The Winchester mystery house: 10,000 windows, 2,000 doors and 160 rooms After the reclusive widow of the Winchester rifle-manufacturing family lost her husband and child, she began construction on the Winchester mansion. This mansion was continuously renovated for 38 years before her death. In order to confuse the spirits she was certain haunted her, some rooms are hidden behind wardrobes, while some doors lead to nowhere. Some windows do not give a view of the outside, and some stairs lead to ceilings. The house is said to be haunted by those killed by Winchester rifles and is a creepy California tourist attraction.

Bay of pigs

Edible food packages made out of milk

A paradise beach in the Bahamas is home to swimming feral pigs. They trot along the beach, soaking up the sun and taking dips in the 24-degree ocean. Legend has it that some fishermen brought them to the island as a reserve supply of food, but then completely forgot about them. Now the pigs are happily living on the uninhabited island. Join them for a swim at Big Major Cay, aka Pig Beach!

Scientists have developed edible food packages that help reduce harmful plastic waste. Researchers presented their work at the 252nd National Meeting & Exposition of the American Chemical Society (ACS) on 26 August 2016. The package's film is made of milk proteins, powerful oxygen blockers which help prevent food spoilage and thus prevent food waste.

WHAT DO YOU THINK OF SIGNING A PRENUP AGREEMENT? The divorce of Chinese actor Wang Baoqiang from his wife, and their subsequent (very public) financial disagreements, have caused a storm of discussion about what happens when married couples divorce. We asked the people of Qingdao what they thought of prenuptial contracts.

Young people don’t care much about this kind of thing, because marriage should be maintained by love rather than materialistic things. Anyway, I wouldn’t sign a prenuptial agreement.

I quite approve of prenuptial agreements. Before a couple gets married, there should be an agreement between them about the distribution of special assets. If a couple without such an agreement breaks up, the division of possessions could be a really difficult problem.

I think it’s needed more by partners in different financial situations. However, prenuptial agreements to some extent could hurt people’s feelings.

There is no need to sign a prenup. If two people really love each other, then they will get married and won’t divorce. And common people like us don’t have much property that needs to be associated with either person in advance.

I have mixed opinions on this matter. On the one hand it’s really convenient. In case of divorce, you have the right to what’s yours without unnecessary scandal. On the other hand, if you sign such a contract then you’re impeaching the credibility of a loved one. When you sign a prenup you must have allowed for the possibility of divorce. So it all depends on your relationship. If the contract does not offend you then it’s better to sign it so you don't have problems in the future.

REQUIEM FOR THE GREEN DRAGON Challis Cates defends the merits of travelling slowly.

B

ound northeast en-route from Beijing on a coal-black January night, I rocked gently in and out of consciousness. The locomotive’s coupling rod churned the driving wheels methodically below like a great iron rooster gyrating its hips to and fro. So, even nestled in my bunk, I felt cradled by the gentle sway of our car on the rails as the train’s engine dragged its full and uncoiled length across the frozen loess of the Manchurian Steppe towards Ha’erbin. Finding my cabin mates wrapped in the depths of slumber, I withdrew a reluctant arm out from the warmth of my duvet and squinted dourly into the face of my wristwatch, vainly tracing the integer movements of each little hand in the darkness before concluding, decidedly, that it was likely 2, maybe 3 am. Not wanting to disturb the others, I gingerly peeled the macramé curtain from the

cabin window as its fabric pooled against the backs of my fingertips like the slip in a dress, and gazed out into the world as it passed me by. Nameless villages scattered along the tracks swept past our heaving berth in less than a glance, and were gone, and all that could be made of them in the light of the moon were the contours of their shadows. Counting each one as it went by made sense, until it didn’t. Each courtyard was a dream cast into a diorama. Every furnace smoked with the entropy of another person’s life that I’d never live, never know, and as the window perspired under the warmth of my waking breath, I etched my Chinese name in characters with the tip of my index finger into the frosted condensation resting on the glass, and then watched it disappear. Only as the sun’s first light pierced the solitude of our

private cabin did I awaken once more and, at the behest of a congenitally impatient locomotive steward come knocking for our tickets, saddled my rucksack and strode onto the platform from the pea-green carriage into the morning frost of a strange new city to which I had never been. Colloquially referred to as 绿皮 (lǜ pí), or “green hide” for the iconic paint jobs of their viridescent carriages, each humbly trimmed with two slick yellow stripes, the PRC’s oldest passenger trains were first commissioned in and entered service during the 1950’s and enjoyed a privileged status as the preferred means of transportation for everyday Chinese, especially low-income and migrant workers, well past the subsequent decades of the Mao era and into the 2000s. Traditional trains could accommodate three or even four generations of a single myredstar.com

Two years later, in June of 2014, the last green train connecting the transportation hubs of Henan and Zhejiang provinces was retired in favour of its successor, a “red” train outfitted with air conditioning and other modern trappings. In less than a decade since the first passenger dedicated high-speed rail line went into operation in 2004, the PRC has already constructed the largest HSR network of any country, with 19,000 km in operation by 2015, accounting for roughly 60% of the world’s total, and another 800 billion RMB (roughly 120 billion USD) slated for further expansion to be spent in 2016 alone.

family on what were, in many cases, multiday long journeys from their villages in provinces like Henan or Anhui to burgeoning industrial centres on the coast like Shanghai or Shenzhen in search of their own slice of the country’s economic miracle. Qi Liyan, a columnist for The Wall Street Journal, reminisces that, at times, the locomotives were so packed that small children had to be passed through open windows by their parents to get them aboard the carriage. Perhaps more important than the historical role that the green trains have played in the development of the country, however, is the symbolic one that they’ve served in the hearts and imaginations of its people. Charles Liu, senior editor of The Nanfang, observes that the green train

10

represents “room to converse and gather, prioritising thriftiness over convenience, and a connection to a China that is quickly disappearing as the country barrels forward.” Today nearly all of the PRC’s traditional green trains have been decommissioned or are slated to be retired as part of a larger government plan to rapidly decrease travel times by phasing out slow-moving locomotives and pouring seemingly endless lines of credit into the country’s rapidly growing high-speed rail network. In June of 2012, Beijing’s No. 6417 green train connecting the capital with neighbouring Hebei Province made its final journey to

