Fanar, Qatar Islamic Cultural Center Fanar, is also known as the Abdulla Bin Zaid Al Mahmoud Islamic Cultural Centre. It is a cultural organisation in Doha, Qatar. It is located close to Doha’s Corniche and is a prominent landmark in the city. The centre’s most distinguished feature is its mosque which has a unique minaret design. Prior to 2009, Fanar's mosque was the largest in the country. It has since been over taken in this category by the Imam Muhammad ibn Abd al-Wahhab Mosque. As the weather cools, this will see more and more events taking place from now on. Everything from art and culture to sports and community, the cooler months will give us plenty to really look forward to. In our Entertainment section this month we have an extensive interview with the one-and-only Clint Eastwood. Also, the popular Sundowner Sessions are back and at a new home too. Read on to find out where! Following on from that, we highlight the Belgian Week that is soon to take place at the W Doha Hotel & Residences. In our Arts and Culture section, contributor Rabii’ah M. brings us the story of the CEO of Innovation Films, Bassam Al Ibrahim who gives us an insight into the Qatari film industry. Sundowner Sessions returns for a new season at Pure – the outdoor rooftop terrace at the Double Tree by Hilton Hotel Doha. Be sure to check it out.

ctober 14 marked the kick-off date of the fifth season of the much talked about Sundowner Sessions. If you haven't heard, this top Friday night destination has moved address! The new venue at Double Tree by Hilton Hotel Doha has some of the best views of Doha’s famous cityscape. Once again, the Sundowners team is planning some very special treats for Doha’s party people.

DJs for the season are Sundowner founder Carl Roberts and he will be joined by Australian spin queen Vicky Vanna, alonf with Eric M, one of the most established music makers all the way from South Africa. Carl Roberts is well known to the Sundowners faithful, having started the event back in 2011. He started playing back in the 90s and has more than 20 years experience getting people up on the dancefloor. Over the past five years, Roberts has been part of the growing Doha scene, having played at practically every major event in the city and beyond. Vicky Vanna is an exciting DJ from Australia, who has performed in London, Ibiza and at rooftop lounges in New York City, as well

as in Oz. She has also produced several tracks and is a versatile DJ guaranteed to rock the crowd. Out of Africa comes Eric McCallaghan, a producer and song writer with an innate talent for mixing international sounds into one glorious magical wonder. The True Meaning Of Heroism Words by Ella Timms Interview and images courtesy of Viva Press

At 86 years old, veteran filmmaker and four-time Oscar winner Clint Eastwood has worked with every big name in Hollywood such as Leonardo DiCaprio, Charlize Theron and Angelina Jolie. Today, in a QH exclusive, Eastwood talks heroism and Tom Hanks’ portrayal of Chesley “Sully” Sullenberger in his latest movie 'Sully'. QH: You’ve never worked with Tom Hanks until now on Sully? CE: Right. I was very fortunate to have these guys. I’ve worked with Laura Linney before and I feel very fond of her but I’ve always been a great admirer of Tom and he’s from Oakland [California] so he‘s always told me I have to be a great admirer of his because I’m from Oakland too, and I’ve seen Aaron in films and thought he was terrific. I feel very lucky.

QH: What attracted you to Sully’s story? CE: This script sat on my desk for almost a week and my assistant kept insisting I read it and she said several times ‘Look at the one called 'Untitled Script' about the Miracle on the Hudson’. Obviously when someone mentions something three or four times over the course of a week, you think, ‘There’s something in that script that really appeals to her. I better read this.’ So I read it and immediately thought ‘What the hell was I reading? Why wasn’t I reading this script instead of those other turkeys along the way?’ I just fell in love with it right away. QH: The real Miracle on the Hudson event received so much publicity, its no wonder that everyone feels like they know the story already? CE: I also thought I knew all about the ‘Miracle on the Hudson’ because I follow the newspapers and TV very carefully when that event happened, and then, all of a sudden, it made sense. I started asking myself: What’s the conflict there? This guy Sullenberger did a fantastic job on landing the plane, all 155 lived, where’s the conflict there? And then I realized there was a lot of conflict, his periods of self doubt inspired by the NTSB, and he had to prove his decisions and they turned out to be the right decisions, so then it became very dramatic and that’s what I’m looking for. The drama.

QH: American culture is so quick to describe something as heroism but - as Sully says - he did a good job. What’s your views on heroism vs. professionalism? CE: I agree. Its certainly different to when I grew up. The use of the word ’hero’ is a little bit overdone. But I don’t think so, in Sully’s case. He‘s someone who‘s done a little bit extra beyond what he could have been expected to do.. QH: You’ve flown helicopters for a lot of your life. Did that give you a better understanding of Sully’s achievements? CE: I’ve flown 35 - maybe 40 - years in helicopters. I still own one but I haven’t flown it much lately because I’ve been doing films about heroic people. I like aviation. I’m fascinated by it. I’ve been fascinated by it since I was a kid but I didn’t follow through with it until I was an adult. QH: But as a fellow pilot, does that give you some better appreciation of Sully’s achievements? CE: Aviation is very exacting. In other words, if you go to fly every day, you check everything out . It would be like if you got in your car in the morning and you checked the gasoline and you checked every wheel, changed the oil, checked under the hood. You go through tons of different checks. But when we get


in our car, we just jump in. We don’t care if the wheel is half off - as long as we get there - by the skin of our teeth. And in aviation, you just don’t do that. You need to be an exacting person; somebody who really knows the detail and lives by the rules, and Sully is that kind of guy. He lived by the rules and in making a decision about landing in the Hudson because he’d been through training but had never imagined himself doing that before, I don’t think. But all of a sudden you have to think and make a lot of things happen in very few seconds and that’s what the story is about. QH: You survived a plane crash when you were just 21 years old when your plane crashed into the water. Did Sully’s experience bring back memories of that time? CE: I think it did. I was just a passenger in a lonely spot in a plane and I didn’t have to react off anybody else, and I never knew what the pilot was doing; I was just guessing that he was going to do a water landing. If he’d bailed out, I’d be in bad trouble. Fortunately he did the right thing and waited for me. That was an experience; it was different. But by the same token it gives you an idea of where you get to that moment where you feel: this is it. Some people live through this and some people don’t. and that’s all I thought about, and fortunately, when we got in the water and I felt much better. QH: The real Sully talked about how you came over to his house and spent three hours with him over lunch. What were you looking for specifically? CE: There’s a lot of similarities here and both Tom and I are from the Bay area, Oakland, and it turns out that Sully lives just behind Oakland in Danville so, all of a sudden, you go ‘Oh he lives there’ and so a lot of things fell into place to get this picture going and so after reading the material I said, ‘Oh I’d like to meet this guy. Where do I have to go? Do I have to fly to Chicago or wherever he lives?’ And then it turns out he lives in Danville - which is on the way to Red Bluff so I went right up and saw him. So there’s a lot of things outside of logical thinking that were making this project come together. Everything just fell into place. Tom was my only choice to play Sully. QH: You have achieved such creative freedom as a filmmaker and you appear to be less bound by narrative structures than you were early on and more willing to explore different kinds of creative avenues. Its hard to even imagine that your films like Hereafter, Mystic River and Changeling were even made by the same person. How have you reached this creative place? CE: Its just time and time goes on. Maybe its because I’m spending more time behind the camera and not so concerned with film projects that demand my presence so I’m relieved of that, so I can go ahead and worry about what everybody else is doing. It's just a matter of growing up. You never stop growing up. If you do, then its not going to be an enjoyable, part of your life. The reason life is enjoyable for me it's that I learn something new things every day about myself. Hopefully. Watching other people perform is very exciting for me. n

We’re served delectable, Caribbean-inspired bites, coupled with refreshing handcrafted beverages. And what would a night out at the beach be without Shisha? There was a variety of flavours to choose from, which we later smelled as the Shisha perfumed the air and added to the atmosphere of the place.

t’s a Wednesday night after a busy week of rushing around when we finally make a stop at the St. Regis Doha to check out its newest nightlife offering - La Noche de Doha at Oyster Bay.

