onfession time! I’m fascinated by the Jenner/Kardashian domestic lifestyle that they put out there for us to see on TV and social media. I worry that they’re always eating salad out of plastic packaging bowls. I find it charming that they all attend home gym, set up in Kim’s garage. And I’m astounded in a big-eye way by their dressing rooms which look like a Disneyland of luxury logos. Love them or hate them, the family knows how to woo us with a combo cocktail of relatable and totally off-thecharts, beyond-achievable lifestyle. In Kylie’s own home, she’s taken that concept to a cool new level. It’s full of colour, energy, youthful quirks, crazy rich luxury, edgy, on-point furniture and a pram in the hallway – but it’s Fendi! She’s described as having ‘pop brio’, and it’s infectious and ultimately inspiring. I hope you love taking the tour as much as we loved opening her door for you. This month, Media 10’s Design Joburg, featuring Rooms On View, presented by Sanlam Private Wealth, will once again transform the Sandton Convention Centre into a nucleus of decor and design on the African continent. For the show’s third instalment, organisers are thrilled to announce the return of the CoLab features. Nine designers are set to create captivating room sets using items from several leading South African and global brands. One such talent is Joburg-based Nelson Kubheka of Ommni Design. With nearly a decade of experience and an impressive resumé of projects, Nelson creates upscale interiors and spatial solutions for residential, commercial and hospitality clients. At 2018’s show he caused a stir with his sophisticated, mineral-rich bathroom collaboration with Kohler, which was a fresh take on African-inspired glamour with lashings of black and brass. In fact, the graphic bogolan wallpaper was such a hit, it’s now available to order. Describe your CoLab feature in one sentence? An interior representation of discovering the new that comes with every journey and place. Why this concept? I wanted to capture the idea of the world becoming smaller and more fluid, especially in how people relate to and connect with one another. It’s a narrative about taking parts of our journey home with us to inspire others and remind people of the magic of self-discovery through travel. Can you give us a hint as to what you plan to create? I plan to create a combination of a living area and workfrom-home space. This will carry a somewhat eclectic yet contemporary approach through the choice of furniture and bespoke joinery details.

Is there a particular feature you think will turn heads? It’s difficult to isolate just one item, but I will say that the desk in the work space and the bookshelf will both be eye-catching... How does what you are creating fit in with the current design zeitgeist? I believe my design doesn’t conform to a single particular style but reflects a mixture of African contemporary – with some classical – influence. I think what is more relevant to current trends will be revealed through my use of natural materials, bold colour and geometric forms. What would your dream project be? A mixed-use development consisting of a hotel, work spaces and apartments, located anywhere in Africa. What is your motivation for participating in Design Joburg, featuring Rooms On View? I’m hoping to get the global market to recognise the creative talent we have on the African continent. What or who inspires you? I am inspired by renowned architect David Adjaye’s design processes, which speak more to the context rather than a specific style. Any advice for visitors to the show? Design Joburg has in the past featured some of the best of what Africa has to offer. I’d like to see visitors engage with the designers to get a proper understanding of their thought processes and concepts. resh from his super-compelling show at Stevenson, Thierry Oussou looks to be the bold new face of African abstract expressionism. The works – a series of new ink, acrylic and oil-bar on paper – captured his responses to living and working in Johannesburg (he is from Benin) and the visual, aural and psychic impact of his time spent in the city. A constant

traveller between spaces and across continents, Thierry’s work embraces the consciousness of being both inside and outside situations, both resident and visitor, with an accompanying awareness of the sensorial qualities of both past and present tenses. etro colours have to be the most chancy palette to manage in decorating, but once you’ve nailed this bunch of old Tupperware tones, you’re a pro. The latest test is a slew of off-greens that range between a sort of pea-andturmeric soup colour, and manila envelope soaked in wheatgrass. J

