the summer is still definitely on. Businesses have adapted and so have we as individuals. This is an important time to continue to reflect on our own lives, as well as the world and people around us. It is important to cherish the time we spend with our loved ones. Although the restrictions were not fully lifted on 21 June we are confident that they will be… soon. Yes, there may be some more bumps in the road ahead along the way. However, together we can continue to help and support each other and local businesses as we travel through these uncharted waters. Who’d have thought 12 months ago we would have come this far? Remember the restrictions are there for a reason, so now is not the time for complacency. Now is the time to get out there and enjoy life… safely. There are plenty of great things to do and see throughout the region over the coming month; from food events to theatre, comedy to cinema and beyond. Another thing this region has a plentiful supply of is amazing picnic spots, and this is why we explore how to have the perfect picnic. Getting out there sharing food with friends in the beautiful landscapes of Norfolk and Suffolk is one of the best ways to celebrate life. Rejoice in the bountiful supply of produce we have on our doorsteps from our excellent farm shops and delis. A summer of live music: 30 July-11 September First Night Of The Proms (30 July) Every concert will be broadcast live on BBC Radio 3 and available on BBC Sounds. 20 Proms will be broadcast on BBC television and available on BBC iPlayer, including the iconic First Night and Last Night Of The Proms. 2021 marks 150 years since the Royal Albert Hall first opened its doors as part of Queen Victoria and Prince Albert’s grand project to enrich the cultural life of Britain. With 52 concerts taking place over 44 days, featuring 30 orchestras and ensembles and more than 2,000 musicians, this ambitious season is a celebration of live music on a scale not seen since before the pandemic.

This highly anticipated dark comedy is set in the idyllic but fragile beach paradise of sunny 1980s San Diego, following Sheila Rubin, a quietly tortured, seemingly dutiful housewife supporting her smart but controversial husband’s bid for state assembly. But behind closed doors, Sheila has her own darkly funny take on life she rarely lets the world see. She’s also battling a complex set of personal demons relating to her self-image. That is, until she finds release through the unlikeliest source: the world of aerobics. At first hooked on the exercise itself, Sheila’s real road to empowerment comes when she discovers a way to merge this newfound passion with the burgeoning technology of videotape to start a revolutionary business.
Loki Disney+ Tom Hiddleston reprises his role as the God of Mischief in this new series that takes place after the events of Avengers: Endgame. This long-awaited release expands the Marvel Cinematic Universe even further. It seems to be a current trend from Disney to develop the adventures of these characters through limited series, with others planned in the future. The fabulous cast also includes Owen Wilson, Gugu Mbatha-Raw, Wunmi Mosaku, Sophia Di Martino, Erika Coleman and the legendary Richard E. Grant. The six episode series comes to a conclusion with the season finale released on 14 July.

Theatre on the Coast, Southwold Cut Conversations
With us all hoping that the road map to restrictions lifting is a success, local theatre goers have dates ringed on their calendars in anticipation. This year’s Theatre on the Coast in Southwold proves that the public are still hungry for performing arts with several shows planned for the upcoming months. Kicking things off on 21 July will be a production of Olivier Award winning comedy Cleo, Camping, Emmanuelle and Dick by Terry Johnson and will be directed by Theatre on the Coast favourite Sarah Redmond. Also on the cards from 25 August you can catch a revival of Tomfoolery – a musical revue by Cameron Mackintosh and Robin Ray with the songs and words of Tom Lehrer.

econnecting is the buzz word this summer and with venues, hospitality and attractions being prepared and experienced in keeping us safe, we should feel confident in getting out to enjoy ourselves once again. Last month’s column was a smorgasbord of things to do this summer, in fact I was tripping over my words with the excitement of writing about things actually happening. My inbox was and still is bursting with news about events, attractions, and ways to enjoy ourselves. So here we go. In May, VisitEngland launched their summer £5 million domestic tourism campaign Escape The Everyday. Domestic tourism spending is estimated this year to be worth £51.4 billion, just over half of the £91.6 billion in 2019. These are not surprising figures. As I said in last month’s column, the spotlight over the past year has been on discovering our own lands and VisitEngland’s message of course, is just that but with the added message of reconnection. Reconnecting with the places you love, reconnecting with loved ones and reconnecting with you. I talk endlessly about how lucky we are in Norfolk to have such choice in how we spend our leisure time. We have incredible local food and drink, high quality attractions, a beautiful coastline, an abundance of natural
spaces, the Broads, massive amounts of cultural experiences and our welcoming and walkable capital – Norwich, the City of Stories. We also have great people behind them, making places special, to have fun in, to relish and appreciate. need to support them as much as we can – now’s the time to invite friends and family over to visit if they are located outside the county. Hotels and other accommodation providers are open and safe to stay in once again. VisitEngland’s campaign messaging is about what we can escape to: “to new views with old friends; to scenes not screens; to eating out, not cooking in; to the summer you’ve waited for”. And we will all have a different idea of what this is. It can be as small or as big as we want – depending on our mood and pocket. Mine sometimes is as simple as sitting down quietly with a delicious latte from an independent coffee house and striking up a conversation with the barista – albeit behind a mask! I’ve mastered the art. You probably won’t be surprised how nourishing it is to chat with a stranger even if it’s about the weather. The pandemic has taught us that. So where can we escape to a view, or a scene, to eat out and to enjoy summer? Many venues and attractions are still working hard on special events and putting things into place – for obvious reasons there is a lot of catching up to do so with that in mind I recommend you look at visitnorwich. co.uk which is packed full of ideas. This charming market town sits at the southern point of the Broads and offers a wealth of independent shops

