At a glance with the CEO
A warm welcome to the winter edition of Bite magazine. Autumn was a busy time for the club, with members enjoying Easter, Mother’s Day, the start of the football season and our entertainment. Tropical Cyclone Debbie gave us a lot of rain and on behalf of the entire team at Southport Sharks, our thoughts are with all those affected by the natural disaster across Queensland and northern New South Wales. While the rain slowed down construction of Mantra at Sharks for a few days, the foundations are now clearly established and the tower crane erected, which is exciting to see. We are currently working hard behind the scenes in preparation for the 13th Annual Carlton Draught Celebrity Sports Lunch on July 7. Last year’s event was completely sold out with over 650 people in attendance. Learn more about the event and how you can secure your tickets on pages 6 and 7. It was exciting to see the countdown to the Gold Coast 2018 Commonwealth Games reach the ‘one year to go’ milestone in April. Southport Sharks has met with various local groups and stakeholders to ensure all potential opportunities are being maximised, especially with our location being within the Gold Coast Health and Knowledge Precinct. SPORT - Southport Sharks are proud sponsors of the Gold Coast Sports Star Awards, which were presented by the Gold Coast Sporting Hall of Fame recently at QT in Surfers Paradise.
FUNDRAISING – Cabana Bar & Lounge's recent fundraising event was a huge success, raising $3763.90 for the National Breast Cancer Foundation.
Club Patron, Mick Veivers and Club Director, Paul Stevens, accepted an award on behalf of Southport Sharks from Councillor Dawn Crichlow at the event, for sponsoring the awards. These awards celebrate local sporting achievement and recognise the Coast's elite and up-and-coming athletes. It also acknowledges those who have significantly contributed to the Gold Coast Sporting Community in the calendar year.
Cabana Bar & Lounge Manager, Tanja Meyer, was originally inspired to host the fundraising event after her boyfriend’s mother was diagnosed with the disease in 2015. “I am thrilled with the money we raised and was even more impressed by the support of the local community for this cause, with over 80 beautiful ladies attending the day’s festivities – everyone had a ball and really got behind it,” Tanja says.
The Gold Coast Sporting Hall of Fame is Queensland’s first dedicated sports museum and currently honours over 30 Gold Coast sporting champions, who have reached the highest level of sport whilst residing on the coast.

BOOK NOW FRIDAY, JULY 7 2017 FROM 11.45AM Since its conception in 2004, the annual Celebrity Sports Lunch at Southport Sharks has grown from humble beginnings of 170 people in attendance to the sold-out event of over 650 people last year. The team at Sharks pride themselves on the quality of food, beverages, entertainment and fundraising opportunities on offer throughout the day. The success of the event is a result of all departments at the club coming together to ensure guests are satisfied and entertained, while providing them with the opportunity to network, generate leads for their business or assist with fundraising for local organisations.
MEET THE FACES OF THE 2017 SPORTS LUNCH… Barry Hall — Sports Panelist Former professional AFL player for St. Kilda, Sydney Swans and Western Bulldogs, Barry is considered one of the best forwards of the modern era of football. In July 2011, he made AFL history by becoming the first player to kick 100 goals for three different AFL teams. Also known for his love of fast cars, the “wild man” is a colourful and welcome addition to the sports panel this year.
Sam Kekovich — MC He’s politically incorrect, brash and funny as hell. Sam Kekovich has been the MC of the Southport Sharks Sports Lunch since its beginning in 2004 and the media personality is back this year as our master of ceremonies. The former VFL hard man for the Kangaroos and Collingwood has become an Australian icon – famous for his deadpan humour, advocacy for Australian lamb and controversial rants on issues from football to politics.
Simon Illingworth — Guest Speaker A Former Detective Sergeant, Simon Illingworth was bashed, threatened and intimidated by bent cops and underworld criminals, all in the line of duty. His life gives dramatic insight into Melbourne’s gangland war and the ugly world of police corruption. Simon appeared on ABC’s Australian Story which won journalism’s Gold Quill, and his book Filthy Rat, is an Australian best seller. Simon has received numerous awards for bravery and leadership from organisations including Victoria Police, the Royal Humane Society and the Sir Vincent Fairfax Fellowship, as well as the Governor of Victoria. Simon is a Director of Ethical Strength, a professional speaker, a training provider in ethics, decision making and culture, and
a specialist in anti-crime, anti-corruption and ethical culture whose opinion is highly sought-after in TV and print media. He is also the creator of an ‘ethical farm’ as a best practice model to co-exist with organic farming. Dave Callan — Comedian Dave is the Irish born star of Triple J radio and original Rove cast member. He is also recognisable from his appearances on Spicks and Specks, The Comedy Festival Gala and The Adventures of the Good News Week and is currently a regular on Good Game on ABC 2. He has performed at the Edinburgh Festival and toured Britain, South East Asia, the U.S. and Australia. Dave is currently performing ‘The Psychology of Laughter’, a brand-new live show about a 100 year-old book he found in Edinburgh of the same name.

