Back To School

Back to school means back to a normal schedule. Bedtime, packed lunches, and school supplies. For most of us, we plan our shopping strategy. We try to maximize our savings by being thrifty. However, this does not imply that we are not able to provide the best quality for our child's needs. Don't feel overwhelmed. Of course, you plan to be prepared as you can be. Just focus on what is needed now. Then, we all know that the teacher sends home the supplies that they want the kids to have.

Is your food bill out of Control? The increasing prices of food have caused our wallets to take a hit. Depending on the size of your family, this can be a challenge keeping food in your home. The ever-changing economy has forced us to be creative with our money With a little time and planning, couponing can really help you take control of your food bill. I find that I hear from complaining about couponing from people like.. It takes too long, where do I find the coupons, they expire too fast, and my personal favorite, I don't have enough time. But the truth is your really can't afford not to have any of these excuses. These few suggestions can save you time and money. You might even find yourself feeding your family better.

Take snacks and fill water bottles for on the go. Eating out can be expensive. Plan your meals for the week. This will help cut down on the bill and equal great saving in the long run.

After School Activities can give your child skills for a lifetime. Taking time for your children are not only necessary but, can make a big difference in their learning process and social skills. Do you allow your kids to spend all of their leisure time parked in front of the television or playing video games, parents who encourage their children to participate in activities outside of the home are helping in their development. I have seen many parents who either home school or hold their children back from interacting with others. Unfortunately, this keeps them in a sheltered environment. Some tips to help get them out of your and their comfort zone include:

Find a sport or activity like dance that can not only give them exercise but help with their coordination. Also these days child obesity is off the chart. Physical Activity can create good habits for a lifetime. Creativity: the beautiful side of this activity is to be able to see your children grow beyond their imaginations. Just think you could have the net Van Gogh on your hands.

In this complex world, even children can feel stress. They are expected to do well in school and can often be subject to peer pressure. Activities that take place in a nopressure environment and are just for fun are a good way to relax and enjoy meeting new friends.

It amazed me how many people forget the importance of this lifelong skill. The joy of learning lifelong lessons about sportsmanship can give a understanding that it isn't always about winning, but about participating and giving your best effort.

Children are precious and a joy to watch grow and become a part of todays society. I hope that these tips help give you and your children confidence to try different activities.

Do Women and Men Invest Differently? Several years ago, a book titled Men Are From Mars, Women Are From Venus was quite popular. As the title suggests, the book argues that men and women are vastly different from each other, particularly in their emotional needs and in the way they communicate. While not everyone agrees with the notion that men and women might as well be from different planets, most of us would probably concur that the two genders frequently behave differently — and this divergence in behavior may also show up in the way that we invest.

In fact, various studies and anecdotal evidence suggests these differences in the way that men and women invest: Men tend to trade more often than women. Men seem to buy and sell investments more frequently than women. This difference could result in an advantage for women investors. For one thing, if women do trade less, they may incur fewer commission charges, fees and other expenses, all of which can eat into investment returns. Also, by holding investments longer, women may be able to take better advantage of market rallies. During the 2008-2009 financial crisis, for example, men were more likely than women to sell shares of stock at market lows, which led to bigger losses among male traders — Ultimate Woman International September/ October 2014

Optimism can be a valuable asset when it comes to investing; if you have confidence in the future, you’re more likely to invest for it, and to continue investing. On the other hand, false optimism may lead to over-confidence, which can have negative results for investors.

BBQ Chicken Salad with Cilantro Lime Ranch (Left) Prep Time: 20 minutes

Directions

Cook Time: 10 minutes

Preheat a grill to medium-high heat. Season chicken breasts with salt and pepper. Brush grill grates lightly with canola or vegetable oil then place chicken on grill and cook rotating once halfway through cooking and brushing both sides with BBQ sauce during last minute or two of grilling (mine only took about 4 minutes per side, but grill time it will vary based on thickness of chicken and temp of grill). Transfer chicken to a plate, cover with foil and let rest 5 - 10 minutes then slice into small strips.

