After a refreshing Eid break, we look forward to celebrating National Day and the holiday season this month. We are lucky to have local law student Moza Alnuaimi write her debut magazine article on her feelings about National Day for us this issue. QH is also packed with tons of tips for surviving the holiday season, from where to shop and what to buy, to the best desserts and how to make a holiday turkey. Anyone who has been waiting with baited breath for the opening of Mathaf will be happy to know the Arab Museum of Modern Art officially opens December 30. Read all about the ways the museum is encouraging Qatar residents to learn from and engage with the new museum. There’s plenty for sports devotees to cheer about this month. Excitement for the AFC Asian Cup Qatar 2011 is building as the event draws closer. Read all about the history of the AFC Asian Cup and the inspiration behind the mascots for the 2011 tournament in our expanded sports section this month. We also take a look at the Qatar ExxonMobil Open 2011, which takes place January 3 to 8 at Khalifa International Tennis Complex. In this issue, equestrian enthusiasts will find details on the National Day Trophy & The Late Sheik Jassim Bin Mohammed Al Thani Cup, as well as the Qatar Derby Day, both hosted by the Qatar Racing and Equestrian Club. This month Qatar welcomes Bryan Adams to InterContinental Doha for an intimate beach concert. Adams, who previously played in Doha for a Reach Out to Asia (ROTA) fundraiser, is touring to promote the release of his new greatest hits CD. Check out our exclusive interview with Adams about his 30-year career. Thanks for reading and Happy Holidays!

S Y A D I L O H HAPPY The QH team is happy to welcome new staff member Jorge Granda this month. While Jorge was initially confuzzled by our office dance parties, constant need for infusions of large quantities of sugar and caffeine, frequent trips to Woqod and daily group hugs, he soon grew to appreciate all the crazy things that help us put this magazine together. Here’s a few of the other things that helped get us through this manic month. We are always a fan of anything We were immediately intrigued that involves large quantities of meat. The Churrasco Brazilian Estée Lauder’s New Pure Colour by Magnetic Man’s self-titled Gloss in Passion Berry Sparkle is debut album. The music is fresh, Barbeque at Four Seasons Doha features the most hip and upbeat, without being subtle, sweet and shiny (the lip amazing grilled meats and too perky. A Fresh You

We know our skin requires a little extra tender loving care in the desert, especially as the dry winter season approaches. That’s why we sought out the Revitalizing Cleansing Facial treatment at Ozone Spa in Le Cigale. This refreshing skin treatment began in a serene room full of rose petals and candles. The trained technician delicately cleansed our skin before applying a bevy of peels, creams and serums. We fell into a near-comatose state as we let the technician work her magic on our tired, dehydrated skin. We left refreshed, relaxed and relieved that it hadn’t hurt one bit.

BEST SPA TREATMENT

We are thrilled to announce the winner of the QH Lifestyle Award for Best Spa Treatment is the Four Seasons Spa, for their Winter Magic treatment. This two-and-a-half hour spa treatment is the ultimate spa experience. The treatment starts with an herbal steam bath, followed by a coffee scrub to awaken the senses. Afterwards, experience a sensational Swiss shower or soak in a warm whirlpool (or both!). A relaxing hot stone massage caps off this spectacular spa experience. What set the Four Seasons Spa apart from the competition is their calm spa space, amazing hydrotherapy pools and attention to detail. Winter Magic takes place in one room, assuring you don’t have to scramble around in a towel from room to room in between treatments. The spa technicians are friendly and attentive without being overbearing. You’ll leave feeling more relaxed than you ever thought possible. Winter Magic is perfect for relieving stress, softening skin and reducing the appearance of cellulite (the caffeine in the coffee scrub tightens skin). It would be extremely easy to spend an entire day in the oasis of the Four Seasons Spa. Winter Magic is QR 1,155 for two-and-a-half hours. This special seasonal treatment is available from December 15, 2010 to March 15, 2011.

SPOTLIGHT ON ENTERTAINMENT

Who doesn’t remember cruising around town while belting out Bryan Adam’s classic hit Summer of 69? Residents of Qatar will get a chance to relive those memories when Adams, Canada’s all-time best-selling male artist, brings his world tour to the InterContinental Doha Thursday, Dec. 16. QH pulled Adams from the recording studio for this exclusive interview. QH: Many of your best-known songs were cowritten with Jim Vallance. What did each of you bring to the songwriting partnership? BA: I used to bring the tea, Jim made the sandwiches. When we started writing in 1978 I was so broke I had to borrow bus fare to get to his place. The cool thing was that slowly but surely we saw results from the songs we were writing. It was really exciting. Jim is the far better musician, and thankfully he didn’t want to be a singer, otherwise I’d still be packing boxes somewhere in Canada. QH: Something not many people know is that you and Jim co-wrote a couple of songs for Kiss. How did that come about? BA: We wrote songs for anyone that would give us the time of day, and why not? Like most musicians we were ambitious and naïve. All we wanted was to pay the rent, eat at the local curry house, and not have to do a day job.

QH: Can you describe what it was like to sing with Tina Turner on It’s Only Love? BA: Singing with Tina could have been one of the most exciting things I’ve ever done on stage. I worked hard on getting the song to her, and luckily one of my colleagues was producing her album Private Dancer. That connection helped, but I wouldn’t have met him had I not written songs for a smaller project. So you see, one thing always leads to the other. QH: Could you reflect on the effect and influence of MTV on your music and career? BA: They were a great channel in the beginning and really supportive of new music, they played the living hell out of Cuts Like A Knife. I still get guys coming up to me asking who the girl in the video was. Her name was Rachel by the way, and no I never dated her, but probably should have.

