AS I WRITE THIS at the beginning of winter, I reflect on the incredible 2023 wedding season. I am filled with the memories of events I attended, clients I worked with, and wedding professionals I collaborated with. It has been a great season here in Maine! Real Maine Weddings hosted the 4th annual 2023 Maine Weddings EDU conference in South Portland in October. We had record attendance and a fantastic lineup of speakers that included Chef Nettie Frank, Kunbi Odubogun, Jaclyn Watson, Terrica, and Marc McIntosh, as well as local pros including Michelle Fratianne, Rob Labelle, The Wellness Connection, the State of Maine Liquor Bureau, and Jerry Bazata. CONSIDER PROVIDING TRANSPORTATION. If people are coming in from out of town for your wedding, consider hiring a party bus, van, or even a trolley to take guests from their hotels to the wedding ceremony, to the reception (if it’s in a different location), and back to their hotels. It will save on parking spaces and offer your guests a safe alternative to driving.

Lobster is a Maine tradition, but it’s messy! If you plan to serve lobster, consider serving it “LAZY LOBSTER” style — pre-cracked and ready to eat. It will keep your tables and guests tidy.
Maine summers are short! Be sure to BOOK YOUR VENDORS WELL IN ADVANCE. 12-18 months in advance is not too early.

VISIT THE CEREMONY SITE during the same time of day and year that you have scheduled your ceremony and make notes of external or environmental noise. There’s nothing like a foghorn to ruin the moment.
Figure out what flowers are in season in Maine for your wedding. Using SEASONAL FLOWERS in your bouquet and decor will save you money and will still look beautiful.

With a career that began with 15 years working stren-
uous hours in restaurants, Nick Orgo turned to catering to have a happier balance with his home life. He was looking for
a schedule that would leave evenings and Sundays open for family, while still working with food. He started catering as a chef for a different company, and in 2014 he decided he was
ready to stop working for other people and strike out on his own with M.A.N.E. Catering so he could do things his own way. With M.A.N.E. Catering now flourishing in Bridgton out
of a restaurant/kitchen space called Stella’s on the Square (named for his daughter) and as the new owner of the Bear
Mountain Inn in Waterford, Nick has become the expert at
doing things his way. When working with his clients at M.A.N.E. Catering, he encourages them to think of their wedding food in this way too.
“In my opinion, the food should be all about the couple
and no one else,” said Nick. “Wedding planning starts to feel like it’s a day for all their friends and family, but really, it should be a day for themselves.”
While M.A.N.E. Catering does provide sample menus on
their website, when Nick and his team talk to their couples, the most important question they ask is, “What would you like to eat?”
“Couples have this idea that the food at their wedding
needs to be fancy, but it is about what is fancy for them,” says Nick of menu planning. “If they want steak for dinner but
them changing everything,” says Nick. “With the way things are, you have to be flexible with your catering. Everything

and Italian heritage. As he has taken on a more client-facing role within M.A.N.E. Catering, he has found joy in working
with couples for their day and helping them create a menu that is true to who they are and what they love.
“I love incorporating special food to a couple, like serving
tuna the groom caught or vegetables your family grew for a reception,” says Nick. “Being there for their day, seeing it through to the end of the day, and watching them be so happy is special to me.”
As out-of-state clients come to sample what Maine does
best, M.A.N.E. Catering helps to embrace the fruits of the
ocean while also encouraging their clients to think “outside the roll,” creating summer delicacies like lobster deviled eggs and a decadent lobster-stuffed donut with tarragon mayo.
“Food at weddings is becoming about the show, the expe-
rience,” says Nick of current wedding trends. “It’s not always
about the 300-person event with a sit-down meal; it’s more about large grazing tables, outdoor grills. It’s more acceptable
to be yourself and express yourself through your wedding, making it more fun.”
For Nick, the most important thing is to remember what
the day is really about and to only invite the people you know will share in the joy of the day, no matter what ends up on their table.
“It’s about what makes you happy, not anyone else,” says
Nick. “Invite people who support you. Everyone there should be happy to have RC Cola and hot dogs because the day is not
about what they eat; it’s about having your best day. If your best day is pizza, then let’s have pizza! People forget that they aren’t there for the food but for the love.”

Add the ingredients to a cocktail shaker with 2 large ice cubes. Shake for around 20 seconds or until the shaker feels cold to the touch. Strain into a rocks glass with a large ice cube, and garnish with a pineapple frond.

Syrup Recipes
Turbinado Syrup 1 c water 1 c turbinado sugar (or any unrefined sugar such as demerara) In a saucepan on medium heat, dissolve 1 cup of turbinado sugar in 1 cup of water. Bring to a simmer, then let cool. Store in an airtight container and refrigerate for up to 1 month. Blueberry Syrup 1 c blueberries 1 c water 0.5 c sugar In a medium saucepan, cook the blueberries in the water over medium heat. Strain out the blueberries, then return the liquid to the hot pan. Over low heat, stir in the sugar until it dissolves. Store in an airtight container in the refrigerator. Raspberry Syrup 6 oz raspberries 0.75 c sugar 0.75 c water In a small saucepan, combine the ingredients and heat over medium-high heat until simmering. Gently mash the berries with a wooden spoon and let simmer until the berries have disintegrated into seeds.Remove from heat and strain out the seeds through a fine mesh sieve. Discard the seeds. Store in an airtight container and refrigerate up to 2 weeks.
