After a fabulous holiday season, we are thrilled to start 2011 refreshed and relaxed. We have plenty to be excited about this year, including Qatar’s successful bid to host the 2022 World Cup. This historical victory is a great triumph for all residents of Qatar, especially those who have worked so hard to make this bid possible. On our cover this month is a celebration of football – both the World Cup bid win and the AFC Asian Cup Qatar 2011 are extremely important events taking place in Qatar. In fact, the two events are intricately connected by more than just the sport; the success of the AFC Asian Cup Qatar 2011 will serve to show the world that Qatar is capable of hosting the World Cup in 2022. Our sports section continues to grow this month, with stories on not only the World Cup bid and the AFC Asian Cup but also the Qatar ExxonMobil Open 2011 and the Commercialbank Qatar Masters, presented by Dolphin Energy. We also hit the links at the Doha Golf Course to learn from the pros at the Doha Golf Academy so we could prove to you just how exciting golf really is. Jazz fanatics will be thrilled to find out the Jazz Club at Oryx Rotana Doha will be hosting Elena Forbes and her band Turning Point for three months, starting January 3. QH TEAM

The QH team has had a lot to celebrate in the past month: the holiday season, National Day and, of course, Qatar winning the right to host the 2022 World Cup. When we weren’t busy doing cartwheels of joy, we spent our days scoping out new clubs, trying great restaurants and interviewing interesting people from all walks of life in and around Qatar. We’ve also started thinking about the direction we want to head in 2011. All we can say for now is there is plenty of excitement on the horizon for QH, so stay tuned! Here’s what helped prepare us for 2011.

• The Chocolate Mousse at Seasons in Movenpick Hotel Doha. This sweet, creamy chocolate dessert is truly heaven in a martini glass. Chocolate always makes our day better; this cocoa concoction makes our day utterly fabulous. • Strip Me by Natasha Bedingfield was on constant replay in our office as we danced away and prepared for a new year. In our minds, it’s been January for the past six weeks!

• The Latin Lounge at Four Seasons Doha became our favourite haunt to hang out at whenever we needed some time away from the office. There’s nothing more relaxing than enjoying a fancy drink while taking in an incredible view. • We perked up our tired eyes with Benefit’s Eye Bright Pencil. We swished this pink crayon on our swollen lids and underneath our sleepy eyes every morning to ensure we could get away with late nights at the office. • The cocktails at Pampano, located at The PearlQatar. Jazz lovers will have plenty to be thankful for in 2011. Starting Jan. 3, jazz goddess Elena Forbes and the band Turning Point will be performing at the Jazz Club at Oryx Rotana for three months. The famous jazz quintet brings with it international experience in clubs and renowned music festivals, said Lisa Tahabsem, director of marketing and communications for Oryx Rotana. Turning Point will deliver amazing live performances, varying from smooth instrumental jazz to energetic, alltime favourites, said Tahabsem. The Jazz Club, Doha’s one and only live jazz club, is known for its creative food and beverage concepts and elegant atmosphere, making it the perfect venue for a top-notch band. QH spoke with singer Elena Forbes to get the exclusive scoop on what jazz lovers can expect when they spend an evening with Turning Point. QH: Tell us a bit about your band Turning Point. EF: The guys are great. I have been working with them for several years now. We are all from South Africa, except Bernard, our saxophonist, who is originally from Ghana. These guys are very experienced and professional musicians and have been in the business for a long time. I feel very fortunate to be working with them.

QH: Is this your first time performing in Qatar? How long will you be here? EF: Yes, it's our first time. To start with, we will be performing here for three months, but who knows; maybe things will change at a later stage. QH: You’ve experimented with different styles of music such as pop, rock and jazz throughout your career. How have these different kinds of music influenced your current style? EF: Actually it's more a case of the audience influencing us. We do our best to please them. In spite of each one of us bringing our own style and ideas to the table, our goal is always to make sure our audience is happy with our songs and performances.

QH: What kind of show can audiences expect when they come see you at the Jazz Club at Oryx Rotana? EF: We are very excited to perform in the one and only Jazz Club in Doha, and we take this opportunity to thank the management of Oryx Rotana for such [great] exposure. Visiting Doha has been always a goal for us and we wish to offer all jazz lovers a memorable time in the fabulous Jazz Club. They can expect to hear a great variety of music, varying from jazz to rock to pop. We are very versatile. QH: What makes Turning Point different from other bands? EF: I believe our diversity in music [makes us different]. We've always kept an open mind to all styles and genres. QH: If you could collaborate with any artist or band in the world, living or dead, who would it be? EF: For me, personally, Prince or Joni Mitchell. Their continuous success and consistency as great singers, songwriters and musicians over the decades never ceases to amaze me. I cannot speak for the rest of the band.

QH: You’re currently studying music at the Royal School of Music. Why go to school when you already have a thriving career?

EF: I don’t see myself like that at all. It was all in good fun, but I wouldn't want to make a career out of it. My heart is in the music.

EF: One never stops learning about music. QH: What do you do in your spare time? EF: Sports and salsa. QH: What was it like competing on the South African version of ‘American Idol’? EF: It was an experience I will never forget. It was very challenging, exciting and sometimes nerve-wracking! I learned so much. QH: You’ve appeared in several magazines, including FHM Malaysia. Have you ever considered a career in modeling?

QH: You must spend a lot of time travelling. What is it like being on tour? EF: It's always wonderful to explore new cultures and new places. We really look forward to seeing Doha and meeting the people. Congratulations on winning the 2022 World cup soccer bid! QH: What’s your favourite thing about performing? EF: Getting the crowd into the music. QH: What’s next for you? What’s coming up in 2011? EF: A couple of opportunities are in the cards for 2011, but no concrete decisions have been made yet. 17

We all know that video killed the radio star. But did digital kill the record label? Steve Hulme, label director for global music brand Pacha, doesn’t think so. QH spoke with Hulme to learn about innovative ways record labels are staying afloat in a world where Steve Jobs is on top. Online music sales have, without a doubt, impacted the music industry. Instead of admitting defeat or starting a duel with the digital world, some record labels are striving to find ways to allow live music, albums and digital downloads coexist in harmony. International party house and music brand Pacha takes extra steps to promote their music through live DJ shows, CD giveaways and their own online music store, Hulme told QH during his recent trip to Qatar.