QH: In 1985 you were part of Live Aid. What are your memories of this event? BA: I can barely remember what I did yesterday nevermind what I did when I was 25. I do remember wandering around and bumping into my friend Bob Clearmountain, who was there mixing the live sound for TV. He told me the lawyers had just walked into the truck and demanded that all recording of the event be stopped. So the DVD that exists of the show is Bob’s live mix, and it’s incredible. The producers of the show stuck me on as the first artist to go live to the world and I remember mumbling something dumb in the microphone like ‘Hello world,’ or something to that effect... Once we’d finished our set, we flew to another state to do another show. I never saw the end of the broadcast and I’ve never watched my performance. QH: What was it like working with producer Mutt Lange, starting with the album Waking Up The Neighbors? BA: It was a really fun record to make, he’s the best. Mutt made me sing better than anyone has ever made me sing and helped me write some of my biggest songs. He was never beaten over putting in the hours to get things right. I used to leave the studio hanging in rags from working all day, and I’d go back the next morning and Mutt would still be there smiling. He would have worked all night just to get something going. I truly met my match, because I can remember in the early days falling asleep in the studio and not bothering to go home

on some sessions, but I’d never met anyone else that had done that. QH: How many takes did he have you do for (Everything I Do) I Do It For You? BA: We recorded that song in two different keys. Originally we recorded the song but it was too slow. So we sped up the track and recorded the piano and vocal again. I’m not sure how many takes; not many. I remember pretending to dance to the song in the control room and saying we need to go a bit faster, and so we kept the basic track of drums and guitars and built the rest up. If you try and figure out what key the song is in, and then wonder why it’s in an odd key, you have the answer. QH: Was it a thrill to contribute music to the 2010 Olympics in Vancouver? BA: That was really fun. Jim Vallance and I had written a song called Bang The Drum which we gave to them, and the best bit for me was the Olympics using the themes from that song for the Canadian athletes to march out on. Not only that, it was also used as the theme for the largest gathering of young First Nations people ever. Unreal.

QH: How do you think that being from Canada has affected your music? BA: It’s hard not to want to write about mounted police, lumberjacks, moose, beavers, etcetera, but somehow I get around it. QH: What advice would you give to an aspiring songwriter/musician? BA: Well, as long as you are OK with the fact that you’ll probably never get paid for your work, thanks to internet and free downloading, then at least don’t sign your songs away. Hang on to everything you can. QH: What are your plans – musical or otherwise – for the near future? BA: I’m touring all the time and really looking forward to the Middle East dates. I love Doha and I’m looking forward to being there again on the 16th. I go out for a week or so every month, and I’ve just released an album of acoustic live tracks called Bare Bones – Live. This is mostly due to people wanting to hear the versions of the songs they just heard from my acoustic show, although I will have the full band with me in Doha. 21

By Sydnee Bryant

In anticipation of A Decade of Dance, the explosive Global DJs New Year’s Eve dance party, QH caught up with three-time DJ Champion of the World DJ Pro Zeiko. Zeiko will headline Day 2: Decade of Dance Dec. 31, at Grand Hyatt Doha. QH: How did you get started? PZ: Well, by a fortunate coincidence. On a sunny afternoon in Berlin we found an old turntable from a mate of mine. Everyone tried to produce sounds and at the end of the day I was the only one still occupied with generating different sounds. After the appropriate experience with the record player of the mate, I bought, from my hardsaved newspaper delivery money, my own first record player and practised at home.

QH: What’s it like to perform? Is it different to perform in the Middle East? PZ: As I said I´m happy when the audience has fun. Sometimes I´m a little bit nervous before a gig, but I like it when the adrenaline is running through my veins. That is, for me, an extra kick for the show. Basically it is the same everywhere I play because the folks come to party and for this the common denominator is the music. But I have to say I like Qatar very much and the crowd celebrates great parties.

QH: Why did you want to become a DJ? PZ: I love to use the turntable as an instrument, so I can create my own compositions with different tracks. In this way I give the music my personal touch, which can be extremely explosive on the dance floor. In addition to that comes, of course, the audience. This relationship is very important for me. I wish that they have fun and get an extraordinary experience.

QH: What will your New Year’s Eve show in Qatar be like? PZ: Explosive – absolutely I want everyone to remember this night for a long time. Therefore, I will develop a new showcase. Be curious!

QH: How would you describe your music? PZ: Unique and blowing up genres, I´m mixing different music styles in an artful way. For example, I´m combining classical music with a famous hip hop track to top it with a soul sample on the right groove. QH: What do you have planned for 2011? PZ: My manager and friend Anton Faßler from Next Level Entertainment knows the exact plan better than me. But I can disclose that next year there will be more showcases with the Roland SP-555 Sampler. QH: Where do you see yourself in five years? PZ: My goal is always the next gig. And I will play in many countries to become acquainted with the people and their culture. That’s really inspiring to me and my game. But for the long term, I´m interested in producing my own music – but that’s the sound of the future. QH: What’s your favourite thing about being a DJ? PZ: If you are able to transform your hobby to your occupation, like I did, then it´s perfect.

VIRGIN RECOMMENDS

Here’s how you can find what’s flying off the music shelves this Christmas: QH brings you the top selections from Virgin Megastore for the holiday season. And watch for the QH heart in stores!

Taylor Swift Speak Now Taylor Swift’s new album sounds modern and relevant with an appealing tempo and some powerful lyrics. It seems to be a very personal album for the young artist. It is evident that Swift doesn’t sing about crushes or puppy love anymore, as most lyrics strike a more mature note. Among the singles included in the album, Mine and Sparks Fly are cheerful love songs, while Back to December, Dear John and Innocent are more melancholic. All in all, Swift’s new album is bittersweet but her songs are still catchy and good to listen to.

