FROM THE DESK OF THE EDITOR-IN-CHIEF This month, Qatar Happening celebrates its anniversary. What started as a small events guide nine years ago has now been a full-size magazine for two whole years. Qatar Happening has evolved and grown a lot over the past nine years, but one thing has remained constant – QH’s desire to bring its readers information on everything happening in Qatar. This issue continues to further that goal, with information on all of the interesting events going on this month. On the entertainment front, QH brings you information on Oktoberfest celebrations happening in Doha and the Loy Krathong "Thai" Festival. We also get up close and personal with DJ Stephane Karl, who will be performing in Crystal Oct. 13 and 27. One of the biggest events of the year is here, with the arrival of the third annual Doha Tribeca Film Festival (DTFF). The festival has quickly become a staple in the arts and culture scene here in Doha, with dozens of exciting films each year. QH gives you a sneak peek at some of the festival highlights. We also bring you the schedule for Doha’s first-ever Latin American Festival, which takes place at Katara Cultural Village this month. There are plenty of community activities going on this month, including the annual networking event Back to Business and the Qatar International Environment Protection Exhibition (ecoQ). Of course, October is also breast cancer awareness month, which means one of the most important events of the year is taking place this month – the Pink Ribbon Golf Tournament at Doha Golf Club. This yearly ladies-only tournament helps raise awareness of breast cancer. QH tells you how you can get involved with this worthwhile event. In honour of Oktoberfest, QH brings you a roundup of the best German dishes in Doha, plus a page of tried-and-true German recipes. QH also takes a look at the best snacks to enjoy while watching a film. Check out our list, then stock up on supplies for DTFF! The sports scene in Qatar continues to grow, with rugby season kicking off, plus the Qatar Classic 2011 taking place. Happy birthday to us! Nine years ago, Qatar Happening started as a teeny, tiny events guide. Over the years, it has grown and matured. Two years ago, QH became a full-blown magazine, full of not only events but also information on arts and culture, community, sports, health and wellness and entertainment. In the past year, we’ve expanded by 24 pages, added in a splash of fashion and revamped our look. But one thing has stayed the same – our commitment to providing our readers with information on the coolest events in Qatar, plus exciting ideas for ways to enhance their lives here. This month, as we blow out the candles on our birthday cake during our massive birthday bash, we’ll be thinking of the future of QH, and all the endless possibilities that lie before us. But we’ll also shed a few tears, as we say goodbye to three members of the QH family – Jay Panganiban, Mikhail Quijano and Paolo Kurtis Tan. Boby’s Pick: Red Bull Red Bull, a tasty, convenient and oh-sosatisfying energy drink, is the one thing that has gotten me through this year. These little cans of energy are how I start my day, every day. I wake up sleepy after a long night of designing, crack open a can of Red Bull and bam! My day starts. I feel revived and energized, sort of like a reincarnation of the Energizer Bunny. Red Bull can be mixed with other beverages for a fun buzz but I like it pure, on its own, so I can fully savour its deliciousness. Moona’s Pick: Gluten Free Van's Waffles What do you eat for breakfast when you can’t have wheat products? I am such a creature of habit that I generally want something delicious and worth the calories to fuel my day. My favourite is a cup of tea and a gluten-free waffle smeared with some almond butter. I have tried to make my own waffles, but I completely failed, plus it takes way too much time. Having a box of Van's comes in handy. Just place them in the toaster and you are ready to go. Van's GF waffles are sold in the frozen food section in every Lulu Hypermarket in Doha.

here are two sides to Stephane Karl. One side is a polite, slightly shy 24-year-old in a collared shirt and jeans. The other is a confident dynamo rocking out in a DJ booth in a t-shirt and headphones. Karl, a DJ and producer based in Dubai, works both t yan r roles well. During our interview, he eagerly asks if we can speak in B ee ydn French. When I decline, he switches to English flawlessly but remains nervous S y B until the moment my recorder goes off. Only after the interview is over does he relax, perfectly at ease. A few hours later, he is electrifying to watch in the DJ booth at the newly-redesigned Crystal. Clearly most comfortable when he is spinning tracks, Karl is in his element when he plays for the packed house.

His passion for DJing began when he was a 15-year-old lad living in Saint-Tropez. He worked at a restaurant where Nick Waters, now a famous DJ, played. Their shared passion became the basis for their friendship; Karl credits Waters with teaching him everything he knows about DJing.

Learn how to yodel and more during the outrageous Oktoberfest celebrations at InterContinental Doha, taking place Oct. 5 to 8. The Oktoberfest parties, sponsored by Qatar Airways, will include the X’elchten band’s third Oktoberfest performance in Doha. QH catches up with one of the most popular Bavarian bands in the world. QH: Is this your first time playing in Qatar?

QH: What makes your band unique?

QH: Where is the band based? X: In a small village in the Austrian alpine upland called Puchkirchen, which is geographically exactly between Munich and Vienna. QH: How long have you been playing together for? X: We formed our band in 2005. QH: Who are the different members of the band and what instruments do they play? The Karl Heinz “Oompah” Band will play in Qatar for the first time this Oktoberfest. This authentic German band brings 25 years of experience to the Oktoberfest celebrations at Ramada Plaza, where they will play everything from traditional Bavarian music to hits by Katy Perry. QH learns more about this in-demand band. QH: Where is the band based? KHOB: The band is based in one of the westernmost places of Germany, close to the Dutch border - the little village Alstätte! QH: Who are the different members of the band and what instruments do they play? KHOB: Karl-Heinz Höper – bandleader, keyboards and vocals. In addition, he plays several wind instruments, like saxophone, trumpet and panpipes. Jasmin Hagemann – lead vocals; Ferry Limaheluwe – guitar and vocals; Ruben de Wilde – bass and vocals; Rüdiger Wolbeck – drums and vocals; Peter Sagurna – sax and clarinet; and Benny Brown – trumpet. QH: How long have you been playing together for? KHOB: The band has been playing together for 25 years. Karl-Heinz Höper and Ferry are the founding members and still rock the stage. This particular lineup has existed for five years. QH: What kind of music do you play?

