He’s Just Not That Into You It’s a book, it’s a movie, it bares repeating: as summer flings smolder, give yourself a shake and some occasionally required sass with this star studded romcom that is surprisingly watchable. And oh so insightful for those of us who make poor life choices.

Cronkite Satellite His real name is Ryan, but he performs as Cronkite Satellite. 29 years wise (as he puts it), he’s originally from Saint Paul, Minnesota, and has been rocking Doha for over two years. QH: How did you get started? CS: I’ve been performing well over 10 years. I’ve been making music for 17 years. Time sure flys when you’re having fun, I guess! I do have a day job. Day jobs are very important for any musician and personally, I don’t think I could write music without having a day job. It adds external pressure to your comfort zone and forces you to think critically, in a direction that you wouldn’t normally travel. My current day job is working as a photographer and graphic artist for a school. It’s a great job and because of it, I do a great job.
The music has always been inside of me and I have been very lucky to be able to translate this sensation into something I can share with everyone. But let’s be honest, the big motivator behind why I started playing in a band is because I wanted to pick up girls! QH: What’s it like performing in Qatar? CS: Qatar is (more or less) a hotel nation. All the music clubs are inside of the hotels. Plain and simple, people pay for comfort. Instinctively, the hotel managers will only book cover bands/DJs to play familiar songs for their guests. It’s hard for me to find shows in Qatar because I write my own music. But I try to perform at all opportunities that present themselves; private parties, the Qube, the Doha Players villa, Al Wakrah stadium, etc. I get around.

Ludovic Desmond He’s 28, and comes from the original city of lights: Paris. He’s spending July and August rocking the decks at Waham, at the W Doha, every Wednesday, Thursday and Friday from 9:00 p.m. till 1:45 p.m. QH: Is it a full time job, or do you have a ‘day’ job? LD: This my professional job all over the world, the passion of my life! Music is my life, my life is music! QH: How did you get started? Why? LD: I started in my home around 13 years old when I discovered house music on the radio and clips on MTV. I started my first professional party in France when I was 17 years old with a famous French DJ, Antoine Clamaran.
QH: How would you describe your music? CS: My style of music is called “looping.” It’s like painting, but instead of a canvas, I paint the silence. I start with nothing, then bang on my guitar, record a series of live guitar samples with a machine I control with my feet, then after I’ve built the music, I sing my lyrics over the melody I just created. I like to call my music, “Acoustic/ Techno” Because of the Yin/Yang balance of my acoustic guitar and electronic musical equipment; it’s a perfect balance. Truth be told it’s not easy to explain what I do on stage. I feel that this is because some people are not aware of the technology I’m using. Just come to the show and it will all make sense! QH: What inspires you? CS: I like to observe life. Listening to body language. Trying to figure out who and what we are. This is an interesting question because each of my albums were sparked from a personal, life changing event. Most of the time I cannot control what I write. Everything around me says “this is what it has to be.” So that’s what it becomes. There’s lots of things that are difficult, but I
QH:What kind of music do you do? How would you describe it? LD: Here at Wahm Lounge, I play chill lounge music. (It is) very relaxing, dreaming and sensual music. I play also deep house and house vocal. Very groovy, melodious and sexy music. QH: What’s hard about doing it in Doha? Is it harder than other places? LD: I play music for the people, for their pleasure. I try every time to play music that touches the heart and mind. I’m one artist who shares my music, I love to give my passion.
feel pressure brings out the best in me. On stage and in the studio, I’m all alone. If I make a mistake, I can’t blame anyone but myself, and I like that. The more mistakes a person makes, the more that person learns. There are several limitations regarding the types of songs I want to make but are not exactly possible using the “loop” machine. One thing that I found very difficult recently is writing an album about myself. All my past albums are about random stuff, where as my current album “Looking Forward” is about the ups and downs of my life and how I found ways to manage them. I don’t really like talking about myself but this album was my therapy. Who knows, maybe it’ll help others learn from my mistakes? At the end of the day, an artist needs to turn the pain to art. QH: Is Doha different to perform in? CS: Doha is a very hard place to be taken seriously as an original musician, let alone a one-man band. As much as I’d love to join a Frank Sinatra lounge act at a nearby hotel, I still want to keep my art true and real. I kind of enjoy the struggle I have to go through in Qatar to find shows and to open people’s eyes to the art of live music. It gives me the fire to motivate myself to help build a
better art scene in Qatar. In my home state of Minnesota (USA) there are music venues up and down every street. All with different bands, different styles and original music. I thought the rest of the world was the same. Nope. Music is the language of the universe and the more people who are exposed to it, the more we can connect to one another in a subliminal manner. That sounds weird, but it’s true. QH: What’s next for you? CS: I have big plans: obviously making more music, traveling the globe studying new sounds/styles/techniques. But without giving too much away, I plan on creating a free global musical education program. Music is so important to our lives, not the junk on the radio, but the stuff that speaks to your soul. Who cares if you make it on TV or whatever, it’s all about musical sincerity. And real people can see through the fake. I feel music is something we as a species need to explore more. It has a long lasting and life changing affect on us. And that responsibility is what makes me proud to be born a musician.