Selena Gomez A Day Without Rain Selena Gomez is an actress who has taken an about turn into music and is faring well – A Day Without Rain is her second album. As expected, the album is filled with dance-pop songs with an energy and excitement that is positively contagious. The Disney star’s lyrical subjects are no surprise for a teen artist, but it is Gomez’ delivery that makes the music enjoyable and fun.

Susan Boyle The Gift Pink Greatest Hits So Far Pink is definitely a star worthy of having a greatest hits album. Singles from the album include Get The Party Started and So What, which are considered Pink’s most successful songs to date. The material is a fairly well - crafted reflection on Pink’s decade-long musical career. The album includes a handful of her most commercially successful hits, such as Stupid Girls, You Make Me Sick and Dear Mr. President, among others.

There’s no song comparable to “I Dreamed a Dream,” but Boyle’s second album “The Gift” delivers a sophisticated and surprisingly heartfelt interpretation of pop, rock, musicals and classical standards. Most of the songs you may have heard already, but Boyle’s versions of some classics such as “Hallelujah,” “Away In A Manger” and “O Holy Night” are magical and a clear indicator of what pulled in the millions who snapped up her debut album. “The Gift “is the truly the perfect holiday present.

Elvis Presley Viva Elvis: The Album Viva Elvis the Album contains the same tracks featured in the Viva Elvis by Cirque du Soleil show in Las Vegas. The whole album is simply phenomenal and built around a biographical theme with comments from Elvis, Ed Sullivan, Bill Black and Milton Berle. Among many of his classics selected for the album, Can’t Help Falling In Love stands out as a really fine contemporary version sung as a duet with a great female singer. The album is a tribute to Elvis’ life and his music.

It’s easy to assume every museum is the same – after all, we all went on the same boring field trips to the same boring museums in our adolescence. But now, a new museum is coming to Qatar and it’s one that will change the way we view museums and museum-related educational experiences forever.

ducation should be interactive. Wassan Al-Khudhairi, chief curator and acting director of Mathaf: Arab Museum of Modern Art, is crystal-clear about this from the start. “I don’t want you to walk away from this interview and say the museum is an educational place, come to these classes and then there are these tours and that’s it,” Al-Khudhairi warned me. “It’s much more than just that; that’s very surface. It’s much deeper than that.” Education is something the young, hip museum expert is clearly passionate about. And why shouldn’t she be? Museums need to engage and interact with students in order to get them interested in what they have to offer. When it opens in its temporary home in Education City, Mathaf will offer residents of Qatar a chance to learn about art interactively, rather than from a distance. The museum, which officially opens December 30, has factored education in right from the start, ensuring that it does not become an afterthought tacked onto the museum’s master plan. Traditionally museums focus on the exhibitions and add an educational component after the museum opens, said Al-Khudhairi, which isn’t always conducive to learning. “We integrate

education not just at the end but from the beginning of the planning process,” added Michelle Dezember, head of education at Mathaf. “From an education standpoint, something that is really different, especially compared to other places that I’ve worked before, is that education is not an afterthought.” Mathaf, which is the first museum in Qatar to focus on Arab artists, will help facilitate education in several ways. While the museum will offer traditional educational experiences, such as tours of the exhibitions, it will also offer people in the community an opportunity to interact with the art by giving them the chance to volunteer as tour guides. The museum will offer Mathaf Voices, a program that trains young adults to become tour guides, ensuring individuals in the community learn to speak to each other about art. “It doesn’t always have to be the museum talking to people; it can be the community talking to one another about the museum. Because then they own it; it becomes a part of them,” Al-Khudhairi said. “We’re trying to create a sense of ownership of the space for everyone.” Al-Khudhairi also aims to find ways to engage with people in non-traditional ways. Education is the soul

“We’re trying to create a sense of ownership of the space for everyone.” of what the museum does, said Al-Khudhairi. The museum’s patron always wanted to promote education. “He collected art for 25 years and he was always telling people about what he was doing, sharing it with other people, meeting with the artists,” Al-Khudhairi said. “It’s just a continuation [of that]. We’ve taken his vision and manifested it into an institution.”

museum is very new and the type of subject matter that we’re dealing with is new, the types of programs that we will offer will be many different kinds. Our main task is to provide as many different entry points as we can to our diverse community, because there are so many different types of people, with different types of needs,” Dezember said.

Al-Khudhairi and Dezember discussed what it means to have a museum in the 21st century – how it fits into today’s society and what role education plays. “What we try to do here is to integrate education with the curatorial and bring all the different people together to have a discussion from the very beginning about how is this going to be accessible to the public, how are we going to connect to the public,” Al-Khudhairi said. “Education is much more than just offering a class or offering a tour. Education is about how do we interpret the material for our public so when they come in they can get something out of what they see? How do we present the material in an accessible way that they will relate to? A lot of our conversations lead back to the individual and how do you make something relevant to someone. Well, you let them know that there is a person behind it.”

The museum will offer workshops, in addition to hosting lectures and talks. It will also provide more academic programs that bring in scholars and artists to talk to students about their work from an academic standpoint, said Dezember. “We will bring artists from the exhibitions to both the talks and the workshops, so that’s something that I think is really special,” Dezember said. Students will be able to talk to the artists of the exhibitions directly about why they chose to create a piece of artwork in a certain way.