“The [industry] is always moving; and you just have to keep moving with it. People, when digital came in, were like, ‘oh, it’s the end of the world,’ but it’s not. It’s become something very positive. With digital, you can get your music to the world in one go,” Hulme said. 18

The music industry is starting to move away from the sale of musical recordings to the sale of live music at events, said Hulme. Sometimes when Pacha throws live shows, they include a CD with the ticket price to further promote their artists’ music.

“The crowd in W Doha is definitely appreciative of this kind of music,” said Mayur Patel, operations manager for Oreole records. Oreole has an agreement in place with W Doha to bring acts to the hotel from September 2010 to March 2011. “The staff at W Doha are totally into this kind of event,” agreed Hulme. “They totally embrace [live shows]. They have a captive market so they don’t even have to do that.

They take the time and effort to bring in artists from around the world and that enthusiasm is very, very sexy. It’s very cool.” Every time Pacha brings an artist into Doha for a show, they hold a jamming and autograph session at Virgin Megastore the same day of the event. The live DJ scene is Qatar seems to be growing in popularity, if the success of recent events is any indication. Hundreds of revelers enjoyed a full-blown Ibiza-themed New Year’s Eve party at W Doha, with DJ Andy Baxter spinning sick beats until the wee hours. “This town, this country seems to be embracing what’s happening here and around the world. [Qatar] is setting itself up for tomorrow,” Hulme said. There are plenty of upcoming events for music lovers to get excited about in 2011. In February, Pacha presents DJ John Jacobson at a Pacha Recording presentation at the W Doha. The record label will bring in DJ Dab from Italy to play at the W Doha in April. Pacha has a group of five global DJs that continuously roam the world playing at various international venues. It’s part of their plan to stay in the public eye. “You have to really be in the faces of not just the public but of the industry,” Hulme said. “You have to be visual and vocal, and remind people that you’re here.”

Art exists in many forms, from fancy paintings to sidewalk graffiti. What we consider to be art is constantly evolving; new forms of the craft are continuously appearing. One popular, little-known form of art is starting to emerge in Doha. 3D paper art, which is popular in Turkey, is starting to gain ground in Qatar thanks to 3D paper artwork artist Fatma Daglioglu. QH spoke to the Turkish artist through her friend, student and translator Aycan Aksoy to learn more about the unique craft.

T

wyla Tharp once said “art is the only way to run away without leaving home.” For artist Fatma Daglioglu, art is a way of staying connected to her home, her roots, her country. Daglioglu is originally from Turkey but has resided in Qatar for several years. During a trip to Turkey two years ago, Daglioglu met an artist who made 3D paper artwork and became intrigued by the craft. She took lessons on how to make the delicate 3D artworks and discovered she has a natural talent for the art form. Daglioglu took her new knowledge back to Doha and started her path as an artist.

3D art is a complicated art form. It looks easy but can actually be quite difficult to create, said Daglioglu. Each piece of art is created from painted paper cards.

Daglioglu cuts each card and carefully places them on top of each other to create the 3D effect. Then each picture is painted with silicone and framed. Each picture must be cut with precision or the entire effect will be ruined. It’s difficult to understand just how exact the craft is until you glance at one of the completed works of art. The pictures really are in 3D and look like something created centuries ago. “They’re quite precious,” said Aycan Aksoy, Daglioglu’s student and translator. Qatar is full of strong,self-sufficient women, from corporate professionals and CEOs to young entrepreneurs and fresh-out-ofuniversity go-getters. At a time when the focus of the world has dramatically shifted to Qatar, it seems rather important to show spectators just how misguided some of them were when they referred to Qatar as a ‘female-oppressing’ country. Women in Qatar are not only thriving in their professional and private lives but are also bonding together to strengthen the power of women in Doha. Case in point - the formation of the Qatar Professional Women’s Network (QPWN). QH’s star intern Moza Alnuaimi takes a look at the origins of this groundbreaking organization.

Q

PWN, founded by Christina Zini, is a self-described “informal networking group” that aims to empower Qatar’s professional women, both nationals and expats, and help them develop and maintain their professional capabilities in a supportive environment of their peers. It also helps its members build a repertoire of networking skills and provides them with the benefit of being exposed to various cultures within the group.

It all started in late February 2010, when a group of women discussed the need for a professional women’s network in Qatar. The notable part of this tale is that these women did not leave their discussion at the coffee table, but took it upon themselves to make the dream a reality. After a few

meetings and loads of hard work and planning, QPWN progressed from an e-newsletter to a full-fledged network, with its own website (qpwn.org *wink, nudge*) and events, the first of which was held in late May 2010. The launch event, appropriately titled ‘Dream Big!’, was held on Dec. 7, 2010. It was held with the purpose of inspiring Qatar’s women to dream and to fulfill their own aspirations, as well as giving back to Qatar. This new, yet sturdy, network provides several regular events that include networking, keynote speakers and panel discussions. The most regular of these is a standing after-work, informal event, which is held in different venues around Doha and takes place on the fourth Monday of every month, save for December. All events are

restricted to women and are alcohol-free. A pay-per-event system is in place, so there are no membership fees, and there are no conditions as to age, profession or nationality. Many people move to Doha and are shocked to find ice hockey in a land of sun and sand. Ice hockey is not only being played here but is also absolutely thriving, thanks to the creation of the Qatar Minor Ice Hockey Association in 2001. Aspiring Sydney Crosbys of all ages hit the ice every week to sharpen their skills. QH laced up their skates and took to the ice to learn more about Qatar’s premiere ice hockey league.

ake a stroll through Villaggio Mall on any given Saturday and you’ll notice something odd but heart-warming – kids, and lots of them, swarming the ice rink for a good ol’ hockey game. It’s a strange sight for some because only a decade ago ice hockey didn’t really exist in Qatar.

