FILM IN FOCUS

A MOTHER’S LOVE KNOWS NO PRICE

BASED ON THE REAL LIFE EVENTS OF ONE OF THE WORLD’S MOST WEALTHY FAMILY: GETTY, THIS FILM IS A TRUE TESTAMENT TO HOW ONE MOTHER WILL GO TO ANY LENGTHS - OR IN THIS CASE, COST - TO ENSURE THE SAFETY OF HER CHILD. EVEN IF THE ULTIMATE PRICE TO PAY IS LOSING THE FAMILY EMPIRE.

S

et in the early 70’s, All The Money In The World recounts the true life kidnapping of 16-year-old John Paul Getty III (played by Charlie Plummer) and the desperate attempts of his mother (Michelle Williams) to convince his billionaire scrooge grandfather - John Paul Getty – to pay the hefty ransom put on her son’s head. The film cannot be spoken about without firstly delving into the well-documented backstory that it is known for, which is that of the cast change at the 11th hour. Filming initially kicked off and was well into the swing of it with Kevin Spacey casted for the lead of Getty the elder, however following the much publicized controversy of alleged carnal assaults against him, Spacey within a blink of an eye, was replaced by Christopher Plummer. The reshoots needed to replace Spacey with Plummer took eight days to film at a cost of $10 million, but some do say it is a price well paid; as 88-year-old Plummer brings a more believable and richer flavour to the role of an

aging grandfather than that of 58-year-old Spacey. Out was Spacey, who had been caked in liverspotted latex to play octagenarian oil billionaire J. Paul Getty. In was replacement Christopher Plummer, who needed no such stage makeup, and Plummer certainly proves to be the best thing about All The Money In The World, grabbing the role of “not just the richest man in the world, but the richest man in the history of the world” by the throat. His character played alongside Michelle Williams’ Gail, is by far a brilliance of contrast to the trappings of what (excessive) money can be like. When Getty Sr. refuses to pay the ransom demands of the Italian thugs, Gail attempts to sway him as her son’s captors become increasingly volatile and brutal. With her son’s life in the balance, Gail and Getty’s advisor (Mark Wahlberg) become unlikely allies in the race against time that ultimately reveals the true and lasting value of love over money.

Even though this film is very much a detour from Ridley Scott’s customary epic productions, it is actually not hard to see why when the script for All The Money In The World landed on his desk Scott was drawn to it. “I thought it was very valid because of what is going on today with super wealth and the way the world is going”, says Scott of the underline message within the movie; skillfully played out by Christopher Plummer, who embodied J.P. Getty’s sour and gluttonous philosophy: Greed is great; and everything, everyone has a price.

Director: Ridley Scott | Genre: Crime, Biography, Drama | Cast: Michelle Williams, Christopher Plummer, Mark Wahlberg Release Date: In cinemas across Qatar 1st February | QH Fun Fact: The decision to refilm the Kevin Spacey footage with Christopher Plummer as replacement meant that 22 scenes had to be reshot.

CELEBRITY FEATURE

GAME, SET AND MATCH! SERENA WILLIAMS LIVING HER BEST LIFE! HERE AT QH WE ARE CAPTIVATED BY THE INCREDIBLE ACHIEVEMENTS OF SERENA WILLIAMS – ONE OF THE WORLD’S GREATEST SPORTING FEMALES AS A TOP RANKING TENNIS PLAYER, AND ABOVE ALL AS A DOTING FIRST-TIME MOTHER!

14

CELEBRITY XXXXXXXX FEATURE Ranked as Tennis Number One Singles on eight separate occasions, Serena Williams has won four Olympic Gold Medals – one as a single player and three as a winner in the doubles final. She shares her record of Olympic medals with her sister, Venus Williams and although they play competitively against each other they come together for the things that matter to them – family and charity work.

And we love her very own take on fashion – she’s launched her own designer clothes under the name Aneres (easy to remember as it’s her name spelt backwards!) and her signature collection is fashionable, bold and beautiful. The clothes she has designed are practical yet feminine and flattering.

Together they have set up The Williams Sisters Fund in 2016 to work together on charity projects as a team. And that’s in addition to the charity work that Serena has committed herself to – amongst others, the Serena Williams Secondary School in Kenya, which she set up and her role in UNICEF.

Serena shares her joy of being a mother with the World by posting pictures of her beautiful daughter Alexis Olympia who is just simply adorable. Being pregnant and giving birth meant that she had to stop competing for a while but maternity didn’t take her away for long as she was still playing competitively in the early stages of her pregnancy – and at the end of 2016 played her first match since the birth of her daughter in the World Tennis Championship in Abu Dhabi.

Serena brings her many talents to other dimensions of her life – in entertainment, in acting, and in her writing.

So as her number one fans – we can’t wait for Serena Williams to come back to Doha to play tennis – and win – again!

QH HAS A ONE-ON-ONE WITH LIZ TO BRING YOU HER FITNESS INSIGHTS FOR NATIONAL SPORTS DAY. QH: What are your thoughts about Qatar dedicating a whole day to fitness? Liz: It is great that Qatar has dedicated one day to

National Sports Day as people will be encouraged to try out various sports and potentially find something they really enjoy doing, which then may lead them to sign up to participate more in. Families could discover they like exercising together and see how much fun they can have, so may again participate more.

QH: What sporting challenges have you faced in Qatar and how have you overcome them? Liz: The challenges here in Doha are mainly due to

the climate. We encourage children to exercise all year round and therefore teach them to learn how to adapt throughout the year so to maintain a year round fitness.

QH: What is the best thing about living in Doha? Liz: The good things about Doha are its people, weather

and culture. Doha has such a beautiful mixture that there is something for everyone.

20

NATIONAL SPORTS DAY QH: How much has participation in running increased over the past few years by the people who live here? Liz: Sport in general has increased here in Doha,

triathlon and running is proving very popular and more parks are opening to make better running environments.

QH: What will you be doing this National Sports Day? Liz: On National Sports Day I will be doing

something I thoroughly enjoy, which is coaching. So you will be able to find me coaching athletics.

QH: What are you looking for when you are identifying potential talent in a young athlete? Liz: I look to develop the fitness levels for all fitness

abilities in school children. We teach the ABC skills in athletics, which enables the children to get fit for all sports.

QH: You have achieved so much in your sporting life – what do you consider to be your greatest achievement? Liz: My greatest achievements are several really

– being World Champion and fastest woman in the World for over four years, Olympic Silver Medalist for 10,000 metres and the winner of the London and New York marathons – hard to choose one!