Learning the story behind the piece of art makes art real for the average person, said Al-Khudhairi. “When it becomes real, it becomes relevant. And if it becomes relevant, then it means something to you, which means that the museum means something to you.” People will be able to take classes at Mathaf beginning in the spring, said Dezember. “The education program at the museum is one that is very flexible. Because our

Mathaf will house over 6,000 pieces of art – the largest collection of modern Arab art in the world. The museum will open in a temporary location in Education City. The building is 5,000 square metres; half of that space will be exhibition gallery. The rest of the area will include an indoor and outdoor café, a merchandise shop, an education wing, a workshop space and studio, and a research library. “I hope that Mathaf will be able to provide an engaging and creative space for people in Qatar,” Al-Khudhairi said. Eventually a new museum building will be created for Mathaf. “From my point of view, as the director, what makes this institution so unique is that we get to create a museum from scratch and that’s very rare,” Al-Khudhairi said. “We exist because of our community.” 29

A growing number of stores in Qatar are rising to the challenge of social corporate responsibility. QH spoke with employees at THE One at Landmark Mall to find out some of the ways the retail chain is trying to better the country and the outside world.

hen you first walk into the THE One at Landmark Mall, you might notice something out of the ordinary. Their door frames are a little wider than necessary and the store’s displays are arranged in a very particular way. This is all done to accommodate two staff members, both of whom are in wheelchairs. Vivian, a receptionist, and Ahmed, a cashier, are both paralyzed from the waist down. They also both began working at the store after they became paralyzed, not before. Both Vivian and Ahmed are a part of THE One’s mission to hire employees with challenges or disabilities. It’s something all stores in Qatar are encouraged to do. However, THE One is taking the missive one step further by hiring as many challenged individuals as possible, with the goal of having five per cent of their staff consist of challenged employees by 2012. Eventually the number could go even higher. “If they are fit to work I am willing to take 20 per

hile planning out your meal options, it may be tempting to choose salads, appetizers and main courses from different places. While this can add a dash of variety to your party buffet, it’s much simpler to pick up the majority of your meal in one place. Go for a prepared meal deal, such as Nando’s meal for six. This delicious feast consists of Peri-Peri chicken, chicken livers, freshly baked Bolo bread, Periwedges, Portuguese salads, toasted pita breads, Peri-olives, a variety of decadent dips and grilled vegetables. The meal for six is the perfect option for smaller parties; for larger gatherings, simply order several of these meals, ensuring there is enough delicious food for all your ravenous guests.

It’s hard to believe that just over one year ago we welcomed the now-classic Mediterranean restaurant Mykonos to Doha. Situated poolside at the InterContinental Hotel Doha, Mykonos offers both ambiance and amazing food. To celebrate the restaurant’s one-year anniversary, QH sampled some of the new items on their revamped menu, while saving room for old favourites.

I

’ve always wanted to take a Mediterranean holiday. Many times I’ve pictured myself sitting on a beach in Greece, sipping fruity beverages and enjoying the sun. I’ve imagined myself devouring hummus, Greek salad and chicken souvlaki in a quaint mom-and-pop Greek restaurant somewhere along the coast. Yes, I’ve always wanted to go to Greece and yet I’ve never quite made it there. So instead, I spend my days seeking out Mediterranean food in other countries as part of a desperate attempt to fulfill my Mediterranean fantasies. Imagine how I felt when I arrived in Qatar. Upon my arrival in Doha, people told me the absolute best place to go if I wanted to fill the empty, hummus-flavoured hole in my heart was Mykonos at InterContinental Doha.

As soon as we sat down at our table on the gorgeous patio we eagerly ripped into warm pita bread with a hearty helping of tzatziki so delicious I would have eaten it right off the spoon if I hadn’t feared my dining companion would judge me. Although we loved the flavourful yogurt, cucumber and dill dip we yearned for a little hit of hummus, which our attentive server brought over once we requested it, even though it isn’t on Mykonos’ new menu. Next, we decided to have an epic salad-related battle: the old (the Mykonos Greek salad) versus the new (the fresh rocca salad). While we secretly rooted for the Greek salad (a classic, in our mind), the rocca salad blew us away with its amazing flavour. The pine nuts sprinkled on top added just the right amount of crunch to what truly is an extremely tasty salad. But it was the melted goat cheese on top of the salad that ultimately

put it over the edge. However, props must be given to the Greek salad for its fresh appeal and appetizing hunks of feta cheese.

At this point, my dining companion mentioned he was starting to feel full. But then out came a plate of mussels saganaki bathed in a luscious tomato sauce with a kick of flavour – garlicky and spicy. My dining partner says while the two tastes highlighted the intensity of the mussels, it was the sweetness of the tomato sauce that made him devour the entire plate. My culinary companion claims his favourite part of the dish was that it was cooked and prepared to unleash maximum flavour on his taste buds. I turned my attention to the oven-baked feta cheese sitting before me. The extraordinary mild dish, in all its cheesy glory, included fresh tomatoes, green peppers and red chilli, a wonderful flavour combination. After polishing off the oven-baked feta cheese, we began to dive into our main courses. I went with chicken souvlaki, the ultimate Mediterranean dish. Each tasty morsel of juicy chicken was grilled to perfection, exactly as it should be. The mama’s style potatoes tasted like golden deliciousness, the

ideal accompaniment to both the chicken souvlaki and the Greek burgers my gastronomic partner in crime devoured. As part of our main course, we also went head to head with the hammour fillet, lightly seasoned with lemon oil dressing and topped with root vegetables. The garlic mashed potatoes on the side of the tasty fish absolutely blew our minds. Convinced that we could eat no more, we were about to throw our napkins in the ring. Then our very wise server insisted we try some of Mykonos’ spectacular desserts. Thankfully, we listened to this sage advice. We decided to try the traditional Greek galaktompoureko and the crème brulee. My dining companion and I certainly didn’t intend to share desserts, but that is exactly what happened when I had my first unforgettable bite of the amazing crème brulee perfumed with Greek coffee. While I loved the sweet, flaky Greek galaktompoureko, it is the crème brulee that haunts my dreams. This creamy dessert is rich without being too heavy or overwhelming. The strong coffee flavour is perfect when accompanied with vanilla ice cream scooped up from the top of the Greek galaktompoureko. A delicate cup of Earl Grey tea provided a lovely end to a stunning meal. 41

For many people, there is nothing more daunting then trying to cook a turkey from scratch. However, since turkey is often the main event at most holiday meals, every wannabe iron chef must at some point in their lives attempt to roast a bird or two. December is the perfect time to whip out your culinary skills and cook the ultimate turkey dinner. Don’t worry if you’ve never so much as glanced at a giblet; QH has you covered. We observed Chef Nicola Bacchi at Bice as he prepared a traditional Italian turkey.