Just as the PRC’s, until recently, spectacular economic growth has inspired a near religious fixation with GDP as the sole measurement of the nation’s progress, that every 高铁 (gāo tiě), or “fast train,” boastfully displays at the head of each carriage, in fluorescent red electronic text, that its passengers are whizzing by at some 300 km/hour seems to similarly suggest that the maximisation of speed has become the paramount consideration of quality in travel. Even as there exist obvious benefits to high-speed rail (energy efficiency, reduced travel times, luxury comforts, etc.) it’s important not to forget what is lost when we mistakenly dismiss the traditional as merely outdated. Never will I forget my first multi-day trip in China riding the green train, travelling 41 hours from Lhasa to Beijing, and the sensuality of absorbing the cacophony of sounds and thick aromas as I strolled the entire length of the locomotive, taking in the full breadth of quotidian life: old men smoking Shuangxi cigarettes and passing round a bottle of cheap baijiu, women gossiping dryly over a low-stakes card game, children chasing one another down the aisles with toy pistols, the quaint tea set resting on my cabin table. Truly, how does it profit one to travel anywhere quickly if they never reach their destination on time, and are always the same person when they arrive as when they departed?

Halloween’s Trickster Ghouls and China’s Hungry Ghosts When we think of autumn, among the reddening leaves and cooler weather lurks the mysterious night of Halloween, when ghosts and ghouls are rumoured to come out to play. A special night of contact with the supernatural is also seen in Chinese culture; Sophie Comber tells a cross-cultural story of Halloween and the Hungry Ghost Festival.

I

n many Western countries, as the late October days grow shorter and shorter, Halloween waits menacingly. Yellowed leaves curl at the corners and fall one by one, into piles stirred by whispering October winds. It is now when mischievous ghosts creep into your neighbourhood, opening mouths gaping wide as a jack-o’lantern’s grin.

beings have a rich mythological history: the Aes Sídhe (“people of the mounds”) spirits of Irish and Scottish mythology and the “Fair Folk” of Celtic folklore rank among the more friendly. Tyrannical dragons, human-eating witches, and murderous ghosts are just some of the more nightmarish ghouls that emerge on Halloween.

Halloween—the modern word for “All Hallow’s Eve”—is the one night of the year when ghosts and ghouls are said to run unrestrained among the living. Cloaked witches swoop low over rooftops; red-eyed monsters and ogres stumble groaning down windy streets; skeletons drag their bones from graves, and malevolent ghosts lurk just out of sight in the shadows.

According to tradition, these spirits may be appeased by tributes of delicious food and drink. Such offerings used to be made during festivals such as Samhain, one of the old forms of Halloween. Today the tradition remains in the costumes of child trick-or-treaters. Give the children sugar sweets, toffee apples, peppermint lollies, as you see fit—or don’t. If not, the children will probably let you off easily. But the supernatural creatures stepping in their shadows may be less forgiving.

So, how does one appease Halloween’s impish fiends? Traditionally, through offering them tribute. As goes the chant of children dressed as monsters on the 31st of October: “Trick or treat, trick or treat, give me something good to eat!” Draped in black, with teeth, wings, horns, bloody talons— these children represent the modern-day versions of the spirits who have existed in the myths of Anglo-Saxon Britain for thousands of years. Throughout England, Ireland, and Scotland, supernatural

12

myredstar.com

Halloween’s spirits crave fear and respect. In ancient Britain, the Celts believed 31 October was “the day of the dead”, when ghosts cross the barrier between worlds. But such Halloween traditional ideas of making offerings to otherworldly beings at a regular time every year are far from exclusive to the West. In China, in Taoism, Buddhism, and Chinese folk religion, Halloween creatures have always

had their counterparts— 饿鬼 è guǐ, the ravenous spirits of 中元 zhōng yuán, the Hungry Ghost Festival. During Ghost Month, the seventh month of the lunar calendar, when the last glow of the sun ebbs away, tormented ghosts stream from the gates of Hell, temporarily free of the Hell King Yanluo. They howl with the wind, clawing their way back to make contact, benign or malicious, with their living families. The hungry ghosts appear as emaciated, corpselike humans, with swollen stomachs, necks narrow and brittle, and spindly hands that grasp for food. Some of the hungry ghosts are the deceased whose families have forgotten them; that is, families that no longer burn joss paper or put out offerings of food and drink during this festival. Other hungry ghosts are those who did not receive proper burial, or died long before their time through violent murder or suicide. One legend describes how the Buddha’s disciple Mulian led monks in a mass prayer ceremony to free his mother, who was trapped in the realm of the hungry ghosts in Hell. Mulian is often said to have created the tradition of soothing and redeeming savage hungry ghosts, rather than fighting them or trying to destroy them. In Taoism,

the Celestial Official of Earth, Lord Qingxu, works to further such mercy, absolving the sins of the deceased and releasing them from their suffering. Further legends tell of hungry ghosts who doomed themselves in life; the miserly, the greedy, the cruel and the mean, who callously turned away begging monks or tried to starve others to death. For the whole of Ghost Month, the hungry spectres wander hither and thither in villages, towns, and cities, wailing to be sated. Faithful families place offerings of fruit, pastries, meat, nuts, rice and tea on altars. They burn sticks of incense, burn paper objects to smoke for their dead ancestors’ use in the afterlife, and fold paper money into the shapes of old gold ingots. But families will also be careful to hold such rituals on the street, to avoid inviting ghosts, and therefore bad luck, inside their homes. Another way of appeasing the hungry ghosts is artistic performance—loud Chinese operas and dramas are performed to calm and distract the roaming spirits from causing damage and chaos—and the front row of seats is always left empty for any invisible audience members. Carrying on the practices of Mulian, Taoist monks and priests conduct rituals to take away the hungry ghosts’ pain, throwing handfuls of rice into the air to make them a satisfying meal. During Ghost Month, rather than risk provoking a ghost, people should not disturb offerings left for the spirits, speak of the ghosts aloud, or walk alone at night. They should not dry wet clothes outside, in order to prevent a spirit putting the clothes on, nor should they go swimming,