QH: What are your future goals? Liz: Future goals are to keep developing future

champions and to encourage more people into healthier and active living skills.

QH: What is the best piece of advice you can give to any aspiring sportsperson? Liz: The best piece of advice I can give anyone:

Work hard to achieve your dream and never be afraid to dream BIG! You can achieve and be what you want to be but you need desire, patience and humility to get there.

This is a really difficult question as I have worked on 100s of productions in the last 15 years. But I would have to say that traveling to Antarctica for To the Ends of the Earth, a documentary by Hamida Issa. To have my love for film take me to the furthest reaches of the planet is something that will always stay with me.

3. You’ve been part of several productions here in Qatar, which has been the most challenging one so far?

Every production in Qatar is challenging in some way. Whether it be the weather, the permitting procedure, finding good actors or simply satisfying the needs of a client or filmmaker. Filmmaking is never easy. If it were, everyone would be doing it.

4. Favourite film and director?

I juggle 3 films for the top spot constantly. They are Jaws, Taxi Driver and Gummo. Oddly, my favourite director didn’t work on any of them. Jean-Luc Godard would be my favorite director if I had to pick just one. But I have a very deep love for Wes Anderson, Spike Jonze, Bong Joon-ho and many more.

5. If you could have a sit down with any filmmaker, who would it be and what would be your first burning question?

Maybe Alejandro Jodorwsky. His imagination is beyond that of any filmmaker I’ve ever seen. His films have always inspired me and at the same time baffled me. My first question would be “Can we please make DUNE?”

6. Your new film for Mondrian – which has everyone talking about – is an exceptional piece of work. Can you tell us a little but about that film, and the creative process that went behind it?

1. You are a producer and director, what got you into this field? My grandfather was an artist. He specialized in calligraphy and painting. I studied with him for many years as well as attending art schools, workshops and

24

private classes. I always knew I wanted to be involved in the arts and when my parents bought me a video camera at an early age; I was hooked. With it, I filmed nearly everything. Because of my love for music, I used the camera as a gateway to filming my

Thank you very much. We are incredibly proud of this film. It’s the product of an amazing team with amazing minds. The reason I so badly wanted to make this film was the hotel itself. There was no real “brief”. There was a tour and the simple statement: “Go wild.” I couldn’t stop my mind from going and going and going. Each room, hallway, suite, restaurant, club, etc: a work of art.

CULTURE TALK

Each space spoke to me in a different way; different images, colour palettes, looks, feel. I wanted to communicate the same things the spaces communicated to me – adventure, seduction, and mystery. My wife and I spent our first wedding anniversary in Portland, Oregon brainstorming ideas for the film. A lot of the images were the result of our first tour and didn’t deviate much from that. But others were the product of us saying to ourselves: “Nothing is off limits. Nothing is impossible.” Hence the horses in the ballroom and gazelles in the hallway! I can’t say enough positive things about the team at Mondrian Doha. They are fantastic and the perfect partners for such an outstanding and creative endeavor.

7. And for any film buff out there, what do you shoot with/camera preference?

It really depends on the project and the story. Whichever “look” fits the particular script or mood or feel, we use it. Generally, we shoot with Arri Alexa and RED but we’re also doing our best to keep the use of film alive and well in Qatar. For example, when collaborating with an amazing local photographer/artist, who only uses film for his shoots; we shoot with an Arri 416 16mm film camera to create consistency within the body of work.

8. What would you like to conquer for 2018 that you haven’t done yet?

I like to think of myself as more of an explorer than a conqueror. There are lots of new and exciting opportunities around every corner. A willingness and openness to facing the unknown is where some of the best creations come from. I am looking forward to whatever comes next.

9. Favourite spot in Doha?

This is a really tough one! In the past 8 years, I have had the great opportunity to explore a vast amount of the country. Because of film projects, I have seen places that are unbelievable and don’t feel like

Qatar, or the Middle East, at all. If we narrow it down to Doha only… I’d have to go with my current neighborhood – Freej Bin Mahmoud. It’s got a real character to it. It’s bustling with people all the time, there are shops on every corner selling everything from fishing tackle to fabrics to real estate and fried chicken, and for the most part- the old buildings and old Doha neighborhood vibe is still alive and well. That’s a rare quality nowadays. I am an avid explorer of these areas. Taking photographs on walks through empty lots, abandoned buildings, and old parts of town have inspired many of my compositions for film and beyond.

10. And if we would go through your music playlist right now, what music selection we’d find?

My top 10 most played albums at the moment (in no particular order) 1. Tender Male – Summer Songs EP 2. Kamasi Washington – Harmony of Difference 3. Portugal. The Man – Woodstock 4. The Districts – Popular Manipulations 5. Wild Belle – Dreamland 6. Kaytranada – 99.9% 7. Endless Teeth – Demos 8. De La Soul – and the Anonymous Nobody 9. Descendents – Somery 10. Smino - BLKSWN

The The Westin Westin Doha Doha Hotel Hotel & & Spa’s Spa’s General General Manager Manager Gianrico Gianrico Esposito, Esposito, gives gives QH QH an an insight insight on on what what it it takes takes to to be be at at the the helm helm of of such such prominent prominent property. property. How long have you been in Doha and how do you see hospitality for 2018?

I have been in Doha for almost 4 years now, since the pre-opening of The Westin Doha Hotel & Spa. Being the first Westin hotel to opening in Qatar was a fantastic project to work on and continues to be so. The hospitality sector is currently within an exciting period with many promising initiatives being launched by QTA and the Qatar Authorities, we look forward to working closely with them to support our destination.

Hospitality is a very demanding field, how do you balance your working and personal life?

I am very passionate about the hotel industry and hospitality therefore I enjoy the time spent working, interacting with guests and the team. It’s a very sociable industry to

26

work in which suits me well! I ensure to find the time to take care of my own wellbeing by regular exercise and time enjoying the company of my family and friends.

What is your strategy for success?

I believe success comes with dedication. I personally find it important to set up a clear vision to define what success looks like, to continue to be ambitious and set myself challenging goals. Most importantly however, success to me is to build and nurture a great team; success never comes because of one single person’s contribution. A good leader can inspire and drive a full team to success.

What is one lesson you’ve learned in this industry that could serve as advice to our

readers?

As with many other industries, the Hospitality industry is extremely dynamic. The capability to be flexible, quickly adapt to change, listen to the evolving customer’s needs and staying up to speed with technology makes all of the difference in being a top performer.

How do you uplift your co-workers’ morale in times of need?

