Mixed Martial Arts (MMA) is a relatively recent development in the arena of competitive combat sports. A fusion of all of the most viable ways of breaking a competitor in half, fighters can use any (unarmed) means necessary to defeat their opponent jiu-jitsu, karate, judo, wrestling and so on. With grappling and leg strikes differentiating the new sport from western boxing, and its downright brutality separating it from traditional competitive martial arts, the sport has found a very lucrative niche. Fights generally consist of an upright portion, where competitors rooted in striking arts such as boxing fare best, and the ‘mat’, where grapplers and wrestlers have the advantage. Naturally, the sport’s origins are rooted in multiple disciplines, but most enthusiasts will cite the Gracie Challange, a vale tudo (‘no rules’) open invitation, first laid down in the 1920s by the Brazilian-Scottish Gracie family, a come-on-if-you-think-you’re-hard-enough call to anyone willing to go toe-to-toe with the founders of the family style of jiu-jitsu, as pivotal in the inception of the sport. The organisation largely credited with the sports’ massive surge in popularity is Dana White’s Ultimate Fighting Championship (UFC) which, since it began broadcasting on pay-per-view in 1993, has seen ratings overtake boxing in the US. In fact, the discipline (or lack thereof) was described as, “The world’s fastest growing sport,” in the New York Times earlier this year. White and Co. bought an ailing fight promotion group that traded on, “The rules are - there are no rules!” type slogans, a group that had garnered a reputation for airing savage, ruthless brawling on TV in the US.

Under White, rules and round times were defined, and a business framework established that converted what was essentially bar-room brawling into a more athletic spectacle that trades on challenging masters of ancient disciplines to put their skills to the test in the most extreme circumstances. It’s even been suggested by some of the sports’ practitioners, that because it pits different fighting styles against each other in real combat situations, the development of martial arts since the UFC’s televisual inception in 1993 to today, is more than that in the 700 years previously. Though impossible to define empirically, certain art forms (sumo, for instance) have simply proven less useful than others (Brazilian jiu-jitsu).

The Squared Circle In Qingdao Steven Douglas, of Sydney, Australia, has notched up over 32 years’ experience in full contact competition around the globe. Now 51, he says his fighting days are well and truly behind him but like many retired fighters he continues to put time and energy into the sport by refereeing and training the next generation of combatants at his gym at May 4th Square. His form is perhaps the most physically demanding of martial arts, Muay Thai, an art in which practitioners are expected to masochistically strengthen their bodies through knocking their shins and forearms against wood, while enduring the usual fitness regime of jump rope, weight training, and shadow boxing required to knock seven shades out of other people. He took us through recent developments at his gym.

REDSTAR: Do you have any fighters training to compete soon? Steven: I have five good fighters: Two Chinese boys,

two very strong Russian boys and a girl from Slovenia. RS: Tell us more about the Slovenian woman. Steven: Her name is Anita Sinko and she is 25 years old. She studies at Qingdao Uni and comes here every year. One of her friends brought her to my gym last year. She asked me if I would train her.

RS: Have you trained women in such a tough sport before? Steven: I always encourage anyone to stay fit, but Anita totally surprised me. After the first ten minutes in the ring I knew she was a trained fighter. I later made some enquiries about her background and discovered she was Bavarian boxing champion 2006 and 2007. She was also the German kickboxing champion 2006 and second place in 2007. She retired from the sport and then met me. She fought for the German kickboxing title in June this year and got 3rd. The German national coach was so impressed with her she has been invited to fight for a World Title in Scotland in November. [At time of going to press] Anita will fight the Xi’an Sanda champion at the end of August in Xi’an, and win, lose or draw, we will then fly to Singapore to fight in the Martial Combat series, which will be seen on Star Sports. Martial Combat is the biggest fight series in Asia, viewed by millions of fight fans worldwide. Women are now recognised as true warriors in the sport and Anita will have her hands full in Singapore.

RS: Steve that’s great news. Can you brief our readers on the two Russian boys? Steven: Ivan is 21 years old and Marat is 20. Both are gifted athletes and both live in Qingdao. You will hear a lot about these two and both will feature on the fight card at Qingdao University Stadium in October. When I confirm the date we’ll let you know - stay tuned.

