e do not have much time. In fact, we almost have none. Not even when on the go. The average duration of a stay abroad for European travelers is constantly decreasing while the frequency of travel is on the rise. So we travel more but stay less time. With August holidays nearly abandoned, we are left with Christmas, New Year’s and Easter and then a host of individual escapades, maybe programmed at the last dive into the wave of promotions. The benefits are definitely there but the risk of becoming more superficial looms. Haste is often not a good counselor if it is not supported by a wellestablished culture of travel. Hence we graze different worlds and cultures, but let’s not forget to “taste them”, to interact and browse. It may even be trite to say so, but a journey is like life: it must be lived intensely otherwise we end up bored.

eated at the tables of Les Trois Forts, the gourmet restaurant on the top floor, we obser ve, while we linger at the breakfast buffet, the movement in the port. A hectic bustle (or so it appeared from up here) that contrasts with the rarefied atmosphere of the room. The contrast continues between the modern architecture of the building and the view of the old town, the historic core of Marseille. The presentation of natural products featured at breakfast is enhanced by elaborate compositions and mixtures when night falls. No longer buffet but à la carte, the room welcomes guests only to amaze with the creations of chef Dominique Frérard. The proposal is Mediterranean cuisine, and we tried the Epicurien menu, light and satisfying, innovative , however, with local and seasonal ingredients. We started simply with Noix de St Jacques, mitonnée de lentilles vertes, jus de Crustaces, continued with a delicious Pomme de ris de veau, champignons du moment en persillade, choux romanesco, Albufera sauce, then an irresistible Table à fromages strictly French and concluded with Sphere au chocolat blanc, surprise Exotique, sirop de chataigne. And when we thought we were at the end, we were served Macaron au cacao, whose spiced mixture concluded our sophisticated sensory experience.

he light filters through the partiallyclosed curtains and offers a glimpse of a beautiful sunny day. I lazily pull apart a flap to discover the sound of the sea against the white facade. Breakfast, refined yet informal awaits before the walk on the Croisette. It may be the film festival or the history that has gone through these palms, but this promenade has a charm that goes beyond any fashion. The Grand Hyatt Hotel Martinez Cannes is definitely an integral part of this composition, suspended halfway between past and future. But we are not here for the hotel as much as for the birthday of La Palme d’Or, the only two-star restaurant in Cannes, a recognition that it has held since 1991! Here chef Christian Sinicropi, inventive and daring, is in charge. Since he took over the restaurant in 2007, his work has been a showcase for local and seasonal produce. His passion for art led him to attend the famous Les Beaux Arts school in Vallauris. Now, assisted by his wife, he also produces the ceramic plates on which he serves his culinary creations. On the menu his “movements” stand out. As in a symphony or a dance, the chef provides compositions of three movements which prepare, carry out and conclude a theme. A dance of flavors. We tried the Scallops Movement, which we quote from the menu to avoid dissolving the magic. “First movement: We are going to start with the raw and minced scallops, seasoned with a pulp of black truffle flavored with white pepper, tarragon leaves, a touch of wood taste, a flavor of duck foie gras. Second movement: Go inside together in a play of taste and sensory textures ...riso miso, pumpkin, hazelnut and celery. Third movement: Initiatory walk in my botanical maritime garden ... iodized of flesh of mackerel, fruity with mandarin, an earthy flavor by some leaves of beetroot perfumed with a wind of jasmine. “

The Victoria Spa offers a range of massages and treatments including the Ancient Khmer Massage based on traditional techniques. There are single rooms, a twin suite with a large bathtub and shower, and two outdoor massage pavilions hidden in the gardens around the pool. The large L’Espace Restaurant, with air conditioning and tables on the pool patio, features international and local Khmer cuisine, and a very handsome breakfast buffet. Among the local specialties the Khmer Lap - sticky rice ser ved with minced chicken, fish and pork flavoured with lemon grass and local spices, and the Fish Amok, a creamy curr y with coconut milk which is Cambodia’s national dish – ranked among the best in town. For gourmet French fine dining, the Le Jardin d’Apsara is an elegant eater y that opens only in the evenings.