The dreamy reflection of the moon on the Gulf Sea had a rhythmic pulse to match the Latino rhythms of the Cuban band. As the night warmed up with conga drums played by Yusnier Bustamante, people started to trickle in. The music got louder throughout the night as the venue showcased


across Rhumba, Afro-Cuban jazz, Salsa, Soukous as well as Spanish fusion. The music lovers and partygoers that night, I’m sure, enjoyed the truly unique and unforgettable Latin music. Every Wednesday to Saturday, from sunset until late, Oyster Bay is the place to be as the sun goes down and the beat rises. We love how we can take a breather from the dance floor to mingle and top up our refreshments at the luminous bar set comfortably next to the energetic stage. For a moment I truly felt that we had been transported straight to Cuba.

For Bassam Al Ibrahim, the CEO of Innovation Films, making films is all about passion, creativity and persistence. QH’s Rabi’ah M. went to find out more.

S

etting up a film production company in a country like Qatar can be quite a challenge considering that only recently the country changed its attitude towards the profession. One of those key contributors to the Qatari world of filmmaking is Bassam Al Ibrahim, the CEO of Innovation Films, one of Qatar’s leading film companies. Born in the U.K, he graduated from the University of Essex and is currently working in the telecoms industry. Describing himself as “motivated, focused and hell-bent”, he likes to reach the end goal, even if that means he works many late nights.

The story of Innovation Films goes back to 2010 where the main purpose was to produce films. By 2013, the Chairman contacted him and asked him to support on a film project where he was positioned to work as an executive producer. It was during that time, that company revamped its structure into multiple revenue streams where he was appointed as CEO.

It is from this point onwards that Al Ibrahim‘s love for film-making emerged and blossomed. It is thanks to training and consulting on short and feature films that has contributed towards the success of Innovation Films.

He adds: “...we have various local productions and worked with the Doha Film Institute (DFI) to foster and establish local talent in every aspect of filmmaking, both in front of the camera and behind it.”

Al Ibrahim is a big fan of action, sci-fi and horror films which are his favourite genres. His favourite filmmakers are: Stanley Kubrick and Francis Ford Coppola. He adds: “I have to say Fritz Lang also because he was one of the first ever Sci-fi film-makers and he created the marvel that is - Metropolis.”

For Bassam, it has been all about supporting talent in Qatar which was the main inspiration for setting up Innovation Films in the first place. In fact, this all started with his brother Mohammed Al Ibrahim, who is an award-winning filmmaker who showed Al Ibrahim a script he wrote. This fascinated Al Ibrahim who enjoyed learning about the growth and changes that the story went through as it evolved.

With regards to the recognition achieved by Innovation Films, Al Ibrahim adds: “There are several key things we have done which have resulted in us bagging a few awards. For instance, at the Abu Dhabi Film Festival and the Gulf Film Festival, we were recognised for our highly acclaimed film ‘Bidoon’, followed by short-films like ‘Qarar’ and ‘I’ which were very much appreciated by the audience.”


The top notch films produced at Innovation Films include feature films such as Lockdown-Red Moon Escape which was, essentially, a test run to see whether the talent available on and off the camera was good enough; the results were simply outstanding. The reviews received from the industry were positive, as Al Ibrahim notes: “When the film was screened in Dubai, I heard people saying that finally, the horror genre is being taken seriously in the Gulf. We have been focusing on short films lately, but we plan to search for some feature film scripts in the near future to produce.” “I’m fishing around for a great script, all I can say, is stay tuned.” n

In terms of the film-making scene in Qatar, Al Ibrahim defines it by saying that “it’s in its maturing phase” and that “it will take time to evolve and improve.” The role of DFI has been imperative in the case of Qatari film making because it has been actively providing an excellent platform for the industry to grow for many years now, however, it is companies such as Innovation Films who possess the abilities to explore the ‘road less travelled’ and experiment with new creative ideas which allow talent to learn, develop and grow. Since 2010 the abundance of Qatari filmmakers has steadily been increasing. In the last six years, the maturing of people and ideas has become more visible as Al Ibrahim explains: “...the flow of concepts and ideas has flourished and this helps to improve talent.”

Lights, camera... action!

One of the most common mistakes most filmmakers tend to make is switching to cheaper ideas, Bassam points out: “Being creative is definitely a blessing and simultaneously a curse; it’s a blessing because creative people have wonderful concepts and a curse because the filmmaker sometimes may underestimate that a CGI idea for example may cost a lot of money. Unfortunately, this sometimes leads to directors giving up on their original idea instead of coming up with more creative, and cheaper solutions.”

As a born leader, he has also worked as a member of the coach team for Bocuse d’Or in Lyon, and Flanders for the international competition “Regional Flavours of Europe Cup” where they won the “Most Tasteful Region of Europe 2000 to 2002.” As a trusted and highly skilled craftsman, Chef Fol was also the Host Chef for the Olympic Games of Barcelona for the promotion of Belgian gastronomy and the young restaurateurs of Europe in 1992; and the Private Chef of the Belgian Olympic Team for the games in Beijing and London in 2008 and 2012. Even the most attentive parents need a babysitter once in a while. Finding someone you can trust so you and your partner can have a much deserved night out can be a daunting task. QH shows you the steps you can take to make sure you choose the right person.

Where to Look Before you even begin looking for a candidate it’s important that you know what you would be comfortable with. Think about certain qualifications that you want the person to have. Knowing this will help ensure you hire the right babysitter. Make a list of what you prefer, including age, gender and location. If you’re not quite sure where to start searching for a new sitter, you can’t beat word of mouth. Ask your friends, family and neighbours if they have any recommendations. Another good option is to find someone right in your neighbourhood. There are benefits of doing this, including that they are familiar with the area and have their own parents nearby in the event that they need an adult.

Interviewing When you get a good recommendation, set up a meeting to discuss their experience. If you have an infant it’s crucial that they need to know how to feed, change and care for a baby. One of the most important things you need to discuss is safety. Make sure they know what to do in case of an emergency and are familiar with basic first aid. It’s helpful if the candidate has had experience watching children and has taken a babysitter training course. Many of these courses are available through local organizations like the YMCA, American Red Cross and hospitals. If you are interested in this person and he or she hasn’t taken one, don’t hesitate to ask them to do so. If they have prior experience babysitting, ask if you can contact the person they ‘sat’ for so you can inquire how well they did the job.