Up in the Air Ryan Bingham flies around the US 320 days every year just to fire people. It’s his job. Red Cliff In 208 A.D., in the final days of the Han Dynasty, shrewd Prime Minster Cao Cao convinced the fickle Emperor Han the only way to unite all of China was to declare war on the kingdoms of Xu in the west and East Wu in the south. Thus began a military campaign of unprecedented scale, led by the Prime Minister, himself. Left with no other hope for survival, the kingdoms of Xu and East Wu formed an unlikely alliance. Numerous battles of strength and wit ensued, both on land and on water, eventually culminating in the battle of Red Cliff. During the battle, two thousand ships were burned, and the course of Chinese history was changed forever.

And that, she says, is important. Global warming critics are being met increasingly with open skepticism as more and more people the world over try to find ways to keep the world from literally melting. It’s estimated that because of the greater concentration of carbon in the air, the speed of climate change is faster now than anything seen for the last 10, 000 years. And some 60 per cent of the increase in carbon in the air has happened since 1959. Experts estimate we have to take action in the next five years if we want to change this- the clock is ticking. This is all old news, ever since Al Gore busted out his PowerPoint slides. What isn’t, and what makes the project here in Doha so unique, is a reimagining of the ‘reduce, reuse, and recycle’ mantra. Our ‘ecological footprint’, the impact we create to sustain our lifestyle, both taking and giving back to nature, has become the rallying cry around how an individual can actually combat problems that even to an 11 year old can seem insurmountable. And those footprints have nationalities, just like the students at Compass International. “We have a very small school that has a variety of different nationalities, we have over 60 nationalities. 58 students in the secondary school that just opened in August, and in the primary school we have over 400 children from all over the world,” said Mcainach.
It’s estimated that from the planet’s current population and total resources, sustainable consumption would mean each person on the planet could use up 4.7 acres of nature. By contrast, the average American uses 24. Projects and communities like those found in Doha give a chance for people from countries on both ends of the spectrum to come together, and make changes. Similar statistics exist for virtually every developed country in the world- even in Doha, where the students in the program had no problem coming up with materials to make their outfits. “We had a big plea to the school to bring in anything they had from home. My room basically became a large refuse dump at the end! There were some funny smells going on in my classroom that shouldn’t have been there, so the quicker we got the outfits made, the better!” said Mcainach. “I just thought that there’s maybe not enough recycling initiatives here in Qatar and Doha. We worked on this project and it just grew arms and legs and just grew bigger and bigger.”

Got Couch? Catch some couchy-waves this summer, and travel like a local! QH chats with Farouk El Habre, who runs the Doha chapter of the Couchsurfing network to find out what it’s all about, and how it can help you make the most of your summertime adventures!
Fun without a price tag Couchsurfing in an international non-profit network that brings together people in countries all over the world. When you’re traveling, you can log onto the network and meet people at your destination- either to stay at their home, or even just meet for coffee and show you around the city! The group in Doha meets weekly, and many members have found friends at home as well as abroad. They help set up safe and interesting experiences for people traveling to and from the region!
QH: How did you get started doing it? FH: I personally joined CS when a friend of mine was going to Ireland couchsurfing. When I signed up, I discovered a completely new community, that I wasn’t aware of, and was almost everywhere around me. I did not take it seriously, until my first experience in Turkey, when two girls saved my trip when they hosted me for a few nights in a town where I couldn’t find any cheap hotels or hostels. They not only hosted me, they provided guidance, advice of where I should go, some food, and a good time, that I wouldn’t get in any 5 star hotel. This is when I became addicted to this community. QH: How does it work? Is this safe? FH: We get a request (as a normal message in our inbox) from anyone who is visiting Doha and would like to surf my couch. To accept, we first have to check our availability, the availability of my couch and my time. The most important criteria is the feedback written about this person on his profile.
Usually all people on the website (that practices a very strict policy to keep members safe) are good people. But sometimes you may get a request from someone with negative feedback. One negative feedback is enough to reject anyone’s request. So the history of each person is important. Once everything is fine we accept, agree on time, meeting place, airport pick up if necessary, and the experience starts! QH: Do people come to Doha to Couchsurf? FH: Doha is a stop over station. Thanks to Qatar Airways, all long distance flights stop in Doha for a few days, and many of the passengers use the Couchsurfing community to help them spend these days. I host people from (other Gulf countries). I host globe trotters and researchers or masters students who come here to study the region. They all have things to share, stories to tell and unforgettable moments to spend! 27