I always remind myself and my co-workers that delivering good results in a favourable scenario is definitely enjoyable but does not promote growth and self-development. Instead, working together to overcome challenges makes us better individuals and professionals. To overcome a challenge is a real achievement, this can be incredibly rewarding as an individual and as a team.

Ambassador of India

QATAR HAPPENING HAD THE OPPORTUNITY FOR A Q&A WITH H.E. MR. P. KUMARAN, CURRENT AMBASSADOR OF INDIA IN QATAR.

1. How long have you been in Doha and where was your previous assignment?

I arrived in Doha in October 2016 and have spent nearly 15 months here. I joined the Indian Foreign Service in 1992. During the course of the last 25 years of my professional life, I have served in our Embassies at Cairo, Tripoli, Brussels, Islamabad, Washington and Colombo in various capacities. In addition, I have worked in the West Europe Division at the Ministry of External Affairs, New Delhi, and as the Regional Passport Officer

28

in Bengaluru. Just before joining my current Ambassadorial assignment in Doha, I was Head of the Consular, Passport and Visa (CPV) Division at the Ministry of External Affairs, New Delhi. This is one of the largest Divisions in the Ministry and deals with all kinds of consular issues, apart from passport and visa policy formulation and implementation.

2. How has your stay in Qatar been?

It has been an honour and a pleasure to be a part of recent developments

that have contributed to the growing partnership between our two countries, illustrated amply by the exchange of visits at the highest level in recent years. I admire the warm and welcoming nature of the Qatari people. They, along with the large and well-regarded Indian community, make me and my family feel completely at home in Qatar. We are grateful to the Government and the people of Qatar for their support and patronage of the Indian community in Qatar.

As you are aware, the Indian community is the largest foreign national group in Qatar and has contributed significantly to the growth, development and prosperity of Qatar over the years, a fact acknowledged and appreciated by the Qatari leadership. We have four major Indian community organisations which function under the guidance of the Embassy. These are: Indian Community Benevolent Forum (ICBF), Indian Cultural Centre (ICC), Indian Business & Professionals Council (IBPC) and the Indian Sports Center (ISC). As their names suggest, they organise a number of events in their respective areas of competence, ranging from community welfare to showcasing Indian culture and heritage, to help build bridges with other communities resident in Qatar and to promote business and investment relations between India and Qatar. In addition to India’s national days, which fall on January 26 and August 15, the Embassy of India, in partnership with Indian community organisations, celebrates a number of festivals. The Indian Cultural Centre, and the large number of regional community associations affiliated to it, organise celebrations of all major Indian festivals at various venues in Qatar regularly. Every year, the Indian community also actively organises celebrations and participates in events associated with Qatar National Day and Qatar Sports Day. The Embassy also takes a lot of interest in organising the International Day of Yoga, which is celebrated on June 21 every year, in Doha and in other cities of Qatar. I would like to convey my gratitude to the Qatari authorities for extending their unstinting support to make this annual event a special one. We also look forward to the series of events being planned under the Qatar-India Year of Culture 2019, in partnership with Qatar Museums.

4. What are the areas that play a key role for the relations between India and Qatar?

India-Qatar cooperation in diverse sectors has been steadily growing within an excellent framework provided by historic relations and regular and substantive engagement, including at the highest levels of the two Governments. Three high-level visits during the last three years - the State visit of His Highness the Emir of Qatar, to India in March 2015; the visit of the Hon’ble Prime Minister of India to Qatar in June 2016; and the visit of H.E. the

Prime Minister & Minister of Interior of Qatar, to India in December 2016; and the multitude of Agreements and MOUs signed during these visits, are an eloquent testimony to our steadily growing bilateral ties. These milestone visits imparted fresh momentum to our deep-rooted and multi-faceted cooperation. Besides official interactions, people-topeople contacts and initiatives by the private sector are energizing cooperation in various sectors. Indian companies are today pursuing collaborations in infrastructure, information and communication technology, energy and other areas in Qatar, to the mutual benefit of both sides. With its huge and growing energy needs, India greatly values Qatar’s vital partnership in the energy sector, given our large and expanding market for LNG, LPG, and petrochemical products. Qatar’s exports to India amount to nearly $10 billion per year, making India the third largest export destination for Qatari products. On the other hand, Qatar’s imports from India, currently at about $1 billion, have grown an annual average of more than 10% over the past few years. The Indian community in Qatar forms an important link between the two countries and has acted as a force-multiplier in strengthening economic and commercial linkages over the years, with around 6000 Indian joint business ventures operating in Qatar and Indian nationals working in virtually in every sector of the economy. Cooperation in cultural and youth affairs is another important pillar of the bilateral relationship. The joint programme being developed for the Qatar-India Year of Culture 2019 is an example of our partnership in this area.

5. How are you planning to promote further business between the two countries, especially now with Qatar’s current market?

What are your views for Qatar’s overall market and business for 2018? Indian corporates look at Qatar as a promising market and are today pursuing collaborations in a number of areas, as mentioned by me above. Our Petroleum Minister is on record as having said that India plans to increase the share of natural gas in India’s energy mix, currently at about 7%, to 20% by 2030. Qatar, currently the most important source of LNG for India, will therefore continue to be a key partner in our energy security calculus for many years to come. India also offers an expanding market for Qatar’s LPG and petrochemical products. The extensive

infrastructure development in Qatar, as it completes preparations to host the FIFA World Cup in 2022, and the acknowledged competences of India’s corporate sector, offer attractive avenues for cooperation. The huge potential for significantly increasing Qatar’s investment in the Indian economy, taking advantage of the high growth rates projected for the coming years and the new business-friendly policy environment, also presents a win-win scenario for both countries. It has been decided to set up a Qatar-India Joint Business Council. We are working to select the Council members on either side and hope to convene the first meeting at an early opportunity.

6. What is something you wish to implement or develop this year within your community?

The welfare and well-being of the Indian community in Qatar is a matter of priority for the Embassy of India. We adopt a proactive approach to ensure that the grievances of Indian workers are addressed satisfactorily by the concerned authorities in Qatar. We organise medical camps for lowincome workers from time to time in different cities in Qatar. The Embassy also regularly organises consular camps in cities outside Doha for the benefit of Indian nationals living there. We rely extensively on social media platforms, the Embassy website and more recently, the newly-inaugurated FM channels to disseminate useful information to the Indian community. I also hold a monthly ‘Open House’ for any Indian national who wishes to meet me regarding any problem he/she faces. This is usually held on the last Thursday of each month. We look forward to the implementation of recent reforms introduced to labour laws, so that our blue-collared workers can benefit from them. We have plans to organise a number of cultural events and sports tournaments, both within the Indian community and in partnership with Qatari sports organisations and other expatriate communities. We also hope to organise some trade and investment events during the course of the year. We would also be extensively involved in preparations for the Qatar-India Year of Culture scheduled for 2019.

