e might have the wanderlust syndrome, the disease of all those who cannot stay in one place. If you feel the uncontrollable desire to explore the world, see new places and to learn about new cultures, you may be suffering from this syndrome - also known as the traveler’s disease. The term wanderlust is of German origin and means “desire to wander”. More than an illness, it is a fixation. Wanderlust victims recognize themselves on the fly ... they cannot stay at home. The first symptom is the need to travel, to get to know places and new people, to have unusual experiences. Secondly, the maniacal obsession with flight prices, the constant desire for adventure. For these reasons many do not consider wanderlust a pathology, but a real passion, a hobby suitable for all dreamers and those who think that life, to be defined such, should be curious and original. So, we are sick from travel, but in a good way. Moreover, National Geographic has financed a study that has found that “wanderlusters” are more likely to face risks, try new foods, and to have new relationships and more sexual adventures.

PALACE HOTEL | VENEZIA

Hotel Heureka

R

Venezia

efurbished with talent, the remarkable historic Venetian building with architectural forms dating back to the 16th century is today the surprising Hotel Heureka. The successful synthesis between heritage and contemporary design comes from the different environments that, carefully remodeled, are now embellished by the subtle play of hues and furnishings of great elegance. A different touch pervades each of the rooms and suites. All are, in fact, organized around a never predictable décor that gives rise to intense spaces characterized by a strong identity. The tones are warm. The materials recherché. The combinations intriguing. Luxury and comfort are therefore carefully combined. The rooms and suites, intimate and extraordinarily welcoming, are precious art galleries. The perfect harmony of the Hotel spaces blends exquisitely with the quiet of the Madonna dell’Orto canal, which the Heureka overlooks, and the tranquility of Cannaregio to give life to rare atmospheres. Moments of relaxation in a sophisticated and informal environment live in the bar. A hidden treasure is revealed to the guests’ gazes when they reach the shelter consisting of the internal garden that turns out to be an oasis of serenity. Inserted in the quietness of an unusual Venice, Hotel Heureka evokes a high artistic culture but puts it in perfect sync with the spirit of hospitality today.

I

Interview with executive Chef Vito Mollica

f you were not a chef, what would you like to do?

I was lucky enough to be a Chef, which is actually a real passion. When I come to the Hotel every day, it does not seem like work to me. I would have done this a thousand times. How did your passion for cooking come about? I am originally from Avigliano, in the province of Potenza. My father was a farmer, and I spent my childhood on a farm in Basilicata where women cooked all day. I discovered the passion for cooking at a very young age, thanks to the specialties prepared by my mother in my hometown, since I was often close to her and to the stove. Who were your teachers? Surely Sergio Mei, with whom I worked at the Four Seasons in Milan in 1996. Who tries the new recipes for you? The new recipes are now created with my collaborators. Often they simply bring ideas, and we taste them together, trying to find the best ones for our customers and those that best coincide with the philosophy of the restaurant. How do you choose the name for your dishes? I always prefer simplicity, giving space to the producers from whom we obtain our raw materials. Is there a dish that has made you famous?

