Lemon Twist A master class in style with substance, from multidisciplinary studio Lemon

T

he go-to secret weapon in any savvy designer’s arsenal has just expanded to Cape town. It’s been over a decade since brothers ricky and Kevin Frankental founded Lemon, which today offers bespoke wallpaper, furniture and accessories. H&G got the squeeze on just what it takes to master the made-by-Lemon look.

MaTeriaL When we design a new piece, our method is always to start with the material followed by the need. our ‘Vondel’ marble and travertine tables were born out of a need to design the pieces we wanted for our own space, and the design serves to hero the material in its purest form. For our new ‘Chelmsford’ coffee table, we sought inspiration from ’50s Italian design, using glass as the focus, which is supported by brushed stainless steel and satin-sprayed steel details. When placed together, the contrast of the materials – polished metal and honed stone – creates an interesting juxtaposition. When we design, we think only about the product and not how it fits into a space. It’s not curated or perfect, but that’s part of what makes it feel natural – we like interiors that happen through participation, not through perfection. 42

#7 Over One’s head: roofs Roofs are the most elemental form of shelter in a house and an essential part of the building envelope Climate is often the greatest influencer when it comes to roof shape, as the fundamental function of a roof is to protect against the elements and extreme temperatures. roofs are constructed in various forms – flat, pitched, vaulted or domed (or in a combination of these) as dictated by technical, economic or aesthetic considerations. [1] a building can have a mixture of flat and pitched roofs, but in this case, the emphasis should lean towards pitched. get the balance right in creating both sheltering (sloped) and useful (flat) roofs. Build flat roofs in the interior part of the house where you can walk directly onto one from a room on the same level. [2] a pitched roof is the most practical way to allow water run-off and thermal trade-offs. It is also the ultimate symbol of shelter: studies show that children – even those who have grown up in apartment blocks – draw a pitched roof, two windows and a chimney when asked to imagine a house. gabled or pitched roofs can accommodate additional living spaces in the form of attics. [3] In a rainy climate, avoid a roof design that requires a box gutter (where sloping roofs meet, or behind a parapet). You’re looking for trouble in the long run, as damp will inevitably find its way into the house. Where possible, always allow a direct way for water to discharge off a roof. The material chosen for the look will influence the angle of the pitch.

Thatch is typically a slope of 45°; slate a minimum of 30°; and corrugated iron can be as low as 8°. [4] In terms of roofing materials, thatch is a good insulator but requires more maintenance than other options. slate is prized for its durability but is expensive. There is, therefore, an increasing move towards using sheet metal thanks to its durability, cost-effectiveness and energyefficiency. Metal roof panels reflect the sun’s rays away from the house in summer, and in the winter the radiant heat of the home bounces off the metal roof, retaining the heat inside. Flat roofs are traditionally reserved for houses in arid climates, where the need to drain water is of less importance. however, with advances in waterproofing materials and techniques, this is less relevant in modern architecture. roof overhangs are often cut back in contemporary builds, but they are important as they protect doors and windows from rain. [5] similarly, with pitched roofs, there is a temptation to do away with gutters for aesthetic gains, but these are vital in protecting the walls from damp. gutters should be the same colour as the roof, and the downpipe should be the same colour as the external walls. Bring the eaves of a roof down low at places like entrances, where people pause. roof gardens can provide additional living space, as well as greening buildings – think of Mediterranean towns where almost every building has a habitable roof. north-facing sloping roofs are great for accommodating solar panels, as are flat roofs. 8 newmanarchitecture.co.za @newman_architecture_design

Take, for example, the variety of curtains that respond to each room’s needs. When it came to furniture pieces, Lindie opted for mismatched chairs and tables, cleverly creating synergy between cape antiques, touches of Quaker-style simplicity and bold