// FEATURES /

so an angry ghost will not drown them. Effective ways to drive off hungry ghosts include making offerings, keeping home lights blazing bright, and scattering rock salt on the doorstep. By the fifteenth day of Ghost Month, the exhausted and starving spirits are particularly unpredictable and dangerous, so a great array of food and drink is set out for them in a final lavish feast for the festival night. The best dishes are arranged on offering tables to tempt the hungry ghosts to eat. Then, as night closes in, the time comes to drive away the spectres. Taoist priests raise their voices in chants to frighten the hungry ghosts away. to hoard sweets. Many Chinese people also create white lotus paper lanterns, with the names of their dead relatives written upon the flowers. As night comes, the lanterns are set alight, and released onto rivers. The floating lights are said to guide the lost ghosts, to speed them on their journey back to their world. When the lanterns go out, people know that the hungry ghosts have returned to the afterlife. From the stories we are told, the spirits of the Hungry Ghost Festival and of Halloween may both seem malevolent, but historically, Halloween teaches children to be good, to obey, and to respect the supernatural plane. In the modern day, Halloween is the best opportunity for children to have an entertaining scare, dress up as monsters, and relish the chance

The Hungry Ghost Festival, interestingly, despite its blood-curdling stories, teaches children to be kind, to give food and drink to the starving, to value and cherish all the living and dead generations of their family. At its core, this festival has much to do with the importance of filial piety and compassion. In current times, both the Hungry Ghost Festival and Halloween are for the most part viewed as enjoyable traditional superstitions. But even so—don’t whistle or call out to the hungry ghosts of China, or dare to deny the western Halloween monsters their due. You might just get an answer back. myredstar.com

PFLAG : Parents, Families and Friends of Lesbians and Gays PFLAG China is paving the way for the LGBTQ community across the country, providing unconditional support, understanding and friendship in a society struggling with acceptance. Georgia Leach investigates how this charity is helping China to welcome the diversity bubbling beneath its surface.

W

ith only a trail of rainbow flags to follow, PFLAG China doesn’t exactly scream its presence out to the world. Nonetheless, it is clear from the sixty or so welcoming faces that this gathering is by no means a secret for those in the know. The theme of today’s meeting? The big one: how to come out to your friends and family. With an estimated one in twenty people identifying outside heterosexuality, the modern world is slowly opening its arms to the idea of diversity. However, this culture of acceptance is distinctly lagging behind in some countries, including China. Legally occupying a very dubious grey area, the Chinese LGBTQ population often find themselves rebuffed by their own culture and society, making self-acknowledgment and acceptance a mighty, and often agonising, undertaking. Founded in 2008 in Guangzhou, PFLAG China helps the LGBTQ community celebrate their differences, and guide their loved ones through the process of recognition, understanding and, ultimately, approval. With branches in more than seventy cities across China, including Beijing, Hangzhou and Chengdu, PFLAG China continues to enthusiastically develop its programs, despite relying almost entirely on donations from private individuals. After coming out himself and witnessing the pillar of support the organisation provided for his mother, Wei Liang, a Qingdao native, decided to bring PFLAG China to his home city and began to establish meetings across Qingdao.

14

myredstar.com

广告 • 特辑

While the aims of PFLAG China are no different from the original PFLAG charity established in the United States, the local Chinese meetings are tailored to particular barriers found within Chinese culture, principally the difficulties of same-sex couples having children. While surrogacy and adoption provide alternative avenues for gay couples in other countries, these are not an option in China where surrogacy is illegal and adoption is only possible for heterosexual couples and single applicants. In a society where filial piety is still vehemently upheld, the duty of a male child to pass on the family name to his own child is viewed as essential. “China attaches a lot of importance to family relations, and the way in which parents love their children in China is not the same as in the West,” says Wei Liang, the organiser of Qingdao’s PFLAG meetings, adding that, “China values the duty of the heir to get married and continue the family line above all”. Today’s PFLAG China meeting tackles this complex subject head on by inviting those who have already come out to their parents to discuss their experiences, also calling on those parents to describe their journey to acceptance. One mother, who wishes to remain anonymous, emotionally and honestly details her reaction to her son’s sexuality. As with many parents, the love she has for her son will never waver, and the basic principle of him having a male partner presents little trouble in her mind. Yet, her struggle lies in the fact he cannot father children with his partner. She admits it pains her every day that she will never have

grandchildren. Another recurring obstacle found by many of those at the meeting is the lack of sex education in Chinese institutions, leading to an overwhelmingly traditional view of gender and sexuality in Chinese society. Evan, who discovered she was gay while at university, was disappointed to see other students “blindly following the crowd, deny[ing] their sexuality”. She even found that gay and bisexual students were “ostracised by heterosexuals, and soon began to fall in line with those who had relationships with the opposite sex”. Sadly, this is only the beginning of a worrying new trend sweeping China, the fake marriage— the legal union of a man and woman who are both gay. Rapidly becoming a popular way to satiate the demand for children, fake marriage is seen as a solution to familial pressure. However, this temporary fix concerns many members of the LGBTQ community as it promotes denial and a lifetime of self-repression. In the face of this adversity, PFLAG China hopes to bring LGBTQ awareness to the forefront of China’s mind, and encourage those living under a veil of secrecy to embrace what makes them special. While China has only just embarked on the road to acceptance, PFLAG is determined to lead the pursuit of equality and propel China towards recognition of its own rich diversity. If you'd like to find out more, visit http://www. pflag.org.cn/ or contact Wei Liang at WeChat: ming438047.

Interview with PFLAG Member, Carmen, 21 Q: What is most challenging about being gay in China? A: I think it’s simply being gay itself. It’s so important to save face, and I always fear other people will see that I’m different. Q: Have you come out yet? A: No, I haven’t. I’m still trying to decide the right way to tell my family. Q: Do you think coming out is important? A: At this moment in time, it’s not a priority for me. From a young age, my mother has been a single parent, and there has been so much pressure on her. I don’t think it’s worth it for me to be true to myself if it means she has to endure even more hardship. Q: How have PFLAG China events helped you? A: Firstly, I can meet like-minded people who immediately accept me, which helps me to accept myself. Although I knew I was gay from a young age, I have never publicly acknowledged it, because I care about what other people think. I also want to know the opinions of other parents of gay children who are a similar age to my mother, so that some day I can find a way to tell her. myredstar.com

SUPERSTITION

AND TRADITION While superstitions aren’t limited to All Hallows’ Eve, Rose Michael takes this particularly spooky time of year to explore the common superstitions prevalent in Chinese culture.