One of my first courses, the “cavatelli cacio e pepe with red prawns and calamari”, was awarded as “dish of the year” by the new Italian Espresso Guide 2013 and is still a favorite of my customers. The pigeon, with the traditional bladder preparation, is also definitely well known. What are the indispensable ingredients in your cuisine? It seems a foregone answer, but it is not. Water, and air, without which nothing could be cooked. Joking aside, however, extra virgin olive oil is the basis of my cuisine and then I love to follow the seasonality of the products used. Is there an ingredient that you hates? As a child, vegetables, today perhaps none. What are the most daring combinations that you have experimented with? None. “The value of each dish is in the quality of its ingredients. If they are prepared carefully, we can taste it in their flavor. The more simply ingredients are prepared the more flavor they release. How would you define your cuisine? I would call it traditional modern cuisine. My Lucanian origins and my professional path greatly influence my dishes. I put into practice a cuisine that has the basis of the classic French style combined with a regional Italian homestyle expression. How important is tradition and how much is experimentation? Avant-garde cuisine, just the same, has its roots in the traditional, the cooking of mothers and grandmothers. What has changed is the way of cooking, the flavors and the ingredients have been softened and balanced, in line with modern tastes and techniques, but they share a common base. I also think that over the years there has been a return to “home cooking” and the beauty of conviviality. What are the dishes that customers are most fond of? In addition to cavatelli and pigeon, we have dishes such as Francesica, our redone boiled meat, Linguine butter, garlic and chilli with raw scampi, Laura Peri’s Chicken, Chateaubriand, and, last but not least, Domenico Clemente’s sweets, which by themselves are worth the trip to the Palagio. What does a great chef eat? I love pasta, even though I attentively try to limit it. I’ve been eating a variety of foods for several years now, and I pay more attention to eating well instead of just trying to get full. What has changed in your way of cooking in these years? Over the years I have entrusted more and more responsibility to my collaborators, who continuously surprise not only me but also our guests every day. Like me, they follow the founding philosophy of the cuisine of the Palagio, not just the general rules. It is thanks to this that they have my full trust. In structures like ours, it is impossible to make the restaurant a destination by oneself. Now my name is synonymous with a group of people. 30

riginally an Etruscan settlement, then a medieval village and later a favorite hunting lodge for the Medici, since 1989 the estate has been the property of the Olmo family. In fact, it was Giuseppe Olmo, the well-known cyclist of the 1930s, who bought it to turn it into a high-end resort: the Paggeria Medicea. In the charming medieval village of Artimino, which still preser ves its ancient walls and the tower, there are about 60 apartments, the Spa and the Wine Shop. A widespread hospitality that goes beyond the simple concept of hospitality. Going through the narrow streets of the old village or visiting the Villa Medicea La Ferdinanda (protected by UNESCO) are just some of the activities that guests can dedicate themselves to. The gourmet restaurant Biagio Pignatta cucina e vino offers unique dishes made with seasonal kilometer-0 products as the

main ingredients. The menu was designed by Executive Chef Michela Bottasso. Among the appetizers we tried the Poached egg on fondue of red Pienza “pecorino” cheese and black truffle from San Miniato. Not bad also the Fassona beef tartare with balsamic vinegar gelèe, horseradish cream, sage mayonnaise and romesco sauce made with high-quality meat and well presented. Among the traditional dishes we find the Traditional Carmignano dr y soup (bread and vegetables), a reinterpretation of the classic with excellent vegetables that are almost gratinated. The most innovative is the Calamarata with “morellini” artichokes, shrimps and ginger on grilled red pepper soup, which stood out for its per fect cooking. The Duck breast, endive and radish salad with orange reduction, chosen as the main course, stands out for its great balance and the cooking of the well-browned meat. To conclude, a good Biagio’s Tiramisu, served in a large glass. The estate has 80 hectares of vineyards, among the labels produced, in continuous refinement. Of certain interest are the Carmignano Poggilarca 2015 Rosso DOCG and an excellent Carmignano Grumarello Riserva 2012 Rosso DOCG, with a tasting score of around 88 points. The oil produced on the farm must not be neglected. Its very balanced acidity is outstanding. During your stay you cannot miss a stop at the Erato Wellness Luxur y Spa which, in 600 square meters, offers exclusive treatments of wine therapy, known for their beneficial action on microcirculation and improvement of the elasticity and hydration of the skin. 36