Brazilian modernist collectables. ‘all of these feed into the materiality of the home. In the grain of the wood and the flecks in the marble, there’s an honesty that isn’t overembellished,’ she explains. ‘These noble materials are precisely why the interiors of this house will never date.’ But it isn’t all old-school glamour, as Lindie is quick to note that although this house fully embraces its architectural roots, it never does so at the cost of modern comfort. ‘Take the kitchen,’ she says, as an example. ‘It’s a workhorse, a demanding and practical room that is at the same time personal and also highly technical.’ To this end, the entire space was modernised according to Bruce’s requirements, most notably with the installation of the timber island that serves not only as a social gathering point but also a well-planned storage unit, leaving the surfaces clean and uncluttered without breaking the free-flow of space from the formal living and dining rooms to the cosy lounge and outdoor area. The small guest cloakroom is Lindie’s favourite room, an irreverent streak in the decorating that serves as something of a boost to the otherwise sober, more paredback interior scheme. ‘Because the rest of the house is so serene, I could create this little jewel that offered an entirely different experience.’ after more than a little convincing on her part, Lindie finally got Bruce to agree to use the 1800s William Morris ‘snakeshead’ wallpaper, which paired perfectly with mirrored and antique brass lights. ‘I think the house is successful because even though every room is specific in its function and appointment, there is still this common thread, this feeling of congruency,’ she says. ‘after all, that’s what we set out to achieve – living spaces that both challenge and enthral.’ Lindie Ferreira 8 lindie.ferreira.sa@gmail.com n

omantic, playful, quiet and modern – it’s all of that and more,’ says Israeli architect ester Bruzkus of her recently completed 78-square-metre Berlin apartment, which she shares with her partner, design professor Peter greenberg. ‘It’s precise but unpredictable, rigid but flexible, intricately planned but relaxed. It’s full of contrasts and surprises. Which is exactly what I wanted.’ design has always been in ester’s blood, although growing up it was the world of fashion that beckoned. ‘When I was little, I used to draw the models in Vogue, but in the end, I decided to study something more serious,’ she jokes. If her home is anything to go by, that childlike inquisitiveness and desire for play are still as strong as ever. Located in the vibrant, family-friendly neighbourhood of Prenzlauer Berg in the east of the city, the building is particularly important as one of the first built in the early ’90s after the fall of the Wall. ‘It has an interesting construction,’ says ester. ‘The lofts with their blue epoxy resin floors, cement roofs and elevated platforms in the windows offer views of the outside.’ ester and Peter had lived in the block before and hadn’t wanted to move. But they had wanted a rooftop garden, so when one of the two penthouses became available, it was a no-brainer. They jumped at the opportunity. ‘The apartment faces both east and west, which means we see the sunrise and sunset from the terrace,’ says ester. ‘The light that comes through is really special and, when the weather is good, the space opens up entirely.’ The couple grows their own vegetables in this space, and there’s a bountiful apple tree. While the previous owners had opted for a more classic, pared-back interior, rendered in marble, timber and black, the couple had something completely different in mind. By removing these heavy, cocooning elements, they opened up the space entirely, maximising on its airy, lightweight qualities while adding punches of heady colour and texture. ‘since it was, fundamentally, an empty rectangle, we had the opportunity to start from scratch and allocate the floor plan exactly as we wanted,’ says ester. ‘The only things we saved were the windows and the concrete roof. The idea was to introduce boxes within boxes.’ Today, the large central area, flanked by terraces, comprises a living-dining-kitchen area that offers access to the bedroom (the bathroom is the only closed room in the home). They also introduced two volumes of full-height wood – one in light oak, the other in laminated 72

grey – to order the space. ‘I designed the kitchen and bathroom myself and then painted the walls, even the light sockets, in soft tones borrowed from Le corbusier’s palette,’ she says. The dining table and red-and-pink velvet sofa were also custom-designed and paired with Wegner chairs and pieces of contemporary art from the couple’s collection. ‘I love mixing materials – foams, silks, cardboard, cracked tiles, mirrors, marble, brass, volcanic rock, rare fabrics – it’s all about these unexpected details,’ she explains of her creative process. how, then, would ester sum up her vision for the space? ‘I’d call it a millennial-industrial style,’ she says, ‘But with a deeply sophisticated undercurrent.’ Ester Bruzkus 8 esterbruzkus.com n