[OUR FRIENDLY NEIGHBOURS...] On top of the hill near Southport Sharks, you will find a renovated shipping container, creatively decorated by two graffiti artists and some of the friendliest baristas who know their coffee. Emily Glover is at Box Coffee Co every morning from 5am to open the doors and see the sunrise. Emily is a creative powerhouse - she can draw, play guitar,
create latte art, design and make jewellery, plus she has an eye for photography, which is often shared on Box Coffee Co’s Instagram.
“I've been working in Hospitality for about 15 years and in that time, I've never been able to say, ‘I love my job’...until now", Emily explains. "Working at Box the last year and a half has had such a positive impact on me. I’m a creative person and being able to incorporate that into my job has been really cool. I have been able to display the jewellery I make, as well as have my guitar to share with other musical coffee drinkers.” Kayla Malss has worked at Box Coffee Co. since it’s inception 2 years ago. A student at Griffith University, Kayla is also a creative wonder, channelling this into a marketing degree. Kalya explained, “Box is unlike any coffee shop I’ve ever worked in. My job has connected me to so many new people and has allowed me to experience people’s excitement, annoyance, heartbreak and all the rest!

Working so close to uni has definitely facilitated my studies and I’ve been able to apply certain aspects of my degree while being at work, which has made my job that much more interesting and enjoyable. It’s definitely been a positive experience."

Emily and Kayla both express that they don’t feel like Box is your average café, as it’s given them the opportunity to meet and connect with so many different people who day by day, coffee by coffee, share their stories with them, and vice versa. Box customers are our friends and we often get to have a coffee with them, rather then simply serving them and watching them leave. "We are always surprised by how one little coffee shop can create relationships between complete strangers, just because they have their coffee at the same time each morning," says Emily.

Artist of the Year, Amy Shark, with Southport Sharks Food & Beverage Manager, Adam Paterson
Southport Sharks and Cabana Bar & Lounge proudly sponsored the Artist of the Year category for the third year in a row on April 27 at Surfers Paradise beach. The finalists nominated in this category all displayed a high calibre of talent and truly epitomise the array of musical skill emerging on the Gold Coast. Local girl, Amy Shark, took home the award this year and performed a live rendition of her hit song 'Adore' (runner-up for Triple J’s Hottest 100) for audiences at Surfers Paradise main beach on the night. Other finalists for the category included Ella Fence and Benny D Williams, who have both featured on the stages of Southport Sharks, providing fantastic, free entertainment for the club's members and guests.

