With the hotel including 209 car parks being built from 2017, Southport Sharks is entering a transitional phase that will grow our reputation as a leader in delivering sport, leisure and entertainment services to the Gold Coast. Whilst construction of the hotel will affect car parking in the short term, particularly the area closest to the Fitness Centre, we aim to minimise the inconvenience as much as possible. To ensure the safety of our members, there will be a temporary covered walkway to link the club and the Fitness Centre during construction (see below map). I would like to take this opportunity to thank you in advance for your cooperation and understanding during construction.

Welcome to the summer edition of BITE. Here at Southport Sharks, we are gearing up for the festive season and enjoying all things 'Big Top' as we immerse ourselves in our Cash Carnival promotion – simply renew your membership for 2017 for a chance to win a share of $20,000! In October, we acknowledged our 'Game Changers' Dr Alan Mackenzie, Wally Fankhauser and Gerry Carmody, with the unveiling of their bronze sculptures at Doc Mackenzie's birthday. Friends and family gathered in Carmody's Restaurant & Bar to celebrate and acknowledge Doc's long-standing leadership and contribution to Southport Sharks for over 40 years. As 2016 draws to a close, we would also like to reflect on our outstanding team members. We are proud to have eight individuals who have worked at Sharks for over 20 years, and 63 (25%) have over 10 years’ service. This is a huge achievement for a sporting club of this size and we thank you for your loyal dedication to the club.

Southport Sharks cheque handover to Gold Coast SUNS As a part of Southport Sharks and Gold Coast SUNS Patron Partnership, the club proudly welcomed Gold Coast SUNS players and administration to the venue late in the 2016 AFL season for a cheque presentation. President, Dr Alan Mackenzie presented a cheque, demonstrating Southport Sharks true commitment to honouring our mission of fostering the growth of Australian Rules Football on the Gold Coast, by working in partnership with the Gold Coast SUNS.

Our Game Changers Southport Sharks wishes to recognise its three most influential people by displaying bronze sculptures of our “Game Changers” – Alan Mackenzie, Wally Fankhauser and Gerry Carmody. Officially unveiled in October, the sculptures can be viewed in Carmody’s Restaurant & Bar entrance.

Dr Alan Mackenzie ‘Doc’ Club President 1974 – Current An AFL Queensland (QAFL) life member, Dr Alan Mackenzie started his Southport medical practice in the 1970s. He was elected Southport Sharks President in 1974, and has held the position every year since. Mackenzie’s Sports Bar was aptly named after ‘Doc’ in recognition of the success of the club through his leadership. 2008 - QAFL Hall of Fame 2011 - QAFL Legend 2012 - Jack Titus Service Award

Wally Fankhauser Club Vice President 1974 – 1976 & 1978 – 1995 The late Wally Fankhauser generously donated $2 million to establish new club facilities at Musgrave Hill, Southport. In addition to his generous donation, Fankhauser also put in the hard yards - personally bulldozing the mounds in place for the full-sized Aussie rules oval, now recognised as the Wally Fankhauser Sports Reserve. Fankhauser served as Vice-President for 23 years up to his passing in 1995.

Gerry Carmody Treasurer 1975-1985, 19881993, 2011 Finance Director 1976 – 1984 Secretary 1989 – 1991 In 1974, the late Gerry Carmody was elected Treasurer of Southport Sharks. Carmody’s long association with the Southport Sharks committee, primarily as Secretary and Treasurer, formed part of the most stable administration of any club in Australia. His impact on the club was recognised with the naming of Carmody’s Restaurant & Bar. He sadly passed away in 2011.

Meet the Artist - Dr Rhyl Hinwood AM Since childhood, Rhyl Hinwood had a gift for capturing a person’s likeness in pencil and paint. A self-taught sculptor in clay, stone and bronze, Hinwood has over 40 years experience as a commissioned sculptor. Hinwood takes pride in producing the finest artwork for institutions, government, corporations and collections. In 2006, she became a Member of the Order of Australia for her creation of the Australian Coat of Arms at Parliament House. Her skilled craftsmanship shows in the quality of the bronze sculptures of our three game changes.

Southport Sharks, with the support of our members, is committed to the local Gold Coast community. For every new membership or membership renewal, Southport Sharks donates $1 from the membership fee to a charity of the member’s choice – either Sharks Community Benefit Fund, Southport Sharks Juniors or Gold Coast Hospital Foundation. Gold Coast Hospital Foundation was recently able to purchase a very important piece of equipment to assist in the training of Emergency Staff, the iSimulate, thanks to a contribution of $5,369 from Southport Sharks members.