I

f you see a chimney sweep in Poland, you'd better quickly find someone wearing glasses, or you’ll face certain bad luck. Don’t leave your hat lying on the bed in Spain, as it’s a particularly bad omen. Expect a shower of misfortune if you open your umbrella inside an English house. Every culture has its own superstitions, and China is no exception. In the Middle Kingdom, superstitions continue to hold a place in everyday life. License plates and phone numbers are not just random collections of numbers, but determiners of fate. Well, not quite, but some are considered luckier than others.

16

myredstar.com

The number 6 is considered lucky in China because 六 sounds like 流 (liú), which means ‘flow’, while the number 8 (bā) sounds similar to the character 发 (fa) which means wealth or fortune. The more 6s and 8s the luckier, so acquiring a phone number or license plate containing 666 or 888 can set you back more than a few kuai! Numbers containing a lot of 4s, however, are cheap and plentiful: the word ‘four’ is a homonym for ‘death’ in Mandarin, and hence very unlucky. If you’re ever invited to a Chinese wedding, be sure to remember these lucky and unlucky numbers. Money should not be gifted in denominations of ‘4’.

door, or have a mirror in the bedroom,” Min advises on the art of encouraging a positive flow of energy through your home.

Chinese superstitions are also linked to more enigmatic elements of traditional culture. “I don’t give much attention to number superstitions, but I am influenced by feng shui,” explains Min Luo ( 罗旻 ), an employee of QAIS. Feng shui has become fashionable in the Western world in recent decades—a quick internet search pulls up numerous articles offering instructions on ‘How to Feng Shui your Bedroom’—but this ancient discipline has influenced Chinese life for millennia. Initially a technique used to choose suitable settlement sites for farming families, feng shui has evolved into a style guide for contemporary living. “You shouldn’t place your bed facing towards the

Other traditional Chinese superstitions are closely related to national festivals. Chinese New Year may seem the perfect opportunity for a fresh start, for example, but some believe that throwing away rubbish on this day represents a loss of wealth in the new year. On the other hand, carrying willow branches on Tomb Sweeping Day—the first day of the fifth lunar month—may bring good luck while sweeping family members’ tombs and paying respect to the dead through prayer, leaving gifts of fruit and flowers and burning joss money. The tradition of burning ‘ghost money’ is one of the most intriguing practices taking place in China today. Often burned on the anniversary of an ancestor’s death, as well as on numerous other occasions throughout the year, this paper money is believed to be transferred to ancestors in the afterlife, ensuring their good fortune. Interestingly, ‘ghost money’ has also adapted to match modern trends: particularly in rural areas, you can find ‘ghost paper’ credit cards, cars and even iPhones! Although traditions do transform to suit contemporary lives, some superstitions can seem out of touch with modern Chinese life, emphasising an increasingly stark generation gap and rural-urban cultural divide. “I do believe there’s a generation gap; Chinese society has changed so much,”

Superstitious practices such as using dance to rid scared children of evil spirits, or inviting ancestors back from the dead for a meal on the first day of the Chinese New Year, may not seem relevant to younger generations, but this does not mean such superstitions will fade away entirely. While younger generations may not be as heavily influenced by superstition as their predecessors, there remains a strong sense of tradition and respect for ancestors which ensures that superstitious practices such as those on Tomb Sweeping Day continue to be upheld. “Improved education may mean that people believe less strongly than twenty or thirty years ago, but respect and love for our ancestors cannot be changed,” explains Jack. Superstitions are a rich element of Chinese culture, but they are by no means monolithic. China is a huge country and different regions have different beliefs and traditions which have been adapted over the years to suit modern life. But if you’re living in China, it’s worth understanding these important cultural norms. So when you’re enjoying a meal out, remember that leaving your chopsticks standing vertically in your rice bowl is a dinnertime faux pas as this resembles the image of funeral incense, and, unless you want to give the gift of bad luck, never ‘give a clock’ (pronounced sòng zhōng, which sounds the same as ‘to tend to the dying’) as a birthday present! myredstar.com

In the Qing Dynasty, it was ordered that the number of Squatting Ridge Animals should be odd, and never exceed nine. For example, the Hall of Central Harmony (Zhong He Dian), the Hall of Preserving Harmony (Bao He Dian) and the Palace of Heavenly Purity (Qian Qing Gong) all installed nine running animals. However, in order to highlight that the Hall of Great Harmony (Tai He Dian) is the highest-ranking building in the Forbidden City, a decorative little animal called hang shi was added, something unprecedented in the history of Chinese palatial buildings. Let's take a look at all

– A HAVEN OF CHINESE HISTORY Just five and a half hours by train away from Qingdao, Nanjing is a thoroughly underrated city of ornate history and captivating culture. Georgia Leach delves into the rich and winding past of this metropolis.

S

ituated on the banks of the Yangtze River, Nanjing has long held favour with Chinese rulers for its expedient location and lush surroundings. Literally meaning ‘Southern Capital’, the city has repeatedly served as the centre of command for an array of political powers, from those of the Three Kingdoms period to the more recent Republic of China, the government that preceded that of Chairman Mao. Throughout Chinese

history, this urban hub has borne witness to opulent dynastic emperors, as well as brutal domestic and foreign conflict. History has indelibly marked the face of Nanjing, gifting us with an incredible insight into China’s past that can still be seen and felt as you wander through its streets. The abundance of cultural sights available in the city can be overwhelming; unless you intend to have an extended stay in