Eight Limbs 八爪拳 With a history that goes back centuries, Muay Thai originates in Thailand where it was developed for soldiers who had lost their weapons in battle. Eventually skilled practitioners became local icons, and would perform at community gatherings and celebrations. competitive fighters come from peasant backgrounds. It’s also iconic in Thailand as the nation’s national sport and a valuable entertainment export. Visit Qingdao’s Naval Museum 参观青岛海军博物馆 Seen from afar, the Chinese war ships’ cannon look deadly and the sea is as blue as a child’s prized marble. (But the approaching observer realises that the Qingdao Naval Museum’s displays are benign, and the water green as a Tsingtao bottle.) The museum sprawls along the coast in the city’s old quarter. Opened in 1989, it is the only exhibit of the PLA Navy’s complete history. Even at a distance, one spots the gray hulks of frigates and cruisers standing in silent sentinel here in the Chinese navy’s northern port. Interested in an off-beat date, or in learning about Chinese military history? Pay 60元 at the front gate and in you go. Here is a chain and anchor several meters tall weighing many tons. It looks like it pins the Earth in space. Nearby is the Naval Uniform Exhibition Hall. Populating it is crisply dressed, strapping personnel - sort off. These mannequins model past and present uniforms. An admiral sports iceberg white trousers and a jacket accented with gold buttons. Special commandos garbed in dark green or black diving suits with bulging air tanks resemble - deadly - giant frogs. Outside is the Weapons Exhibition Area featuring 150 items. Here sits a landing craft with a rounded front and giant top side propellers mounted on the rear. The pointed tip of guided missiles angle skyward toward hypothetical targets. This area also houses a small airfield of Chinese aircraft. Inert with their wings swept back, the silver jets resemble dead moths. Nearby is the Red Flag limousine formerly used to chauffer high ranking officials. It is black, boxy and resembles a Russian design, much cruder than the luxury limousines imported today.

Cast your eyes toward the pier and note that black metal horizontal line alongside it. This old submarine is open for inspection. Climb on its back over to an access hole. Gingerly step down its vertical ladder. Now you are in a tight, low tube of dials, switches and levers. The inside doors are ovals cut into metal partitions. You must turn side ways and flip one leg over first to head toward the front torpedo room. The sub also reeks of – what? – the oil, dust, sweat and metal from its glory days now long gone. Exit from there and note the large gray frigate and cruiser. Now the vessels are deserted, their missile launchers deactivated. One imagines that their proud ex-captains and crew must be aged, too, reminiscing in a seaman’s club about how they stood on the deck and watched the driving bow churn up a gushing wake. Nearby is Little Qingdao island. One walks seaward along a paved road for hundreds of yards to the spot of rock several acres large that holds a white light house. At the island’s edge, the sea slows as it washes over large stones and drips in dozens of tiny waterfalls.

Children’s Playground at Zhi Wu Yuan 植物园内的儿童乐园 The white horse curves its legs to thrust forward only to circle backward to its starting point - all while still. How can these paradoxes be? Ask one of Qingdao’s precocious children, who might answer that the steed is part of the carousel - one of many sections - at the large kid’s playground in the Botanical Garden, just south and west of Zhanshan Temple. Who says you cannot ride on the moon? Nearby is that half that body, two metres between tips, cast in metal and hanging from a chain. Another station will appeal to astronauts in training. Sit inside space ships festooned with round, red lights and a central metal arm will raise and lower your craft in a fast circle. Baseball stars might be skilled enough to toss bean bags into tea cans or white soft balls into white drums whose taught bottoms easily pop them out. A deft wrist flick might cause a plastic ring to fall onto a bottle’s neck. The thrower can win a five foot, blue and white stuffed whale. Other brave hearts might ride the pirate boats. As a visitor observes them, the machine noisly whirs to life and swings the pods in a full circle – better try that before lunch, and keep cell phones, keys, wallets etc secure! Romantic adults wanting to share an experience might

use their feet to push the paddles on two-person boats, their yellow canopies as bright as their “Magic in the Water” name.

Part of the playground climbs the mountainside. A dry ravine twenty meters deep cuts into the earth lengthwise, with an unrailed, stone bridge over it. Higher up is a ride where the person sits in a small cart that zips up the hill and curves downward again along a rail. Nearby is a cable car that carries one to the mountain top. Its base tower juts up from the roof of a round tower, part of a gray stone castle that also stores gourmet, imported wines. Below that is a bungee jumping cliff that stands over a twenty meter drop.

If all that activity tires you, then stroll to the park’s west side botanical garden to rest. One can enjoy the small pine trees rooted in the long grass, behind which is a ten meter high terraced wall. Below the wall is a round stone patio with a fountain. From here, one can look down at Qingdao’s red-tiled roofs, temple pagodas whose tiers resemble a stack of umbrellas dropping in size, and cracker box sky scrapers. Hear the small birds chirp, the blasting bus horn from the access road below and the jet plane’s muted roar. At least their feathery companions serenade the young couple picnicking nearby under a heavenly canopy of blue. If they tire of sitting, they might walk downhill for a few minutes to the gazebo.

