Este año celebramos el 10º aniversario del Centro Comercial Plaza del Duque. Quiero dedicar un especial reconocimiento a los trabajadores, arrendatarios y colaboradores que han vivido desde el inicio este hermoso proyecto. También hago partícipes de esta celebración a quienes, como yo, han ido uniéndose al recorrido poco a poco. Plaza del Duque no es solo un edificio, es un espacio vivo que crece, cambia y se renueva constantemente. Lo más importante de estar de aniversario, es saber que no se acumulan años sino experiencias y que son ellas las que dan vida a esos años. Tenemos trazado un rumbo y estamos disfrutando del viaje. This year we celebrate the 10th anniversary of the Plaza del Duque Shopping Centre. I would like to make a special mention of the workers, tenants and collaborators who have participated in this splendid project right from the start. I would also like to include in this celebration all those who, like myself, have joined the project little by little. Plaza del Duque is not only a building, it is a living space which is in constant growth, transformation and renewal. What is really important about celebrating an anniversary is to know that it is not years, but experiences, that accumulate, and that they are the ones which give life to this transience. Ich möchte allen Mitarbeitern, Pächtern und Partnern, die von Anfang an dieses schöne Projekt begleitet haben, eine besondere Anerkennung aussprechen. Und dann möchte ich in dieser Widmung auch diejenigen einschließen, die wie ich selbst im Laufe der Zeit zu uns gestoßen sind. Shyam Aswani, propietario del centro comercial, comenzó en el mundo de la joyería, junto a su familia. Propietarios de Ideal joyeros, la aventura de crear un espacio comercial de esta envergadura supuso un aliciente que diez años después se ha consolidado como un gran éxito empresarial. “Nos dimos cuenta de que había que acompañar a los magníficos hoteles abiertos en Costa Adeje con una oferta de tiendas que correspondiesen a su categoría y se encontró, en mi opinión, la localización perfecta para ese objetivo. Yo tenía mi visión muy clara y sabia que podríamos tardar más o menos tiempo en desarrollar la idea, pero que una vez abierto, sería un éxito seguro. Me gustaría pensar que actualmente Plaza del Duque es el destino prioritario de cualquier empresa de lujo que quiera ubicarse en Canarias”. ¿Cómo es el cliente del centro comercial? Es un cliente exigente, que está bien informado de las últimas tendencias. El cliente que vista Plaza del Duque busca productos de máxima calidad. Valora contar con un entorno exquisito y un servicio 5 estrellas. Por ello contamos con una amplia variedad de tiendas para los gustos de los clientes más exigentes, con un amplio portfolio de las marcas líderes en los diferentes segmentos: moda, complementos y joyería/relojería; además de una selección de los servicios más solicitados. ¿Qué proyectos de futuro tiene para Plaza del Duque? Esperamos continuar con las pautas de excelencia que nos marcamos desde un prin-

cipio en Plaza del Duque. Seguiremos abriendo más boutiques monomarca de las firmas líderes de los sectores de moda, complementos y joyería. Los arrendatarios están constantemente actualizando la imagen de sus tiendas, trayendo los últimos conceptos de diseño a Tenerife, así que en general, Plaza del Duque seguirá como la referencia del sector del lujo.

¿Cómo se vive ser el cabeza de una empresa familiar? Nada sería posible sin el compromiso de todo el grupo de personas que han formado parte de mi viaje personal y profesional, desde mi mujer e hijos, a nuestros colaboradores-proveedores y mi personal humano. Este último representa una gran responsabilidad para mí y uno de los grandes valores de esta empresa. Lleva muchos años en el mundo de la joyería, ¿cómo ha evolucionado? Ha cambiado considerablemente en los últimos años. Las marcas de relojería y joyería han evolucionado exponencialmente y son veneradas por millones de clientes de un mundo cada vez más globalizado e informado gracias a los nuevos canales de comunicación. Invertimos en ofrecer un servicio impecable al cliente dentro de un ambiente selecto, donde se pueda realmente sentir como se diría en inglés “a King” (un Rey). A nivel interno, tenemos mucho más trabajo de análisis de las tendencias que marcan nuestros proveedores, para así ofrecer al cliente los últimos lanzamientos de producto en primicia.