Amela is a singer/ songwriter from Brisbane with a beautiful indie-pop and folk sound. With over ten years’ experience in the industry, her influences include the likes of Bon Iver, Feist and Devendra Banhart. Amela’s new album, Somewhere in Between, was released on March 3 and features piano-driven ballads backed by trumpets, strings, clarinets and a synthesiser. Come Home, has already reached more than 28,500 views on YouTube, showing us that 2017 will definitely be an exciting year for the young artist.
A talented songwriter, filmmaker and producer from the Gold Coast, Amy’s single Adore was runner-up in Triple J’s Hottest 100 this year, resulting in it being in high rotation on commercial radio, as well as reaching over 2.4 million views on YouTube. People who attended the Gold Coast Music Awards this year were lucky enough to catch a live performance from the emerging artist, before she went on to wow audiences at the Groovin the Moo festivals this month and supporting wellknown band, Milky Chance on The Blossom Tour.
A Gold Coast local, Benny D Williams is known for his rich vocals, stylish strumming, beatboxing and sound layering, all making up a contagiously groovy sound. Combining traditionally earthy instruments and rhythm with sci-fi sounds and effects that the artist describes as “galactic voodoo”this mind-boggling sound has been mesmerising audiences all over the Gold Coast for years.
Nominated for both Artist of the Year and Album of the Year in the Gold Coast Music Awards this year, Driven Fear are a band of 5 from the Gold Coast’s Hinterland. During their 13 years of touring and recording music, the band have had the honour of sharing the stage with punk/ hard core royalty such as The Amity Affliction, Death Before Dishonor, Break Even and Pour Habit. Driven Fear’s fourth album Freethinker, was released in 2016 through Pee Records and is gaining critical acclaim for its aggressive honesty.
Taking home two awards at 2016’s Gold Coast Music Awards, Ella Fence is a talented performer and hypnotic artist. Her debut EP Wanderlust transcended cultural parameters by reaching the Top 20 on New York’s Breakthru Radio and the Top 10 on 4ZZZ Brisbane, whilst also featuring regularly on the national Triple J platform. Her latest project Dancer, is a collaboration with songwriter/ producer, Vinnie LaDuce (Ash Grunwald), which has led to performances in Germany, France, Canada, Norway, England, USA and Australia.

In a Southport Sharks first, a band will take over the main stage on both Friday and Saturday night, giving you a weekend full of entertaining music to revel in. Late for Woodstock are one of the coasts’ favourite bands reaching audiences both young and old with the sounds of yester-year. The Noosa locals formed in 1998 out of a passion for the iconic era of the 60s and 70s. With each performance, Late for Woodstock take audiences back to a time that spawned so many enduring classic rock legends, to recreate the essence of mankind’s most creative years in music. The band consists of lead vocalist, guitarist and harmonica player, Col Germano, lead guitarist and vocalist Paul Martin, bass player and vocalist Grant Byrne, as well as drummer and vocalist Tony Bell. Over the years, they have amassed an extensive playlist which includes not only classic hits from the Woodstock era, but also album track favourites from artists Creedence, Clearwater Revival, Led Zeppelin, Lynyrd Skynyrd, Pink Floyd, Jimi Hendrix, Bob Dylan, Neil Young and many more. A Gold Coast local and Southport Sharks team member, Dan Irwin is a singer-songwriter, who spent most of his youth surfing and jamming. Dan’s acoustic performances are a unique fusion of Pop/Blues with a set list of covers and originals. What’s in your music collection and who are your influences?
My influences are from mostly modern artists across different genres, with my biggest influences of the last 10 years being Sonny Moore (Skrillex), Ed Sheeran, John Mayer and Jack Johnson - I was lucky enough to share a surf with Jack this year at his local break in Hawaii. More recently, I'd say local artist Amy Shark. I used to see Amy playing around the place with her passion for original song writing and I was pleased for her recent Hottest 100 and GC Music Awards success. Flicking through YouTube always keeps me inspired. In the last few years, two Canadian artists I highly recommend are Lights (Siberia Acoustic album) and Daniela Andrade (Shore EP). Tell me about your music style and are you working on an album? My music style has been changing a lot lately from writing straight-up pop songs in my younger days, to adding a jazz/blues influence of late. I am currently working on a 5-song EP called 'Distraction' to be released this year. Where is the best place we can hear your music? Since launching last year, the Inner-Athlete Program at Southport Sharks Health + Fitness has been a huge success, with each round boasting noticeable transformations for participants. The program uses periodised programming techniques for proven results in body fat loss and lean muscle gain. During the 10 week program, participants have access to results-focussed training sessions lead by industry experts, regular
Body Composition Analysis, nutrition seminar, movement analysis, goal-setting workshop, marathon training and more. One of the many success stories so far is Fabricio Chaves, who lost 10 kilos and 9% body fat after just two rounds of the Inner-Athlete Program. We caught up with Fabricio to discuss how he smashed his fitness goals with the help of the program.

FIVE MINUTES WITH FAB: What made you decide to commit to the Inner-Athlete Program (IAP)?

