Editor’s Corner February is upon us and though the month may be a day short, it’s chock full of enough events to keep you going for the next few Leap Years. We have the second National Sport Day looming and the quintessential Valentine’s Day. This issue, in amongst the listings, parties and recipes for Valentine’s, we’ve tried to give the meaning of the holiday a bit of a different, less commercialized spin. If Valentine’s Day is about friendship and showing the people you love that you care about them, then shouldn’t it be a 365 days a year thing? We think so. We’re a community here after all, so why not show a little bit of caring to everyone? On that note, we have a fantastic piece in our Community section this month on volunteering. There’s a huge, non-profit, volunteer sector in Qatar. Did you know about it? I didn’t. Or at least not to the extent of how big it is. So, flip to our Community section to scratch the surface with our round-up of the well-known and less well-known groups in Doha that lend a helping hand. For me, this is a chance to re-invent the spirit of Valentine’s Day in a way that’s meaningful. Those chocolate sweets will give you a sugar-rush, no doubt; but the rush of helping others in need and giving back will last much longer. We guarantee it. See you next month,

t’s 1:00 p.m. and my belly’s rumbling. We’ve been waiting for nearly an hour now to be seated in Gordon Ramsay’s five-star fine-dining restaurant at the St. Regis, chomping at the bit to experience an exclusive lunch service prepared by Chef Ramsay himself and his crack culinary team. Greeting us in the quiet ambiance of the restaurant, he strikes a contradictory pose. Diplomatic, humble and gracious, it’s a far cry from the foul-mouthed, loud-voiced chef fans have come to know and love (or love to hate), on his TV series, ‘Hell’s Kitchen’, ‘Kitchen Nightmares’ and ‘Master Chef USA’.

But really, whatever his persona, it’s irrelevant because ultimately what comes across regardless of Chef Ramsay’s renowned demeanour, is his unwavering passion for food. It’s this drive that’s kept him going through the years; that’s made him push himself as hard as he does his protégées. The man loves what he does and he does it beyond well, having trained under the greats such as Guy Savoy and Alain Ducasse. “Chefs are like sheep. We flock,” he says. “I opened up in Dubai ten years ago and there were hardly any chefs there, and I think that Doha has that concentration now. You look at the kinds of chefs like Ducasse, Savoy, Robuchon – over the next two years everyone’s going to be here. “ The menu today consists of four-courses, impeccably presented with Ramsay’s indelible style. It’s flavourful simplicity done right, with the freshest ingredients and top-notch preparation that exemplify the concept underlying both Gordon Ramsay Doha and Opal by Gordon Ramsay at the St. Regis. “I think I’m at the fittest and most excited…and more in control than ever before,” he says. “And I like to think my latest openings, not just in Vegas but here have proved that.” Starting off with an amuse-bouche of poached quail egg on a bed of earthy mushrooms and mascarpone froth, the menu progresses organically, with each course complementing the last in texture and flavour. We indulge in a European lobster and pear salad with brunoise of truffled celeriac, then for the main course a roasted spiced lamb loin with winter vegetables and rosemary jus. In a nod to regional influence, there’s even a deep-fried spiced ball of kebbeh accompanying the cuts of meat – bone still inserted. It’s playful, savoury and comforting. Rounding out the meal is sumptuous dessert of soft vanilla mascarpone meringue with assorted fresh berries and blueberry sorbet. The fruit is so fresh, the flavours so intense I feel like I’m back on my Grandmother’s farm, plucking fresh berries from the bush at the height of the summer picking season.

“I don’t have any regrets. I’m very ambitious. I’m very hungry.”

After an extraordinary meal, comes time for reflection. Ramsay is nothing less than self-assured: “Oh I don’t have any regrets. I’m 46 years of age. I’m very ambitious. I’m very hungry. I’m very happy with what I see.”

When asked by one reporter about his position on the continued use of foie gras, Ramsay is quick to stave off any misconceptions. In fact, he’s adamant. “First of all our foie gras is ethically sourced and it’s not force-fed, because they’re naturally reared,” he says. “We came up against that six years ago, having been to the farm and visiting it and watching it. We’ve reduced the amount of goose liver, caviar and moved to sustainable fish over the last few years…under the pressure of PETA (People for the Ethical Treatment of Animals), and respected their sort of movements.” “But we are less arrogant, less blasé and far more concerned about that welfare,” he continues. “You know we [his family] had turkeys in the backyard and we went from turkeys to pigs, to sheep because I needed to understand and the children need to see that you can’t just walk in and see [meat] at the supermarket wrapped in clingfilm and understand the traceability of it. And by having them rear animals to eat they respect food more and they waste it less.” Looking forward Ramsay is optimistic that 2013 will be a big year for himself and his brand. “I hate that word ‘brand’,” he scoffs. “What’s next? Well we’ve got some exciting openings in London, actually this September. We start filming in spring 2013 the new season of ‘Master Chef USA’, and I want to take more time off I think.” With a wink and a smile, it’s hard to tell if he really means it. n

oir is a highly-respected artist known for his unique sets and ability to capture the night and make it special. His busy schedule has led him to play almost everywhere in the world from Paris to Berlin, Shanghai to Miami, Dubai to Moscow, Ibiza to London. This February he will land in Doha for the first time to rock the Hilton.

Things didn’t happen overnight and after several projects and a whole lot of experience in the bag, Noir got his international breakthrough in 2005 with his classic track ‘All About House Music’ and he hasn’t looked back ever since.