KHOB: Everything! Pop, rock, jazz, soul, Schlager, etcetera.

KHOB: Yes, we wear “Krachlederne,” the typical Oktoberfest outfit.

QH: What kind of show will you put on during the Oktoberfest celebrations?

QH: What makes your band unique?

KHOB: First set: Typical Bavarian music based on the Oktoberfest in Munich. Second set: “Schlager” - that’s German music with easy melodies and text. You can dance to it. Third set: International rock and pop music from the 80s and 90s. Forth set: Current soul and rock music. QH: What are some of the songs you will perform for Oktoberfest? Get ready for six weeks of fun! QH brings you information on the Doha Park Festival, Qatar’s first-ever six-week-long entertainment extravaganza.

ids of all ages will have the chance to explore a brand-new festival in Doha this month. The Doha Park Festival will entertain visitors with more than 100 events and attractions, including concerts, a circus, an amusement park, theatrical plays and a 3D cinema. There will also be several athletic activities for visitors of all ages. Activities will vary from day to day, although the circus will be one of the main events for the festival. Doha Park Festival is a new concept in Doha. The six-week extravaganza, which starts Thursday, Oct. 6, will occupy 30,000 square metres near the Doha Exhibition Center. The festival will have action for all ages, with plenty of activities for children, such as face painting and henna. There will also be a play area for kids younger than 10, entertainment programs and live children's theatre. Visitors will also have the chance to shop at more than 100 different stalls in the shopping area. After visiting the various stalls, shoppers can take a break in one of the many restaurants, cafés or rest areas in the shopping area.

One of the festival’s biggest attractions will be the circus area, which will feature 18 events, including European, Russian, Egyptian and Chinese circuses. There are three levels of admission to the circus: normal (QR 95), Gold (QR 295) and VIP (QR 495). Art lovers will have the chance to see the first impressionist exhibition inspired by Eid Al Adha. The exhibit, which features more than 20 impressionist works of art, will reflect Qatari identity, said Lahdan Al Mohannadi, QTA’s head of local exhibitions, during a press conference announcing the event. Entry to the festival will be free of charge, with small fees for some games and activities. “In order to give everyone the opportunity to enjoy more than 100 cultural and entertaining activities, QTA made the entry to the activity areas free of charge,”

Al Mohannadi said. “Nominal fees will be paid when using electric and electronic games at the amusement park.” The Doha Park Festival officially begins Thursday, Oct. 6, at 6:00 p.m., with an opening ceremony that will include a pyrotechnics show. Fireworks will follow at 7:00 p.m. and activities will start at 7:30 p.m. The Doha Park Festival is a joint venture between the Qatar Tourism Authority and the Economic Group. The purpose of the festival is to bring entertainment to nationals and expats in Doha, in addition to encouraging tourism.

his month, residents of Doha can embrace and celebrate Thailand during the Loy Krathong “Thai” Festival at InterContinental Doha. The festival, which takes place Oct. 26 to 28, is celebrated nationwide. Every province in Thailand has their own special way of celebrating Loy Krathong, also known as the Festival of Lights.

In Doha, the festival will feature national Thai costumes, cultural dances, a fashion show and an authentic Thai buffet dinner. Take a seat in the hotel’s Fish Market beach area and enjoy yummy Thai treats created by a team of Thai chefs. Chef Prasong Janhom, the chef in charge of the festival, will be joined by a group of talented Thai chefs, including Todsapol Jahnom, Wittaya Koshaprom, Ponchai Chantai and Orchan Dampadik. Janhom, who has been a chef for more than 20 years, learned the tricks of the trade in his family’s restaurant before going on to do his culinary training in Thailand, Japan and Singapore. QH spoke Janhom to learn everything there is to know about Thai food.

QH: What differentiates Thai food from other cuisines? PJ: Thai cuisine is a very variable cuisine full of aromatic flavours; it's very rich in seafood, has delicious curries and it is healthier than other cuisines. QH: What are some traditional Thai dishes? PJ: Those previously mentioned, plus much more, such as Tod Mun Goong (shrimp cake) and Khanom Krog (coconut pudding). QH: Why is Thai food popular in Qatar? PJ: Local and expatriates like this kind of food when it is nicely done with the original flavours and the authentic Thai raw materials. QH: What’s your favourite Thai dish? PJ: I really like all Thai food when it is cooked properly with the right combination. However, I miss my mother’s food, especially when she cooks Mama-style, such as noodles and steamed fish.

QH: What kind of food will be available at the Thai festival? PJ: There are a lot of traditional and authentic Thai foods that will be served during the festival. To name a few signature ones: Tom Yam Goong (spicy prawn soup), Gang Keaw Wan Gai (chicken green curry),Yum Talay (spicy seafood salad), pad Thai noodles and baked fish banana leaf, plus many more delicious dishes. 24

Movie lovers, prepare for five days of cinema magic! The third edition of the Doha Tribeca Film Festival (DTFF) takes place Oct. 25 to 29. QH gives you a sneak peak at some of the festival’s most promising films, including those competing in the Arab Film Competition.

