Bronco & Corral by Extremis Corral is a rotation moulded polyethylene table that can gather seven Bronco stools. There are a number of options, one of which is a lighting unit that can be integrated into the table, turning it into a lighting object as well. Thinking even further than that, it is also possible to use Corral as a lighting unit when hung upside down from the ceiling. (www.extremis.be)

Gaggenau’s Telescopic Swivel Arm VL 051 Ventilation System The positioning flexibility of the VL 051 enables it to keep air clear even in conditions that often overwhelm conventional downdraft ventilation systems. Home chefs can breathe easily as the telescopic swivel arm moves in close, extracting cooking vapors directly at the source. A delayed shut-off function allows continuous running for 10 minutes after cooking, catching any remaining vapors. After use, the corresponding control knob will automatically retract the ventilator arm into the cooking surface, using a sensor to prevent it from trapping anything as it moves. Impressive in action, the downdraft ventilation system guarantees ease of cleaning: a flashing light on the control panel indicates when the grease filter needs to be washed. The practical stainless steel filter is easy to remove and is dishwasher safe. (www.gaggenau.com)

WINE

TO DINE WITH PERFECT PAIR — If, as Werumeus Bunning said, “Wine is the flower in the buttonhole of civilization,” then, these six wineries are presenting us with bouquets. With modern winemaking techniques and global interest in wines at an all-time high, there are so many delicious wines produced in so many different countries that quality is available in every price range, dozens of grape varieties, and many styles from bone-dry to paradise-sweet. What we look for to distinguish the extraordinary is a combination of style, character, and value. Discovering a wine which stands out in one of these attributes is not difficult; finding one which accomplishes all three is unusual; uncovering more than one from the same winery is remarkable. So, our wine quest for this first issue of Dine was to search out the extraordinary, and we have found it in this selection of Dynamic Wine Duos, illustrating the point that talent and terroir perform, and can do so at reasonable prices.

14

Our half dozen selections below are diverse…two whites, two reds, red and white, and even two sparkling, these exceptional wines proving the rule: Not many rise above the ordinary, but when they do, they are truly remarkable. All of these wines are available in South Florida, mainly in restaurants, but all can be ordered through your local wine shop, as well as Whole Foods and Wild Oats. Prices listed are approximate suggested wine shop retail.

Adler Fels, Napa Valley

Bortolomiol, Valdobbianene, Veneto, Italy

This Russian River property, run by label designer cum winemaker David Coleman, inventor of the adjustable fermentation tank, produces two of the best white wines in America, lauded by Wine Spectator, Wine Enthusiast, Robert Parker, Decanter Magazine, and others. The Sauvignon Blanc has won the most awards of any American wine; the Gewurtztraminer, has the overall highest awards of any wine made in California. To our palates, both deserve their honors. (www.adlerfelswinery.com)

One of the oldest and best producers of the Italian sparkling wine, Prosecco, this 1949 winery makes some of the best, often garnering high honors from the foremost Italian ranking publication, Gambero Rosso. Both of these are light and delicate sparklers, made from the Prosecco grape, using the Charmat or pressurized tank fermentation method. (www.bortolomiol.com)

Sauvignon Blanc

Gewurtztraminer

Prosecco Vino Spumante V.S.Q.

Prosecco Selectione Banda Rossa, D.O.C.

This is a Sauvignon Blanc of such elegance and richness, one might mistake it for a great Bordeaux Blanc, if it were not for the sweet grapefruit aroma and brighter fruit flavors. Somehow, the winemaker has brought together the best of several Sauvignon Blanc regions in this multi-faceted delight. $20

If this wine were an actress, it would be Angelina Jolie… bright, beautiful, exotic, spicy, intense, disarmingly charming. This is a classic Alsatian-style Gewurtz with a California attitude…not subtle, but, like the Big Sur, breathtaking. $20

Less sweet thaN a typical Prosecco, this delicate dry wine exhibits tiny bubbles and a mouth-watering acidity that makes one want to drink and eat more. This is the type of beverage for which the term “aperitif” was coined. Lightly fruity, with just an echo of sweetness, it is the perfect way to begin a meal. $15

