Welcome to the autumn edition of Bite. The club has been buzzing over the summer months with members enjoying our Cash Carnival promotion and diverse entertainment offering. Excitement is also building with the construction of the new hotel having commenced in January. Mantra at Sharks will allow the club to grow as a leader in delivering sport, leisure and entertainment services to the Gold Coast – see details on pages 6 and 7. Whilst construction is temporarily affecting car parking around the Fitness Centre, we appreciate your cooperation and understanding during this transitional phase. Please see car park map opposite for information on how to access the Fitness Centre. Autumn signifies the beginning of the football season. Jarrod Field (General Manger – Football Operations) and Nathan Bock (Senior Coach) have been hard at work recruiting and training the 2017 Sharks team in preparation for their first game at Fankhauser Reserve, on April 1 at 12.00pm. With the announcement from Ben Headland, Jason Burge and Glen Screech of their retirement from NEAFL football, Southport Sharks thanks them for their commitment to the club throughout the years and wish them all the best for the future. Please see Jarrod's Football Report and new Player Profiles on pages 40 - 43. We would like to take this opportunity to acknowledge and thank an outstanding team member, Crista Green, who is celebrating her 20th anniversary at Southport Sharks this year. only through the construction phase, but for years to come,” said Southport Sharks CEO, Mr Dean Bowtell. “As a stakeholder of the Gold Coast Health and Knowledge Precinct, we anticipate many medical professionals, interstate business executives, and families visiting will make use of the hotel and general club facilities,” said Mr Bowtell.

One of the largest clubs in Queensland, Southport Sharks, has joined forces with leading Australian hotel and resort operator, Mantra Group, to launch a new hotel on the Gold Coast. Featuring 120 rooms and 209 car parks, construction of the estimated $25-million Mantra at Sharks commenced at the beginning of January 2017, with an opening scheduled for early-2018. After an extensive due diligence period, Southport Sharks recently engaged leading South East Queensland companies, McNab and GroupGSA. “We are very excited to partner with Mantra, and engage market-leading construction and architectural firms in McNab and GroupGSA. The decision sends a strong message that we’re serious about partnering with local business and investing locally. This project will benefit the economy of the Gold Coast, not

Mantra Group Chief Executive Officer, Bob East said the Group is thrilled to partner with Southport Sharks - one of the Gold Coast’s strongest and most recognisable businesses. “Mantra at Sharks will provide a market-leading hotel offering, well positioned to become a premier corporate, meetings and leisure hotel, and its opening is well timed to coincide with strong market conditions in the lead up to and during the Gold Coast 2018 Commonwealth Games,” Mr East said. Mr Bowtell said, “we would like to thank our 50,000 members and 250 staff, who continue to contribute to our club and assist us in creating a diversified service offering. Upon completion of the hotel, Southport Sharks will become the complete entertainment and sporting destination.”

BOSS BEAT THE

Southport Sharks’ City of Gold Coast Love to Ride Challenge was a success with the team placing 3rd overall in the 200-499 staff category. Sharks’ competitive spirit was on show with one of our staff members, Stuart Hunter, almost beating the boss (CEO, Dean Bowtell) in distance this year an impressive feat! The boss was beaten on the number of rides undertaken, by Daniel Irwin. Congratulations to both Stuart and Daniel who won the beat the boss competition, each receiving a $100 Southport Sharks Health + Fitness voucher. Both have opted to use the voucher for personal training sessions.

MEET MR. SHARKy Mr Sharky, tell us a little about yourself? I am the official mascot of the Southport Sharks Football team. Go Sharks! Why do you love footy so much? Football is fun, good exercise and a great way to make friends. What’s your favourite food? Fish ‘n’ chips. What do you like to do on the weekend? I love watching footy. I have fun when I’m cheering on the Gold Coast SUNS with my best friend, Sunny Ray. I also like swimming at the beach and kicking the football with friends. This autumn, Cabana Bar & Lounge will be hosting two highly anticipated events.

Cocktails for a Cure, is a National Breast Cancer Foundation (NBCF) fundraising event. The first Cocktails for a Cure event, held last year, raised $3206 through ticket and raffle sales. This year, the Cabana team are hoping to raise $5000, through hosting the annual event on Sunday, March 19 from 12pm – 5pm.