World Premiere:

Black Gold

DTFF 2011 will open with the screening of Black Gold, a feature film co-produced by Doha Film Institute (DFI) and Tarak Ben Ammar’s Qunita Communications. The film, directed by Jean-Jacques Annaud, has an A-list cast that includes Antonio Banderas, Freida Pinto, Tahar Rahim, Mark Strong and Liya Kebede. The film, which was shot in Qatar and Tunisia, is set in 1930s Arabia. The plot revolves around the two warring Emirs, who reach a truce, only to have the peace threatened when oil is discovered in the barren “no man’s land” between their desert kingdoms. “This is a quintessential Arab tale, the kind of story that a lot of young people may have heard from older relatives, so part of the idea was to chart a slice of our history in a

really modern, engaging way – through a major motion picture,” said Ammar, owner of Qunita Communications. Featuring Black Gold as DTFF’s opening film this year is a way to honour what truly is a “home-grown project” said Amanda Palmer, executive director of DFI. The film will be released internationally Nov. 23, 2011. “We can’t wait to showcase the Arab talent and creativity that has gone into this project, and to also illuminate a part of the world that everyone wants to understand more about,” Palmer said. “It is a great triumph for the DFI and Quinta Communications and the decision to open the Doha Tribeca Film Festival with it is great news for everyone involved.” DTFF 2011 will feature more than 40 films. DFI said they expect a record-breaking crowd of more than 50,000 movie goers for this year’s festival. 31

Arab Film Competition 2011 One of the highlights of DTFF 2011 will be the Arab Film Competition. The competition features 14 films and documentaries that will compete for top honours. Eight of the films competing will be world premieres. The competition, now in its second year, will be split into two juried segments of narrative and documentaries. DFI felt confident in expanding the competition because of the strength of this year’s submissions, said Palmer. “It’s also exciting to see not only an increase of submissions generally, but more representation of films from female directors, as well as an increase in films from all over North Africa. And while it is the year of the Arab Spring, it’s been inspiring to see the maturity of films from all genres reflecting original voices and stories from the Arab World,” Palmer said. Some of the awards that will be handed out include: Best Arab Narrative Feature, Best Arab Narrative Director, Best Narrative Performance Award, Best Arab Documentary Feature and Best Arab

The jury members aren’t the only ones who will decide who garners victory in the competition; there will be two audience awards handed out as well – Best Narrative Film and Best Documentary. The winners will receive a cash prize of 100,000 USD each. Award-winning Syrian director Mohammed Malas is the president of the five-member narrative film competition jury. “To be selected as Jury President is a great honour and also a great responsibility – one which I take very seriously - especially with the current changes in the Arab world,” Malas said. “The Arab Film Competition is an important tool for supporting and promoting Arab films in this part of the world and providing an important recognition to emerging and established filmmakers. The competition places select regional films up on an international platform, opening up various doors for films to gain exposure and distribution opportunities outside of the Arab World, which remains a fundamental issue within the regional industry.”

Where Do We Go Now

Directed by Lebanese actress and director Nadine Labaki, Where Do We Go Now tells the story of five women struggling to protect their community in a country affected by war. Labaki, best known for co-writing, directing and starring in the feature-film Caramel, recently earned a spot on Variety’s 10 Directors to Look Out for List.

Crayons of Askalan Laila Hotait Salas’ documentary tells the story of Zuhdi Al Adawi, a Palestinian artist imprisoned in the occupied territories. While in prison, Al Adawi uses his art as his means of expression and is helped by the rest of the community and his own family to accomplish his artwork.

The Three Disappearances of Soad Hosni

Yearning Yearning is a documentary about the actual role and margin of freedom women have in a male-dominated society, and how that reflects on their femininity and relationship with themselves. Directed by Lina Alabed, this is definitely a must-see documentary.

Rouge Parole During the turbulence of the revolution in Tunisia and after excluding President Ben Ali and pushing him to escape, the Tunisian people went out in the streets and took back their confiscated speech. The filmmaker accompanies the first steps of learning democracy in a multi-coloured society where the artist, the unemployed and the peasant express drastically their right to speak. The film offers an immersion in the human magma, between emotional moments and slips of a society within itself, seeking its bearings, identity and its path.

This documentary follows the story of Soad Hosni, star of the Egyptian cinema from 1959 to 1991, after she commits suicide. Her tragic end overwhelms the entire Arab world. The Egyptian authorities don’t know what to do with the body of a suicide star, a taboo death in the orient. This disappearance, which conceals others, reveals the tensions around the representation of the Arab women today, in the orient as well as in the west.

The Virgin, The Copts and Me Namir is a French filmmaker of Egyptian origin. One day, he watches a video with his mom of the Virgin Mary’s apparition in Egypt. His mother sees the Virgin Mary on the screen, while Namir sees nothing. Doubtful of the tape, Namir goes to Egypt to make a documentary about these apparitions.

NARRATIVES

Boxing With Her This documentary looks at the careers of female boxers Wided Younsi, Rym Jouini, Houda and Marwa Rahali. Why have they chosen boxing? How does the Arab-Moslem society perceive these pugilist women? How do these fighters see their future in a macho society, which recognizes only the bonds of marriage? They lowered their barriers to confess in this gripping film.

On the Road to Downtown Downtown Cairo is a neighborhood full of diversity, contradictions and different personalities. The film looks at the world and its complexities through the daily lives of characters from the neighbourhood.

Each character is isolated in his or her fierce, yet fragile dreams. Red Heart Sihrin, a 19-year-old Kurdish girl, learn that her father will trade her for a new bride. She escapes with her secret boyfriend to the big city. This is director Halkawt Mustafaâ&#x20AC;&#x2122;s first feature film.

Watching a good flick just isn’t complete without a handful of Milk Duds or a bag of popcorn. In honour of the Doha Tribeca Film Festival, taking place this month, QH seeks out the yummiest movie snacks.

love food. It’s not a secret; just ask my twitter followers, who have been bombarded to death with my culinary escapades. I’ve fed many a-person and garnered numerous food coma-induced titles of which I’m extremely proud. Having said that, rarely does anything taste better than simple, never-not-good snack food. Snacks are like minuscule portions of heaven to enjoy during work breaks or to spill all over the place after a horror flick scares the bejesus out of you. Movie night, especially with company, can be turned into a full-blown event when accentuated with fun, sharingfriendly snacks.