The “Red Ribbon Selection” is named after the special bottles the old man, Giuliano Bortolomiol, used to mark with a red pen, reserving them for friends and family. Showing more intensity than the V.S.Q., never-ending bubbles, and a slightly sweeter nose and mouth, it has the verve to move from aperitif to entrée to dessert, a versatile alloccasion pleaser. $22

Estampa

Decadence, Napa Valley

This is a fascinating young New World winery with a genuine Old World influence in its wines. In a country that produces a lot of decent wines for the money, here is one of the few that exemplify our theme…Extraordinary. Winemaker Ricardo Baettig, born in Chile, but having worked in Napa and Tuscany also, brings an international touch to his technique. Recognizing the French origin of the Chilean grapes, he has them held gently in French oak barrels, when they need oak, and lets the land and the grape speak when they do not, and, as is common with these varietals in France, all are blends, even the whites. (www.estampa.com)

A new brand, introduced in October, these wines have taken off in restaurants for two reasons, stylish and catchy labels, and delicious, rich wines. Named for the “art for art’s sake” Age of Decadence, late 1800’s to 1930’s, the labels depict a reproduction of a painting, “Come Fly With Me”, by a prominent Russian artist, and each have a different little story line on the back label, featuring the characters in the painting, Misha and Tatyana. The winemaker is Harry Parducci, Jr., third generation pioneering Napa wine family of “Valley of the Moon” fame, among others. (www.internationalboutiquewines.com)

Gold Assemblage Syrah

Gold Assemblage Carménerè

Cabernet Sauvignon

Chardonnay

Blended with Cabernet Sauvignon, Merlot, and Malbec, a balanced, elegant wine of concentration and spice, with a touch of vanilla in the scent. The more than a year and a half of French oak ageing show in the relaxed tannins and nuanced complexity. $22

Assembled with Cabernet Sauvignon, Cabernet Franc, and Petit Verdot, this is a mature, interesting wine anchored by Bordeaux’s “lost” grape, Carménerè. the Carménerè was identified in 1994 as the grape never replanted after being virtually exterminated by an aphid-type root pest in Bordeaux. What a wonderful food-pairing wine, with 18-months-in-oakbalanced body and tannins, and titillating flavors of anise and smoke, herbs and espresso. $22

This is a textbook example of a lush California-style Cab, with big tannins, but bigger sweet fruit. In fact, for a Cab, it is dense with fruit aromas and flavors…black cherries, plums, and blackberries. The smoothness laid down by the fruit makes it a Cab to sip, as well as to pair with food. And this one can handle dishes usually relegated to Shiraz, barbeque and steak with peppercorns, for instance. $22

in style, more French than Californian, refreshingly dry and complex, with white peach, pear and apple aromas and flavors, and just a touch of coconut. Contrasted with its Cab brother, the two seem like a pair of athletes… he, powerful, but with an almost feminine smoothness; she, a lady with almost masculine strength. What an interesting and tasty juxtaposition! $20

Chateau Lagarosse, Première Côtes de Bordeaux

Selva del Moro, Tuscany

We love Bordeaux. So, we have a bias. Luckily, most of the wines we taste are done blind, so we judge before we know. If you would like to know why, taste this beautiful pair from the Right Bank. “Right Bank” means east of the main rivers flowing through Bordeaux, the Garonne and the Gironde; it also means mostly Merlot. All Bordeaux are blends of at least two of the eight approved varieties. Over the centuries, the French wine producers have learned which grapes work best with which terroir, and which grapes work best with which other grapes to produce the most complex, elegant, arresting red wines anywhere. Ergo… (www.adamsfrenchvineyards.com)

Let’s go to Italy. Is there a more charming, beautiful, sensual country? Are there more charming, personable, sensual people? Are there more charming, delicious, sensual wines? No. No. And No. What is it about this country that captivates us? All men love Italian women. All women love Italian men. Everybody loves traveling there. We all love their wines, and this winery shows us why. Forget that the enologist, Attilio Pagli, is one of the most highly regarded in Italy. Forget that their Chianti Classico was nominated by the CC Consortium as one of the best. What you won’t forget is the taste of the wines from the “Forest of the Moor”.. (www.jgwines.com)

Château Douley

Château Lagarosse “Les Comtes”

Rosso, I.G.T.