ulian Treger reports Long dismissed as a fading jetset resort with ageing Lotharios from the ’60s and ’70s, in recent years Saint Moritz has amazingly refashioned itself to be completely relevant to the 21st century. In many respects, credit for this should go to Rolf Sachs, Urs Schwarzenbach and Norman Foster, who have each contributed to the town’s renaissance. Rolf, son of the legendary Gunther, is a great designer and photographer in his own right. His renovated Art Deco Olympic-stadium home in the town is super-tasteful and crammed with art and design. Urs is a great art collector who collaborated with Norman Foster on a beautiful bean-shaped residence, Chesa Futura. Norman – the architect who has transformed the town, building at least two other structures, most recently the country club for the Kulm Hotel – has made it much more modern and interesting. As a result of their efforts, Sankt Moritz (as it is locally known in German) has attracted an influx of the new, globally diverse rich. And with them has come a revival of culture: there are now six world-class galleries in town, including Robilant+Voena, which sells Calder sculptures and Renaissance paintings from a gallery perched above the lake. It’s no surprise as a result of all of this that Nomad, the travelling art-and-design fair founded by Giorgio Pace, has started popping up annually in the grand Chesa Planta in Samedan, a Baroque masterpiece. The fair’s first weekend, in February, was a blur of parties and openings. Remo Ruffini, the brilliant developer of the Moncler brand, gave a delicious sit-down dinner for 60 catered by Daniel de la Falaise, at his

extraordinary home. The vast, open, freeflowing space has black, charred wooden walls (a technique used in Japan for outdoor cladding) and black floors, and the rooms were filled with beautiful sculptural objects and varied surfaces. With its Eastern-influenced abstract paintings, including a pair of paintings by Pat Steir, the house felt like wabi-sabi on steroids. Guests included luminaries like Andreas Gursky and stylist Giovanna Engelbert. The Nomad fair itself was filled with good, mid-century modern works by Italian designers like Carlo Mollino and Gio Ponti, given the proximity to Italy, as well as modern designs from galleries such as David Gill in London and Paola Colombari in Milan. There were also a smattering of art galleries like Almine Rech showing late-90s Günther Förg. Vito Schnabel, son of artist Julian, opened an exhibit of artist Pat Steir’s works at his gallery. Steir, born in 1940, came to fame in the ’70s and is very much part of the current revival of interest in female American artists, like Joan Mitchell, who were previously overlooked. Her works referenced Barnett Newman’s abstract expressionist zip paintings, and Agnes Martin’s zen minimalism in a way that was uniquely her own. Following that, the Bassani family of Wally boats fame opened the doors of their pine-and-copper chalet on the Suvretta hill for an Italian buffet feast for guests like Michèle Lamy, the extraordinary muse of Rick Owens, and English designer du jour Luke Edward Hall. Finally, on the Sunday, Lady Elena Foster hosted a lunch at the elegant, old-style Chesa Veglia, the famed pizzeria in town, for designer Francis Sultana, among others. Saint Moritz is definitely back!

#3 you’re in: the entrance hall Your entrance hall introduces your house. It’s the landing spot for your visitors – they’re inside; they’ve arrived. It’s also an all-important connector between different functions in a house. Here are our top tips For getting it rigHt… an entrance hall can control circulation within, often serving as a separator between private and public spaces. In the case of a multistorey home, it can act as a vertical separator between ground and upper levels. [1] space allowing, try to cast visual flow from your entrance hall as far back as possible into the rest of the house. [2] entrance halls create the first impression of the interior of your house and your style – adorn yours to make a statement. a striking work of art grabs attention and generates conversation from the get-go. In classic urban architecture where garages are not the norm (think of a London townhouse), you would arrive through an entrance hall. In countries like south africa, where we tend to live a more car-centric lifestyle, entrance halls are often redundant: one tends to enter the house through the garage via a utility room. one of the biggest design challenges is to find a way for household inhabitants to use an entrance hall, hence enjoying an inviting arrival. To manage this, you can create connection from the garage into an entrance hall via a boot room. [3] Make it a functional and practical space. an entrance hall can be a holding zone in which to gather items when you transition from indoors to outdoors, or vice versa. Provide storage spaces – a seat with built-in 42