Popcorn was an essential food for Aztec and Peruvian civilizations; European explorers from the 16th century described Aztec rituals involving popcorn. Nowadays, popcorn is the reigning king supreme of movie snacks. The options are endless: you can go the classical route with butter and salt, or pick the savoury stickiness of melted cheese or the oh-so-avant-garde cinnamon and sugar mix to spice up the drabness of plain popcorn. Mixed roasted nuts are another stable of movie theatres that can easily be enjoyed in the comfort of your own home. You can buy ready-mixed nuts or choose your favourites separately and mix them in a big bowl that can be hit by everyone, time and time again, throughout 36

the movie. In addition, you can choose to serve nachos and cheese or salsa dip. This fairly-recent addition to movie theatre snacks has proven to be a hit among movie goers. If you don’t have much of a taste for nachos or can’t find the plain variety, as my problem often is, you can easily replace nachos with chips - just as good and even more readily-available at your local around-thecorner store. Some of us, however, enjoy the comforting repetitiveness of reaching for something to eat while engrossed in, say, the reflective qualities of the Professor X/Magneto bromance on modern day politics without putting on the pounds or breaking the kids’ carefully-constructed diet. For those people, I say fear not, for I have not forgotten about you! In high school, I used to have movie nights with my best friend and her mom would provide snacks for us to enjoy. My favourite was a yogurt dip she served with

carrot and cucumber slices. If you feel like you want to

go for something sweet, try fruit-infused yogurt and some apples to dip in it. I heavily recommend Rachel’s organic yogurt, which can be found in Carrefour or the LuLu hypermarket in an array of exciting, and sometimes delightfully-strange, flavours. Finally, you can always go for the undying tradition of dinner-and-a-movie. Pizza is never a bad call and with the varying topping selections, you can always make sure that everyone is satisfied.

Mini cucumber sandwiches, burgers or burritos are small, fun and easy-to-

make meals that make a perfect dinner/ snack with minimal mess.

Movie snacks are something with which you can experiment and have fun. One tip would be to try out your more unusual creations during a gripping flick; if it’s not that great, the movie would absorb most of the reactions. My vote always goes to Kiss Kiss Bang Bang or Snatch, especially for those who are new to the comedic genius of the aforementioned. Whatever you choose to make, or see, remember that, as the great Anthony Bourdain puts it:

"... your body is not a temple, it's an amusement park. Enjoy the ride."

Oct. 6 The Big Opening Pancho Amat and his Cuban band, and Johnny Ventura from the Dominican Republic will be the opening act of the Latin American Cultural Festival. Pancho, the leader of the Cabildo De Son band, is well-known for mastering the Cuban tres, a plunked instrument. Johnny is one of the most famous Merengue signers in the world. His enviable voice and movements make him a mustsee act. He recently won a Latin American Grammy for his latest production. Together they will give an unforgettable concert. Recycling is a hot topic in Qatar, with the Qatar International Environment Protection Exhibition (ecoQ) being held in Doha this month. QH explains what ecoQ is and why you should care, plus easy ways to make your own life more eco-friendly.

iven that Qatar holds the world's third-largest natural gas reserves, you could be forgiven for thinking that renewable energy might be off the country’s radar. Not so; later this month, Qatar will host ecoQ 2011, an exhibition and conference set to put environmentally friendly technologies and products right at the top of the agenda. In fact, ecoQ, which will be held at Doha International Exhibition Centre from October 16 to 18, focuses on far more than just renewable energy. The 10,000 square metre exhibition will showcase initiatives from across the whole of the “green” industry, including recycling technology, eco-friendly air cooling, energy saving ideas and solar energy. In addition, a highprofile conference will take place at the same time to discuss environmental issues in the region. The event is supported by many key Qatari institutions, including the Ministry of Environment, Qatar University and the Qatar Chamber of Commerce. EcoQ’s organizers say now is exactly the right time to hold the expo, harnessing the enthusiasm around Qatar’s successful bid to host the world’s first “carbon

neutral” World Cup in 2022. The event will use sustainable technologies and environmentally-friendly cooling systems for its twelve stadiums, fan zones and training grounds. “The bid has generated positive global attention about Qatar’s vision to set an example in organizing this massive sport event with minimum impact on the environment,” said Haitham Shehab, general manager of ecoQ. Green energy is fast becoming a popular market, and more of an exciting business opportunity. According to a UN Environment Program report, global investments in renewables topped non-renewables in 2009. If you have clothes that you’d like to donate to a worth-while cause, seek out the special TAYF bins, which are dotted around Doha at shopping malls, petrol stations and offices. TAYF, an initiative of Qatar Charity, gives out donated clothes and shoes to low-income workers. You can also contact TAYF to request donation bags (www.qcharity.com) to be delivered to your home. For the tricky disposal of unwanted electronic goods, Qtel has the answer. Their e-waste recycling program will handle items like mobile phones, batteries and other related items, such as chargers. Pads have become one of the most popular devices of the new millennium. Every day, more people fall in love with this piece of equipment. However, even though iPads are extremely popular, not everyone fully understands how to properly use their iPads. Stenden Institute noticed this issue and created a forum to help iPad owners and prospective iPads users find out all they need to know about the product.

iUNDERSTAND SEMINAR The forum has been conceptualized as a question and answer seminar, where participants will have the chance to have all of their iPads issues answered and resolved. The forum tackles all kind of topics, from synchronizing with iTunes and creating contacts, to downloading applications and synchronizing an iPad with a calendar.

THE NEED When one does not have the right knowledge about a product, it can become very easy to make mistakes or spend an unnecessary amount of money to make the product more practical. When it comes to the iPads, there are hundreds of applications that can be bought or downloaded. The forum aims to teach participants which applications are most suitable, according to

the individualâ&#x20AC;&#x2122;s needs. Instead of buying and trying random applications that may not even be related to your needs, the iUnderstand seminar will guide you and advise you on how to get the best results.