Noir got interested in electronic music at the early age of 6-7 years old when he was introduced to some of Kraftwerk’s early 80s tracks. Being electronically influenced at that early stage in life left a hunger for exploring the industry even more when he hit his teens. Inspired by the late 80s house, techno, acid and rave cultures coming from Chicago, Detroit, New York and all that was going on in the U.K. at that time, Noir’s journey started in 1996 at small venues in Denmark.

‘All About House Music’, released on Wyze Recordings in 2005, was followed by ‘My MTV, put out on Toolroom Records in 2006 and elevated him to the number one spot on digital outlets such as Beatport, DJ Download and Traxsource.

When his father sadly died in 1997 Noir inherited a small amount of money and decided to spend that wisely and follow his biggest dream: being able to buy his own equipment and eventually become an electronic music-producer, enabling him to create his own sounds for the nightclubs.

The Club Hits

His recent success, ‘Africanism’ from 2010, released on Neurotraxx Deluxe, hit number one on Beatport’s deep house chart (top 3 overall chart) and stayed in the top 10 for more than four months, making it one of 2010’s biggest deep house productions. Noir´s collaboration with singer/songwriter Haze, his track ‘Around’ has been smashing dance-floors across the globe since the summer of 2011 and was at the top of the Beatport charts for more than six months. ‘Around’ was one of the top

tunes of Sonar, Ibiza and ADE 2011, Pete Tong’s Essential New Tune in November 2011 and remains steady on the Beatport and Resident Advisor charts. It’s currently still in rotation by virtually every influential DJ on the electronic scene. Solomun and Subb-an´s standout remixes of ‘Around’ took the track to new levels as well, resulting in a re-release on Defected in the spring of 2012.n

ost of us know him from the super popular Black Eyed Peas, but Taboo is also a solo artist, DJ and dancer. This February the American entertainer is landing in Doha for the first time ever at the InterContinental Doha beach-front. Taboo’s rise to international stardom started when he became one of the first members of The Black Eyed Peas, replacing former bandmate Dante Santiago. Unlike many hip-hop acts, they chose to perform with a live band and adopted a music and clothing style that differed wildly from the ‘gangsta rap’ sounds of Los Angeles-based hip-hop acts at the time.

‘’Stepping Back in Time’’: A six-hour tour of Al-Zubarah Village and the Barzan Towers: • Enjoy the drive to Qatar’s largest archaeological site that is now a proposed UNESCO world heritage site. Located one hour west from Doha, the site covers an area of 60 hectares of Qatari heritage. • On your way back, just before entering Doha, we suggest a stop at another heritage site, The Barzan Tower. Originally built as watchtowers, Barzan Tower is the western tower of two that were erected around the Umm Salal Mohammed area. This Tower was built during the late 19th century and its ‘T’ shape is considered a unique architectural style in the Gulf region. They have been completely restored.

The forms of a soldier’s helmet, a terrorist’s hood, and a gas mask re-inforce Gupta’s dialectics of war and peace, public and private, global and local, which are themes that run throughout his work.

Richard Serra: ‘7 (SEVEN)’, MIA Park Commissioned by I.M. Pei, Serra’s design found its inspiration in the Qu’ran’s repeated use of the number 7 and its implications in Muslim society • Louise Bourgeois: ‘Maman’, QNCC Best known for her spider sculptures, Bourgeois’ work explores themes of betrayal, anxiety and loneliness. The ‘Maman’ sculpture is the centrepiece of the ‘Conscious and Unconscious’ exhibit -- her first solo show in the Middle East. • Sarah Lucas: ‘Perceval’, Aspire Park ‘Perceval’ is a life-sized bronze sculpture of a Shire horse pulling a cart with two oversized squash. Doha Dash Supports ROTA The first ever ‘Dolphin Energy Doha Dash’ is taking place at Losail International Circuit on February 12.

n celebration of Qatar National Sport Day the Doha Dash will be held in support of Reach Out To Asia (ROTA) and is sure to draw the crowds. Reach Out To Asia (ROTA) operates as a non-governmental organization within the framework of Qatar Foundation and seeks to extend its human development mission to an international arena by bringing high-quality primary and secondary education to the less fortunate across Asia. Established in 2005 by His Highness Sheikh Tamim bin Hamad Al Thani, Heir Apparent, ROTA is guided by Chairperson Her Highness Sheikha Al Mayassa bint Hamad Al Thani. Reinforcing the concept of the Dolphin Energy Doha Dash as a true community sports event, organizers will pledge 25% of all registration fees to ROTA. The money raised will enable ROTA to continue providing access to education in crisis-affected areas across Asia and around the world, especially educational environmental projects, as well as supporting ROTA’s pro-active community and youth programs here in Qatar.