Budding referees are mentored by other referees to ensure they learn the skills they need. All of the referees, as well as the coaches, volunteer their time. “One of the main conditions when we decided to move to Qatar was that there had to be hockey.” The QMIHA has a healthy rivalry with the ice hockey league in Dubai, which is currently bigger than Qatar’s league. Friesen said the Dubai league actually has to turn kids away, whereas the QMIHA is always open to accepting new players. “We take everyone. It doesn’t matter if you can skate or not,” Friesen said. Wannabe Wayne Gretzkys can sign up to join the QMIHA at any point during the season, as long as they have ice hockey gear. Ice hockey gear is not available for sale in Qatar so players must bring it in from another country, such as the United States or Dubai, or swap gear with someone who has outgrown their old skates and padding.

Ice hockey can provide a sense of normalcy for many kids who move to Qatar after playing ice hockey in their home countries. “One of the main conditions when we decided to move to Qatar was that there had to be hockey for [my kids],” said Jan Marie Graham, a parent in the QMIHA. Her family moved to Qatar in August 2009 and her kids began playing hockey in September 2009. Andrew Seck, whose 10-year-old son Ryan has played hockey for three years, was also pleasantly surprised to learn Qatar has an ice hockey association. “It was a real delightful surprise to discover that Qatar had an active hockey program. It was one of the selling features that we told our son about coming here to Doha,” Seck said. “When we got involved in hockey here, we discovered that it’s not just in Qatar but in the Gulf that there is a very active hockey program. The hockey community is wonderful. It’s a real group of passionate people that are a) passionate about hockey and b) passionate about children’s development.”

Seck is involved with the QMIHA executive as a corporate fundraiser. This year QMIHA focused on bringing in more corporate sponsors to cover expenses such as extra ice time. Conoco Phillips and the College of the North Atlantic were silver level sponsors for the Qatar Raiders Cup, while Gondolania provided in-kind sponsorship, such as discounted passes to the park for kids and parents in town for the tournament. It’s sometimes too hot to find outdoor activities for children, so indoor ice hockey provides an outlet for healthy exercise year-round, said Seck. In addition to providing a solid amount of physical activity, ice hockey provides a number of benefits, such as discipline and camaraderie. The players agree that shooting pucks is a good way to spend an afternoon. “It’s a lot of fun,” said Hannah, an 11-year-old Canadian living in Qatar. “My favourite thing about hockey is that we get to go places and play in tournaments.” The QMIHA has mixed teams, meaning everyone who wants to gets to play. In the future, it is likely the QMIHA will continue to grow. The organization hopes to eventually have their own dedicated ice rink for practices and games. In the meantime, the players will continue to bash about on the ice rink in the mall, while the shoppers continue to pass them by and the hockey parents continue to look on proudly. QH has ordained 2011 the Year of the Round Up. This means we’ll be scouting out restaurants, coffee shops, cafés and hotels all over Doha to find the best of the best in the food and beverage industry. This month we start with our picks for the Best Mocktails in the City.

Spice Market at W Doha

Spice Market creator Jean-Georges believes in keeping mocktails simple. The famous chef doesn’t believe in garnishes, umbrellas or any sort of accruements taking away from his world-renowned speciality sodas. Luckily, these drinks speak for themselves. If you’re a fan of sweet sensations, try the Cherry Yuzu Soda, made from a cherry juice base, acidic yuzu and soda water. This fizzy beverage is sweet without being saccharine. Made from fresh ingredients, this bubbly drink has a dominant cherry taste that provides a burst of flavour. For something a little more potent, try a Fresh Ginger Soda. Comprised of a base of boiled fresh peeled ginger, lemongrass and lime juice mixed with soda water, this spicy mocktail is a double whammy to the senses. The ginger mixes well with the lime and lemongrass for a powerful but enjoyable beverage. For 32

the perfect mix of sweet and spicy, try the Passion Chili Soda, a mix of passion fruit puree, fresh lime juice, chopped chilies and soda water. Sweetness is the main attraction in this delicious beverage but the subtle spicy flavour elevates this fruity drink to the next level. Health nuts will enjoy the Green Tea Matcha Iced Tea, the only mocktail with no soda water and almost no sugar. While this drink has a specific audience (fans of green tea will love it), it is a nice, light drink option. The Spice Market’s standout mocktail is their Jasmine Lemonade. This light, slightly sweet drink tastes like summer in a glass. Made of only jasmine tea, sugar and soda water, this mocktail hits all your senses in a heavenly way. Sip it while reminiscing about lazy summer days.

While we are huge fans of their caffeinated beverages, we were pleasantly surprised to find they have a great selection of mocktails too. Those who crave long, warm days filled with cool bevies will fall for THE One’s range of summer-inspired drinks. The restaurant’s Ginger Mojito gave us a well-placed kick in the taste buds, with its bubbly effervescence and sparkling gingery taste. The Carrot, Apple and Ginger Energizer invigorates the senses. The crisp green apples and dominant ginger taste blend well with carrot, resulting in a tangy drink that is guaranteed to make your throat feel alive! The Minted Lime and Lemon Punch bursts with refreshing flavour. The lime cordial intermingles with the lemon juice, soda water and fresh mint leaves for a more sophisticated version of lemon-lime pop. For something a little heartier, try the Summerberry Smoothie, a thick blend of strawberries, blueberries, cranberries, orange juice and yogurt. It has been said that French people don’t get fat. But how can that be, with all their amazing cuisine? In order to properly investigate this perplexing paradox, QH dined at Le Central, Le Cigale’s stunning secondfloor restaurant. But instead of solving the mystery of the thin French person, we found ourselves wondering how French people can do anything but eat.

T

he atmosphere in Le Central is lovely. With high ceilings, stained glass candle holders and dim lighting, the restaurant can be admired for its ambiance alone.

However, as soon as we sat down, my dining partner and I quickly forgot all about the lovely atmosphere and focused our attention on the food.