El balance de estos 10 años es enormemente positivo, a pesar de las dificultades iniciales: "Los primeros años de la apertura no fueron fáciles y costó convencer a los empresarios del perfil que queríamos, para que entraran en el proyecto. Luego, a medias, nos tocó la crisis económica europea y tuvimos que vivir un par de años difíciles. Sin embargo, el destino Costa Adeje se fue consolidando, y también Plaza del Duque, hasta llegar al presente , en el que seguimos trayendo las mejores firmas internacionales a nuestro centro comercial. Me enorgullece el nivel de satisfacción y agrado que demuestran los visitantes de Plaza del Duque, es lo que he buscado desde el inicio de mi trayectoria profesional ¡la satisfacción del cliente!"

Shyam Aswani, owner of the shopping mall, started out in the jewellery business together with his family. Owners of Ideal Joyeros, the adventure of developing a shopping centre of this size was a challenge which, ten years later, has become consolidated as a highly successful business venture. “We realised that we had to complement the magnificent hotels opened in Costa Adeje with suitable stores at a par with their class and, in my opinion, the perfect site was found to do this. I had very clear views and knew we could take time in developing the idea but that, once opened, it would be a sure hit. I like to think that, right now, Plaza del Duque is the priority site for any luxury company which wants to locate in the Canaries”. Describe the customer of this shopping centre. We are talking of a demanding customer who is well informed on the latest tendencies. The customer who visits Plaza del Duque is looking for products of the highest quality, and is appreciative of exquisite surroundings and a five-star service. This is why we have a wide assortment of shops catering for the most demanding customers, with a broad range of leading brands in the various segments: fashion, accessories and jewellery/watches; in addition to a selection of the most sought after services. What are your future projects for Plaza del Duque? We plan to continue with the standards of excellence that we have instated right from the start in Plaza del Duque. We will continue to open more single brand boutiques by leading labels in the fashion, accessory and jewellery sectors. The tenants are continuously updating the image of their shops, bringing the latest in design concepts to Tenerife. Therefore, in general, Plaza del Duque will continue to set standards in the luxury sector. How does it feel being the head of a family business? Nothing would be possible if it hadn’t been for the commitment of all those people who have been part of my personal and professional journey, from my wife and children, to our collaborators-suppliers and my staff. The latter is a big responsibility for me and one of the great assets of this business. You have worked for many years in the world of jewellery. How has it changed? It has changed considerably in recent years. Watch and jewellery brands have developed exponentially and are venerated by millions of customers in an increasingly globalised and informed world, thanks to the new communications systems. We invest in offering an impeccable customer service in a select environment, where the customer can really feel he is “a King”. Internally, we need far greater analysis of the trends indicated by our suppliers, so that we can offer the customer a premier of the latest product launches. The balance of these last 10 years is enormously positive despite the initial teething problems: “The first years after opening were not easy, and it was difficult to convince companies of the profile that we wanted as requisite to join the project. Then, in the mid-term, we were affected by the European economic crisis and we had to go through a couple of difficult years. Nevertheless, the Costa Adeje destination gradually consolidated, just like Plaza del Duque, taking us to the present, in which we continue to bring the best international labels to our shopping centre. I am proud of the level of appreciation and pleasure shown by Plaza del Duque’s visitors; that is what I have pursued since the beginning of my professional career: customer satisfaction!” 20