The Details Before hiring the babysitter it’s important to go over what your expectations are to make sure that he or she is comfortable with them. Some important issues that you should address during this time include pay, advance notice requirements, cancellation policy and rules you would want followed. If you prefer that the person not be on the phone or have a friend over, now is the time to make that clear to avoid any surprises later.

Hired! Before the first time babysitting, invite the person over to tour your house and get an idea of how your family interacts. Make sure they know where a first aid kit and fire extinguishers are. Explain your child’s routine and if there are any things they are not allowed do. Leave a list of phone numbers in a handy spot that will include emergency contacts, your child’s doctor, a trusted neighbour or adult, and a way to contact you. Let the babysitter know if there are foods that are off limits due to choking hazards or allergies and any other specific rules that you may have. If your children are of age, have a talk with them to explain that they will be with the sitter and what behaviour is expected of them.

Relax Now that you have done your homework and set the babysitter up for success, it’s time to enjoy your night out. The first couple of times you leave your precious one with a sitter will be the hardest. Keep in mind that this is normal. When you get home and see everything under control you will know you chose the right person. n

ast month saw our baby boy turn one. Where that magical first year has gone I will never know, I’m still searching for it. However, what a pleasure it has been to reminisce over old photos and videos (literally thousands of them) and be in complete wonder that our tiny baby was once so small and fragile and is now so agile and able to move around quickly! Not to mention jump up and down in his crib like it’s a trampoline at 3 a.m. So I always knew I wanted to do something really special and cute for our boy’s very first birthday especially as we travelled back to Scotland to celebrate with family and friends. Being so very British and all, we opted for a tea party theme and it was a huge success! Think babes at your feet crawling and rolling around whilst you sip the very best tea and scoff on cucumber sandwiches, cheese scones and cake upon cake. Perfection! I have to admit I came across the idea on Pinterest, which is my go to for all things baby, so if you haven’t already checked it out – please do. On there you are guaranteed to stumble upon such events as a ‘cake smash’ - allowing your newly turned toddler

to smash up their very own birthday cake. We didn’t quite go that far…think of all those poor wasted calories! I must admit that looking locally for the perfect personalised gift for our boy was a real headache. Perhaps you’ve noticed how difficult it is to get such thoughtful treats for loved ones? In Doha it just seems so tricky. I really wanted to get Riley a giant Tipi that would be fun to play in with his younger brother in years to come. Lucky for me, our neighbour can run up just about anything on her sewing machine and thankfully came to the rescue to make this absolutely stunning creation (complete with gold tipped feathers as per my request!) She’s also a wonder at bunting, cushions, anything you would like to put your child’s name on – she can do it. Check out her page on Facebook titled 3 friends and a boat. Even one tree can offer many simple teaching options, students could draw the tree, watch a seed fall and tell its story in poetry, make faces to put on the tree and tell the story of what they see once the class has left, study the tree as a habitat and construct food chains, investigate variation in leaves and use angles to estimate the height of the tree. As winter approaches, it’s time for teachers at Doha College, and across schools in Qatar to encourage learning in a natural, or non-classroom setting.

T

here are obvious benefits of taking our students back to nature such as learning and taking care of our natural environments and the creatures and plants that inhabit them. There is also the advantage of physical exercise and refining our younger students motor control skills and helping them develop their strength and coordination. We all appreciate that active learning and outdoor play are essential to children’s health and development. Children’s fitness levels improve and they learn about the differences in their bodies before and after exercise. Physical activity also releases endorphins so there are psychological benefits, such as improved self-esteem.

Outdoor learning can be fun as well as informative

great outdoor green spaces and an active ecowarriors community has been established to highlight the reduce, reuse and recycle ethos which, as a school, we are striving to instil amongst all our community.

At Doha College, we offer several outdoor quiet areas for our students where they can read or revise. We have found that using these spaces helps out students to stay calm before exams, and helps them to focus their minds too. Being alone but not lonely in a special outdoor place really helps students tune into the present and focus their thoughts and feelings while acknowledging all the other “stuff” that enters their heads. Using the sensory faculties then brings us back to the present. It is often a real de-stressor.

Our Learning Garden in West Bay is very well established and has proved popular with our parents as they wait for their children. Work on our Al Waab garden is also underway and now the weather is improving, we can begin again in earnest. Gardening clubs are run regularly as part of our after school activities and encourage students to learn from nature, to plant seeds and harvest nature’s rewards. The creation of these areas has been a powerful tool for exploring and supporting learning, but also in developing our community connections fostering a culture of collaboration among our students and parents.

Four Seasons Hotel Doha invited Qatar Happening to the city’s one and only, highly personalized dining experience, Elements BBQ Pit. We sampled a six course meal and discovered a true culinary experience to delight the senses. Give us more!

So, looking forward to a pleasant evening ahead, we then proceeded to our table where we were joined by the amiable Hassan Sarraya, the hotel's public relations executive. We were ideally seated in full view of the chef's grill station, so we were able to watch his mastery and skills in preparing mouth watering dishes. That alone undoubtedly made us feel hungry!

t was a perfectly good night to be out and about, on a Thursday evening with the temperature just a little over 30 °C. And what a better way to start off the weekend than to experience good food in a restaurant with a cosy outdoor setting. With that in mind, our small group of four headed to the Elements Restaurant at Four Seasons Hotel Doha which is situated in the buzzing West Bay District, right at the heart of the city. The restaurant is inspired by the four elements of earth, wind, fire and water, and the ambiance certainly makes you feel relaxed. The elegant, sophisticated decor and pleasant layout

The Elements' BBQ Pit Experience is the first and only restaurant offering of its kind in Doha. Ordering and dining is tailored and personalised according to guests' preferences (the restaurant offers an innovative mix of Arabic, Asian, Indian and seafood cuisine) The very affable and good-humoured Chef Alessandro Fontanesi - the hotel's executive sous chef - started preparing our first dish of the night. This particular night the menu was a blend of Western and European styles. The chef and the assistant chef engaged us in conversation whilst expertly preparing the food. It did not take a long while before we had

incredibly tasty, smooth and fluffy Mandarin and Foie Gras atop an enriched bread dressed with mandarin orange slices and dabbed with the chef's homemade orange syrup. It was a decent size portion and everyone enjoyed it. It was absolutely delicious and lip-smackingly good. Next on the menu was the Lobster Catalana with baby spinach and cherry tomatoes. While we know for sure that our friend enjoyed the lobsters (he had two helpings), some of our party weren't seafood aficionados. Upon learning of our predicament, the seasoned chef readily offered a different dish, and in a heartbeat prepared for us the melt in your mouth Beef Carpaccio with baby spinach topped with a special creamy dressing. And on to the next dish, 'The Burnt', as they called it. It was a gas cooked salmon - gas cooked as it was literally cooked using a portable torch (the chefs admit they do play with fire in their kitchens and ovens, *wink!). As for me, I would like to call it the "all in" salmon serving. It has the appetising taste of grilled salmon, served with a rich and luscious pumpkin puree along with fresh, thin slices of raw salmon. Salmon lovers ought to try this flavourpacked dish!


was served. The tenderloin was adorned with mushroom strips and served on a block of salt. yes, a block of salt. The cut was exceptionally good, extremely tender with enough juiciness, very tasty, and richly flavoured. And there was no shortage of vegetable sides either. The choices included Portobello mushrooms, asparagus coupled with broccoli and mashed potato. You will definitely love the generous servings, I know we did! Although we were quite full by this stage, we helped ourselves to the array of delectable desserts served by one of the hotel's house chefs, Chef Saleem. There were bite-sized chocolate cakes, mini chocolate mousse, assorted pastries, sherbet, among other tasty treats. The selection will totally gratify your sweet tooth.