At the heart of the museum are collections featuring Islamic Art spanning 1,400 years and include metalwork, ceramics, jewelry, woodwork, textiles and glass. There’s also a café, library and study room, and a number of workshops for young children right through to adults aimed at engaging new audiences in Islamic art history and culture. Walkways, Water And Play Once outside the museum, if you follow the sea around to the right you will get to the playground and plenty of grass around it for the little ones to run on. It’s a popular park and on evenings and weekends in the cooler months, it can get very busy with families enjoying the chance to stop and have a picnic and let their kid’s burn off some excess energy. There are plenty of toys, climbing frames and a sand pit, with something to please children of most ages, and it all sits on a squashy surface for safety. Next to the playground there are a couple of bungee trampolines which, when operational, cost around QR 20 a go. Then further on is a large hexagonal water feature and more paths criss-crossing their way back to the sea and along to a spur of land where you can grab

AD: I’m inspired by the rich cuisines of both our regions, so for this restaurant I’ve combined the two in a unique blend of French Mediterranean cuisine with an Arabian twist. QH: How do you maintain high quality ingredients for your restaurants and where do you source them from? AD: You are only as good as your ingredients. Great ingredients are what excite me about food. If you start with a mediocre product, say you have 10 ingredients and five of them are

mediocre, you’ve already cut your odds down by 50 percent. In my mind I’d say even more so, but you’re 50 percent mediocre already. But if you start with pristine products all the way around, your level of success is going to be so much higher. So much of being a chef is about that. This is why I established the Alain Ducasse Entreprise. My team works to ensure that the quality of ingredients used in all of my restaurants are the very best in the world. We follow a very particular purchasing system to ensure consistency in the quality. For the restaurant in Doha, many of the fruit and vegetables will be sourced from an exclusive local farmer, home-grown in Qatar to ensure the best quality of ingredients.

Tell us how you and your team will add to that prestige. AD: There’s no doubt that there are great restaurants all around the Middle East. The team that I have brought together for this new restaurant has truly exceptional experience and has been trained and will be led by those who interpret my cooking philosophy in the kitchen, starting with head chef Romain Meder. The dining concept created in every restaurant reflects a mixture of international flavours and styles of cuisine. I have developed a unique know-how in the attention to quality of each detail and high precision techniques. This restaurant will differ in its adaptation to the local market. Our intention is to bring our vision of ‘haute cuisine’ adapted to the Middle East. In a sense I am putting my cuisine at the service of Middle Eastern gastronomy. QH: It’s an unexpected concept to have a fine-dining restaurant in a museum. Tell us how it came about and how you hope to enhance the overall experience of visitors to the Museum of Islamic Art? AD: The restaurant and the M.I.A. are perfectly harmonious. In the same way that the Museum showcases art and culture through various exhibitions and displays, so too will the restaurant, only through a different form of expression: the presentation of various dishes. W

hen was the last time you tasted something new – and fell in love? As I experience new gustatory thrills, I often associate certain ingredients or combinations with a particular locale or restaurant, then tuck the memory away. If there’s one thing I wish I could remember though, it’s my initial encounter with chocolate. Oh to turn back time, and re-live that singular moment when I first savoured a piece of heaven. I suppose it doesn’t really matter, because I’m still filled with infinite delight with every bar, truffle or a mini pot of mousse au chocolat.

q Know Your Cacao

One of the first things I learned to make with chocolate is still my favourite: the hand-rolled truffle. A straightforward process, it involves mixing boiling cream into chocolate to produce a ganache. When chilled, little balls of the mixture are formed into truffles, then rolled in cocoa powder to resemble its namesake, freshly dug and coated with dirt.

I’m not what one classifies as a chocoholic. Neither am I a snob. Even though I appreciate luxury chocolate, I also seek comfort in the occasional candy bar. A chasm lies between the two, and it boils down to how much of the cacao bean is actually in the product. During manufacturing, the meat of the cacao bean is ground to form chocolate liquid/mass/ solids. Its fat, called cocoa butter, is also extracted. The two are then blended in varying quantities with milk and sugar to produce chocolate as we know it. Dark chocolate contains the most chocolate solids; more up-market brands will now even put its percentage on the packaging. White chocolate contains none at all, but because it is made from cocoa butter, the debate over whether white chocolate is actually chocolate, should favour its proponents – just saying.

Heavenly Hand-Rolled Truffles

Cooking with chocolate is, quite frankly, a piece of cake – especially because it exists in so many forms: cocoa powder, chocolate chips, cooking bars! Many recipes call for melting chocolate, which seems to cause unnecessary anxiety. Indeed the traditional method renders one hobbled over a double boiler. But these days, a microwave will do the job in less than two minutes, so long as one remembers to stir half-way through so the chocolate pieces don’t end up burning.

Truffles now come in the most imaginative of flavours: lavender and thyme; lemongrass and peppercorn; sea salt and Goji berries. When truffling at home (yes, a made-up verb, but one which works in this case), I err on the side of the conservative, preferring to let the professional chocolatiers go wild. Call me old-fashioned, but I’d much rather give - and receive - a box of pistachio dusted truffles on Valentine’s Day than ginger wasabi ones. Again. Just saying.n

q 8 ozs. dark or semi-sweet chocolate q ½ cup heavy cream q ¼ teaspoon salt Coating Choices: cocoa powder, finely chopped nuts, toasted coconut, powdered sugar, candied citrus peel IMPLEMENTS: q 1 mixing bowl q 1 saucepan q 1 melon baller or teaspoon INSTRUCTIONS: Finely chop chocolate and place into mixing bowl. Bring cream to a boil in saucepan, then mix into chocolate. Add salt and stir until a silky, shiny ganache forms. Cool, then refrigerate for at least an hour until the mixture sets but is still pliable. Using a melon baller, scoop balls of ganache and place onto a tray. Alternatively, form balls with tip of fingers to avoid melting. Refrigerate once again. Roll in a choice of coating to finish.