Chianti Classico Riserva, D.O.C.G.

The second label of Château Lagarosse, still mostly Merlot, younger vines (20 years), and still, the heritage, the winemaking skill, and the…panache of Bordeaux. Tasting notes? See Ch. Lagarosse, and think, “Cool, but less experience.” $20

At less than ten acres of thirty-eight year-old grapes, this small vineyard on the highest slopes of the vineyard properties produces Right Bank Bordeaux wines of soft tannins, ripe, but tender fruit, supreme elegance and complexity, and long, long finish. Experience what dark fruits, dark chocolate, and dark tobacco are all about in a wine that slides as gently down the throat as an Olympic skier on a victory run. $32

35 years ago, winemakers in Tuscany wanted to make wines that did not fit the legal descriptions in Toscano. THEY NAMED it “Rosso”. Well, they did such a GOOD job that those wines, today, are among the best and most expensive made in Italy. Not this one, though. Among the best, perhaps, but because of the “Super” reasonable price, I call this one a “Baby Super Tuscan”. Sangiovese, Cabernet Sauvignon and Merlot. A classic Super Tuscan blend, but youthful wine, with the fruit and mistero for lighter meat and heavier fish dishes. $15

The heart of the Chianti region, near Florence, is Chianti Classico, which, without argument, produces the best Chianti. And the best of Chianti Classico is the Riserva. So, here, we have the best of the best… boysenberry jam, sweet red peppers, aged cigar tobacco, and stalwart tannins all contribute to the flavor profile of a beverage of legendary food-pairing and ageing potential. Ahhh, the Italians. $30

Oliver Saucy Katy Lynch

Oliver Saucy was destined to become a great chef. Just like his recipes, Saucy’s background contains the perfect mélange of ingredients. A blending of nature and nurture, Saucy’s distinctive talents have captured the country’s attention. Oliver is a graduate of the prestigious Culinary Institute of America (CIA) in Hyde Park, NY, but he actually learned how to cook from his father. He grew up in a medieval German Castle in the Black Forest which had been converted into a resort hotel. Eric Saucy, who retired following a long and illustrious career as a Senior Chef/ Instructor at the CIA, was the resort’s Executive Chef and young Oliver spent lots of time in his kitchen, learning how to perform fundamental cooking techniques. Growing up, Saucy gained an intimate understanding of the dedication necessary to become a masterful interpreter of cuisine. “My father taught me about the importance of using fresh ingredients and those that have been minimally processed. He has always had his own garden,” Oliver says. “He is the one who instilled in me all of the fundamentals. But even though

18

Café Maxx, Boca Raton I am classically trained, I like to think of myself like a musician who has studied the classics and can also play jazz, the blues and hard rock. I like to explore America’s contemporary cuisine.” Upon graduating from the CIA, Oliver was determined to hone his craft. Venturing to South Florida, he developed a unique style and approach to cooking. His position at Café Maxx provided him with the perfect venue to showcase his innate talent and ever-expanding skills. With a love of the eclectic and a dislike for categories, Chef Saucy’s experimentations tantalize the taste buds of his patrons. Utilizing the freshest of ingredients in his daily evolving menus, the chef calls upon the intriguing range of South Florida’s cultural influences. On any given evening, you can enjoy dishes infused with touches from the tropics, Mexico, Latin America, Asia, the Southwest, France and the Mediterranean. Distinctive, most definitely, yet Saucy’s inventiveness never eclipses the freshness of the food. As a result, the menus at the restaurants occupy a position on everybody’s short

