W
e might have the wanderlust syndrome, the disease of all those who cannot stay in one place. If you feel the uncontrollable desire to explore the world, see new places and to learn about new cultures, you may be suffering from this syndrome - also known as the traveler’s disease. The term wanderlust is of German origin and means “desire to wander”. More than an illness, it is a fixation. Wanderlust victims recognize themselves on the fly ... they cannot stay at home. The first symptom is the need to travel, to get to know places and new people, to have unusual experiences. Secondly, the maniacal obsession with flight prices, the constant desire for adventure. For these reasons many do not consider wanderlust a pathology, but a real passion, a hobby suitable for all dreamers and those who think that life, to be defined such, should be curious and original. So, we are sick from travel, but in a good way. Moreover, National Geographic has financed a study that has found that “wanderlusters” are more likely to face risks, try new foods, and to have new relationships and more sexual adventures.

Interview with executive Chef Vito Mollica
f you were not a chef, what would you like to do?
I was lucky enough to be a Chef, which is actually a real passion. When I come to the Hotel every day, it does not seem like work to me. I would have done this a thousand times. How did your passion for cooking come about? I am originally from Avigliano, in the province of Potenza. My father was a farmer, and I spent my childhood on a farm in Basilicata where women cooked all day. I discovered the passion for cooking at a very young age, thanks to the specialties prepared by my mother in my hometown, since I was often close to her and to the stove. Who were your teachers? Surely Sergio Mei, with whom I worked at the Four Seasons in Milan in 1996. Who tries the new recipes for you? The new recipes are now created with my collaborators. Often they simply bring ideas, and we taste them together, trying to find the best ones for our customers and those that best coincide with the philosophy of the restaurant. How do you choose the name for your dishes? I always prefer simplicity, giving space to the producers from whom we obtain our raw materials. Is there a dish that has made you famous?

One of my first courses, the “cavatelli cacio e pepe with red prawns and calamari”, was awarded as “dish of the year” by the new Italian Espresso Guide 2013 and is still a favorite of my customers. The pigeon, with the traditional bladder preparation, is also definitely well known. What are the indispensable ingredients in your cuisine? It seems a foregone answer, but it is not. Water, and air, without which nothing could be cooked. Joking aside, however, extra virgin olive oil is the basis of my cuisine and then I love to follow the seasonality of the products used. Is there an ingredient that you hates? As a child, vegetables, today perhaps none. What are the most daring combinations that you have experimented with? None. “The value of each dish is in the quality of its ingredients. If they are prepared carefully, we can taste it in their flavor. The more simply ingredients are prepared the more flavor they release. How would you define your cuisine? I would call it traditional modern cuisine. My Lucanian origins and my professional path greatly influence my dishes. I put into practice a cuisine that has the basis of the classic French style combined with a regional Italian homestyle expression. How important is tradition and how much is experimentation? Avant-garde cuisine, just the same, has its roots in the traditional, the cooking of mothers and grandmothers. What has changed is the way of cooking, the flavors and the ingredients have been softened and balanced, in line with modern tastes and techniques, but they share a common base. I also think that over the years there has been a return to “home cooking” and the beauty of conviviality. What are the dishes that customers are most fond of? In addition to cavatelli and pigeon, we have dishes such as Francesica, our redone boiled meat, Linguine butter, garlic and chilli with raw scampi, Laura Peri’s Chicken, Chateaubriand, and, last but not least, Domenico Clemente’s sweets, which by themselves are worth the trip to the Palagio. What does a great chef eat? I love pasta, even though I attentively try to limit it. I’ve been eating a variety of foods for several years now, and I pay more attention to eating well instead of just trying to get full. What has changed in your way of cooking in these years? Over the years I have entrusted more and more responsibility to my collaborators, who continuously surprise not only me but also our guests every day. Like me, they follow the founding philosophy of the cuisine of the Palagio, not just the general rules. It is thanks to this that they have my full trust. In structures like ours, it is impossible to make the restaurant a destination by oneself. Now my name is synonymous with a group of people. 30