storage; a console table with handy drawers; boxes or baskets; and, of course, a rail or pegs for coats and hats. Functionally, entrance halls often serve as a ‘system control’ hub. outside lights, alarm keypads and intercoms are often managed from this zone. If possible, have these grouped together. [4] In small spaces, an entrance hall can double as a dining space or drinks serving area. When not set for eating, the table can serve as a pedestal for beautiful flowers, art displays and other ornamentation. entrance halls can provide an opportunity to connect vertical spaces. a classic look for a grand house is a sweeping double stairway that leads from the entrance hall into a majestic doublevolume space – iconic scenes from High Society leap to mind. [5] Consider installing an entrance-hall fireplace. This not only makes for a cosy arrival, but also acts as a heat centre for the rest of the house. add a bench to make the entrance hall part of a sequence of sitting spaces throughout the house. entrance halls are an area of heavy foot traffic. opt for hard-wearing floor finishes such as tiles. You can always include loose rugs to create warmth and layers. Planting trees It’s really important that we plant trees whenever possible. They offer shade and cool for the future, creating the possibility of benevolent microclimates, shelter for all creatures, and comfort in our lives. Permeable surfaces They are better for the ecology of our spaces in every way. I’m trying to use grass blocks, gravel and sand, permeable paving, and compactable clays and laterites. If not possible, I try to ensure controlled run-off into the garden, rather than out into the street where the water is wasted. Big textures and a tropical look Abundance and abandon is sexy. 56

Rock is back But be careful how you use it. Natural is by far the best but is easier said than done. It’s a talent to be able to place rock as it would occur in nature. Birdbaths Shallow sloped edges help the smaller birds, and a couple of flattish stones is the middle of the bath make others happy. More will visit if there’s cover planting close by that they can retreat to. Matte, textured leaves I’m preferring these to shiny, reflecting leaves, which feel brittle, especially as hedges. Grasses I can’t get enough of them, particularly local varieties. My favourites are Imperata cylindrica and Melinis nerviglumis. If you’re serious

Less is more when it comes to garden sculpture There’s nothing better than a beautifully positioned, single piece for adding an exciting focal point to the garden. Bold, graphic topiary forms Don’t be afraid to use plants as architecture to form elements (anything other than lollipops). Clippable, evergreen plants can be waterwise too. ylie is the ultimate celebrity, the ultimate influencer. For someone her age to have achieved so much is frankly astonishing,’ says Martyn Lawrence Bullard, the Los angeles designer tasked with conjuring a dream home worthy of a vivacious almost-billionaire superstar. The residence is located in the La suburb of hidden hills, close to the homes of Kylie’s high-profile siblings and their mother, Kris Jenner. ‘When we started this project, she wasn’t even old enough to drink legally. This was her first really grown-up house,’ he adds. ‘I told Martyn I wanted a fresh, fun vibe to match the way I was feeling. colour was essential,’ Kylie recalls of her earliest conversations with the decorator. Functional requirements were also at the top of her agenda: ‘My closets and glam room are very personal to me, even down to the size of each drawer, so they fit my specific products and clothes. I spend a lot of time in those rooms, so we had to make sure they were perfect.’ Martyn obliged with a design scheme that is equal parts sparkle and sumptuousness. on the more glittery end of the spectrum are the white lacquer-and-acrylic grand piano in Kylie’s monochromatic, old/new hollywood living room; the goldleafed ceiling of the dining room; vintage Lucite furniture by charles hollis Jones; and reflective wall coverings galore. on the plush side of the equation, Martyn deployed carpets of Patagonian shearling, alpaca and silk; snow leopard-patterned velvet on the vintage Milo Baughman barstools in the lounge; and fur bedcovers. ‘The look is glamorous but totally inviting. In the living room, seemingly liquescent brass consoles riff on the drip patterns of the make-up line’s signature packaging. halfway through the project, Kylie learned that she was going to have a baby with rapper Travis scott, which necessitated a retrofit for a nursery and playroom. of course, the fun is not reserved exclusively for stormi: in the lavish family room, Kylie and her guests can take a swing on a Jim zivic hammock suspended from the ceiling while enjoying treats from custom cocktail tables with cutouts for ice, champagne and caviar. The entertainment continues in the bar-lounge area, which is tricked out with a billiards table, arcade games and a saint Laurent limited-edition surfboard. andy Warhol dollar-sign lithographs and a dramatic portrait of the homeowner are on display in the lounge. ‘Kylie feels a deep connection to Marilyn Monroe, so we placed a series of Warhol screen prints of Marilyn along the main stairway. In general, we selected artworks that felt appropriate for a young collector with feminine tastes. It all reflects Kylie’s personality,’ Martyn says, referring to the damien hirst ‘I Love You’ butterfly silk screens that adorn the dining room, the Jean-Michel Basquiat screen print that presides over the living room, and black-andwhite photographs of Brigitte Bardot, audrey hepburn and Twiggy. The Tracey emin neon sculpture that hangs in the bar perhaps best sums up the saucy vibe of the dynamo’s dazzling home. ith ocean views and lush surroundings, the simbithi eco estate was the natural choice for a Johannesburg family to find an escape from city living. Interior designer Yvonne o’Brien brought new life into the four-bedroom house to reflect the peaceful living afforded by the picture-perfect east coast setting. What was the intention of the space, and the atmosphere that you wanted to create? The homeowners are a wonderful, warm and laid-back family from Johannesburg who were wanting to create the perfect holiday house, with the added possibility of it becoming their retirement home one day. The intention was to create a relaxed and inviting atmosphere that was not too typically ‘sea-sidey’, but held the nostalgia of old family pieces and the nonchalance of a holiday space.