Farther down is the way out. There a wooden bridge spans a pond with hundreds of slim gold fish that resemble red flames in the green water.

Zhanshan Temple 湛山寺 The mountain slopes upward from Qingdao’s Central Business District like a green sheet held in the tug of a breeze. Qingdao’s famed Zhanshan Temple complex, spread over several acres and the city’s largest, nestles at its base.   Walking up a stone path, the visitor’s eyes zig zag upward across the contours of a 7-story pagoda. At a black brazier, garbed in a University of Arizona sweat shirt, a girl lights incense and kneels before the tower. Behind the pagoda are two impressive felines. They are ten foot tall guardian lions, their necks sashed in red. The carver ensured an absent tribute to his skills as the observer quails before the four bulging eyes that he hewed into the stone beneath virile, wavy manes. Now the visitor steps through a round door neatly punched into a wall to encounter a monk whose wheat coloured feet, spindly hands and bald head protrude from his mustard-coloured robe that wraps his thin body. Nearby is the Hall of Three Saints, with its layered pyramids of plump apples and the gentle sound of murmuring. The voices come from the Preaching Hall next door where a line of 25 chanting nuns clad in brown robes faces a similar troupe of monks in orange. Next door, the Buddha in the Recumbent Hall is propped up on his elbow – bow shaped, rose lips closed -- in a flowing robe. His other arm stretches along his side, curving into the waist, with long ivory-coloured fingers pointing at naked feet. Is he relaxing for

eternity? Behind him is a psychedelic motif of a gold sun pulsing out undulating, shiny rays. The beige stone floor sobers the opulence. Be sure to notice the nuance in The Hall of Sakyamuni. The spotless statue looks out at a brazier caked in the gray dust of a thousand offerings. As the pile rises toward ten inches, the sacred mess tells that the breeze is light here. Such serenity is not for the Hall of Celestial Kings. One monarch sits with his muscular left leg raised and half crossed, his black face under a white crown and feet clad in boots with pointed toes. He frowns as his half extended right arm clutches a long dragon curling horizontally, its mouth agape. Is the king’s companion expecting rain? He sits clutching a large, closed umbrella.

A Day Away 世外桃源灵山岛

Escape to Mystic Mountain Island When construction began on Jiaozhou Bay Bridge last year (which will connect Qingdao with Huangdao when finished), it wasn’t the first attempt at building a major bridge in the area. Just around the bay almost 1,000 years before, a famous Jin Dynasty (1115-1234) general named Wu Shu (兀术), seeking a lost love, attempted to build a land bridge connecting Lingshan Island and Jiaonan. He failed, yet the magnificent island he was attempting to connect with can be reached by ferry to this day, and is one of Qingdao’s most idyllic weekend getaways. Lingshan Island lies just 10.5km off the coast of Jiaonan and, rising 514m above the Yellow Sea, is the third highest island off the coast of China (after Taiwan and Hainan). There are less than 3,000 permanent residents on the hilly island which covers just 7.66km2 and stretches to 5 kilometers at its longest point. With its formidable peaks, lush vegetation (70% forest) and delicious seafood, it’s home to no shortage of feasts for both eyes and mouth. There is often a halo of mist lingering around the island’s main peak, and it is this magnificent scenery that holds the root of the island’s name Lingshan Dao / 灵山岛, or Mystic Mountain Island.

Residents have traditionally lived on fishing and agriculture, but it’s clear that an increasing percentage of local income is being subsidised by the growing tourism industry. Most islanders are extremely friendly and welcoming, but good luck understanding the extremely thick and distinct local accent. Visitors to the island usually grab a breadvan to check-out the various scenic spots, the peak and named rocks, including The Tiger’s Mouth 老虎嘴 and Carried by Back Stone 背来石. However, we recommend taking a long walk around the island. The entire northern section is undeveloped, covered with abandoned, terraced fields, and then there are even a few abandoned man-made tunnels perfect for headlight-wielding explorers. There are also some nice pebble-lined beaches near the main village, perfect spots to watch the sun set behind distant Huangdao’s Dazhu Mountain. Getting there can get a little complicated. It’s best to leave with an open schedule, given that if the rain and wind pick up the ferries may not run, possibly rewarding you with an unexpected extra day on the island. The cheapest way to get to Lingshan Dao is to take the ferry over to Xuejiadao (in the Huangdao