C

hef Nicola Bacchi is preparing for turkey season. Bice’s executive chef, who started cooking at the age of 14, has seen his fair share of gobblers, so he’s not at all daunted by this task.

For American Thanksgiving in November, Bacchi prepared traditional American-style turkeys, accompanied by cranberry sauce, corn and stuffing.

For the holiday season this month, Bacchi will make Italian-style turkeys with chestnut stuffing. “This is a typical dish we would do in Italy. This time of year is famous for chestnuts. Right now, all the smaller towns in Italy have chestnut festivals,” Bacchi said. Bacchi creates a unique stuffing made of ground turkey breast,

boiled chestnuts, bread crumbs, dried prunes, eggs, fresh garlic, thyme and rosemary. He mashes all the ingredients together to create a paste-like stuffing before placing the mixture directly inside the plump turkey. The prunes may seem like an odd choice but they give the stuffing a unique burst of flavour. Dates would also work as a substitute for prunes, said Bacchi. Bacchi adds his own creative touch to his turkeys. He drapes veal bacon over each bird before cooking it to seal in the moisture. Veal bacon has the same smoky flavour as pork bacon. “The fat of the bacon keeps the breast moist so it doesn’t get dry,’ Bacchi said. He removes the veal bacon before serving the turkey. This genius trick truly works – Bacchi’s turkey turns out tender and perfectly moist, bursting with flavour.

How to Roast the Perfect Holiday Bird Step 1: Buy a turkey. A 10 to 12 kg

bird will serve about 15 to 20 people.

Step 2: Take the bones out of the turkey, while attempting not to break the bird. Step 3: Create a stuffing mixture

by combining ground turkey breast, boiled chestnuts, egg, dried prunes, bread crumbs, fresh garlic, thyme and rosemary. Place stuffing directly inside the turkey.

Step 4: Place onions, celery, carrots

While Bacchi does his best to stay true to his Italian cooking roots, he has learned to make certain modifications to his meals during his time in Doha. In Italy, chefs use a lot of vino and pork as ingredients in their cooking. In Qatar, this is simply not an option. “This is one of the main challenges, to give the same flavour without using these two main ingredients. So far we have been able to accomplish this,” Bacchi said.

Photos by Jay Panganiban

Of course, there is no exact science to cooking a turkey. Many people now resort to deep frying turkeys to avoid balancing the delicate timing of roasting the perfect gobbler. Bacchi prefers to do it the old-fashioned way – in an oven. Cooking a turkey is all about timing, advised Bice. “Take your time. Turkeys are meant to be slow-cooked,” Bice said. “Don’t be in a rush.” There’s really no trick to carving and serving a turkey either, said Bacchi. To properly carve a turkey, all one needs is a sharp knife. Bacchi slices his turkeys with authority born of confidence and practice, no gadgets required. After only two hours, Bacchi has prepared the perfect Italian holiday meal –tender turkey and mouthwatering stuffing, served with green beans, roasted potatoes and a dish of spinach, pine nuts and raisins.

My parents were proud of me, my bank account was healthy, I travelled frequently and could buy whatever I wanted. I climbed the corporate ladder, and then the bottom fell out. The change was subtle at first – a few extra kilograms on the bathroom scales, being a little grumpier than usual, some aches and pains in my body, my clothes being a little tight and work and relationships becoming less satisfying. Life seemed to be about getting through each day’s mountain of responsibilities.

I didn’t pay attention. I kept doing what I always did. After all it had worked fine up until now. The cycle continued. Before I realized it, my life and my body were dangerously out of balance. Then I took some time away. Not long. Just long enough to have a look at the world I had created for myself. I wasn’t happy with what I saw. I realized that life was meant to be lived in abundance, balance and wellness; however, I couldn’t see how I could possibly make the changes that were needed. I’d tried before but the changes were never permanent, and when life got tough I went back to doing what I’d always done. The key to success, to creating a life that now fills me with energy, passion, laughter and light, was going on a Wellness Journey. The experience transformed my life and my body. I now live my life helping others as they create their best lives, in balance, in abundance and in wellness.

HEALTH & WELLNESS

By Sydnee Bryant

We all need a way to relax and unwind after a hard day’s work. Some extremely motivated people like to relax by hitting the gym, while others prefer to lie perfectly still while receiving a soothing massage or revitalizing facial. Some individuals may even just want a peaceful place to take a steam or enjoy a delicious glass of fresh juice. In an ideal world, one could find all of these things and more in one place. QH spent a morning at the Pure Leisure and Wellness Centre at Kempinski Residences and Suites Doha to see if it could live up to all of our relaxation fantasies.

T

he Pure Leisure and Wellness Centre is a modern oasis. This is clear from the moment one walks through the door and sees the bright, cheerful interior of the reception area. The chic white furniture and gleaming hardwood floors ensure the space feels open and inviting, without being cold. A sunny member of the staff welcomes us immediately, making us feel instantly at ease. We decide to take full advantage of one of the best kept secrets in the city: the Health Lounge at Pure, which has

the most amazing juice bar. Built right into the back of the receptionist’s desk, you could easily miss it if you didn’t know it was there. One of the best things about Doha is the abundance of fresh-squeezed juices, making it easy to crave ripe oranges squeezed into a glass, instead of pop or coffee. We let the juice barista know about our fruit allergies (banana and pineapple) and she whipped us up a special drink that isn’t on the regular menu, but should be – orange, kiwi and just a touch of mango. So amazing our taste buds thought they had died and gone to flavour heaven.