Cabana Bar & Lounge Manager, Tanja Meyer was inspired to host a NBCF fundraiser after her boyfriend’s mother, Betty Underwood experienced breast cancer. Diagnosed in October 2015 after a mammogram, Betty was given only 24-hours to decide between two options: chemotherapy or breast surgery, a mastectomy. Opting for a mastectomy, Betty found the NBCF support services invaluable. Betty, focussed on staying positive throughout the experience, saying she never thought: ‘why me?’ Betty’s advice for someone undergoing treatment for breast cancer includes; •• Prepare meals before surgery to assist with the recovery period; •• Asking for help with house cleaning; •• Talk openly to other people who have experienced breast cancer – the quarterly NBCF magazine is a great source of community visit www.nbcf.com.au for more information; •• Walking for at least half an hour a day; and •• Be grateful – Betty volunteers at St Vincent de Paul Society. We are pleased Betty has successfully recovered from breast cancer. Tickets to the event are $20, with all proceeds going directly to the NBCF. Additionally, all raffle tickets and $2 from every select cocktail sold, will also go towards the cause. There will be a complimentary cocktails on arrival and tapas throughout the day. There will be a photo booth, lucky door prizes and raffle prizes on offer, all donated by the local community. The day will be accompanied by live acoustic entertainment by the talented, Eleea Nevarro and Michael Eotvos.

International Nurses Day has been celebrated by the health industry world-wide since 1965 on May 12. This date was selected as it is the anniversary of Florence Nightingale’s birth – the founder of modern nursing. Cabana Bar & Lounge is hosting its annual event for local nurses, to show their appreciation for all the hard work they do for the Gold Coast community. To attend the event at Cabana Bar & Lounge on Friday, May 12 nurses simply show your I.D from 5pm to receive a complimentary cocktail on arrival, tapas at 6pm and a gift bag valued at over $60. There will also be live acoustic music until 10pm for you to enjoy.

SHARK 2016 Employee of the Year

The Golden Shark is the most prestigious Southport Shark award. Staff members are nominated on the criteria of honesty, teamwork, industry best practice, high performance and positive customer experience. Southport Sharks’ 2016 Golden Shark winner is Garry Lynd, who was presented with the award by CEO Dean Bowtell, in December. Garry was nominated within the Front Desk/ Valet/Fins/Wobbygongs department. Reception team leader Garry, has been working at Sharks for 23 years and is one of the friendly faces you will have seen when arriving at the club. Originally hailing from Ulverstone, Tasmania, Garry previously worked in the underground mines. Shortly after relocating to the Gold Coast, Garry met with Gerry Carmody and started working here at Sharks.

He really enjoys working with the staff at Sharks and its patrons.

I find it rewarding meeting people from all walks of life every day. Whether they are 18 years old, or 100 years old, there is always an interesting conversation to be had. Reminiscing about when he first started at Sharks, Garry said there were 15 front of house staff, 3 administrative staff and 6 poker machines. Garry’s wife Lyn, previously worked at Sharks for 10-years and his daughter has recently had her 10-year anniversary working at the club in the gaming department. When asked if he has plans for the travel prize he received, Garry said “I am heading to WA for my mother-in-law’s 90th birthday, and the rest will be taken as trips to Melbourne to watch AFL matches," as he supports the Gold Coast SUNS. Garry is truly committed to AFL as a sport, previously coaching U16 and U18 Junior Sharks, with two of the players he coached being inducted in to the Hall of Fame – Adam Devine and Danny Wise. Congratulations Garry!

One thing that America has certainly mastered is the art of ‘comfort food’, with signature dishes being a delight for the taste buds. Going hand-in-hand with their prestigious sporting spectacles, classic American food is heart-warming, savoury and delicious. Frenzy Food Court is embracing all things Americana this March, when Taste of the States takes over for the month. American inspired dishes will be added to the buffet every night from 5.30pm, along with usual buffet favourites, giving diners plenty of culinary choices to indulge in. Taste of the States will feature a Boston burger bar, smoky BBQ Texas grill, Southern comfort food and classic New York street food – think mini cheeseburger sliders and mini hot ‘dawgs’!