district) (薛家岛 - 15元) . Once you get off the ferry take a bus (5元) or taxi (15元) over to Jimiya Fishing Port (积米崖渔港), where you may board the hourlong ferry (30元 one-way or 50元 round-trip) to Lingshan Island. Although times and the number of boats leaving each day are scheduled to change, last we heard, on the weekends there are boats leaving Jimiya from 8:00 to 9:30am every half-hour and then at 2:30pm. Again coming back may be tricky, but there is usually an early boat around 9am and then one in the afternoon around 2pm. Once you arrive at the island, there is a 20元 entrance fee. As for accommodation, there are several small inns which should run around 30元, but don’t expect much more than a bed and some delicious seafood. There is also a “3-star” hotel on the island which seems to have fairly clean facilities for those not looking to rough it. It is said that there is plenty of potable well-water for drinking, but water for irrigation is rather limited so conserve as much water as possible.

上有天堂，下有苏杭 The best under heaven 650 kilometres south of Qingdao, the stunning city of Hangzhou wraps around the West Lake like a jeweled crown in the evening, the lights of the conurban sprawl to the northeast contrasting with the temples and pagodas around the western and southern banks. Purportedly the world’s most populated city between 1180 and 1315, it was a centre of commerce and culture during the Song Dynasty, and continues to represent China’s cultural and historical uniqueness to this day. Our hotel sat halfway up the hill that holds the mesmerising Chenghuang Pavilion, at the southeast corner of West Lake. The rain poured ferociously on our first exploration, as we hurried out of the hotel to make good on a promise to fit enough in to our 48 hours in the capital of Zhejiang Province as possible. First stop: Xiaolong bao, longxu tang and other street food at Hefang Jie, and the tourist shops and trinket vendors that surround it. The action here starts in the early evening, with eager touts shoving their snacks and wares into your face (avoid the shellfish bowls, or the early hours of the next day will see unwanted intimacy with the bathroom). Longxu tang is a local dessert that uses processed maltose to form thin, hairlike strands that are knotted around crushed peanuts a traditional version of cotton candy. That evening we ventured to many of Hangzhou’s nightspots, taking in the chilled vibe at Reggae Cafe, live music at Traveler Bar and massive (and we suspect, fake) tequilas at suspiciously named Liangge Hao Pengyou (which is the name of a popular live bar in Beijing). All three

of these bars - and many more - line the northwest corner of West Lake, and are all within walking distance of one another. By the second day the clouds had shifted and the temperature had risen to a cloistering 40 degrees. Locals here say, “Shang you tiantang, xia you Su Hang 上有天堂，下有苏杭,” or, “Above there’s heaven, below there’s Suzhou and Hangzhou.” It’s heavenon-Earth status is attributed to it largely for its main feature, The West Lake. The lake used to touch the sea, until sediment deposits by the adjacent Qianlong River isolated it. An idyllic tourist attraction, the lake is the centre of gravity around which life and leisure in Hangzhou orbits. Lakeside Leifeng Pagoda was built to commemorate the birth of a son to King Qian Chu in 975AD (though what exists there now was actually rebuilt in 2002 after the wooden structure collapsed in 1924). Famous in Chinese mythology as the resting place of Madame White Snake 百蛇传, the fairytale story in which a young man falls in love with a snake disguised as a beautiful woman, it lies just south of the tomb of Yue Fei (岳王 1103 - 1142AD), a military general revered in Chinese history, partly for his deference to authority, the legendary warrior is a symbol of obedience in China for his tattoo that read, “Serve the nation with loyalty.” During China’s approaching holiday season you could do far worse than a weekend break to Hangzhou. The town is well-equipped to cater for all types of tourists with its blend of culture, beauty and leisure options. Be warned, if you do decide to go there, you’ll have to share it with hordes of other tourists.

The City of Heaven 美丽华贵之城

Hangzhou was the capital of China during the Song Dynasty, and an important cultural centre after that, following the conquering of the south by Kublai Khan. Marco Polo traveled here during the 13th century, writing that it was “The City of Heaven.” His reports marvel at its comparative advancement to other cities of the age, including the authorities’ diligent recording of population by census and birth records, systems for fire safety, and community use of the islands on the West Lake for lavish entertaining of guests. It was also home to (or the resting place of) several intellectual and military luminaries, such as the aforementioned Yue Fei and scientist Shen Kuo (沈括 10311095AD). Shen’s work includes the first known reference to the magnetic compass needle, as well as researching and managing agricultural and water diversion projects. Frequently featuring such exotic vegetables as lotus seeds, bamboo shoots and local longjing tea leaves, it is a gastronomic adventure unlike any other in China. as good as any seafood platter available in Qingdao. A traditional appetiser of lotus seeds stuffed with rice and honey is perhaps the most filling menu item. But the tonal shifts and escalating cons (including a final one on the audience) provide enough twists, and as throwbacks go, it’s an effective and ambitious one - a bolder mix of amour fou and crude comedy than the Farrelly Brothers at their best.