Surf’s Up. Couchsurfing can mean literally occupying someone’s couch, or just meeting up with a network of local amateur tourguides for a day.
QH: Who’s involved? What sort of person does this? FH: Everyone is involved! I describe CS like you are traveling the world and discovering things while just sitting at home! It is a big hidden community. I first thought that only hippies, teenagers or people who like to save money are involved but when you go deeper, you would be surprised, everyone is! Lawyers, architects, executives, CEOs, old people, (and I mean really old), artists - there are no limits! QH: Why do people do it? FH: If let’s say I am going to Italy and someone offers me a 5 star room hotel or a couch at someone’s flat, I would choose the couch. The hotel has nothing new to experience, while the couch will make me meet a new
person. This person will show me around. I may meet his friends, or I may join them for dinner, a party, or a trip. I will certainly be part of the Italian community and lifestyle faster than choosing the hotel and I will be creating a network in Italy for the next visit. It creates a worldwide network linked from (one) country to another. People will keep on helping each other by recommending hosts or doing overseas favours. CS translates global settings into local experiences for travelers. People can develop communities with neighbors in their own cities who they might have never met otherwise. Maybe one day this website will unite the world as a huge community that helps each other!

Qatar is a peninsula with a rich and varied history and culture that’s as unique as the people living here. With an expat population hovering around 70 percent, looking for ‘culture’ here isn’t hard to find! We’ve focused on traditional Arabic culture, so those of us from away can get a sense of this place we call home! Ancient Treasures
Just outside the city, ancient ruins wait to entice you! These are choose-your-own-adventure excursions, so be your own tour guide and head to:
Barzan Towers
Meaning “high place”, the Barzan Towers reach into the Arabian sky and provide a majestic view of the sea. The towers not only serve as a station to keep an eye on pearl divers as they gather the precious jewels but also as a look-out for incoming ships and an observatory to examine the phases of the moon. Open 24 hours a day, visitors can visit freely except for the Umm Slal Mohammed fortresses which is a private property. Snacks and refreshments are on sale for those who want to linger around the venue and enjoy its wonders.
Fishermen’s Villages
Located in the northwest area of Qatar, the abandoned Fishermen’s Villages paint a portrait of life dependent largely on fishery. What’s fascinating about the structure built here is that it showcases traditional Qatari building techniques. The thick walls built from coral rock, limestone, mud mortar and gypsum-based plaster help isolate the heat and keep the interiors cool. In the middle of the district lie the mosques which reflect how the social structure of the community was centered around faith and religion and still is today.
Al-Jassasiya
Both mysterious and attractive, Al-Jassasiya is one of the few locations where one can find petroglyphs, ancient rock engravings. Although these rare stones can be found in other places, the ones found here are considered exceptional and extraordinary for the quality and state of preservation. Around 900 pieces alone can be found in Al-Jassasiya. Some of the notable carvings include thick-finned fish fossils, boats with numerous oars, scorpions walking on the rocks, donkeys and those depicting the outlines of turtles.
Antiques, Shisha and Hummus oh my! Get a taste of Qatar old and new in the Souqs! Check out Souq Al Deira for fabulous fabrics and ornate silks, not to mention tailors making abayas and thobes (as well as any other cultural clothing). Or head across the street to Souq Waqif, bounded by Al-Souq and Grand Hamad Streets. Built to look ancient, this revamped site is built on the location where people have been coming for centuries to trade goods. Today, it has everything from touristy-souvenirs to authentic swords, hookahs, and oud perfume, not to mention bizarre antiques It’s worth a wander just remember to barter before you buy! And no visit to the souq would be complete without a taste of shisha. Most of the cafes and restaurants offer shisha on their outdoor patios, and it’s hard to miss the colourful water pipers and sweet smoke as you walk by. But beware- some flavours are more intense then others (depending on your constitution, shisha can make you lightheaded and dizzy). If you’re a newbie, avoid double apple: stick to grape or, our personal fav, lemon mint. And while you puff, enjoy a meal! There are all sorts of restaurants in the souq, from Chinese to Italian, but we still love the traditional Arabic food. Try Moroccan at Tajine, or traditional Qatari food at numerous restaurants sprinkled throughout. Prices are cheap, and it’s a great way to try out some new dishes. 31