St. Patrick’s Day Revel in the luck of the Irish and celebrate all things green this St Patrick’s Day on Friday, March 17. Traditional Irish music from 8.30pm with O’Leary & The Munster Bucks, plus we have traditional dancers performing. Frenzy’s is offering a Guinness Pie and Can lunch special (11.30am-2pm). In the Lounge Bar try a Jameson & Apple cocktail or Guinness, while the Cabana Bar & Lounge will have Irish themed cocktails and green tap beer on request.

AFL Season Kicks Off It all starts on Thursday, March 23 at the MCG with rivals Carlton and Richmond going head to head. Watch all the action live on the HUGE 5.25m2 screen in Mackenzie’s Sports Bar from 6.20pm. Register for the free footy tipping competition with the winner taking home $500 cash at the end of the season. The first Southport Sharks game is at home, Fankhauser Reserve, on Sunday, April 1 at 12pm – come on down and cheer on the Sharks!

Kid's Easter Disco Mr. Sharky and the Easter Bunny are making a special appearance at the Kids Easter Disco on Easter Sunday, April 16 from 5pm. There will also be free face-painting so grab the kids and hop on down to Sharks this Easter break. ANZAC Day Lest we forget. Southport Sharks remembers those who fought bravely for our country in all past and present conflicts. On Anzac Day, Tuesday, April 25 the club will open from 12pm for meals only (drink service for dining guests 12pm-1pm), with gaming and bars opening from 1pm. The annual Anzac Day match between Collingwood and Essendon, will be aired live on a special large screen on the main stage and in Mackenzie’s at 3.20pm.

Devonshire Tea This May, visit the Café at Sharks for a traditional Devonshire Tea. Devon and Cornwall, in England’s southwest, both claim it as a local speciality. In Devon, the baked scone is halved with the clotted cream spread first, then the jam. While in Cornwall, the jam is spread with a dollop of clotted cream on top – which way to you have yours? Enjoy fresh baked scones with clotted cream and strawberry jam with your choice of tea for $9.90 for members, available 9.30am – 11.30am.

Tastes of India Awaken your tastebuds this May, as Frenzy’s presents Tastes of India. Indian inspired dishes will be added to the nightly buffet from 5.30pm featuring a selection of curries. Buffet prices start from $29.90 for members on weekdays, $34.90 on weekends and public holidays.

State of Origin The infamous clash between the New South Wales Blues and the Queensland Maroons has been diving offices and families for years and you can catch all the excitement at Southport Sharks. The first game is on Wednesday, May 31 and will be broadcast live in Mackenzie’s. There will be $3 schooners available until the first try, sports bar menu and a chance to win a State of Origin jersey! Alternatively, watch the game in Cabana Bar & Lounge where you can enjoy the game in style from your own cabana, with a $100 non-refundable but redeemable deposit on beverages (no tapas available). Bon Jovi are without a doubt one of the biggest super groups in music history with hits spanning three decades since 1984. This April, Sharks presents “Living on a Prayer” The Bon Jovi Show a brilliant homage to the superstar stadium rockers from New Jersey. All of the hits are faithfully reproduced in a dynamite show full of high octane rock anthems. Bad Medicine, Dead or Alive, You Give Love a Bad Name, Blaze of Glory and arguably the greatest anthem of all time, Living on a Prayer, will be brought to life at Sharks. On the same bill, Sharks is also presenting “Summer Of 69", the Bryan Adams Experience. Bryan Adams burst onto the world music scene in 1981, taking the world by storm with his fabulous soulful raspy lead vocals, brilliant songwriting and huge stadium rock sound. Expect all the hits in this spectacular show; Run to you, Heaven, Straight from the Heart, Everything I Do, Summer of 69 and all the heart pounding rock anthems and soulful ballads which made Bryan Adams a true rock icon. A fantastic stage show with searing vocals, mind-blowing guitar solos, fabulous harmonies, executed by outstanding musicians dedicated to bring the punter a true Bon Jovi and Brian Adams experience. The Rolling Stones Experience TRIBUTE MAY 5, FROM 8:30PM SHARKS MAIN STAGE FREE SHOW!

