Resting improbably – miraculously? – in a cliff face 900m above the Zeta valley, the gleaming white Ostrog Monastery (Manastir Ostrog) is the most important site in Montenegro for Orthodox Christians, attracting up to a million visitors annually. Even with its numerous pilgrims, tourists and souvenir stands, it’s a strangely affecting place. A guesthouse near the Lower Monastery offers tidy single-sex dorm rooms, while in summer, sleeping mats are provided for free to pilgrims in front of the Upper Monastery. The Lower Monastery (Donji manastir) is 2km below the main shrine. Stop here to admire the vivid frescoes in the Holy Trinity Church (Crkva Sv Trojice; 1824). Behind it is a natural spring where you can fill your bottles with deliciously cold, sweet water (and potentially benefit from an internal blessing as you sup it). From here the faithful, some of them barefoot, plod up the steep road to the top. Halfway up, the beautiful stone walls of the little domed Church of St Stanko the Martyr (Crkva Sv Mučenika Stanka) gleam golden in the sunset. Non-pilgrims and the pure of heart may drive directly to the main car park and limit their penitence to just the final 200m. The Upper Monastery (Gornji manastir; the really impressive one) is dubbed ‘Sv Vasilije’s miracle’, because no one seems to understand how it was built. Constructed in 1665 within two large caves, it gives the impression that it has grown out of the very rock. Sv Vasilije (St Basil), a bishop from Hercegovina, brought his monks here after the Ottomans destroyed Tvrdoš Monastery near Trebinje. Pilgrims queue to enter the atmospheric shrine where the saint’s fabric-wrapped bones are kept. To enter you’ll need to be wearing a long skirt or trousers (jeans are fine) and cover your shoulders. Most women also cover their heads with a scarf. It’s customary to back out of the doorways and you’ll witness much kissing of lintels and making of signs of the cross from the devout. At the very top of the monastery is another cave-like chapel with faded frescoes dating from 1667.
CUTE ROOMS A number of historically important buildings and their surroundings were opened to the public as museums as early as the first half of the 19th Century, including the palace of Versailles in France and George Washington’s estate Mount Vernon, in Virginia. However, the planned assembly of open-air museums was innovated in late 19th century Scandinavia. One reason may be the ancient tradition of moving and re-erecting wooden buildings, based on the local log building technique. The idea was a predictable further development of the by then well-established indoor type of museum. In order to collect and display whole buildings, it would have to be done outdoors. Precursors of openair museums were the “exotic” pavilions, “antique” temples, “ancient ruins” and “peasant cottages” to be found in 18th century landscape parks. Later precursors were the real or constructed peasant cottages shown at the international exhibitions of the mid- to late 19th century. LARGEST CITY OF BOSNIA AND HERZEGOVINA The Sarajevo metropolitan area, including Sarajevo, East Sarajevo and surrounding municipalities, is home to 463,992 inhabitants. Moreover, it is also the capital of the Federation of Bosnia and Herzegovina entity, and the center of the Sarajevo Canton. Nestled within the greater Sarajevo valley of Bosnia, it is surrounded by the Dinaric Alps and situated along the Miljacka River in the heart of Southeastern Europe and the Balkans. Sarajevo is the leading political, social and cultural center of Bosnia and Herzegovina, a prominent center of culture in the Balkans, with its region-wide influence in entertainment, media, fashion, and the arts. Due to its long and rich history of religious and cultural variety, Sarajevo is sometimes called the “Jerusalem of Europe” or “Jerusalem of the Balkans”. It was, until late in the 20th century, the only major European city to have a mosque, Catholic church, Orthodox church and synagogue within the same neighborhood. A regional center in education, the city is also home to the Balkans’ first institution of tertiary education in the form of an Islamic polytechnic called the Saraybosna Osmanlı Medrese, today part of the University of Sarajevo. Although settlement in the area stretches back to prehistoric times, the modern city arose as an Ottoman stronghold in the 15th century.