nce a flourishing Saxon sea port, Beccles is set in rolling countryside and offers fantastic views over, and access to, the surrounding Southern Broads. The winding cobbled streets are lined with quirky shops and restaurants, and there’s plenty of historical interest too, including Beccles Museum and the Bell Tower. There are an array of popular events, festivals and entertainment held throughout the year, making this a town that hasn’t lost its tightknit community roots.
What to see and do
Wander to the popular quayside area of Beccles to appreciate the town’s pretty riverside location. Take to the water in a canoe, kayak or dayboat from Hippersons Boatyard, or hop aboard the Big Dog Ferry and take in the tranquility and passing wildlife on a trip to The Locks pub in Geldeston.
If you fancy a dip while the weather is good, pop to Beccles Lido – a traditional heated outdoor pool with plenty of space to swim, sunbathe and soak up some summer rays. Staying on dry land, there are a vast array of independent shops to browse, offering everything from clothes, toys and gifts to delicatessens filled with delicious locallyproduced goodies. In August, the renowned Antiques Street Market returns for the final time this year and is a must-visit for anyone looking to browse vintage items, collectables and antiques.

If you’re in need of nourishment, make your way to the Wine Vaults, the town’s selfprofessed ‘friendliest bar and restaurant’. The restaurant covers three floors, including the cosy cellar, and serves hearty portions of locally sourced ingredients. In the traditional bar area you’ll find a roaring fire (though hopefully not at this time of year!) and an extensive list of wines, cocktails and real ales. SERVES: 6-8 INGREDIENTS: • 1 large tomato • 3 ripe avocados • Juice 1 large lime • Handful coriander, chopped, plus a few roughly chopped leaves, to serve • 1 small red onion, finely chopped • 1 chilli, deseeded and finely chopped • Tortilla chips, to serve

INGREDIENTS: • 1 part tequila • ½ part triple sec or Cointreau • 1 whole lime, juiced (plus extra for decoration) • A pinch of salt • Ice
Chop up the tomato to a pulp, then tip into a bowl. Halve and stone the 3 avocados (saving a stone to stop the guacamole going brown) and use a spoon to scoop out the flesh into the bowl with the tomato. Tip the lime juice, a handful of roughly chopped coriander, the red onion and chilli into the bowl, then season with salt and pepper. Use a whisk or fork to roughly mash everything together. If not serving straight away, sit an avocado stone in the guacamole and chill until needed.
Chill your glass in the fridge or by filling it with ice. Put lots of ice, the tequila, triple sec and lime juice into a cocktail shaker and shake hard for around 30 seconds. Run a lime wedge around the rim of your chilled glass before rolling it in salt. Double strain the mix into the glass and garnish with a slice of lime. 27
CHICKEN ENCHILADAS
If you need something more substantial to soak up those shots, these enchiladas are a definite crowd pleaser. SERVES: 4 INGREDIENTS: • 1 tbsp rapeseed oil • 2 red onions, sliced • 2 red peppers, deseeded and sliced • 2 garlic cloves, crushed • 2-3 tsp chipotle paste • 2 skinless chicken breasts, cut into thin strips • 400g can black beans or kidney beans • Small bunch coriander, chopped • 500ml passata • 1 tsp ketchup or sugar • 6 medium tortillas • 50g mature cheddar, grated
Heat oven to 200°C ⁄ 180°C fan ⁄ gas 6. Heat the oil in a large frying pan and add the onions, peppers and half the garlic. Cook for 15 mins, stirring frequently until everything has softened. Stir in the chipotle paste (go for 3 tsp if you prefer more spice), then fry for 1 min. Add the chicken strips, turning them over in the mixture for around 5-10 minutes or until cooked through. Stir in the beans, coriander and 150ml of the passata, then take the pan off the heat. Mix the rest of the passata with the remaining crushed garlic and the ketchup. Divide the chicken mixture between the tortillas, then fold the sides in and roll them up. Pour half of the passata sauce into a square baking dish, then place the enchiladas on top, side by side. Dot over the remaining sauce and sprinkle with the grated cheese, then bake for 25-30 mins until golden brown. Serve on their own or with a green salad dotted with jalapenos.