ake me through your initial impression of the apartment. From the get-go, what did you hope to achieve? The home is in de Waterkant and, typical to the historical neighbourhood, is quite narrow. What made it so special was the natural light that infiltrated one side of the property from both ends, and a glass roof that stretches over the staircase. It made the entire structure feel lighter and immediately connected you to the views of the harbour to the front and signal hill to the back. I wanted the space to become a sacred escape from the daily urban grind while maintaining a strong connection not only to site but also to the client’s identity and lifestyle. This aspect really comes through, the collaboration between you and the client. We approached it as an artist would a canvas or a musician a piece of music – it had to tell a story of light and dark with spaces that offered comfort and blur the line between simplicity and opulence. The key touchpoint that we kept coming back to was creating a space that allowed the art to come to life and merge effortlessly with the furniture pieces in a contemporary way. Before we get to the art, let’s talk about how you’ve really made amazing use of light in the space. We removed all existing curtaining and, instead, opted for black electric sheer roller blinds that control light and mood much better. Maximising the natural light, air and views is what makes this location so enchanting. also, by opening the home up more, we were able to introduce a darker palette on accent walls and furniture. an absolute favourite of mine is the floor-to-ceiling nero Marquina slabs used in the bathroom and a Plascon ‘starlight express’ green-painted staircase wall opposite a courtyard that really extended that atrium feel.

This muted, moody use of colour and tone, along with furniture in strictly natural materials, further conveys the idea of open-air living. The existing space had wooden floors, stairs, internal doors and architraves of different wood types, and we wanted to make it all appear the same without going through the unnecessary expense, and ecological harm, of replacing it. Introducing the darker stain created an instantaneous harmony and we found balance by painting most of the walls white so that the art could start filling in the story between the various rooms. It was therefore a conscious decision to allow the materials for the furniture to complement the function of each room and take on a form for effortless living, comfort and flow. What was a personal highlight for you? Laying down a fresh, plush, fitted carpet always gives me goosebumps. It is then that you realise the furniture is about to get placed and how it will start taking on a life of its own. For all its considered aesthetic and impressive art collection, this is still a home for living. How did you balance these factors? as interior designers, practicality and usability have to be top of mind. since we couldn’t change the positions of built-in cupboards and storage due to space constraints, we had to reconsider the organisation, length, depth and volumes. When your space is sorted, you are sorted. Living areas that open to an internal courtyard are a wonderful way to invite the outdoors in without compromising security, and this allows not only for seamless living but circulation without limitation. o we have the garlic? The anchovy paste? What about the dijon mustard?’ bellows a voice from the kitchen. a chorus of ‘check! check! check!’ echoes back. It’s 4pm on a Tuesday, and cooking class is under way for four-year-old gracie durrett and a half dozen of her friends. The five-metrelong calacatta gold kitchen island is prepped with all the ingredients for a caesar salad, and the junior chefs are just about to add the Worcestershire sauce when sylvana Ward durrett – matriarch of the house and cofounder of us-based children’s e-commerce boutique Maisonette – sweeps down the stairs and motions for me to join her one flight up on the parlour floor. ‘It’s mayhem down there,’ she says, leading me into the decidedly more grown-up living room, where she sinks into a mustard-velvet sofa perched atop a graphic striped rug. gracie and my son are schoolmates, so the scene of a gaggle of kids in her roost – whether for a birthday party or a Maisonette photo shoot (the home serves as a recurring backdrop for the site’s campaigns) – is in fact a familiar one. The first time I laid eyes on the residence was through a picture my babysitter sent me of my son, gracie and another girl donning swimsuits in the master bath’s freestanding tub for one such shoot. sylvana claims she hadn’t even hatched the business idea when they started designing the home, but she admits, ‘it works out well.’ she and her investor husband started house-hunting in Brooklyn shortly after the birth of their son, henry, seven years ago. at the time, they were living in a shoebox apartment in greenwich Village. ‘henry’s nursery was basically a closet,’ she says. When the new parents received an invitation to visit some friends in cobble hill, they trudged across the bridge and fell in love. Weekend treks to open houses (baby henry in tow) and multiple lost bidding wars would ensue before they happened upon a classical 1901 brownstone with gracious proportions and an 18-metre-long garden. They clinched it, embarked on a gut renovation and, at the tail end of 2017, moved in. By that time, their family had expanded to six: henry being joined by sisters gracie and Millie, now two, as well as a one-year-old Labrador called Blue, which happens to be sylvana’s favourite colour. sylvana wanted a space that would lend itself well to family living while being formal enough for entertaining on a grand scale. after planning nine Met galas while she was the director of special projects at Vogue, ‘my dream was to have a place where I would actually use my work at home in a meaningful way.’ 84