I

was invited for dinner at Rodizio with the promise that I would try the best meat in town. My interest was piqued, having recently visited a restaurant that, in my opinion, has the best cuts of meat in Doha and for me would be hard to top. So, with that in mind I thought to myself that Rodizio needs to be utterly amazing in order for me to be impressed. Upon arrival at the Crowne Plaza Doha – The Business Park close to the airport, I’m amazed with the hotel. It’s modern and beautifully designed, but I must say its location would draw larger numbers of foodie crowds if situated in a different area such as West Bay for example. The trek to get there is a bit of a traffic jam. The restaurant is less busy than I expected considering it’s dinner time on a Wednesday night. The chef tells us most of the regulars are on holidays. I’m actually glad Rodizio isn’t crowded because now I can enjoy my meal in peace and have a pleasant conversation with my companion. The décor is dark with wood details, tables and chairs and an open kitchen right in the middle. The environment is cozy and hassle-free. Our server is a young South African woman named Catherine. She’s incredibly attentive and pleasantly chatty. She describes the concept of the restaurant, which is pretty much eating as much meat as your body can possibly take. She also explains that the paper doily next to our plates is for us to turn upsidedown once we’re ready to start the feast. The waiter or as they call it ‘passadore’ will then pass around and serve different types of meat; including sirloin, lamb and chicken served to the table on skewers allowing guests to choose how much or how little they want. The passadore won’t stop coming to the table until you turn the doily back to its original position, indicating you want to take a break. After having a small salad and some delicious pumpkin bread, my friend and I are ready to start in on the cuts of meat, so we turn our doily upside-down. Catherine first brings us an array of different side dishes to complement the meat (rice, French fries, mashed potatoes and mouthwatering fried bananas). First up on the docket is the chicken drumstick. I’m not a fan of that part of the chicken so I let my friend give it a try and according to his facial expression he is definitely delighted with the taste and texture. The passadore then brings us lamb; I don’t eat lamb so I pass again. My friend is a lamb freak and is very satisfied with his lamb chop. Finally we finish up with something I like: beef sirloin. I must say that I wasn’t lied to when I was told that the meat at Rodizio is phenomenal. I don’t think of myself as a beef expert, but the prime cuts are simply delicious – tender, juicy and cooked to perfection! Up next are beef top butt, beef flank and rib eye, with all the different cuts as savoury as the sirloin. I have more than one piece of each until I start feeling as if every organ in my body is slowly shutting down. The chef comes to greet

us and tells us that they also have camel meat on offer. In nine years living in Qatar I haven’t brought myself to try it, but out of nowhere I got the courage to do so. After one bite I’m not sold on the camel meat at all. When the chunk of meat enters your mouth, it tastes like normal meat – moist and juicy, but after I swallow I am left with this taste in my mouth that’s reminiscent of liver. It is a weird sensation. I am sure I wouldn’t go back for more.

Overall apart from the camel meat everything we tried was excellent; all the meats were sincerely extraordinary. Now I can say I know two restaurants where you can find the best meat in town. The service was also top-notch, Catherine never allowed our glasses or side dishes to stand empty and the passadore had the perfect timing when serving the different types of meat. atara is making its mark with a wealth of culinary diversity – there’s a restaurant to please every taste and palate, with flavours from every corner of the globe. It’s a nice complement to the multicultural cornucopia at the Cultural Village. So, when we land at Le Vesuvio for lunch we have high expectations for their newest establishment. This is my first time eating at Katara (shameful, I know!), and I’m struck by the lovely décor as we walk in. Decked out in dark wood tones, with lush burnished orange banquette seating and a giant wood-fired oven with a Roman sunburst gold façade presiding over the interior, Le Vesuvio has been known to be a favourite spot for members of the royal family. With a gorgeous roof-top terrace and outdoor patio area it’s a restaurant for all seasons. We’re seated indoors by the window and Restaurant Manager Issam Blanko tells us the kitchen will prepare a sampling of various menu items for us to try. Warm, welcoming and friendly, Blanko and his staff go above and beyond to ensure our glasses are always filled, empty plates taken away and all our questions about the menu answered. Le Vesuvio is Italian with a French twist, as Executive Chef Gerard hails from Le Vesuvio in Cannes – initially coming to Doha to oversee the opening of its first Qatari location, he’s been here ever since.

The Menu We start with heavenly thin-crust pizzas from the wood-fired oven: classic pepperoni and quattro stagioni with smoked turkey and artichokes. They’re light, flavourful and gooey and the best part? They do take-away orders! There’s also an assortment of traditional French and Italian breads and antipastos for starters and crisp Parmesan cheese in a Balsamic reduction that’s the perfect mix of tangy and sweet. Our soup course is hearty Italian minestrone and one of the best mushroom soups I’ve tasted in a long while – full cream, rustic, earthy porcinis – fantastic! A meat course follows with seemingly every option off the menu. It’s hearty, seasonal and delicious. We try a thinly breaded veal escallope, picatta de veau au citron – delicate cuts of veal seasoned with citrus on a bed of home-cut potato wedges and seasonal veggies and homey gravy, filet aux cépes – a sumptuous beef tenderloin steak in a mouthwatering porcini mushroom sauce with baby asparagus and roast carrots and topping it off the signature dish, ossobuco Milanese – stewed with vegetables, lemon and marjoram it falls off the bone and melts in your mouth. Each dish has that home-cooked feel to it – warming, comforting and completely fresh ingredients. Manager Issam teases us that

