Dear Friends, Welcome to the Fall/Winter issue of Island Vibes. Island Vibes newsletter sets the stage for our exciting and engaging fall happenings. To those who we have not yet had the pleasure of welcoming, Island Vibes serves as an introduction to South Seas Island Resort’s culture. To our wonderful return guests, Island Vibes affords a glimpse into our resort's multitude of activities. Fall offers an opportunity to recharge following an action-packed summer and prior to a fun-filled holiday season. In true form, we’ll be debuting bigger and more engaging holiday initiatives, beginning with Thanksgiving and continuing through New Year’s Eve. We’ll be offering new Thanksgiving dining options and will be adding programming to our Holiday Stroll weekends. As always, we’ll end 2018 with an unforgettable, celebratory bash. In my two and a half years here at South Seas I have been fortunate enough to enjoy all the beauty this amazing island has to offer. As such, it is my passion to incorporate as many local ingredients as possible, highlighting the abundant natural beauty of Captiva. As the executive Sous Chef, I am responsible for most of the functions and banquets on property and have embraced these inspirations to approach new and creative ways to present a traditional banquet fare in a unique and experiential way. In my approach, I attempt to disrupt this preconceived idea of the all-you-can-eat buffet and orchestrate an appealing, fun, engaging and delicious spread of food that makes sense for the occasion. My ideal modern banquet function must have elements that are fun, interesting, lively, full of color, and interactive with the guests. We are creating memories and our guests deserve the personal touch that they will be able to talk about for years to come. Our banquet stations are based on live action surrounded by fresh local product. For example, during the Florida watermelon season we like to WOW our guests with a "Vegan Tuna" station. This is basically fresh block cuts of local watermelon which we encrust with toasted sesame seeds and then "sear" in liquid nitrogen. After the watermelon is seared, we slice them thin to look like Ahi sashimi, which is then placed on a bed of Wakame seaweed and topped with a delicious hoisin dressing. The watermelon adopts the flavor of what it is served with and the WOW factor is tremendous. Having over 300 acres of beautiful nature preserve allows us to create many antitypical pop-up function spaces that will entertain our guests beyond expectation. Imagine having a function on our beautiful white sandy beaches, toes in the sand, enjoying the perfect Floridian sunset while watching our cooks serve up an incredible fresh seafood boil tableside and enjoying libations muddled with fresh herbs grown in our gardens. I am thrilled to work here and cannot wait to serve you or your party soon.

METHOD 1. Preheat oven to 275 degrees F. 2. In a small sauce pot, bring cream, white sugar, and vanilla to a scald (should start to bubble hard around the edges and quake in the middle). 3. In a large bowl, whisk egg yolks until fully combined, but try not to create bubbles. 4. In ¼ cup increments, slowly whisk hot cream into egg mixture, again taking care to not create bubbles. 5. Once the eggs and cream are incorporated, stir in and fully distribute the pumpkin puree. 6. Ladle 4oz of the mixture into 6-6oz ceramic ramekins. 7. Place ramekins in a larger pan with sides (a 9x13 rectangular cake pan for example). 8. Carefully put pan of ramekins on middle rack of the oven, then fill the resort of the pan (between the ramekins) with boiling water until halfway up the ramekins. 9. Cook for 45-60 minutes until, when tapped, the center (approx 20% of the diameter) still has some wiggle but the rest appears firm. 10. Remove entire pan from oven and allow to rest on counter for 30 minutes before removing the custards from their water bath and refrigerating overnight. 11. To serve: Sprinkle raw sugar over top until fully coated in single layer (shake of excess). With a blow torch melt the sugar, try to work at an angle so that the flame does not directly touch the sugar and burn it. If you do not own a blow torch, your broiler works just as well! Allow to cool for 90 seconds and serve immediately.