How did the surrounding environment and climate inform the interiors? We drew inspiration from the tropical vegetation of the estate and the balmy temperatures. We wanted it to have an ‘island feel’, without it being a typical beach house. How did you approach the collection of objects throughout the house? accessorising and layering are always elements that tie everything together. We chose carefully to create the impression of years of collecting without it feeling stuffy and cluttered. While the overall palette is muted, colour features in surprising ways. We came across a beautifully coloured and embroidered fabric from romo Fabrics that the client fell in love with. This was the starting point of our inspiration. The idea was to keep the palette as crisp and white as possible, and then introduce the unexpected personality and tranquil character through the use of bright colours, and layered african and antique accessories. These accessories are also very textured. Was this a deliberate choice? Yes, the texture was crucially important to create a warm and organic feeling in what would otherwise be a very sleek shell. othing could be more apt a description of this much-loved, cape garden than the age-old adage ‘a garden is never truly complete, but rather continues to develop and evolve over time.’ The initial garden was designed by Franchesca Watson 10 years ago and concentrated on the lawned upper terrace, russet-toned magnolia walk, and the abundant olive grove to the west of the house planted with Olea europaea olives. subsequently, landscaper June commerell was appointed to enhance the lower terrace, which led to the development of the hedged, crescent-shaped flower beds added at the time as a symmetrical focal point for the newly built staircase. The stairs brought easy access as well as visual continuity between the two garden levels. The planting allowance at the back of each stair tread – an idea inspired by australian garden designer Paul Bangay – was filled with sun-loving spanish daisies (Erigeron karvinskianus) and is now a breath-taking feature when in full flower. In 2014, a columned garden pavilion was constructed, maximising summer outdoor living and really encapsulating the sentiment of the garden – that of being in the garden, and experiencing the seasons first-hand. The owner delights in the seasonal changes, and one of his greatest joys is to see his grandchildren romping around the garden with the Labradors, through its green contours, hidden pathways and wildly floriferous beds. as the years have passed, much of this latter layout was done in conjunction with head gardener caroline Magowan, who, while initially engaged to oversee the maintenance with a skilled team (Tony guacha, elias Mangoli and souza Manhepe), has over time found herself more and more involved in this ever-evolving garden. Cool, calm and collected Flowering plants are the soft furnishings for your garden, and like deciding on scatter cushions for the living room, staying true to your personal style will help focus plant choice and create a cohesive statement. Colour-theming and repetition of key plants are easy ways to achieve this and keep the look slick. Take inspiration from this pretty palette of tough specimens in cool shades of blue and white. 1. Potato vine (Solanum jasminoides) The hardy blue or white potato climbing vine produces clusters of delicate, fragrant flowers from spring to late autumn. Train up a sunny column or allow to tumble over the sides of your pots. Remove dead wood to neaten in late winter. Drought tolerant once established. 2. Wild iris (Dietes grandiflora) This wonderfully tough specimen has been planted en masse along the banks surrounding the olive orchard for maximum flowering impact throughout summer. For the remainder of the year, the one-metre-long, strappy leaves create a soft, meadow-like appearance. 3. Mophead hydrangea (Hydrangea macrophylla) Among the showiest flowers in the summer garden, the blooms appear in early summer and continue all the way to autumn. Keep your soil acidic in order to retain the blue colour of the bloom and cut the plant back at the end of winter to ensure healthy growth next season. 4. Star jasmine (Trachelospernum jasminoides) This star performer works equally well climbing a trellis, trailing over the side of a pot or as a soft groundcover. It is happy in semi-shade and full sun and is covered in deliciously fragranced flowers from late spring to summer.