we have to clean our plates, but I’m already wanting to loosen my belt a few notches and there’s still the dessert service to come. It too, doesn’t disappoint. A smorgasbord of rich Italian classics tempt us, but we can only take a few bites of each. There’s the tiramisu served in a parfait glass– the creamiest, most flavourful I’ve had, and the tarte aux fruits rouges – topped with mango cream sauce the raspberries tartlets are crisp and tangy. These are followed by a platter of rich profiteroles served with home-made coffee ice cream and, my personal favourite and chef’s recommendation, the tart tatin, served upsidedown-style with rich slices of baked apple and crème Anglaise with a hearty scoop of fresh vanilla bean ice cream. If you’re ever out at Katara and feeling peckish, Le Vesuvio is top of our list of recommendations. The food was out of this world, the service impeccable and the atmosphere vibrant and homey. We even ran into some acquaintances at another table and stopped to say a quick hello. That’s the nice thing about the place, you will always bump into people you have a connection with and is the perfect spot to bond over the great menu and take in a little bit of culture at Katara for dessert. n

ational Sport Day is celebrated every second Tuesday of February and is an initiative adopted by HH Sheikh Tamim bin Hamad Al Thani, the Deputy Emir and Heir Apparent. Across the country, ministries, government departments, public and private sector organizations and sports clubs will be hosting sporting activities for all on Tuesday, February 12, 2013. The event aims to create awareness about sports and its health benefits. Qatar’s ‘National Sport Day’ is also a further example of the country’s commitment to sport, in addition to the ‘Schools Olympic Program’, which encourages school-children to practice sport as an integral part of their daily life. On February 12, all sports clubs and facilities will be open, allowing everyone, men, women, children and persons with disabilities to practice and enjoy sporting activities. Events at the Corniche, Aspire, Al Rafaa Street, Barzan and the Olympic Park will demonstrate the importance of sport in daily life, in order to maintain a healthy lifestyle. The Qatar Olympic Committee wants to promote sports, physical education and sustainable development, further enhancing the Qatar National Vision 2030. Additionally, a Sport Zone will be set up by QOC near the Corniche, featuring all day sport and recreational activities open for all, from February 12-16. Qatar is one of the few nations worldwide to dedicate a day of sport for its society.

The cream of the crop in the world of women’s tennis hit the courts at Khalifa International Tennis Complex from February 11-17 for the Qatar Total Open 2013. QH serves up the details.

F

irst held in 2001, the Qatar Total Open was the first professional women’s tennis tournament staged in the Middle East and today it is a WTA Premier 5 event – bringing with it the greatest names in the sport. This February all top 10 WTA players are participating in the Qatar Total Open 2013 and will take the courts of the Khalifa International Tennis Complex by storm, participating in the 56-player draw. ALL-STAR LINEUP Forty-three players are directly entered into the field, with eight qualifiers and five wildcards. The top eight seeds will be given a first round bye. Last year’s champion and World No. 1, Victoria Azarenka, leads the field of star athletes. 2005 champion, Maria Sharapova, returns to Doha after last making a finals appearance in 2008 (losing to fellow Russian Vera Zvonareva); Grand Slam and Olympics champions, Venus and Serena Williams (Serena defeated Venus to win the WTA Year-End Championships in Doha in 2009); 2011 Wimbledon champion, Petra Kvitova; and 2012 finalist Sam Stosur are among the who’s who of incredible talent. Jordan Coles lifts weights and trains daily to maintain his new, healthy physique

With national obesity levels still tipping the scales in Qatar, QH brings you the incredible story of one man’s extreme weight-loss journey.

T

wo years ago, Jordan Coles was overweight, underemployed and depressed. Then 22, he was still living with his folks and working a dead-end job at a government employment and benefits center. To top it off, the 5’10 Welshman tipped the scales at 210 pounds. Coles thought his life really couldn’t get much worse. But then he got sacked. “I was told [I was fired] in the morning and I literally went straight home. I was a bit upset and I thought, ‘Alright, what am I going to do now?’” Coles recounts. That’s when he got serious about pulling himself out of his rut. “So that day I remember moaning. But then I got home, I went out on my bike,

and I thought, “ I’m going to change my physique and I’m going to see what comes of it.’” Over the next two months, Coles lost 35 pounds; today he weighs 175 pounds and sports a ripped body many would envy. But Coles’ personal transformation goes beyond the superficial. Six months ago he finally moved out of his parents’ home in Aberdare, Wales, to start a new life and career in Doha as a personal trainer for Absolute Fitness. His past experience, Coles says, gives him a professional edge. “A lot of personal trainers have been healthy all their lives and they haven’t had to battle a weight issue, whereas I feel passionate about personal training

But don’t expect a quick fix, Coles warns.

because I can relate to my clients and what they are going through,” he said. “I’ve been there myself.” If clients are willing to put in the effort, they will see benefits that extend beyond the physical,” Coles says. The results may even prove inspirational. “Exercise lifts you – it makes you a lot more alert and gives you energy. Obviously, then you feel better and you get more out of life,” he explained. “As soon as he saw my transformation, my brother started training himself. My mother and father have lost over 2-3 stones [about 28-42 pounds] each as well, so it’s been a family transformation.” But you don’t have to slave away at the gym to get in shape. In fact, Coles insists less is more. “In the beginning, I had a lot of free time on my hands, so I was exercising about 2-3 hours a day. Unfortunately, I really didn’t have the knowledge of the good ways of training until I took a course and qualified as a personal trainer,” he said. “At the time I seemed to be doing a lot of long-duration [cardio] activity. If I had incorporated high-intensity interval training instead, I would have gotten to my goal weight a lot faster.”