Smartypants Stop
There are loads of museums in the city, but most people never get beyond the fabulous Museum of Islamic Art. Don’t get us wrongit’s a masterpiece housing masterpieces. But there is so much more Doha has on offer! Why not check out the Sheikh Faisal Bin Qassim Al Thani Museum? This private collection features traditional weapons, jewelry and much more. Viewings are by appointment only- call 569-1406. Seen enough broken crockery to last a lifetime? Have no fear, the Weaponry Museum is there for you, with a collection of weapons dating back to the 1500s. Again, you have to make arrangements before hand, but you can by calling 486-7473.
Wind the day with the ultimate in the cultural view of Doha: West Bay at twilight. Do it with some of the best Lebanese food in town by booking a table at Al Mourjan’s outdoor patio. Thanks to an elaborate fan system, this is one of the only patios that’s open as the country heats up, and more importantly, it’s practically in the bay! The only restaurant on the Corniche, you can munch on tajine, muhammra and our fav, lampchops (seriously, they know their meat). The prices aren’t as cheap as the souqs, but it’s some of the best Middle Eastern food in town, and the view alone is worth it. And, opening this summer, their second location, this time in Souq Waqif! Call for reservations at 483-4423.

Scrub a dub dub
Get your spa on Arabic style with a traditional Hammam treatment. Hammam scours your body with a scrub, massage, steam and shower, literally making nicer, firmer, softer skin appear, as if by magic. It’s a great antidote to a summer’s worth of dry skin which has left you feeling like your flesh could be made into a saucy handbag or a kicky pair of pumps. And, while for North Americans the menu is comfortingly familiar, for people from countries not as big as continents, some of it is a bit... interesting. Try the biscuits and gravy on for size, or do it up Canada style and pour maple syrup on your sausage patty (although we feel the need to point out that Mrs. Butterworth is a filthy liar- while yummy, that is so not real maple syrup). Time to take off on your summer adventures, but before you go, QH picked the brain of one of our favorite pilots to bring you our Airport Survival Guide. There are some simple things you can do as you get ready to leave that will save time and keep the hassles to a minimum.
Arrive on time: Arrival time recommendations vary
by airline and day of travel, so check with your carrier. Remember to give yourself adequate time to check your baggage and move through security. It’s better to read a book in a corner than be stressed about getting to the gate on time!
Clothes: One of the easiest solutions to getting
through the airport with as few problems as possible is to think ahead when choosing your clothes. When you choose your traveling outfit, keep in mind that the following are likely to set off the alarms:
If you want to wear any of these on your trip consider packing them temporarily in your carry-on bag or put them in the plastic bin to go through the x-ray machine. Consider removing body jewelry if possible. Setting off the alarms earns you a manual search that includes a large wand and the hands of a stranger.
Shoes: Many shoes have metal inserts that set off
alarms causing concern for both traveler and security personnel. Although airlines do not admit to having a written policy on shoes, it seems that at airports passengers are being told to remove them more and more frequently. Boots, dress shoes and shoes with thick soles or heels – are going to be screened whether or not they set off the metal detector. So sorry.

explosives (dynamite, fireworks, flares), fuels, gasoline, lighter fluid, spray paint, fire extinguishers, bleach, oxygen tanks, poisons (pesticides, insecticides, rodent poisons), bacterial cultures.

When you are checking in a bag to North America (US and Canada) and want to lock it, you have to use a TSA (Transportation Security Administration) approved lock. You can lock your luggage, however, authorized airport personnel can still search it if they deem it necessary.

Easy Rider. Since he spoke to QH, Ahmed has traded in his racing bike for a Harley!

It’s a bird, it’s a plane... no it’s a very fast motorcycle barreling down the Corniche. Reg Barry shares the inside scoop on how bikers in Doha burn up the roads, all year long. One hears them in the distance late at night or sees them in the early evening as they rush past. One can see them stopped at the traffic lights, inscrutable behind their helmets. Or one can experience their antics close up, wheeling alongside the car or racing past to get to the next traffic light. We have all experienced the antics of the young men on motorcycles. What makes
them do it? Are they bored? Is it too much testosterone? Or is it just some young men harmlessly letting off steam? Ahmed is twenty-nine, a good looking Lebanese guy, single of course, who rides a Ducati 700. He is one of the many bikers who ride the streets of Doha. Mohammed, twentyfive, also Lebanese, is a friend who rides a Yamaha KZ.