The stellar preparation of the next course unfolded right in front of us. The Potato Ravioli was up next - a seasonal truffle and piedmont's fog. It was beautifully presented, incredibly delicious with its superb flavours. It was indeed magnifico! I would say that one of the highlights of the experience was the slow grill Wagyu tenderloin with Himalaya pink salt. As our table adjoining the BBQ station we caught a whiff of the pleasurable meal coming our way. And then it

The most popular newcomer to the BBQ concept, the Amwage Thursday BBQ Brunch at Marsa Malaz Kempinski makes the most of its idyllic location with tables on the pristine white sand and on the terrace. I had a premium spot on one of the tables set out in the sand and after doing away with my footwear and with my welcome beverage in tow, I made my way to the buffet, ready to nibble at the starters. Spread out before me was an eclectic mix of hors d'oeuvres such as soup, rustic bread, exotic salads and deep-fried nibbles. My top pick from this selection was the nibbles as they were the perfect precursor of what was to come. Seasoned lightly and with a little crunchiness, they made for a lovely appetiser. For the mains, I was spoiled with a bountiful selection of ocean-fresh seafood, sumptuous Shawarma and premium BBQ meats cooked to order. Let the Chef know what you’d like and he’ll whip up a beautifully seasoned piece of juicy meat exactly as you wish. I requested that the desserts be served a long while after the main course to allow me plenty of time to enjoy the peaceful yet cool setting of the beach and the sound of the jazz band made for an unforgettable experience. Desserts came in the form of chunky slices of pineapple on a stick, rich chocolate ice-cream full of crunchy pieces of dark chocolate, a light crème brûlée and cute puff pastries. A simply delectable end to a wonderful night under the stars! Amwage’s epic brunch is the perfect occasion to kick back and relax and enjoy the quiet ambience that usually comes with sitting on a beach. So take advantage of the cool weather while you can. n a typical Saturday afternoon in Doha, after a week of chaos, beating deadlines and running errands, a nice and enjoyable time with the kids is something to look forward to. And what better way to spend time with them than over a sumptuous meal which includes fun-filled activities for the little ones. After an un-expected mini-adventure to reach the Marsa Malaz Kempinski due to road closures for the recent 2016 UCI Road World Championships – we had to take the shuttle bus from the Exhibition Center (near Katara) to the Pearl, followed by some golf buggy rides (whilst also carrying my two year old son), despite all this, it was certainly worth it. We were greeted by a staff member dressed as Batman at the entrance and then escorted towards the dining hall. It was indeed a fun sight to see especially for a big kid like me. It was impossible not to be captivated by the fun-filled treats for the kids such as the colouring stations (with mini tables and chairs), a generous mini-buffet kids station. My eyes were actually glued to the chocolate fountain as well as the dozens of mouth-watering sweets. My favourite though was the kunafa - a Middle Eastern cheese pastry soaked in sweet, sugarbased syrup, certainly, one slice wasn’t enough.

LAMB CUTLETS WITH RICE CAVIAR Ingredients • 500 grms Lamb Meat Cutlets • 50Grms caviar • 1 cup of rice • 1 cup water • 1 cup beetroot juice • 150 grms of sour cream • 2 pcs. Cherry tomato, rocca leaves, boiled beetroot cubes • 20 grms butter • Salt, pepper, puppy seeds

PAELLA Ingredients • 1 Kg peeled and deveined large shrimp • 500 grms mussels, cleaned • 1 cup frozen peas • 2 cups white rice • 3 tablespoons olive oil, • 3 cloves garlic, crushed • 1/2 teaspoon crushed red pepper flakes • 1/4 teaspoon saffron threads • 1 bay leaf • 4 quart chicken broth • 4 sprigs fresh thyme • 1 red bell pepper, seeded and chopped • 1 medium onion, chopped • Salt and freshly ground black pepper

CHOCOLATE BALLS Ingredients • 1 cup chopped apricot • 2 table spoon chocolate sauce • 1 cup apricot juice • ½ teaspoon vanilla extract • 3 table spoon caramel sauce Directions To prepare the chocolate balls start by mixing the chocolate sauce, vanilla extract and apricot juice. Then slowly add the caramel sauce. Stuff it with chopped apricot and roll to form a ball. n

The History Of Food: Spain With Chef Zarmig

Chef Zarmig takes us on a tour of world cuisine. This month, we take a look at the country of Spain.

W

hether it’s the ancient streets of old towns, the rhythmic steps of flamenco dancers, or the flavours of its varied cuisine, you will be amazed by the splendour of Spain. The country possesses an intensely rich, captivating and tantalizing cuisine. Traditional Spanish cooking is flavourful but also quite frugal, and many of its finest dishes originated not in palace kitchens, but from the countryside. The country and its kitchen is very diverse. The gastronomy, like the landscape, like the country

itself, is blessed with culinary riches from its many distinct regions. Spain is surrounded by water on three sides. Seafood including prawns, barnacles, giant lobster, and fish is a mainstay of Spanish cooking. Hills and streams separate Spain’s 47 provinces, each region developed their own cooking styles. Climate and available ingredients helped characterized these styles. Stews became popular in Spain because they are easy to cook in one pot over primitive wood and charcoal stoves. Proximity to Africa and a historical Arabic influence have left a mark upon Spanish food in the south, particularly with respect to pastries and other sweet desserts. Close to the Mediterranean Sea,

fish and seafood are prolific in this region. Grilled fish, and casserole made from bull’s tail are popular. “Mejillones” or mussels are a very popular tapas dish in Spain and are prepared in many different ways. This recipe is simple and refreshing. A particularly interesting dish that originated from the Andalucía region is gazpacho, a cold soup and frituras, a local dish made with small fish. The east coast of Spain is often called the land of rice. Rice is used in many dishes, particularly in paella, a savoury rice stew of chicken, seafood and vegetables. Originated in Valencia, it was a dish for farmers who could not make it back home for lunch. Rice is sprinkled into the pan which absorbs the flavour and offers a very filling starchy base. The pan itself acts as a communal plate and the rice is eaten with spoons.


Spain’s most famous international dish is undoubtedly paella. While foreigners will refer to it as a “Spanish dish”, Valencianos will be quick to point out that it is very much their regional standard. A trip to Parador El Saler will clear any doubt you have about this matter, as it is located in the birthplace of paella: try out some authentic Valencian paella –made with rabbit, chicken, duck and land snails. Olive oil is usually purchased daily at the market. This oil comes from the tasty green olives that are grown by the millions in southern Spain, and it is used throughout the country. Shoppers bring their own bottles to the market and fill them from an enormous container. There are almost as many kinds and qualities of olive oil as there are olives in Spain. Olive oil is used so often that many Spanish skillets never lose the smell of it, even when they are scrubbed clean. n

QH had the pleasure of sitting down with Co-Founder, Ghanim Al Sulaiti and Executive Head Chef, Matt Downes to find out more about Evergreen Organics Café.