O
riginally an Etruscan settlement, then a medieval village and later a favorite hunting lodge for the Medici, since 1989 the estate has been the property of the Olmo family. In fact, it was Giuseppe Olmo, the well-known cyclist of the 1930s, who bought it to turn it into a high-end resort: the Paggeria Medicea. In the charming medieval village of Artimino, which still preser ves its ancient walls and the tower, there are about 60 apartments, the Spa and the Wine Shop. A widespread hospitality that goes beyond the simple concept of hospitality. Going through the narrow streets of the old village or visiting the Villa Medicea La Ferdinanda (protected by UNESCO) are just some of the activities that guests can dedicate themselves to. The gourmet restaurant Biagio Pignatta cucina e vino offers unique dishes made with seasonal kilometer-0 products as the

main ingredients. The menu was designed by Executive Chef Michela Bottasso. Among the appetizers we tried the Poached egg on fondue of red Pienza “pecorino” cheese and black truffle from San Miniato. Not bad also the Fassona beef tartare with balsamic vinegar gelèe, horseradish cream, sage mayonnaise and romesco sauce made with high-quality meat and well presented. Among the traditional dishes we find the Traditional Carmignano dr y soup (bread and vegetables), a reinterpretation of the classic with excellent vegetables that are almost gratinated. The most innovative is the Calamarata with “morellini” artichokes, shrimps and ginger on grilled red pepper soup, which stood out for its per fect cooking. The Duck breast, endive and radish salad with orange reduction, chosen as the main course, stands out for its great balance and the cooking of the well-browned meat. To conclude, a good Biagio’s Tiramisu, served in a large glass. The estate has 80 hectares of vineyards, among the labels produced, in continuous refinement. Of certain interest are the Carmignano Poggilarca 2015 Rosso DOCG and an excellent Carmignano Grumarello Riserva 2012 Rosso DOCG, with a tasting score of around 88 points. The oil produced on the farm must not be neglected. Its very balanced acidity is outstanding. During your stay you cannot miss a stop at the Erato Wellness Luxur y Spa which, in 600 square meters, offers exclusive treatments of wine therapy, known for their beneficial action on microcirculation and improvement of the elasticity and hydration of the skin. 36

uilt in 1894 as headquarters of the New York Life Insurance Company, the New York Palace is now an elegant city hotel in the heart of Budapest. The glories of the imperial age can be seen in every corner of the building, from the Italian Renaissance style façade, with Art Nouveau and Baroque elements, to the opulent interiors. An architectural jewel that fits per fectly into the urban context of the Hungarian capital and contributes to its reputation as the “Pearl of the Danube”. Once through the entrance we find ourselves in the imposing courtyard, around which the entire building developes. A masterpiece of lines and geometries, where the symbols of different eras and styles come together in a refined balance between ancient prestige and the most sophisticated contemporar y design. The glass cover floods the wide spaces with natural light and makes them warm and intimate. Carrara marble, Murano chandeliers and precious woods are the leitmotif of the elegant restyling of the 185 rooms, suites and spaces available to guests. The New York Café is a jewel that takes us into the magical atmosphere of the Belle Époque. Defined as “ The best café in the world” it was the beating heart of Hungarian intellectual life and meeting point for poets and writers who, under the vaults with neoclassical frescoes, baroque decorations, stuccos and sumptuous chandeliers, met to discuss art and literature, so much so that it is said that besides coffee they also ser ved ink and paper. The 16 statues of diabolical fauns at the entrance of the café are particularly impressive and are an archaic symbol of meditation, inspiration and knowledge. Dining at the Salon Fine Dining is a multi-sensor y experience that allows us to taste traditional dishes, while a passionate sommelier accompanies us in tasting fine Hungarian wines, a real discover y.