LIVING TOGETHER In Central and Eastern Europe, during the late 1980s and early 1990s, there were major political changes, such as the fall of Communist governments. These societies entered a new era of increased social freedom, less rigid rules, and less authoritarian governments. They interacted with Western Europe and some became members of the European Union. As a result, the patterns of family life have started to change: marriage rates have declined, and marriage was postponed to a later age. Cohabitation and births to unmarried mothers increased, and in some countries the increase was very quick. The deinstitutionalization of marriage refers to the weakening of the social and legal norms that regulate peoples’ behavior in regard to marriage.[12] The rise in cohabitation is part of other major social changes such as: higher divorce rate, older age at first marriage and childbearing, and more births outside marriage. Factors such as secularization, increased participation of women in the labor force, changing in the meaning of marriage, risk reduction, individualism, and changing views on sexuality have been cited as contributing to these social changes.[13] There has also been a change in modern sexual ethics, with a focus on consent, rather than marital status (i.e. decriminalization of adultery and fornication; criminalization of marital rape), reflecting new concepts about the role and purpose of sexual interaction, and new conceptualizations of female sexuality and of self-determination.[14] There have been objections against the legal and social regulation of female sexuality; with such regulations being often seen as violations of women’s rights.[15] In addition, some individuals may feel that marriage is unnecessary or outdated, leading to couples not formalizing their relation. [16] For instance, in the European Values Study (EVS) of 2008, the percentage of respondents who agreed with the assertion that “Marriage is an outdated institution” was 37.5% in Luxembourg, 35.4% in France, 34.3% in Belgium, 31.2% in Spain, 30.5% in Austria, 29.2% in Germany, 27.7% in Switzerland, 27.2% in Bulgaria, 27.0% in the Netherlands, 25.0% in Slovenia.

Sarajevo’s location in a valley between mountains makes it a compact city. Narrow city streets and a lack of parking areas restrict automobile traffic but allow better pedestrian and cyclist mobility. The two main roads are Titova Ulica (Street of Marshal Tito) and the east-west Zmaj od Bosne (Dragon of Bosnia) highway (E761). Sarajevo is Bosnia’s main intersection and the most

WINTER SALAMI Winter salami (in Hungarian: TĂŠliszalĂĄmi) is a type of Hungarian salami[1] produced according to a centuries-old tradition. Made from Mangalitsa pork and spices (white pepper, allspice, and others).

SIMPLY DELICIOUS FOOD For the manufacture of the salami, pig half carcases obtained by pig slaughtering are used. They are properly processed, with the removal of skin, fat, head and feet.
For winter salami production pigs of appropriate quality are essentially required. As a result of the primary processing and special boning and cutting of such pigs, good quality pork meat and fat can be obtained, especially prepared for this purpose. The excellence and special features of this salami require that such pigs as live animals comply with a strict set of requirements of an established system. For winter salami manufactured within the territory under the administration of Szeged (original Hungarian salami) pork meat and fat obtained from pigs fattened under Hungarian climatic conditions (preferably in the southern counties in the vicinity of Szeged) the application of appropriate slaughter technology and special boning of half carcases is required.
For the production of Szeged winter salami, only the pork meat originating from large-weight pigs bred according to hundred-year-old traditions is used. [Large weight (LW) and traditionally bred (TB) pigs hereinafter: ‘salami pigs’.] Great care is taken in purchasing ingredients of suitable quality. Contracts with breeders, the setting of quality parameters for TB/LW pigs as well as a premium price guarantee that the pigs available for slaughter are of the required quality and quantity. Pigs whose meat is used as raw material must be elder than 12 months and weighing more than 150, preferably 180 kg. Compared to other pork meat, the meat obtained from TB pigs is drier and contains more pigments, therefore it is a raw material of optimum quality for the traditional production of Szeged winter salami. For winter salami production pigs of appropriate quality are essentially required. As a result of the primary processing and special boning and cutting of such pigs, good quality pork meat and fat can be obtained, especially prepared for this purpose.