SERVES: 12 INGREDIENTS: Biscuit base: • 300g Digestive biscuits • 150g unsalted butter Cheesecake filling: • 250g white chocolate • 500g full fat cream cheese • 100g icing sugar • 1 tsp vanilla extract • 300ml double cream • 250g fresh raspberries To decorate: • 150ml double cream • 2 tbsp icing sugar • 100g white chocolate • 12 fresh raspberries • 10g freeze dried raspberries

METHOD: For the biscuit base Melt 150g of unsalted butter. Blitz the digestives in a food processor to a small crumb (if you don’t have a food processor, place the biscuits into a sandwich bag and bash with a rolling pin), then add the melted butter – either pulse in the food processor until the mixture is combined or mix it in a bowl. Tip the biscuits into an 8"/20cm deep Springform tin and press down firmly. For the cheesecake filling Melt the white chocolate in a bowl over a pan of simmering water, or in the microwave on short bursts until full melted – leave to cool whilst doing the below. Whisk together the cream cheese, icing sugar and vanilla until smooth. Pour in the double cream and whisk until thick. Pour in the cooled white chocolate and whisk briefly to combine. Then fold through the fresh raspberries. Spread the mixture over the biscuit base, smooth over and chill in the fridge for at least 5-6 hours, or preferably overnight so it will set fully. To decorate Once set, drizzle the melted white chocolate over the cheesecake. Whip together the double cream and icing sugar and pipe on in swirls, then add a fresh raspberry to each swirl. Finally, sprinkle on some freeze-dried raspberries and then serve with double cream or ice cream. Will keep in the fridge for up to three days.

Liver pâté A lot of people are put off by liver, but it’s a great source of iron and this herby pâté is a delicious way to include it in your diet.
METHOD: Melt a knob of the butter in a deep frying pan. Add the chopped onions to the pan and gently cook over a low heat for 5 minutes, stirring occasionally to prevent over browning. While the onions are cooking, pat the livers dry with a clean kitchen towel to remove any excess blood. Roughly chop or cut with kitchen scissors and add to the onions in the pan. Cook for around 5-7 minutes, turning the livers to ensure even cooking. Add the cooked liver and onions to a food processor together with the mustard, lemon juice, garlic, seasoning, dried herbs and the remaining butter. Pulse the mixture thoroughly until creamy and smooth.
Spoon the mixture into a suitable container like a small serving bowl or ramekin and smooth down using the back of a spoon. Alternatively place in smaller bowls for individual portions. Place in the fridge, covered, to cool in temperature and set. Once the pâté has set, melt the ghee in a saucepan. Poor the melted ghee over the pâté, then place in the fridge to set for an hour or more. Serve cold on thinly sliced toasted sourdough. Please note: Liver pâté is not recommended for pregnant women
SERVES: 6-8 INGREDIENTS: • 125g butter (removed from fridge to soften) • 250g liver, trimmed • 1 small brown onion, skin removed, diced small • 1 tsp wholegrain mustard • 1 tsp lemon juice • 1-2 large cloves garlic, peeled • Salt & pepper • 1 tsp dried rosemary • 1 tsp dried thyme • 1 tsp dried sage • 35g ghee for sealing the pate • Thinly sliced and toasted sourdough bread to serve 29

Wine is the top tipple for many these days, here are some facts and tips to boost your knowledge at your next socially distanced garden party. By Andrew Hirst
W
ine is most definitely the number one choice among the team here at Places&Faces HQ. With this agreed the only major discussion points come down to red or white, and which variety. Occasionally the word rosé gets dropped into the conversation... the jury is still out on this at the moment. I am most definitely not a wine snob, however it is worth buying a good quality wine, and even better if you can buy local. With so many excellent producers on our doorstep we are really spoilt for choice. Where a grape is grown is equally as important as how it is grown. From how much sun, the type of soil, the methods used and even the plants growing around the crop will dramatically influence the final product. The French have a word to sum up all these factors, "Terroir". Many of us buy our wines from the large chain supermarkets, but are we getting the most bang for our buck? A £5 bottle of wine only contains around 30p of actual wine with the rest of the money spent going towards packaging, logistics and taxes. Double your spend to £10 and you suddenly start to get a better return on the amount spent on
LIST the wine in the bottle, around £2.70. Spend £20 and your wine in the bottle rises to around £7. This doesn't mean that if you keep throwing money at the bottle your wine will keep getting better and better, spend over £30 and you will find you are probably just paying for the name. £10-£15 is great area for your spend if you are looking at a regular bottle to enjoy. Now we have a quality bottle of wine let's get pouring and here are a few tips to get you tasting like a pro in no time. But it is worth remembering the main thing is to have fun and enjoy what we are drinking. Nobody is judging you if your favourite bottle is still a Mateus Rosé... hey, the 80s were great. We can split out how we approach wine into three categories; appearance, nose and palate. APPEARANCE The look of a wine can give us clues about the age and flavours of the wine. First off don't pour too much wine into the glass or you might just end up wearing it rather than drinking it. Tilt the glass, ideally over a light coloured background so you can see its colour and intensity. Next swirl the wine around the glass so you can observe the viscosity. When you stop swirling the wine will cling to the glass and drop down in tears. The thicker, closer together, more viscous and slower moving the tears the higher the alcohol content of the wine as well as higher residual sugars. Younger wines normally have a brighter more vivid colour, and older wines are more tawny, especially evident at the edge. With red wines the deeper and darker the colour normally indicates a more intense, richer flavour. If a white wine has a golden colour it may indicate that it has been oaked. NOSE Give it a swirl to release the aromas, now get your nose right in there and have a good smell. Younger wines tend to smell fruitier and much fresher. Older wines will have a much more complex aroma, where you may be able to sense leather, mushrooms, honey, tobacco notes or a nutty-ness. If a wine has been aged
Now we have a little bit of base knowledge, let's get out there and get tasting good quality wine. It is important that you try out different wines, grape varieties and producers to help expand your knowledge. But most importantly remember to have fun, enjoy your wine and drink responsibly.