Instantly refreshed, we decide to explore the rest of the centre before our relaxation treatment. Pure features a state-of-the-art gym housed next to the reception area. The gym, which is equipped by Technogym, has separate fitness and cardio areas. The cardio room is full of plenty of equipment but manages not to feel cramped due to the airy quality of the room and the view of both pools.

The tranquil blue of the adult pool is so inviting it is hard not to dive in immediately. The warm sun streams through the windows surrounding the pool, reminding one that it’s always sunny in Doha. The adult pool is big enough for a serious workout in (19 metres), while the 15-metre family pool is perfect for splish-splashing around in. There are also plenty of comfy pool chairs to lounge about in if one simply wants to take in the calming atmosphere without having to do any actual physical activity. Should one be so inclined, there are separate male and female steam rooms, in addition to a sauna. One of the coolest rooms in Pure is still a bit of a mystery to us. While we did take a peek at the Dermalife Spa-Oceana Multi-Sensory Spa System, we weren’t brave enough to actually try it. The machine basically gives you a water massage as you lie enclosed in a capsule, meaning it is not suitable for those who are a touch claustrophobic at times. But the concept is so intriguing (it’s like the ocean is giving you a massage!) that we may have to venture back to give it a whirl one day.

Since we are far too delicate to actually exert any physical effort besides walking (sitting behind a desk all day does that to one, you know) we cut our workout short and went straight for the relaxation part of our visit – an Imperial Massage. Our lovely therapist explained that the Imperial Massage is designed to promote lymphatic drainage, which helps increase lymph circulation and oxygenate the body. Increased lymph circulation can help increase energy and ward off sluggishness, a bonus for anyone looking for a little boost of vim and vigour. The time flew by during our 60-minute massage, as the massage therapist lightly danced her skilled hands over our aching, tight muscles. We secretly expected the massage to hurt (anything involving the word ‘drainage’ sounds like it involves pulling, pinching and overall pain) but we never felt anything but gentle pressure. We were also secretly thrilled to find that the masseuse had incredibly soft hands, something that speaks highly of the Guerlain products used for all spa treatments in Pure. Unfortunately, the specific Guerlain product used during our massage is for professional use only; however, our massage therapist did recommend we try Guerlain’s Super Aqua Body Serum for optimum hydration of our dry skin. After our massage, we felt so relaxed that we considered hiring the massage therapist to come work in the QH offices as our official Relaxation Consultant. But until we get that approved in our budget, we’ll cherish our trips to the Pure Leisure and Wellness Centre. 49

Find Sou q Waquif by going past the b palace, th ack of the Emir ’s en going str traffic lig hts. You aight at the can then in front o park f Doha F o rt. Y another entrance ou’ll find oppo the PDF Islamic c site entre.

Skip the holiday mall madness and find the perfect traditional holiday gifts at Souq Waqif! No matter what you are shopping for, there are lots of exciting gifts to choose from in this charming labyrinth of narrow streets, where visitors can bargain and purchase awesome souvenirs, while having a unique day out on the town. Open from 10:00 a.m. to 12:00 p.m. and 4:00 p.m. to 10:00 p.m., Souq Waqif began as an old Bedouin market and was modernized and rebuilt into a new market designed to look like an old 19th century Souq. Much to everyone’s delight, Souq Waqif turned into a fantastic venue where you can get that Arabian feel (outside the dunes) that attracts so many people to this part of the world. To this day, Souq Waqif remains the most traditional marketplace in Doha.

The Shops

Shops are grouped according to commodity, so you will find separate areas specializing in an amazingly diverse range of products. This includes beautifully embroidered bukhnoq (girl’s head covering), spices, dried fruit, nuts, local honey, clothing, shoes, exotic incense made from agar wood, traditional perfumes, oud, pots, tools, garden equipment and household goods, as well as Bedouin weaving, gypsum handicrafts, model dhows, wooden brassstudded bridal chests, pictures of ‘old Doha’ and paintings by Qatari artists.

Among the vast variety of shops are those selling what Qatar is famous for - its dried herbs and spices. After walking into one of the spice shops, a local man handed us a jar filled with layers of colorful cumin, fenugreek and turmeric, a cool gift for someone special on your list. We also spotted incense that looks like rocks arranged alongside herbs, lending themselves to the array of colors that make these shops so attractive. Lively Indian dresses hang on the walls outside some of the shops. These dresses, a perfect fit for Cleopatra herself, offer a special sculptural and graphic magic. The men’s clothing is just as inviting. You’ll also find men and women who can do custom weaving, drawing or sculpting for you, promising a unique holiday gift every time! Old photos of Qatar and its culture can be found in the Souq capturing the images of traders negotiating over piles of pearls, pearl divers and Bedouin nomads in their traditional camps riding their camels. At Al Ghanim, which is linked to the dhow workshop, you’ll find beautiful pictures made entirely from different shades of wood. The storekeeper didn’t wait long to tell us that Prince Charles once bought one of his pictures before producing proof – a photo of him presenting it the prince.

Once your list is checked twice and your shopping is complete, relax in one of the traditional coffee shops. Take time to lounge on the cushions with a Turkish coffee and a Shisha while watching the world go by, or sample traditional Qatari food and various specialties from the Middle East.

Souq Waqif has been revamped with taste and style, and is well worth a visit.

TIPS Bargaining is essential, but do not get too greedy as you may end up with nothing. Don’t be tempted to buy the first thing you see! Prices and quality vary, so it is worthwhile to compare items. If you really like a product in one shop, but the colour or size is not the right one for you, don’t worry – ask the vendor and he will run to his neighbour and bring back what you asked for.