V-DAY IS JUST AROUND THE CORNER AND WE’VE GOT IT COVERED ON WHAT TO WEAR; PLUS WE SIT DOWN WITH PORTUGUESE DESIGNER ANA CALHEIROS FOR AN INSIGHT ON HER SOPHISTICATED AND WHIMSICAL DESIGNS THAT CAN’T BE MISSED IN YOUR JEWELLERY BOX.

FASHION TALK

ANA CALHEIROS AND HER STATEMENT JEWELLERY PORTUGUESE JEWELLERY DESIGNER ANA CALHEIROS IS MAKING A MARK IN DOHA WITH HER SOUGHT-AFTER PIECES THAT HAS GOT US LUSTING FOR MORE. THE DESIGNER TAKES US INTO HER WORLD AND LATEST COLLECTION.

You are a jewelry designer, what drove you into that industry?

when I am creating.

I came in to the world of jewelry because my mother is jeweler too. Since childhood my world was filled with colourful stones, jewels and metals. So obviously that world definitely influenced my path.

Your favourite piece you’ve designed so far?

How would you describe your brand and designs?

One piece of accessory a lady should always wear?

Ana Calheiros is known for big and statement designs and happy colours. I love creating statement jewellery; big jewels such as turquoise, corals and emeralds.

Your biggest inspiration when creating a new collection?

My inspiration is always Iris Apfel; an icon

32

I have a lot of pieces that are my favourite and in that case I keep them all for me. It is impossible to sell jewels I am in love with – especially earrings.

Earrings! Always a symbol of elegance and feminism.

Who is your favourite jeweler designer and why?

No doubts Fulco di Verdura. This Italian jeweler was the best designer of brooches and cuffs – the most eccentric and elegant jewels that I have ever seen in my life.

When I am creating I always think about an elegant, feminine and eccentric woman, a selfconfident woman.

Can you tell us a little but about your brand and how did it all started?

As I told you part of the influence I got from my mother I was invited to create a private collection for the Portuguese Parliament inspired on the main building. It was an absolute success! And then I received numerous invitations from different Embassies to exhibit in and outside the country. And at this

moment, my work is focused and surrounded within the diplomatic world. Also, I am concentrating in expanding the brand in the Middle East, since its elegant women are the women I identify with.

FASHION TALK

What kind of woman do you design for?

Where can we find your designs besides Portugal?

Nowadays you may find my jewels in concept stores and galleries in France, Spain, England and Morocco.

MEET SONALI RAMAN JEWELLERY DESIGNER AND LOVER OF TEXTILE TRADITIONS, SHARES HER STORY OF HER BRAND SR AND WHAT INSPIRES HER SOUGHT-AFTER PIECES. One celebrity’s closet you covet?

What got you into designing accessories and women’s wear?

Our late Prime Minister, Mrs. Indira Gandhi’s closet of legendary, unique, specially hand woven sarees are something I would long to own. No one else really connected fashion and politics like she did. She often wore Khadi, a fabric that played an important role in the Indian Independence movement, which encouraged Indians to weave their own cloth as a form of economic empowerment. When she travelled she would wear trench coats over her sarees, showing that she was a woman who embraced her culture with a modern twist. Her wardrobe consisted of a fine representation of India’s heritage hand-woven textiles that she wore with a powerful elegance.

I have always wanted to find a way to sustain dying craft and textile traditions of my country. So after several years of working in the fashion industry, I decided to do use my core competency of my experience and knowledge of fashion to make something that I truly love and am passionate about, and this translated into the launch of the SR brand three years ago! Although I have spent 27 years in women’s wear, I launched my brand with the accessories line first and soon the ready to wear line followed.

How would you describe the style of your brand?

One line perfectly describes my brand: “ Contemporary Styles; Traditional Ethos.”

What is your end goal as a designer?

What is the biggest challenge you have to overcome as a local designer?

The market here traditionally looks for haute couture and evening wear. Introducing my line of ready to wear with free-flowing silhouettes in natural fabrics meant bringing about a change in the perception of the client. I have been gradually able to show my clients through my collections over the last few seasons that anti-fit styles and cuts can be as elegant, chic and effortlessly stylish as body-con styles.

Follow

Sonali @srdoha

What was your inspiration for your latest pieces?

At the very heart of the brand is the chevron motif. They appear in all my collections including the jewellery line. The Siyah-Safid line of daywear and evening looks was also created around the chevron motif. The Siyah-Safid Rangeen Collection uses mysterious blacks (Siyah - ink) and creamy whites (Safid) as canvases on which a delightful mix of pastel and pop-colored (Rangeen) threads weave SR’s signature chevron embroidery to create stunning embellishments that celebrate

34

the elegance of blacks, the simplicity of white and the joie de vivre of colors in our lives. The Siyah-Safid Glamour Collection is an ode to glamorous eveningwear with a casual twist. Siyah (ink- black) and Safid (white) are the basis of the collection with jewel-like embroidery embellishing each piece.

Who is your biggest inspiration when it comes to creating your own lines? My mother’s love for traditional fabrics and crafts was a big influence and left a deep impression on me. Using textiles and embellishments produced by traditional methods, and handmade crafts, giving them a contemporary twist while making it relevant to today’s market, are the fundamentals of my brand.

My love for the traditional crafts and textiles of India and from across the world is what makes me want to share it with everyone! Creating these pieces using an ancient form of embroidery or using special textiles in contemporary styles makes it more appealing to today’s audience and its important for me that people appreciate the work and effort that goes into handmade products and begin to love it like I do. As a designer, my brand looks to support artisans who are skilled in traditional crafts in order to encourage them not to lose the skill. My production facility also employs women and trains them in hand finishing the jewellery, adding embellishments and doing basic embroidery on the garments.

What can we expect in the future for your brand?

SR by Sonali Raman will continue to collaborate with artisans, small weavers and other upcoming designers to develop new collections. I would also be looking at adding new product lines in accessories and home furnishing in the future.

When did you know you wanted to be a chef ?

A long time ago! I have always been attracted to food – I was always a good eater when I was very young and I loved watching my mum and my grandma cooking on family days, especially Sunday dinners! As a result, the attraction to cooking grew which led me to studying at Culinary School. Even when I was at school, I worked in the kitchens. Basically, I never ever stopped.

Coming from an Italian background have you introduced any new flavors or twist to the dishes that can be found at The Cellar?