Nanjing, you will have to narrow down to a few highlights. For those staying in the centre of the city, the Confucius Temple ( 夫 子庙 Fu Zi Miao) is right on your doorstep. Best visited in the evening when the crowds have thinned and the adjacent Qinhuai River is magnificently lit, the temple is an ancient sanctuary of Confucian study, with a history stretching back to the Jin Dynasty in 265–420 CE. Despite being rebuilt in the later Song Dynasty, the temple boasts myredstar.com

many early tablet inscriptions, pieces of calligraphy and hanging scroll paintings— an academic and artistic treasure trove. The city’s newly-built subway provides an outstandingly fast and convenient way to get around the sights, with subway stations linking key areas. If you find yourself with a full day on your hands, take Subway Line 2 or 3 to 大行宫 Da Xing Gong Station, and spend the morning wandering around the immense Presidential Palace ( 总统府 Zong Tong Fu). This grand building served as the office and residence of the Sun Yatsen, president of the short-lived Republic of China, from 1927 until 1949. It encompasses a sprawling collection of office buildings, temples and gardens, that preserve a perfect snapshot of the Republican government before it fled to Taiwan in 1949. Displaying fully furnished offices and political meeting rooms, the palace acts as a museum to Sun Yat-sen and his party, and provides an excellent chronicle of the Republican Era. Once you’ve finished browsing, exit the palace and make your way to its western side where you’ll find the Nanjing 1912 Commercial Street, a diverse collection of restaurants, bars and shops where you can relax and have a bite to eat. In the afternoon, take a short trip across the

road to the Jiangsu Art Gallery. Featuring regular exhibitions of current artists, this gallery is the ideal place to cool off and immerse yourself in Chinese art, both modern and traditional. Despite offering free entry and an ever-changing collection of Chinese works, the Jiangsu Art Gallery remains relatively under the radar, a hidden gem for in-the-know art lovers. As the day draws to a close, be sure to visit Jiming Temple, only a 20-minute walk north of the Presidential Palace. Climb the short flights of stairs up to the main temple, and unwind in the peaceful, incense-rich atmosphere. The 10 RMB ticket includes three incense sticks of your own, allowing

you to follow the sacred ritual of lighting the joss sticks and planting them in the enormous bronze vessels that stand outside the temple. Another essential day trip is to the Purple Mountain, where the Sun Yatsen Mausoleum and the Ming Tombs can be found. Take Subway Line 2 to 苜蓿园 Muxuyuan Station, and follow the signs to the ticket office at the base of the mountain. While individual tickets are available for each site, it is possible to buy a package ticket for 100 RMB, which includes Meiling Gong (a museum devoted to Madame Chiang Kai-shek), the Ming Tombs and the Linggu scenic area. site can help you tailor your own route, depending on your desired trip length. There are small shuttle buses between each site, charging 10 kuai per journey, but for those who have time (and energy) on their hands, most of the key spots are less than 45 minutes walk apart. Don’t forget to check out out on the spectacular Sun Yatsen Mausoleum at the top of the hill; those who get to the top of the seemingly endless flight of memorial steps are justly rewarded with a breathtaking view of greenery stretching far away. After a long day of sightseeing, the local delicacy 鸭血粉丝 yāxuè fěnsī, a bowl of glass vermicelli noodles with pieces of set duck blood (don’t worry, it tastes like pate), provides the perfect sustenance. Enjoy this at Nanjing’s famed restaurant chain 南京大牌档 Nanjing Dapai Dang, accompanied by some delicious 煎饺 jiānjiao (fried dumplings). Venture away from tourist areas to more local restaurants for other traditional dishes, such as 小笼包 xiaolóngbāo.

The history encased in this city, however, includes one of China’s most painful memories, and a trip to Nanjing is not complete without visiting the Nanjing Massacre Memorial Hall. One of the darkest episodes of Sino-Japanese history, the museum commemorates the local lives lost during the Rape of Nanjing in 1937, when Japanese troops pillaged the city, raping and killing tens of thousands who had not already fled. The museum can only be described as harrowing in its vivid portrayal of widespread atrocities, but the Massacre it is an integral part of Nanjing’s story, and is fundamental to understanding w city’s turbulent, yet beautiful culture. Nanjing is the heart of China’s past, a city of cultural refinement and splendour, which has attracted power, art and intellect for thousands of years. Embodying the glory of the Middle Kingdom, Nanjing invites you to indulge in its cuisine, take pleasure in its unique charm and absorb its opulent history.

The Magic Flute 10 September–20 November // 7:30pm // Grand Theatre Mozart’s last and most beloved opera, the fairytale The Magic Flute, or Die Zauberflöte, has rarely left the stage since its first performance. Now, in a celebration of the opera’s 260-year anniversary, the Honorary Lyrical Opera Company of Melbourne are bringing this tale of wonder to vibrant life at Qingdao’s Grand Theatre. The Magic Flute plays out in an enchanted land that combines elements of old Germany, France, Austria and Italy. Featuring traditional costumes and stage sets, this rendition has been lauded for the actors’ rich, pure operatic singing. The story begins when the Queen of the Night challenges the idealistic Prince Tamino to help her brave daughter Pamina break free from the prison of the High Priest Sarastro. Tamino, accompanied by the mischievous, flute-playing bird-man Papageno, sets out on his quest. Just as they realise their growing love for one another, Tamino and Pamina must fight to be together by winning a series of impossible trials. This story tells of a battle and a dance between goodness and evil, illumination and ignorance, and shadows and light. Audiences loved The Magic Flute in Shanghai and Guangzhou last year—so don’t pass up the chance to be spellbound. Sophie Comber

Chinese tea has a past thousands of years old. Only this year, evidence of tea was discovered in the Xi’an mausoleum of Emperor Jing—hence, the tradition of tea drinking began as early as the Han Dynasty. According to legend, however, the fabled Chinese herbalist emperor Shennong invented the tradition in 2737 BCE. Throughout Chinese history, tea has been long used as medicine; as an imperial drink, later also as a drink for the common people; as a subject of classic treatises by famous scholars and philosophers; and even as a primary trade good along the Silk Road. In China, people love to drink tea, for it is a very important part of Chinese culture. Beyond enjoyment of a fragrant, delicious hot drink, Chinese people give each other tea for many purposes. Gifts of tea may be a sign of gratitude at weddings, a show of respect to older generations, a warm welcome for new visitors or neighbours, or even a way for a misbehaving child to gain forgiveness from their parents.

THE ESSENTIAL GUIDE

TO QINGDAO VISAS

The mention of the word “visa” is usually enough to make any waiguoren groan; China's bureaucratic requirements can be puzzling at the best of times, and now there are rumours of an overhaul in the works that will “classify” visa-hunting foreigners as A, B, or C grade workers. Ellie Bouttell turns to Chris Liu, a knowledgeable representative of Global Golden Bridge (GGB) Enterprise Management Consulting Service, to shed some light on the rules and reasoning of various types of visas commonly obtained in Qingdao.