I have been a Sharks member for a long time and I was struggling to work out in a way that worked for me. Then I found the IAP, which was the cheapest way to train in a group with good professional trainers. What results and benefits have you experienced so far? I'm feeling much better now with more energy and motivation to wake up early for morning training sessions. Since last October, my first round of IAP, I've eliminated 10kg and I dropped my body fat by 9%, which I’m very proud of. What’s your favourite part of the IAP? My favourite part is the experience to train with people of different ages and fitness levels. I have made good friends at the IAP like Chris Attard and his family. My favourite session is the outside training on Fridays with Chris Wessman - she is a great PT, always motivating the group! How do you stay accountable? The IAP consists of 10 weeks - when you have a deadline to see your results it makes it easier because you know your time limit to make the improvements you want in your body. What tips would you give to people starting the next round of IAP? Focus on your training, make your own achievable goals, eat clean, sleep well and research good foods or supplements for your goals. FOOTBALL REPORT The 2017 season has proven to be one of the toughest yet in the NEAFL Competition. The consolidation of the 10 team competition has seen the standard of football rise to another level. The four AFL clubs have set the bar very high again, which, paired with our growing injury list, is proving difficult to achieve our desired result. The Sharks suffered early season losses to very strong Sydney Swans and Brisbane Lions outfit’s but managed to get a much needed win over the Canberra Demons. We also had a severe early season blow with an ACL injury to Club Stalwart, Haydn Kiel, in Round 3. Hopefully we will see Haydn in Sharks colours again in 2018. On a positive note, Jack Anthony made his comeback in Round 4 from a neck injury suffered against Aspley in Round 10, 2016. The highlight of the season so far has been the form of some of our young recruits. Brandon Chadwick has played every game so far, Jack O’Shea has made and impact and Connor West has returned from an ankle injury and is playing some good footy. All these players have been recruited from Gold Coast QAFL clubs as we continue to develop young local talent and represent the Gold Coast in the NEAFL Competition. Off the field, the players and staff are looking forward to the upcoming Mid-Year Cocktail Party to be held in the Cabana Bar & Lounge. We are also looking forward to our Sponsors Day on Saturday July 22, which coincides with our home game against the Gold Coast SUNS. The Sharks are aiming to finish off the season on a really strong note so I hope to see many of our loyal members at the football over the next few weeks. More than just a
SPORTING PARTNERSHIP Southport Sharks has been a proud supporter of AFL for over 50 years and is the Patron Partner of the Gold Coast SUNS. In 2017 Southport Sharks in conjunction with the Gold Coast SUNS, launched a work placement program for AFL players. The first placement is being completed by SUNS player, Keegan Brooksby. A mature-age ruckman, Keegan was recruited to play primarily in the NEAFL, but snagged eight AFL games in
his second season, playing a variety of roles. He spent extra time developing as a key defender, which was crucial during the middle of the season. His willingness to learn and show versatility, made Keegan a prime candidate for the Sharks 2017 internship. “I was excited to be exposed to a business setting where I could gain an understanding of how a large business operates, especially a club like Southport Sharks," he explains. "Because of the diverse range of members and people working at the
Sharks, I have gained an understanding of best practice for communication strategies (both internally and externally) ensuring members especially, are informed of what’s happening in the club.” Visiting the Southport Sharks offices once a week for ten weeks, Keegan learned multiple aspects of the club’s operation by interacting with the senior management team, members and guests. “Elite sport professionals are becoming very aware that at some stage they will need to transition to another career after retirement," explains Southport Sharks

HR Manager, Ann-Maree O'Neill. "The program we have developed with the GC SUNS allows people like Keegan to identify future career pathways. Sharks is a really diverse business so we can provide a good snapshot of the range of jobs that could be a future career choice. This internship has been beneficial
for myself also, as Keegan has been able to give me an insight into effective ways to communicate with Gen Y’s.� At the conclusion of the ten week program on June 14, Keegan will present his findings to the management team, allowing Sharks to gain a unique perspective of the club from the SUNS defender.
Keegan believes he has gained an invaluable insight into each department, giving him an understanding of the pathway he wishes to pursue for his future.

