At a glance with the CEO
There is never a dull time of year at Southport Sharks. This winter we are gearing up for the annual Carlton Mid Celebrity Sports Lunch on July 8, a major highlight on our events calendar. In addition to our MC Sam Kekovich, I am excited to announce that we have secured special guest Graham Richardson, who has a colourful political career in the Labor Party and who now hosts his own program on SKY News. In more event news, I am happy to see an ever growing line-up of local acts set to perform within the club. The Gold Coast is a melting pot of talent and we are excited to host Platform on select Friday nights which showcases a different group of local talented musicians each month. We are also proud to sponsor for the second year running, the Gold Coast Music Awards held on June 16. To create even more benefit and comfort for our members, we are planning some updates throughout the club. Our cafĂŠ will be refreshed with the inclusion of ceiling plants and greenery for a more intimate feel, while Cabana Bar & Lounge is receiving a facelift including new furniture coverings, as well as more greenery and wooden entrance doors to enhance its enchanted garden feeling. Finally, I would like to take the opportunity to recognise some very hard working and loyal team members. 2016 marks the 20 year anniversary of our Chief Operating Officer Chris Jones, Carmel Berryman who works in Promotions and Frenzy Food Court, as well as Sharon Kilcullen who works in Finance. I would like to thank Chris, Carmel and Sharon for their ongoing contributions and loyalty to our club. We hope to see you at Sharks soon. Dean Bowtell Chief Executive Officer

Southport Sharks was decorated in traditional red poppies over the long weekend in April to commemorate our ANZAC soldiers. Mackenzie’s Sports Bar was the place to watch the Collingwood VS Essendon game.
April’s Cuisine and Couture was particularly popular with the introduction of men’s fashion from Urbbana of Surfers Paradise. Join us in Carmody’s every last Friday of the month for a delicious luncheon and a fashion parade featuring local designers and retailers.
Mum was the word on Sunday May 8 at Southport Sharks. Mums were treated to delicious dining options throughout the club including a decadent three course menu in Carmody’s, or a delicious buffet of seafood for lunch or dinner in Frenzy Food Court.

HERE FOR THE
Southport Sharks introduced the Sharks Community Benefit Fund in 2008 with a goal to support local organisations and causes that align with the club’s values and visions. Eight years on and Southport Sharks has proudly donated close to $500,000 in cash to various local organisations in need. Here are two organisations that have benefited greatly from Sharks’ generous contributions.
MONTROSE THERAPY & RESPITE SERVICES
GOLD COAST HOSPITAL FOUNDATION
Early 2016, Southport Sharks partnered with Montrose Therapy and Respite Services, one of Queensland’s oldest profit-for-purpose charities that specialise in providing support for people with disability. Through funds raised from the Community Benefit Fund, Southport Sharks are the proud contributors of the ‘Our Getaway’ holiday home living area. Montrose provided Southport Sharks staff a tour of the impressive facilities located in Labrador prior the official launch on April 26 where Dean Bowtell completed a handover of raised funds.
Southport Sharks are proud to announce the nomination by the Gold Coast Hospital Foundation for the 2016 QCF Philanthropist of the Year Award. Southport Sharks work closely with the Gold Coast Hospital Foundation and have been making donations via the Community Benefits Fund since 2011. The nomination comes off the back of reaching an impressive $100,000 donation milestone earlier this year. Through these generous donations, Southport Sharks have funded various pieces of equipment throughout the hospitals Children’s Department.