Brooklyn’s cWB architects oversaw the renovation, devising a floor plan that could walk that delicate tightrope. They kept the traditional bones of the house with stately mouldings and archways between rooms, while opening it up to maximise the flow of light. When it came time to decorate, there was never a question in the couple’s mind. sylvana had met Jesse carrier of carrier and company Interiors years earlier, when she was an assistant to anna Wintour, a longtime client of the designer’s. ‘I’ve always loved his sensibility,’ she says of the country-chic style he and his wife, Mara Miller, are known for. ‘he’s easy to work with,’ and, as a father of two, ‘he gets the family thing.’ or, as Jesse explains: ‘We know what damage comes with having a herd of elephants running up and down the stairs.’ For those, he opted for a broadloom, polypropylene runner, telling sylvana, ‘You’re going to thank me.’ The finished result is a high-low mix that looks rich and layered but isn’t so precious that ‘the children need to be sent to some obscure part of the house to play,’ says Jesse. The designer shopped accessible retail outlets, combining them with just enough wow accents to lend a luxe feel. In the dining room, the durretts splurged on a de gournay wallpaper of climbing vines that has the effect of extending the garden inside, and paired it with a relatively inexpensive sisal that can easily be swapped out ‘after red wine and turkey,’ sylvana says. (It’s already been replaced once.) For dinner parties, they can host up to 24 in the dining room – 34 if they extend the seating into the lacquered blue library by opening the pocket doors (a ‘genius’ design detail sylvana credits to the architects) and shifting the rose-velvet sofa into the hallway. a gold-splattered calico wallpaper on the library ceiling draws the eye up, and, notes Jesse, is like a modern version of a frescoed ceiling. ‘In such a confined space, it’s nice to be able to enjoy that constellation,’ he says. sylvana adds: ‘It’s so cosy, and it’s where the bar is. My husband has become quite a beer aficionado. People come over and are like, “Tell me which brew you have on tap this week.”’ upstairs in the master suite, a serene palette sets the tone. There’s a deck overlooking the lush garden designed by celebrated landscape architect Miranda Brooks, another relationship sylvana forged during her Vogue days. While the Maisonette owner now peddles mini-sized fashion, she has a walk-in closet that would do her alma mater proud. ‘My dream since I was a little girl,’ she sighs, passing through the dressing room, which is wrapped in wood-framed glass cabinetry. ‘I don’t even have enough clothes to fill it.’ she opens a pair of doors to reveal completely empty racks – an almost unheard-of predicament in new York city. september 2019 house garden

The children’s quarters feature petite bedrooms filled with furnishings from the home wing of Maisonette – an Incy Interiors crib in the nursery, where a white-noise machine is on full blast despite Millie’s absence; oeuf rabbit chairs around a play table in gracie’s blush-coloured room; and a navy chloe club chair in henry’s nautical-themed bedroom, which boasts built-in bunk beds. sylvana informs me that he sleeps on the top one and gracie on the bottom. ‘she doesn’t want to sleep in her own room. henry’s cool with it,’ she continues. ‘I think he’d be bummed if she didn’t sleep in here with him.’ The attic floor was transformed into a multipurpose media room, play area and guest suite – the built-in banquette cleverly designed to house three twin-size mattresses and two trundles, so ‘when the cousins come, all the kids sleep up here,’ sylvana explains. ‘every time it happens my heart sings.’ Blue, white and beige striping lends a beachy vibe and, combined with the fact that it’s perched in the treetops, almost makes you forget you’re in the urban jungle. ‘We did the circus-tent stripes 88