The bikers come from all over, there are a good number of Qataris but there are also Pakistanis, Indians and other nationalities. Their ages generally range from seventeen to thirty-something. They gather in groups at the Corniche, at the shopping centers and along the coffee shops on Salwa Road. “We are not a gang but rather a group of people who enjoy biking,” explains Ahmed. “Each one has his own reasons for riding. Biking is my pleasure. Ever since I was a young man I loved all kinds of bikes and cars. In Doha the traffic is so bad and the cars are not able to race so we prefer bikes.” Some bikers do it to show off, pulling wheelies in the traffic and racing between the lights. This is not for Ahmed either although he has done it and still does it on occasion. The police however are clamping down
and now follow the bikers and take their numbers. “The fines are hefty, up to QR 6,000 and a friend of mine spent 2 days in jail,” says Ahmed. He started his riding career at the age of 10. His father, now selling motor spares in Lebanon, was a biker. Ahmed works as a mechanic for a large corporation and he also sells cars on the side. Ahmed lavishes care on his bike, personally washing it for twenty minutes every day. Mohammed is very happy to show off the photo of his bike, the screensaver on his mobile, sleek and fast looking. There are a lot of injuries, at least one every weekend. There are broken arms, legs and heads but this is not a deterrent. Ahmed himself has suffered injuries to his arms. “What can I do? It is part of biking,” he said. 37

Brian Wesolowski, Publications Manager with ictQATAR, gives QH the scoop on one of the latest toys to hit the net, that can help make your travels- whether home or abroadmore excellent and awesome. One of the hottest new social networks is foursquare, with some even calling it the next Twitter. It already has more than 700,000 users in less than a year of existence so I figured it was time to join and check it out. foursquare is a mobile social network. The concept is somewhat similar to Twitter – you build a network of friends and tell them where you are or what you are doing. The key difference is that you need to “checkin” to foursquare from your smart phone (it works on Blackberries, iPhones, Androids and Palm Pres) and using the GPS or closet cell phone tower can determine where you are. You then choose from a list of nearby locations or enter in a new location. For example, when
I arrive at my favourite restaurant in Doha (presently Maze on The Pearl-Qatar) I check in on foursquare to let people know I am there. Easy. Now it gets fun. Once checked in, I can write a review of wherever I am. In this case, if I love the tuna tartare everyone can know. If the rib eye steak is overcooked, they’ll know that too. And unlike Twitter, this stays permanently connected to that location in the foursquare world. Now my friends and people on foursquare can read my review at any time. When they are checking-in to a location, they will be able to pull up the history and maybe decide on a drink to buy, a sales clerk to ask for help or restaurant to choose in a hotel.

And now for even more fun. As you visit more places you start to earn points or badges for the places you check-in. This adds an interesting gaming element to the network, which has proven very popular on social sites like Facebook. Even better than collecting badges is the chance to become the “mayor” of a location. You are named “mayor” of a location if you are the person who has checked-in the most and a lot of locations are starting to offer special deals to the “mayor” so they keep promoting them. If you are the mayor of your favorite restaurant then you may very well receive a dessert on the house! There are a bunch of places I would love to be mayor of here in Doha.
Sadly, as with many of the posts I write about new trends, this site is really not being used at all in Qatar, and I had issues getting the foursquare application to connect on my blackberry (Qtel – what’s the problem?). Without many local users, there really isn’t much value in foursquare unless you travel and tap into recommendations of local users there. And until the numbers really start to pick up, it’s unlikely Maze will be offering me a free dessert even if I am mayor. I am sure there are some concerns here about privacy – why should you let everyone know where you are? Certainly people should be mindful when using foursquare, but this seems like a trend that is going to keep growing – I vote to embrace it! This is a great way to be armed with even more information when making choices – and you are getting the info from your most trusted source – your friends. It encourages you to explore your neighborhood and can help you find new places.
You can also use foursquare when you travel by checking-in from anywhere in the world. It’s a great way to explore a new, unfamiliar city. Also, think about the number of times a friend has asked you what they should see in a place they are visiting if they know you have gone in the past. I always forget the exact name of restaurants or museums, but if they check out my info on Join me in building a foursquare network foursquare, they will have a treasure trove Qatar! of likes and dislikes!

