New wind projects will boost B.C.’s affordable clean-energy supply
BC Hydro has selected nine energy projects through its 2024 call for power that will supply clean, affordable electricity to serve B.C.’s growing communities and housing needs, as people and businesses choose clean energy in their lives, homes, vehicles and businesses.
“Clean and affordable electricity is key to powering economic growth and unlocking private-sector investment that creates thousands of good jobs here in British Columbia,” said Premier David Eby. “These new projects will significantly expand our electricity supply – making B.C. a cleanenergy superpower, while ensuring rates are affordable for people and for industries looking to expand.”
BC Hydro received a strong response to its call for new renewable power-generation projects, and through its evaluation process will award 30-year electricity purchase agreements to nine wind projects. These projects will provide nearly 5,000 gigawatt hours per year of electricity, enough to power 500,000 new homes, boosting BC Hydro’s current supply by 8%.
The development and construction of new clean-energy projects, in response to the call for power, will generate between $5 billion and $6 billion in private capital spending throughout the province.
“We need these new energy generation projects urgently to meet growing demand
for power and accelerate our efforts to build a prosperous and inclusive clean economy,” said Adrian Dix, Minister of Energy and Climate Solutions. “Now that the projects have been selected, we’re going to work together with BC Hydro, First Nations and proponents to get these projects built quickly, responsibly and efficiently, and get those turbines spinning.”
To ensure the projects are completed as efficiently as possible, the Province intends to exempt these wind projects and all future wind projects in B.C. from environmental assessment, while ensuring First Nations interests and environmental mitigations are protected and maintained.
“It’s clear there are enormous opportunities to generate clean electricity through wind, and that we need to do more to get larger projects online faster,” said Tamara Davidson, Minister of Environment and Parks. “That’s why we are announcing our intention to exempt wind-power projects from the environmental assessment process, with a rigorous provincial permitting process in place, while ensuring First Nations are full partners in our shared, sustainable future.”
BC Hydro engaged extensively with First Nations on the design of the call for power, and included a requirement that projects must have a minimum 25% equity ownership held by First Nations. Eight of the nine successful energy projects will
have 51% equity ownership.
This represents $2.5 billion to $3 billion of ownership by First Nations in new renewable energy projects in the province.
The cost of wind has dropped significantly over the past decade, and these new projects align with the trend of renewable costs decreasing. When adjusted to today’s dollars, the average price from the successful projects in this call is about 40% lower than BC Hydro’s last call for clean power in 2010, reducing rate impacts and keeping electricity bills affordable for people and businesses.

Adding these new wind projects will diversify BC Hydro’s generation mix. Reservoirs store water and allow BC Hydro to ramp production up or down almost instantly, providing a reliable backup when the wind is not blowing.

Along with the call for power, BC Hydro is taking a number of actions to ensure it will continue to meet the growing demand from population growth and housing construction, business and industrial development, and transportation.
Together, these actions will power more than one million new homes in the coming years. This includes: adding the Site C hydroelectric dam, which will power 500,000 homes; investing in energy efficiency, which is expected to result in 2,000 gigawatt hours per year of electricity saving or enough to power 200,000 homes; as well as renewing existing electricity purchase agreements and exploring the use of utility-scale batteries.

