rom the Great North to the African savannahs. But the journey - the real one - we know is not measured in terms of discomfort. We are not Great Travellers because we are uncomfortable when we travel; we are so if a casual glance confirms the fact. Luis Sepúlveda wrote “Traveling is walking towards the horizon, meeting someone else, learning, discovering and returning richer than we were at the start of our journey.” Managing to “meet someone else” and “discovering” is today a luxury that affords us exclusive moments. That is what we have tried to do from Helsinki to Kruger. But also in Ubud, where everyone goes but very few “see” the soul of Bali that resides in these areas. Then the capitals, Copenhagen, Abu Dhabi, Beirut. Timeless and fascinating. Curious and exclusive places seen and recounted by Great Travellers.

n authentic traditional French universe for a privileged stay in a gentle, calm and serene setting. These are the traits that make Hôtel-Golf du Château de Chaillysur-Armançon a must for those in search of the essence of the art de vivre. The Renaissance beauty of the imposing architectural structure of the castle-mansion is substantially intact. The inner courtyard with its pavé thus welcomes guests who then reach the entrance hall: an almost symbolic passage which leads to a place with a most soothing atmosphere. The old Burgundian mansion is characterised today both by its wide-open and unusual spaces, like the chapel converted into an artistic symbol of peace and spirituality, and the excellent service it affords those who are fortunate enough to immerse themselves in the fascinating atmosphere of the Château de Chailly. The culinary ritual proposed by the chef Jean-Alain Poitevin in the gourmet restaurant L’Armançon is one of research, constantly evolving, among the re-visitation of the classics of Burgundy and more creative ideas. All of this is played out paying attention to the raw materials, the techniques and the season so as to design a menu capable of exciting the palate.

But to all this is also added a special opportunity: that of taking advantage of a magnificent 18-hole golf course. On the golf course at Chailly, in fact, the classical harmony of the French-style park blends with the challenging greens designed by Thierry Specher and Géry Waline. Rewarded by an excellent position that allows it to project itself out over on Burgundy, Hôtel-Golf du Château de Chailly-surArmançon bids welcome with a classic setting and modern comfort. The objective of this synthesis is fully reached: a fragment of bliss for the perfect pleasure of privileged guests.

The design district never ceases to amaze with its shapes, colours and shops of the most varied objects. Here design is in the DNA of the inhabitants. Wood is king, in all its forms, even though light shades are predominant. And then Finnish cuisine. Whether it be award-winning ...or from the market, the experience is always of a high standard. Fish predominates and it is always fresh. Then there is The Sauna – a veritable institution. Traditional or with smoke, the old original one. The event could possibly be followed by a dip in more or less frozen water which, instead, can be substituted by a cold shower. Ovidio Guaita went to discover.

The fortress that stands alone on 4 islands connected by bridges in front of Helsinki dates back to 1748. Its construction began when Finland was still part of the Kingdom of Sweden. The complex has been a UNESCO World Heritage Site since 1991 thanks to its peculiarity as an insular defensive settlement. Today here live in the original residences about 800 lucky people who enjoy a peace and quiet difficult to find nowadays. Walking along the cobblestone, standing on the ramparts, entering the craft shops or strolling among the cannons all confer a certain the charm of history. Helsinki is just a half hour away by ferry, but it seems to be so much farther.

Hotel Kamp Helsinki’s aristocratic palour Still today after more than a century of activity, Hotel Kamp is the palour of Helsinki. It is impossible to avoid noticing it from the sidewalk of the Finnish capital, for it is the privileged destination of the well-off.

ou can visit Helsinki in many ways and with different priorities but it would really be a shame not to take advantage of the Kamp’s terrace, even just for an afternoon tea or dinner. The Kamp is an institution, a piece of the history of the Finnish capital besides being the only LHW in this Scandinavian capital. You could get a surprise returning at 5 in the afternoon and find that your room has not been made up; however, do remember that treaties have been signed here. Stars and divas have passed through here, and, honestly speaking, even though not many of the spaces have been left with their original form, the charm remains just the same. It is the promenade outside the hotel, above all, that is exciting with its late 18th-century façade, bow windows and the display-window terrace, where the locals go to see and be seen. The hotel boast two restaurant: Yume, inspired by the flavours of Asia and the Brasserie, the terrace which is the one we tried. Characterised by Scandinavian products, the Brasserie proposes a modern and light cuisine. Artic Ocean Shrimps as a starter is an excellent choice, along with a classic of this latitude: Roasted Salmon, served with a seasonal mushroom cream, Scandinavian spices and a delicate potato puree. Finishing with a Crème Brulée highlighted with a scoop of coffee ice-cream ensures an unexpectedly delightful conclusion. Moreover, in spite of the informality of the service and, above all for the setting, the experience on the whole is more than positive.

lo means “hungry” in Chinook Jargon, a language derived from English, French, Chinese and Chinook. A language that does not exist but is spoken by the merchants of yesteryear accustomed to dealing with people of different ethnicities. Helsinkii with its port, has always been a hub where goods, cultures and languages meet. It is right in the heart of the district of the port, near the Market Square that we find Olo. A place to come together and eat, following the sacred rite of the broken bread - the very bread that we find on the table upon arrival and which is still rising. Only then will it be baked and returned hot and crispy to accompany the creations of the chef. Consistently at the top of the charts of Finnish restaurants, Olo restaurant soars with its Michelin star not just for the flavours and textures but also for the careful selection of ingredients. The tasting menu - here called “The Journey”, the experience accompanied by wines chosen by the sommelier represents a full immersion in Scandinavian flavours. From the first dish with “Courgette with goat cheese cream and pumpkin seeds with tomato fennel juice”, the experience comes into focus. Among other compositions that follow we recall with pleasure the “Norwegian langoustine with emulsion and puffed rice” and “Beef tartar with pickled mustard seeds, onion rings, egg yolk cream, poppy seeds and thyme sour cream “. The sweet conclusions surprise for their lightness. For example, “Semi-dried strawberries, pickled white strawberries, wheat ice cream and sour milk mousse with rucola and strawberry drops”. The accompanying wines are mainly French with deviations into Hungary and Chile.