“Don’t just have a personal trainer for a month and stop coming all of a sudden. Don’t go on a diet just for a month and lose a lot of weight, because you’re more likely to just pile it all back on. Unfortunately, this is what happens for a lot of people,” he advised. “You really have to make a lifestyle change.” Nutrition is paramount. “Eighty percent importance comes down to nutrition. I can say that as an absolute fact because I was training 2-3 hours a day and then I got to a certain point where I wasn’t seeing changes in my body until I really started portion control and measuring my fats, protein and carb intake,” he explained. Coles recommends eating five small meals a day; these should consist of as much ‘super foods,’ like vegetables, as possible. He also suggests giving yourself one cheat day per week so you don’t experience too much of a junk food withdrawal.

as we go on, we do a lot of tests and measurements.” It’s an approach that seems to work well for Martha Darby, 40, originally from Ireland. She has been training with Coles since October. “Jordan is really good to work with. He brings his own experience and personal fitness journey to the training which instantly made me feel ‘human’ and made my goals achievable,” Darby said. “He is realistic and doesn’t expect you to train everyday or to stop eating the nice things in life! He provides lots of variety in the sessions so you never know what to expect and there is no fear of getting bored!” But beyond the food, sweat and fitness routines, Coles says the number one thing a person needs to succeed, in weight loss and in life, is a positive attitude.

Don’t know where to begin? Follow Coles’ lead. He exercises 5-6 times a week for about an hour at a time, incorporating a combination of strength training and highintensity interval cardio.

“There are going to be times when you’re aching and you don’t feel like coming to a [personal training] session. But what I try to get across to my clients is that it’s not just about losing weight. It’s about adopting a positive outlook to life in general,” Coles explained.

“My sessions are very similar to what I give my clients. But obviously, it’s all about progression,” Coles said. “What really drove me on is that month by month I could see changes in my strength. I became a lot stronger and in my fitness I was able to run a lot faster or for a longer distance. That alone is great for clients;

“You start living better, start taking care of yourself better and then everything seems to fall into place. I believe I would never have been offered this opportunity [in Qatar], doing a job that I love, if I hadn’t adopted that positive attitude. I probably would still be unemployed, overweight and unhappy.”n

Tasbih Amin, winner of the QH and ExxonMobil Essay Contest reflects on her experiences at the 2013 Qatar ExxonMobil Tennis Open. If someone were to tell me in the past that I’ll be attending an ATP tennis tournament and get to meet big tennis players, I would’ve said, “Yeah, right, in my dreams.” However, this actually happened. When I got the news about me winning the ExxonMobil essay competition, I was jumping and screaming like a five-year-old on Christmas Day. Tennis is a big deal for me. I’ve been a huge tennis fan for over eight years, and watching a live game in the stadium is definitely a dream come true. The live games re-kindled my love for tennis. The excitement, anticipation, competitiveness and crowd enthusiasm – I’ve experienced all this in the short period of time of the tournament! It felt a whole lot different from watching the game behind a big screen. It also gave me a new sense of respect towards it. Tennis is not only a sport, but also a form of art. When I saw how a player responded in a split second to hit the ball, I appreciated the amount of effort and skill put into each shot. I got the chance to attend four live games and my favourite had to be the final between Nikolay Davydenko and Richard Gasquet, mainly because I got to share my excitement with my best friend and my brother. Although the player I was rooting for (Davydenko) lost, I nevertheless enjoyed the great talent and explosive power both players showcased throughout the game. I unleashed the tennis

fanatic within me. I held my breath at every shot and jumped for each point acquired. At one point, I kept screaming “Go Nicolay” at the top of my lungs whenever the crowd chanted the opponent’s name. I left that night with a sore throat and a massive adrenaline rush. Another great moment I enjoyed during the tournament was discovering a new talent in the world of tennis. I’m a big fan of underdogs and Daniel Brands definitely surprised us all. He was able to beat Gaël Monfils and gave Richard Gasquet, the champion, a really hard time at the semi-final. His speed, aces, backhands, you name it, this man has what it takes to become a tennis giant someday. Watching the game live in the stadium was certainly great, but meeting and interviewing the players was for sure the cherry on top. To me, for some reason, professional athletes were more like fictional characters behind the screen, but when I saw them on the court and at press conferences, the whole sport became more of a reality to me. I remember how nervous I was when I asked Davydenko about his opponent. I was pleased to see him smile and in a loss of words say, “That guy … I don’t know, sometimes I think I can beat him then half an hour later, I find him closer to winning the game.” It was interesting to know and understand the player’s mentality, his fears,

and hopes. The second time I interviewed Davydenko, I was more relaxed and he seemed to enjoy himself. He even cracked a few jokes, which made the conference more fun and entertaining. Aside from interviewing the players, I loved taking their autographs and posing for pictures with them. You should’ve seen my excitement when Jorge, QH’s Sales and Communications Manager, got Monfil’s bodyguard to let us meet Monfils in person! I felt like a 13-year-old meeting Justin Beiber. I was also able to get Davydenko and Ferrer’s autograph. I was actually lucky to get Ferrers’; I came out of the media centre a little late, when Ferrer’s golf cart was already leaving. However, he saw me holding my autograph book and was so sweet to stop the car just to give me his autograph. Even after losing, some athletes still react positively and nicely with their supporters. All in all, this wonderful experience was both exhilarating and an eye opener. I didn’t only enjoy myself, but I also gained plenty of self-confidence through meeting and talking with athletes who inspired me a lot growing up. I was lucky to have Ashlee and Jorge, QH’ team, to help me find my way around the Tennis Federation and score me extra tickets so I can share my excitement with my friends. Now I have added another New Year’s resolution to my list: watch more tennis!n