2025 Land Rover Defender 110 P300 Review. Superb All the Way!

The 2025 all-new Land Rover Defender is back with big improvements more comfort, technology and of course with its legendary off-road capability. The design still showcases that classic Defender trope; the upright, squared-off boxy shape, and classic profile. There are some hints of its military roots,. It looks expensive and premium focused.
For 2025, the Defender is offered in variety of configurations. There is the Defender 90 two-door version (Also available with a powerful V8 engine.), or a four-door two-row seat model Defender 110 (As tested) and the longwheelbase three-row seat Defender 130. Canadian pricing ranges from $72,700 to $191,000 MSRP depending on model and options selected. For 2025 there is newly available scratchresistant and self-healing; matte paint protective film and new Resist and Resolve Interior with faux-leather and woven textile upholstery.
Engine choices include a base 2.0-liter turbocharged I-4unit with 296 horsepower and /295 lb-ft of torque for the Defender P90 and P110. There’s also an available 395-hp 3.0-liter inline-six with an electric supercharger, a turbocharger, and a 48-volt hybrid system. Real performance fans can opt for a
supercharged 5.0-litre V8 engine with a mighty 518 horsepower in both the 90, 110, 130 and a forthcoming high performance Octa version. Transmission is an eight-speed ZF automatic and two-speed transfer case that provides locking differentials and a set of low-range ratios ideal for towing or off-roading when finesse is required. The Defender has 11.5 inches of ground clearance and the amazing ability to wade through 35 inches of water! Optional off -road equipment is excellent and includes Dynamic Stability Control (DSC), Hill Launch Assist, Hill Descent Control (HDC), Low Traction Launch , Cornering Brake Control (CBC), Electronic Traction Control (ETC), Roll Stability Control (RSC), Electronic air suspension, and the afore mentioned Twin-Speed Transfer Box (High/Low Range). The Defender 110 has air suspension as standard along with coil springs. An available tow package allows the Defender to tow 8,200 pounds.
Interior wise , the quasi-military style means exposed rivets in the door panels and a cool magnesium beam that runs the full width of the dashboard that’s also a structural detail. Materials, fit, and finish are top notch, and interior room and comfort is exceptional.
It is great mix of luxury , utility, and comfort. the white seats and trim in our tester looked superb.
The Defender’s dashboard has a 10inch touchscreen infotainment system that runs a new Land Rover Pivi Pro system; a larger 11.4-inch display is optional. Both 10- and 14-speaker Meridian stereo systems are optional also and top-flight Defenders receive a digital gauge cluster and a head-up display. Apple CarPlay and Android Auto are both standard, as is an indash navigation system, a six-speaker stereo, and an onboard Wi-Fi hotspot.
In terms of interior space, the center console can be flipped back to create a jump seat between the driver and passenger, on some models allowing for a three-across bench seat. The rear seats can be folded to open up a much larger cargo bay.
All Defender models come with driver assist and active safety features including front automatic emergency braking, rear cross-traffic alert, blind-spot monitoring, lane keep assist, and adaptive cruise control. An array of sensors and cameras around the vehicle make it easier to maneuver through tight trails or parking lots.
On the road, the Defender 90’s engine is inherently smooth and urgent with a nice turn of speed , taking about six
seconds to hit
100 km/h. Steering, ride, and handling will be familiar to those who own Land Rovers – a little body roll, but not too intrusive. This is a vehicle that manages itself with aplomb, whether on the highway, the urban jungle and of course in its element while off-roading or trail hopping – nothing can phase it. The short overhangs help off-road with impressive approach and departure angles (38 and 40 degrees respectively for the 110). Fuel efficiency is rated at km/100 - 13.2 city, 11.9 highway, and 12.6 combined.
To sum up, the off-road capabilities are off the chart and you can customize it with numerous options.The downsides are few, the rear hatch door is heavy and with its spare wheel carrier opens toward the curb. Saying that, Land Rover have knocked one out the park with the Defender 110. It can end up very expensive when fully optioned, but worth it for a true off-roader wrapped up in luxury and class. Matthew Fisher
Constable Fisher has served Canada with Canadian Border Services and the RCMP for 7 years and 5 years, respectively. He is currently the firearms expert for the Chilliwack, Agassiz, Hope and Boston Bar RCMP detachments alongside his regular duties. He has been credited with playing a leading role in the withdrawal of a criminal motorcycle gang’s withdrawal from the province and last year, he was successful in removing 2kg of fentanyl from the community. His service is truly exceptional and inspiring.
Shirley Hilton
Shirley Hilton is a long-time resident of Mission and entrepreneur. Shirley and her late husband John started their own business in 1956 called Coast Plastering which rolled into Coast Construction LTD and Whatley Estates a decade later. She has made significant contributions volunteering in several community groups and serving the Fraser Valley through her longstanding building and engineering construction company. She has been a strong advocate for aid and assistance for those in need, and for her years of service was recently named a City of Mission Pathfinder in 2023.
Lukas Steele