I rapidly sensed how much China would mean to the world, but it took years to discover how much China would mean to me. If you have no formal study of China, what were the best books or sources of information when you taught yourself? First-hand, candid and continuous speaking with real people, from friends to officials to leaders – that’s my ‘secret.’ Obviously, I read everything available in English, certainly regarding current affairs. Most important, I learn by doing. My best learning experience was the four years I spent writing the biography of former Chinese president Jiang Zemin, interviewing and talking to many people, and doing enormous research. As an investment banker, I visit lots of companies in many industries, e.g. high tech, energy, heavy and light manufacturing. Each company has its own fascinations and special insights. I also travel in China, doing research, and I meet [diverse] people, including students, retired people, and migrant workers, officials and businesspeople.

Your book is an excellent desk top encyclopedia on China's reform era. How did you gather the data for over 40 sections? Passion to learn about China and dedication to communicate China’s true story to the world are what drive me. Over many years, I have had a great many conversations, trips, interviews which I record in my notebook, which I sometimes record and transcribe (with the interviewee’s permission). The specific work for the book was conducted over about 20 months, but I relied on a larger source of personal stories. Needless to say, I worked very hard, writing largely at night after “day jobs” in investment banking and corporate strategy. You have been to over 40 Chinese cities. Is this a record for foreigners or even Chinese people? Probably not; I’ve constantly met people who do the most amazing things in China. I’ve enjoyed my experiences, though the travel can be physically challenging. However, to really understand China, and to tell China’s true story to the world, such travel is essential. By becoming familiar with different locations, and to see these at different time periods, I can assemble various baselines to make comparisons and assess progress. Which ones stand out as your most or least favourites? Most favourite: Beijing, primarily because I have so many friends there; Shanghai, as it is becoming a world city; Qingdao (no kidding) and Kunming, for their air quality, expansiveness, and diverse beauty. Also, Anshan (Liaoning Province), for the people's pluck and fortitude though in difficult economic circumstances – wonderful public abstract art. Least favorite: I’m too polite to answer that. How many Chinese officials have you talked with or interviewed? Who made the best impression? It must be hundreds by now, not all formally, and many multiple times. I cannot honestly say who made the best impressions, as many impress in different ways. At least at senior levels - leading officials are as capable as any in the world regarding competence and knowledge. I cite someone who personifies and exemplifies reform – Dr. Huang Jiefu, vice minister of health. His life and career, his dedication (he is a distinguished liver surgeon), and commitment to improving China are a remarkable story – particularly his brave, pioneering leadership in reforming organ transplantation practices and laws. I tell Dr. Huang’s inspiring story in my book. Tell Redstar readers about your institute that promotes communication between China and America. It’s a lovely hot day in Qingdao. The type of day I would normally pack the car with tents and inflatables and take the kids to the beach, make a fool of myself attempting to body board, swallow a lung full of sea water and head home with a sunburn. But today, we’ll be heading to the ‘Phone City’ via ‘Computer City’. Our mission, while swatting through the forest of “Ni kan shi ma?” is to find the elusive iPhone 4 or at the very least a glimpse of the more common, but also interesting iPhone 4 clone. The fourth generation iPhone touts multiple new features over previous incarnations such as a higher quality HD camera, front facing video chat camera, longer battery life, faster processor, better looks and a new improved Version 4 of the iPhone operating system. Attack of the Clones The iPhone 4 not only celebrates the first time the iPhone has received a major upgrade, but also the first time Apple lost one of it’s closely guarded prototypes. The loss of the prototype and it’s high profile leak on many gadget blogs gave the Shenzhen-based clone makers a heads up on what Apple were about to launch. Shenzhen actually beat Apple to the punch, releasing their clone before the new iPhone came out; not only that, but the clone makers managed to produce a range of colours, something which Apple are still having difficulty doing.

Other than the looks this clone also has a very impressive operating system which closely resembles the iPhone’s in both use and looks. It’s not quite as ‘polished’ but still impressive, as is the WIFI, Bluetooth, internal Micro SD card slot, front and rear cameras and claimed 3-day battery life.

While walking about the computer city it didn’t take long for us to come across a store selling genuine iPhone 4‘s, although we weren’t permitted to play with it (We have done since and it is easily the best iPhone, neigh best smart phone on the market). The seller assured us the 6998元 price tag was fair, and I have to say I almost agree! While out we found plenty of 4’s for sale and apart from one slightly cheaper iPhone 4 most were a lot more, some over 10,000元!