For anyone wishing to experience a Rolling Stones gig, nothing comes as close to the real deal as The Rolling Stones Experience. This tribute band perfectly captures the electric energy, mannerisms and musical essence of one of the greatest rock and roll bands of all time. John van Zyl transforms into the true embodiment of Mick Jagger on stage, having been a Rolling Stones fan since the tender age of 15 years old. The tribute bands' talent and devotion to their idols is obvious, as they have played to crowds as large as 8000 people, since forming in 2008. “We use the best available production to make sure our sound and lighting are of the highest standard. Looking onto the stage, the audience will see the guys in the band putting in 110% to make the show authentic,” John says. With a set list comprised of crowd hits such as “You Can’t Always Get What You Want,” “Satisfaction”, “Sympathy for the Devil” and “Get Off My Cloud”, you will not be able to resist the dance floor when The Rolling Stones Experience takes over the Southport Sharks stage.

Where did you grow up? Proud to be Gold Coast born and raised. I try to infuse my culinary creations with the Gold Coast in spirit, using as much produce from the region as possible. What influenced you to become a chef? Food has always played a big part in my upbringing and family gatherings. Where did you train to become a chef? My training was in the typical tertiary manner, at Gold Coast Institute of TAFE. Personally, becoming a chef is more than school, it comes from the heart. What is your signature dish? Definitely desserts, as I enjoy working with the ingredients. My personal specialty is Chocolate Fondant. See Nathan’s recipe for Chocolate Crepes with caramelized banana and candid walnuts on page 27, one to try for Mother’s Day. What's your favorite thing about being a chef? The creative aspect of deciding dish aesthetics & menu design. At Southport Sharks, this involves giving each outlet its own culinary identity.


Which came first the knife or the ink? The tattoos are relatively new in comparison to my life as a chef 20 years vs. 6. What are the meanings behind your tattoos? While signifying a new chapter in my life, I feel them to be a further extension of my creativity. Starting out 6 years ago, with a tattoo of a koi fish (pictured). This was something which embodies beliefs I feel integral to work and life worldly aspiration and advancement, prosperity, good luck, determination, dedication, perseverance, success and a long life. The rest of my tattoos reflect this same theme, building on and embodying the traits I live by and aspire to.

ate Crepes WITH Caramelised Banana & Candied Walnuts

BY NATHAN HAY INGREDIENTS CHOCOLATE CREPES

CARAMELISED BANANA

2 large eggs 2 ½ cup milk 1 teaspoon pure vanilla extract 1 ¼ cup all-purpose flour 2 tablespoons caster sugar 3 tablespoons sifted cocoa powder 2 tablespoons butter

3 tablespoons caster sugar ¼ teaspoon cinnamon 3 bananas CANDIED WALNUTS 150g walnut pieces 1 teaspoon maple syrup 1 ½ teaspoon brown sugar

METHOD CREPES

CANDIED WALNUTS

•• Whisk the wet ingredients into the dry ingredients slowly to ensure a lump free batter (or use a food processor).

•• Place walnuts in a bowl add half the maple syrup, then brown sugar little by little until light coating is achieved (mix shouldn’t be too wet, add remainder of maple syrup if needed).

•• In a large pan over medium to high heat, ladle about half cup batter, swirling the batter to cover the entire bottom of the pan in a thin layer. •• Cook for about 1 ½ minutes, until the sides start to come away from the pan a little, before flipping. Carefully flip the crepe over (it will be thin & delicate), cook for about 30 seconds more. •• Remove crepe from pan, & continue making crepes with remaining batter. CARAMELISED BANANA •• Mix together cinnamon & sugar. •• Slice bananas length ways & in half also. •• Dip in sugar mix & use residual crepe pan heat to caramelise.

•• Roast for 9 minutes at 150°C, or until lightly coloured & crispy, allow to cool, then break up. ASSEMBLY •• Top with your desired spread (may I suggest Nutella, it’s great friends with banana). •• Roll up & enjoy.

Mother Fiona Marsters Celebrating Mum's at Sharks Visitors of Southport Sharks will recognise the smiling face of our 2016 Silver Shark winner, Fiona Marsters. ‘Fee’ (as she prefers to go by) has worked at the club for over 18 years in the Keno Lounge, Lounge Bar, Frenzy’s Food Court, Mackenzie’s Sports Bar and the Café - where she worked as supervisor for three years. She now shares her passion for Sharks with her son Jermaine, who has worked at the club for three years. Starting in the Sharks Events Centre, Jermaine is now the team leader of the gaming department. Although some people might shy away from working with their family, Fee and Jermaine actually really enjoy it, as they don’t get to spend much time together, despite living next door to one another. “Since we work opposite hours sometimes (openings and closings), we often share a quick hug at work because we haven’t seen each other in ages!” she laughs. “I think we work really well together,” says Jermaine. Mother’s Day for the two usually consists of Fee ringing Jermaine to remind him of the significance of the day (he of course disputes this fact) who often jokes his present “is still coming in the post! It’s the thought that counts”. They both then catch up with Fee’s other son and his four children.