We started our meal with the complimentary breadsticks, dips and olives Le Central provides to all their guests. While we liked the sundried tomato with garlic spread, we fought over who got to dip the last crunchy breadstick into the amazing Philadelphia cream cheese mixed with walnuts and chives. Fortunately, before a brawl could break out, our server brought over a basket overflowing with different kinds of bread and buns. While tempting, we tried not to fill up on carbs too much, since we ambitiously ordered enough food for three or four people. My dining companion swooned over his crispy basil shrimps, mint and mango salad, saying that the bitter, 34

leafy part of the salad provided a stark contrast in flavour to the sweet, delicious mango sauce. The interesting texture of the salad elevated it from boring rabbit food to high cuisine. I chose to tackle the high-end salad bar, which boasts a variety of vegetables, dips, and appetizers. I was pleasantly surprised by the amazing Greek salad, which has a slightly sweet, very unique flavour. I went nuts over the grilled peppers (not too oily, cooked to perfection) and I may have taken the majority of the pomegranates (the best I’ve ever had) available, not to mention several helpings of the hummus and pomegranate dip. The salad bar provided so many different amuse bouches that one could easily make a meal out of it. But then you would miss out on the restaurant’s famed main courses, which would be a total crime. Because we always like to have options (and we’re gluttonous by nature), my culinary companion ordered the Wagyu beef striploin with pepper sauce, potato dauphinoise and seasonable vegetables, while I

went with the chicken breast stuffed with sundried tomato and ricotta cheese, rosemary sauce, green asparagus and potato wedges (the meal normally comes with mashed potatoes but our server graciously accommodated our love of potato wedges).

couldn’t help but finish the whole thing. Each pocket of saltiness and layer of fresh herbs enticed us to eat more, even when common sense begged us to stop.

I was just about to unbutton the top button on my pants when our third main course arrived. We were both so busy consuming our meals with a fiery passion born of hunger and desire for good food that we forgot we had ordered sea bass. But how could we resist fish fresh from the restaurant’s fish market display? Each fish available at Le Central is kept on display on ice so that diners may choose which fish they would like to be cooked especially for them. The chef will grill, bake or fry any fish just the way you like it. Ambitious seafood lovers can even pick their own lobster fresh from the tank. We chose a traditional sea bass because we wanted something simple and elegant, yet tasty. The fish, grilled with olive oil, did not disappoint. As soon as we squeezed fresh lemon on top of le poisson, we

To fulfill my coffee addiction, I tried the cappuccino delight coupe – a beautiful arrangement of coffee mousse, chocolate bitter sauce and a chocolate coffee biscuit. My dessert was so pretty that at one point I didn’t want to eat it…it had ceased to be food and instead had become edible art. Rational thinking eventually won out (no dessert can last forever) and I scooped up a spoonful of creamy chocolate mousse and dark, tart chocolate sauce. My taste buds were grateful that I did.

What do you get when you take tantalizing Lebanese food, mix it with fancy French furniture and throw in some sensational service for good measure? Why, the new Al Mourjan, of course! QH spoke with Mohamed Al-Sadek, owning director of Al Mourjan Restaurants, to find out the secret behind the chain’s success, their plans for expansion and what their new location will offer guests.

he new Al Mourjan is a palace. The Lebanese restaurant’s second branch, located beside Second Cup in souq Waqif, is decorated to look like a French salon or a sitting room in the palace of Versailles. With delicate blue and gold chairs and glittering 25,000 USD bohemian crystal chandeliers adorning the ceiling, one expects Marie Antoinette or another member of French royalty to be seated at the table next to you. The floor is made of Italian marble; the bar is lined with branded coffee machines (made especially for Al Mourjan). In essence, it is a room designed for royalty. The restaurant is designed to look very artistic, very classic European and very royal, said Al-Sadek, the man behind the Al Mourjan concept. If elegance is your thing, pull up a 1,500 USD chair inside the souq Waqif Al Mourjan and enjoy the best Lebanese food Qatar has to offer. If not, never fear: Lebanese food lovers have several dining options when

it comes to eating at Al Mourjan. The new souq Waqif location, which opened its doors in December 2010, actually boasts more outdoor seating than indoor; while the actual restaurant can accommodate up to 50 people, the outdoor seating area can serve over 100 guests. Foodies can also get their fill of Lebanese cuisine at Al Mourjan’s original spot on the Corniche. Al Mourjan’s premiere restaurant has an entirely different, but just as appealing, vibe. The Corniche location’s ambiance is Mediterranean fused with Qatari influences. The Corniche Al Mourjan, which opened in late 2008, is for people who want to completely relax, said Al-Sadek, whereas the one in the souq is for diners who like to people-watch. Each location offers the same menu and the same level of impeccable service, said Al-Sadek. Both restaurants are open from 12:00 p.m. to 1:00 a.m. Al-Sadek hopes to eventually offer breakfast at the souq Waqif location.

Al-Sadek, who owns the Al Mourjan brand, concept and restaurants with his business partner Nasser Abdelaziz Al Mesalam, plans to open two more branches in the near future, for a total of four locations in Doha. The third restaurant is slated to open in 2011; the location remains under wraps but the theme will most likely be a mix of Moroccan and Spanish, said Al-Sadek. Soon the rest of the world will have a chance to experience the Al Mourjan concept. Al-Sadek plans to open several regional branches of the restaurant in 2012 (Abu Dhabi, Bahrain, Beirut) and go abroad in 2014, starting with an Al Mourjan in Paris. Eventually the restaurant will go global, with plans for locations in London and New York. It makes sense to open Al Mourjan restaurants world-wide. The chain is already one of the top 100 restaurants around the world, with guests from countries around the globe making online reservations for the Corniche location before their trips to Qatar.

“The music that we choose to play in our restaurants is very special and is part of the concept,” Al-Sadek said. Al-Sadek has been in the restaurant business for 15 years and has owned his own properties for 12 years. He travels the world and channels his knowledge into the Al Mourjan concept. It’s a method that’s working; Al Mourjan won five awards in 2010 and Al-Sadek hopes to capture more in the future. The key to Al Mourjan’s success is its uniqueness, said Al-Sadek. “The ambiance we create, the service they get and the food they are served is different. Every bite has a special taste. [Guests] feel it; they feel how good it is,” Al-Sadek said. Al Mourjan specializes in VIP lunches and dinners. However, anyone who enjoys quality Lebanese food will enjoy this high-class fare.