NESTRONE The origin of Minestrone soup dates back to the late Roman Republic where the Italian diet was vegetarian based by necessity. The expansion of Rome meant the introduction of new flavours and staple ingredients, and with that Minestrone
became a heartier meal including a wider variety of vegies and herbs, potatoes and various meats. Today, there is no set recipe for Minestrone. The method is open to interpretation, so feel free to put your own spin on it and create a new family favourite this winter!
RECIPE: 2 bacon rashers roughly chopped
1L beef, chicken or vegetable stock
2 carrots peeled and chopped
1 can red kidney beans
2 celery sticks chopped
3 roma tomatoes chopped
1 onion diced
1 cup fusilli pasta or rice
2 russet or desiree potatos, peeled and chopped
Salt and pepper to taste
2 garlic cloves
Fresh parsley, basil and oregano
METHOD: 1. Cook meat thoroughly, add vegies, garlic and basil in the same saucepan and stir to combine. Cook on high heat, uncovered, stirring for 5 mins. 2. Add stock, beans and tomatoes, cover and bring to the boil. Reduce heat to mediumlow. Simmer, covered and stir occasionally over 30 mins or until vegies are tender. 3. Increase heat to high and add pasta or rice and cook uncovered, stirring occasionally until pasta is al dente or rice is cooked. Season with salt and pepper and ladle into serving bowls and sprinkle with fresh herbs.

WINE Italian food and red wine goes hand in hand. But as we are not all certified sommeliers, sometimes we need a little help in our red wine selection. Here’s a simple guide to some of the most popular reds and what meals they work best with.
SHIRAZ Shiraz has aromas and flavours of wild black fruit such as blackcurrant with overtones of black pepper spice and roasting meat. Also known as Syrah, Shiraz goes perfectly with steak, beef, wild game or stews and is described as hearty and spicy, being the deepest and darkest red with intense flavour. For a rich and rounded taste, try the Pepper Jack Shiraz, 2014 from Barossa Valley, SA. This wine has fine tannins, lots of weight and complexity with a great finish.
MERLOT Merlot is soft to drink and is often described as the introductory wine for “new red wine drinkers”. It is perfectly paired with any meal, with typical scents including blackcherry, plums and herbs. For a merlot with a robust and round texture, try the Matua Hawkes Bay, 2014 from Matua Valley, NZ. The colour is vibrant red with raspberry, plum and spice aromas, which is paired with a palate full of berry and well integrated oak flavours.
CABERNET SAUVIGNON Cabernet Sauvignon is widely accepted as one of the world’s best and most popular varieties. It goes perfectly with red meat and is very full bodied, as it’s rich with currant qualities and notes of bell peppers and vanilla. For a delicious and bold choice, try Taylors Cabernet Sauvignon, 2014 from Clare Valley, SA. This is a unique blend with lashings of raspberry and blackberry jam flavours, without excess oak.

T R E NT MALONEY Here at Southport Sharks we are lucky to have such hardworking and honest individuals that make up our great network of team members. In this issue of Bite we would like to show our appreciation to a particular team member that exemplifies qualities of honesty, team work and high performance. This is our Duty Manager, Trent Maloney. With a background working in clubs and international hotels, Trent commenced employment with Southport Sharks in February 2008 in the role of a Bar Attendant. In 2009 Trent undertook a Certificate IV in Frontline Management. This qualification provided him with strong skills for leading a team and by 2010 Trent had secured a position of Team Leader at Southport Sharks. Trent’s passion for learning and leading people has always been evident. Throughout 2011, Trent, along with a number of other Managers, successfully completed a Diploma of Management with the support and funding by Southport Sharks.
5 MINUTES WITH TRENT: WHY DO YOU LOVE WORKING AT SHARKS?
I love being part of a sporting club and what that represents, supporting football from the grass roots and seeing the club support the community. A great part of my role is being able to interact with patrons and staff out on the floor and achieve positive outcomes. I have always loved being part of the club and having the opportunity to develop and appreciate the support I have received. WHAT’S YOUR FAVOURITE DRINK/COCKTAIL/SNACK/ MEAL AT SHARKS?
I have always loved trying a new beer; Mountain Goat Ale and Big Head are great! WHAT DO YOU DO IN YOUR SPARE TIME?
I love spending time with my twin 15yr old daughters, taking them shopping or out for a nice dinner is always great. I also love spending time on the Broadwater fishing or relaxing on my day off.
In 2012 he was appointed to the role of Duty Manager and decided to take his education to the next level, studying at Southern Cross University to receive a Bachelor of Business in Hospitality Management, majoring in Gaming.

