EDITORIAL Ovidio Guaita, International Editor-in-Chief
he autumn we propose in this issue is an intimate one. The mountains before the snow and the European capitals after summer. An issue of waiting, transition. Political, geographical, touristic. With Americans who want to leave the US and Europeans who want to move there, the Trump effect also influences the scenarios of both the travel industry and that of hospitality. In a waiting phase, markets jolt and then they stand by watching. And so with the travellers who, in the meantime, dream of exotic destinations. Hence we went to Luang Prabang, Darussalam and Jakarta, a stone’s throw from Bali, an evergreen for all seasons. We close with an interesting property in Chisinau, Moldova. Certainly, it is not a frequent destination but it does have its charm. Even though still naïve and unpretentious, it has a story to tell just the same.

he fragrance of the sea. Innovative concept, bar-restaurant but coming from a starred background, Kødbyens Fiskebar nurtures, entertains and is trend-setting. Haute cuisine, high quality and service...extremely friendly. The most surprising characteristic is the setting of the Kødbyens Fiskebar in Copenhagen. The restaurant is facing the market and preserves its vivaciousness. Here fish and shellfish meet up with the world of wine under the supervision of Chef Jamie Lee, who, after having worked the London circuit of award-winning restaurants in 2012, took command of this business. The concept is simple: above all, it starts with the products. These are as fresh as possible. The menu changes daily to best use the catch of the day. Then the wines, chosen by head sommelier Heye Grünberg, respresent Europe in terms of quality, sustainability and...passion of their producers. Even the great names are represented, but, above all, superb labels of the medium to small producers are chosen with maniacal care. Finally, there is the ambience. Cosmopolitan clientele mixed with a hefty representation of locals. A youthful atmosphere (as is the team itself ) where seniors are very much at their ease. The music, the passion for good wine and superb fish unite at every latitude. We recall with pleasure the degustation of oysters (Danish, Breton and French), a delicate trout tartare, scallops and so on - a crescendo of flavours. Jamie spends part of his time in the kitchen and the rest among the clients, managing, commanding and entertaining. Clients are hence in the middle of a ballet of flavours and attention, always at a high alcoholic level.

A riot of nature through which you can discover amazing archaeological sites, Byzantine churches and treasures of the ancient kings. It speaks of Dodoni archeology, where the priests of Zeus foresaw the future in the rustling of the leaves of the sacred oak. It speaks of history and Ioannina modernity, capital of Epirus, with the Byzantine Kastro and the vibrancy of the thousands of young people who animate it. et like a diamond on the top of a mountain at 1350 meters above sea level, and the hieratic offshoot of the great forest of the National Park of Pindos, which surrounds and protects it. It lies in absolute nothingness, away from the clamor of the world. There is only the muffled silence of snow near Karakoli Ski Center and the rustle of the Zagoritikos River. Here Stylianidis has used the same language as Nature, borrowing primordial elements such as stone and wood and restoring style, elegance and decorum. The luxury of the Grand Forest, in fact, is one of no frills, which is not seen but rather is felt. Everywhere. In the immense hall, a large iron fireplace dominates among parlors and designer chairs under an engaging truss roof and exposed beams. And huge windows, which sometimes reveal two floors of the hotel simultaneously, open onto a breath-taking view. The green valley, mountains and hills, on one of which is set the village of Metsovo like a crib. Many of the 62 suites enjoy this view, including 10 junior garden view suites, 22 mountain-view suites, 16 superior suites with fireplace overlooking the mountains, 8 suites with fireplace and panoramic views at 180 degrees, 6 Grand Forest suite with fireplace and separate living room. The Fontus Spa specializes in skin rejuvenation treatments, signed by Germaine de Capuccini cosmetics. Excellence even in the kitchen with dishes expertly reworked in the Greek tradition by the chef.

he excellent location of the Radisson allows one to explore Bandar Seri Begawan, the capital of the Sultanate of Brunei on the island of Borneo. The proximity to the main attractions, from the Kampong Ayer village, with its characteristic houses built on the water along the Brunei River, to the Royal Regalia Museum, just across the Radisson, up to the great Sultan Omar Ali Saifuddien Mosque, in fact, permits a significant taste of the local culture of the wet city. The same is true from Kedayan. The rooms at the Radisson Brunei Darussalam are modern and functional. The attention for guests - whether on a business trip or on holiday - is confirmed by meticulous service, the presence of restaurants designed to suit different needs and by the facilities for well-being. As for the restaurants, La Tasek Brasserie presents, in a casual setting, a buffet with Asian fare, but not excluding the best known international dishes. The menu at the restaurant Deals, on the other hand, offers in a more sophisticated setting, an elaborate menu which proposes classic Western cuisine which is re-elaborated with innovative flair. A stay at the Radisson Brunei Darussalam makes a journey pleasant for tourist in the still little-known Sultanate of Brunei.