Scientists endeavour to decipher the whispers of the cosmos in order to answer seemingly immortal questions, and the Canary sky is one of the best places in the world to achieve this. Cruzar la mirada con los destellos de un número infinito de estrellas es una sensación extraordinaria, desde la que emerge el anhelo de que el tiempo se pare para absorber la magia del ecosistema universal hasta la eternidad. Y en Canarias es posible. Las cumbres del Archipiélago respiran como parajes naturales sin comparación en la Tierra para la observación astronómica. Enclaves en los que saludar a planetas, poner cara a la Vía Láctea y dibujar constelaciones sin que nada nos interrumpa; ni una nube, ni una luz artificial, ni un sonido. Un encuentro único e inolvidable con el universo para disfrutar de un cielo cinco estrellas. Referencia mundial El archipiélago canario es considerado uno de los mejores lugares del mundo para la observación del universo, privilegio que comparte con Hawái y Chile. Científicos internacionales exploran el cosmos desde el Observatorio del Roque de los Muchachos en La Palma, que dispone de la mayor concentración de telescopios del hemisferio norte, y desde el Observatorio del Teide en Tenerife, que cuenta con los mejores telescopios solares europeos. La apacible climatología y la situación geográfica de Canarias explican en gran medida la calidad de su cielo. La normativa controla la contaminación lumínica, radioeléctrica y atmosférica, así como las rutas áreas para preservar la calidad astronómica de los observatorios del Roque de los Muchachos y del Teide. Reservas y Destinos Starlight La maravillosa naturaleza del cielo de Canarias le ha significado la obtención de reconocimientos internacionales. Así, el Teide y Granadilla de Abona en Tenerife, y la isla de La Palma son Destinos Turísticos Starlight, mientras que la cumbre de Tenerife y también La Palma son Reservas Starlight. Ambas certificaciones proceden de la Fundación Starlight, organización sin ánimo de lucro que gestiona la Iniciativa Starlight, creada en 2007 a propuesta del Instituto de Astrofísica de Canarias como una campaña internacional en defensa de la calidad de los cielos nocturnos y el derecho general a la observación de estrellas. the “sea of clouds” remains below and acts as a barrier against light pollution. This results in a clear, turbulence-free atmosphere to admire the sky under perfect conditions, both for scientists and for tourists. Furthermore, at that altitude, the scarce rainfall, the low humidity and usual absence of clouds ensure a clear sky over 260 nights per year, the minimum number used to determine the suitability of a site for astronomical observation. Another feature of the Canary sky is its pitch darkness, required to identify faraway cosmic objects whose light arrives dimly to the Earth. In order to protect the Canary sky, Spain was worldwide pioneer in regulating the conservation of its firmament, approving over 25 years ago the so-called Sky Law. The regulation controls light, radio-electrical and atmospheric pollution, as well as flight paths to safeguard the astronomical quality of the Roque de los Muchachos and Teide observatories. Starlight Reserves and Destinations The marvellous nature of the Canary sky has earned it international recognition. Therefore, Mount Teide and Granadilla de Abona in Tenerife, and the island of La Palma are Starlight Tourist Destinations, while the summits of Tenerife and of La Palma are Starlight Reserves. Both listings are awarded by the Starlight Foundation, a non-profit organisation that manages the Starlight Initiative created in 2007 on proposal of the Astrophysics Institute of the Canaries as an international campaign in defence of the quality of night skies and the general right to stargazing. In dieser Höhe sorgen außerdem die geringen Niederschläge, die niedrige Luftfeuchtigkeit und die gewöhnliche Abwesenheit von Wolken dafür, dass es mehr als 260 sternenklare Nächte im Jahr gibt, was der Mindestwert ist, um einen Standort für wissenschaftliche astronomische Beobachtungen festzulegen. Se sorprende el visitante cuando oye al canario pedir unas papas quineguas, unas autodate o un puñado de papas negras. Son algunos de los términos que quedaron en el lenguaje de las Islas para referirse a este producto, llegado a Europa a través de Canarias, procedente de Perú, en el siglo XVI. Quineguas de King Edward. Autodate de Out of date… ¿Por qué papa y no patata, como en el resto de España? Papa es una voz de origen quechua (lenguas originarias de los Andes). Fue en la Península donde se cambió el nombre al tubérculo, por una confusión fonética con la palabra batata. Es en el Barranco de Ruiz, en Icod el Alto, Tenerife, donde se documentan las primeras plantaciones de papas de Canarias. Únicas porque comparten sus características con las originarias de los Andes, son también las únicas en España que poseen Denominación de Origen propia, y las segundas en Europa. Esto lo propician las inmejorables condiciones climáticas y del suelo de las Islas, especialmente de Tenerife, que le aportan sabor y cualidades excelentes. La forma de cultivo, además, se ha mantenido igual a lo largo de los años, lo que ha hecho que, al contrario que en el resto de Europa, la papa canaria haya mantenido, en su mayoría, sus características iniciales, importadas hace ya tanto tiempo por los conquistadores. Veteran Potatoes of the Canaries are understood to be those stemming from varieties known to be historic in the Canaries - also called local, traditional or coloured potatoes, or potatoes of the land - cultivated in the Islands using seeds obtained in the production area and belonging to the Solanum tuberosum, a subspecies from the Andes and the triploid known as Solanum chaucha, introduced in the Canary Islands before the 20th century. The etymology and characteristics of the Canary potato are not all its distinguishing features because, if it is well known outside the Canaries, this is due to a simple yet delicious recipe, a unique way of preparing them which is exclusive to the islands: the wrinkled potato.