Ramadan buffets and meals pose many risks to health (and not just getting out of the way of those fasting!). QH grilled Six Senses Spa Wellness Manager Carryn Todd on how to make it through with your waistline intact.
Meat Your first mouthful should be a proteinbased item with minimal fat. Fish is an excellent alternative – fish is basically organic and is a refreshing change from the growth hormones and anti-biotics often traced in meat items. Try to select the grilled option and avoid batters that act as a sponge for the oils in which they are fried. If you like a battered fish or this is the only option, try to select a batter that is lighter in colour – darker batter ingredients can disguise old carcinogenic oils that become darker with over-use. Grilled meat should be selected over curries or stews – the meat fat circulates within the stews instead of dripping away in
kebab-type options. Avoid white fats in your meat selection; minced meat hides much of the fat and could be slightly lesser quality. Please remember to avoid excessively char-grilled or blackened barbeque that has been proven to be carcinogenic and harmful to our body.
Sauces and Salad Dressings Try to avoid opaque sauces – they will often contain animal fat or mayonnaise. Try to select transparent chilli or tomato based sauces which provide an excellent dose of mood lifting anti-depressants in the chilli and antioxidants in tomato. Olive oil

Cooking at home? Chief Executive Chef of Al Mourjan Restaurants, Chef Ashraf, gives us one of his favs!
LEBANESE BAKED HAMMOUR IN THE OVEN is much better for you if eaten unheated or uncooked. Salad dressings are the best way to consume “raw” olive oil to provide essential fatty acids – “live long” food. Avoid vinegar based sauces or dressings. Your body thrives in an alkaline environment – vinegars are very acidic and can disrupt the pH balance of your body. Surprisingly even though citrus fruits have an acidic taste, they are excellent body alkalinises. Desserts – Fruit, Fruit, Fruit! Add as much colour to your plate as you can. Fruits provide you with a little Fructose (fruit sugar) to quench our sweet tooth. Avoid sugary caramels and baked egg based “white” desserts – cheese cakes and crème Brule type sweets. Head towards dark chocolate – not the chocolate mousse or ganache but rather the pure chocolate moulds. Strawberries dipped in dark chocolate are a great choice!
Foods to Avoid If it’s moulded or set, avoid it! If it looks like it jiggles like a bowlful of jelly, it could be hiding refined carbohydrates and possibly animal fat (butter) used to set the finished dish. Mass-produced mezze items will often look like this, as they are easier to display in bulk.
Avoid white food; white pasta, refined rice and bread are empty calories. We all love a freshly baked bread roll on our side plate – even though it is advisable to avoid white food if you are watching your weight, you can select the preferable option of a whole wheat bun or at least a white bun topped with either sesame seeds or poppy seeds. This will at least introduce calcium, magnesium and iron into your body. Avoid fried bread; rather select grilled croutons, which are lighter in colour and more brittle than oiled croutons. Egg based food items are a great source of protein but deliver far too much fat and cholesterol. Ice-cream, liver and eggs have some of the highest fat content and should be avoided if possible. If you love egg based items, try to select egg layered with vegetables and herbs; you will receive additional nutrition and add value to your calories.
Welcome foods If a food item has a strong colour, taste or flavour it offers you greater nutritional value. Garlic, herb based salads, beetroot, peppers and tomatoes are welcome on your plate.
When purchasing your Hammour, make sure that you are buying fresh Hammour, If the eye is large and shining, it means the fish is fresh. For this platter we recommend that you buy a 3 kg Hammour Fish. Then ask the vendor to clean the skin and clean the inside of the Hammour by cutting the Hammour from the tail to the head and emptying the insides. Then just wash it in some water and you’re ready to go! Sprinkle the inside of the Hammour with a pinch of salt (150g), 30g white pepper, 60g cumin spice, 60g dry coriander and slices of one fresh lemon and 20g of dry bay leaves (these vary according to the size of the fish). Brush some corn oil lightly over the outside of the fish. Wrap the fish in aluminum foil totally, twisting the ends of the aluminum foil so that the fish is totally enclosed. Place the fish on a baking sheet in the oven for 45 minutes at 220 degrees. After the fish has been cooked, unwrap the foil, place the fish on a platter and garnish with slices of lemon and fresh parsley. Bon Appétit! 43