Lukas Steele is the Logistics and Operations Officer for St. John Ambulance in the Central Fraser Valley. During his tenure, he has been responsible for the coordination of first aid volunteers, medical supplies, and vehicle logistics throughout the Fraser Valley’s large-scale events. His strong dedication to public safety and community service has ensured the operational success of the Abbotsford International Airshow, Candlelight Parade, Mission Fest, Abbotsford Berry Festival and so much more. His exceptional work is the reason first aid in the Fraser Valley is at the high standard it is today.
Wayne Reardon
Wayne Reardon served in the Royal Canadian Navy beginning in 1967 and ending in 1996. During his service, he served in the ranks for eleven years and as an officer for eighteen years in the Reserves. He served aboard several naval vessels in Halifax and Esquimalt and in the arctic at CFS Inuvik and CFS Alert, the most northerly inhabited place on earth. After leaving the navy Mr. Reardon was employed as an addiction’s counsellor for three years at Kinghaven Treatment Centre in Abbotsford BC and then as a registered psychologist for eighteen years with the Correctional Service of Canada. During his employment, he facilitated intensive treatment programs for violent and sexual offenders as well doing individual counselling with inmates and writing psychological treatment reports for the Parole Board of Canada. Lastly, he worked as a sessional instructor teaching first-year psychology at Simon Fraser University for two years and substance abuse courses at Fraser Valley University for three years. He has demonstrated
exemplary service to Canada and to our community.
Patrick Michel
Patrick Michel is the former Chief of Kanaka Bar Band and current rebuild Director for Lytton First Nation. He lost his home in the 2021 Lytton fire, and since then has been focused on an inclusive community recovery, emphasizing sustainable rebuilding practices that honour Indigenous knowledge and modern technology. As rebuild director, he assesses and remediates contaminated sites to rectify past resource management issues. Michel is a strong advocate and voice for Lytton and is working to create a resilient future for the Fraser Canyon community, ensuring a safe environment for all future residents and visitors.
Jagjit Toor
Jagjit Toor is a dedicated community supporter whose contributions span decades. A pioneer in video rentals & sales with the launch of Video Station in 1981, he has consistently worked behind the scenes to support numerous causes both financially and physically. Since taking over Duke’s Pub in Greendale, he has transformed it into a hub for community events and charitable fundraisers. During the COVID-19 pandemic, Jagjit provided food and support to staff and community members, and he continued his efforts through the 2021 floods, embodying a steadfast commitment to helping those in need.
Valerie Billesberger
Valerie Billesberger has been Mission’s Community Archivist since its inception in 1989. She spear-headed the project to establish an administrative structure for the operation of the archives based upon internationally accepted archival principles and procedures. Through her efforts, and her numerous dedicated volunteers, she has been the key in preserving Mission’s heritage for future generations. The Community Archives houses vivid, firsthand accounts of the area’s storied past, dating from the 1890’s. It is a treasure trove of information documenting over 100 years of the community’s history, that without Valerie’s and her team’s dedication in preserving, would have been lost forever.
Norman MacLeod
Norman MacLeod has devoted 36 years to the fire service, retiring as Deputy Fire Chief on August 21, 2024. He currently serves as the BC and Yukon Territory Chair for the National Firefighter Relations Committee. Norman’s service extended internationally, as he was deployed to Nepal in 2015 and led his team during the 2023 earthquake response. He has also been deployed 14 times to train firefighters in developing countries. In addition, Norman has volunteered with Muscular Dystrophy Canada for 30 years and participated in the Cops for Cancer, Tour de Valley four times. His career exemplifies service to Canada and the community.
Darren Oike
Darren Oike, recently retired Fire Chief of the Lillooet Fire Department, served the community for over 30 years. Notably, during the 2021 Wildfires, he played a leading role in local firefighting efforts. Darren was honored with the Fire Services Exemplary Service Medal in 2018, recognizing his 20 years of dedicated service. In addition to his fire service, Darren has contributed to Lillooet through projects like the East Lillooet Memorial Garden and by serving as the community’s Emergency Social Services Coordinator. His long-standing commitment has made him one of Lillooet’s most respected and influential leaders.
Rick McKamey
As co-chair of the Hatzic Watershed stewardship program, Rick has worked to preserve the region in the areas of environmental programs. Rick is a descendant of the Matsqui First Nation residing on Leq’á:mel First Nation (LFN) Lands with his wife Susan, a member of the LFN. He is father to 4 children, grandfather of 12 and great-grandfather of 3. Rick is a noted Elder and Knowledge Keeper of the LFN with deep history, experience, and involvement of the ecosystems his Nation’s hold to standards of the Earth Mother. Presently he works for his community in development of the Guardians programs, is a strong voice and member of the Canadian Guardian Network and most recently representing the BC Wide Guardians Network. His passion and traditional values, blended with his cultural, historical, and traditional knowledge as an Elder
has supported his Nations efforts in developing a formidable Guardian and Monitoring Program within their Traditional Territory. His blended knowledge has had him deeply involved in the EMCR atmospheric river initiatives delivering his Nation’s message and his expertise in mitigating challenges faced by the changing climate impacts in the mid slopes of their territory. His traditional knowledge coupled with western education drives his passion to increase climate change awareness, adaptability, and resilience.