5. Garden Heliotrope (Heliotropium arborescens) A brilliant plant that flowers almost continuously. One of its common names, Cherry Pie, refers to its unusual scent. It thrives on neglect, can withstand heat and wind, and attracts a kaleidoscope of butterflies to the garden. 6. Fan Flower (Scaevola aemula) The perfect plant for pots on a sunny balcony or allowed to spill over the edge of a hanging basket. Your scaevola will flourish and flower spectacularly all summer long if given good drainage and watered only once the soil has dried out completely. 7. Delphinium hybrid. A metre-tall annual with magnificent spires of summer flowers and attractive, deeply lobed foliage. A selection of blues, purples and whites add vertical interest and elegance among the symmetrical flower beds. 8 & 9 Spanish Daisy (Erigeron karvinskianus) Expect a profusion of tiny daisy-like flowers throughout the year from this hardy, versatile ground cover. Happy in sun or partial shade, it thrives in well-drained soil. Use it in a gravel garden, spilling over walls, planted in between pavers or – like in this garden – to border the treads on a feature staircase. Bees and butterflies love erigeron. Trim lanky stems in autumn.

Behind the scenes Set up a checklist of seasonal tasks to help establish a routine and make it less likely that important tasks are forgotten. ‘It’s important to remain flexible though,’ says Caroline. ‘While I have a checklist of monthly garden to-dos, I often find myself responding intuitively and shifting the list around as a result of inconsistent weather and unexpected seasonal changes.’ Autumn and winter garden tasks,

like lifting and dividing perennials, pruning hydrangeas in mid-July, and cutting back Star Jasmine hard in winter, ensure the garden will look great to enjoy over the summer months. Shrubs such as hibiscus should be pruned for dead wood at this time of year, which keeps growth fresh and compact. In spring and summer, concentrate on lighter tasks, like supporting new growth with a feeding regime, weekly mowing of lawns, and trimming hedges. Mindful of conserving water at all times, the beds in this garden are given a repeated, thick layering of mulch.

Inside, meanwhile, a treasure trove of gem-like materials and custom furniture pull together a brief for ultimate comfort within high-functioning entertainment zones: a profusion of metallic surfaces meets warm wood and splashes of bright colour. designer nina sierra rubia, whose team at arrcc Interior design studio is behind this invocation of dynamic living, explains, ‘The walnut panelling reflects the warmth seen throughout the rest of the home, while the metal fleck ceramic by chantal Woodman for oKha, standing on a suspended black swing server, tells you that there’s fun to be had inside.’ marble-like flooring and a custom-designed geometric woollen rug are complemented by ceramic art by hennie meyer, each unique piece inviting closer inspection. saoTa positioned the guest bedrooms on the lower levels to elevate the main living area and master bedroom, creating a private penthouse, but the real fun’s to be found when the party’s taken down a level. ‘It’s on the middle storey that the full effect of this entertainer’s paradise is appreciated,’ says arrcc director mark rielly. It’s a riot of calculated contrast as metallics – polished, tarnished, patinated – surround marble and wooden surfaces. The walnut dining table was custom-made with a marble lazy susan and is surrounded by artifort chairs from Limeline that complement its rounded form. circular shapes come to play in the sculptural light, too. Brass rings cast a halo over the table, as echoed in the lounge with its polygon-shaped light. separated from the dining area by architecturally slatted walnut screens, the lounge continues the dialogue of fascinating form. Its custom sofa affords views of the ocean, courtyard and television – which doubles as a mirror,