I have brought a touch of lightness to the dishes in The Cellar, because Italian food is famous for its lightness within the flavours, such the use of freshly made Olive Oil. It is also essential to have a balance within the flavours and this has been achieved by decreasing some of the strong powerful flavours by mixing it with fresher ones.

As a Mediterranean Tapas outlet, what would you say are the top three sharing dishes that must be tried?

here in Doha who come to The Cellar for the really great Mediterranean flavours, and then there is the people who are travelling around the World and staying just one or two nights. These particular sets of diners are the ones who delve into trying the Arabic side of the menu, as of course they are intrigued to taste dishes from the country they are transiting in. So this the responsibility of ensuring that we are able to keep a happy culinary balance between people who live here and people who are travelling. And so far so good!

What is your favorite cooking style?

There is a trend for slow cooking and

low temperatures and these new techniques fascinate me. I particularly like how you can merge new techniques with old flavours to create interesting new dishes.

The kitchen utensil you can’t live without is…

A chopping knife! It is part of my hand, actually an extension I would say, and I cannot perform without it! The knife is the beginning of a dish and it is also what gives the final touch to that same dish. I have in my home a special knife that I display on my wall that was gifted from one of the first chefs who trained me and when I look at it I remember it fondly as the foundations of my life.

I recommend that you try six or even seven Tapas dishes and that you share amongst friends. At The Cellar, food and service must be excellent but the experience is not 100% just on the food – it is the overall enjoyment with friends that will make it an evening to remember.

As the preferred hotel of Qatar Airways - the Nations airline, does this bring any added pressure when you may think that a lot of international – and possibly first timers to Qatar - will be dining each day at the restaurant?

I would describe it as a ‘responsibility’ rather than as ‘pressure’. Rotana prides itself on having developed more than 300 wholly-owned food and beverage concepts in the region. In The Cellar case, the restaurant has to always cater to the likes of two main groups of diners. Firstly there is the local community right

Subsequently, we were taken to our treatment room, where the spa’s professional, commenced the relaxing journey with a quick foot massage and cleansing. Later, we began with our full body scrub with a touch of rose and lychees aroma, which was soothing and perfectly paired up with a heating bed to relax the muscles and body. THE DIET EDIT

Cave into the ‘Caveman Diet’ THE PALEO DIET FOCUSES ON IMITATING THE EATING STYLE THAT OUR ANCESTORS IN THE PALAEOLITHIC ERA, AKA OUR LAST STAGE OF EVOLUTION, ATE. SO, IF A CAVEMAN COULD HUNT OR GATHER IT, IT GOES! WELLNESS AND EMPOWERMENT COACH ANAHI BROWN SHARES SOME OF HER VERY OWN CRAFTED PALEO RECIPES FOR REAL AND DELICIOUS DISHES THAT HEAL YOUR BODY AND MAKE YOU INSANELY HAPPY... THIS IS WHAT SHE’S ALL ABOUT!

Guacamole and Paleo Tortillas

Delicious, healthy and filling snack made with avocado, tomatoes, onions, garlic, spring onion and coriander, mixed with lime, lemon and orange juice and zest, and accompanied by coconut flour tortillas.

Avocados are high in Folate, Glutathione and Vitamin E, protecting our hearts and cardiovascular system. Packed with Vitamin C and lycopene, tomatoes help lower inflammation and minimise damage from free radicals in our body Citrus juice from the lemons, limes and oranges, are full of flavonoids, promoting heart health and helping with triglyceride levels. Benefits:

THE DIET EDIT

Foods included in this diet are: meats and poultry, fish and seafood, nuts and seeds, leafy greens, vegetables, fruits and healthy fats. The diet offers our bodies the best nutrients and eliminates toxins and anti-nutrients. Once you cut highly processed, chemically enhanced and contaminant-filled foods what’s left to eat are the best nutrients to heal and repair our bodies, as we biologically need.

Leeks and Mushroom Tart

With a crunchy coconut flour crust and an aromatic, vegetarian, delicious and nutrient dense filling, this tart is ideal for breakfasts, lunches, dinners or even picnics, making meal times satisfying and incredibly easy.

Benefits: • •

Mushrooms contain a wide variety of bioactive molecules that have anti-viral, anti-inflammatory and antioxidant abilities. Related to onions and garlic, leeks offer numerous health benefits. The most fascinating element in them kaempferol, is a natural antioxidant that relieves oxidative stress in the blood. By adding turmeric during the cooking process to the filling, the tart offers the healing properties of its main component curcumin, well known for its anti-inflammatory, antidepressant, anticoagulant properties, as well as its role in pain, arthritis and glucose management.

Chicken and Sweet Potato Balls with Cranberry Sauce and Mash Faux-tatoes

The perfect combination of sweet, tart and salty flavours in one dish. It is homage to good ol’ chicken roast dinners with the added buttery mash to take the experience to the next pampering level.

Benefits: • •

Sweet potatoes are high Vitamin D, which plays an important role in our energy levels and mood. Cauliflower (aka Faux-tatoes!) can effectively inhibit the development of chemically induced carcinogenesis, acting as an anti-mutagen that halts tumour cells from further reproducing. Naturally sweetened with honey and spiced with cinnamon, the cranberry sauce also offers extra immune support ideal to protect us during the colder season.

Fudgy Flourless Brownies and Vegan Vanilla Ice Cream

Mouth-watering rich and gooey, this flourless chocolate brownie skillet topped with creamy vanilla ice cream is the perfect ending to a great meal. Who says indulgence can’t be healthy?

Benefits: • •

The presence of Tryptophan and Vitamin B6 in bananas, the base for the Vegan Ice Cream, help produce the “feel good” hormone Serotonin. Coconut milk is high in Medium Chain Triglycerides, which are easily used by our brains for energy, without even needing to be processed through your digestive tract with bile acids like some other fats. With one of the highest concentrations of magnesium found in Cocoa than in other natural food sources, the brownies can protect you against osteoporosis, diabetes, and high blood pressure, whilst also supporting mental health.

Forrest Yoga and Its Benefits MIKYUNG KIM SHARES THE MANY BENEFITS OF FORREST YOGA, PRE- AND POST-NATAL YOGA.

B

eing a mom of two and teacher of Forrest, Pre and Post-Natal Yoga I’m here to share the many joys of practicing all the above. After my son’s birth, I started to explore the different styles of Yoga, happened upon a Forrest Yoga workshop with a great teacher called Brian Campbell here in Doha. Initially, I had no idea about Forrest Yoga so, I decided to give it a try. It was quite different to any other yoga practice I had experienced until then. It was physically and mentally demanding, it demanded introspection and brought me closer to my inner self. It was exhilarating and thrilling.