THE FORMAT Each session is divided into three stages 1. Basics of iPad configuration and navigation. 2. Questions that have been submitted during registration will be answered in a systematic way that ensures all of the participants are building on their prior knowledge, and, at the same time, gaining insight from the way other participants use their iPads. 3. While Osman was slow to jump on the iPad bandwagon, he now truly understands the product. “Recently, I asked a colleague what was so great about their iPad. My colleague began to glow with excitement and proceeded to reel off a long list of figures related to the iPad's computing prowess. Once again, I asked what was so good about it,” Osman said. “My colleague, a little taken aback, said ‘well look here,’ and showed me an empty iBook shelf, a meagre iTunes library and a virtually barren home screen.” This interaction was a turning point for Osman. “It was at this point that I realized that he was not an anomaly; hundreds, if not thousands, of others had made the Windows-Mac switch and still had no idea how to use the power of their Apple products,” Osman said. “After much research, and practise, as well as some trial and error, I am now in the position to be able to say ‘iUnderstand.’” Osman now spends his time helping others understand how to take full advantage of their iPads. “Now, iUnderstand. I am here to help you make the same statement,” Osman said. “You don't need to struggle through all the tangled web forums to work

out what other people can't do with their iPads; instead take advantage of what I have learnt.”

If you have the desire to help people in your community but lack the funds or time to put your ideas into motion, Vodafone Qatar is giving you a chance to make your dreams a reality.

nyone who’s ever had wanted to make a difference in the world knows it takes more than just an idea – it takes time and money too. Vodafone Qatar is now offering residents of Qatar a chance to spend one year helping a local charity or cause. Anyone can apply to participate in World of Difference, part of Vodafone Qatar’s Corporate Social Responsibility initiative. Under the program, four people will have the opportunity to work for a local charity or cause of their choosing for one year, funded by Vodafone Qatar.

The World of Difference program first started in New Zealand in 2003. The program has been hugely successful, with more than 100 projects completed in more than 30 countries. Vodafone Qatar launched their World of Difference program in Qatar in 2010. "The 'World of Difference' is a unique flagship project for several Vodafone companies across the world and we are proud to bring it to life for the second year,” said Luisa Gentile, head of corporate responsibility for Vodafone Qatar. 50

Anyone in Qatar with an idea can apply for funding. Projects must make a difference to a charity or cause, in addition to making a difference in Qatar. Ideally, projects should be completed in one year but also sustainable, meaning the project can continue benefiting the community after the first year is over. The project should help a specific group of people, make a difference to the environment or local animal life, or be something you believe will benefit Qatar, said Gentile. Applicants should choose project ideas related to their area of expertise in order to increase their chances of success. The four applicants that are chosen must be prepared to stay in Qatar for the year they dedicate to their program. In 2010, about 400 people applied to participate in Vodafone Qatar’s World of Difference program. The four winners were chosen for “their creativity, innovation and contagious enthusiasm,” Gentile said.

World of Difference is a unique project that allows individuals to have an impact on their community. “While many people dream of 'making difference,' constraints of time and money often curb the extent to which that dream can become a reality,” Gentile said. “We want to become the enabler who connects people with communities to make a World of Difference for all people in Qatar.” One of the best things about getting involved with World of Difference is that it allows participants to really connect with the people they are helping in the community. “In addition to being a first in Qatar, this is an innovative approach that scores highly versus traditional grantgiving or philanthropy, leading the way to a different way of doing charity - not by simply donating money, but by sustaining people to fulfill their charitable projects for an entire year,” Gentile said. “The program is about connecting passionate people to a local need, so they can complete a project that will make a sustained difference to the lives of others.” The application process for the World of Difference program is now open and ends at 12:00 a.m. Oct. 22, 2011. Applicants may only submit one application. Each application will be judged based on its humanitarian and charitable merit and practicability of implementation, as determined by Vodafone. QH has ordained 2011 the Year of the Roundup. This means we’ll be scouting out restaurants, coffee shops, cafes and hotels all over Doha to find the best of the best in the food and beverage industry. This month, in honour of Oktoberfest, we bring you the best German dishes in town. Some of these special treats are available year-round; some are only in town for a limited time. But we guarantee all are delicious and totally worth the calories. The Irish Harp at Sheraton Doha In honour of Oktoberfest, this laid-back pub will serve a variety of traditional German dishes from Oct. 11 to 25. Everything is made in-house, with the exception of the Hala sausage, which is produced specially in Egypt and brought into Doha. Chef Marc, the executive sous chef at Sheraton Doha, hails from Sweden but learned how to cook a variety of cuisines, including German, French and Australian. This mellow, nutty dish is like something your pretzels to order – natural, butter, cheese or turkey ham. Enjoy with grandma would bake chock-full of love for a holiday treat. Made a pint or two! from honey, sugar, butter and nuts, this cake has a biscuit-like base but easily crumbles in your mouth. Gourmet House also sells German rolls, pretzel sandwiches and vegetarian Schusterjungs (a traditional German sandwich). If you’re craving traditional German apple strudel, try Gourmet House’s apple pie – it’s similar in taste and style and equally delicious. Basically, Gourmet House’s talented German baker is turning out treats like a German grandma baking for her favourite grandchild.

Feast

Create your own Oktoberfest celebration by filling your kitchen with the smell of these yummy traditional German dishes. Recipes provided by Chef Marc, executive sous chef at Sheraton Doha. Leberknodel (Liver dumplings) Serves four.

Ingredients 200 g veal liver 100 g ground beef 100 g ground veal 30 g sliced onions 10 g sliced butter 50 g toasted bread 50 g liquid cream 1 egg 10 g flour 15 g chopped parsley

3 g salt 1 g pepper 2 g thyme 1 g cumin powder 100 g bread crumbs 1.5 l beef stock/soup Method Fry onions until golden brown, then cool down. Soak the bread in the cream

and mince with the meat and onions. Mix all other ingredients into a smooth mixture and add some bread crumbs, if necessary. Form ingredients into a round ball (about 80 g each). Poach them in the beef broth until they float to the surface. Add some spring onions for garnish.

