cut description: Pork belly is uncured, un-smoked and un-sliced bacon, starting out from the underside or belly of the pig. Chefs consider pork belly far superior to bacon. Pork belly has juicy fat layers wrapped around the meat. There isn’t much meat, but once cooked it becomes tender, similar in texture to pork loin. And that fat is melt-in-your-mouth quality. Best prepared by braising or roasting. Once it’s cooked and cooled, you can crisp up the skin in a skillet. If you roast it, the skin should cook up crisp.