list of the area’s top purveyors of the Southeast’s splendid new regional cuisine The perfect balance of classic technique and creative process is what has elevated Saucy to an elite level. On November 13th, BRET, (Boca Raton Educational TV), launched a new local cooking show, The Secrets of Café Maxx, hosted by Chef Saucy and his Chef d’Cuisne Shaun Foley. “We wanted to bring something different to the South Florida audience,” said Saucy who is lauded nationwide for his culinary excellence. “I have been conducting classes at the restaurant for many years and we wanted the opportunity to showcase the experience to a wider audience. We hope people will tune into the program and we encourage them to join us for our TV show tapings which are followed by a fabulous meal.” His list of accolades and distinctions are quite impressive, but his focus is always about pleasing his clients. He strives to concentrate a sharp focus on basics, balancing innovation with a sensible approach. “Balance,” he says, “is the key. It helps me to keep everything in proper perspective.

Nick Nickolas

Nick’s Fishmarket, Boca Raton ALOHA! Renowned restaurateur Nick Nickolas welcomes you to his newest establishment —Nick’s Fishmarket of Hawaii, located in downtown Boca Raton. For 40 years and with 34 restaurants to his credit, his name has become synonymous with delicious seafood and impeccable service. Nick Nickolas is one of the country’s most respected leaders in the hospitality industry, but he’s more than a savvy businessman who became a self-made millionaire, he’s a man who’s passionate about food and people. Raised by Greek immigrants in Oakland, California, Nickolas was instilled with a love of cooking from his mother and with strong work ethic from his father. After receiving his Bachelor of Science from San Jose State, Nickolas ventured to Hawaii with just the suit on his back and $85 in his pocket. After a series of odd jobs, including a stint as a pineapple picker, he landed a job at Michel’s at the Colony Surf, one of best restaurants in the country, where he listened and learned.

Later, he went to work for Jeff Harmon at Honolulu’s Red Vest. Young, ambitious and filled with innovative ideas, his larger than life persona impressed the businessman and in time Nickolas convinced him to back his idea of an upscale fresh seafood restaurant. In 1968, Nick’s Fishmarket debuted in Hawaii and did a million dollars that first year. The legendary Harmon-Nickolas partnership was formed and Nick’s became synonymous with delicious food and terrific service. In the years that followed, Nickolas’ fame and reputation grew as the partners’ restaurants expanded into select cities, such as Chicago, Las Vegas and Beverly Hills. His tremendous success captured much media attention - he’s been interviewed on the Oprah Winfrey Show and profiled in numerous publications including the Robb Report, Esquire, Market Watch and Restaurant Hospitality. While Nickolas’ charismatic personality is always a strong focal point of any interview, the key reason for his preeminence in the hospitality business is the manner in which he runs

his establishments. His insistence upon the freshest ingredients, proper cooking techniques and great seasonings are what makes for a superlative dish. However, the recipe for a successful restaurant requires more than a wonderful meal. “We are in the hospitality business,” stated Nickolas. “We welcome strangers, make them feel good and treat them as if they were entering our home. Hospitality is what our business is all about. It starts the moment the guest walks in the door and is greeted with a friendly smile and continues until the moment the guest leaves the restaurant.” For the past 17 years only the area’s elite could savor the Nick Nickolas experience. Cloistered inside the Boca Raton Resort and Club, for almost two decades, Nick has now entered new exciting waters as he brings his unique brand of hospitality to all of South Florida.

omeone once told me that it’s all about timing. The right place at the right time can make all of the difference between success and failure.