T

he cosy feeling I got when entering the café could not be denied. I instantly fell in love with my surroundings, warm, green and homely; you could see the love and details that went into creating the space. The café is undoubtedly a reflection of its ethical image. I was welcomed with a warm smile and a friendly handshake. A Qatari native, Ghanim’s journey to a vegan lifestyle started three and half a years ago. “In our region, meat has become an integral part of our culture. However, as I started to research, and speak with our elders, I found that meat has not always been a part of our daily diet. Qatar was once a poor country with people living on potatoes, grains, dates and other vegetables. That was sustainable. Chicken, fish and meats were not a focal point of the diet.” He continues, “It is through my travels that I was exposed to different dietary lifestyles. I

find good, inventive vegan options that were both healthy and delicious. In a country obsessed with meat, I often found myself returning home to eat as there were little to no options for a vegan,” says Ghanim. Evergreen Organics introduces a satisfying menu that will leave you wanting more.

I was shocked to see 90-year-olds running on the beach, healthy and active in countries like Thailand, Cambodia, Bali and Japan.” It was through observing and learning about the daily diets incorporated into these individuals’ lives that Ghanim then realised he wanted to make a change. “To see people engage in meat-free diets, while practicing earth to table habits using fresh, organic produce was inspiring. It was in Ibiza I was most shocked. Everyone thinks of Ibiza as a party town. It is one of the healthiest places I have had the pleasure of visiting. Almost all restaurants practice an earth to table concept. Everything I ate was so fresh.” Ghanim adds that Morocco was also another inspiration for his journey to a vegan lifestyle. It boasts an 80% plant-based diet with lands rich in farming produce, producing oils and growing almonds. Co-Founders, Jawaher Al Fardan and Ghanim Al Sulaiti hope that through Evergreen Organics, they can introduce and educate Qatar’s residents to an alternative way of living. “As a concept, our café is not about eating but rather about inspiring people, and changing how they view food.” With a diverse menu to satisfy everyone’s taste buds and a dedicated team of 23 people, the café promises an experience you won’t forget. “It was hard to

The time and effort that goes into the food is truly inspiring. New York native and Head Chef, Matt Downes observes, “In our restaurant our food is 100% plant-based. We practice raw techniques that include making our own flour. We soak seeds and/or oats; we then dehydrate, and follow by grinding into flour that we use in our foods. Our cheeses are all made in-house. We soak, ferment, dehydrate, and create. It’s a process to healthy food, healthy eating.” It is with the help of Sous Chef, Maros Weiser, and Pastry Chef, Carolina, that this café has such a ‘hands on’ approach to good food. Evergreen Organics Café has a 90% gluten-free menu and is a 100% soy-free menu. They take pride in using only natural sweeteners such aspure maple syrup, coconut sugar, coconut nectar, and date syrup among others options. As with most things organic, prices can often be higher than conventional options. Ghanim passionately explains though, “It’s a matter of prioritising where you’re willing to spend. I know people willing to spend thousands on a bag but unwilling to spend five riyals on an organic apple. It’s the lack of education and lack of understanding of what we’re putting into our bodies. Ask yourself, why is it that a fast-food burger costs just $1.00 or why is your pasteurized milk mass produced yet costs so very little?” Every ingredient is made with love and process. “Who else do you know that is making ketchup from scratch using delicious ingredients like Goji berries? We activate our almond milk in-house and our kimchi is fermented for 14 days before serving,” smiles Chef Matt.

Evergreen Organics Café is a space that will leave you in awe. “Healthy means real, real means earth, earth means natural and raw.” says Ghanim. The café is based deep in ecological ethics and boasts plenty of forward thinking, such as NASA certified indoor plants, proven to improve indoor air quality and provide higher oxygen levels every two hours while absorbing toxins. The light shades are made of recycled bamboo and all fabrics are organic cotton. The packaging is fully biodegradable, the wood used in-store is reclaimed or recycled, and the bowls used for serving food are made from sustainable materials. Even the ink used on the menus is plant based. On premises, there is a recycling bin for recycling the PET plastic bottles used for juices. Ghanim and Matt share that they are happy to be sourcing most of their ingredients from local and regional farms. “We are currently working with three farms based in Saudi Arabia, two farms in Dubai and one farm in Lebanon. We hope to encourage local farms to supply organic foods. Qatar has the financial capacity to invest in technology that can grow what we need. We won’t need to outsource and can, in turn, depend on ourselves.” Definitely an experience worth having! A good slurp on an ice cold refreshing smoothie can leave you feeling energised and healthier. Loaded with benefits including antioxidants and vitamins, QH shows you how to cram your daily fruit and veg’ allowance into one drink.

What is a smoothie? A smoothie is a thick beverage made from blended raw fruit or vegetables, with other ingredients such as water, ice, dairy products or sweeteners such as syrups. But hang on a minute, could this be the reason they are sometimes questioned in terms of having any real health benefit? Yes. You see, the health benefits of a smoothie depend greatly on its ingredients. Many smoothies include large servings of fruits and vegetables which, although recommended in a healthy diet, can be bad as well. Too many sweet fruits can lead to too much sugar intake.

Similarly, ingredients such as protein powders, sweeteners, or ice cream are often used in smoothie recipes, but are not necessarily healthy either. Smoothies include dietary fibre (e.g. pulp, often also skin and seeds) and so are thicker than fruit juices, with a consistency similar to that of a milkshake. The fibre makes smoothies healthier than fruit juice alone and leaves you feeling fuller for longer. Smoothies, particularly green smoothies (which include vegetables), are often marketed to health-conscious people, for example as a healthier alternative to milkshakes.


Some commercial smoothies, however, have added sugar, which can more than double their carbohydrate content. The fact that smoothies can be quickly swallowed without chewing makes them less effective in providing a lasting hunger-inhibiting effect than eating the raw fruit/ vegetables they contain. Often the sheer quantity of fruit blended up into each serving size makes you wonder. For example, if you blend a banana, apples, strawberries and raspberries, then splash in some coconut milk, the average amount of calories and fructose (naturally occurring sugar) would be rather high for a drink. Would you sit and eat all of that within a minute or so? Balance is of course key. When making smoothies at home, try to keep your ingredients interesting but control your portion size. A great pre or post-workout boost can be found in a smoothie or for a healthful snack idea. When ordering a smoothie, be careful to check what exactly is added. You may be surprised to find even drinks targeted to healthy eaters can be loaded with sickly syrups.

Make your own… Use a reliable blender that won’t let you down and don’t forget to put the lid on...we’ve all been there! Vitamix or Nutribullet are highly recommended brands for those who enjoy a daily smoothie. Unfortunately the cheaper blenders don’t last the distance. Buy fresh fruit and veg’ and always clean and prep properly before whizzing together. Add ice, water or milk to thin your drink out.

AFA: Seeing as it was in a Five Star Hotel with Chinese Chefs preparing quality dishes, then yes.