We were curious and wanted to try something new and were looking forward to their Indonesian cuisine. We tried the Satay Kampung, Mee Mamak and one club sandwich ‘back-up’ meal in case I didn’t like the taste of the others. My husband was the first one to try the Mee Mamak and the first words out of his mouth were, “This is what you call delicious.” I recommend this spot for anyone who’s tired of steaks, roast chickens and shawarma. ‘The Impossible’ This film tells the true story of a Spanish family that sees their idyllic Christmas vacations in Thailand brutally interrupted when a tsunami destroys the coastal zone in 2004. I am a big movie fan and I still haven’t seen a movie that could be compared to ‘The Impossible’. I was simply blown away, particularly by the performances of Naomi Watts and Ewan McGregor; the pain and fear shown by the two leading stars in every scene fells so real and palpable. It’s by far the best film of 2012 and Watts and McGregor’s best performances of their careers.

We review their Skinny Day Package to help trim and tone your body while blasting away unwanted cellulite. So, Here’s The Skinny: I arrive at Bliss Spa ready to walk out thin. That’s a tall order, I know; and not a very realistic one. But when I set up the appointment to try their Skinny Day Package, which includes three different treatments to help sculpt your body and break down fat cells, I jump at the chance. The ‘Doha Dozen’ has taken hold of my mid-section and as my rolls attest, it’s quickly turned into the ‘Doha Triple Dozen’. But I soon realize that the Skinny Day Package at Bliss isn’t about promising quick-fix ‘miracles’, but rather sustained results over time –and it’s not at all about being skinny, but instead being the best you can be in your own skin.

A

few months ago I started a project that would underline the effectiveness of facials in the long-run. Since last October I’ve been paying regular visits to The Four Seasons Spa, under-going different facial treatments in order to improve the aspect of my skin and correct certain flaws such as redness and dryness. The entire process has been eye-opening and every single visit to the spa superb. Not only is The Four Seasons Spa one of the most beautiful and calming retreats in Doha, but the professionalism of the staff and ambiance of the place is un-matchable.

Deep Cleansing Facial: 90 Mins, QR 755

The process was simple; consisting of nine different facials in a period of two months. After my ninth visit I would have an improved and healthier skin tone that would not only last for a couple of days after each treatment, but would have a much larger impact on my well-being and it sure did! Throughout the entire program I had six different treatments (two of them were repeated for a total of nine) and the results were more than I expected. My skin attained a special softness and improved look.

My journey to a have softer and better-looking skin started with a Deep Cleansing Facial that lasted 90 minutes. Most of the treatment was pleasant, but when the therapist started extracting blackheads it turned into quite an uncomfortable experience, but definitely worth it as you walk out with clean, improved skin. The therapist advises that this treatment be done regularly as it prepares the skin for all the sessions to come. T

here’s plenty to do this Valentine’s Day - why not welcome it Asianstyle? Step it up a notch and show your loved ones that you care with something other than a box of chocolates. Sushi-making is hands on and perfect for friends and couples eager to try something new. The best part? You can prepare it at home for a dinner that’s sure to impress. It’s easy to make and let’s be honest, who doesn’t enjoy a delicious platter of vibrant, bite-sized maki? So, let’s get rolling! I’m a sushi lover and a good cook, but I’ve never attempted to prepare sushi by myself, always thinking it’s kind of difficult to make the popular Asian dish. When I was invited by the Grand Heritage Doha for a private sushi -making class, I saw the perfect opportunity to give it a go. I was intimidated because it was the first time I was going to cook side-by-side with a professional chef and a small audience. Chef Anzuelo and his assistants were right next to me, so I felt I was being watched from every angle and my mistakes – if I made any - were going to be caught on camera, so the pressure was on. Chef Anzuelo started explaining the process and prepared the first roll so I could see how it was done; he made it look easy, which gave me a bit of confidence to do mine. Following his instructions I let myself go and enjoy the experience, pretending I was alone in the kitchen with the Chef Anzuelo and started making my rolls.

Heaped with crab meat and topped with caviar and avocado, the Heart of Blue Roll is almost too pretty to eat.

Sushi-making wasn’t as hard as I expected - it’s actually a matter of just following the steps and staying focused. The most difficult part is folding the rice with the ingredients to give it the right shape. In order to perfect this, you have to practice a lot - especially without the guidance of someone who knows how to do it. My first roll came out looking pretty good; not perfect, but good enough to be presented on a dish. The secret of sushi is definitely the rice. If one manages to cook the rice correctly, then the rest is a matter of practice. I’m sure if you follow the method and recipe on the following page, with a bit of practice you too can master the art of sushi-making!n

Wash the rice thr ee times and prepa re rice cooker. Whe n it’s ready and ho it using the t scoop it into the wooden bowl and mix the sushi vinegar slowly, stirring until cool. Transfer to a clean , dry container and put it aside for 10 minutes to set.