So why the intense global interest in a Lebanese restaurant in Qatar? Al-Sadek believes people are drawn to Al Mourjan because there is no other restaurant like it. “The concept is unique. I created a concept that will put Qatar on the map of the world’s best restaurants,” Al Sadek said. “We are the number one restaurant in Qatar; we are top three in the Middle East; and we’re in the top 100 around the world.”

The menu boasts traditional Lebanese food with a twist, ensuring each phenomenal bite is an experiment in pleasure. Al-Sadek is particularly proud of the restaurant’s lobster, his personal favourite. “The way we do our lobster is completely different from anyone else. It’s so special. The taste that we create is really unique,” Al-Sadek said. While he wouldn’t reveal the secret behind his famous lobster, Al-Sadek did say that the lobster is marinated in seven different secret spices that lend their flavour to the dish.

Al Mourjan was created to challenge the best around the world, said Al-Sadek. “This has taken a lot of hard work and dedication. Endless energy has gone into making everything perfect,” Al-Sadek said. The restaurateur focuses much of his energy on attention to detail. Everything about Al Mourjan is carefully thought out, from the silverware to the music. Al Mourjan has their own brand of music chosen from around the world.

Lebanese food is all about nutrition and health, said AlSadek. The cuisine incorporates a lot of vegetables and heart-friendly olive oil. However, each tasty morsel is so good that you would never realize it’s actually good for you. Al-Sadek is happy to provide such tasty, authentic Lebanese for his guests. “We’ve been able to bring Lebanese food to another level,” Al-Sadek said. “We create authentic food at its best.”

QH has a soft spot for guacamole and margs, so we were thrilled when Pampano opened at The Pearl-Qatar. The upscale, seafood-influenced Mexican restaurant combines quality food with a laid-back atmosphere for a fabulous dining experience unlike any other. QH caught up with chef and restaurateur Richard Sandoval during his recent trip to Qatar.

exican food is in Richard Sandoval’s blood. The chef, who hails from Mexico, grew up learning the secrets behind the spicy cuisine in his father’s restaurants. Sandoval then headed to culinary school to fully prepare himself for the restaurant world.

Combining his knowledge of the restaurant business with his love of food was a natural choice for the friendly chef. “I’ve always gravitated towards food. That’s where my passion was and that’s what I liked,” Sandoval said. “Something that I have that many chefs don’t have is that not only am I chef but I’m also a businessman. I understand that at the end of the day it is a business; it’s not a toy. I learned that from my father.” Today, Sandoval has 26 different restaurants all over the world. His restaurants feature cuisines ranging from French to Mexican. Pampano, his first restaurant in Qatar, is high-class, seafood-influenced Mexican food. 38

The vibe at Pampano at The Pearl-Qatar is a little more relaxed than some of the other locations, said Sandoval. You won’t find white linen tablecloths or snooty waiters here. The dining scene has evolved in the past few years, said Sandoval. “Fine dining has kind of taken a different turn now. People like to go to restaurants that are a little more fun, more casual. They’re not looking for ‘fine dining’ on a regular basis,” Sandoval said. Part of Pampano’s relaxed atmosphere is due to their lovely patio, which seats about 70 people. The indoor part of the restaurant, which accommodates about 60 people, is just as open and inviting. Sandoval came to Doha in early December to check on Pampano and make minor adjustments to the menu. “I think one of the things we need to adjust here is our lunch menu. I don’t think there is enough approachable stuff,” Sandoval said. Their lunch items need to be lighter and faster, as lunch is usually not a big sit-down meal for people, said Sandoval. A lot goes into planning each menu, including what’s in season, the location and

Your palate's going to be challenged with things you’ve never seen or tasted before.” people’s tastes. “There are a lot of elements that go into planning a restaurant and a menu,” Sandoval said. “All the food still goes through my hands; all of the menus, I taste.” The award-winning chef is adamant about using fresh ingredients. “I seldom have freezers [in my restaurant]. Sometimes I have to. In some parts of the world you can’t get everything fresh. But if I didn’t have to have a freezer, I wouldn’t; only for the ice,” Sandoval said. The difference in taste between fresh and frozen is day and night, said Sandoval. Even the drinks at Pampano are all made from scratch with fresh ingredients. In 2011, Sandoval’s empire will continue to grow, with properties opening in Dubai, Aspen, Denver and Mexico. Sandoval is prepared for the possibility of one day opening another restaurant in Qatar. If he does, he’ll take it in a new direction. “I’d like to do something more fun, more family-oriented,” Sandoval said. “I think you need stuff that’s more approachable, more casual, so you have a nice mix of different types of restaurants.” Mexican food has skyrocketed in popularity in the past few years, said Sandoval. “In this part of the world it’s just starting to come around,” Sandoval said. Mexican food is a very diverse cuisine. “It’s incredible how much you can do with this cuisine. It has a flavour people understand, people like. You have the sweetness of the sauces, a lot of spices. Palates around the world have changed dramatically. I think more than ever people like spice. I think it’s natural for the tendencies of this food to evolve,” Sandoval said.

In the past, people tended to view Mexican food as only tacos and burritos. Guests expecting traditional Mexican food at Pampano should come to the restaurant with an open mind and be prepared to try new things, said Sandoval. “What you’re going to get is an explosion of flavours, colours, ingredients. Your palate is going to be challenged with things you’ve never seen or tasted before,” Sandoval said. Both customers and critics adore Sandoval’s restaurants. Still, he remains humble about his success. “I think it’s great but what I’m doing is bigger than me; it’s not about me. I think it’s about the people I work with,” Sandoval said. “There used to be a point where Mexican food was never seen as what it could be. More than the awards, I take pleasure in seeing how Mexican food has evolved. A Mexican restaurant at The Pearl – 10 years ago I never would have imagined that.”

Sandoval revealed the recipe for his famous Lobster Tacos to us. Here’s how to make this fantastic dish at home.