Gerald Basten has dedicated 40 years of service to the Agassiz Fire Department, currently serving as Fire Chief. His leadership was particularly evident during the 2021 Atmospheric River floods, where he led his team in rescuing 300 people trapped between two landslides. As an advocate for his department, Gerald has worked tirelessly to ensure it has the equipment and resources needed to protect the community. His efforts recently led to the opening of a new Regional Fire Training Centre in Agassiz. Gerald’s unwavering commitment to fire service and emergency management has made him a cornerstone of community safety.
Damon Matkovich
Damon Matkovich has dedicated over 25 years to coaching hockey in Mission, significantly impacting the development of youth athletes. His work as a U6 coach has been crucial in guiding and inspiring young players. Damon also runs mentorship and training programs that play a key role in developing future parent coaches.
His dedication extends beyond hockey, as he has volunteered thousands of hours to Minor Hockey and Lacrosse in Mission. In recognition of his contributions, the Junior Hockey Coach of the Year Award was recently renamed in his honor. Damon exemplifies excellence and a strong commitment to community service.

Wallace Mah’s career in local government is defined by impactful leadership and innovation, with over 30 years dedicated to public administration. Currently serving as CAO for the District of Kent, Wallace continues to champion visionary goals and community-building initiatives. Among his proudest accomplishments in Kent are completing the Breakwater project and installing much-needed crosswalks to enhance pedestrian safety, as well as working closely with local First Nation communities. Wallace encourages young people to explore careers in local government when looking at post-secondary schooling. “Opportunities in local government often go overlooked,” he says, “but serving the public is deeply rewarding.”

Nelson Drozdowich has been a dedicated Abbotsford resident since 1962, known for his decades of philanthropy. He raised over $100,000 for at-risk youth at Cyrus Centre and participated in the “Leap of Faith” skydiving event for 12 years. For 32 years, he has spread joy playing his harmonica for the Salvation Army Christmas Kettles and recently began volunteering with the Abbotsford Hospital Auxiliary. Even in his

Samarpal Brar is a lifelong Mission resident and community leader, known for his entrepreneurship through Loyal Driving School. He is a primary founder of the Mission Punj-aab Cultural Club, where he plays a key role in promoting cultural understanding and community engagement. The club bridges Indian and Canadian cultures in Mission by hosting public events such as Vaisakhi and Diwali, as well as annual fundraisers for local charities and initiatives. Alexander MacDonald, known as Sandy, dedicated over 41 years to the Canadian Armed Forces, retiring in 2012 as a Master Warrant Officer. 155 British Columbians lost to toxic-drug supply in October 2024
Preliminary reporting released by the BC Coroners Service (BCCS) finds that 155 people died from unregulated toxic drugs in October 2024.
While this represents the lowest monthly number of deaths from drug toxicity since September 2020 in British Columbia, the risk of harm and death remains high. Throughout the province, 1,925 people have died from unregulated drug toxicity in 2024. This is a 9% decrease, representing a significant decline in the number of deaths, compared with the first 10 months of 2023 (2,107 deaths). October’s data equates to about five deaths per day. The BC Coroners Service does not have the investigative data to suggest why this decrease has occurred, though it is consistent with reporting from other jurisdictions and BCCS is working with partners to understand this further.
Unregulated drug toxicity remains the leading cause of unnatural death for people in British Columbia aged 10 to 59, and accounts for more deaths than homicides, suicides, accidents and natural disease combined.
Additional findings from the latest report include:
no deaths recorded in October due to unregulated drug toxicity for those under the age of 19;
half of the deaths reported were people between the ages of 30 and 49;
females accounted for 22% of deaths over the course of the month and in 2024, the rate of death among females is 20.6 per 100,000 people, more than double the rate of 9.2 five years ago (2019);
males accounted for 78% of deaths in October, up from the year-to-date figure of 74%;
the two primary drug types detected in decedents who underwent expedited toxicological testing in October were fentanyl (87.1%) and stimulants (80.7%);
by health authority, Vancouver Coastal had the greatest number of unregulated drug deaths (48), followed by Fraser (43);
Vancouver had the highest number of unregulated drug toxicity deaths during the month (39), followed by Surrey (16), then Greater Victoria (nine).
Note that the data is preliminary and subject to change as additional toxicology results are received and investigations are concluded.