The Carnival Center for the Performing Arts (CCPA) in downtown Miami has finally raised its curtains. Advocates for the project will explain that this exceptional endeavor has been in the works for many years. They will rave about the buildings, and the on- going spectacular performances, but might neglect to tell you that surrounding area businesses, have also been waiting for the right time in which to flourish. Now known as Miami’s emerging Arts and Entertainment District, patrons can count on discovering new pre-performance dining places, numerous after performance club spots and hordes of adjacent shops and art galleries. Get to the area early, dine at a terrific restaurant, experience a memorable show and finally, spend the rest of the evening dancing and lingering, in some of the local clubs… all within walking distance from the Carnival Center. A new and dramatic restaurant recently opened to rave reviews. Just three blocks west of the CCPA, Karu & Y is of course, within walking distance from all of the Center’s cultural activities and definitely aims to get your attention. Count on Karu & Y (and opening soon at the same location, Tottem and Tottem Gardens) to cater to a variety of culinary whims, after-thoughts and musical & visual desires. The name of Karu (which translates into eating) & Y ((which means water) is inspired by an indigenous language of the Amazon River Valley and Coastal Brazil. This enormous 42,000 square foot, city block space, encompasses Karu, an upscale eatery, Y, and opulent ultra-lounge and Tottem, a state of the art special events/entertainment venue that ultimately will create a sensational party destination. Wander into this mostly abandoned neighborhood at night, and try to imagine that in a few short years it will be teaming with revelers. At least that’s what

The silvery exterior is unexpected and startling, much like Speak Easy establishments of by gone eras, must have been for thirsty pilgrims. Walk through the front doors and the experience is like finding an oasis in the desert. Everything is surreal. Focused lighting, music, sleek bars, amazing art fixtures, attentive wait staff and muffled happy conversations coming from everywhere. To make certain that the dining experience is always breath taking, every meal starts with a whimsical amuse bouche and ends with an irresistible array of petit fours. In between, Karu offers an a la carte menu, featuring tapas, appetizers, starters, entrees, and desserts. All of the dishes can be individually tailored to your specifications with the Chef, and handsomely paired with spirits and wines. Courses can range from 5 to 12 different dishes, depending on your appetite. Baleen, Norman’s and the legendary La Broche, has designed an Alta Cocina menu that reflects the ultra modern style and concept which he is so excited about. He creates an assortment of innovative dishes with traditional ingredients and a variety of fresh local products, but orchestrates techniques and textures that produce imaginative and sensational preparations. After years spent perfecting his craft, in the kitchens of “top toques” including Norman Van Aken, Robin Haas and Angel Palacious, Cabrera is more than ready to amaze clients with his flavorful dishes. Enjoy a variety of taste-bud-awakening appetizers including an Octopus Carpaccio accompanied by a lemon sorbet, duck crisps and caper salt or a fragrant Clam Bake “siliqua patula” which is a rich mixture of imported clams, mussels, and langoustines, potato water, piquillo pepper granite, charred white corn candy and celery greens. Entrees offer choices designed to appeal to culinary explorers. Try the tender Wagyu Sirloin served with Karu’s fried, seared cuttlefish, tomato compote, quail egg, soy infused puffed rice and Enoki mushrooms. The Hog Snapper topped with butter and surrounded with poached langoustines and a fava bean agnolotti is unbeatable for seafood aficionados. A full tapas menu is priced at $9.00 and up and is available until 5:00 a.m. with choices including Fig Rollups stuffed with house cured ham and