INGREDIENTS

for four Lobster Tacos: For tacos: 4 pieces flour tortillas, cut with 4” round cookie cutter 1 piece lobster, steamed, shell off 1 tablespoon butter 4 tablespoons black bean puree 4 slices avocado 4 teaspoons chili de arbol sauce Chopped cilantro to garnish For black bean puree: 0.5 cup dry black beans 1.5 cups water

METHOD For black bean puree: Cook black beans in water with onion and cook until tender. Add salt Puree until smooth For Chile de arbol sauce: Slightly sauté the chile, onion, garlic, and tomato paste. Add heavy cream and simmer until cooked, approximately five minutes. Add salt to taste Add cilantro and puree until smooth

¼ small onion Salt to taste For chili de arbol sauce: 1 piece chili de arbol dry ¼ small onion

For Tacos: Roughly chop the lobster and warm in a pan with a little butter. Season with salt Heat the tortillas in a skillet or griddle

1 garlic clove

Place 1 – 2 teaspoons black bean puree on each tortilla

1 tablespoon tomato paste

Divide the lobster among the four tortillas

1 cup heavy cream

Drizzle the lobster with chili de arbol sauce

Salt to taste

Place a thin slice of avocado on top and sprinkle with chopped cilantro

With a huge golf tourney coming to Qatar in February, QH decided to hit the links to learn the art of golf, with the goal of one day joining the ranks of Tiger Woods. Only problem is, we’ve never golfed a day in our lives. Luckily, golf experts Andrew McGregor and Peter Bailey from the Doha Golf Academy at the Doha Golf Club taught us the basics in only one afternoon.

This is one of the first things I admit to Peter Bailey, Director of the Doha Golf Academy, and my golf guru for the day.

But I don’t admit that not only have I never so much as mini-golfed but that I’ve also spent my whole life avoiding golf – playing it, watching it, talking about it – because, well, I think it’s boring.

Engaging the correct muscles and shaping your swing is also very important. People create their swing based on their stance so if their stance is wrong, their swing will generally be incorrect.

However, during my two-hour golf lesson at the Doha Golf Club, not only did I learn that golf is anything but boring, I also discovered I have a bit of a natural talent at it. Or, at least, I can hit the ball without injuring myself or others (which, to me, means I’m a golf goddess worthy of an endorsement deal).

While the Doha Golf Academy, located at the Doha Golf Club, is open to teaching everyone, there is no one standard method for teaching golf because each student is different. Past sports experience often factors into level of play, said Bailey. “Some people pick it up really easily naturally so you just have to touch on a few of the basics. Some people have to really work quite hard at golf. Everybody’s different. We don’t teach people by one method,” Bailey said. “We try to bring it back to the simplest steps to build it up from there. If it’s someone just starting we’ll start with a couple of basics that are fairly easy to grasp.”

THE SWINGS Putting – hitting the ball a short distance on the grass. Involving the use of a shorter club, the goal of this swing is to get the ball rolling. “It’s probably one of the more important parts of the game to improve as you get better and better,” Bailey said. Chipping – hitting the ball up into the air a short distance. Use this swing when you’re closer to the green and trying to land it on the green close to the flag. Pitch – similar to chipping but happens when you’re farther away from the green. Like a longer chip, this swing involves the ball spends more time in the air then it does rolling on the course.“There’s a bit of a grey area between a chip and a pitch,” Bailey said.

as young as four years old. Other students might decide to take up golf for the first time during their golden years of retirement. While there is no set list of rules to follow, there is one important tip to remember. “Don’t listen to everybody. I think people tend to listen to anyone who will talk to them about golf and everyone will tell you something about golf,” Bailey said. Avoiding conflicting golf tips is one of the best things you can do while learning how to golf, said Bailey. Parents can contact the Golf Academy to book individual lessons or find out more about the youth programs. The academy holds regular meetings for parents to explain what programs are available for kids.

All of the coaches at the Golf Academy are British PG Professionals. In order to be in the professional golfers association, members must learn sports science, club repairs, business management, coaching, tournament rules and organization, among other things. “We’re not just players who have gone into coaching and just do coaching,” Bailey said. “We look after all areas of the sport.” Golf has grown steadily in popularity in Qatar over the past three years, said Bailey, in part due to the popularity of the Commercialbank Qatar Golf Masters, presented by Dolphin Energy, which take place every February in Doha. The Doha Golf Academy will offer free introductory golf lessons during the golf tournament in February for anyone who would like to learn the basics. WHAT TO WEAR While you don’t have to wear the traditional stylish golf attire of checked trousers and jaunty flat caps, there are some good rules to remember when dressing for the golf course. Dress for comfort. Avoid denim, high heels or anything constricting. A practical golf outfit might consist of something as simple as a polo shirt, comfortable shorts and flat-soled shoes.

TIPS FOR THE COURSE Remember to drink plenty of water to stay hydrated throughout the day. Whether you are hitting a few balls at the driving range or spending an entire day on the course, you will become dehydrated easily due to the exertion and the sun. If you are playing in the hot summer months, you may want to bring an extra outfit to change into after your game so you don’t turn into a hot mess. If you are playing during peak sun hours, remember to slather on sunscreen and wear a hat, lest you pass out on the golf course and get trampled by other eager golfers. If someone yells ‘fore,’ hit the ground. Or simply look out, depending on how comfortable you are with the idea of getting whacked in the head with a stray golf ball. Above all, remember to have fun!

Each new year brings with it an opportunity for us to improve our lives, boost our self-confidence and de-clutter our living rooms. Spring cleaning is a process steeped in tradition and is usually the second thing we think about right after we establish our personal new year’s resolution to lose the extra 10 pounds we could not lose last year. Since I am not particularly good at or fond of dieting, my advice is directed to the task of helping you organize your home sweet home. To begin the task of clutter clearing make sure you pick one area or room at a time. Don’t try to do every room in one day or you will get overwhelmed and quit. My rules for organizing are simple: • Select • Divide • Give Away, Sell or Trash • Pack and Label • Store

Give Away, Sell or Trash Physically remove the items from your home after deciding if they should be sold, given away or trashed.

Divide Make sure you separate what you want to keep from what you will get rid of. Quickly put what you have decided to discard into a box or bag and label it. Do not open it again.

Pack and Label Place what you have selected to keep neatly within the container of choice and label it so you do not forget what you have stored. I promise if you don’t label it you will forget!