Four Pillars of Forrest Yoga • • • •

Breath Strength Integrity Spirit

Types of Movements

Forrest yoga is gentle and requires simple poses and breathing techniques, but also don’t forget to use deep breathing, which will be helpful for your muscles, as they will be challenged along the course. • Deep breathing • Active hands and feet • Relax Neck • Tuck Tailbone • Wrap Shoulders • Telescope Ribs • Expand Ribs

66

ACTIVE MIND

Mission of Forrest Yoga

Creating a sense of freedom, a connection to your spirit, and the courage to walk as your spirit dictates. It teaches you how to go deeper, find your truth and, take these gifts beyond the mat and into the rest of your life. Practicing Forrest Yoga brings you strength and helps you center by connecting you to your core. It uses heat and deep breathing to sweat out your toxins. The long holds during the pose sequences help you flush, oxygenate, and rejuvenate every cell. You don’t need to be a strong flexible person or advanced practitioner to start Forrest Yoga. It only requires that you bring a willingness to learn how to feel free and respond honestly when you are challenged. Forrest Yoga practice can translate to our daily lives. There are many times I directly apply my practice, for example, mindfulness being 100% present in every moment of my life, speaking truth – following my heart and loving myself unconditionally. Forrest Yoga honors and celebrates the beauty of life; it’s an inspiring yoga workout that builds flexibility, intelligence and strength while helping deepen the relationship with your inner self.

Testimonial from Brian: “I am a beginner yoga student and have been practicing with Miky for almost 2 months at B-attitude Spa, Beverly Hills Tower as part of my weekly routine. Her classes are intense. She puts a lot of thought into every class, varying and modifying the sequences to help develop strength, flexibility, mobility and balance. Her classes also have a soulful element to them - each class we focus on a unique and positive message, which I take home with me for the rest of the week. I find it also helps me deepen my mind and body connection. Through Mikyung’s practice, I have found that my mobility and flexibility has improved immensely. This has helped me in all aspects of life including work, health and fitness.”

Connect with Miky: Practice Forrest Yoga at Warwick Hotel on Mondays at 7pm; Katara Beach Club on Tuesdays at 5.30pm and Wednesdays at 6pm.

A PLETHORA OF TENNIS

NTANDO STEMMET GIVES US THE LOWDOWN ON FITNESS, TENNIS AND HOW TO STAY ACTIVE THIS MONTH.

I

’m sitting on a rock-hard chair, the temperature is twelve degrees Celsius, there are thousands of people screaming all around me, and yet I have a huge smile on my face. That’s because I’m at Centre Court in Khalifa International Tennis & Squash Complex, watching the final of the ATP Qatar Open 2018. Where the ever-popular French showman Gael Monfils (31) has finally won the championship, beating the 21 year-old Andrey Rublev in straight sets 6-2, 6-3. The crowd gets even more boisterous when we’re reminded that this is Monfils’ fourth final in Doha and that he’s been the runner-up thrice before; losing to Roger Federer in 2006, JoWilfried Tsonga in 2012, and most recently Rafael Nadal in 2014. This is Monfils’ seventh career title, and as his eyes well-up with tears and his voice cracks - the crowd explodes in a roar of applause as we realise just how much winning the Qatar Open means to this former top ten player. The beginning of the year is always a

68

treat for Doha tennis fans. We’ve already had the ATP tournament and this month the WTA Qatar Open will be taking place from 12 - 18 February. The injuries in the men’s tournament saw the biggest names withdraw from the tournament, which was a massive disappointment. Most notably the 2016 and 2017 champion, Serbia’s Novak Djokovic as well as the 2012 champion Jo-Wilfried Tsonga of France. I’ve been figuratively holding my breath since December for Serena Williams to take part this year following her return to tennis after giving birth to her first child. I haven’t given up hope that both the Williams sisters will be in Doha this month. Despite the fact that Serena pulled out of the first Grand Slam of the year, the Australian Open and Venus Williams was knocked out of the same tournament in the first round, I am still hopeful - let me have my hope. The Khalifa International Tennis & Squash Complex is one of my favourite places in Doha. It was inaugurated by His Highness

ACTIVE BODY

Sheik Hamad bin Khalifa Al Thani, The Emir of the State Of Qatar on 16 December 1992. The first ATP Qatar Open for men took place in January 1993. Then in 2001 the WTA Qatar Open was established for the women. it’s incredible watching the top players in the world play here, their skills and techniques are near flawless. It encourages me to hone and improve my own skills in my social game. In November 2017 I took part in the Qatar Ladies Sports & Social Club (QLSSC) winter tournament and won the championship trophy with my doubles partner Cristel. We went the entire tournament unbeaten right up until we qualified for the final. For us that was an achievement on its own - but to walk away with the trophy was a phenomenal feeling. Besides my love for the game, I love the physical and mental benefits. Playing tennis is a brilliant way to workout your entire body. Your lower body gets a workout from the running, jumping and crouching that you do. And the action of hitting the ball, whether it’s single or double-handed, works your upper body as well, particularly your shoulders, upper back and arms. Tennis increases your oxygen intake during the game, by increasing your heart-rate and helping your blood deliver oxygen and nutrients to your muscles while burning calories. As far as clearing the mind, for me the act of concentrating on the ball and anticipating my opponent’s next move whilst formatting my own, helps to relieve whatever stresses I’ve experienced for the day and focus on my body, my breathing and my movements. Of course being competitive (even in a social tournament) comes with its own tension. But a little positive tension a couple of times a week doesn’t hurt. If you’re interested in making use of these immaculate world class facilities at Khalifa International Tennis & Squash Complex, I’ve enclosed the schedule, rules and contacts below.

COURT SCHEDULE: • • • •

Sunday - Thursday 08h00 17h00 and 19h00 - 23h00 Fridays and Saturdays 06h00 - 23h00

• •

The tennis court can only be booked a day in advance. Cancellations must be made a minimum of six hours before the booked time, otherwise you’ll still be charged.

You can contact the information desk on +974 44409666 to make a booking.