on the ceiling,’ says Jesse, ‘because the architects had the great idea of carving out space in the rafters, which created this funny pitched shape.’ as we wind our way back down to kid central, sylvana recalls their first holiday here. They had been living in the attic ‘eating cereal on the floor’ while the bottom half of the house was being completed, and serendipitously removed the construction tarps just in time for christmas eve dinner. sylvana’s family was visiting. ‘We sat down at the dining table for the first time, and it was exactly as I had imagined it,’ she says, blissfully. ‘It suddenly felt like home.’ ‘Mommy! Mommy!’ calls a child as soon as we step off the landing onto the garden level. gracie rushes toward her mother, her mouth cherry-red from a lollipop she’s just polished off. ‘Mama, I want spider pasta with cheese. can you make it for me?’ of course she can, sylvana assures her. she takes gracie’s hand and walks into the kitchen. henry will arrive home from soccer moments later, ready for dinner, too. caesar salad and lollipops might make for good amuse-bouches, but the main course awaits. n

a glass pavilion allows a spectacular vantage point over the garden, from old, fruit-bearing guava trees and turkish figs tumbling over leaning wooden supports, to expansive views of the constantiaberg mountains beyond. the figs are underplanted with carex grass, and artichokes and onions become edible groundcover beneath the guava tree

he genesis of this vegetable garden was a very clear brief: To create a food garden and entertainment pavilion for long, lazy lunches with family and friends. a collaboration between garden designer Franchesca Watson and architecture firm Malherbe rust resulted in a vegetable, herb and flower garden with strong architectural lines, just glamorous enough not to detract from the rural comfort that is at its heart. The pavilion, too – conceptualised as a glass cube – sets up just the right amount of tension between pastoral harmony and 21st-century living. ‘We visually anchored the glass pavilion by placing a lily pond on either side of it,’ says Franchesca. The rill was painted in a chalky white as a nod to the traditional dutch farming irrigation practices of the area, and positioned centrally as a device to draw the eye through the garden and up towards the sweeping, 360-degree views of the surrounding constantiaberg mountains. ‘The rill was built so as to appear infinite, with the pond into which it flows tucked away at the base of a low retaining wall. This clever addition disguises a tricky level change and visually separates the garden from the nearby driveway.’ a water channel with custom-designed fountains bisects the garden and creates a visual axis from the homestead down one of the main pathways, connecting it to the newly created vegetable garden. Plant supports in the form of ‘latte’ planting frames; pathways defined by ‘klompie’ brick edging; raised planters for herbs, edible nasturtium and pelargonium flowers; and established guava and almond trees all add a three-dimensional quality to the garden. ‘The beds are planted with an array of seasonal vegetables for a year-round harvest of fresh produce,’ explains the homeowner. Family favourites from the garden include a selection of onions; Mediterranean varieties such as artichokes, lemon thyme and rosemary; Thai basil; roses; blueberries; and edible viola flowers. 8 franchescawatson.com 8 mrarchitects.co.za

Pick of the Crop Our tried-and-tested top five vegetable varieties for beginner growers: Lettuce: Fast-growing and a piece of cake to harvest – simply snip off the tops or pick leaves as needed. Lettuce can be grown in containers accompanied by flowers or other small-space herbs, such as chives or parsley. We had success directly seeding them even in partly shady areas. Better still, they continue to grow after picking, so you can harvest them again and again. Our favourite lettuce was Merveille des Quatres Saisons, an unusual French variety of butter lettuce with red-tipped leaves and tightly folded green hearts. Available online from The Gravel Garden. Radishes: Once you see how easy radishes are to grow from seed, you’ll simply have to 94

add them to your repertoire – and they took only 20 days to reach full size. Sow throughout summer for a succession of crunchy, colourful crops. We especially loved Watermelon Radish for its unusual white outer and deep-red centre. It had masses of peppery flavour, too. Available online from Seeds for Africa.

supermarket varieties to shame. And the more you pick, the more they produce. Our top pick was the Royalty Purple bush bean, which is bright purple, stringless and has a great flavour raw or cooked. Be warned though: When cooking it changes colour from purple to green. Available online from Organic Seeds.