CHEF TALK It’s Ramadan, and gracing tables across the city will be whole roast lambs and sometimes even baby camels. One man’s weird is another man’s delicacy, and QH catches up with Chef Joseph, Executive Chef at the Sheraton Doha, to find out what a boy from Austria thinks about cooking up a whole lamb. QH: What’s the regional food like here? J: It’s a little different here. In Austria we very much believe in basics, and from having these in your blood, from there you can build anything. Having these basics in me and the experience of my travels, there is no more limit. The sky is the limit. You can just start going home, and taking things and playing with it. QH: Where did you learn to cook this kind of food? J: From my Oriental team actually. I have an Oriental assistant, a gentleman from Syria, and he taught me how to cook nice Oriental food, as the Syrians are very good at the Oriental dishes. I also have a Lebanese chef. I work with them and open my eyes and that’s how they taught me how to do Oriental food and of course mix it with my ideas.
QH: How, exactly, do you cook a whole lamb or camel?

T
o be perfectly honest, I had no idea what the term “facial spa” meant until I first walked into the gorgeous facility of the Four Seasons Spa.
me since it was safe and easy and was very friendly for my skin. I looked over a few times, extremely curious at what she was doing when I saw a machine beside her and I suddenly got the feeling that I was sitting at a dentist’s chair, getting ready for my tooth to be pulled out. She informed me that the whole treatment was going to take an hour which, in my personal opinion, was rather too long to just lie down while I let her work on my face. But my worries about the facial being too long vanished because I was excited at the fact that they were going to take the imperfections off my face, such as pimples, blackheads, whiteheads and the like.
I was told to wear a robe and slip on flip flops, before I was brought to the room reserved for me and only me. The Indonesian lady told me the list of things the facial spa involved, including their new facial line, Pevonia Botanica SpaTeen, which was specifically made for the sensitive skin of teenagers, in other words, me. She offered me a variety of different flavours, scents and aromas, but she eagerly told me that the product she would choose to use on me depended highly on my type The lady started massaging my face with of skin to prevent irritations and allergies. her soft and gentle fingers with the papaya, Having skin prone to being irritated easily, which I soon realized smelled nothing she decided to use the papaya flavour for

like papaya or maybe I was just unaware what papaya really smelt like. Her voice was extremely soft and soothing, almost as if she wanted me to doze off right then and there. Additionally, the background music of water falls and soothing sounds of the ocean was all the more hypnotizing and nearly gave me the illusion that I was walking through the beach with the sand on my feet. At one point, I felt thin threads trace across my skin and instinct told me she was using a brush. The sensation was kind of ticklish but she always took care to avoid my lips so I never got the chance to taste the papaya cream, as much as I had wanted to. She also applied an oatmeal-like substance and then placed a heater over my face. She informed me the heater was supposed to open the pores on my face. She then started taking off the whiteheads on my face, which was actually rather painful, but she had already warned me about this earlier so I wasn’t really all that surprised. She also used a vibrating pen on my face which she explained was used for killing the nasty bacteria. During this part, I was rather scared and freaked by the pain and I couldn’t stop myself from reacting. The lady
was nice however, since she decreased the pressure of the vibrating pen every time I winced in pain. After that horrifying moment of pain, she started applying the papaya cream on my face and cleaned and massaged my face, which made me sleepy again. Towards the end of the treatment, she started massaging parts of my body, mainly my head, upper back, and my arms, which finally gave me the chance to take a short nap for about 10 minutes. The lady woke me up by whispering my name. My face felt so young and soft as if it were a newborn baby’s. She showed me the whiteheads she removed, which I found absolutely disgusting and couldn’t imagine being in my face all this time! I absolutely enjoyed the treatment and I would certainly want to do it again. The treatment definitely made me feel a whole lot younger and made me feel fresh and relaxed. Two weeks in, I’m halfway to the end of my fitness bootcamp at the Sharq Village and Spa. With twice daily workouts and boxes of food making their way to my office, I’m 3 kgs in with more to go! Let’s watch...
WEEK 2:
The Great Yoga Reconciliation (In Which Yoga and I meet after our Messy Divorce and Find We Still have Things To Talk About) After avoiding it with all my might for four days, I finally am back in the yoga studio. The room is crowded, packed with pretty people who probably can all sit on their own heads. I show up late, and blushing and embarrassed already, heave my bulk and my mat into the far corner. And then: downward dog. It doesn’t hurt! In fact, it feels great on my aching muscles, tight from pilates the day before. Dancer pose feels marvelous on my legs and back. And then, while doing back arches, for the first time ever, I make it into full bridge. I’m up and it’s the greatest feeling I’ve ever had, clinging to my teacher’s legs though I might be, bent completely double and balancing on hands and feet upside down. It’s still not my favorite thing, but my inner competitive goon has been appeased. I’m not the best, but I struggle less. My face is still red, but I’m not choking back tears, and I don’t hurt more after the class like I did last week. Progress!
Getting into My Own Pants I am a jeans girl. I love them. My closet has a whole section devoted to them, and day-to-day they are my uniform. In the editorial universe of my office, I am the Devil Wears Flip Flops and am more Marks and Spencers on sale than Anna Wintor. But while labels don’t thrill me, I am a connoisseur of fit. The right shoe-to-pant ration is required, which leads me on foraging expeditions in Doha trying to find an extra-long inseam to fit my tall frame. Like the Neanderthal with the best cave on the block, I return from my consumer hunting and gathering victorious: the perfect pair of jeans. Reserved for going out, my Magic Pants lift and separate, streamline and flair, making my butt look more bedonkadonk and less two-pigs-in-a-bag-fighting. But as the third week draws to a close, my beloved denim is under attack. My work appropriate, dark wash boot cut flares are sagging in the butt. They’re loose in the waist. And I have weird fluffs of material along the front, folding in awkward ways. Standing in frustration in front of my closet, I am faced with a choice: dress pants or my tight, black, straight legged Magic Jeans? The choice is clear. But... Magic Jeans, you’ve failed me! Their perfect contours and butt-awesome-making cut is loose, saggy and baggy. They are now perfectly acceptable for work and this makes me at once joyous, and really sad.