28

myredstar.com

What kind of visas can foreigners here get? Non-tourist residents here will have either a working (Z) visa, dependent (S) visa, business visit (F or M) visa, or student (X) visa. Of these, the working visa is the most commonly seen. There are two types of working visas available: the Alien Employment Permit, and the Foreign Expert License. The two are not very different in practice for the individual holder, but they are granted for different types of employment, and are dealt with by different government departments. The Alien Employment Permit is for those working in business, whereas the Foreign Expert visa is for those sharing ‘expert knowledge’ from abroad—referring most commonly to teaching English.

What should you know about the working visa? There are strict requirements for the Alien Employment Permit, including an age bracket (24-59), degree (Bachelors or above), and 2 years of full time, salaried work experience. The registered company must be licensed to hire foreigners, have more than US$100,000 worth of registered capital, and at least one Chinese employee with social insurance. Alien Employment Permit applicants from the USA also have to provide an FBIstamped certification that they have no criminal record; state-level records don’t make the cut. Foreign Experts must have 2 years of teaching experience under their belt; non-native English teachers need a TOEFL certificate. Furthermore, GGB confirms there is a 5-year cap on the time a teacher can remain in Qingdao; in some cases a visa may be extended to 6 years, but rarely beyond this.

广告 • 城市

What’s with all the requirements? Many small changes to the visa application process and its conditions have been implemented in the past 5 years, and their main purpose is to formalise the operations of foreign companies in China. Mr Liu explains that it used to be very easy for foreign workers to obtain visas in China, but that now standards for business are being raised, to better regulate the economies of China’s larger, international cities. Requirements are less strict for English teachers, but the 5-year working limit exists because ‘teachers are welcome, [but] higher level investors are more welcome.’

And what's going to change in the overhaul? What do the A, B and C grades mean? In September 2016, it emerged that the State Administration of Foreign Experts department were planning to switch up the visa system, and classify foreign workers as grade A (highly skilled and innovate or creative workers), B (university educated workers such as teachers) or C (minimally skilled workers). The logic, according to state media, lies in the Chinese government aiming to “encourage the top, control the middle and limit the bottom”; that is, limiting the number of non-degreeholding workers that can access the Z visa, thereby improving the quality (on paper) of China’s foreign workers. Policy details are still being ironed out, so it is unlikely that changes will be implemented for a year or more, but the signals all point toward a tightening of control at all but the highest levels.

Is it easy to switch visa categories once you’re in China? In most cases, no. Working (Z) visas can be extended from within China. If you live and work in Beijing, the short-term (F or M) business visas can be changed into the longer term Alien Employment Permit from within the country; but in Qingdao, this is much more difficult. A dependent visa can only be changed into a working visa from abroad, where all the necessary documents are available. A teaching visa cannot be changed, into a management working visa for example. A student visa can’t be changed into a working visa without intervening work experience, which necessitates going to a different country; but a long-term (more than 3 months) student visa can be extended relatively easily. A short-term student visa can only be extended once.

Which mistakes most commonly delay visa applications or renewals? Incorrect documents will always cause problems, so triple-checking every document is crucial. Outside of this, American applications can be slowed down vastly by the FBI certification requirement, so make sure that you apply early. Crucially, all foreign-language documents submitted to the visa departments in Qingdao must be translated into Chinese. This doesn’t have to be done by a particular agency, just one that is qualified to translate foreign documents.

// CITY /

Are there any restrictions on the family visa? There is no limit on the number of dependents. Immediate family members can all be included under one Z visa holder; the only requirement is that every adult must have a health check. Young children don’t need a health check, but they do need proofof-relationship documents such as birth, marriage or trusted adoption certificates. A crucial point of this is that unmarried partners do not qualify for a dependent visa.

How do permanent residence permits work? If you decide to make China your long-term home, perhaps because you have settled perfectly here, or have a Chinese spouse and extended family in the country, you can apply for a permanent residence permit. Your marriage (to a Chinese national, or to someone who has a permanent residence permit) must have lasted 5 years, and you must have a stable place to live.

Thankfully, China has worked hard to make train travel convenient, affordable, and fast. With a few tips from Ruth Greene to get you started, you will soon be inspired to travel to places you never considered before!

1. Use the internet to your advantage For many reasons, I don’t purchase my train tickets online. However, the internet can still be a great tool. Just drop your train route into Bing or another search engine and you should get a timetable. Once you have the timetable, see which trains best match your schedule.

3. If possible, purchase your return tickets at the same time Thankfully, policies have changed in recent years so that you can now purchase your outbound and return tickets at the same time. Remember to look up the return train timetable before heading to the travel agency.

G Trains are high-speed trains with seats similar to an airplane, though more spacious. Z Trains are much slower and usually include sleeper cars. The accommodations are much older and simpler, too. For example, a second class ticket might be a hard wooden bench seat.

4. Children travel for free or half price Children under 120 cm tall can travel for free, but they aren’t given a seat. They have to sit on your lap unless you are lucky enough to have an empty seat nearby. Tickets for children between 1.2 and 1.5 metres tall are half price, so we find it more comfortable to buy the extra seats.

On a piece of paper, write down your top three preferred trains by name (for example, G188) in order of preference and the date you want to travel. Take this paper with you to the travel agency. 2. Utilise your local travel agency Travel agencies all around Qingdao sell train tickets. Keep an eye out and you’ll probably find one near you. This eliminates the hassle of traveling across town to the train station and waiting in long lines. The one I use is next to Tommy Boy Coffee near the corner or Yan Er Dao Lu and Xiang Gang Lu (across from Crown Plaza). They don’t speak any English, but they are friendly. Simply take your paper with you and point to the train you prefer and the date. Use simple Chinese or even just your fingers to tell them how many tickets you want. They will bring up the train on their screen to see if enough seats are available. If that train is sold out, point to your next preferred train on your list. Pro tip: 无座 means without seat. Although they cost the same price as a second class ticket, they do not guarantee you a seat and you may be standing for the entire journey. To avoid this, always make sure your ticket has a seat number printed on it before you leave the travel agency.

5. Bring cash Many travel agencies only accept cash. Make sure you take enough cash and even a little extra, as many agencies charge a processing fee of about 5 RMB per ticket. 6. And your passports You will need your passports to purchase tickets and also to travel. Make sure the names and passport numbers on your tickets match your passports. Children’s tickets will not have names or passport information printed on them.