Baby tomatoes: One of the most popular vegetables for any size garden, you can grow tomatoes in hanging baskets, pots or anywhere they’ll get lots of sun and have support for their stems. Use bamboo canes (readily available from your local nursery) as support. Our favourite variety for deep, dark colour drama and sublime taste is Black Cherry. Available online from The Gravel Garden.

Beetroot: A cinch to grow in full sun, your beetroot will be ready to harvest from six weeks and is as happy growing in a pot (provided it’s more than 30cm deep and wide) as in the ground. Both the leaves and the fleshy roots are edible, making this vegetable exceptionally productive for small spaces. Varieties range from those with deep crimson roots to ones with golden-yellow and red-andwhite roots. We tried Tonda Di Chioggia, which has a candy-striped centre and nutty, earthy taste profile, winning our best juicing vegetable award. Available from Sought After Seedlings.

Beans: Support your beans with canes or a mini trellis, and before you know it, you will be harvesting a bumper crop of fresh beans with a flavour that puts

For starters (and mains), her fresh, punchy take on Mexican fare is the first thing we’re planning on making when the weather starts playing along. not that you can’t enjoy her menu indoors, but those bold colours and crunchy-fresh flavours are the stuff of picnic dreams. another first for daniela (she’s only 28) is being named ‘The World’s Best Female Chef ’ – the youngest ever to receive the accolade. That’s reason enough to celebrate...

BRUSSELS SPROUT TACOS WITH SPICY PEANUT BUTTER SERVES 4 Cooked and raw Brussels sprouts are matched with a rich umami dressing and a spicy nutty sauce in this surprising but winning taco.

2T cayenne pepper 3/4 cup unsalted, roasted peanuts, plus 1/4 cup crushed 450g Brussels sprouts, trimmed, divided 1 cup vegetable oil 1/4 cup vinaigrette 8 corn tortillas 1/4 cup finely chopped white onion Sliced avocado, sliced jalapeño chillies, coriander leaves, lime wedges 1. Purée cayenne pepper

and 3/4 cup whole peanuts

in a food processor until a smooth butter forms (about 2 minutes). scrape into a small bowl. 2. Very thinly slice a quarter of the Brussels sprouts; transfer to a medium bowl. Cut remaining Brussels sprouts in half. heat oil in a medium skillet over medium-high. shallow-fry halved Brussels sprouts in batches, being careful not to overcrowd the pan, until browned and crisp (about 5 minutes per batch). Transfer to paper towels to drain, then add to sliced Brussels sprouts. drizzle with vinaigrette and toss to coat. 3. To serve, heat a medium skillet over medium-high. Working one at a time, cook tortillas just until warmed through; transfer to plates. spread tortillas with some spicy peanut butter; spoon Brussels sprouts over. Top with onion, avocado, chillies, coriander and 1/4 cup crushed peanuts; sprinkle with sea salt. serve with lime wedges.

SALmON TOSTADAS SERVES 4 Great tostadas vary, but their composition – crispy base, creamy topping, substantial protein – is the same.

Extra-virgin olive oil (for drizzling) 1/4 cup vinaigrette 4 tostadas Coriander leaves, sliced jalapeño chillies, capers and lime wedges 1. Preheat oven to 150°C.