The best variety for this recipe, those with the most intense flavour, those with the smallest production yet in greatest demand, are the black potatoes. Small, dark and dimpled on the outside, they conceal a soft, yellow and extraordinary interior. Up to know, they are only grown on the Islands, and it is quite usual for a mainlander to ask an islander who visits to take a few kilos with him. The recipe is as simple as it is a treat for the palate. We put some washed but unpeeled potatoes in a saucepan and cover them with water. We add sea salt, a lot of it. No matter if we add too much, the potato will only absorb as much as it needs. We put the saucepan on the heat, covering it with a clean dishcloth and placing the lid on top. After twenty or thirty minutes, the potatoes will be cooked. We remove the water, draining well. Without removing the potatoes from the pan, we add another generous dose of sea salt and allow them to dry over the heat, moving the saucepan and shaking the potatoes for a while (less than a minute will do).

Now they are ready to eat dunked in delicious Canary mojo sauces! La etimología y las características de la papa canaria no es lo único que la diferencia. Porque si por algo es conocida más allá del archipiélago es por una sencilla y deliciosa receta; una forma única de prepararla, exclusiva de las Canarias e insuperable: la papa arrugada.

Las mejores para esta receta, las más sabrosas, las de menor cantidad de cultivo pero mayor aceptación popular son las papas negras. Pequeñas, oscuras y con muchas hendiduras por fuera, en su interior son amarillas, blandas y extraordinarias. Hasta ahora solo se cultivan en el Archipiélago y es habitual que el peninsular pida al canario que le visita que le lleve unos kilos. Tan sencilla de preparar como exquisita para el paladar resulta la receta: Ponemos las papas lavadas, sin pelar, en el caldero, y las cubrimos de agua. Añadimos sal gruesa. Mucha. No importa que abusemos, la papa tomará la cantidad que necesite. Ponemos al fuego tapando el caldero con un paño limpio y poniendo encima la tapa. En veinte o treinta minutos las papas estarán guisadas. Quitamos el agua y la escurrimos bien. Sin sacarlas del recipiente se echa sobre las papas otro buen puñado de sal y se resecan sobre el fuego meneando el caldero y haciéndolas saltar en su interior durante un rato (bastará con algo menos de un minuto). ¡Listas para comer bañadas en ricos mojos canarios!

Warum aber heißt die Kartoffel auf den Kanaren "Papa" und nicht "Patata" wie im übrigen Spanien? "Papa" stammt aus dem Quechua