in oak then you might be able to sense some vanilla, toast, smoke, cedar or coconut aromas. It is worth noting that if a wine was produced in a cooler climate the overall aromas will be subtler and appear to be less pronounced. PALATE Now the fun part. Tasting. Take a good slurp and aerate as you take in the wine. Don't worry about the loud slurping noise... we're all friends here. Oh and try not to slurp too much as we don't want anyone choking. Swirl the wine around your mouth and then ask yourself questions about how it tastes. If you have a warmth this will indicate a higher alcohol content; more warmth, more alcohol. Acidity? How much your mouth waters after you have swallowed will indicate higher levels of acidity. Sweetness will be felt towards the front of your tongue. Tannins will be sensed as a drying sensation around your teeth and gums. Length? How long do the flavours last? The body is a consideration of all of the taste factors. Younger wines will taste fresher and fruitier, where as older wines are much more complex. The same as the nose, if the wine was produced in a cooler climate it will have less ripe and less pronounced flavours. The tannins in the wine will come from the grape skins and if the wine has been aged in oak. A higher alcohol content may indicate that it was produced in warmer climes or that the grapes were from a later harvest. Another great vineyard covering eight acres and growing five different varieties including madeleine angevine, auxerrois, pinot gris, pinot meunier and pinot noir. Their Madeleine Angevine is of particular note with the 2015 vintage winning the UKVA gold in the wine of the year competition. The 2018 Madeleine Angevine certainly doesn't disappoint either, especially with such a rich heritage, giving off aromas of stone fruit, walnut, apple and gentle hedgerow flowers. The palate presents a crisp, dry and exceptionally well balanced wine. Winbirri Owner, grower and winemaker Lee Dyer produces a fantastic array of wines from this Norfolk based vineyard, including a vintage reserve sparkling, a pinot noir and of course the award winning bacchus. The 2015 bacchus was the winner of the Platinum Decanter Award best in show 2017 – best single varietal white wine in the world. Quite an accolade, and the 2019 vintage has been rated as the number one wine in the world by Vivino.com. This grape variety could well be known as the Sauvignon Blanc of England, with an elegant nose of grapefruits, passion fruits and floral characters. Tuffon Hall Flint Another multi-award winning local wine, this time from Bungay, Suffolk, which was established by Ben and Hannah Witchell who have been making wine since 2016. A producer of another fine bacchus which is often compared to a Sauvignon Blanc and offers greater complexity with many layers of lime, gooseberry, elderflower and cut herbs. Also of note is the Pinot Noir Précoce which is produced using a combination of Beaujolais and Burgundian techniques that Ben learnt first hand in France. Wyken The vineyard was planted in 1988 on a south facing slope covering seven acrces with an estimated 12,000 vines. Producing around 12,000 bottles of wine a year which are sold through their restaurant and shop. You can walk through the beautiful vineyard for yourself from the Leaping Hare over to the Home Meadow and through a most beautiful ancient woodland. Look online for details of the guided vineyard tours, a must to appreciate the terrior prior to opening a bottle. July is National Picnic Month… pack the hamper, get the blankets on the ground and enjoy sharing food with friends. By Andrew Hirst

he humble picnic has never felt so important as it does this year. 2020 was the year of hibernation. Holed up in our nests waiting for a break in the storm. 2021 is the year of stepping out, slowly… depending on what the current restrictions and guidelines say we can or cannot do. The picnic is the great equalizer. Prep everything at home and head out in your bubbles or meet up with friends and family where you can socially distance and actually talk to a real person. Not the tiny digital humans we have all been chatting to on our smartphones, but in the flesh, live and in person. The word picnic is derived from the 17th century French word “pique-nique”, a term which is used to describe a social gathering where attendees contributed with a portion of food or drink to share with the group. One of the most iconic depictions of a picnic is Le déjeuner sur l'herbe (The Luncheon on the Grass) by Édouard Manet. The 1862 painting depicts the juxtaposition of a female nude and a scantily dressed female bather on a picnic with two fully dressed men in a rural setting. July is National Picnic Month around the world, so what better excuse do you need to get out there and get creative with the good old picnic. Don’t just play it safe, let's make these picnics perfect.
5 steps for the perfect picnic:

Decide who you want to invite and if you want to treat everyone and cater for them or if you want contributions. If you are looking for a group effort maybe allocate items to each person or you might just end up with six portions of the same thing.

Location, location, location? Think of a great destination that is central to all and which has any amenities located nearby. If great auntie Flo is coming she might need easier access and might not want to go in a bush! See page 39 for our top five suggestions.

Blankets. You can never have too many. Spread out around the centrepiece of the food. If you are just taking the one blanket you make that into the life raft that everybody wants to huddle on. Not great during regular times let alone when trying to socially distance.

Think about the environment. Not just from a clearing up after yourselves, but from a singleuse-plastic point of view. Reusable or recyclable is the way to go.