Mix lemon zest into cheese in a small bowl; season with salt and set aside. Place fish on a rimmed baking sheet and drizzle very lightly with oil; season with salt. Bake until just opaque throughout (8-10 minutes). remove from oven and break apart into large flakes. drizzle with vinaigrette. 2. divide reserved cheese mixture among tostadas. Top with fish, then coriander, chillies, and capers. serve with lime wedges.

ROASTED BUTTERNUT WITH KALE PIPIAN SERVES 4 Daniela makes this green sauce with hoja santa, a robust aromatic Mexican herb, but any hardy green will work (we call for kale).

1 cup raw pumpkin seeds 1kg butternut, cubed or cut into delicata rounds 3T extra-virgin olive oil 1/4 white onion, thinly sliced 3 garlic cloves, crushed 225g underripe tomatoes (about 4), husks removed 1 small bunch kale, ribs and stems removed, leaves torn 2 small jalapeño chillies Flaky sea salt Coriander leaves and lime wedges

2. Increase oven temperature

to 220°C. Toss squash pieces and oil on another rimmed baking sheet to coat. roast, tossing occasionally, until browned and tender (30-40 minutes). 3. Bring onion, garlic, tomatoes and 2 cups water to a simmer in a large saucepan over medium-high. Cook until tomatoes are almost tender, (about 5 minutes). add kale and cook just until wilted and bright green (about 1 minute). allow onion mixture to cool in pan until warm. 4. Char chillies over the flame of a gas burner, turning occasionally, until blackened and slightly softened (about 1 minute) or arrange chillies on a rimmed baking sheet and use broiler. 5. Transfer onion mixture to a blender with a slotted spoon; reserve liquid. add charred chillies and 3/4 cup pumpkin seeds to blender and purée, adding reserved liquid as needed to get things moving, until a smooth, pourable sauce forms. 6. divide squash among plates. drizzle with pipian and sprinkle with sea salt. Top with remaining 1/4 cup pumpkin seeds and coriander. serve with lime wedges.

ENCHILADAS DIVORCIADAS SERVES 4 To simplify, choose just one of the sauces and make a double recipe. You’ll end up with a harmonious batch of enchiladas verdes or rojas, accordingly. SALSA VERDE

1. Preheat oven to 180°C.

Toast pumpkin seeds on a rimmed baking sheet until lightly browned (6-8 minutes). allow to cool.

Cook onion and garlic, stirring occasionally, until starting to soften (about 5 minutes). add chillies and cook, stirring occasionally, until onion is lightly browned and vegetables are soft (about 5 minutes). add tomatoes and cook, stirring occasionally, just until starting to soften (about 3 minutes). add coriander and 1 1/2 cups water. Bring to a boil, reduce heat, and simmer until tomatoes soften (20-25 minutes). Let cool slightly; transfer to a blender. Purée until smooth. return salsa verde to saucepan and keep warm until ready to use. SALSA ROJA

1. Place chicken, bay leaves

and allspice in a small pot and pour in water to cover by 2.5cm; season lightly with salt. Bring to a boil, reduce heat and simmer gently until chicken is nearly cooked through (20-25 minutes from the time water starts simmering). allow chicken to cool for at least 1 hour (it should be just warm). If you have the time, cover and chill up to 12 hours. 2. remove chicken from broth. Pull meat from bones and shred; discard skin and bones. Place meat in a large saucepan and pour in just enough broth to cover. set aside any remaining broth for another use. gently reheat chicken over medium-low; season with salt. 3. Meanwhile, mix crème fraîche and feta cheese in a small bowl to combine. 4. heat oil in a small skillet over mediumhigh until hot but not smoking. submerge each tortilla in oil long enough to soften but not so long that they fall apart (5–10 seconds each). Transfer to a rimmed baking sheet lined with paper towels to drain. 5. Working one at a time, fill each tortilla with about 1/3 cup shredded chicken and roll up tightly. Place 3 tortillas each, seam side down, into bowls. Ladle 1/2 cup of each sauce on opposite ends of enchiladas. Top with a big spoonful of the crème fraîche mixture and scatter onion over.

SERVES 8 Daniela uses fresh, home-made masa in her tamales. If using a store-bought variety, choose one with a pronounced corn flavour to most closely match her results.