In 2023, British Columbia experienced its most destructive wildfire season on record, leading to widespread evacuations, loss of personal property, and damage to critical infrastructure. This follows severe wildfires experienced in 2022 that threatened communities throughout every region of the province. Additionally, in the spring of 2023, communities across British Columbia also experienced flooding and landslides.
Today, the Honourable Harjit S. Sajjan, President of the King’s Privy Council for Canada and Minister of Emergency Preparedness and
Minister responsible for the Pacific Economic Development Agency of Canada, announced payments of over $148 million to the Province through the Disaster Financial Assistance Arrangements (DFAA) program, to assist with response and recovery costs associated with the wildfires in 2022 and 2023, and the floods in 2023.
When a large-scale natural disaster happens, the Government of Canada provides financial assistance to provinces and territories through the DFAA program. Through this support the Government of Canada covers eligible disaster response and recovery expenses that have been submitted by the province or territory and that exceed what they could reasonably be expected to bear on their own.
Extreme weather events and natural disasters are a growing threat to the safety and economic stability of Canadian communities. Highway contractors awarded for community contributions
Contractors that build and maintain British Columbia's transportation infrastructure have been honoured for their approach to service and innovation, while helping people and goods stay on the move.
The B.C. Transportation Contractor of the Year awards celebrate achievements in construction, road and bridge maintenance, safety and community service.
“These awards are a spotlight on the tremendous contributions that construction and maintenance contractors make to life in British Columbia,” said Mike Farnworth, Minister of Transportation and Transit. “By supporting our world-class highway system, they keep travellers safe, our communities connected and our economy strong. The stories behind this year’s winners point to the entire sector’s commitment to public service, effective partnerships and excellence in road construction and maintenance.”
Bridges and Structures
Coquitlam Ridge Constructors Ltd. (CRC), an ECV Group Company, received the Bridges and Structures award for its critical work to restore Highway 1 after 2021’s floods.
The new three-lane bridge at Falls Creek is named CəXʷ Cixʷ (CheckChow), reflecting a partnership with the Nlaka’pamux Nation and neighbouring communities, and the Province’s commitment to climate-resilient infrastructure that respects Indigenous heritage. This partnership ensured lasting benefits by providing opportunities for local Fraser Canyon businesses and
Indigenous workers, through direct project employment and hiring local Indigenous businesses and equipment. Respecting the land’s cultural significance, the project’s environmental stewardship included innovative water collection methods during drought conditions. The team adapted to challenges, such as wildfires and extreme weather, working without safety incidents and finishing the bridge on time and under budget in June 2024.
Paving
Emil Anderson Construction (EAC) received the Paving award for its work from the Elkhart brake check to John’s Creek on Highway 97C east of Merritt. The company exceeded standards for design aspects like asphalt quality and created an exceptionally smooth riding surface. The project’s safety focus included comprehensive training for new staff. EAC maintained strong communication with ministry staff and other stakeholders, ensuring minimal disruption and safe traffic flow during construction while delivering the project on time and under budget.
Grading
Conwest Contracting Ltd. received the Grading award for its work on the Phibbs Transit Exchange improvements in North Vancouver.
The company provided exceptional grading work that plays a crucial role in upgrading this key transit hub. The work provides a solid foundation for expanded bus capacity and enhanced safety for transit users. Conwest completed its work at a high-traffic urban worksite, managing tight schedules and
collaborating closely with stakeholders to minimize disruptions, such as configuring side streets so transit service continued seamlessly throughout the project.
The company worked with First Nation partners, honouring the cultural significance of the site by incorporating traditional plants and supporting Indigenous art installations.
Workplace Health and Safety
Lafarge Canada Inc. received the Workplace Health and Safety award for a remote transfer-switch system that enhances driver safety during trailer hookups.
By pushing a button, drivers wirelessly align their truck hitch using a backup camera, shortening the time required for trailer connections. By connecting transfer trailers to tandem trucks from within their cabs, drivers spend less time outside their trucks, avoiding high-traffic areas and other hazards.
Road and Bridge Maintenance
Yellowhead Road & Bridge (Fort George) Ltd., also known as YRB –Fort George, received the Road and Bridge Maintenance award for its exceptional commitment to maintaining safe and reliable roads and bridges in the Fort George area (Service Area 19).
YRB takes a proactive approach to maintenance through continual investment in maintenance equipment and process improvements. YRB’s commitment to timely response to emergencies was on display this summer when the company supported Jasper wildfire evacuees, providing essential supplies and directing traffic to safety.
YRB also supports local communities and First Nations by participating in community events and most recently by improving local recreational areas. Its hiring of a First Nation liaison and signing of a memorandum of understanding with the McLeod Lake Indian Band fosters long-term partnerships and demonstrates its commitment to reconciliation with Indigenous communities.
Community Service
Cutting Edge Consulting Inc. (CEC) received the Community Service award for its outstanding support for many communities in B.C.
When the 2021 atmospheric river flooded Nicola Valley, CEC helped repair seven critical bridges and rebuild Highway 8. Beyond this ministry work, the company donated equipment and labour to help Merritt residents protect their homes from further flood damage. Despite its full workload, CEC also helped out after bridge fires in Kamloops and Adams Lake, prioritizing community safety and recovery.
The company supports many local initiatives and community events, such as Kamloops Boogie the Bridge, the Salvation Army’s Adopt-A-Family and the Kamloops Food Bank. Its support also reaches young athletes, sponsoring local youth in sports and trades competitions, and fostering the next generation of talent through school trades programs like Heavy Metal Rocks. CEC also works closely with First Nations, offering employment and revenue-sharing opportunities, as well as supporting First Nation events.