Trent has a special interest in ensuring Southport Sharks effectively communicates with our younger members in an effective way. Trent has been instrumental in introducing the new Team App for staff while keeping his team up to date on all the promotions occurring throughout the club.

HOW DO YOU DO STATE OF ORIGIN? The Origin of State of Origin: Since 1982, the best-of-three match series has been cited as being the highest-level of rugby league played anywhere in the world. BASTILLE DAY In July 1789, crowds of Parisians stormed the infamous French prison, the Bastille, signifying the beginning of the French Revolution and the end of Louis XVI’s reign over France. On July 14, 1790, France commemorated the first anniversary of the storming of the Bastille with the fete de la federation. Hailing from the Gold Coast and Brisbane, Dezzie D and The Stingrays formed in 2013 with a passion of 40s and 50s swing and a goal to engage audiences to feel a part of this era of music. Their unique blend of Rhythm, Blues and Swing draws influence from artists such as Ruth Brown, Ann Cole and Etta James and other vocalists of this era who lead singer Dezzie D describes as “ballsy and full of personality”. Powerhouse lead vocalist Dezzie D is backed by talented band members, Shaun Ballagh on Saxophone, Butch Bellert on Guitar, Grant Watson on Bass and Greg Baikaloff on Drums. All of which have had unique and impressive musical experience prior to joining the group and collectively have been performing nonstop to audiences throughout South East Queensland for the past three years. Dezzie D and The Stingrays are no strangers to the stage playing at many South East Queensland venues and festivals including Blues on Broadbeach and have been involved with Brisbane’s 2014 G20 and Australia Day Celebrations in 2015. The Gold Coast music industry is a vibrant scene with new talent constantly on the rise. Debuting last year, the Gold Coast Music Awards has helped forge connections between Gold Coast musicians and local supporting businesses including Southport Sharks and the Cabana Bar & Lounge. For the second year running, Southport Sharks and Cabana Bar & Lounge are proudly sponsoring the Gold Coast Music Awards, Artist of the Year category. The finalists’ nominated truly epitomise the incredible depth of talent on the Gold Coast, many of which have played live sets in the Southport Sharks club. The awards are held at Burleigh Brewing Company on Thursday 16 June where Dean Bowtell will be given the exclusive opportunity to present the Artist of the Year award to the winning entrant. Last year Mr Bowtell rubbed shoulders with winner Karl S Williams who was honoured to be nominated and presented with this award. Mr Bowtell says the awards are important in recognising the unique music scene on the Gold Coast and building its strength and diversity.

The Gold Coast is full of diverse and talented artists, performers, designers and more. RAW is the culmination of these talented individuals, a unique event that aims to promote networking and showcases our amazingly creative Gold Coast community in its freshest form. RAW launched in 2009 and was introduced to Australia in 2012. Moving forward 4 years, RAW has grown into a fun and alternative way for artists to showcase both to their local community and the global stage. RAW currently operates in over 60 cities across the United States, Australia, Canada and the UK. TREND was the latest RAW instalment at the Gold Coast and was hosted in the Sharks Events Centre on May 5th. Bright and bold was the trending theme, with the President’s Room adorned in colour and pizazz from various prints, canvases, body-art, jewellery, photography and more! There were many stand-out exhibits which included DRIFT by clever Broadbeach couple Brooke and Josh who create coastal themed homewares with a cool twist using natural elements. Tahira was another notable mention with her incredible live body art displays as was the brightly coloured and bold canvases showcased by Saturar. Expansive and impressive photography was also on display by the talented Tweed Coast local, Ryan Folwer. It was an inspirational evening where the Sharks Events Centre was gleaming with the array of vast talent from humble and talented beings. Southport Sharks were proud to host this event for RAW. Local artists are encouraged to submit their work for consideration to be a part of the upcoming show hosted in the Events Centre on the 4th August. Winter Ingredients: 4 lamb shanks 2 onions thinly sliced 3 garlic cloves sliced 1 tbs grated ginger
Lamb Shanks
3 whole star anise
Method:
1 cinnamon stick
1. Preheat oven to 160C/140C fan forced. Heat a large flameproof casserole dish over high heat. Spray with olive oil. Cook lamb shanks in 2 batches for 1-2 minutes each side or until browned. Transfer to a plate.
1 tbs tomato paste 1 cup chicken stock 1 cup water 1 can diced tomatoes 2 sweet potatoes cut into cubes 2 tsp tamari 2 tsp lime juice chopped coriander to serve greens to serve
2. Reduce heat to medium. Add onion, garlic, ginger, star anise and cinnamon and cook, stirring until aromatic. 3. Stir in tomato paste for 1 minute. Add lamb shanks, stock, water and tomato to dish. Bring to boil. Cover. 4. Bake for 1 hour 30 minutes. Add sweet potato. Bake, covered, for a further 1 hour or until lamb is very tender. Stir in tamari and lime juice. Season with pepper. Sprinkle with coriander. Serve with greens.