Total Time: 30 minutes Yield: 4 - 5 servings Ingredients 1 1/2 lbs boneless skinless chicken breasts (I sliced mine in half through the thickness before grilling) Salt and freshly ground black pepper 1/2 cup BBQ sauce, homemade or store bought 1 large head (18 oz) Romaine lettuce, chopped 3 medium Roma tomatoes 1 - 2 avocados, diced 1 1/4 cups fresh or frozen corn (thawed and drained if frozen) 1 (15 oz) can black beans, rinsed and drained 2 green onions, chopped 1 - 1 1/2 cups cheese (I used half cheddar half Monterey jack, a Mexican blend would be fine too) Corn tortilla strips* Dressing 1/2 cup mayonnaise (could sub light mayo for a healthier opt) 1/3 cup sour cream (could sub plain Greek yogurt for a healthier opt) 1/3 cup milk 1 Tbsp + 1 tsp buttermilk ranch seasoning mix 1/3 cup cilantro (about a handful) 1 clove garlic, minced Juice of 1 lime 2 - 3 pinches cayenne pepper (optional)

Layer all remaining ingredients into large salad bowls, beginning with salad (then from there the order doesn't matter). Serve topped with Cilantro Lime Ranch. For the dressing: Combine all dressing ingredients in a blender and process until cilantro is finely chopped. *I made homemade corn tortilla strips by slicing 6 6-inch corn tortillas into strips (and each strip into halves), then I fried in about 1-inch of hot canola oil in a skillet (vegetable oil works too), rotating once halfway through with metal tongs, until they just began to turn golden. Then transferred to a plate lined with paper towels and immediately sprinkled with salt. Store bought is fine too if you don't want to make them. Recipe Source: Cooking Classy

Ingredients

For the pasta:

2 Tbsp extra virgin olive oil

1 (28 oz) can crushed tomatoes

Prepare pasta according to directions listed on package, then drain and once noodles are cool enough to handle, align on parchment or wax paper, side by side. Preheat oven to 375 degrees.

For the cheese filling:

1/3 cup finely chopped yellow onion 3 cloves garlic, minced

2 Tbsp chopped fresh basil (or 2 tsp dry) While pasta is boiling, drain steamed or frozen spinach in paper towels, pressing Salt and freshly ground black pepper out some of the excess moisture (I would12 lasagna noodles n't drain all of it, I think a little will keep the 1 (10 oz) package fresh spinach, noodles moist), then chop spinach. In a steamed (or frozen, thawed) mixing bowl stir together, spinach, ricotta, egg, parsley and season with salt and 15 oz ricotta cheese pepper to taste. Mix in 1 1/2 cups of the 1 large egg mozzarella, the asiago and Romano 2 Tbsp chopped fresh parsley (or 2 tsp cheese. dry) 10 oz mozzarella, shredded, divided (2 1/2 cups)

To assemble lasagna roll ups:

Spread 1/4 cup (barely heaping) of the cheese mixture evenly along length of the 3 oz finely asiago cheese (scant 1 cup) noodles. Roll noodles up jelly roll style to 2 oz finely shredded Romano or parme- opposite end. Pour about 1 cup of the san cheese (2/3 cup) marinara sauce into the bottom of a 13 by 9-inch baking dish. Place lasagna roll ups Directions, For the marinara sauce: in baking dish then cover tops with reHeat olive oil in a medium saucepan over maining marinara sauce and sprinkle with medium heat. Once hot, add onion and remaining 1 cup mozzarella cheese. Bake sautĂŠ until tender about 3 minutes. Add in preheated oven 20 - 28 minutes, until garlic and sautĂŠ 30 seconds longer. Ingredients 6 ounces rice vermicelli noodles 2-3 teaspoons curry powder 1/2 teaspoon turmeric 3-4 tablespoons soy sauce 1 teaspoon honey or sugar

red pepper flakes, to taste 1-2 tablespoons vegetable oil 1 large egg 1 pound shrimp, peeled and deveined 2 cloves garlic, minced 1 teaspoon ginger, minced 1 small onion, sliced 1 cup cabbage, shredded 2 carrots, peeled and sliced into small thin strips 1 tablespoon sesame oil Soak the rice vermicelli noodles according to package instructions. Drain well and set aside in a colander. In a small bowl, whisk together about 3 tablespoons of water with the curry powder, turmeric, soy sauce, honey, vinegar, and red pepper flakes for the sauce. Set aside. In a large wok or pan, heat vegetable oil and scramble the egg and cook the shrimp until pink, set both aside. Add a little more oil then toss in garlic and ginger; cook until fragrant for about 2 minutes. Add in half the sauce, stirring quickly and cook until the sauce starts to heat, then stir in sliced onion, cabbage and carrots and cook for 2-3 minutes. Add in the rice vermicelli noodles, remaining sauce and shrimp. Quickly toss together the noodles until all ingredients are well combined. Turn off heat then stir in sesame oil and serve.