creamy Spanish Idiazabal cheese, key lime poached lobster or Baby Pork Chops glazed with guava barbeque sauce. If it’s a bit of the bubbly that you crave, not to worry, they are “well stacked” with over dozens of delectable Champagnes and they also have a notable wine list. The menu is not inexpensive, but it is…a memorable treat. The environment is sublime. The place is upscale and the timing seems to be perfect for this gastronomic adventure. No expense was spared, from custom made tables to leather sofas, from one-of-a-kind artworks to impressive amenities like great notes played by talented musicians. magine the aromas of coal-oven pizza, earthy olive oil and heady wines. Now, picture coal-burning ovens, fireplaces, antique Vespas and a round of bocce ball. You’ve found yourself in a quaint Italian village, right? Wrong. You’ve stumbled upon Vic & Angelos restaurant. Famed restaurateur and creator of Delray Beach’s Sopra, Gotham City and Shore, David Manero is at it again with his latest creation, Vic & Angelos. This time around, Manero’s managed to merge Old World dining with New World hipness. A modern-day enoteca (Italian for wine bar restaurant), Vic & Angelos is a tribute to the traditional dining scene in Italy. Manero says, “When you step into Vic & Angelos, you will feel like you have stepped into another world.” He adds, “We think diners are ready for a return to good, fresh homemade food just like Italian grandmas used to make.” And grandma knows best – the menu features Neapolitan coaloven pizza, homemade pasta and a stellar wine selection. Best-known for its coal-oven pizza, Manero’s got a few tricks up his sleeve when it comes to perfecting the pie at Vic & Angelos. Manero swears by one key ingredient for pizza dough: New York City water. Yep, you heard right, folks. “We draw water from a secret faucet on Mulberry Street – it’s magical! Even chemists don’t know why!” he exclaims. Manero clearly doesn’t mess around, Big Apple acqua is the brought in for pizza precision. “You’ve got to try the ‘originale’ pizza when you come,” Manero says of the must-savor slice. The great attention to hand-crafted and authentic fare also translates to the old-world décor. David’s wife, Lynn created an authentic Italian gathering place with a modern feel. The coalburning oven, dual fireplaces, authentic red brick and reclaimed antique wood floors gives the restaurant a warm feel. Dining al fresco can be enjoyed on the Italian piazza-inspired marble patio with colorful custom umbrellas and Italian-style wooden benches overflowing with oversized throw pillows. Charming schoolhouse tables and gigantic planter, vintage Vespas and antique cellar doors add a flair and whimsy. Manero says of the inspiration, “Think mythical. Think Michael Corleone’s Nevada

IL MULINO

Mangia, MANGIA!

By Maria Tettamanti

With a track record of being voted as the number one Italian restaurant in New York City for two solid decades by Zagat’s, it’s no wonder Il Mulino New York made it’s way to the sandy shores of Sunny Isles with enthusiastic anticipation. After dining at the Italian ristorante it’s clearly apparent why Il Mulino has become one of New York’s landmarks — the fare è delizioso. The menu boasts vibrant flavors familiar with the mountainous countryside of Abruzzo, Italy — the hometown of Il Mulino’s creators. Brothers Fernando and Gino Masci were born and raised in L’Aquila, the regional capital of Abruzzo where la gente live

simply, attuned to and appreciative of their surrounding landscapes. Like its inhabitants, Abruzzese cuisine is characterized by its simplicity: a rustic and hearty blend of the freshest ingredients available, from fish, lamb and cured meats to homemade pecorino

and ricotta, all meticulously prepared to celebrate and enjoy with family, friends and even strangers. Raised within this welcoming tradition, the Masci brothers discovered their passion for food. As teens, the duo apprenticed in the finest restaurants in Rome, learning from the culinary masters about food preparation and service. Their culinary careers took them all over Europe and Canada, where they further honed their skills, and finally settled in New York City in the ‘70s where an institution was born. While the Greenwich Village location opened 20 years ago, Il Mulino has expanded into Long Island, Tokyo, Dallas, Las Vegas and Chicago. And now, South Floridians need not travel far for a taste of Il Mulino. Nestled inside Sunny Isles’ Acqualina, the restaurant boasts impeccable views of the Atlantic and a warm, welcoming ambiance. All meals begin with a complimentary antipasto tasting of soppresatta (Italian salami), bruschetta, Reggiano Parmesan, fried zucchini and garlic bread. While this culinary courtesy is enough to fill your stomaco, pace yourself and be certain to save room for more. Tuxedo-clad wait staff provide tableside cooking, adding a truly unique touch. Savor the escargot (with just the right spicy kick), fettuccini Alfredo (sweet and buttery, but not too heavy) and tiramisu. The wine list thrills the swirl-and-spit crowd and includes over 200 selections from Italian varietals with a focus on the Piedmont and Tuscany regions. All guests receive a complimentary glass of signature house Grappa as a digestevo to round up the flavors of the meal. From the cannelloni to the veal parmigiana, you’d be hard-pressed to find a better place to indulge in classic Italian food. Il Mulino may be a household name in the Big Apple, but it’s making waves in Sunny Isles Beach. Il Mulino is located at 17875 Collins Ave in Sunny Isles Beach. For reservations please call (305) 466-9191. Visit them online at www.ilmulino.com.•

By Maria Tettamanti

When the Torontonian owner of The Fifth Social Club and The Fifth Restaurant, Oliver Geddes, wanted to branch out to sunny shores of Miami Beach, he coincidentally found what he was looking for on Fifth Avenue in South Beach.