After a short time we found our first clone and at 1150元 it seemed remarkable value for a phone that not only looks like a genuine Apple phone but also includes some of it’s functionality. The chassis looks like the real thing housing the same buttons and plugs as a real one does, only in glossy plastic this time rather than glass. The same alloy band also surrounds the device, but in this case didn’t seem to affect the signal strength as it is reported to do on Apple’s new phone.

It’s not all good however. The rear of the phone claims a 16Gb flash memory, but on closer inspection there is only 2Gb; the touch screen is very temperamental, and typing is a nightmare. We’re also unsure of the number of aftermarket applications available for this clone - meaning you could be stuck with the default functions with no way of personalising.

诱惑精灵永恒骑士 Unicornis Water of Life

China's first-ever commercial fruit spirit distillery opened its doors 28 June to a crowd of well-wishers and media personnel. Unicornis Distilleries is the product of Hungarian passion for the "water of life," wedding their nation's technique with German distilling technology and Shandong's exceptional fruits. The result is a line of beverages with the subtle but distinct essence of apple, apricot, pear, plum, or strawberry, ranging from 28-38% alcohol content (58% available with batch orders), and utterly pleasant to drink.

Managing Director Kristof Ignacz is on a joyful mission to bring these beverages to the masses, and he stopped to share some insights (and a glass) with Redstar. Schnapps, aquavit, pahlinka - what are you making exactly? Those are all names for the fruit essences that were first distilled by European monks 700 years ago. It was quickly taken up by kings throughout the continent, called "aqua vitae", or "water of life," for its believed restorative properties. It took on different names in different regions, but fruit spirit has always been renowned for its purity and simplicity - you grow the fruit, you ferment it, you distill it, you enjoy it. You are taking the essence of the fruit, and it creates a wonderful drink. Our process represents the best of these European cultural roots. We have three Hungarian distillery masters overseeing the process, and German machinery and technology for distilling. The fruits (apricot, plum, pear and apple this year) are sourced locally, because Shandong has the best produce around. Your facility is in Pingdu. What attracted you to the area? The first thing about Shandong was the access to fruits, which are in every way the core of our product. As we considered other locations in Asia, nowhere else had the kind of diversity and quality of fruits that we enjoy in the very middle of this peninsula. Added to that, it's logistically very good - our facility is located near the intersection of two major expressways, making deliveries and distribution very convenient. The government received our investment very well, offering help in registering Unicornis as a company and even helping us to find an appropriate facility to house our distillery.

But the remarkable thing has been the popularity of the product. It happens that we haven't begun distributing widely, but to see how people in Pingdu have already (after three weeks) made Unicornis fruit spirit their beverage of choice at official meals, karaoke and other social occasions, we have great hope for its reception across China. People are buying it for home and taking it when they go on business trips to other cities, often carrying 30 or 40 bottles at a time. As an example of how well it's going, we have needed to sign over distribution rights in that city to our main customer, one of the official hotels. They were already going through so many bottles that it only made sense for them to become our wholesaler. Where are people getting turned on to fruit spirit? As we've seen locally firsthand, people are choosing our Water of Life for meals, enjoying its smoothness and very pleasant flavour, and the fact that it doesn't bring on the hangovers of other high-grade beverages. It's equally good as an aperitif or as an after-dinner tonic. It's taking off at entertainment venues, too, especially the sweeter, milder Water of Love. This beverage is a slight variation on the traditional aqua vitae, with honey added for a natural, gentle sweetness and very drinkable over an evening at karaoke. Because of these trends, our biggest distribution channels right now are hotels, many of which have a restaurant, a bar and a KTV all under the same roof. But at the same time, purchases in retail outlets suggest that Unicornis fruit spirit is already making

a popular gift. That will continue to increase, as people look for something other than mooncakes to give for holidays. Our fruit spirit is totally unique in China, but not so alien that people don't know how to enjoy it! What's the best way for Shandong residents to get a case for home? Right now, people can order directly from our website at promotional prices. We'll deliver it to you, anywhere within Shandong Province. I want to send some samples home to Hungary, but it would have to be less than one litre, and less than 22% alcohol content. So we're out of luck there, until we start exporting. Where will you lead your spirits next? Right now we have a 50% emphasis on the Shandong market, and 50% on the rest of China. So we are active all over, with wide distribution starting soon in developed markets around the country. But we're moving deliberately - we're not looking for quick, high volume sales. Fruit spirit like ours is part of our cultural heritage, and has been an enduring luxury over hundreds of years. We're looking for stable local partners who understand the dignity that history has given to this product. In short, even in exciting and diverse markets like Beijing, Guangdong, and Wuhan, it proves challenging to find an ideal partner.