enhancing the sense of space. around it is a decorative acoustic fabric with brass detailing, cleverly concealing speakers, while below stands a biofuel fireplace surrounded by emperador marble. Its cosiness is best enjoyed while lazing on the reclining chair upholstered in mustard felt by cor. Purple oKha gloob chairs introduce colour to the area, while a Tom dixon melt lamp acts as a sideboard sculpture – maintaining the metallic pops of attraction around the home. on the other end of this floor is the bar, where the combination of material and form is at its most condensed: the slatted ceiling blurs into the wooden splash back that doubles as illuminated shelving. Tom dixon bar stools and classicon side tables from Limeline brighten an intimate hangout. The arrcc team created two outdoor areas – one in the neutrals of the city’s beach lifestyle, the other sporting a cantilevered biofuel fireplace for drying off after an infinity pool swim. ‘This entire floor opens up to an enclosed terrace, which can be closed for weather protection,’ mark says. a friend introduced her to charles Mellersh, a former interiors editor at Wallpaper magazine, who today runs his own design studio. ‘I loved that charles’ background was in journalism. his knowledge and appreciation of design goes deep,’ eiesha says.

‘He listened and never forced his ideas on me.’ They talked and they travelled – a lot. Impressively, no two pieces in any room are from the same designer, dealer or source.

n a bright and breezy morning, sitting in the living room of her notting hill house, eiesha Bharti Pasricha casually lists the many valuable life lessons she has picked up so far. she learned about business and philanthropy from her father, telecom magnate sunil Mittal, and about hospitality from her husband, sharan Pasricha, founder of the ennismore group, which owns the hoxton hotels brand and the gleneagles resort in scotland. a year spent as a sales assistant at Louis Vuitton in Paris taught her about customer service, and her investment in roksanda, the London-based fashion label, taught her about colour, of course, but also architecture (david adjaye designed the brand’s Mayfair flagship). and she drew on all of these experiences to create the ultimate home for her family, which includes her six-year-old daughter and four-year-old son. ‘We always wanted to live in notting hill,’ eiesha explains, leaning back into a grey mohair velvet sofa. ‘sharan and I married nine years ago and a few years later started looking for just the right property. after finding it, we then spent three and a half years reconfiguring it.’ With the help of a Londonbased architect, they gutted the property – retaining just the historic Victorian-era facade – to create a sizeable home that would support their personal and professional lives.

‘In some houses you get the sense that people live in only one part and the rest is kept shiny and new just for entertaining,’ she says. ‘But it’s important to us that we live in every room. We love to entertain, but this is home for the children, and I want them to always feel cosy.’ eiesha had strong ideas about the decor. ‘I didn’t want someone else’s signature all over the place,’ she says. ‘I was inspired by fashion and modernist furniture, and I knew colour would be important, so I started collecting pieces that I simply loved. however, I soon realised that I needed someone to teach me how to weave everything together.’ 94

endearingly, the duo separately say that they get along so well they’ve begun to finish each other’s sentences. ‘he did challenge me,’ concedes eiesha. ‘When I told him I loved george nakashima, he asked me what I knew about him and then gave me a book. he told me to read it and tell him what about his world I responded to. Working with charles was an incredible education.’ articulating what it was she responded to enabled eiesha to confidently buy – and then commission – contemporary design, too. There’s a custom dining table with fresh flowers embedded in resin by Marcin rusak, a brass drinks cabinet by Ilse crawford, and a custom pendant by Michael anastassiades.