Spaetzle (German-style noodles) Serves four. Ingredients flour 2 eggs 80-100 ml milk and water combined 3 g salt 1 g white pepper powder 1 g nutmeg powder 10 g butter

Method Mix all of the ingredients by hand until it bubbles. It should be a fine, not too liquid-y dough. Put mixture in a strainer with eight millimetre holes and press in boiling saltwater. Wait until the noodles start to float on

the surface before removing them. Fry noodles slowly in butter until they start to brown. For Cheese Spaetzle, add béchamel sauce and shredded cheese to the noodles, then serve with roasted onion on top.

Deutsche Caramel Crème (German caramelized cream) Serves four. Ingredients 200 g raw brown sugar 6 dl milk 3 egg yolks 20 g white sugar 4 gelatin leafs 6 dl whipped cream

Method Soak gelatin in cold water and set aside for later. Caramelize the raw sugar and then cool it down with a bit of ice. Add the milk and boil until the milk is 80 degrees Celsius. Mix in the sugar and some more milk.

Reheat and stir the mixture until it starts to bind. Add in the gelatin and mix. Strain it and cool the mixture down. Mix in the caramel crème mixture with fresh whipped cream. Serve and garnish to your individual taste.

Ashraf A. Raad, chief executive chef and cuisine concept chef at Al Mourjan, shares his favourite recipes with us in his new food column. This month, Chef Ashraf explains how to make Potato Soufflés.

Potato Soufflés Ingredients

350 g desiree potatoes, peeled, chopped coarsely 2 tbsp packaged breadcrumbs 60 g butter 2 tbsp plain flour 3 eggs, separated 90 g coarsely grated cheddar cheese 1 tsp fresh thyme leaves

Method

• Boil, steam or microwave potato until tender; drain. Mash potato in large bowl. • Preheat oven to 200 degrees Celsius/180 degrees Celsius fan-assisted. • Oil four 180 ml soufflé dishes. Sprinkle bases and sides with breadcrumbs, then shake out excess. Place prepared dishes on oven tray. • Melt butter in medium saucepan: add flour, stirring until mixture thickens and bubbles. Gradually add milk, stirring until mixture boils and thickens; remove from heat. Stir in egg yolks, cheese, thyme and potato, mixing until the cheese melts and the mixture is smooth. Return soufflé mixture to the same large bowl. • Using an electric mixer, beat egg whites in a small bowl until soft peaks form. Fold egg whites, in two batches, into soufflé mixture. Spoon soufflé mixture into prepared dishes. Bake uncovered in oven for about 20 minutes or until tops are lightly browned and puffed.

When we asked about the history of the shop and how it came to be so successful, we were told that their expertise in commercial food service equipment dates back to 1998 with Kitchenco, the first company from the group that supplied products to hotels and restaurants. The owners noticed the need for good retail shops for housewives who like to cook in style and provide their families with a lavish dinner meal and set-up. Taking advantage of the gap in the market for such products and the possible high demand for high-quality kitchenwares, Tablearts opened their first branch, located at City Center Mall, in 2007. For people who enjoy more striking tastes, enter the grilled mozzarella. This appetizer consists of deliciously moist mozzarella, wrapped in bresaola and served with black olive and truffle vinaigrette. Perhaps not as adventurous as the scallops but this dish still delivers a simple, instant pleasure. We are now presented with one of the more exotic dishes of the night - a beet root risotto, featuring gorgonzola cheese and arugula lettuce. I feel some trepidation, but am pleasantly and significantly surprised. I am not a fan of any of the ingredients, yet the dish is much greater than the sum of its parts. For the main course, I have the pleasure of sampling both beef striploin pesto and seabass papillote. The beef striploin pesto is served with parmesan cream sauce

and crispy asparagus. The beef is tender and cooked perfectly; the pesto is more understated than I anticipated. The coupling gives birth to a slightly different taste that presents an old favourite in a completely new way. The sweetness of the pesto heightens the flavour of the beef, while the asparagus and parmesan cream round out the textures and seasonings of the dish. If you are a fan of steak, you just have to try this as soon as you can. You won’t regret it! The seabass papillote is delectable. En papilotte essentially refers to food being prepared in a pouch of some kind traditionally parchment, paper tin foil, or, in some cases, leaves. This cooking method prevents flavours and nutrients escaping, as any steam or juices that result during the cooking process remain with the food. The seabass is paired with clam, lemongrass and vegetables. The fish is so tender it quite literally melts in our mouths. The other ingredients are tasty, but it is how they accentuate the fish that makes the dish amazing. The fish is bathed in understated lemongrass and fresh vegetables. Again, this is a dish that patrons with a sensitive palate would enjoy a great deal.

Our taste adventure is almost over, and I am keenly anticipating the culmination of the experience. My expectations have risen after every dish, not only in flavour, but also in terms of innovation. When designing the new menu, Chef Ricardo did some daring experimenting; tonight, he has selected only those dishes that truly delight to be featured during our meal. I am curious (excited even) to see how he will choose to bring the meal full circle.

and, of course, the deliciousness I have enjoyed over the course of the evening. For those of you who enjoy a familiar dessert, I highly recommend the tiramisu with mascarpone foam, stroisel coffee and amaretto jelly. This dish is crunchy, decadent and light; it’s the perfect way to end the meal.

Looking to unwind in a natural environment while still retaining the luxury of the city? Amoaras Relaxation Spa, located at Holiday Villa, offers a back-to-nature concept in a quiet but elegant environment. QH checks into one of the newest spa facilities in Doha.

hen you walk into Amoaras Relaxation Spa, the first thing you will notice is the quiet, calm ambiance. In a world filled with busy, bustling spas that feel more like a sorority house than a place where one goes to unwind, it’s refreshing to find a spa that actually encourages tranquility. The unique, cozy spa offers services for both men and women that range from typical – massages, body scrubs, facials, manicures and pedicures – to trendy – bath rituals and Balinese nail art.

