsy shop. Her truly magical work marries the strength of its components and their rugged origins with Howatt’s delicate craftsmanship.
Q: Tell me a little bit about yourself. Where are you from, where did you go to school, what are your interests, that sort of thing. I grew up on PEI. After high school, I travelled for a few years, then graduated from Holland College. I now live in Charlottetown in an old home my husband and I renovated, along with our two rescue dogs and cats.
After months of trial and error, I figured out how to control the copper deposits. I was absolutely addicted.
an anode, which is a piece of recycled copper, onto a cathode, which is whatever object I’m plating. The anode and cathode are suspended in my homemade conductive solution for 12 to 48 hours, while the copper forms a shell around the object, becoming as hard as a copper penny.
I had a few items for sale in a friend’s shop, and she graciously offered to sell my electroformed pieces as well, once I was ready. TT expanded quickly after that. Other local shops wanted to sell pieces, and I also created an Etsy shop.
Prior to suspending the object in the conductive solution, I paint whatever parts of the object that I want the copper to deposit on with conductive paint. It acts like a road map, showing the copper where to deposit.
I work full-time; Turquoise Trixie is my side hustle, dream child, and creative output. I often come home from my day job and work late into the night at TT. I live to travel, and my husband and I have been lucky enough to visit many places together.
The process can take weeks! I’ve spent a long time perfecting my solution, conductive paint, and electroforming techniques, and I’m still learning every day.
Q: How did you start making jewellery?
Q: What sorts of pieces did you start with, and what new ideas for jewellery have come along since you began Turquoise Trixie?
I had never thought that I would be a jewellery-maker, but I’ve loved making things since I was young. I became interested in electroforming after seeing a photo of an electroformed stone in an art exhibit. I thought it looked so organic and beautiful, almost like something mined from the earth. I showed the picture to my dad, and he understood the process behind it. He borrowed a power converter for me to try. I still remember the first shell I successfully electroplated. At that point, I had no idea what I was doing, and since I didn’t seal the shell, my conductive solution turned it blue! After that, I was hooked. I bought my own power converter, and made my own conductive solution and paint. Both are hard to find in Canada, and the ones I tried were expensive and didn’t work well.
Q: When did you start Turquoise Trixie? I think I started sharing my first successfully plated pieces in February 2016, but I taught myself the process for months prior to that.
My initial pieces weren’t meant to be worn. They were just attempts to deposit copper onto organic materials I collected. I only realized a few months later that I was creating things I might want to wear. I’m very inspired by nature, and usually come home from places I’ve travelled to with items I found while snorkeling, hiking and adventuring. I never know what people will think of what I make, but I’m lucky enough to have a customer base who support most of my creations.
Q: Tell me more about how you make your pieces. Electroforming uses positive and negative electric currents to deposit copper from

READ IT - WATCH IT Words by Kristen Johnson
Several terrific books are being adapted into films right now. Here, you will find novels, a book of poetry, a novella, and three children’s classics, all slated for film adaptations with 2019 release dates. Grab one of these now, so that you can read it before you watch it.

www.pei-living.ca WINTER 2019
Where’d You Go, Bernadette by Maria Semple Bernadette disappears, and her precocious 15-year-old tries to track her down. This quirky novel consists of journal entry, email, and letter snippets. The story is quite silly, and a great parody of modern parenting. Richard Linklater is directing the film version, starring Cate Blanchett, Kristen Wiig, and Laurence Fishburne. The book takes place in (and berates) Seattle, but the film is shot entirely in Vancouver. Linklater has had success adapting novels before (A Scanner Darkly, adapted from Philip K. Dick’s book of the same name), and there is much buzz about this one online. The theatrical release is slated for late March 2019. Good Omens: The Nice and Accurate Prophecies of Agnes Nutter, Witch by Neil Gaiman and Terry Pratchett An angel and devil share laughs and a raucous good time while watching the apocalypse begin. Michael Sheen and David Tennant play the angel/devil duo, with Jon Hamm as Gabriel. Look for this sixpart series, titled Good Omens, on Amazon Prime in the first half of the year. The Goldfinch by Donna Tartt I didn’t think this book lived up to the hype when I read it last year, I’ll admit. Despite that, it is quite popular, and I think the film version could be redeeming. This is one of the rare occasions when a film might be better than the novel it’s based on because of cuts and edits.
The story follows a boy who steals a painting from the Metropolitan Museum of Art during a terrorist bombing. His mother dies during the bombing, and he essentially falls apart throughout the rest of the novel. The film will feature Nicole Kidman, Sarah Paulson, Luke Wilson and Ansel Elgort. Look for it in theatres in October. Old Possum’s Book of Practical Cats by T. S. Eliot Did you know that the Andrew Lloyd Webber musical, Cats, is based on a book of poems by T. S. Eliot? Pick up a copy and read about Jellicle Cats and Mr. Mistoffelees before the musical’s film version comes out in early December. Little Women by Louisa May Alcott
The Secret Garden by Frances Hodgson Burnett It seems to be the year to remake classic children’s fiction. The Secret Garden is a lovely, mysterious story about a young girl who finds a magical garden in her uncle’s yard. This is one of the first books I remember being enthralled with as a child. No release date is set for this film, but it is slated for 2019, and will feature Colin Firth as Lord Archibald Craven. The Turn of the Screw by Henry James I was floored when I heard that this horror novella was being turned into a film. It is just so good, and so creepy, that I questioned why I hadn’t seen an adaptation before (there are loads of them). Steven Spielberg is producing the film, titled The Turning, and starring Canadian actress Mackenzie Davis. IMDB reports that this is a “modern take” on the novella, so don’t hold your breath for an accurate representation. No official release date is set, but the film should hit theatres sometime this year.
First, if you haven’t read Little Women, now is the time. If you have read it before, consider reading it again while waiting for the Christmas release of the film version, starring Emma Watson as Meg. The Call of the Wild by Jack London Another children’s classic is also coming out Christmas Day 2019. The latest version of Call of the Wild will feature live action with CGI, and star Harrison Ford. Filmmakers have adapted this adventure story several times over the last 80 years, with some versions straying quite far from the novel. We will have to wait to see if the upcoming film stays true to the narrative.
Kristen Johnson is a homeschool mom and bookseller who loves to talk about books.