Staying Healthy

HEALTHY BITES img.taste.com.au

C

onsidering our hustling and bustling lives of the modern day age, one is constantly under the pressure to perform well at work, education or at home. For those who are working long hours and have to manage their families simultaneously, this can be a true juggling task. It is within this context that eating healthy and staying trim and in shape is something one cannot afford to compromise on even though in most cases this is probably what ends up happening. Trends of consuming healthy food including purchasing organic food and opting for prepared meals by diet chefs may seem like part of the fad diets, however staying healthy does not need one to enroll into a monthly membership of the dishes prepared by a diet chef. In my own case I have struggled to eat healthy, however, considering the chilly weather and the demands

of our modern life, I believe there are simple measures and recipes one can create in the comfort of their home, without going that extra mile to hire a chef. I have been keen on exploring packing to go healthy lunch meals, in my research I came across an abundance of mouth-watering scrumptious recipes, however, one needs to ask themselves if they are willing to make that effort of preparing it in the first place. I am not going to recommend difficult dishes or ingredients which are rarely available in the market. Pasta is definitely on top of my list since it is not time-consuming preparation wise, secondly, it is nutritious and you can accessorize it with your personalized recipe of vegetables which take lesser time to cook. So I would suggest buying a stir fry mix pack from the supermarket which would include an array of colorful vegetables such as bean sprouts, onions, carrots and many others. Use tomato

and basil sauce to cook up the pasta and stir-fry. The outcome is definitely a tasty one which can be complimented by tomato ketchup or Tabasco sauce. Imagine the tantalizing taste of pasta at work, not only is it filling, but even light to your tummy. Second on my list are home-wraps, these come in a huge variety. For instance, grilled chicken Caesar salad wrap: you can combine your salad with the grilled chicken leftover from the other day and create an amazing wrap. Or the veggie wrap which consists of avocado, carrots, cucumber, red sweet pepper and crumbled feta cheese, the entire combination of ingredients makes a light and nutritious meal ideal for lunchtime. Third in my list are salads, whether it is the Greek Pita Salad, low in calorie it is full of protein thanks to chickpeas and the low-fat feta cheese which adds its unique taste to the salad. Consisting of lettuce, pita, chickpeas, cucumber, red onion and Greek dressing, this is light

on the tummy indeed. There is another yummy salad, which is a must to mention to the readers, it is the 3 bean salad with Kale. Due to the rich fiber contents of beans and kale, this is a winner salad recipe. Consisting of black beans, white beans, kidney beans, avocado, lemon juice and kale in the salad, one can complement this meal with a side-snack by having 5-6 Kashi 7-grain crackers with low-fat cheese string. Last but not the least on my mail list is the classic low fat yogurt and granola, raisins and strawberry dessert, which is all natural in sugars thanks to fructose and helps in uplifting one’s mood too. Eating right and ensuring we make sensible choices towards opting for healthy meals which can be prepared in a jiff should be supported by a sense of enthusiasm knowing that healthy food needn’t be boring and bland, but in fact it can be vibrant, knowing there is always room for something new to try rather than limiting our choices to a certain boundary only.

TOP 10 FAMILY FRIENDLY THINGS TO DO IN BALI LIFESTYLE BLOGGER POLLY KNOWS A THING OR TWO ABOUT TRAVELING. THIS MONTH, THE GLOBETROTTER SHARES HER TOP PLACES TO VISIT IN A BEAUTIFUL DESTINATION SUCH AS BALI.

77

TRAVEL BUG

W

hile my husband, toddler and I were checking into our flight to Bali at the airport, the check-in clerk told us that getting around Bali with a child would be impossible, and that it ‘wasn’t a great destination for children’. Well, it turns out that she was wrong. Very wrong, in fact. Not only do the Balinese people adore children, but 90% of the sites that we discovered and the activities that we pursued on our travels around the island were incredibly easy to do with young children or a baby in tow. Here are 10 of my recommendations for the most family-friendly things to in Bali.

TIP: Take some small change with you, because even though it is free to enter the terraces, the men who maintain the paths will ask for a voluntary donation as you cross certain points along the way.

1. Visit the rice terraces at Tegalalang, Ubud

2. Make friends with the monkeys in Monkey Forest

While in Ubud, the Sacred Monkey Forest Sanctuary is also an exciting place to take children. It’s one of Bali’s most popular attractions for a reason: the beautiful (and rather ancient) natural forest is home to a troop of feisty grey long-tailed macaques. Besides being able to watch these monkeys play for hours in their natural habitat, which is far more appealing to children than staring through the bars of their cage in a zoo, the site offers interesting walks through leafy walkways, with stunning ancient temples en route.

TIP: The sun typically sets around 6.15pm in the summer, which is quite late for very young children. Therefore, we tried to combine our sunset watching with dinner, by booking a restaurant with a view.

TIP: Educate your children to be careful around the monkeys before you enter, as they are very bold and have been known to be vicious if provoked. Also, keep bags zipped up and food & drink tucked away from their grabby hands!

The famed steep green valleys of rice terraces that are located in the village of Tegalalang are a must-visit if you are staying in or near to Ubud. Located just half an hour away from the town by car, this landscape is one of the most breathtaking sights I have ever seen on my travels. Ignore the naysayers who tell you that the terraces are too steep for young children to cope with, or too trecherous for them to climb. Sophia, aged 16 months, tackled them admirably (with a little assistance!) and enjoyed counting the steps down the hillside and back the other side. As an added bonus, she also slept incredibly well that night!

TIP: There are no sun loungers or parasols for shade actually on the beach, unless you head to one of the beach clubs. If you are going to be there at the height of the day, hats and/or a portable sun shade is a must to keep children out of the scorching heat of the sun.

3. Spend a day on Jimbaran Beach

Arguably the most visually appealing of all of Bali’s beaches, Jimbaran Beach is located on Bali’s southwestern coast, where Bali’s mainland joins the Bukit Peninsula. With a plethora of luxury hotels nearby, including the Four Seasons Resort Bali at Jimbaran Bay, as well as great dining spots, such as the famous beach BBQ huts which spring to life as the sun goes down, there is more to see and do on this beach than any other in Bali. Plus, it’s one of my favourite places from which to watch the sun set.

4. Watch the sun set on the west coast

Before we left for Bali, it was the sunsets that our friends who had already been there raved about more than anything else. Pinterest backed up their claims, but I had to see my first Bali sunset for myself to truly believe the hype. I can’t put into words how magical Bali sunsets are. A combination of the perfect weather conditions, clear skies and just the right aspect make the south west coast of Bali one of the best places to view a sunset in the world.