Make sure you can see the label. If you are a techy, use your camera to take a picture of the contents, print the picture and use it as your label. Store The objective of “storage” to keep all the “stuff” is to look for clever ways to disguise and yet display items. Depending on what you are storing, get creative and think outside of the box. In Qatar, there a many choices for beautiful containers that do double duty. For lovely new things, THE One, Home Center and Oriental Carpets are my personal favourite places to find wooden chests that can be used as side tables, coffee tables and toy boxes and can hold linen, towels, music, CDs, shoes, etc. A shoe cabinet or a small curio from a home store can double as a bathroom storage unit. A desk in the kitchen can double as a kitchen island for smaller items like tea, medicine and cereals. A three-tiered fruit basket can easily hold cleaning supplies and towels in the guest bathroom. Plastic dish pans can be used to hold pots and pans, cleaning supplies, medicine and tea. Hang a pocket shoe holder over the back of the bathroom door for small items such as brushes, combs and hair clips. Don’t want to buy new stuff but need storage furniture? Head out to Najma. It is the second-best place to go, besides scanning the classifieds on www.qatarliving.com. My advice for used furniture- if you find it and don’t like the colour – spray paint it! My favorite DYI project – make your own storage container by using shoe boxes, wall or contact paper or even this magazine. These boxes are great for CDs, hair bling, makeup and even mail. One of the most risqué items in the Global Glam Collection is the Gold Lame Pleated Shorts. atar will be the centre stage of an epic battle when the 16 best football teams in Asia land in the country to lay claim to the continent’s biggest football prize. Starting Friday, Jan. 7, until Saturday, Jan. 29, Qatar, all four of the Asian qualifiers for the FIFA World Cup 2010 – Australia, Japan, the Korea Republic and PDR Korea, - three-time winners Saudi Arabia and Iran, one-time winner Kuwait, defending champion Iraq and elite teams from: China, Syria, Bahrain, the United Arab Emirates, Jordan, India and Uzbekistan, will collide at the long-awaited AFC Asian Cup Qatar 2011™.

WHAT IS THE AFC ASIAN CUP? The AFC Asian Cup is an international association football tournament run by the Asian Football Confederation (AFC). The event was first held in 1956 and hosted by Korea Republic. Twelve founding member associations started what would become one of the most relevant football tournaments in the world. The best football teams from Asia play against each other every four years so one nation can be proclaimed the champion of the continent. 54

The 13th edition of the Asian Cup took place in 2004, as well as the Summer Olympic Games and the European Football Championships. As a result, the future editions of these three events would share the spotlight every four years. Therefore, the AFC decided to move the Asian Cup to a less-crowded calendar year, allowing time to rest for those teams that would qualify for more than one of the three events. After 2004, the tournament took place in 2007, being pushed backwards by one year. From 2007 onwards, the event went back to be held every four years.

Khalifa International Stadium The 50,000-seat capacity stadium is a true testimony of Qatar’s incredible architectural achievements. The stunning venue is fully equipped to host any type of major event. The Khalifa International Stadium easily hosted the amazing opening and closing ceremonies of the Asian Games 2006, and the 50,000-person crowd that packed the stadium in 2009 to see Brazil beat England 1-0.

Al – Saad Stadium Al – Saad was originally built in 1974, but it flourished into a state-of-the art stadium in 2006 to host some of the most memorable football matches of the Asian Games. Al-Saad has a seating capacity of 15,000.

Al-Gharafa Stadium The stadium played host to the women’s final during the Asian Games 2006. The 25,000-seat venue is one of the newest and largest currently standing in Qatar.

Al-Rayyan Stadium It’s the second-largest stadium in the country after the Khalifa International Stadium, with a capacity of 25,000 seats.

Qatar Sports Club In December 2005, the 12,500 capacity stadium hosted the opening and closing ceremonies and the final football match of the third West Asian Games. 56

THE FAN ZONE Football will not be the only attraction during the tournament; there will be entertainment of all kinds. At Aspire Park, local and international fans will have the special chance to visit exhibits, food courts, play interactive games and enjoy 16 evenings of a flame and music show dedicated to each of the participating countries. The shows will give each participating country the opportunity to showcase their culture to all spectators present at the Fan Zone. Adding to the fun will be FunPark, featuring street soccer pitches, a virtual penalty shot simulator and a gaming zone. The Fan Zone opens starting on Thursday, Jan. 6 and runs until Saturday, Jan. 29 for the following times: Sunday to Wednesday: 4:00 p.m. to 10:00 p.m.; Thursday: 4:00 p.m. to 12:00 a.m.; Friday: 10:00 a.m. to 12:00 a.m.; and Saturday:10:00 a.m. to 10:00 p.m.

BUY YOUR TICKETS NOW! The organizers have put into action a pioneer ticketing program, hoping to maximize the tournament’s attendance and enhance the experience. The ultimate goal is to reach out to every single citizen of Qatar and each corner of Asia. There will be an estimated 550,000 tickets for sale providing access to a reserved seat for the 32 matches taking place. A total of five ticket designs were introduced to the public. The official colors of the games were used to ensure a dramatic and powerful aspect to the tickets. Each color represents one stadium. The practice is a revolutionary idea for football and any major world-class sporting event. The organizers are also working closely with the Minister of Education, the Higher Council of Education and other authorities to guarantee the participation of schools in the tournament through a specific ticketing program.

The AFC Asian Cup Qatar 2011™ will serve as a platform to promote “Dream Asia,” a noble initiative from the AFC to help social development among its member associations in Asia. Many activities are planned to help unprivileged individuals in Asian nations. The objective is to teach social values and instill a football culture. One of the biggest projects is “Midnight Football,” a program to get kids off the streets and provide them with the skills to succeed in life. The program will also help kids that dream about becoming professional football players by coaching them and providing them with the right training and all the necessary tools.

Reach Out To Asia (ROTA) The Qatari-based non-profit organization ROTA will also have a special place at the AFC Asian Cup Qatar 2011™ through

several activities taking place during the tournament. The organization aims to encourage quality primary and secondary education to children affected by different type of crises in Asia. ROTA will also work closely with Food and Agriculture Organization of the United Nations to help hungry people in the world.

