AT A GLANCE with the CEO
With the football season over for another year, congratulations must go to all involved. The combined efforts of players, staff and volunteers, lead to Sharks making it into the NEAFL finals for 2015. Special recognition must go to Jason Cotter, who is leaving his post as Football Manager in addition to his role as a Director on the Southport Sharks board, following a truly impressive association with the club. Jason has been a wonderful servant of the club for more than 30 years and his record both on and offfield is unmatched in the 60 years of our club’s existence. As our football players now take a much earned break, the club is showing no signs of slowing down. This year we have a trifecta of fantastic Melbourne Cup events that will be sure to see a great day out for everyone. There are also special events for Oktoberfest, Halloween and Movember to look forward to this spring. In addition to having a varied range of Christmas packages, Sharks Events Centre will once again host its annual Corporate Christmas Ball on December 5. Make sure you book tickets early, so you don’t miss out. Now is also the time to enquire about holding your own festive season parties with us. Finally, we are proud to share that Sharks members and staff will have collectively donated $100,000 to Gold Coast Hospital Foundation by the end of November. In memory of Wally Fankhauser... 20 years on In this edition of BITE we would like commemorate the legacy of the late Wally Fankhauser. It was his $2 million donation that set up the move of the club from Owen Park in Southport to a ground at Musgrave Hill, one which now bears the name of Wally Fankhauser Sports Reserve. There is no question that, without his supreme generosity, what stands on the corner of Olsen and Musgrave Avenues might never have been. Wally contributed greatly to the club in his 23 year tenure as Vice President. 3/3/1922- 11/12/1995

BENEFIT S FUND NEWS Southport Sharks Juniors, which is a 2015 charity partner, maintains junior sides starting at Auskick and working its way through to under 18’s and has in the vicinity of 350 junior participants. In addition to the purchase of premiership jerseys, funds were allocated to the junior AFL club this year for new outdoor furniture. Committee member Carmen Cameron says that prior to the purchase of the furniture, which included six tables and 24 stools, people weren’t standing near the canteen and enjoying the footy atmosphere. “Since putting it all in our canteen sales have increased exponentially,” she says. “All the families hang around. All the players hang around. It’s become a real community hub for us.

Melbourne Cup Day has been observed in Australia since the first race was held at the Flemington Racecourse in Victoria in 1861. Universally known in Australia as “the race that stops a nation”, almost all Australians stop to watch the race at 2pm (AEST) on the first Tuesday of each November. Even those who don’t usually bet, try their luck with a small wager or entry into a sweep. In a race with as much history as the Melbourne Cup, you can bet that some fascinating records have been set, in addition to a few trends made when it comes to winners. A word of caution to those of you who like to have a dollar on the 100-1 outsider; only three horses have won at triple-figure odds: Old Rowley
TIP: ENSURE YOUR PICK HAS ALREADY WON A RACE OVER 2,400M (THE MELBOURNE CUP IS 3,200M, AND SOME HORSES JUST FALL TO PIECES OVER THAT DISTANCE).

While theoretically the distance of the race should make the barrier draw meaningless to the final result, there have historically been a few barriers that have done particularly well. Barrier 11 is historically the most successful Melbourne Cup barrier producing seven wins over the years. Other barriers with good numbers producing six winners each are five, 10 and 14. Cocktail sausage mummies Makes 24 INGREDIENTS: 24 beef chipolata sausages 1 egg, lightly whisked 4 sheets of puff pastry American mustard, to decorate Tomato sauce, to serve METHOD: Preheat oven to 200C and line baking trays with baking paper. Preheat grill on medium-high. Cook sausages until golden brown and cooked through. Remove from grill and set aside to cool.
Cut the pastry into 1cm strips and lightly brush with a little egg. Wrap 2-3 pastry strips around each sausage to resemble bandages, leaving a little gap at one end for the face. Trim and discard excess pastry. ake in preheated oven until golden B brown and puffed. Remove from oven and set aside to cool slightly. Use the American mustard to decorate the mummies with eyes. Serve with mustard and tomato sauce

Cabana Bar & Lounge Manager Tanja Meyer, loved the lifestyle on the Gold Coast so much when she came here as a high school exchange student, she decided to stay in Australia permanently. Originally hailing from Westerroenfel, which is in northern Germany, Tanja became a part of the Southport Sharks team in November last year. “I enjoy working with our guests and making sure that they are having the best time possible,” she says. With a Diploma in Hospitality and Events Management, Tanja’s previous experience as an event coordinator, chef, waitress and bartender means she is acutely familiar with all aspects of the hospitality industry and is well-equipped to handle her diverse role. Tanja is excited for the chance to share a taste of German culture with members, with a range of Oktoberfest themed specials available at Cabana Bar & Lounge this October.