My four grandchildren are definitely the best Mother’s Day present.

SSH+F has amazing members and some of those who have inspired us to share their stories, are mother/daughter workout partners. We recently spoke with two lovely families about how they feel working out with each other.

We would like to introduce the Keating-Puia family who train together at SSH+F - Poppy and daughters Kyra (14yo) and Manaia (15yo), who all joined together in August 2016. The Edwards family joined at separate times, with Jane joining SSH+F in January 2015, her eldest daughter Laura (16yo) joining in April 2016 and daughter Kate (14yo) signing up in September 2016 once she was old enough.

What do you love about exercising together as a family? Keating-Puia family: Work and life can generally become very busy so we find our time exercising as being productive and fun - Poppy Edwards family: I have always been excited about the prospect of training at the gym with Laura and Kate and it’s great that Sharks allows us to do that. Having the three of us as members helps our motivation if one of us is having a 'down day' - Jane Who motivates who in your family when it’s gym day? Keating-Puia family: Manaia and I are generally the motivators. I give them an option of which class they’d like to attend and we smash it! - Poppy Edwards family: Mum always encourages us to come with her...we think she's addicted! – Laura and Kate Would you recommend to other families to join SSH+F, and why? Keating-Puia family: I’d highly recommend the SSH+F as they have affordable plans with no lengthy contract, and most of all there’s a variety of classes and plenty of exercise equipment on offer. - Poppy Edwards family: It’s great Sharks caters for 14years+ and that there's a big variety of classes for all ages. Some days Laura prefers going on the treadmill while Kate and I thrash it out in a cycling class…there's always something depending on how we are feeling on that day. And, of course the staff and instructors are always friendly, helpful, and great fun...who wouldn't want to go to Sharks gym! - Jane

With over 15-years of expertise across events and sales, Kristie looks forward to working with existing and new clients, whilst introducing the Mantra at Sharks hotel to the market, opening in early 2018

UP CLOSE WITH KRISTIE Where did you grow up? Rockhampton, Central Queensland. How long have you lived on the Gold Coast? 17 years What is your favourite holiday destination? I love to explore Australia, so finding new camping spots (preferably without mobile reception) is my favourite type of holiday destination. What is your favourite food? Difficult question, I love food in general - but I would have to say that Sushi is my “go to”. What made you decide to pursue a career in events management? The variety was my main attraction…knowing that one day I could be inside organising a conference for 20 people and the next day outside with a family fun day – setting up dodgem cars and Ferris Wheels, to entertaining at a Gala Charity dinner. What do you enjoy most about event management? Hearing clients' ideas about what they want to create, or achieve, at an event and then working with very talented people to make it happen, always exceeding people's expectations. Congratulations on your recent wedding, how was it planning your own wedding? I have been fortunate to have helped hundreds of brides organise their special day. I attended a few wedding expos, and with my work I am extremely lucky to have a great group of suppliers around me, who made it come to life. We also only decided in late-August to get married in December, so having a shorter period of time meant we had to organise everything quickly, which I am very happy about.

The retirement of club legends from NEAFL football, Ben Headland, Jason Burge and Glenn Screech has seen a changing of the guard at the Southport Sharks. The additions to the playing list include former Gold Coast SUNS player, Seb Tape, former Fremantle rookie Hamish Shepheard and two former Southport Sharks forwards in Josh Baxter and Matt Fowler. The additions of these players certainly make our team a lot more potent in front of goal. Senior Coach, Nathan Bock, will again be assisted by Southport Sharks Hall of Fame member, Dane Carmody, along with new additions Andrew Hayes and former Collingwood and SUNS player, Danny Stanley. Our 2017 fixture provides us with every opportunity to have a successful season. Away games in Canberra, Sydney, Alice Springs and Darwin will provide some great experiences for our playing group. Our club is now a true Gold Coast representative team, with numerous players from each of the Gold Coast QAFL clubs on our list. We provide a pathway to the highest level for young Gold Coast footballers.