The Game of the Masses The whole world speaks the language of football; it is the preferred sport in almost every country. The organizers of the AFC Asian cup Qatar 2011™ want to engage the community and get the fans closer to their teams. For the first time, the buses transporting the teams to the stadiums will be branded with each respective team’s look. In addition, the buses will carry slogans written by fans in each country’s native language and in English. The slogans were chosen through a competition launched in 2010. The AFC Asian cup Qatar 2011™ will be a barometer to measure Qatar’s abilities to successfully carry out the country’s most ambitious project to date, hosting the FIFA World Cup 2022. Qatar’s location in the world is strategic to host an event like the World Cup. The country is a bridge between Europe, Africa and Asia. Two billion people live within four hours flight from Qatar. The Doha International Airport will be ready

to receive 50 million people every year by 2017. Spectators coming from abroad will have no need to take any other plane once they arrive in Doha until the day they return home. NOT ENOUGH STADIUMS? The government of Qatar will spend 4 billion USD to build 12 state-of-the-art- stadiums that after the games will be dismantled and reconfigured to build 22 stadiums in developing nations all over the world. NOT ENOUGH ACCOMMODATION? That would probably be true if the World Cup was taking place this year, but by 2022 Qatar will have 100,000 hotel rooms and serviced apartments, 90,000 of which can be used by FIFA. TIME ZONE During prime time, 3.3 billion viewers will be able to watch the matches live; in the afternoon and evening, two billion fans can tune in; and 570 million viewers will have the chance to watch their heroes live. Qatar is a country that stands by its promises and, if its entire plan materializes, the country will not only be ready, but it might possibly stage the best World Cup in history.

QH’s own Lois Lane (aka Moza Alnuaimi) takes a look at the emotions behind winning the World Cup bid and what it means for residents of Qatar.

un fact: It has never taken me so much time to start an article. Attempting to quantify your emotions towards an event that will likely change your life for good and then proceed to communicate them in written form is not an easy feat. So, to everyone who doubted Qatar and laughed at this small country in the middle of nowhere, I say TAKE THAT! (Not the band; I only really liked Robbie).

case, this means we must achieve AMAZING, because this is the best adjective with which to describe Qatar. It is on us to make sure that when 2022 rolls around, Qatar’s visitors will find motivated, hard-working people. More importantly, we hope they will come to witness the tolerance and openness for which this country is known. It’s not just Qataris who are excited about the 2022 World Cup bid win. Roshelle Cunningham, one of my best friends, who happens to live in Canada, was one of the first people to congratulate me and join the endless flailing. Another friend with whom I’ve bonded over a shared love for Tom Ford was the most enthusiastic, supportive person I know. He’s from a small town in Georgia, but made it to souq Waqif a full six hours before the announcement. George Kratsas, my university lecturer who has spent a total of two-and-a-half months in Qatar, made sure to let his class know that he “expects amazing” and got all dressed up for National Day celebrations.

Hosting the world cup is not all gold dust and glitter; it’s a duty that needs to be fulfilled to achieve the best possible outcome.

December 2, 2010, was such a prolific night for everyone in Qatar (I’m quite sure the collective growl produced when a 30-minute delay was announced could be heard at the end of the galaxy). During the announcement, it was as if every single word uttered by Joseph S. Blatter, the current president of the FIFA, was streamlined to our hearts; the subsequent eruption of unadulterated joy was not a surprise to anyone. Tears were not held back and strangers were hugging each other with an all-knowing sense of achievement. It was a night no one will ever forget. The work, however, is nowhere near done; if anything, it has just begun. We, as a people, need to prove to the rest of the world that Qatar is the right choice and that we believe in that choice. Hosting the World Cup is not all gold dust and glitter; it’s a duty that needs to be fulfilled to achieve the best possible outcome. In our

f you’ve been a resident of Qatar for more than three years, then you are well aware of the fact that in the past powerful marketing campaigns were an elusive tool when it came to promoting sporting events in the country, with the exception of the very successful Asian Games in 2006. That scenario has dramatically changed over the past three years as sports organizations realized the power of communications and how important it is to get the message across to their audience.

The Qatar Tennis Federation (QTF) is a true testimony of this favourable change in the perception of promoting an event in Qatar. Through hard work and vision, QTF has established the Qatar ExxonMobil Open as one of the most successful tennis tournaments in the world and one of the highlights of the year when it comes to things to do with the family during the month of January. Adel Aref is the PR/Branding and Players Services Director of QTF. His passion for the sport and his

experience as an International Gold Umpire has made him a key player in the implementation of promotional campaigns that has transcended frontiers and captured the attention of tennis fans all over the country. “Qatar is growing a strong marketing culture, pretty much nonexistent a decade ago. Times are changing; now the yearly calendar of sporting events is fully packed, so if you want your event to stand out you need to come up with innovative ideas, connect with the audience and give them something that nobody else would. You need to make a difference and that’s what we are trying to do. There are other aspects that add to the success of the event, but a good marketing campaign is definitely crucial,” Aref said. Aref is doing a superb job. Over a month ago, QTF launched an aggressive campaign to promote the Qatar ExxonMobil Open 2011, starting with the physical tickets sales at Villagio, Landmark, City Center, QTF and the official website. n February 2011, the Doha Golf Club will once again be the venue for a world-class sporting event, as the club plays host to the 14th edition of the eagerly anticipated Commercialbank Qatar Masters, presented by Dolphin Energy. The tournament is part of the PGA European Tour and will start on Thursday, Feb. 3, and run until Sunday, Feb.6. World number one Lee Westwood, world number three Martin Kaymer, world number eight Paul Casey and world number 10 Ian Poulter will be among the world-ranked players competing on the club’s one-of-a-kind desert-type championship course. The event is one of the longest par-72 courses on the tour featuring a 72-hole stroke play format, a prize fund of 2.5 million dollars US and a winner’s cheque of 416,660 dollars US. 64

Ever wonder if you are in the right career? Do you sometimes wish you could reinvent yourself without making costly mistakes? According to the latest research, the answer to making better career choices might be as easy as yellow, blue and red. In this challenging economic market it is important that you either find a career niche and excel in it or be very flexible and change.