For years, I have tried fairly successfully to be invisible. I’ve faded into the background. I couldn’t deal with attention, looks, and so instead I opted to disappear. I’m the funny, loud friend, distracting you from the man-behind-thecurtain that is my weight with intense sarcasm. Under my fleshy suit no one could see me. We skim over fat people in our culture and disregard them- fashion isn’t accessible to them, activities aren’t accessible, and moreover, love, romantic interaction, flirting, aren’t accessible. I’ve lived my life constantly aware of The Muffin Top Syndrome- that fat girl you see walking down the street in her tight top and too small jeans, her flabby muffin top spilling over, yet oblivious to it, thinking she looks hot. The inappropriate and embarrassing sentiment that what she’s doing is laughable because of the way she looks. The Muffin Top Syndrome kicks in, whether in the clothes on my back or the way I talk to that nice guy standing next to me at the bar. But now . . . even if I’m only a few pounds lighter, a few centimeters smaller, I’m not invisible. People can see me. I can see me. And what I see is ok. 63

Brown is dependable and solid, like the earth. Even people who dislike the colour brown when it comes to clothes or décor are attracted to the richness of natural wood tones in furniture. Nature of Brown: Brown in a very interesting color
because it is created by mixing all three primary colours. So add blue, red and yellow together and you get brown. You can also add a primary colour with a secondary colour, add orange to blue, purple to yellow or green to red and make brown. Each combination will make a slightly different shade.
Brown represents wholesomeness and earthiness and while it might be considered a little on the dull side, it also represents steadfastness, simplicity and dependability. Although blue is the typical corporate colour in the business world, UPS (United Parcel Service) the American version of Aramex, has built their business around the dependability associated with brown. Most of their personnel wear brown uniforms.
Brown represents the nurturing, life sustaining qualities of the earth. of It is the colour of a stable source security, comfort and normalcy.
Decorating with Brown:
Brown, because of its association with wood colours, can be used in many forms in any room. In the living room, brown will impart warmth and refinement in any shade from richest mahogany to light blonde pine. Darkened brown tones add coziness to studies, dens and libraries. Rich jewel tones like amethyst, garnet and emerald will show off well as accents against a brown background. Kitchens, dining rooms, hallways and entryways all receive welcome warmth and lusciousness from cream. Taupe is an unexpected neutral which can be dramatic in a powder room. Taupe is an excellent background for rich accents like garnet and gold. The first cousin to brown is beige. Beige is a warm colour and brings to mind the glowing warmth of a sandy beach or wicker on a sun porch. Taupe is also related to brown, with an inherent warmth because it is considered to be brownish grey or greyish brown. Taupe and beige are considered neutrals and are understated and timeless. Brown can be combined with green to convey the concept of an earth friendly environment. Very dark brown can replace black and becomes just as timeless; think original dark brown Louis Vuitton bags and how they go with everything. To brighten brown up a bit, combine with a mellow yellow or a rusty orange. For a smart but conservative look it can be mixed with deep purple, gray or turquoise.