rench colonialism vibrates everywhere. Louis de Laporte, Henry Mouhot, Auguste Pavie, Doudart de LaGree, besides their craft, fame and nationalities, have something else in common: four suites dedicated to them at this resort. The reason? Because these explorers with their trips and their works have allowed Luang Prabang to open a window on the world. Staying here is a dive into the past. We are surrounded by history.
The Hotel Manager, Francis Fernandes, welcomes guests, but Laotian kindness reigns supreme. After a day spent enjoying the beauty of Luang Prabang and before dinner, an appointment under the ancient portico at the bar Le “1861”. Starting the evening surrounded by candles with a well-chilled Château Ducru Beaucaillou is an emotion. Just a few steps to the restaurant La Belle Epoque, where one can enjoy a perfect Laotian dinner. Dishes, apparently simple, conceal surprising nuances and pleasant contrasts. Even the presentation is without excess. Let the flavors decree the success of Chef Khampong - flavors inspired by his early-morning rounds in various markets of this delightful town. But the real luxury of this place is the silence. The hotel is completely immersed in a green oasis of peace. Staying there means breathing the atmosphere of a distant time.

agnificently situated, the Carlton Hotel St. Moritz offers a sublime view of the lake and the arc of the surrounding peaks. The Carlton is, in fact, a condition of the spirit that creates a perfect dialogue between the language of exclusivity with that of refinement. The unique atmosphere of the Hotel envelops and immediately seduces guests. A fascinating mÊlange revives the Belle Époque of the tsars and its eternal fragrance. In fact, the outside shape of the building dates back to 1913. All this, however, is masterfully revitalized by the kaleidoscopic interior design of architect Carlo Rampazzi. An efflorescence of spaces, perspectives, antiques, modern touches and functional objects characterises the suites by combining highly refined and familiar sensations. The choices are studied. The materials used are prestigious. The wise use of seemingly irreconcilable styles in the furnishings gives each suite its powerful personality. This strong identity is then added to the colour of the lively surroundings that eschew the cold artificiality of modernity. Each suite is therefore a unique work which originated from a synthesis that surprises without subtracting from the comfort of the rooms. The needs of the guests, instead, are provided for by the butler. The heat of the sauna and Turkish bath best welcomes those who have spent a day on the slopes. A Magical place for relaxation, the Carlton Spa is complete with treatment rooms and swimming pools, both indoor and outdoor. Ample space and elegance are the constant element that accompany the unique Carlton experience. The Romanoff restaurant testifies to a unique past. Chef Gero Porstein proposes gastronomic interpretations in which the focus is mainly on local produce. The sunny terrace prolongs the relaxing atmosphere of the hot corner of history and class recreated in the Carlton Bar & Lobby. Entrusted to the care of the brothers Enrico and Roberto Cerea, owners of one of the summits of Italian cuisine (Da Vittorio in Brusaporto), the restaurant Da Vittorio-St. Moritz has a surf and turf menu that is both exciting and incredibly intense.

eace, silence and fresh air with the scent of larch. An opportunity to breathe deeply. An “Eco”, and not “ego” resort, designed by Matteo Thun with the most advanced eco-sustainable architecture dictates and awarded five stars by Green Eco Hotels of the World. Wood, glass, stone and clay are combined in perfect harmony, causing the border between nature and architecture to fade away. The arrival of the evening is sublime. An excellent chalice of complimentary sparkling wine to sip slowly, sunk in the leather sofas in the living room with the warmth of the flames in the fireplace, listening to the heavenly live music of a harp. Two restaurants are also available to satisfy every taste and every sense. In the 1500 gourmet palates will be delighted by international cuisine with echoes of Central Europe and stunning panoramic mountain views. The Stube Ida, instead, is inspired by the authentic South Tyrolean tradition, with regard to both robust cuisine and the environment, with the characteristic antique stove of colourful majolica. The very carefully designed spa, allows one to experience unique and ancestral sensory emotions. The wooden sun terrace has a lovely balcony overlooking the Dolomites. One inhales the penetrating essence of larch, entering the large windows only to pervade both the sauna - overlooking the forest - and the wonderful infinity pool, paved with rough stone. Finally, the ascetic pleasure of an outdoor Jacuzzi with crystal-clear spring water, surrounded by and suspended between the majestic peaks of firs, where one often sees squirrels peeking through the branches. n the dark night in Chisinau, there are few light to lead new arrivals to their destination. The taxi is proceeding along the road when the Manhattan hotel appears. This is an unusual name for a pleasant structure which takes its inspiration from the renowned American city. It is after midnight when we finally enter the property accompanied by a porter who is carrying our luggage. The lobby is deserted but the smile of the fascinating receptionist immediately makes us feel welcome. Very soon we are in our room and the silence strikes us immediately. The hotel overlooks a thoroughfare which is quite chaotic during the day but incredibly calm during the evening. The next morning after an abundant breakfast we venture out to discover the Moldavian capital. For sure, it is not one of the most soughtafter destination; however, it is nonetheless interesting and not to be missed if you are travelling in the area. What makes this city interesting is its dimensions. Being small, its historical centre can be easily visited on foot. Another appreciated characteristic is the copious and luxuriant vegetation. Trees and parks are ubiquitous, even around the hotel. In the evening we return to the hotel for dinner. The service is simple and family-like. The cuisine is simple as well, yet it is delicious - without excesses - and healthy. After dinner the efficient receptionist reserves a taxi for our early-morning departure, and thanks to the free wi-fi, we are able to do the online check-in for our flight with Air Moldova.