What food and drink are you taking. How will it travel? Will it taste ok if it's warm? If you want to give everyone a glass of chilled prosecco then make sure you can deliver on that promise. 35

The basket case? The best place to start is with what you are going to pack all of your goodies in. Are you going with the traditional hamper or for a rucksack? There are some fabulous options on the market these days whichever option you decide to go for. The more traditional basket has a certain romanticism about it especially if you are heading out with your significant other. However this is not so practical if you are about to embark on a five mile trek before you reach your picnicking destination. In these situations the rucksack option will be much more practical and can still have places for all of the plates, forks and napkins. If you don’t own either of these options, look towards things you already own. If you are going with the kids why not try and spread the load. Don’t stuff everything into three bags for life that you have to struggle up the hill with, utilise their school backpacks so that everyone has something to carry. This is always a good time to see what your little darlings have been hoarding in their school bags, you might just find that missing games kit and a bag of mouldy cucumber.

What’s on... Chicken the menu? & bacon picnic pie SERVES: 6-8 INGREDIENTS: • 375g Ready Rolled Shortcrust Pastry • 200g turkey mince • 200g chicken breast, diced • 100g bacon lardons • 150g shelled pistachios, crushed • 1tsp ground black pepper • Small bunch chopped parsley • 1 egg, beaten • 1 chicken stock cube • 1 gelatine leaf • 3 shallots, finely chopped METHOD: Pre-heat your oven to 200°C. Remove the shortcrust pastry from the pack and lay into your lightly greased loaf tin, saving enough to make a lid. Mix the turkey mince, diced chicken breast, bacon lardons, pistachios, shallots, parsley, salt and pepper in a bowl. Add the mixture to the loaf tin then brush the edges of the pastry with beaten egg and the add the pastry lid, pressing down to form a seal. Make two holes along the centre of the lid; this is where we will pour in the gelatin stock mixture later. Brush with beaten egg and bake for 1 hour and 45 minutes, until the pastry is crisp and golden. When the pie has about 20 minuets left, brush the top with more egg and season with flaky sea salt. If you feel the pastry is browning too much, drop the heat to 180°C. Once done remove from the tin and set to one side. Dissolve the stock cube in 100ml of boiling water. In another bowl soak the gelatine in water, and once soft, squeeze out any excess, then add to the hot stock. Mix together until the gelatine is dissolved. Pour in the holes on the top of your pie and then leave to cool. When cool place in the fridge for at least three hours to set.
So... what to take? Ultimately the world is your oyster… just don't take oysters, unless you want to run the risk of food poisoning. Think about how far you are travelling and how your food will travel with you. It should be obvious that ice cream will end up as Neapolitan soup but other items may not travel so well on a hot day; chocolate bars for example, are a great snack on the go unless they have sat in a hot hamper for three hours.
Snacks Think of food that travels well. Think of food you can buy from a motorway service station and then make a better, more wholesome version. If you are not ready to create your own amazing delicacies then head to your own local independent delis. Here in Southwold near Places&Faces HQ we have some absolute corkers; Two Magpies Bakery and Black Olive. Stock up on some artisan Scotch eggs, sausage rolls, pork pies, pasties and sandwiches. There is an amazing selection of produce across the region. Don’t forget to take some accompaniments; mustard, aioli, and a selection of sauces. A pork pie is nothing without a good dollop of English mustard. Delicious.

Dessert
Packed in good quality containers a good salad can be a great accompaniment. Leave the dressing off until you serve it up on the blanket to avoid limp leaves and an unpleasant consistency. Try potato or pasta salads with a mixture of radish, cucumber, celery and onion. Good hearty salads which will make the guests feel satisfied. Place a good handful of leaves on a plate and serve up your pasta salad on top to help you to avoid the dreaded wilt. Boiled eggs are a great addition as well as feta cheese, just add everything at the end or you might just have a recipe for disaster.
To really wow at the picnic, prepare a show stopping centerpiece. Picnic pies or quiches are a great idea. They travel well and you can cut hearty slices when you get there. Choose the ingredients carefully as you will be serving it cold and don’t make it too saucy, we are going for a picnic not a swim. I opted for an old family favourite, chicken and bacon picnic pie − see opposite for full recipe. It travels as well as it eats.
I am sure you have a great array of puddings in your arsenal but most of them will not travel well. They will either be affected by the heat or need special handling to make sure it doesn't end up looking like an Eton mess. Your get out jail dessert is the good old tray bake. Slice up and pack in your tupperware for an on the go option, whilst adding summer fruits to elevate it from just a brownie or a sponge. If you do want to go a little fancier layer up individual cheesecakes in jars, screw on the lids and away you go.
Streusel Cheesecake Bars INGREDIENTS: • 2 packs Doughlicious Classic Chocolate Chip cookie dough (12 dough balls), at room temperature • 1 pack Doughlicious Chocolate triple chip cookie dough (6 dough balls), refrigerated • 400g full fat cream cheese • 80g sour cream • 130g caster sugar • 2 tbsps cornflour • 1 tsp vanilla extract • Zest of one lemon • 2 medium eggs • 150g strawberries
METHOD: Pre-heat oven to 160°C and grease and line a 20cm square tin. Bring together the room temperature Classic Chocolate Chip cookie dough balls to form one large ball. Lightly dust your work surface with flour and roll out into a square. Trim to fit the tin. Carefully transfer to the base of the prepared tin, using the trimmings to press into the corners to ensure there are no gaps in the dough. Prick with a fork. Bake in the oven for 15 minutes. Once ready, remove from the oven and let it cool. Meanwhile prepare the cheesecake filling. In a large bowl combine cream cheese, vanilla extract, sour cream, lemon zest, eggs, sugar and cornflour. Pour the mixture evenly on the cookie base. Rinse the strawberries, pat-dry with paper towel and cut in halves or quarters depending on the size of the berries. Gently press them in the cheesecake filling. Remove the Chocolate Triple Chip cookie dough balls from the fridge and using a cheese grater shred the dough on top of the cheesecake filling. Increased the oven temperature to 180°C and bake for 35 minutes. Cool before serving. Use a very sharp knife to cut into 16 bars. Decorate with fresh strawberries and mint leaves.
Don't forget... Shade, sunscreen & sombreros Ok... maybe not a sombrero – unless it is 24 July which is National Tequila Day – but you definitely need a hat and sunscreen. Your picnic is probably not going to have large amounts of shade to protect yourself from the sun, unless you can find a good spot under a large oak tree, so you will need to take hats and sunscreen. Take spares just in case someone forgets. Middle-eastern neck scarves called Shemaghs are really useful and can be used to keep the sun off the head and neck. When to go & what to do... Most people think of picnics to be a lunch time activity, but you can headoff early to enjoy a sunrise breakfast on the beach. Wrap up warm just in case and a flask of coffee will make it extra enjoyable. Or you could enjoy a glass of bubbly and nibbles for a romantic North Norfolk sunset. Whilst you are there you might want to take some activities to keep everyone entertained, especially if you are with the little ones. Make sure to get everyone involved and make it competitive with a prize for the wining team. Keep it simple with a game of cricket or football. You need to keep it fun... jumpers for goal posts and all that. There are some reasonably priced fun cricket sets available, just remember not to bowl at grandma Margaret like you are playing for the Ashes. Last but not least... remember to clear up and leave the place as you found it. 37