QH: What did you order? AFA: We ordered a Kang Pao Chicken with Szechuan Pepper Cashew Nuts & Chili Sauce, Sizzling Prawns, Steam Rice, Dumplings and Fried Rice. The taste of each dish was very authentic; it felt like we were in an up market restaurant in China.

QH: Describe the ambiance. AFA: As we enter the restaurant, I can say that the design is very classy, the furniture was comfortable to sit on and the ambiance was so classy. QH: Describe the quality of the food. AFA: Absolutely amazing! The staff was recommending us their favourite dishes. The taste was so authentic. QH: Describe the quality of the service. AFA: They gave us five star service, the staff were always ready to assist us. They are very knowledgeable with regards to their menu.

The QH team was invited to spend a morning by the sea as they enjoyed a Stand Up Paddle (SUP) class at the InterContinental Doha hotel’s beach with Surf & Soul.

I

t’s a beautiful Friday morning as we reach our destination, one of the best hotels in Qatar, the InterContinental Doha.

We are greeted by the reception staff, who politely direct us toward the beach. They provide us with towels and escort us to the door which gives us access to the swimming pool and beach area. The InterContinental Hotel has recently undergone some great changes and looks like a dream

destination for those looking for some rest and relaxation. People are enjoying the good weather and the five star service provided by friendly and professional staff. The sun is shining and a light breeze is caressing the beach. The sea is smooth and we can see some jumping fish. We reach the beach and see a group of people chatting around the paddle boards. Luciana and Sarah are the instructors for the exciting day ahead. It’s our first time and the two ladies make us feel very comfortable and confident. Luciana informs us that Stand Up Paddling (SUP) is a sport that everyone can try. She explains that her students range across all ages, telling us about some of her previous clients, such as a family where a grandson of eight years old was paddling with his

76-year-old grandfather as well as his mum, dad and teenage brothers. “I was amazed to see all the family enjoying quality time together on the water, and we are so happy to be part of this lovely family experience," she says. They explain that we will have a quick introduction on the beach before we go into the water. The quick chat focuses on the equipment, safety and different techniques that we can use when paddling. All equipment was provided by the instructors, who carefully choose the appropriate gear for each of us. Sarah asks if we have any medical conditions that they should be aware of and explains that she just wants to be extra safe. The ladies give us a 10 minute introduction and also introduce us to the others in the group, which

After learning how to fall (in a safe way), far away from the board and others, falling is actually kind of fun. The water is fresh and we are heading upwind. It’s important to monitor the wind as this is something that, we are told, we need to depend on. As they mentioned at the beginning, we always go upwind and return with the wind at our backs (which of course, is less tiring). I’m ready to stand up so I

After 10 minutes or so my legs are back to normal again. Now I’m truly enjoying the sea. I can even observe wildlife around me; a very shy turtle pops up to the surface and then swims away. There are some fish playing around us and also some baby sting rays. Simply amazing! I can’t believe that I’m in Qatar. As we continue to paddle, I get to know other people in the group, which is fun. Who knew I would make new friends on the open ocean? We stop for a while, sitting on our boards in the middle of the sea. The instructors conveniently produce a cooler full of fresh water, which is very thoughtful as paddling can be thirsty work, at times. Some of us decide to go for a swim, others just sit there floating and chatting or catching the sun. After 10 minutes, we make a turn and head back to the InterContinental Doha beach. I had a very pleasant time, and the best thing is that I was also exercising and I didn’t realise it. I felt like I was simply hanging out with friends by the sea. I’ll definitely come back. I loved SUP-its fun, easy to

learn and I made some new friends who I will meet with next week. It’s important to know that classes are subject to the weather and that the instructors will give you an update the night before your class. The instructors offer a range of different classes depending on their clients' needs, including sessions for kids, families, fitness, intermediate and advanced levels, trips and expeditions. In addition, there will soon be a new instructor joining the team to provide SUP yoga classes. They also offer corporate deals for team building activities and events on the water. It’s important to note that they have an on-going schedule, but for just a minimum of three people, you can choose your day and time (if the slot is available). I recommend to everyone to give SUP a try. If you add to that the often busy and quite hectic roads, early sunsets and lack of outdoor activities, it is hard for the average ‘joe’ to be full of enthusiasm for a late workout after work. However if you find yourself in those all-too-common shoes then please

Become Swedish Now, of course I do not mean dying your hair blonde and putting on those contact lenses, I’m referring to their productivity levels within their six hour work day. If you allow yourself to think that you have all day to get things done, the likelihood to delay or procrastinate will be more likely. Try to really take advantage of every spare minute and create a task list which can realistically be completed within six hours. This will increase your productivity and allow you to leave work on time. In turn, this will enable you to have more quality time when it comes to your workout.

School Lunches The biggest trap to fall into as a busy professional is whether to eat at the work cafeteria or one of the local spots near the office, but that is often our downfall. We all know or should know by now how important it is to eat healthy in order to maintain a healthy body, therefore avoid the sugar filled meals I am sure you’ve been indulging in. Rather, set a time on a Saturday in which you are going to prep the basics for each lunch of your work week, whether it is a batch of roasted vegetables, quinoa or what have you. Preparation is the key.

Classes Are Great Join some fitness classes! This is an amazing way to introduce routine into your lifestyle. If you take a step back you will realise how much we are restricted by our routine, what time we eat, sleep, leave the office, pick up the kids – it is all regimented. Desk Diary What do you have sitting on your desk sustaining you throughout the day? Do a fruit shop and have some goodness at hand that your body will thank you for, mangos, grapes, apples, passion fruit. Do not fall into bad habits of five to six cups of coffee and a chocolate bar. Your organs are not going to like it and trust me neither is your belt buckle.

Unplug Now this one isn’t easy, especially for the dedicated and passionate workers out there. If you’re managing people, schedules, projects and even day-to-day activities it’s not easy to switch off. You are often running in several different directions thinking of the tasks for tomorrow and the efforts of today but it is vital you learn the ability to ‘unplug’. This can be achieved in many ways but it requires a 100% commitment, so put down the phone and get to it. The elevator swiftly carried us up to dizzying yet heavenly heights. Our suites were beautiful and spacious and the view fantastic. Without wanting to waste a minute of our staycation, and promising ourselves a second helping of that stunning vista later in the day, we tossed our bags on the floor and made a beeline to the first pit-stop of the afternoon; the award-winning Crossroads Kitchen for their International Friday brunch.