The undersea tunnel will become a vital transport link; allowing Qingdao to spread further, conveniently, for more spacious living and working. The entire project is expected to be finished early 2011 and to be put in public service by May/June. The drive through the 5.5km tunnel will only take 5 minutes, with the north entrance/exit being at Tuandao.

To access these (best) beaches of Qingdao you can take the ferry to Xuejiadao and a taxi for the 5 minute jump to the Golden Beach. To take advantage of the openness, the freedom of space and cleaner environment, taking a bicycle over with you is highly recommended. From Golden Beach, follow the road northeast. The road will lead you about 3km, disturbed by very few cars, keeping you close to the sea edge.

The quiet road will pass peaceful fishermen’s homes with ideal resting spots for a picnic! Continue around the headland and your adventure will lead you to the mouth of the undersea tunnel. This stretch offers terrific views across to Qingdao city; close enough to identify well recognised landmarks and buildings.

to Rizhao Huangdao, one of Qingdao’s seven districts on the 日照 explosive other side of Jiaozhou Bay, has witnessed growth recently. New road networks, new amenities, villas and apartments are nestled between great stretches of green. Parks and gardens have been designed to offer sea front access for walking, jogging and cycling. Silver Sands, the especially stunning continuation, southbound, from the long Golden Beach, is unlike any other Qingdao beach. Niu Dao is Qingdao's home for Japanese-style barbecue (yakiniku), where we can do away with the chuanrs and the lettuce to focus on quality meat and yummy dipping sauces. The meat cooks on a hot iron grill (similar to Korean-style in this regard), and then either goes straight into your mouth or takes a moment to bathe in one of several sweet-y-savoury dipping sauces. In any event, you cook it as you want, and then eat it in the manner best suited to your tastes. Niu Dao is the first restaurant to be opened by Asia-wide meatmakers Xin Kuai, famous for producing their meats according to meticulous Japanese standards (they operate the meat counter at Jusco, and they have that cool grocery across from Le Bang). The scarcity of yakiniku places in Qingdao has a lot to do with the tenderness and variety of meat required, and the sauces (like sesame teriyaki and sweet vinegars). Niu Dao easily scores in this area. Beef is Niu Dao's namesake, and far and away the most popular animal to be represented on yakiniku grills everywhere. It helps to be able to identify the individual cuts, as there are many, and when you're focusing on flavour you want to get the right one (see below for translations). Of course, pork, chicken and seafood are available in great variety as well! If you’re ready to dip into amazing barbecued meats, check out Niu Dao 牛道 Japanese Restaurant on the second floor of Marina City, way at the back on the annex with a gorgeous view overlooking the Sailing Center. It's almost like sitting on the waterfront, but at the same time enjoying top-quality beef, mushrooms, sashimi, tempura and more. Isari Sushi 渔寿司 "Irasshaimase!!!" The yelled greeting is probably the loudest noise that has occurred inside sleepy Darling Harbour yet. With restaurants like this taking residency though, the vibrant humdrum of hunger-sating diners will soon drown out the eery silence. Shinzaro 新里, head chef with 30 years experience and manager Harada Tatsuo (both Japanese) both know how to run successful restaurants, having spent years managing and cooking in Shanghai and Japan. Much of Isari Sushi's food is imported from Japan's Gyoren Fisheries, the restaurant being part of the Tairyo/Dayu chain (rough translation - big fish harvest, the same operators as Tairyo Teppanyaki downstairs). The majority of the products at this exemplary restaurant arrive in Qingdao via Shanghai, with products coming from Japan, and, say management, sometimes also from Spain and Turkey. It's their eye for quality ingredients that has quickly earned this company's restaurants such a reputation not only here in Qingdao, or the rest of China, where there are around 60 such sushi and teppanyaki restaurants, but also to the greater Pacific from Guan to Hawaii. They bring new dishes to Qingdao. Plum, egg and jellyfish salad. Crab miso soup. Their exotic taraba king crab is gigantic, nearly a foot across when its limbs are bound. When Shinzaro-san makes the nigiri-zushi morsels from its flesh, the meat dissects the small plate nearly from one side to the other. Other specialities that to our knowledge are only available here in Qingdao include the raw (or lightly blowtorched) beef sushi that's from an undisclosed place out of town, and best of all, the simply irresistible tuna belly sushi which, at 60元 costs nearly as much as the all-you-can-eat sushi lunch at the place next to Old Jack's, but you are definitely not going to get spicy stomach here. Prices per morsel range from 15元 - 60元, so it's not for buffet fans. Rather, this is the choice for connoisseurs of Japanese food, as you'll be able to testify by the company that surrounds you. It's like the Trattoria Verde, Hengbo or Napoli of sushi restaurants in Qingdao. You come here for a sensory experience, not to get stuffed. And you'll probably come back.