One of their most intriguing signature treatments is the Amoaras Double Bliss, which consists of a combination of Balinese, Thai, Shiatsu, Swedish and Indian head massage (a mixture known as the Amoaras Fusion), plus a foot massage 64

and a facial. When I sign up for this unique treatment, I have no idea what I am in for. My Balinese spa therapist begins by gently stretching my shoulders and back. I feel like a cat slowly stretching myself out, except, in my case, I don’t have to move a single muscle on my own. My masseuse does all the work for me, delicately guiding each limb to exactly the right spot. Next, my spa therapist sprinkles Amoaras’ aromatherapy oil, homemade with 100 per cent natural ingredients, onto my lower limbs and starts firmly massaging it into my skin. Prior to the start of my treatment, my therapist asks me to choose an oil from a selection that includes natural, spicy and relaxing. I decide to be adventurous and chose spicy, which smells like an alluring perfume that one would wear to capture

attention. The smell of the oil fills my senses without distracting me from my relaxed state. My spa therapist firmly rubs my calves, dissolving knots I didn’t know existed. She then moves onto my feet, which she kneads repeatedly. When she starts to dig into my hips and thighs, I realize how truly powerful my spa therapist is. She has the firmest touch of any massage therapist I have ever had! I ask her to lighten up just a touch, and she happily obliges. Later, when she moves on to my back and shoulders, I am extremely happy for all of her strength. My shoulder blades are like rocks, unrelenting. But after some determined work, my shoulders become soft, compliant, under my spa therapist’s hands. My back muscles also yield to her strong hands and soon my entire body feels all light and fluffy, like whipped mousse. I turn over and wait for my spa therapist to work her magic on the front side of my body. She doesn’t disappoint; massaging each limb steadily until they melt in her hands. She briefly turns her attention to my neck, stretching it from side to side to help loosen it up before massaging it. Then, she starts begins the Indian head massage. An Indian head massage includes massaging the face, head, neck, shoulders, upper back and upper arms. I’ve heard about the many benefits of Indian head massages (including improved circulation, increased joint mobility, and improved lymphatic drainage) and now I know why it’s so popular – it really does de-stress you and leave you feeling alert. As an added bonus, it leaves my hair looking shinier and temporarily fuller. Post-Indian head massage, my spa therapist wraps a cloth band around my temple, creating a barrier between my hair and my face. She then proceeds to begin my relaxing facial treatment. My spa therapist removes my makeup and gently cleanses my skin. A grainy scrub is used to exfoliate my skin, leaving it silky smooth. A hydrating lotion is rubbed into my face, giving my

skin a soft, supple feeling. Then, my spa therapist applies something cool and wet to my face, piece by piece. I have no idea what she is putting on my skin. Leeches, like Demi Moore? Leeches supposedly do wonders for your skin but that doesn’t mean they belong on my face! I begin to panic slightly, convinced that my spa therapist is putting leech after slimy leech on my delicate, previously leech-free face. Of course, all of my panic is for nothing. My spa therapist is applying sliced cucumbers to my skin, one after the other, until my face is full. I lie perfectly still, relieved and refreshed by the cucumbers cooling my skin. My spa therapist massages my head a bit more, scrunching up my hair bit by bit, as the moisturizer-cucumber combo revitalizes my skin. Then, she removes the cucumbers, rubs my face one last time and announces that my treatment is finished. The 2011-2012 season of QSL kicked off last month, meaning there is still plenty of great football to enjoy for a whole season. QH will be there all the way to bring you exclusive interviews, match schedules, special events and all the excitement of the highest professional league in Qatari football. This month, we introduce you to El Jaish Club, the newest addition to QSL.

he much anticipated 20112012 season of QSL has finally arrived. This season promises to be filled with exciting moments. The top clubs in Qatar will compete against each other in a total of 132 matches throughout the season. The team that accumulates the most points will be crowned the QSL champion in April 2012. El Jaish FC is one of the teams that will have to prove their worth, as they are making their debut in QSL this season. QH spoke with some of the new players of the El Jaish FC team to find out about their expectations for the season and how they are preparing to face this new challenge.

MEET THE TEAM El Jaish FC formed in 2007; they represent the Qatari Armed Forces in football competitions. The club emerged last season as the Second Division League champions. As a result, the club was promoted to play in QSL. Brazilians Adriano Ferreira, Wagner Ribeiro and Anderson Martins are some of El Jaish FC's newest players. QH introduces you to these future QSL stars.

WAGNER RIBEIRO Wagner Ribeiro is another Brazilian footballer who recently joined the El Jaish Club, with the hopes of elevating the status and professionalism of the club to the highest level. Before joining the club, Ribeiro played for Al Ahli club for three years. The midfielder also played professionally for Panionios FC in the Greek Super League. He received a lot of offers from other clubs but decided to accept the offer from El Jaish because he thought it would give him the best chance to grow as a player, said Ribeiro. He hopes the football community will be supportive of the El Jaish team. “As players, we would like to see the fans at the stadiums. I have sent an invitation to the Brazilian community to come to our games and support the El Jaish team,” Ribeiro said. “For sure, we would like to start with victories, winning our first matches, so we can motivate fans to come to every game. We must do a good job, so our fans will want to support us.”