Crispy Tasmanian Ocean Trout

WITH Vongole, Fennel & Tomatoes

INGREDIENTS 4 x 150gm Ocean Trout portions
500gm Vongole pasta
2 Tablespoons Olive Oil
1 cup Dry Sherry
2 cloves Garlic, crushed
2 med Tomatoes, diced
1 Brown Onion, diced
1 cup Flat Leaf Parsley
1 Tablespoon Fennel Seeds, toasted
Salt & Pepper to taste 1 cup Micro Cress
METHOD •• Place one tablespoon of olive oil in a heated frypan. Once hot, add ocean trout, skin side down. Hold each portion down for 30 seconds using a pallet knife to keep skin side flat. Cook for several minutes until skin becomes golden and crisp. Turn and cook other side, keeping the centre moist and glossy. Remove from pan and set aside.
•• Remove from heat. Add diced tomatoes and parsley. Season well.
•• Add one tablespoon of olive oil to heated saucepan and add garlic. Cook for 20 seconds, then add onions and fennel seeds.
•• Present the crispy skin trout with the steamed open vongole, a couple spoonful’s of the broth and a scattering of micro cress.
Cook for several minutes until the onions become translucent, then add the vongole and sherry. Bring to boil, place lid on and cook for several minutes until all the vongole have opened.

Lara Beazleigh joined the Sharks Events Centre team in 2016 as Events Coordinator, bringing with her over 15 years’ experience in the global hospitality and events industries.

Where did you grow up? I grew up in the U.K before moving to Australia in 2012 with my fiancé Tom. We trialled Sydney for a few months before deciding to call the Gold Coast home, as it was more affordable.
What made you pursue a career in the events industry? I originally fell into it but as the years went on, I realised I was quite good at my job due to the calibre of different events I had worked on and coordinated. What do you enjoy most about your role? Definitely the variety but I particularly love working on the larger events at Sharks such as the MMA Fight Nights, due to both my love of boxing and martial arts, but also because it’s such a large production to coordinate. What does your average day at work look like? Usually I manage enquiries and site tours – showing off all the great event spaces at Sharks! I then work on the event proposal and manage logistics/ catering, etc. Congratulations on your recent engagement! Do you think your event experience will assist in the planning of your own wedding? My fiancé Tom, expects it! It would definitely help if we were getting married on the Gold Coast due to all the contacts and vendors I know, however, we have decided to get married in Bali with friends and family from both the U.K and Australia. You mentioned boxing, any other secret hobbies? Yes, and I have been competing on and off since I was 14 at an amateur level for fun. Tom and I have also recently discovered Yoga. It’s great for the tight muscles you get in your neck and back from boxing. Horse riding is another love of mine.

Stay true to yourself. Peruse magazines and Pinterest to create a look-book of things you like (avoid external influences!). You will start to see patterns and consistencies emerge that is reflective of your theme/style/ colour palette. Use this information when meeting with your event coordinator as a foundation for your wedding’s style.

If you wish to organise some of your own suppliers for flower arrangements, etc, tradeshows and wedding expos are a great place to start – look for people that support both your vision and budget.

To trend or not to trend – remember your wedding memories will last forever! While the current trend might be neon colours, rose gold or mermaid dresses – ask yourself, do you have any similar items of this trend at home and genuinely like the look and feel? If not, maybe the trend isn’t for you.

Discuss food and beverage options with your event coordinator and consider factors such as, have guests travelled to attend and already spent a significant amount of money? While there is no set formula, a good rule to follow is the value of the dinner equals the value you expect guests to return via gifts/wishing well.

Consider everlasting moments – once the big day is over, it is the photographs that lasts forever. Consider having two photographers on the day - while the cost may be more, it will give you a backup if you aren’t happy with one photographer and will also ensure all key moments with the guests AND wedding party are captured. Remember to breathe and enjoy the process!

An explosion of micro distilleries, gin bars and the increase of boutique gins in recent years indicates a definite trend emerging. Unlike its odourless, more popular cousin - vodka, which seemed to hog the limelight of the Nineties and Noughties, gin is finally getting its day in the sun, with more and more punters discovering its spicy or fruity undertones. Industry leaders put the trend down to an increase of mixologists and bartenders experimenting with each brand more in their signature cocktail lists. The liquid is easy to manipulate and play with, as it is usually made from a grain with complicated botanical notes paired with strong juniper flavours – perfect for layering with floral or citrus elements. In Northern New South Wales, Husk Distillers are currently enjoying a boom in product demand, after actress Margot Robbie was pictured on the Gold Coast holding a glass of Ink Gin, a blue gin that turns pink when mixed with tonic due to the infusion of the pH sensitive, butterfly pea flower.