“The iSimulate training system is a real-time education unit used to train Emergency Department clinicians. It allows staff to practice responses to trauma and other difficult cases that require teamwork and timeliness in an environment similar to real life. These scenarios can help identify inefficiencies or weaknesses in the system, knowledge gaps in individuals, as well as building relationships within and between departments. It has been estimated as part of our research… approximately 2400 patients will benefit from the training our staff will receive using this system” – Joe Hanlon, Business Development Manager, Gold Coast Hospital Foundation

SOUTHPORT SHARKS COMMUNITY STUDY AND DEVELOPMENT PROGRAM: STUDY GOLD COAST

GRIFFITH UNIVERSITY

With Southport Sharks being located in the City of Gold Coast’s Health and Knowledge Precinct, a Southport Sharks Community Study and Development Program was established. This provides an opportunity for local and international students to pathway into the hospitality industry. Sharks formed a partnership with Study Gold Coast on the Major’s International Student Ambassador Program by offering an internship for one of the international students, Diego Gomez Marcos with our Management team. “My internship at Southport Sharks is allowing me to boost my leadership skills while establishing significant connections within both the Club and the community of the Gold Coast” said Diego.

Sharks partnered with Griffith University offering undergraduates the opportunity to gain practical on-the-job experience. In 2016, Sharks presented four students from the School of Hotel and Tourism Management, the opportunity to undertake 75 hours of work placement within the club, learning skills on reception, gaming, bar and fine dining - you may have met Arisa Takahashi, Beatrice Zhao, Taewoo Kim (Rick) and Tyler MacDonald during September and October during their placement. Sharks is pleased to have offered Tyler a casual Bar Attendant position in the Lounge Bar upon completion of her training and we welcome her to the team. All students were given the opportunity to experience Melbourne Cup at Southport Sharks.

CITY OF GOLD COAST’S LOVE TO RIDE CHALLENGE: For the second consecutive year, Southport Sharks has signed up to be part of the City of Gold Coast’s Love to Ride Challenge. This is a fun, free competition to encourage Gold Coasters to experience firsthand the joy and benefits of riding a bike. Running through the month of November, in 2016, this event challenges workplaces and individuals to get on their bikes. Employees at Southport Sharks decided competing with other organisations on the Gold Coast wasn’t enough, they wanted to ‘Beat the Boss’ by logging more kilometres than CEO, Dean Bowtell, who is an avid cyclist, cycling hundreds of kilometres per month for enjoyment and fitness. “Love to Ride is a good opportunity to promote the health and fitness benefits of cycling and a little healthy competition into the workplace. Here at the Southport Sharks, we support our employees where possible to choose cycling or walking to work by providing secure bike parking, showers and change rooms. Encouraging employees to get back on their bikes for fun opens them up to start thinking of cycling to work, as a much cheaper and healthier alternative to driving a car.” - Dean Bowtell.

It’s beginning to look a lot like Christmas... There’s no wonder the festive season is a favourite time of year. Everywhere you look, there seems to be tinsel, baubles, carols and a general sense of Christmas cheer. Southport Sharks is no exception, with the club being transformed into a festive wonderland. The traditional scents of Christmas food will be in Frenzy Food Court, with delicious dishes such as roast turkey and smoked ham being added to the buffet every night in December. Alternatively, you can enjoy a two course Christmas lunch at Frenzy's with your choice of roast pork, beef or baked ham with a dessert of plum pudding and brandy sauce from $14.90 for members. This is available Monday - Friday from Dec 1 - Jan 6 during the lunch hours of 11.30am - 2.00pm. Carmody’s Restaurant & Bar will also feature a three course Christmas set menu throughout

the month from $58.90 for members and $60.90 for guests and the Ladies Lunch special will also feature a Christmas twist, with five main courses to choose from. The Christmas Family Night is a popular night on the Southport Sharks social calendar and this year’s event on December 18 will be another night not to be missed. The excitement kicks off at 5pm with face painting, Christmas goodies, LOL Crew performing Christmas carols with Fideous the Frog and the Grinch, plus a visit from Mr Sharky and his friend – Santa Claus! The all-you-can-eat, Christmas-themed buffet begins at 5.30pm, with prices ranging from $34.90 for members and $38.90 for guests. The Café will also be available for light meals or snack cravings you might have throughout the night.