Burgh Castle
Built as defence against Saxon raids, the fort ruins at Burgh Castle are one of the best-preserved Roman monuments in the country. Offering panoramic views over the marshes and iconic windmills of Breydon Water, this is the perfect place to while away the day on a picnic blanket. There is also an all-weather path that runs around the ruins if you fancy a stroll inbetween sausage rolls.

For the quintessential country day out, pack up a picnic and head to this beautifully landscaped park. Famous for its rhodedendrons and azaleas – not to mention the stunning coastal views – this is North Norfolk at its best. Look out for the three resident species of deer while you munch on your sandwiches and sip your flask of tea.

If you go down to the woods today... What better place for a teddy bears picnic than the UK’s largest man-made forest? St Helen’s picnic site, next to the river, offers a designated spot to refuel and is a good base for more exploring. There is an Easy Access Trail from here which is suitable for buggies, so the whole family can enjoy a ramble.
Aldeburgh beach
Norfolk and Suffolk have countless beaches on which to enjoy lunch al fresco, but there’s something special about the stretch of shingle and sand at Aldeburgh. Strewn with fishing boats and of course the infamous Scallop sculpture, there’s plenty to amuse you before and after you’ve eaten. Forgotten your picnic basket? lastic Free July is an environmental initiative created by the Plastic Free Foundation. From humble beginnings in 2011, this award-winning campaign now sees millions of people from countries across the globe taking part in an effort to reduce their plastic waste and help make the planet a better place. If you’ve been wanting to cut back on single use plastics but feel overwhelmed trying to tackle everything at once, use this month to focus on making one or two small, impactful changes that can easily carry over into the rest of the year. Here’s how:
At home DENTAL CARE You’ll likely go through at least four toothbrushes a year, which adds up to quite a lot of plastic waste over a lifetime. To combat this, choose a toothbrush made from sustainable, compostable materials, such as bamboo. Mainstream brands like Colgate now offer bamboo toothbrushes, so they’re more readily available in supermarkets – be aware that the bristles aren’t always compostable and may need cutting from the handle at the end of its life. If you’re ready to go a step further, you can also get chewable toothpaste tablets in glass containers, so you can give a minty fresh kiss goodbye to the annoying task of trying to squeeze the last bit of toothpaste from plastic tubes.
PERIOD PRODUCTS Unfortunately, a huge number of disposable menstrual products end up in landfill or are flushed down the toilet, blocking sewers and polluting our oceans. Reduce your impact on marine wildlife by choosing one of the many available alternative options such as menstrual cups, biodegradable tampons, reusable applicators and absorbent underwear. Primark have just launched their own line of eco-friendly, reusable period underwear starting from just £6, so going plastic-free can be more affordable to all.
SOLID TOILETRIES Ditching your plastic-packaged bathroom supplies is easier than you might think. There are now myriad options for solid soap bars, shampoo and conditioner bars, shower wash bars and even solid facial moisturisers, so the sky’s the limit here. Invest in some stylish soap dishes or metal containers to keep them dry between uses and you’ll find that these products last much longer than their liquid counterparts. PARTY DECORATIONS Have a birthday party coming up this month? Try swapping balloons and other single-use plastic party decor for reusable and eco-friendly alternatives, such as fabric bunting, cardboard or tissue decorations or even fresh flowers. Other changes you could incorporate into your gathering include swapping out plastic straws for reusable metal ones (these would make great party favours too!), using dried petal confetti instead of glitter, using paper plates instead of plastic ones and opting for paper party bags instead of plastic if it’s a celebration for little ones. 41