QH’s finest were recently invited to spend some quality time at the prestigious Marriott Marquis City Center Doha Hotel. Needless to say, we were excited to experience what has been billed as a very appealing option for a staycation right in the heart of the city. 78

t’s hard to believe that only two years ago, Marriott Marquis opened its door in Doha’s glamorous West Bay district. Since then, Marriott’s flagship establishment in the region has been the recipient of no less than three highly prominent hotel accolades and 13 Food and Beverage awards, marking their truly meteoric rise and exceptional achievements in service excellence and hospitality. We had been informed that the hotel is in line with Marriott International’s Marquis Strategy. This designation is given only to select properties that are distinguished by their exceptional offerings and iconic locations, including expansive meeting facilities, multiple restaurants and grand public spaces. The Marriott Marquis City Center

The restaurant is managed by Kelwin Lewis and Chef Grant Marais is the Chef De Cuisine. It’s a brilliant concept of dining which incorporates the signatures and classics not only of Crossroads Kitchen but also of New York Steakhouse and Cucina. Replete with two live cooking stations featuring creations by the renowned Chef David Dahlhaus (Chef De Cuisine, NYSH) and Chef Marco Matteucci (Chef De Cusine, Cucina) the Crossroads Brunch combines the best of two of the Marriott Marquis’s signature outlets, elevating the brunch experience to another level altogether. Chef Grant took us on a tour around Crossroads, explaining that as well as Cucina and NYSH stations, you will also find the finest sushi, cheeses, salads, seafood, desserts and homemade ice cream, to name but a few! Everything tasted absolutely divine; fresh, smart combinations of flavours that danced on my tongue and delighted the palate. After visiting the restaurant, it was finally time to while away an hour or two by the pool before our spa appointments. The outdoor area was both beautiful and spacious. It was easy to believe that we’d left the city altogether as the pool is well concealed on all sides. It felt like being on holiday, relaxing in the sun and enjoying a cool, refreshing beverage.

temperature to better the effects of the treatment. It felt extremely pleasant after the exfoliation step.

After a quick shower, I was ready to head down to the Saray Spa. Their website informed me that the spa draws on the mineral-rich properties of the Dead Sea, using traditional Middle Eastern treatments along with a range of high-end products in elegant and luxuriously decorated surroundings. Personally, I couldn’t wait to try it out for myself. I was greeted by Hazel, who graciously led me to a relaxation room. These secluded areas are beautifully decorated and aromatised to induce a calm atmosphere. I was given a delicious ginger tea to prepare my body and mind before receiving the special Oud signature package. Shortly after, my therapist Ayu, from Indonesia, appeared and invited me into the treatment room. She patiently talked me through the steps of my treatment before we began to make sure that I was ready. It began with a 25 minute Oud Body Scrub. According to Ayu, the exfoliation is a good way to both remove dead skin cells and increase blood circulation. The scrub is made of salt from the Dead Sea, combined with the scent of Oud. The natural minerals in the salt helps to heal and nourish the skin. They can also detoxify and cleanse the body. After the body scrub, I had a quick shower before proceeding to the next step of the treatment. I could already feel a difference in the texture of my skin. It felt a lot softer and fresher than before. Next, we move on to the 25 minute Oud Body Butter treatment. The butter detoxifies, moisturises and soothes the skin. The high levels of antioxidants in the butter rejuvenated and nourished me, as well as providing a protective layer to hold in moisture and prevent dryness. After the butter was applied, Ayu covered me in a thermal blanket which increased my body

While the thermal blanket did its job, Ayu began the 25 minute-long Essential Express Facial. It began with cleansing milk, then the toner, and followed by exfoliating scrub. And last but not least, the all important moisturising serum. All of the products used were Phytomer Products marine or sea algae based and recommended for sensitive skin. At the end of the treatment I felt fabulous. My skin was noticeably smoother and softer, giving me the confidence to continue my staycation with style! If you are looking for nightlife entertainment, the Marriott Marquis has a diverse collection of lounges and restaurants providing tastes and beverages from all around the world. We settle in to dine at Ipanema, our dishes arriving to the accompaniment of the melodic swaying rhythms of Bossa Nova, sublimely delivered by the in-house Brazilian band. The evening blends into a sequence of delightful dishes and dulcet refrains. After another helping of the glittering and twinkling city expanse beneath our suites, it’s time to turn in for the evening. The next morning, wholly rested and rejuvenated, we make our way to Crossroads for breakfast. After agonising over the huge breakfast buffet for several minutes, we choose eggs Benedict and a cappuccino. A classic breakfast, but one that can be difficult to get right. Luckily, we’re in safe hands and everything is faultless. With freshly squeezed juices and seasonal fruits on the side, it truly was a perfect way to begin the day. After breakfast, we manage to squeeze in some extra time by the pool before it was time to go. Sitting under the blue skies, in such an elegant setting, we quickly forget the looming spectre of work the next morning. It’s incredible how quickly you learn to let go and relax when you’re enjoying

luxury facilities, 5-star service and unique outlets. In less than two days, we felt as though we’d had a week-long vacation. QH can confidently recommend the Marriott Marquis to anyone who wants a luxury staycation to escape the stress of the daily grind. Palm Springs is the dazzling city in the desert which awaits you with warm weather, pool parties, midcentury modern architecture and old Hollywood allure. QH takes you there courtesy of travel contributor Francesca Cruz.

A

mirage in the desert is how one could describe Palm Springs, California. A resort city that is celebrating its resurgence as an oasis of glitz, as it once was, in the 50s & 60s. Once a retreat for Hollywood stars of the likes of Cary Grant, Marilyn Monroe, Elvis Presley, Elizabeth Taylor, and, of course, Frank Sinatra and the Rat Pack, tourists now flock here in droves for the mid-century modern architecture, the golf courses, the sunshine that leaves visitors with an almond toasty tan, the palm trees and pink sunsets, but above all, the hope that desert glam and retro cool might rub off. Instead of flying direct to Palm Springs, I recommend the option of driving and experiencing the desert. From Las Vegas, it’s about a 4-hour drive (which is the route chosen on this occasion) but from Los Angeles, it is about an hour and 40-minute drive. The desert at dusk on the famed Route 66 is truly spectacular.

The sun sets a blistering tangerine with bursts of yellow. You actually do see tumbleweeds on the horizon, and once you drive through Joshua Tree National Park, you are in for a flurry of visual candy. A scenic wilderness that combines two distinct desert ecosystems: the Mojave and the Colorado, a treat to enjoy as you approach the famed Palm Springs. The first stop was settling into the Saguaro Palm Springs. Once a motel, it was turned into a

boutique hotel by Joie de Vivre. Painted like a rainbow and lauded for its weekend pool parties, it’s just an 8-minute drive from downtown. Another option for lodging is the legendary Riviera Palm Springs. Built in 1959 by visionary Irwin Schuman, whose desire was to bring the razzle-dazzle of Las Vegas to Palm Springs, the Riviera soon became the desert hotspot. It has also just enjoyed a $70 million renovation, so it’s ready to impress visitors and get the party started.


You may be keen to set out on a tour of some of the city’s most revered mid-century modern architecture–like the Palm Springs Official Visitor Center designed by Albert Frey and Robson Chambers. Or the Elvis Honeymoon Hideaway, initially a design of William Krisel but built by developer Robert Alexander, and considered ‘The House of Tomorrow’ for the way it was erected: three stories, with not a square room in the four concentric circles. Or the Elrod house built on the edge of a hill by architect John Lautner, a concrete work of art delivered to its patron in 1968. However, before all that aesthetic beauty, one must first fuel the body. I did plenty of research on breakfast and brunch in Palm Springs. The gent ‘who is in the know’ in these parts, and sort of a Palm Springs historical sage, Kip Seratin from the Kip Group, directed me in all the right directions. For an ambrosial Sunday brunch and views of the towering San Jacinto Mountains, Escena Lounge & Grill is the spot. For a scrumptious breakfast when on the go, Tipper’s Gourmet Marketplace, an artisanal deli owned by wanderluster Felix Tipper is one to highlight. The huevos rancheros will have you returning again and again, while Felix’s enthusiastic disposition adds to the experience. I ventured off into the desert to visit Frank Sinatra’s first home for my next stop. This is the home he shared with screen femme fatale and second wife, Ava Gardner. Built in 1948 by architect E. Stewart Williams, it was finished in under a year, as Sinatra ordered. Considered Desert Modern, it set the standard for post-war Hollywood glamour. It was also the home that witnessed many of the volatile couple’s quarrels. As the relationship came to an end, Sinatra sold the home, perhaps due to it being the setting for too many painful memories with Gardner.