Fashion designers aren’t made; they’re born. But how fashion designers find their way into the business is all up to them. Some go willingly into the intense industry; others are forced to dive in out of sheer desperation and a desire for something different in their closet. This month QH examines designer Lamya Abedin’s fashion roots.

I

t started with a shopping trip, as most fashion-related stories do. Lamya Abedin, an Emirati woman with a love of style, was shopping in Dubai when she realized she couldn’t find any one-of-a-kind abayas in one of the most fashion-forward places in the Middle East.

It was at this moment she decided to take her fashion fate into her own hands. Three years ago Abedin stopped relying on other style queens to give her what she wanted and designed her own special abaya. Her first creation was so popular she had little choice but to produce more designs. Her fashion line ‘Queen of Spades’ features chic abayas in a variety of styles, each uniquely designed to make the wearer feel special. 54

“I try to attend to many different tastes and many different kinds of women throughout the world.” Some of her best pieces come from her vintage Hollywood collection. For that show, Abedin ran with the theme of old Hollywood cinema. “All the models were dressed and styled in that era – the old Hollywood glam,” Abedin said. Abedin currently has five different lines. The retro line is all about colour. “It’s for the confident woman, the woman who is very eager to wear very daring colours and to go out,” Abedin said. The comfort line is more suitable for day-to-day wear or travelling. "At the end of the day I’m a mom, I’m a traveller and I work so I like to keep all these women in mind when I’m designing," Abedin said. For those who prefer to stand out in the crowd, the glitz line provides daring new cuts and a hint of drama. The glamour line is perfect for more formal events, such as weddings and parties. The vintage line incorporates ideas from around the globe. “I blend in cultures and antiques from all around the world,” Abedin explained. Each line is a reflection of the different cultures the designer has experienced. “I like to put a lot of these experiences into every collection I make,” Abedin said. “My abayas are very colourful, very fashionable. I try to attend to many different tastes and many different kinds of women throughout the world.” Inspiration for her designs can come from anything, said Abedin, such as her kids, her life or even the objects around her, such as a pair of shoes. “I always try to come up

with something that is different from the previous collection.” However, she usually incorporates Japanese elements into one or two designs in each collection. Reflections of kimonos, saris and pantaloons can be seen in her work. “If you look at the kimono, it does actually resemble the abaya. But it’s our kimono,” Abedin said. Abedin debuted her new, Japanese-inspired line, at Dubai Fashion Week in October. It was the first time the designer chose to be at the growing event. “I thought it would be a good opportunity,” Abedin said. “I do believe in the coming years our fashion week will have a larger name.” Generally, Abedin prefers to organize her own shows in order to prove her mettle to the fashion world. “When I did do my own shows they did turn out to be some of the best and people still talk about them,” Abedin explained. She is extremely involved in every aspect of her shows, ranging from what designs to feature to what the look book should look like. “When I actually think of the show, I’m actually thinking about the design pieces and the overall idea of the whole show,” Abedin stated. “It’s a lot of hard work. And since my pieces are also one of a kind I try to put myself in every piece I have.” Thank goodness for shopping trips gone awry. Where would the fashion world be without a little frustration and a strong desire to be special? Hopefully we’ll never have to find out. 55

Since its modest start more than half a century ago, the AFC Asian Cup has grown into the continent’s most revered football tournament. In anticipation of the AFC Asian Cup Qatar 2011, the 15th edition of this noble sporting event, QH looks at the humble roots of this famed football tournament.

T

he mascot for the AFC Asian Cup Qatar 2011 was introduced to the world Nov. 11 in a spectacular laser and pyrotechnical show that served as a distinctive and modern reminder of the captivating excitement that has driven the international popularity and growth of football in the region. The event is part of an intensive promotional campaign that also includes the launch of the countdown clock, tournament logo and physical ticket sales.

The organizers selected a five-member family of mascots modeled after the jerboas to be the symbols of the AFC Asian Cup Qatar 2011. The jerboa (popularly known as Al Saboog), is a nocturnal animal that lives in the desert of Qatar and all of Arabia. Sabog (blue), Zkriti (green), Tranaa (purple), Freha (pink), and Tmbki (yellow) are the names and colours selected to represent the five furry mascots. The family of mascots embodies the colour, excitement and pageantry associated with the AFC Asian Cup, as well as the spirit and values of the host country. The characters are named after different locations in north, south, east and west Qatar. Qatari designer, 21–year–old Ahmed Majed Al Ali Al Maadheed, is the man behind the creation of the unique concept.

“The jerboas mean a lot to me and it is one of the symbols of the Qatari environment. Our relationship began in early childhood, as I used to see him during our trips to the desert. He was an inspiration, with his coordinated movement, agility and colors that reflects the desert life. Trips were not fun without seeing him,” Ahmed said. Ahmed lived with the animal and studied it thoroughly. He experienced several processes until the work was completed. “I went to the desert searching for Saboog, brought him home with me and sat him in my room to get to know him and examine him closely and to uncover the information I needed as a designer,” Ahmed explained. The mascots will surely captivate the hearts of many people, especially children, once the mascots start bringing the excitement of the AFC Asian Cup Qatar 2011 to each corner of the city and the country, by burrowing in and out of a string of appearances. The mascot will also serve as a goodwill ticket ambassador, encouraging everyone to obtain tickets to the AFC Asian Cup Qatar 2011 Finals while good seats are still available.

WHO’s WHO? Zkriti, father of the mascot family, is named after the Zekreet area in west Qatar, while the mother, Tranaa, is named after the Turayna area in the south area of the country. Their eldest daughter, Freha, is named after the Freha area in north Qatar, while the first son Saboog is a common name for jerboas in the Arabian Gulf, and is associated with speed. The youngest son in the family, Tmbki, is named after the Timbic area in east of Qatar.