Artist of the Year Following 29 nominations, Karl S Williams was announced as Artist of the Year at the Gold Coast Music Awards on July 22. Southport Sharks and Cabana Bar & Lounge were proud to sponsor the award, whose finalists epitomised the incredible depth of talent on the Gold Coast. The finalists included Felicity Lawless, Hanlon Brothers, Jamie Lee Wilson and Casey Barnes. “The judges who had to assess the nominations had an extremely hard task, as they are all exceptionally worthy artists,” Southport Sharks Chief Executive Officer Dean Bowtell says. Mr Bowtell says the awards were important in recognising the unique music scene on the Gold Coast and building its strength and diversity.
5 MINUTES WITH KARL S WILLIAMS The music of Karl S. Williams is born of a desire to connect with the universal soul. His sound is influenced by the blues of the Mississippi delta but also spirituals, country gospel, Appalachian banjo tunes and swampy soul. How did it feel to win Artist of the Year? It was an immense honour and I really feel so humbled by it. For a few days after my mind kept returning to the awards night and I was shaking my head in disbelief. I just hope I can prove

worthy of such an honour in times to come. Where are you based at the moment and how has the first half of 2015 treated you? I am currently based in Austinville in the Gold Coast hinterland. It is nice to be out in the hills where it’s quiet while I’m working on the next album. The first half of 2015 has exceeded all expectations and I am very encouraged that the hard work of the previous year has led to some great opportunities this year, perhaps most incredibly the chance to play at Bluesfest. What has the reception to the additional tracks on the re-release of your debut album Heartwood been like? It has been wonderful, I am so proud that an album I made has been able to have such a lifespan and continues to find new fans all over the world! Re-releasing the album on the record label Footstomp really gave it the extra power it needed to come alive and the new tracks were very well received. Time Bomb made it into rotation on Triple M! What advice would you give to aspiring musicians thinking of pursuing a career in the craft? Just to keep going! As long as you have a voice or two hands to clap together you can make music so don’t let circumstance hold you back and anytime you perform, give everything.

Now is the time to start implementing changes into your eating habits and exercise routines, so you can look and feel the best version of yourself this summer. HERE ARE FIVE TIPS TO HELP YOU GET STARTED.
1.
Set realistic goals for yourself and measure them. It could be to jog a certain distance, increase weight or reps in your training, lose x amount of kilograms or even to try a different class each week.
2.
Boost your cardio to lose those extra kilograms. Try alternating from low-moderate intensity intervals to very high intensity intervals to get your heart pumping. You can use this technique on any machine or during any cardio training.
3.

Football Report 2015 SEASON
Well in the blink of an eye our football season has finished and without sugar coating anything, we as a collective were all disappointed with the end result. We certainly were proud of the gains made in the last month and to sneak into the finals was a credit to all concerned. Importantly we need to learn from the season and take on board that the competition is only getting better in terms of standard and it is of the utmost importance now to thoroughly review our football operations and do everything we can to ensure we learn from our season just gone. We have already commenced review meetings with our coaches, including our high performance coaches, and our entire playing list. Key areas to review we feel are as follows: • Club off-field structure • Pre-season programme • Club culture • The balance of players fitting in training/playing requirements with their full time jobs, studies, etc. • The playing list and any additions we feel can assist the group This will be about how we can do things better and identify areas that can make a difference to our overall programme. This represents a fantastic challenge for us as we continue to represent the club and the Gold Coast region in the NEAFL competition. We are also very conscious of providing a talent pathway for all Gold Coast players who wish to pursue their AFL football dream as well as retaining and developing local young talent within the NEAFL competition. Discussions so far with coaches, players and the football committee have all been very positive with an overriding view that we need to step up for the 2016 season. We thank the club itself for its unwavering support to our football team and the junior club, along with all our sponsors, supporters, volunteers, coaches and players. We look forward to season 2016 with great anticipation. Also, a special thankyou to our juniors and the junior committee along with Brent Kelly, all of whom have been wonderful to work with over the season just gone. As for me, it’s time to explore new horizons after ten and a half years in the footy manager’s chair, along with another twenty years prior as coach and player extending back to 1983. It has left me with some wonderful memories. I wish the club well in future football endeavours. Jason Cotter Football Manager

MILESTONE MEN This season there were a number of exciting player milestones and achievements. Special congratulations go to Jason Burge for reaching the 150 games mark with Sharks and Wayde Mills for playing 100 games.
JASON BURGE Jason Burge became a life playing member of Southport Sharks when he played his 150th senior game in Round 20. The midfielder has played for Sharks for 20 years after rising through the junior ranks to be an integral part of the club. Burge, 28, made his senior debut at 16, won two flags in 2006 and 2008 before a twoyear stint at VFL club Port Melbourne. He returned home to win back-to-back best-and-fairest awards in 2012 and 2013 and captained the club last season.
WAYDE MILLS Wayde Mills made his 100th appearance for Sharks in the vital Round 21 clash against Eastlake. Mills arrived at Sharks as a 16-year-old via the Coolangatta Juniors. In 2005 he was drafted to the Brisbane Lions at pick 25, where he played 16 senior games. Mills then went to South Australian Club Glenelg, where he was named in the SANFL Team of the Year for two years back-to-back.

Rosé is Ripe FOR THIS SEASON
Usher in spring with a rosé…the wine, not the flower.
Rosé wines range in colour from the palest pink to an alluring, ruby hue. It gets its colour through pressing red grapes and only giving them short contact with the skins. The longer the skins and juice are left in contact, the deeper the colour. With the body of a red wine, but the lightness and fruitiness of a white
wine, rosé can range from bone dry to quite sweet, making it a drink that can cater for many tastes depending upon the wines character. Rosé wine can be made from a single grape variety or as a blend. Best consumed slightly chilled, it is a versatile wine food and wine pairing option, excellent with blue cheese, seafood, duck, rare, thin steak or strawberries.
Here are three selections you should try this spring. Kalleske Rosina Rosé Rosina is an Australian Certified Organic Barossa rosé that is a vivid cherry red in colour. There are crisp flavours of red berries, sweet herbs and strawberries. Restrained grape sweetness and balanced acid are harmoniously complemented with a textural richness.