Nonstick vegetable oil spray 1 1/2 cups masa harina 1t baking powder 1t kosher salt 1t ground cinnamon, plus more for serving 4 ears of corn, husked, kernels removed, or 4 cups frozen, thawed 104

3/4 cup unsalted butter, room temperature 1/2 cup raw or demerara sugar 1t vanilla extract 1 cup crème fraîche 2/3 cup crumbled feta cheese, plus more for serving 1. Preheat oven to 160°C.

Lightly coat a 20×20cm metal baking pan with nonstick spray. Whisk masa, baking powder, salt and 1t cinnamon in a medium bowl. 2. Pulse corn kernels in a blender or food processor until very coarsely puréed; just a few seconds should do it. 3. using an electric mixer

on medium-high speed, beat butter and sugar until pale and slightly fluffy (about 3 minutes). Beat in corn purée and vanilla. reduce speed to low and beat in dry ingredients; mix until batter is smooth (about 2 minutes). scrape into prepared pan and cover tightly with foil. set baking pan inside a large roasting pan; pour in boiling water to come halfway up sides of baking pan. 4. Bake tamale until top springs back when lightly pressed and a tester inserted into the centre comes out clean (75–85

minutes). Let cool slightly in pan before serving. 5. Mix crème fraîche and 2/3 cup feta in a small bowl. scoop tamale onto plates and top with crème fraîche mixture, more feta, and a dusting of cinnamon. 6. Tamales are traditionally wrapped in individual corn husks and steamed, but baking a single large-format tamale in a foil-covered pan set in a roasting pan of hot water produces a similarly tender texture. The result is a moist, barely sweet cake with pudding vibes. n

n authentic african safari is exactly what you’ll get at Londolozi’s Pioneer camp, which finds itself in an impossibly beautiful strip in the renowned sabi sands Private game reserve. In fact, the three luxury suites that make up the camp, while furnished with fort, exude the charm of a bygone era.This was at the heart of the brief for interior designer Yvonne o’Brien when she was tasked with redesigning the camp. ‘It was important for Pioneer camp to remain classic and true to its origins,’ says Yvonne, ‘so we incorporated the story of the pioneer days when Londolozi first began.’ It was due to this approach that the suites now feel and function much more like a home, than a conventional retreat. ‘We incorporated photographs and memorabilia throughout,’ Yvonne explains, ‘which makes this a very personal and intimate space.’ special attention was given to the finishes, to make the camp feel as much of a safari escape as it looks. ‘With the camp being situated in the bush, the elements can be harsh,’ says Yvonne, ‘so we made sure that every aspect of the design – from fabric to furniture – would feel and look luxurious but would also age well.’ The three inter-connected suites make the camp ideal for a large family or group travelling together. The kitchen was upgraded and opened up to allow guests to interact with the chef, much like they would at home. spacious balconies, a viewing deck and large windows overlooking the river allow guests to remain connected with the beautiful environment in the evenings after returning from a full day of game drives. These guided tours offer an intimate look into the heart of this natural oasis, where wildlife flourishes undisturbed by humans. For the quieter moments, Londolozi also offers yoga and meditation sessions, with uninterrupted views of the sand river and its surroundings. ‘We were mindful of this environment,’ Yvonne concludes, ‘and we didn’t try to reinvent anything, but rather worked with the existing level of luxury that Londolozi is so well known for.’ 8 londolozi.com 8 privatehouseco.co.za September 2019 houseandgarden.co.za

Up the Andy The striking facades bringing colour to the streets of bolivia They may look like sets for a new Wes Anderson movie, but the work of Bolivian architect Freddy Mamani is rooted in a far older visual tradition. To create these fantastical facades in El Alto, Freddy drew inspiration from the lines and motifs of the ruined city of Tiwanaku, as well as the South American tradition of weaving colourful textiles. His work strives to bring modernity – and just a bit of magic – to the otherwise adobe-red vernacular of the region.