Tis the Season for Giving... Christmas is the season for giving and thinking about those less fortunate than us. There are many ways you can make a difference to some Gold Coaster’s Christmas this year. Our suggestion to giving locally this Christmas is with Rosies, as the festive season is one of the loneliest times of the year. Help Rosies bring the gift of ‘presence’, now and in the future…

Rosies is a not-for profit, volunteer based organisation that commenced in Queensland in 1987 as a youth mission. These days, their support reaches friends on the street, in the courts, detention centres, drop-in centre and more. Rosies actively have over 1100 volunteers who aim to provide support and friendship to people who are marginalised in the community – particularly those that are homeless, at risk of becoming homeless or lonely. Through their website, you can make a direct donation, apply to volunteer or host a #cuppa4rosies fundraising event. You can also drop–off the following gifts to the Southport drop-in centre for their volunteers to pass on: instant coffee, milo, and non-perishable food. Visit rosies.org.au for more information

CARNIVAL FUN FACTS:

The tradition of carnivals originated hundreds of years ago in ancient Italy, where followers of the Catholic religion would dress up in masks and crazy costumes before the first day of Lent. They called the festival “carnevale” (which means “to put away the meat”), as Catholics traditionally, do not eat meat during Lent. Besides the excessive consumption of alcohol, meat and sweet foods, other traditions of mock battles, food fights, social satire and general rule-breaking, the display of human oddities or “grotesque bodies” was also common.

The travelling carnival began in America in the late 1800’s due to improvement in technology and transport.

Human oddities and the rise of the freak show Since the 16th century, freak shows became popular past times in England, with people flocking to carnivals to ogle human deformities, which became a form of popular entertainment. An example of this, were the popular freak show act, “Lazarus and Joannes Baptista Colloredo”, the conjoined twins of Genoa, Italy. There were also various versions of the “World’s Strongest Man”, as well as Sara Baartman, who went by the stage name “Hottentot Venus”, who was marvelled by many due to the abnormally large size of her buttocks. Today, humanity’s obsession with the abnormal is still prevalent, as can be seen with the success of popular TV shows: Embarrassing Bodies, Extraordinary People and Body Shock.

The Eiffel Tower in Paris was built for the Paris Word Fair (carnival) in 1889, which honoured the 100th anniversary of the French Revolution. “Midnight Madness” is when a carnival stays open after midnight into the morning’s early hours. The Rio carnival in Brazil is considered the world’s largest carnival, with over two million people attending each day. The Ferris Wheel was invented by George W. Ferris for the World Fair of 1893 in Chicago, which celebrated the 400th anniversary of Columbus’s landing in America.

The Katy Perry Tribute Show is a wondrous rendition perfectly capturing the colour, the costumes, Katy’s live band and dance choreography with all the glitter, magnificence and essence of the real Katy Perry, "California Gurls" experience. An amazing live tribute to the sweet Californian born candy pop teenage dream that is Katy Perry. Produced by Levinge Events, featuring the exceptional vocal talent of Megan Barnes and live band, the show is a complete confection of all Katy’s smash hits gift wrapped and presented in a tribute befitting such an influential and world acclaimed female songstress and performer. Every aspect of a Katy Perry show is emulated in this tribute, from the costumes to the set design, making it a not to be missed spectacle. "Our costumes are amazing, the stage sets are awesome and together with the band and choreographed dancers, it's just a lot of fun," producer Lann Levinge explains. Children are welcome to attend gigs at Southport Sharks, but must remain under the immediate supervision of a parent or guardian at all times.

Sovereign is a R&B, soul & reggae band based in Brisbane. All vocalists are former members of The X-Factor (Australia) season one winner Random - so you know these guys are no strangers to entertainment. With the vocal capability drawing comparisons to old school greats such as, Dru Hill, Boyz II Men, Jodeci, fused with the likes of John Legend, to the smooth synthesized vocal sounds of Teddy Riley, and the legendary Roger Troutman. They have supported R&B legends Black Street and 112. Band members include Jess Tolo-Paepae, Wayne Tauvao and Xylocaine Latu on vocals, Karl Davis on talkbox/synthesizers, George Alfred on keyboards/vocals, Saga Gaseata on keyboards, Ah-you Fanene on guitar, Kane Sauaga on bass and Avau Fanene on drums. They will create some soulful sounds for Waitangi Day celebrations here at Sharks. This is one act not to be missed!