// QINGDAO FAMILY /

8. Know China’s peak travel times Traveling during Chinese holidays such as Chinese New Year and National Day Golden Week, as well as the first couple weeks of summer vacation, can be a nightmare. Tickets sell out very quickly, stations are hectic, and trains are crowded. While not impossible, it might not be the best choice for your first train adventure. On the other hand, since many Western holidays are not observed in China, Christmas is a great time to travel (albeit very cold). 9. Pack snacks There is a very limited selection of food available on the train and most of the choices are not very Western. Bringing your own food is perfectly acceptable, though. So pack some snacks for the trip. Hot water is available on the train for making instant coffee and ramen noodles. 10. Arrive at the train station about 45 minutes before your departure time Depending on the train station and the route, boarding will begin up to 20 minutes in advance. Although security is usually faster and simpler than at an airport, you will want to plan time to make sure you get to the right gate and platform. Once you are in the station, simply look for your train number on the electronic board and follow signs to the platform.

7. Book early Although train tickets don’t fluctuate in price like plane tickets do, it’s a good idea to purchase your tickets a week or two in advance to make sure there are enough seats available. That being said, if you’re feeling spontaneous you can usually buy tickets at the train station up to an hour before a train leaves, so a lastminute adventure may still be possible!

ALL YOU NEED TO KNOW ABOUT

THE MONTESSORI PROGRAM

M

Qingdao Amerasia International School Principal Eric Dustman with Rosemary Gosse introduces the innovative and holistic approach to early-stage schooling that is the Montessori Program, and explains its benefits. 36

myredstar.com

ontessori programs are gaining favour and growing rapidly throughout China, some even within the greater Qingdao area. As professionals trained and credentialed in the philosophy and methodology, we believe this movement toward a more childcentred and holistic approach to educating children is beneficial and will support the advancement of the greater good. Here is what to look for when you seek to find a Montessori program for your own child. Authentic Montessori programs are designed and built to provide the child with the skills and abilities needed to

participate successfully in society. This requires a focus on the child’s physical and social development in their early years, as these directly support the child’s growing capacity to critically think as they age, and thus affords the ability to acquire greater knowledge for application in the real world. Entry into a preschool environment is the child’s first independent step away from the home environment and into the wider world. The child begins by developing relationships with others outside of the family and learns to deal with the social situations they encounter. This is the foundation of emotional competence

// QINGDAO FAMILY /

and the growth of the independent self. Successful transition into this new environment provides the child with the confidence they need to explore further. The role of the teacher in a preschool environment is to create a connection between the child and a carefully prepared environment in order to support the child’s social, emotional, intellectual, and physical development. This is done by introducing high-content, manipulative and concrete materials to the child: in short, clear lessons, which demonstrate proper use of the material. The child is then free to explore that material, extend their inquiry further, and discover personal ideas about the world before them. In the classroom, the challenges are not only intellectual but physical as well. Moving about the classroom provides the children with opportunities to develop gross motor skills; while carrying materials, manoeuvring obstacles and engaging in walking on the line activities. Fine motor skills are developed through working with scissors, paint, pencils and chalk. Dramatic and creative expression is encouraged and social skills are developed while working in small groups. In short, high-quality Montessori programs focus on providing for the developmental needs of the child. They recognise and support the needs of the individual within prepared environments. They encourage and support social interaction within the group and they recognise the significant roles that self-expression and movement play in learning.

So, despite the rapid growth and enthusiasm surrounding Montessori education in China, it is important to ensure that the program you are choosing for your child is right, from the way it makes you feel to the education it professes to promote. Ensuring for yourself that the educational philosophy and methodology aligns with the three pillars of Montessori education as described above are essential. Determining that teachers are qualified and credentialed and that the school adheres to standards of authentic Montessori programs as defined by the American Montessori Society or another association offering accreditation is incredibly important too.

To learn more about Montessori programs and the possibilities that they provide to children, please visit www.qingdaoamerasia.org/ academic-programs or www.amshq. org. Author Biographies Dr. Eric Dustman is the Principal at Qingdao Amerasia International School and oversees the implementation of both the Montessori programmes (Ages 1.5 – 6) and the International Baccalaureate programmes (Ages 3 – 18). Mrs. Rosemary Gosse, M.A., is the Montessori Coordinator at Qingdao Amerasia International School and oversees the delivery of the Montessori curriculum. She is also Director of the Qingdao Baishan Montessori Teacher Education Institute, offering Montessori teacher training at the Early Childhood level.

PREPARING FOR A MEDICAL EMERGENCY In Qingdao, medical services are not what many expats are used to in their home countries, with different systems, etiquette and costs, not to mention the language barrier. Needless to say, things can get complicated quickly, but one thing you can do is be prepared! Here is Cat Kung’s advice on how to be prepared in case of a medical emergency.

1

Check out the local hospitals before an emergency strikes

When you first arrive in Qingdao, check out the local hospitals and make an appointment with a doctor. Find out which hospital is the closest, and the fastest way to get there. If you have a medical

38

myredstar.com

emergency, assess the severity of the accident, the time of day and the traffic to determine your course of action.

2

Stash emergency cash

Many professionals in China suggest always having emergency cash on hand. One

reason for this is because even if a hospital will accept your insurance, they may want a deposit before providing services. It is suggested that you have substantial emergency cash at the ready, with amounts as high as 5,000-20,000 kuai. This may seem excessive, but in an emergency in China it could make all the difference.

INTERCITYHOTEL QINGDAO: UNITING GERMAN AND CHINESE CULTURE Sophie Comber interviewed the General Manager of the new IntercityHotel Qingdao, Michael Franke.

G

erman luxury hotel chain IntercityHotel is making its debut in China, choosing Huangdao for its unique blend of German and Chinese culture and history. Specialising in conferences and events, the IntercityHotel Qingdao is located near Huangdao’s main train station and the seaside promenade, close to the intersection of Shuangji Road and Tuanjie Road, placing it nearby the best shopping, dining and sightseeing opportunities the city has to offer. The General Manager, Michael Franke, asserts that IntercityHotel has found a brilliant partnership with the owner of the Sino-German Eco-Park, the community in which the hotel is located. The Eco-Park is a Chinese-German architectural and business cooperation based on sustainable development, a perfect fit for the first IntercityHotel in China.