“欢迎光临！”大声问候的话语在静悄悄的心海广场中响起。餐厅虽然刚开业，这个充满活力的餐厅将很快打破这片宁静。拥有30年主厨经验的新里和餐厅经理原田先生(均为日本人)都知道如何成功运营餐厅，这二位在上海和日本花费多年进行管理与烹饪。渔寿司的大部分食材是进口自日本渔业，该餐厅是大渔连锁(简单解释-丰收的大鱼，与位于楼下的大渔铁板烧具有相同角色)。该餐厅大多数的产品是经由上海运往青岛的，据经理所说，产品来自日本，有时还从西班牙和土耳其进口。他们挑选食材的眼光很快为公司的餐厅赢得信誉，不仅是在青岛，乃至全国，总计约有60间这样的寿司和铁板烧餐厅，甚至远到太平洋，自关岛到夏威夷。他们带来了新的菜肴。梅子，鸡蛋海蜇沙拉。蟹肉味增汤。他们颇具异国特色的塔拉巴皇帝蟹很大，四肢捆绑起来将近一英尺之长。当新里先生从它那肉肉的身躯里取出一小块捏成握寿司，小盘里经分配的肉几乎一个尺寸。其他特别的是，据我们所知，这里有只有在青岛才能吃到的生(或是微微加热过的)牛肉寿司，值得一试。另外还有60元一份的金枪鱼腹寿司，基本上和位于老杰克旁那家店的自助寿司午餐差不多，不过在这里您的胃一定不会有辛辣感。价位一般为15元-60元每份，当然这并不适合自助迷们。这对日餐美食家们来说是个不错的选择，如同岛城寿司界的北绿岛、亨伯明家或是拿波里。您来这里是为了感受体验的，而不是仅仅为了吃饱。相信您还会再来的。

Handling original equipment manufacturing (OEM) contracts in China can be a bit of a minefield, especially for the new-to-China business. Stories of molds and design IP being ripped off and then sold by your own supplier are ubiquitous. Here we provide a basic list of contractual issues to consider when entering into OEM agreements: Exclusivity. You will need to determine whether the agreement with your manufacturing supplier will be exclusive or non-exclusive. If you want to grant an exclusive right to manufacture either totally or a subset of your products, you will need to word the agreement accordingly and cater for these different scenarios. Production obligations. You will also need to determine the China supplier’s obligation to sell to you. There are essentially two alternatives. a: The China supplier is obligated to produce product under any purchase order you submit and its failure to produce at the agreed price would be a default. This approach is appropriate if you want to guarantee supplies and if you want to hold the supplier to their commitment on price and delivery time frames. b: The China supplier produces only for those purchase orders which it accepts. The advantage of this is that it will not require you to purchase any specific amount of product. The disadvantage is that there is no guarantee of supply and there is no way to hold the supplier to any price commitment. Delivery specifications. Typically, OEM agreements provide for a specific port of delivery. However, if you have or are likely to have multiple ports and delivery locations, the agreement should provide that the port or delivery location will be specified in the purchase orders. Domestic and export pricing. If you are dealing with delivery in both China and overseas, it should be noted that

domestic product purchasing has different shipping and title transfer rules and is also affected by the lack of VAT rebate. OEM agreements should be structured to have the pricing system set out in a separate addendum. For this, be aware you will probably need to have separate pricing systems for domestic purchase and export products. If the buyer has no presence in China yet requires a China delivery, the OEM agreement will need to provide for how a non-export sale could be affected.

Warranty periods. The normal contractual term is two years from the date of shipment. Two year warranties are common because the assumption is that the product will be sold sometime in the first year after shipment from China. Trade secrets and IP protection. We normally advise a monetary penalty for breach. It is typical to provide for US$10,000 for a lump sum penalty and 12% for the percentage of sales penalty. Tooling provisions. It is advisable for tooling provisions to provide for a series of lump sum penalties. Manufacturing suppliers commonly refuse to return tooling and the most effective way to control this is to provide for a significant lump sum penalty for such a refusal. Bill of materials. This is important to ensure the desired quality of component materials to be used in the product and should form part of the agreement. This is simply a list of the components to be used in fabricating the proposed product. A good bill of materials, inserted either as an appendix or addendum to an OEM agreement, should specify in detail exactly what the Chinese manufacturer must use in manufacturing the