Throughout the house, vintage icons are masterfully paired with notable new works and clever, functional background pieces. A similarly deft and charismatic combination of art – including pieces by Alexander Calder, Ai Weiwei, Christopher Le Brun and Cornelia Parker – further shows off the homeowners’ impeccable natural taste. Textiles are invitingly layered. Walls are painted in powdery hues with textures that capture the light. Marble surfaces are honed, not polished, demanding to be stroked. The cumulative effect makes this home feel inhabited and alive, not stark or sterile. ‘I wanted everything you touch to feel good.’ asked to sum up her greatest takeaway from the process, eiesha laughs. ‘goodness, it’s ongoing,’ she says. ‘now I’ve got the bug, I’m constantly trawling vintage auctions in the middle of the night. I have to remind myself I don’t have any more space, so now I’m doing it because it’s interesting. I can’t help but want to keep learning.’ n

ith a return to the restaurant arrel hirsch is taking an innovative approach to seasonal dining, with new-generation cuisine prepared to explore every facet of the foraged ingredients that have grown in the area since time immemorial. having already presented an imaginative approach in his first menu for greenhouse at cellarshohenort, he has his eye on further explorations in the near future, and we’re already warming to his ideas for winter. As foraged ingredients grow in popularity, the ways in which they’re used is evolving. Do you see a shift towards foraged meals that are less about the luck of 102

what’s found on any given day, and more engineered – more artful? It’s most definitely an art to find what you are looking for. The beauty of using foraged ingredients lies in the process of gathering them. I think it’s really good to know the different areas within range of your restaurant – constantia is a great area for foraging – and it also helps if you know the seasonality of the produce that you’re looking for, to not waste your time looking for something that hasn’t bloomed quite yet. You can engineer an ingredient to its maximum potential when you understand where it comes from, and what its limitations are. How does a tasting menu lend itself to the exploration of foraged foods and their flavours? We try to use as many different textures and flavours as possible in

the tasting menu, so as to not repeat ourselves. We want the guests to feel the season during which they’re at the table. We don’t want heavy foods for summer, or vice versa. You champion using sustainable ingredients from traceable sources. This is obviously an excellent ethical choice, but how does it elevate the food you prepare, too? When your food is coming from places and areas you know and trust, it really helps, as you know the farming methods they are using or the areas they are catching your fish. It ensures consistency and the product simply tastes better. How do preconceived or stereotypical ideas about African flavours or cuisine differ from what you believe to be a truer experience of what our continent has to offer? You can put african cuisine in a pigeonhole, but there’s so much more to explore with flavours and ingredients that people have never tasted. You could even take pap, as an example: it’s very simple, but it can be done 100 different ways to suit your palate. Your career has already included some of the most prestigious restaurants in South Africa. What is it about Greenhouse that has brought you back? I really loved my time spent in the kitchen at greenhouse. The restaurant and kitchen feel like they have endless possibilities – if we can dream it, we will try it. What’s on your mind, flavourwise, as you’re thinking about your winter menu? We use a farm in hout Bay that has amazing produce available. right now we’re getting a few things that are really exciting, such as white parsley root, zulu peppers and gretel aubergine. It’s really fun to play with these flavours. What’s a goal that you have for the future of Greenhouse? I would love to try taking the dining experience out of the dining room to start. than 30 000 followers, as are the live monthly cooking demonstrations she presents online for checkers. ‘My philosophy is about making food accessible,’ she explains. zola says her biggest compliment comes from viewers who say it looked so easy on TV – and then realise it really is that easy when they attempt it. ‘I can do fancy-fancy, but I don’t think that’s everybody’s everyday. We eat real food at home, so why not give people the tools to cook real food, while making it extra special?’ The celebrities who join her throughout the 13 episodes of celeb Feasts with zola are clearly impressed with her methods, commenting on the simplicity as they help her to stir syrups or whisk sauces while sharing life stories. or the longest time, coat stands have been becalmed in the design doldrums. Thonet, in 1900, designed the classic bentwood version that you’ll recall from the lobby of every establishment offering a Sunday carvery, and whilst they were critical chic in the ’70s, styles moved on and the domestic world forgot the coat stand as style statement, although a scarecrow, Ikea-like iteration cropped up frequently in rustic beach homes to manage baskets, hats and towels on a vertical basis. I mention this because they’re immensely handy beyond coats, and now that you can find sculptural ones in iron with disc-like endings and pleasing form, the coat stand is not just worthy of an entrance hall, bathroom – or , yes, beach house – but quite an asset.  lagrangeinteriors.co.za