“I like the architecture from Qingdao, this mix of German and Chinese styles gives Qingdao something different to other Chinese cities,” Mr. Franke explains. The new IntercityHotel in Qingdao plans to have a special opening promotion on food and accommodation involving an opulent German dinner buffet and fantastic room deals. Taking advantage of Qingdao’s unique combination of German and Chinese heritage, German food will be a prominent feature at the hotel. Mr. Franke reveals the IntercityHotel Qingdao will have the first Erdinger Bier & Brezel Wirtshaus in the world outside of Erdinger city, with the noble mission of bringing original Bavarian beer and cuisine to Qingdao.

“Qingdao is the city of beer, and Erdinger is one of the most popular beers in Germany and the world,” he said. Mr. Franke sees Qingdao as one of the most beautiful cities in China. Guests visiting for business or pleasure alike are promised an unforgettable experience of German hotel culture and service. The parent company of IntercityHotel, the Steigenberger Hotel Group, proudly confirms that the new four-star IntercityHotel will have 281 fully equipped 'green rooms'. Guests will be greeted in a large lobby extending over an area of 400 ㎡ . 500 ㎡ conference rooms will be available to meet the needs of business travellers, who will also be able to relax and keep fit in a 100 ㎡ gym facility. The new building is scheduled for completion and the accommodation of its first guests very soon. The IntercityHotel Qingdao will also be the first IntercityHotel in the world designed by renowned Italian architectural company Matteo Thun & Partners, incorporating modern, fresh decor with “lots of space”. Mr. Franke emphasises that the new IntercityHotel will focus, above all, on understanding and effectively responding to customers' needs and concerns. “Most important is customer service, customer service and customer service!” myredstar.com

AUTUMN

FRUITS Grapes ( pú tao 葡萄 ) Season: August - October Green grapes are everywhere in autumn and have the bonus of looking great on display. Check out the ‘mini’ variety of green grapes at Carrefour. They are extra sweet, seedless and cost less than 10 kuai a bunch.

Nowadays, consumers are used to getting the fruit they want, when they want it, even when it’s not in season at local supermarkets. But the fruit that’s in season tastes better, costs less, and is more environmentally friendly. Here is Ellie Bouttell’s guide to fresh fall fruits.

Pomelos ( yòu zi 柚子 ) Season: September - January This citrus fruit has a thick outer skin that peels away easily and a cool, bitter, grapefruit-like flavour that’s fantastic in thirst-quenching summer juices. In Chinese medicine, the pomelo is cited as good for soothing sore throats—a perfect home remedy to try this autumn.

Persimmons ( shì zi 柿子 ) Season: September - December These lovely orange-coloured autumn fruits are often confused with tomatoes, but they can be distinguished by their brownish leaves. Their delicate sweetness makes them great for jams or chutneys, or for adding an unusual flavour to salsa or guacamole.

Pomegranates ( shí liu 石榴 )

Jujube or Chinese Dates ( zǎo 枣 )

Pears ( lí 梨 )

Season: August - October The use of pomegranate as a wine flavouring goes back thousands of years, and the multitude of seeds inside have been used in Chinese culture to represent health and fertility. Separate the bright red seeds from the flesh of the pomegranate in a bowl of water (the seeds will sink, while the inedible flesh should float) and use their sweet, tangy flavour in smoothies, salads or just as a sweet topping.

Season: September - November The jujube is a small, hard, brown fruit, with green parts when it isn’t yet ripe. They have a sweet, tart, apple-like flavour, and a good crunch if eaten raw. Also known as 'red’ or 'Chinese’ dates, they can be pitted, soaked and dried to create richly-flavoured megaraisins, or sliced and added to almost any meal as a fresh-tasting vegetable.

Season: September - October Pears in Qingdao are smaller, brighter in colour and crunchier than the supermarket conference pears common in the West. Qingdao pears taste delicious on their own, or peeled and sliced into a salad with nuts and mature, crumbly cheese.

Club New York’s resident mixing genius Ben has created a house cocktail for one of REDSTAR’s longstanding favourite bars. A refreshing blend of ice-cold triple sec and red wine is set off by sweet and zingy citrus fruits, freshly sliced and squeezed into a heavy glass tumbler. Watch as the wine diffuses beautifully to turn the rest of your drink a sunset pink—that is, if you can resist taking a gulp of this summer thirst-quencher straight away.

This is one of my favourite restaurants in town - all the food is halal, and their food is really good. They have great pide, with well-spiced toppings, made from flatbread that they bake fresh daily. The inside has a laid-back colour scheme of reds, browns and golds, super comfortable chairs, and Turkish music playing in the background. It’s the perfect place for a dinner date.

If, like me, one of the things you like best about China is the constant availability of perfectly made, mouthwatering dumplings, then this is the place for you. It’s a simple canteen-style eatery, with a small menu and drink selection, but everything here tastes fantastic. I like the silken tofu in chilli oil, and shrimp dumplings. Make sure you ask for la jiao with your dumplings; they mix the soy sauce and chilli together for you, and it tastes amazing! It’s a good place for a chilled lunch. They have WiFi too.

Hidden on Jiangxi Lu, this unpretentious Chinese restaurant serves a great selection of Chinese dishes. Specialising in northeastern Chinese food and shuijiao dumplings at a reasonable price, the portions are enormous, so don’t order too much — this is food you definitely don’t want to waste. The 红烧肉 (hong shao rou, braised pork in brown sauce) is beautifully tender and tastes delicious; try it with some yuxiang qiezi (aubergine in sweet sauce), washed down with the house wheat tea.

The district now has a direct link to Qingdao's old town - the Jiaozhouwan tunnel has cut journey times to around 20 minutes and more or less put the old ferry terminal out of business. Jiaonan, to the north, is linked to the eastern municipality by the longest bridge in the world (41.58km, completed in June 2011).

Despite boasting the best beaches in Qingdao Municipality, Huangdao has for recent years played a quiet second fiddle to the hustle, bustle and commercialism of the downtown area. Recently however, changes in the city's infrastructure are set to fling this sleepy suburb into the 21st century.