Method

Spread the sushi rice on the 1 pc of nori seaweed. Make sure the seaweed is fully covered with rice and place it on the bamboo mat with the seaweed facing the top. Put the remaining ingredients inside (depending which roll you’re making) and slowly roll it. Cut into 8 slices and arrange on a long oval plate. If making the Poached Lobster Maki, slice lobster thinly and place it on top of the roll, with each slice fully covering it. Add the Japanese mayonnaise and balsamic reduction over top and sprinkle with white sesame seeds, frisée lettuce and flying fish egg roe. Lastly, garnish with pickled ginger and wasabi on the

elgium is ideal for a short break: easily accessible, easily navigable and loads to see.

Brussels, Belgium’s capital, is compact and easily explored on foot or using the local metro. First stop for any visitor has to be the Grand Place. This world-famous square is surrounded by architecturally-stunning 17th century buildings which now house a variety of museums, bars, cafés, shops and the incredible town hall. Treat yourself to a famous Belgian waffle, nice and warm and loaded with cream, strawberries and chocolate sauce. North of the city centre in the Heysel district (easily accessible by tram), The Atomium (www.atomium.be) is synonymous with Belgium. The iconic building is extremely photogenic. It looks amazing with the sun glinting off its spheres, or very moody under a steel-grey, cloudy sky. Inside, you travel up and down stairways and escalators to visit each of the different pods. Do visit the Atomium if you’re at all interested in architecture. Don’t visit if you are looking for an amusement park ride. Admission is QR 50. Océade Water Park (www.odeade.be), next to the Atomium, is a great way to spend an afternoon for kids and adults alike. In its heated dome you’ll find a range of flumes, indoor (and outdoor) pools and slides, a wave machine, large Jacuzzis, saunas and steam rooms. We spent four hours in here that passed in a flash. Relax or energize – it’s up to you. Admission is QR 66. If it’s museums that you’re after then a walk through the city’s scenic Parc du Cinquantenaire will lead you to Autoworld (www.autoworld.be) and the Royal Museum of the Armed Forces and Military History (www.klm-mra.be). Autoworld is a huge space crammed with cars from various eras to the present day. If you’re a car enthusiast this will keep you occupied for hours. The Military Museum contains a wealth of items celebrating Belgium’s military history and an aircraft hall with an amazing collection of exhibits. Autoworld is QR 40 admission, the military museum free. The attractions

mentioned really only scratch the surface – there’s at least a week’s worth of things to see and do. Sadly we didn’t have a week, but did have another port of call on our Belgian itinerary – the city of Bruges. is an hour north of Brussels by train (www.b-rail.be). Where the capital is cosmopolitan and vibrant, Bruges is genteel, picturesque and, on account of its incredible medieval architecture, a registered UNESCO world heritage site. The city – bisected by canals and swarming with swans – is awash with the aforementioned architecture, museums and year-round festivals of music, culture and food. It’s home to the renowned Winter Market, which runs from November until early January in the town’s Market Square. Dozens of

traditional stalls sell gifts and speciality foods, and there’s an ice skating rink for the adventurous. Running alongside the Winter Market is the Snow and Ice Sculptures Festival which has works of iceart sculpted from no less than 300,000 kg of crystal-clear ice and 400 tons of snow. The best known of the city’s myriad museums is the Groeningemuseum, which houses six centuries of Flemish and Belgian paintings from the 1400s onwards. The museum’s many highlights include works by a wide range of Renaissance and Baroque masters, milestones of Belgian symbolism and modernism, and items from the city’s collection of post-war modern art. If art is your thing, then this is unmissable. Admission is QR 40. Bruges is just a few miles from the North Sea

The Host Opens March 29 Stephenie Meyer made it big with her ‘Twilight’ series. Not only did the novels become bestsellers, but the film adaptations saw massive financial and critical success across the globe. ‘The Host’ is another adaptation from one of her books and is expected to fill the gap left from last year’s ending of the ‘Twilight’ saga. The story is based on aliens who invade the planet by taking over human bodies. But one girl, Melanie (played by Oscar-nominee Saoirse Ronan), is able to co-exist with her alien presence.

G.I. Joe: Retaliation Opens March 29 There‘s a lot to be excited about with this new instalment of the famous franchise as Dwayne ‘The Rock’ Johnson and megastar Bruce Willis are leading the pack this time around. ‘G.I. Joe: Retaliation’ promises a lot of action, ninjas fighting on the side of a mountain and spectacular especial effects – all in 3D!

Apart from ‘I Am Legend’ and ’28 Days Later’, there hasn’t really been a zombie movie that’s stood out in the past decade. However, if one of the biggest movie stars on the entire planet – Mr. Brad Pitt – decides to star in one then maybe we should be getting excited about ‘World War Z’. Based off of the bestselling novel by Max Brooks, it looks like a definite must-see.

After Earth Opens June 7 ‘After Earth’ tells the story of a father and son who crash-land on earth 1,000 years after a cataclysm forced humanity to escape. There’s no doubt of Will Smith’s charm at the box office and his talents as an actor, but it remains to be seen if director M. Night Shyamalan can take advantage of his leading man and do a much better job than his last movie – which proved to be a total disaster-, ‘The Last Airbender’, perhaps one of the worst films ever made.

The big-budget, effects-heavy prequel to ‘TheWizard of Oz’ tells the story of who the man behind the curtain really was.