THE NEW BREWS

It’s certainly a brave new world. The boutique beer industry is on the rise, as is evident with the new craft breweries popping up everywhere you look on the Gold Coast (Black Hops and Balter Brewing, to name a couple). The increase in popularity to this beverage category is opening up the door to even more beer varieties on the market and consequently, more choice for consumers. Why are so many options now available? It’s all about the hop level brewers are experimenting with, adding different levels of flavour and dimension to these beers. Hops impart bitterness to combat the sweetness of the malt in beer and there are hundreds of varieties that each add their own distinct flavour and aroma to every beer. Pale Ales, a popular craft beer choice, are characterised by their light, nutty malts and spicy herbal hops, adding a clean finish to the beer. India Pale Ales, or as they’re more commonly referred to, IPA’s, are characterised by higher alcohol content and a stronger hop presence. Not for the fainthearted but if you’re after robust flavours then you should definitely explore this style with a hearty, summer meal, like an iconic Aussie BBQ.

Southport Sharks has an array of Aussie Celebrations happening at the club on January 26 including a face painter from 1pm - 3pm, a Kids Australia Day Party with LOL Crew from 1.30pm, a visit from Mr Sharky at 2pm and a live reptile show from 4pm - 5pm (with photo opportunities for the kids!) Special races will also be held on Fankhauser Reserve, known as the Griffith University Australia Day Gift, which will run from 10.30am - 3pm. Adults will have a great view of these races from Cabana Bar & Lounge, where Triple J's Hottest 100 will be playing live from 11am. Plus catch the toad races there from 3pm - 4pm! ICY POLES – THE AUSSIE CLASSIC! Most Australians have fond memories of enjoying a refreshingly cold, icy pole during summer. We have prepared both a kid-friendly and adults-only (alcoholic) recipe for you to enjoy with your loved ones this Australia Day. KIDS STRAWBERRY & BANANA MILK ICY-POLES: Ingredients: 1 cup of strawberries 1 banana 1/2 cup of coconut milk 1 teaspoon of vanilla essence

AUSSIE DAY BOOZE ICY-POLES: (adults only!) Ingredients: 2 cups of Pimms

2 blood oranges

1/2 cup of sugar

2 limes

2 cups of ginger ale

4 strawberries

2 lemons

1 cucumber

Method:

Combine all ingredients in a blender

Combine Pimms, sugar, ginger ale, 1 lemon, 1 blood orange, 1 lime, 2 strawberries and 1 cucumber in a blender.

Blend until smooth Add to your icy-pole moulds ($2 at the supermarket) and add wooden sticks Leave in the freezer overnight

Slice remaining lemon, blood orange, lime and strawberries. Add small slices to the blended mixture. Pour into your icy pole moulds and add wooden sticks Freeze overnight TIP! The more alcohol in your icy poles, the harder they are to freeze. Turn up your freezer or ensure more time to freeze longer.

MEET SHARKS’ EXECUTIVE CHEF Andrew Dugard Born in Grimsby, England (not only famous for its great fishing port but also for selling some of the best fish and chips in the country), Andrew migrated to Australia in 1989. Before settling on the Gold Coast, Andrew enjoyed working as a chef in some of Australia’s most picturesque places – Ayers Rock, Fraser Island, Daydream Island. What started out as a fun Saturday activity, baking bread with his dad, lead Andrew to attend Grimsby College of Tech, studying City and Guilds Catering. Andrew continues to evolve his skills by doing a lot of research and letting his culinary creations be influenced by current dietary requirements and plenty of experimentation with ingredients. To get a taste of Andrew’s culinary creations try out his amazing Chermoula Grilled Prawns recipe at your next BBQ.

METHOD:

30 gm Spanish Onion 20 gm Fresh Garlic 1 Pinch Chilli Flakes 20 gm Cumin Seeds 10 gm Ground Cinnamon 10 gm Paprika 10 gm Cracked Black Pepper ½ Bunch Coriander ½ Bunch Parsley 125 ml Olive Oil 20 gm Sea Salt Rind of 1 Lemon

Roast off all dry ingredients for 5 minutes in a medium oven to bring out the flavours

FOOTBALL REPORT Southport Sharks Presentation Night 2016 Congratulations to Andrew Boston who won the 2016 ‘Doc’ Mackenzie Medal for the Best & Fairest Southport Sharks player at the 2016 Presentation Night. Boston polled 131 votes in his 17 games to win in a very tight finish. Fellow midfielder Jordan Keras stormed home to finish second on 128 votes. Boston, who was named in the NEAFL Team of the Year, along with Matt Sully and Fraser Thurlow, led the count from Round 1. Southport Sharks Juniors maintains junior sides starting at Auskick and working its way through to under 18’s and has in the vicinity of 350 junior participants. Your donation will further assist in growing and nurturing our AFL stars of the future.

Sharks Community Benefits Fund supports causes that align with the values and vision of the club. This fund creates a pool of money for distribution to different organisations in need on a quarterly basis. It allows the club to support causes that matter to our club community on an ad-hoc basis.