For more than 20 years, Ontario’s fruit and vegetable growers have been widely adopting a range of practices that support sustainable food production. These
include technologies and techniques to use less energy and fertilizer, using tools like soil testing and cover crops to make healthier soils, and reducing water and pesticide use.
At the same time, growers have also been investing in developing new vegetable and fruit varieties that meet consumer demands for look, taste and texture, and that grow well in the Canadian climate.
The Radiance sweet potato is one such example, the first sweet potato variety bred by Canadians for Canadians. It is red-skinned with deep orange flesh and, unlike southern varieties, matures early in Canada’s cool climate growing conditions, so it’s ready for December holiday meals.

Maple-candied Sweet Potatoes
Prep time: 15 minutes
Cook time: Approx. 2 hours
Makes: 6 to 8 servings
Ingredients:
6 sweet potatoes (approximately 5 lbs/2.2 kg) peeled and quartered
1 cup (250 ml) apple cider
2/3 cup (150 ml) maple syrup
2 tbsp (25 ml) butter
1 tsp (5 ml) salt
1/2 cup (125 ml) chopped fresh parsley
1 tbsp (15 ml) fresh lemon or lime juice
Directions:
In a large pot, cover potatoes with water. Bring to boil; reduce heat and simmer for about 12 minutes or until almost tender.
Drain in a large colander; let cool enough to handle. Slice each piece in half and place in a nonstick 9" x 13" (24 cm x 34 cm) baking dish.
In a small saucepan, combine apple cider, maple syrup, butter and salt; bring to a boil. Pour over potatoes. Bake in 325°F (160°C) oven for 1.5 hours, gently turning and basting occasionally.
Mix parsley with lemon or lime juice and sprinkle over potatoes.

3 carrots, thinly sliced
2 potatoes, diced
1 onion, diced
3 cloves garlic, minced
2 cans (540 ml each) kidney beans (white and red), drained and rinsed
1 tsp (5 ml) dried thyme leaves
1/4 tsp (1 ml) each salt and pepper
3 cups (750 ml) unsalted vegetable broth (approx.)
2 cups (500 ml) bite-size spinach leaves or baby spinach
3 tbsp (45 ml) chopped fresh parsley
Sour cream and grated cheddar cheese to taste
Directions:
In slow cooker, combine carrots, potatoes, onion, garlic, beans, thyme, salt and pepper. Add broth and push vegetables and beans under the liquid.
Cover and cook on low setting for 10 to 12 hours, or until vegetables are tender.
Stir in spinach, cover and cook on low until lightly wilted, about 10 minutes.
Ladle into bowls and sprinkle each serving with cheese, sour cream and parsley.