REFILLABLE CLEANING PRODUCTS Refillable cleaning products can vastly reduce the amount of plastic packaging waste that you generate each year – and it’s now accessible to all thanks to internet-based brands such as Ocean Saver, Ecover and Clean Living, meaning you don’t have to rely on living near a refill store. Many brands offer sachets or tablets that are dissolved into or mixed with water at home, rather than being delivered as liquids (around 90 per cent of normal cleaning products are simply water), which also reduces the carbon footprint of delivery. SHOP SMARTER Accumulate less plastic packaging during your food shop by choosing loose fruit and vegetable options, or champion your local suppliers – butchers, grocers, bakers and fishmongers are more likely to use paper bags over unnecessary plastic wrapping. Bringing your own bags when shopping has now become the norm, but it’s still easy to get caught short when making an unexpected purchase. Invest in a reusable tote bag, which will easily fold up into your handbag or can be kept ready in your car, negating the need to keep forking out for those pesky plastic bags. FOOD STORAGE Although a staple in many kitchen cupboards, finding an alternative to plastic cling film is a great way of protecting the environment and the wildlife within it, who often end up ingesting it by mistake. Storing and packing food in reusable containers instead is a great start. At work REUSABLE BOTTLES AND CUPS In the UK, it’s estimated that 35.8 million plastic bottles are used each day, but only 19.8 million of these get recycled. A simple way of combating this problem is to get yourself a reusable water bottle to take to work with you and refill. Similarly, if you can’t function on your morning commute without a latte from the drive-through, try taking your own reusable coffee cup with you instead of getting a takeout one – some companies now reward your eco efforts with a discount. ENCOURAGE RECYCLING If your workplace kitchen or office doesn’t have a recycling bin, consider suggesting that one is added so you can all do your bit to increase the waste that could be composted or recycled. If your workplace has a canteen that offers plastic cutlery, consider bringing in your own metal cutlery from home instead, and encourage others to do the same. You could even suggest that everyone brings in one piece of cutlery each from home or a charity shop so you can all ditch the plastic for good! ow we finally have a glimpse of summer, which, fingers crossed, is here to stay, it is essential to check in on your skincare routine. During the summer months, we are more exposed to UVA and UVB rays, which, as we all know, has enormous effects on the skin, especially when it comes to ageing. It is no secret that we should all be using suitable skin care products on our skin. As a generalisation, most people's skincare routine consists of a cleanser, a good quality serum or two, moisturiser, retinol, and, most importantly, a broad-spectrum SPF. With many skincare brands on the market containing ingredients claiming to reduce signs of ageing, pigmentation, spots and many more concerns, it is always a great idea to see a skin specialist find the most suitable product to treat your skin type and concerns. As I said, the most important thing to apply to the skin, especially in the summer, is a broad-spectrum SPF. There are many SPFs to choose from, all with various labels and ingredients, but the main essential thing to know when it
comes to SPF is that it should be broadspectrum to cover your skin from the UVA and UVB Rays. UVA rays, which account for 95 per cent of radiation that reaches the earth's surface, cause wrinkles, sunspots, and other types of pigmentation and premature ageing. They are also linked to skin cancer. UVB rays, which affect the skin's top layer, cause skin cancer and most sunburns. Both UVA and UVB break down collagen. Collagen forms a scaffold to provide strength and structure to the skin. As we age, our body's collagen production slows down, giving the appearance of loose, lined and aged skin; further damage by the sun can speed up the ageing process. Those prone to acne or excessively oily skin may be reading this thinking, "I can't wear SPF; it brings me out in spots, clogs my skin and makes me even more oily". If you agree, have no fear; keep reading on; we have just the thing. Although it is super important to wear SPF in the summer months, you should wear it all year round. In the winter months, 80% of those damaging UVA and UVB rays are still present, even when it's cloudy and raining. As an advanced skin specialist, having treated hundreds of clients with sunspots, pigmentation and aged skin caused by the sun, I deal with many clients who have neglected their skin, especially when it comes to SPF. Nine out of ten
clients tell me they wished they would have worn SPF more often; you would always apply it to your child's skin, don't forget your own. Orangeries and conservatories create amazing open spaces and an abundance of light.
C
onservatories are a joy to relax in during the summer months and these unique spaces offer up a myriad of design possibilities. The glazed open spaces are often designed to create a contemporary feel and can very quickly be over complicated with clutter. Less is most definitely more to avoid feeling confined in such airy rooms. You can let your imagination run wild in such a space by either creating a new design feel or by echoing elements from the rest of your living space and the garden combined. You may already have one of these fabulous rooms in place and require a make over. JHD Interior's has a huge selection of materials and styles on offer and I often use these to create a refreshed and upbeat style which is not only sensitive to the clients requirements but to the environmental influences around the space also; for example is there a certain theme running through the garden. I like to maximise the open plan area by considering the scale of the furniture and laying out the room accordingly. Constricting walk-through spaces or obstructing the window areas can have detrimental effects on the overall look. If you have a smaller conservatory or
orangery then resist the urge to over stock on your furniture and larger plants or ornaments. Whilst on the subject of plants, it is important to select the right plants for the environment, cacti and rubber plants work well. Remember it always best to check the amount of sunlight coming into the area as well as the individual needs of the species to ensure you don't end up with any casualties. Neutral colours on walls can help create a fantastically light and airy feel. Balance this off by really going to town on your soft furnishings to introduce a vibrancy of colour. If you have enough