Qatar is simply buzzing when it comes to horse racing. QH sat down with top trainer and winner of the Qatar Arabian World Cup 2009 and 2010, Alban De Mieulle, to check out what’s taking place in the equestrian world this month.

E

questrian lovers rejoice: the 2010 – 2011 horse racing season in Qatar is now in session. The season officially kicked off in October 2010, and will last until May 2011.

more than a decade, horse owners and breeders from Qatar have worked to establish the Arab presence in the international world of equestrian racing, not only by sponsoring events with the same calibre as the Prix de l’Arc de Triomphe, but also by bringing world-class racing and breeding into the country.

This month the Qatar Racing and Equestrian Club will host the National Day Trophy & The Late Sheikh Jassim Bin Mohammed Al Thani Cup, as well as Qatar Derby “The Qatar National Day Trophy & The Late Sheikh Day. These are some of the most important meetings of Jassim Bin Mohammed Al Thani Cup is one of the the season and will certainly captivate the community most important meetings of the season, not only of Qatar, said De Mieulle, who trains one of the top because of the races taking place that day - we have Arab racing horses in the world. a Group 1 race, and a staggering total prize money of QR 1,000,000 - but also because winning the race The races taking place in December are a fitting tribute elevates the pedigree of the winning horse, offering the to Qatar’s love of horses and horseracing, with some possibility to be bred with the best stallions and mares of the leading Arab and thoroughbred horses stepping in the world,” De Mieulle said. onto the Qatar Racing and Equestrian Club track. The Qatar National Day Trophy & The Late Sheikh Jassim Bin Mohammed Al Thani Cup is broken down into four categories: Local Breed Pure Arab, Pure Arab, Thoroughbred and Local Thoroughbred. The race is held annually at the Qatar Racing and Equestrian Club; this year’s edition will take place on Dec. 16. Qatar Derby Day is another exciting equestrian event taking place this month. The show, which is set to take place Dec. 23 at the Qatar Racing and Equestrian Club, will also feature Local Breed Pure Arab, Pure Arab, Thoroughbred and Local Thoroughbred categories.

“The improvement I have witnessed over the years is breathtaking. Still, there is room for more improvement, “Qatar Derby Day it is also a very important meeting; we have a Group 2 Pure Arab but we are on the international race and the rewards for right track.“ the horse are the same as the The Qatar National Day Trophy & The Late Sheikh Jassim Bin Mohammed Al Thani Cup. the exclusive trainer for Umm Qarn Farm, owned by Sheikh Abdullah Bin Khalifa Al Thani, personal advisor of the Emir of Qatar, H.H Sheikh Hamad bin Khalifa Al Thani. Throughout the years, De Mieulle has witnessed a lot of changes to the Qatar equestrian world. “Back in 1995 when I first arrived in Qatar, the horse scene was very simple and not very developed. The improvement I have witnessed over the years is breathtaking. Still, there is room for more improvement, but we are on the right track. Ten years ago I wasn’t able to say we had a world-class winning racing horse in Qatar, but now we do. That shows how far we’ve come,” De Mieulle said. Training a horse is not an easy task. De Mieulle spends many hours every day to ensure quality training for the more than 70 horses on the farm.

“Training a horse requires time, passion and, most importantly, a good and professional team,” De Mieulle said. “I am blessed that I gathered all the necessary elements for De Mieulle started his successful career as success and the unconditional support of a horse trainer in his native France in 1981, before moving to Qatar in 1995. Since then, Sheikh Abdulla Bin Khalifa Al Thani. There De Mieulle has trained his share of winners, is mutual trust between us and I am able to tell him the truth, which is essential in order including winners of the Emir’s Sword and to guarantee a proper training.” the Qatar Arabian World Cup. COLOUR SCOPE

SPRING COLOUR TRENDS FOR 2011

By Moona Masri-Whitice, MBA Dewey Color Instructor and Consultant

Seeking the new colour trends for spring 2011? Search no more! Pantone LLC, the global authority on colour and provider of professional colour standards for the design industries, recently unveiled the PANTONE Fashion Colour Report Spring 2011! The report features the top 10 colours for women’s fashion for spring 2011, along with designer sketches, quotes and headshots, and is available as a free download at www.pantone.com/spring2011. It is a festival of colours that we celebrate in nature. “The colour designers have chosen for the spring season present an interesting marriage of unexpected warm and cool tones,” said Leatrice Eiseman, executive director of the Pantone Colour Institute. MAGENTA SHADES inspire you to enthusiastically start something new and attract new opportunities.

BROWN SHADES allow you to accept things the way they are right now.

ORANGE SHADES help you make positive changes easier. You gain the power to change the direction of a dead-end situation. BLUE SHADES gives you the focus to visualize. Allows you to expand your mind and dream.

TEAL SHADES inspire you to believe in your wishes.

Don’t forget that colour has more than just visual properties. Colour studies have shown that colour affects your environment, as well as your chemical balance. Reds and oranges affect the adrenal system, pushing increased energy into your system. In a cascade effect, other related systems may be activated, such as the immune system and vascular pulmonary. Greens and blues soothe and allow the time sense to be accelerated so that time seems to go faster and a wait appears shorter than when in a red surrounding. Blues and greens trigger the endocrine system and a set of neurotransmitters are produced which calm and inspire a slower, gentler spirituality than red. Use your imagination and play with colours either in contrast or in soft complimentary tones to create the effect that you have in mind. You can fill your canvas of life with joy and happiness when you add punches of your favorite colour to your home and wardrobe. Happy New Year!

The Dewey Color System® is the world’s only validated, color-based, personality testing instrument. It’s the first proven system that scientifically predicts the recognized major psychometric personality factors without language. www.deweycolorsystem.com