6. Visit a temple…or three!

A visit to Bali isn’t complete until you’ve visited at least one Hindu temple. It was top of my list of things to do while we were there, but I was worried that it might be an impossible feat, as many of them are located in quite remote places, a long drive from the main settlements where we were staying. I needn’t have fretted. Located just off the main street in the centre of Ubud, at the end of a pathway, which crosses scenic lotus ponds, is the stunning Saraswati Temple. With intricate architectural details and pretty grounds, this is a great place for kids to have a run around. The other temple we visited was Uluwatu Temple – the oldest temple in Bali and one of the most famous. Perched on steep cliffs overlooking the sea below, this temple hosts traditional dance shows and is one of the most picturesque Bali is renowned for its fabulous beach nightlife and chic clientele. places to watch the sun set. However, super-glamorous doesn’t always come hand in hand with super child-friendly, so if you want to spend a day at one, do your research first. El Kabron, the Spanish restaurant and cliff club located just outside of Uluwatu, has excellent food, provides high chairs and has plenty of shaded areas for little ones. Sundara Beach Club, attached to the Four Seasons at Jimbaran Bay has the most amazing infinity pool overlooking the beach, a fabulous children’s pool and kids club, and provides colouring books and crayons for the TIP: youngsters. Don’t worry

TRAVEL BUG

TIP: Check whether the beach club has a children’s menu before you book. You might find it’s worth packing some extra provisions if they don’t cater for the under twelves.

5. Spend a day at a cliff club or beach club

7. Spend the day at one of the Four Seasons resorts

Undoubtedly two of the most luxurious resorts on the whole of the island, the Four Seasons Resort at Sayan and the Four Seasons Resort at Jimbaran Bay have so much to offer families. From picturesque grounds, to stunning pools; world class restaurants to incredible kids clubs, I can’t recommend spending at least one day in complete and utter luxury at one of these resorts enough.

about having to cover your knees before visiting temples: most will provide you with a sarong at the entrance.

8. Go surfing and fishing at 9. Swim in Padang Padang Beach This small beach in Uluwatu can be found at the an infinity bottom of a winding pathway which tunnels into the steep cliffs, meaning that the journey down to pool with a it is just as fun for kids as the beach itself. This is one of Bali’s most famous surf spots, attracting view surfers from around the

world. Here, you can rent boards or sign TIP: up to a surfing The waves on academy. If this beach break over fishing is shallow coral, so if your more your children are beginners, this thing, there might not be the best beach for are several them to start learning to surf nooks in on. However, it’s just as fun to the cliffside watch the pro surfers doing around the their thing here as it is beach which to get stuck in. provide perfect places from which to cast a rod.

10. Enjoy the moment and get completely and utterly lost

With a wealth of knowledge at our fingertips these days thanks to the old WWW, it’s all too easy to create packed itineraries full of sites to be ticked off before you head out on your travels. However, Bali is one of those places where magic lies around literally every corner, and if you stick to your plans too rigidly, you’re likely to miss some special moments. Some of our most treasured memories from our trips were from when we went ‘off piste’…such as exploring the grounds of the Four Seasons Sayan to keep Sophia entertained when we were waiting for breakfast on our first day… Just not so lost that you lose all phone service and are unable to access Google Maps. You know, just in case…

With sunsets and sea views, beautiful natural landscapes and dramatic cliff sides, Bali is the dream location for a good infinity pool. There are a few world famous ones dotted about on the island, at The Hanging Gardens of Bali, Alila Villas Uluwatu, the Viceroy Bali and Ayung Resort, to name a few. We enjoyed a few rather beautiful infinity pools on our trip, but Sophia liked the one at Sundara Beach Club, Jimbaran Bay the best. TIP: Make a simple infinity pool more fun for the little ones by packing some pool toys. I’m still amazed at how a simple bucket, watering can or ball can transform their experience of a pool and keep them occupied for hours!

WANDERLUST DINING

DINING DOWN UNDER WITH BREATHTAKING VIEWS OF SYDNEY’S ICONIC HARBOUR BRIDGE AND OPERA HOUSE AND SERVING CUISINES THAT MATCH THE OPULENCE OF EVERY DETAIL; BE IT DECOR OR SERVICE, AND COUPLED WITH A STAGGERING SIX MONTHS ADVANCE RESERVATION REQUIRED; THIS DINING ESTABLISHMENT IS NONE OTHER THAN QUAY. AUSTRALIA’S MOST AWARDED RESTAURANT AND IN SALLY CLARK’S OPINION, THE EPITOME OF FINE DINING.

80

WANDERLUST DINING

The Lowdown

Dining at Quay is the ideal place to sample the diversity and complexity that modern Australian cuisine has to offer. It’s both excellent and expensive; meaning you may be washing dishes out the back for the foreseeable future but Quay is DEFINITELY worth it.

The Menu

Quay’s gastronomic orchestra is conducted by worldrenowned Chef Peter Gilmore, who consistently maintains the coveted 3 hat status. His dishes are delicate and intricate and his ingredients are rare and unusual; sourced only in Australia. Flavours are combined in a way that gives you a rich and unique culinary experience, leaving your palate slightly mystified but extremely happy.

Here are some must have’s from the menu:

Amuse Bouche – Fermented corn purée Course 1 – Hand shelled mud crab, kombu jelly, pickled bamboo, cultured cream, kabu turnips, sour Mexican cucumbers, Course 1 – Raw smoked Blackmore wagyu, horseradish sour cream, fermented rye crisps, raw funghi Course 2 – Master stock duck, pickled pink turnip, XO miso, and scorched amaranth leaf Course 2 – Murray Cod, braised shimonita onions, southern squid, sake, hatsuka Course 3 – Snow Egg This masterpiece deserves more than just a typical caption and picture, but instead a paragraph about its perfection. Let me start by saying this is the best dessert I have ever had in my life and I doubt it will ever be surpassed! Very rarely do I delve this deep into the description of

FIND IT

a dish, however, the Snow Egg is the most elaborate culinary creation that I have ever experienced and just a picture will not do it justice. To eat “The Snow Egg” you tap the exterior, with slight force, in order to penetrate the maltose praline biscuit that is thin just like the shell of an egg. You are then met with a light fluffy poached meringue, that encapsulates a perfectly balanced guava ice cream. However, this molecular masterpiece doesn’t end there! The Snow Egg is positioned atop a creamy fool (fruit folded into a sweet custard) that is balanced by a refreshing bed of granita (semi-frozen dessert). This truly textural treat is opulently served in a thin-rimmed glass that simplistically showcases everything you could want in a dessert. Simply put this dessert tasted like heaven! It wasn’t too sweet, it wasn’t too cold, it wasn’t hot, it wasn’t rich and it definitely wasn’t bland… it was pure perfection. I dare say that if your dining with anyone you care about and wish to continue your relationship when you leave the premises, then I suggest the Snow Egg is NOT to be shared. I repeat… NOT to be shared.