It’s not unusual for people to find themselves struggling to live on pension income. Lisa Wilson looks at some of the options to raise additional income in later life.
P
rivate and workplace pensions have become increasingly common in recent years, giving future retirees some income to add to their state pension. However, many personal pensions are worth less than £10,000 and very few are large enough to provide a significant income. Current retirees may have even less pension income if they had no opportunity to build up a pension during their working lives. The family home very often makes up the largest asset for retirees and accessing the wealth tied up in your home is an option that may well resolve an income shortage issue. Equity Release has had something of a poor reputation in the past, but the market has grown and developed over the years. There are many well-known providers, and it is a strongly regulated sector. It can be hugely beneficial to get advice from an independent financial adviser about Equity Release. The key to safe discussions about Equity Release is to check that the adviser you select has signed up to the Equity Release Council code of conduct. This ensures that vulnerable clients are safeguarded, and families fully understand the financial and legal implications of an Equity Release contract. Equity Release comes in two forms: lifetime mortgages and home reversion plans. Lifetime mortgages are the most common and take the form of a loan against the value of the property which must be repaid when your home is sold or when you no longer live in it, such as when you go into long term care or if you die. Interest is payable on the loan but this can be “rolled up” to be paid alongside the original loan when it is finally repaid – or you can choose to
repay the interest on a regular basis. With a lifetime mortgage, you can arrange for what is known as a drawdown facility where you and the equity release provider agree a maximum figure that you can draw. The amount on offer will depend on factors such as your age, state of health and the value of the house. You take an initial lump sum and the remainder will be allocated to you to be withdrawn as and when you need it. The advantage of a drawdown facility is that you will only

Taking out an Equity Release/Lifetime Mortgage arrangement will mean that the value of the estate you leave to your family when you die will be reduced. It may also affect your entitlement to any means tested benefits both now and in the future. Equity Release can be more expensive when compared to a normal residential mortgage. In addition, you will still be responsible for maintaining the property.

Home reversion plans involve selling a percentage of your property. The amount released will often not reflect the market value of that proportion. You retain the right to continue living in the property until it is sold. It is the percentage sold that will be repaid, therefore if the property has increased in value, the amount paid to the lender will be higher. No repayments are normally made or required with these plans. There is a further option to release capital tied up in your home which doesn’t involve Equity Release. Inspirin women Jeanette Wheeler
Rachel Gilbert talks to another local inspirational woman.
J
eanette Wheeler’s favourite place to be is out of her comfort zone. She is constantly pushing herself — as if being a partner in a law firm, a single mother and holding a seat on the UEA council don’t keep her busy enough. Jeanette is always seeking out new challenges and roles, all for the benefit of self-improvement. “There are often challenges or glass ceilings within an organisation but don’t let it end there,” Jeanette said. “Nearly all of my self development came from taking other opportunities elsewhere.
With the personal aspects of her job, she said there is never a dull moment. “People are so unique that there is no day that is ever boring or the same really,” Jeanette said. “Even if it’s the same type of claim or issue arising, it takes different tactics and strategies to resolve those people's problems.” In her “free” time, Jeanette sits on the council for the University of East Anglia, a significant role during the pandemic. Universities will feel the financial impact of the pandemic for years to come, she said.

Each one is a stepping stone and confidence builds.” Jeanette’s CV is possibly the most interesting read of its kind — she has nearly 20 years of experience in the legal field, is the former chair of the Norwich Business Women’s Network and is a previous president of the Norfolk and Norwich Law Society. In recent years, Jeanette has continued to add to the list with even more roles and experiences. On a day to day basis, Jeanette’s job differs from other lawyers. As a partner in Birkett’s employment team, she looks after businesses, organisations and the people involved when issues arrive. 66
Yet another hat Jeanette wears is as deputy-chair of the New Anglia Local Enterprise Partnership which aims to support sustainable business growth in the region. The partnership between the private and public sector aims to source government and European funding for business growth. Business growth and development during a global pandemic may seem like an oxymoron, but not according to Jeanette. "During the pandemic is one of the best times to start a business." she said. “If you can survive now, in the most difficult times, then the world is your oyster when everything starts up again fully.”
Jeanette is passionate about business development in east Anglia. She is constantly reinforcing it and renewing where needed. The people in place help her juggle a busy schedule in which she fills many roles. When it comes to her career, Jeanette credits her mentors within the trade. Martin Hopkins gave her opportunities to develop and network, and acted as an ambassador for Jeanette’s career. She said no matter what stage you are in your career, a coach is essential to get you out of your comfort zone. Jeanette’s support network extends far beyond her professional life, however, with an army of people helping from the wings. Despite struggling to find a moment for herself, Jeanette said she wouldn’t change a thing and that the perfect balance between work and personal life doesn’t exist. As a single mum to two children with different learning needs at different schools, Jeanette never stops for a minute. She teaches her children to follow her example of persistence and hard work. She said society is eager for people to conform but she stick’s to the UEA motto of “do different.” “I think we have to value the particular skills we have,” Jeanette said. “We need everybody’s skills and we have to find ways of harnessing those skills instead of trying to straitjacket everybody.”