HISTORIC HOTEL | BUDAPEST

New York Palace The Dedica Anthology

B

uilt in 1894 as headquarters of the New York Life Insurance Company, the New York Palace is now an elegant city hotel in the heart of Budapest. The glories of the imperial age can be seen in every corner of the building, from the Italian Renaissance style façade, with Art Nouveau and Baroque elements, to the opulent interiors. An architectural jewel that fits per fectly into the urban context of the Hungarian capital and contributes to its reputation as the “Pearl of the Danube”. Once through the entrance we find ourselves in the imposing courtyard, around which the entire building developes. A masterpiece of lines and geometries, where the symbols of different eras and styles come together in a refined balance between ancient prestige and the most sophisticated contemporar y design. The glass cover floods the wide spaces with natural light and makes them warm and intimate. Carrara marble, Murano chandeliers and precious woods are the leitmotif of the elegant restyling of the 185 rooms, suites and spaces available to guests. The furnishing elements are never invasive and their sophisticated elegance give harmony to the spaces.

HISTORIC HOTEL | BUDAPEST

The New York Café is a jewel that takes us into the magical atmosphere of the Belle Époque. Defined as “ The best café in the world” it was the beating heart of Hungarian intellectual life and meeting point for poets and writers who, under the vaults with neoclassical frescoes, baroque decorations, stuccos and sumptuous chandeliers, met to discuss art and literature, so much so that it is said that besides coffee they also ser ved ink and paper. The 16 statues of diabolical fauns at the entrance of the café are particularly impressive and are an archaic symbol of meditation, inspiration and knowledge. Dining at the Salon Fine Dining is a multi-sensor y experience that allows us to taste traditional dishes, while a passionate sommelier accompanies us in tasting fine Hungarian wines, a real discover y. A treatment at the SPA, that used to be the old cellar of the building, with its contemporary design spaces, and a break at the Nyugat Bar, to enjoy a cocktail and end the evening in an intimate and private corner, are a must-do experience. The “last word of the journalist” cocktail is an excellent choice for those who, like us, travel to talk about beauty. 48

refinement that springs from the exceptional setting in the heart of the charming little Unesco town, from a rigorous vision of hospitality and from a passionate quest for beauty. Avani+ Luang Prabang, a boutique hotel in a green oasis of serenity, was a French military quarters when Laos was a colony of French Indochina in the 1800s. The low-slung buildings around the large swimming pool, with a 120-yearold banyan tree, have 49 rooms with balconies and patios, and four suites with private gardens. The pale woods, elegant touches that hark back to the age-old traditions of the Kingdom of the Million elephants like the fabrics and hand-embroidered wall hangings, and the open-plan spaces with sleek lines and furnishings, all blend to perfection. In the Main Street Bar & Grill the menu is crammed with local and international delights, from tasty pizzas and locally-produced buffalo mozzarella to the famous Luang Prabang sausages, meat and fish curries, spicy soups and Mekong weed crackers. The treatments in the spa are based on Laotian traditions, and the little pavilion in the garden has a yoga area and a gym. In the evenings the main street beside this delightful urban resort, becomes the colourful Night Market. By day it invites visitors to stroll along its length to admire the city’s 30 Buddhist temples, the Royal Palace - which is now the national museum - and the old wooden houses which are the precious legacy of days long gone. Every morning just before dawn the Avani+ guests and local citizens wait in silence for the monks who pass by, barefoot and in silence, to receive the alms offered to them: an age-old ritual that in Luang Prabang becomes a moment tinged with deep significance.

n intimate private paradise in the stillness of the Venetian Lagoon, a favourite holiday home for over forty years for Gernot Langes-Swarovski and now home to René Deutsch, the son of his second wife. A mere twenty minutes from St. Mark’s Square, but light years away from the humming city waterways, the thirty-hectare island with olives groves, fruit orchards and vineyards is discreetly hidden behind frondy tamarisk and olive trees. The eye is drawn by the handsome dusky pink villa, an avenue of majestic cypresses, a little redbrick church and, beyond the swimming pool and the gardens with indigenous and exotic shrubs and trees where pheasant and peacock roam, the sparkling, surreal and seductive lagoon. In this Arcadia René and his wife Sandra, with dedicated passion and respect for the island’s history and for the ecosystem, refurbished Villa Ammiana, a former convent and now a luxur y hideaway. Pale white and beige the leitmotif, with elegant Tibetan and Venetian touches, in the nine guestrooms that can take up to sixteen guests who have the exclusive use of the island for bespoke leisure time.

