Fellow Members, We are proud to report that we are now on schedule for monthly publication of the “Chartwell Chatter”. Our apologies for the April and May issues arriving at nearly the same time, but we did this to get back on schedule. Members should now look forward to, and expect to receive a copy each month during our summer months and every other month during the October—April period. Kudos to our own Jonathan Wingett, our editor, photographer, reporter and “Chatter Champion” for making this happen! Let us hear from you if you have any comments or suggestions for future issues. Since our May Chatter, the President’s Ball was held and deemed a major success by all in attendance. We continue to receive rave reviews on Chef Todd’s new food concepts, the decorations, the hand rolled cigars and the lively music accompaniments throughout the night. For those who missed this year’s ball, plan on it for next year as this is truly an event “not to be missed”. In addition to our regular men’s, ladies, senior and junior golf programs during May the Club hosted three major golf outings and two member-sponsored mini outings —a very busy month. The banquet, dining room and bar staff hosted sixty four events in the past month: fifty five member and private party events, five golf outings, four weddings and more than 500 for Mother’s Day brunch and dinner —an exceptional month for the clubhouse. Tennis started its summer season with their annual Summer Kick-Off Doubles Exhibition and Cocktail Party. Our skilled tennis staff was victorious, Jamie and Andre taking on former champion, Marcus Sarstrand and Chartwell member, Kevin McGrath closing the match (6-1, 6-7, 10-7). We ended the month of May with our grand opening of the pool coupled with a great Memorial Day Weekend for the entire family! Upon making your dinner reservations please let us know if you have any special requests. Whether they are due to dietary restrictions, a small suggestion that you would like us to consider for upcoming menus, the staff is always at your service and will rise up to the challenge. Around the club there have been other changes that you will notice besides that fantastic food and service. All of the locker room carpets have been replaced and the benches reupholstered. Recently the entire bar was refinished and stools refurbished. We also installed a walk-in cooler behind the bar and are currently working on some extensive changes to the back bar that will improve esthetics, as well as its functionality. We are very excited to bring this vital area 3

We have finally finished planting the annuals. Even though we had unusually warm spring temperatures, we did hit a stretch, right when we started getting in our annuals, where there was quite a bit of early morning frost. As a result, it took a little longer to get everything in the ground than we anticipated. This year, we ended up planting over 175 containers and approximately 7000 annuals either in the ground or in containers.

Your help has enabled us to maintain our high number of members and enhance our amenities and services through some tough economic times. Thank you for the all the contributions that have helped Chartwell continue to be one of the finest clubs in the area.

Clubhouse Cancellation Policy: We often stress the importance of making reservations. It is equally important to notify the Club when changes are needed to a current reservation. Please advise the Club of cancellations or changes in number in the reservation as soon as possible. While we truly appreciate emergencies and are very aware of the need to make last minute changes, we must require a formal cancelation policy. Effective immediately, all Club parties and Club events will have a 24 hour cancelation policy. All cancellations and changes to reservations made within 24 hours will be subject to a 20% charge of the original price. This fee will help offset commitments made to food purchases, preparation, staffing requirements and decoration and linen purchases. Thank you for your understanding, cooperation and support.

Chartwell welcomes back Kimberly Lawton for her 12th summer of teaching swim lessons at the Club. In the off-season Kimberly teaches the 5th grade at Oak Hill Elementary. The swim lesson sign-in booklet will be available for you to sign-up at the check-in desk located at the main entrance of the pool. Lessons are available on a first come first serve basis. Grilled skirt with Chimichurri

CULINARY

Serves 6

Ingredients: • 3 lbs. skirt steak • 1 cup marinade • 1 cup Chimichurri Marinade • 5 ea. Garlic clove minced • 1 tbsp. fresh thyme chopped • 1 tbsp. cumin ground • 1 tbsp. coriander ground • 1 tsp. black pepper • ¼ cup olive oil • Blend all ingredients

Dear Members of Chartwell Country Club, I’m thrilled to be on board as part of the culinary team at Chartwell, and am looking forward to sharing my twenty-five-year, coast-to-coast experiences with you. We have an exciting year in store for us, where I will be working hand-in-hand with our members to improve all culinary aspects of the food at the club, from the pool to the bar to the dining room. In addition to delicious cuisine, I will be offering private parties, wine tastings, and basic and advanced cooking classes. I am excited to meet all of you and am always available for instruction, guidance and to hear suggestions. So please stop by, introduce yourself, and get a taste of what I have to offer. Chimichurri Sauce: • 1 bunch flat Italian parsley finely chopped • 3 ea. garlic cloves minced • ¼ cup fresh oregano finely chopped • ¼ cup fresh thyme finely chopped • 1 tsp. crushed red pepper • ¼ cup olive oil Combine and mix ingredients. If the mixture is to thick add a little water. Procedure: Place the meat in a pan or a large zip lock bag. Cover with the marinade and refrigerate overnight. Preheat a grill to medium heat. Once the steak has finished marinating, remove it from the refrigerator and let it come to room temperature for 30 minutes. Cook for 3-4 minutes on the first side. Rotate the steak 45 degrees, and cook another 3-4 minutes. Turn the steak over and continue to cook until the steak is done, about 6 to 8 minutes for medium-rare. Once cooked, lay the steak on a clean cutting board, and allow it to rest for 5 to 7 minutes before slicing across the grain into 2-inch wide strips. Top the meat with the sauce. Serve with a black bean salad or just a crusty bread. www.ChartwellGCC.com

Changes Upon receipt of your child’s registration form and deposits, any CHANGES must be made IN WRITING AND SUBMITTED WITH A $25 ADMINISTRATIVE FEE – PER CHANGE, PER CHILD. Absolutely no changes will be made until both the fee and the written request are received. Change requests must be received no later than 6:00 p.m. sixteen (16) days prior to the camp (July 1 and/ or July 21, 2012.) All camp change requests are subject to availability. No changes in the camp will be made for absences, illnesses, suspension or dismissals. Refunds and Cancellations All deposits and administrative fees are non-refundable. No refunds or credits will be made for absences, illnesses, suspensions, or dismissals. If a written cancellation notice is not received by 6:00 p.m. sixteen (16) days prior to the camp (July 1 and/ or July 21, 2012), a late fee of $10 per day, per child will be due IN ADDITION TO any remaining balance for the camp. 11