ANDERSON MARTINS Anderson Martins was born in Fortaleza, the capital of Ceara, in Brazil. He started his prolific career with the Bahia Club. Martins highlight as a footballer came when he played for the Vitoria club; the team went on to win the Campeonato Baiano for three consecutive years (2008 to 2010) and the Campeonato do Nordeste in 2010. The defender joined El Jaish club in August 2011. “I am really happy to be in Qatar and it’s my job to work hard and not disappoint my teammates and the management with the results,” Martins said. “Together we can create a new history for El Jaish in the first league of Qatar.” Martins is confident the new team will be able to keep up with the competition. “El Jaish is a new team in the QSL first division, but with the corporation of everybody, we will become a great team,” Martins said. “I believe that after a few matches playing together we will be in harmony with one another and we will adapt to everyone’s style. I am very lucky to be in a team where there are many Brazilian players and staff and this can help me to adapt faster.”

The Brazil-born Adriano Ferreira is one of the latest additions to the El Jaish Club. The 29-year-old striker comes from playing for the Japanese club Gamba Osaka, where he performed amazingly well, scoring nine goals in the eight games he played for the club. He is definitely one player to watch out for, as he is already leaving his mark on Qatari football. The young player proved his capabilities when he scored several goals during the Sheikh Jassim Cup earlier this year. Ferreira is nervous but excited to join El Jaish Club. “I’m really anxious to play in the Qatari league; it’s a new environment for me. I will do my best to play as good as I did when I played for my previous clubs,” Ferreira said. “For sure, it’s a big challenge but not only for me; it is also a big challenge for all of the players and everybody involved because we are a team [coming] from the second division and we will be fighting with the best in the league.”

Rugby fans in Qatar can rejoice, as the 20112012 season just started and there’s loads of rugby coming their way, including the Gulf Top Six Premier League, the most important rugby event in the Gulf. QH give you all the details on the new rugby season.

This year, the Men’s 1st XV team plays in the premier gulf cross-border regional club competition ‘The Gulf Top 6 League’ and also the ‘Gulf Premiership League’ – a league competed for by Doha RFC, Bahrain, Kuwait and Muscat and, of which Doha RFC are the current reigning champions,” said Charlie Napier, chairman of the Doha RFC. “For the 1st XV team, our goal is to win both leagues, although the top six competition is incredibly tough and [being] runners-up would be acceptable, but not desirable. QATAR RUGBY LEAGUE Rugby has been played in Qatar for more than three decades, becoming considerably popular among the expat community in the country. The popularity of the sport captured the attention of the Olympic Committee and, for the first time, Qatar will have its very own rugby league. “This new competition comes as a result of the break of the AGRFU and the requirement for Qatar to form, administer and govern its own league under the auspices of the recently established Qatar Rugby Federation (QRF) and the International Rugby Board (IRB),” Napier said. “The league will be competed for by four 15 a-side teams from Doha RFC, Al Khor, Mesaieed Lions (primarily Sri Lankan nationals) and a Qatar Rugby Football Centre team (primarily made up of Qatari Nationals).” The newly-opened QRF is aiming to further enhance the popularity of the sport and encourage Qataris to get actively involved in the practice of the discipline to create a strong national team that could represent the country in any international competition or world class rugby tournament. “With the inclusion of Rugby Union into the 2016 Olympic Games in the form of a 7’s tournament, the primary aim of QRF National 15 a-side competition is to develop the sport and raise the level of interest in rugby within Qatar, at the same time introducing Qatari nationals to the game and identify the best players within Qatar eligible to represent the Qatar National team at future international events, said Napier.”

This month brings a high-profile squash tournament to Doha, offering fans the opportunity to watch some of the world’s top professional squash players in action. QH gives you all the inside details on the Qatar Classic.

There are many international squash tournaments taking place at the Khalifa International Tennis and Squash Complex every season. One of the key tournaments played every year is the Qatar Classic, which has emerged as one of the major tournaments in the circuit.

Another new addition this year is the expansion of the racing season. The 2010-2011 had a total of 43 races meetings, meaning 10 meetings have been added to this year’s program. Out of the 43 meetings last season, two took place on the sand training track as an experiment to gauge the suitability for introducing a sand program the following season. The results were very successful and QREC decided that sand racing would be viable and could provide competitive racing on the existing The new season will encompass 53 race sand training track. The 2011-2012 season is scheduled to hold 343 races, with 228 on turf and 115 on sand. QREC is opening an indoor horse swimming pool and a second veterinary hospital. Horse walking areas have been upgraded to provide more comfort for the horses and greater safety, with increased padding.

Meetings of the International Racing Festival and H.H The Emirs Trophies & Sword to become a three-day carnival. Another difference from last season is the alteration to the format for programming races, resulting in an even division of Thoroughbred races and Arabian races. But not only the race track and program underwent a welcome change. The QREC completed the construction of the luxurious Members Clubhouse, which will open very soon after the interior décor and fitting is finalized. The new development will feature accommodation, restaurants, cinema, a convention center and sporting facilities.

After a summer break, the Losail International Circuit is back in action. This month, Losail will host track days for car racing aficionados in Qatar.

he Losail International Circuit, in cooperation with the Qatar Motor and Motorcycle Federation (QMMF), is organizing track days for the general public to get a sense of what it feels like to be a professional bike or car racing driver. The track days offer the opportunity to drive around the track where some of the world’s top championships have taken place, including the only MotoGP Night Race in the world.

During the track days, drivers can bring their own cars or bikes and drive on the Losail’s track, which is open to everyone. There is no need for drivers to register prior the day of the event; they can just come to the circuit, register on the spot and put their driving skills to the test. The only items drivers need to bring are their Qatari ID, driving license and vehicle registration. If the driver is borrowing a vehicle from a friend, then an authorization from the owner to be in possession of the car is required.

LOSAIL INTERNATIONAL CIRCUIT Located just outside Doha (on the way to Al-Khor, 15 minutes away from West Bay, North Relief Road), this colossal race track was built in less than a year. In 2004, Losail opened; the first event ever to take place at the track was the Marlboro Grand Prix, won by Sete Gibernau. The track is 5.380 kilometres in length, with a main straight of just over a kilometre at 1,068 meters.
