Portugal track 2 In the Portuguese city of Barcelos a judge wrongly condemned a Galician pilgrim to hang. At the judge’s house, the pilgrim saw a cooked rooster on the dinner table and said, “As surely as I am innocent will that rooster sing.” Miraculously, the rooster sang and the pilgrim was saved. The rooster is now a symbol of Portugal.

Fiber:
track 16
a Special Kind of Carbohydrate
Fiber is the name of a special kind of carbohydrate. Fiber-rich foods are important for good health. They help digestion and pass right through the intestines without being absorbed into the body. They may also protect against bowel problems. Although they fill you up, they do not contain many calories. Some scientists believe that a high-fiber diet can keep blood cholesterol low. You get fiber only from foods that grow from the ground, such as fruit, vegetables, and cereals (wheat, rice, corn, etc.). You do not get fiber from foods that come from animals, such as meat, eggs, milk, cheese, and butter. It is easy to include fiber in your diet. You have to eat more potatoes and bread – especially whole-wheat bread. You should also choose a high-fiber, whole-grain breakfast cereal and eat plenty of vegetables and fruit. Be sure to drink a lot of water, too. This will help prevent constipation. Adults should eat 30 grams of fiber every day. Take a look at the table below. It shows how many grams of fiber each food item has. Breakfast cereals (1 serving)
Vegetables and legumes (1 serving)