Warmers Decadent Chocolate Pudding Method: Ingredients: 100g dark or milk chocolate, chopped 50g butter, chopped 1/2 cup milk 3/4 cup self-raising flour 1 cup brown sugar 1/3 cup cocoa powder 1 1/2 cups boiling water fresh berries and cream to serve
1. Preheat oven 180째C. Combine chocolate, butter and milk in a medium heatproof bowl and microwave on high for 1 to 2 minutes, stirring occasionally, until smooth. 2. Combine flour, 1/4 cup brown sugar and half of the cocoa powder in a medium bowl. Stir in chocolate mixture, pour mixture into a 6 cup capacity heatproof bowl or dish. 3. Combine the remaining brown sugar and the remaining cocoa in a small bowl and sprinkle over pudding mixture. Pour water (over the back of a spoon) over the topping. 4. Place in preheated oven, uncovered for 35 minutes. Serve pudding dusted with icing sugar, and topped with whipped cream and berries.

2016 SEASON
Football Report
One of our main focus areas for 2016 is improving the relationship between the senior and junior football clubs. In conjunction with junior President Chris Harris, the senior club is now investing in our massive junior base. There are many future AFL Stars currently playing in the Southport juniors and we are working on fast tracking their development. In February, 9 senior players attended the U13, U15 & U17 pre-season camp at Tallebudgera, training on the Saturday then holding a very informative Q&A session. Over Easter, the senior club ran a coaching seminar for our
junior coaches, with 12 coaches giving up their time on Good Friday to improve the club’s alignment of coaching philosophies. Before each senior bye, senior players are allocated to assist each junior team with their training, something that the junior players love, with the senior boys passing on some valuable experience. Hopefully we will see many of our junior stars progress through the ranks and into our NEAFL Team! Jarrod Field General Manager – Football Operations

Dyson Budarick’s competitive nature has put the midfielder in good stead in the early parts of his career. The talented 18 year old has had a jam packed 2015 and making his mark throughout the 2016 NEAFL with the Southport Sharks. Here’s a bit more about Dyson.
WHAT ARE YOU STUDYING AND WHAT ARE YOUR GOALS?
I am currently studying a Bachelor of Business at Griffith University on the Gold Coast. My goals are obviously to play footy at the highest level but to get the most out of my education and study. I think it’s important to learn new skills and information in an ultimate attempt to be successful.
HOW LONG HAVE YOU BEEN PLAYING AFL AND HOW LONG HAVE YOU BEEN A MEMBER OF THE SOUTHPORT SHARKS TEAM?
WHAT IS YOUR FAVOURITE TYPE OF TRAINING?
I have been playing AFL since I was about four or five and I have been with the Sharkies for two years now. I was listed last year but was busy with state football (I have been 100% with Southport since early 2016).
I enjoy training once pre-season has finished. This training is purely focused on skills. WHAT IS YOUR FAVOURITE MEAL OR DRINK?