To follow suit with all things retro, taking in a show at the Purple Room is in order. It is a supper club and performance venue where the Rat Pack [Frank Sinatra, Dean Martin, Sammy Davis Jr., Joey Bishop, and Peter Lawford] first performed. Decked out in Lazarus purple–from walls to curtains, to the ambient lighting–the Purple Room does not disappoint. Next stop, dinner, and there are a couple of great places to enjoy in Palm Springs. Melvyn’s, a staple of Palm Springs, serves up American fare in a setting which features wonderful images of some of its most famous patrons: Cher, Bob Hope and Dinah Shore. If you’re in the mood for Mediterranean fare then Miro’s, which is tucked away in the Plaza del Sol, is a winner. I opted for a place the locals raved about–Johannes Restaurant. Chef Johannes Bacher serves up an eclectic mix of continental and Austrian cuisine. With impeccable service and a dimly lit setting, Johannes will impress you and enchant your taste buds. Do not pass up on experiencing the scallops or the New Zealand Grass Fed Young Lamb Rack. If you want beautiful weather, palm trees, the glamour of a bygone age, great food, and iconic architecture–Palm Springs awaits you. n

I love a massage. I would have one every day if I could so when I began gazing over the Amoaras Spa menu online, I was already drooling. How can you not be intrigued by the sounds of ‘Coffee & Lime scrub’ or ‘Cleopatra’s Milk Bath'? Then there is the ‘two hour West Journey’ – a blend of Swedish Massage & La Stone Therapy with your choice of Chocolate Indulgence or Honey Sesame Body Glow. However, the one I have always wanted to try but yet to do is the famous and slightly bizarre Cupping Therapy treatment. Basically whatever type of treatment you want, they have it at Amoaras Relaxation Spa – including the traditional facial treatment, full body oil massage, exotic body wraps and body scrubs through to the Turkish bath, Moroccan Hammam and more. Would it be over indulging if I said, I’m tempted to book in once a week for the rest of the year and try a different treatment? Looking at the vast array of options on Amoaras Spa menu, it’s very tempting. Upon entering the spa I am greeted by Amoaras Spa Manager Ms. Kadek and her team of Balinese massage therapists. I was given ginger tea as I completed the prerequisite health questionnaire. Ms. Kadek then thoroughly explained the massage treatment I was booked in for which was the Amoaras Fusion. 90 minutes of pure bliss, this treatment combines five types of massages from around the world – Balinese, Thai, Shiatsu, Swedish

and Indian. I’m always exited to try new treatments and learn about different relaxation techniques from around the world. I love a spa that can take me away to another country (or five) - even if only momentarily. I make my way to the treatment room, which looks and smells divine. Dark woods, aromatic candles and soft music. The place is immaculate, comfy and welcoming. As I get myself ready, I am asked to choose which oil I would like used for the massage – lavender, ginger, jasmine or orange. Tough choice but I decide to venture out and go with the one I’d never tried before – orange. My masseuse today is Emi. Within minutes, I can tell she is highly trained with an ability to intuitively pinpoint problem areas. This is a proper deep tissue massage from someone who knows what they are doing. Over the next 90 minutes I am pummelled from head to toe until I am knot-free. At the same time my mind is transported to a faraway land. When the treatment comes to an end, I don't want to leave. I double check my watch... But, yes, it is sadly all over, and I should add that it has been a very generous '90 minutes'. I have tried many spas all over the world but this was something special. I will definitely be returning again soon and I encourage others to pay a visit also. No matter how hard one tries to ‘take care of themselves’, the mind and body become stressed from life’s day to day pressures. Hence visiting a spa should not be seen as overindulgence but an essential gift we should regularly reward ourselves with. M

ost of the people living in Qatar are expats. With regards to female expats, some of them are working and some are housewives. However whether you’re a career woman or a homemaker, people still have talents and passions that may surprise you. Nobody wants to be stagnant; and most prefer to be busy. At the end of the day, expat women working here in Qatar will one day go back to their homeland. Maybe, some will continue to do business, some might retire and enjoy the fruits of their labour, and also, some may yet still be undecided. In this article we aim to share some passions of creative and dynamic women here in Qatar that can act as example of some skills you can take back home with you one day. Or give you some inspiration, if you’re looking for a change of direction.

LINLEY STELLJES VIRGINIA DE JONG Virginia was a Portuguese makeup artist before she landed in Qatar. Living in Doha for almost 2 years now, she is married to a pilot, a mother of one son and a housewife. Her passion is to put a smile on people’s faces and make them feel beautiful and confident. From Thailand, Linley has been living in Doha for 15 years and been sharing her Thai Cooking skills for 14 years. Her passion is to teach people about Thai Cuisine. She believes that it’s very important to keep ones identity strong and she does this through her cooking. Teaching others about authentic Thai cuisine is her way of expressing who she is and where she came from. When she was 17 years old, she had an amazing opportunity to travel around Asia and she managed to learn the art of Asian cuisine. She’s looking forward to making her own cookbook some day. PAULA CARNEIRO Paula was working as pharmaceutical sales representative in Portugal for almost 13 years. She moved to Doha in August 2016. Since Qatar has a very family-friendly environment and vibrant community, with thousands of people in the same situation, Paula decided to start a mothers and toddlers play group at The Pearl. All of the mothers and toddlers in her building go and experience fun and educational activities prepared by Paula herself. Her main purpose is to make the toddler group happy so they can leave with a smile on their face, whilst at the same time, learning something useful. She also gets a lot of satisfaction from being with the children and making new friends. Her plan is to introduce and emphasize the concepts of ‘Reduce, Reuse and Recycle’ in her activities and start organising themed parties. FRANCES ANN MONTILLA SALLY CLARK From Australia, Sally is an amateur photographer, food blogger, part time marketing student and a wife. Living in Doha for 5 years, her passion in photography started accidentally when she was travelling. She just wanted to capture the world. While on her journey she met her husband who also loves food and photography. Her husband is the one who suggested that she share her passions via a website for all to see.

Frances Is from the Philippines. She is a cake designer and homemaker. She thoroughly enjoys the process of baking cakes and decorating them. Originally, Frances was a flight attendant for nine years and has now lived in Doha for 15 years. She became a housewife after she resigned from her flying career. She explained that she was used to a hectic schedule and was unsure of what to do once she resigned.

She explained that she just wanted to follow her passion and hopes that one day; she can be a food critic or even perhaps a judge for a cooking show.

She sought the advice of her husband who told her to do something she enjoyed doing. She started decorating cakes because she’s was amazed by the edible arts.