Garlassi works his magic both in the kitchen and at the open fire in the huge fireplace on the patio, and his creations are accompanied by Santa Cristina’s excellent white and red wines and the only olive oil produced on the lagoon. For guests with a yen to explore, a boat or a gondola takes them to nearby islands where treasures glow in ancient monasteries and churches. Hunting for local fowl, bird-watching and fishing will delight aficionados of the outdoors life, for art lovers there are visits to private Venetian palaces and museums, and to delight in celebrity Michelin tables a helicopter will spirit guests away from Santa Cristina across the lagoon into the stunning Dolomite mountains. 54

Yangon Excelsior Yangon

he Yangon Excelsior, a boutique hotel with 74 rooms and suites, is a downtown colonial building – formerly the 1900 headquarters of the English Steele Brothers trading company –close to the majestic Town Hall and magnificent Sule Pagoda. A heritage gem where the architects, with refinement and style, have showcased many appealing historical features like old filing cabinets, ledgers and antique typewriters. The Art Deco lobby has striking black and white flooring and a mobile of fluttering paper, a reminder of the Steele Brothers’ paper files, hangs from the ceiling. In the News Room restaurant, the atmosphere is that of a Parisian bistro and, from the early hours the fragrant aroma of croissants and cappuccinos attracts a steady stream of aficionados, while the all-day menu has Asian and international delicacies on it. With a magnificent wine list and lively Wine Buffet evenings with jazz, tapas and

free-flow wines, this is Yangon’s newest chic rendezvous, while in the fine dining Steel Brothers Wine & Grill, the refined haute cuisine menu features luscious dishes as well as grilled meats and seafood from the Josper Grill. The rooms have parquet floors and bespoke carpets which, like the curtains and sofas, are peacock blue: the hotel’s leitmotif jewel colour that is introduced by the haughty stuffed peacock in the lobby. In the dazzling bathrooms the white tiles with black spots and the shared window with the bedroom are sassy touches. The suites on the Executive Floor are ultra spacious and The Loft, which has a living area on the mezzanine, has a bathtub beside the king-size bed that will appeal to younger guests who dig groovy. 78

he Sanctum Inle Resort, nestled in the rolling Shan mountains, is on the shores of Inle Lake with its traditional villages on stilts, floating vegetable gardens, golden temples and colourful itinerant markets. Styled like a medieval monastery with overtones of a Mediterranean villa, the Resort has handsome cloisters, porticoes and gardens that slope down to the lake, which is one of the largest in Myanmar: a serene and secluded retreat in which to relax in lush surroundings, at the spa or around the pool with its lake views. On the three levels of the main building and in the villas in the gardens, the 94 rooms and suites are spacious and bright with furnishings in precious teak wood. The villas with the 10 Provost Junior Suites are more intimate, as they are scattered around the grounds under tall trees, while the two Abbey Suites are on two levels one with a comfortable living area - and have lake views and the Signature Suites has two master bedrooms. The Refectory restaurant serves local and international favourites, from fish and meat curries to the delicious tomatoes grown on the

he Cambiocavallo Lounge & Restaurant, housed inside the Hotel Castello di Asti, is a modern and carefully furnished venue. The menu of chef Pier Mario Monzeglio, Piedmontese by birth and training, does not betray expectations. The classics of the territory, from the vitello tonnato to the great experience of boiled meat, are, in fact, based on traditional foundations and thus per fectly enhance the quality and the seasonality of the excellent products of the territor y. Impeccable are the chef ’s creations which, although strongly oriented to the flavors of the land of the Monferrato, are not without those of the sea as well. The symphony of Cambiocavallo’s taste is then reinforced by an appropriate wine list and excellent dining room service. w w w. h ote l c a stel l o ast i. co m