(einer Sprache der Andenvölker). Auf dem spanischen Festland jedoch wurde der Name der Knolle aufgrund einer phonetischen Verwechslung mit dem Wort "Batata" (Süßkartoffel) zu "Patata" verändert. In der Schlucht Barranco de Ruiz in Icod el Alto auf Teneriffa wurden die ersten Kartoffelpflanzungen der Kanarischen Inseln dokumentiert. Die Sorten sind einmalig, weil sie noch die gleichen Eigenschaften wie die ursprünglichen aus den Anden besitzen. Es sind die einzigen Kartoffeln in Spanien mit einer eigenen Herkunftsbezeichnung und in ganz Europa gibt nur eine weitere. Auch die Anbauformen haben sich im Laufe der Zeit nicht verändert, sodass es anders als im übrigen Europa möglich war, dass die Mehrheit der Kanarischen Kartoffelsorten heute noch die selben ursprünglichen Charakteristiken innehaben wie zu der Zeit der Eroberung Amerikas. Unter "Papas Antiguas de Canarias" (Altkanarische Kartoffeln) versteht man die Kartoffelknollen, die auf den Kanarischen Inseln als lokale, traditionelle und / oder erdfarbige Sorten bezeichnet werden, auf den Kanarischen Inseln angebaut wurden, aus Samen der Produktionsflächen selbst stammen, den Spezies Solanum tuberosum, Unterart Andigena, Solanum tuberosum, Unterart tuberosum oder Solanum

Am besten geeignet für dieses Rezept, am leckersten, am wenigsten angebaut, aber am beliebtesten, sind die Schwarzkartoffeln - Papas negras. Sie sind klein und dunkel, haben viele Unregelmäßigkeiten auf der Außenseite und sind von innen gelb, zart und von vorzüglichem Geschmack. Sie werden nur auf dem Archipel angebaut und es ist durchaus nicht ungewöhnlich, dass ein Bewohner des Festlandes einen

kanarischen Besucher bittet, ihm doch bitte ein paar Kilo mitzubringen. Das Rezept ist so einfach, wie köstlich für den Gaumen: Wir geben die gewaschenen Kartoffeln ungeschält in den Topf und bedecken sie mit Wasser. Viel grobes Meersalz hinzufügen. Viel! Das macht nichts, denn die Kartoffeln nehmen nur so viel von diesem auf, wie sie brauchen. Den Topf aufs Feuer stellen, mit einem sauberen Tuch abdecken und den Deckel drauflegen . In zwanzig oder dreißig Minuten sind die Kartoffeln gar gekocht. Wasser abgießen und gut abtropfen lassen. Ohne die Kartoffeln aus dem Topf zu nehmen, eine weitere Handvoll Salz draufstreuen und auf dem Feuer unter

ständigem Schütteln des Topfes trocknen. Lassen Sie die Kartoffeln im Inneren des Topfes hüpfen (knapp eine Minute ist genug). Fertig zum Schmaus zusammen mit leckeren kanarischen Mojo-Soßen!

Die Kanarische Kartoffel ist ein köstlicher Schatz aus Amerika, eine von allen, die sie kosten, hoch geschätzte Delikatesse, eine der groSSen Bastionen der Inseln und sicherlich die Königin unserer Küche.

Происхождение названия и характеристики «папас» с Канар не является единственным отличием от обычной картошки. Местный картофель славится далеко за пределами архипелага благодаря очень простому и в то же время вкуснейшему рецепту — «папас арругадас» (сморщенный картофель), который готовят только на Канарах. Самым лучшим картофелем для этого рецепта считается черный сорт, который имеет лучшие вкусовые качества, хотя его урожайность и площадь посевов совсем невысоки. Это маленькие, темные клубни с множеством глазков и желтой вкусной мякотью. Черный сорт традиционно выращивается только на Канарах, и частенько местные жители, навещая родственников в остальной части Испании, привозят им в качестве деликатеса пару килограммов такого картофеля. Мы приводим простой рецепт «папас арругадас», чтобы вы тоже смогли приготовить его дома и полакомиться: Мытый картофель в кожуре поместить в кастрюлю и залить водой. Добавить крупную соль. Очень много. Не важно, если вы переборщите с солью, ведь «папас» впитает ровно столько соли, сколько нужно. Поставить кастрюлю на огонь, накрыть чистым полотенцем и крышкой. Через 20–30 минут картофель готов. Слить всю воду, оставив картофель в кастрюле. На сваренный картофель насыпать большую горсть соли и подсушить на огне, потряхивая при этом кастрюлю приблизительно одну минуту. И готово! К «папас» обязательно подайте вкусные канарские соусы мохо.