Located off the beaten SoBe path, The Fifth Miami Beach is anything but your average watering hole. Outside the club, you won’t find flyers and wristbands being passed on the street in a desperate attempt to lure you in. Inside, you won’t find obnoxious security guards playing gatekeeper to private areas. Thanks to legendary nightlife entrepreneur and The Fifth’s Marketing Director, Gerry Kelly, it’s a place where Miami’s movers and shakers mingle, “It’s a very upscale crowd — I’d like to brand it as Miami’s A-list. Most clubs have a VIP room — this a VIP club.” With a clientele list that reads like the pages of Us Weekly — Paris Hilton, Mickey Rourke, Scott Storch, Jeremy Shockey, Venus and Serena Williams, Kate Hudson and Ivanka Trump — The Fifth is arguably Miami Beach’s most coveted club. While the décor transcends its patrons to a swanky New York City loft, The Fifth’s level of service is bar none. A concierge at the nightclub’s entrance ensures guests will have their bottles upon seating and the lady’s bathroom is equipped with a fulltime complimentary hair and makeup artist. “We also have private VIP coolers which you can purchase. You pay a fee of $25,000 a year and you get your own private cooler with your name on it, $25,000 worth of complimentary bottles of your choice and a membership key to the club. So far Paris Hilton, Mickey Rourke, Kate Hudson, Ivanka Trump and several local VIPs own one,” Kelly adds. The Fifth also adheres to a strict dress code policy fittingly coined as “South Beach Chic.” On Friday nights 80s, house, R&B and hip-hop beats rule the scene, while Saturdays are strictly house music. Slake your thirst with The Fifth’s signature tequila-infused “Patrini” — we can assure you that after a fabulous evening here, you’ll be pleading, “Take me back again and again.”

Ta-boó By Marguerite Gil

A Forbidden Pleasure For Everyone

On one of the most well known and fashionable streets in America, a discrete doorway beckons. Palm Beach’s Worth Avenue may well be the most luxurious street in the states, beating out California’s Rodeo Drive and New York’s 57th Street, but when all of that strolling and high end window shopping gets a bit tiring, well, one needs to find a place to replenish. Pull open an unassuming emerald green door marked Ta-boó and slip into an oasis of elegant tropical comfort.

come with Asparagus and scalloped Potatoes. Chef Simon also prepares a Veal “Osso Buco” that is served with sautéed Spinach and mashed Potatoes. Guests can choose from over 20 assorted entrees and over 50 different items on the menu. Opposite page: The main dining room is elegant yet relaxing. Below: The bar at Taboo is the ideal relaxing place to enjoy a cocktail and catch up with friends while pianist Don Scherzi entertains you. Left: Enjoy the eclectic American bistro fare in the airy

As the door gently closes behind you, you’ll first find yourself in a garden inspired, front dining area. Wooden, beige, trellis-works set the mood. Framed prints of palm trees and ferns decorate the walls. A shiny baby grand piano, topped with fragrant flowers, tell you that you can expect all of your senses to be pampered here. Originally opened in 1941, Ta-boó has become a landmark in Palm Beach. Coowners Nancy Sharigan and Franklyn deMarco took over the restaurant in 1990. They completely renovated the space and created a refined yet contemporary atmosphere that has established a loyal following amongst locals and tourists alike. Walk past the long bar which houses a large tropical aquarium and discovery four more ample dinning rooms. Richly decorated with Asian/African influences, the numerous hand painted fresques depict a variety of jungle scenes with agile monkeys hanging from branches and vines. “I think that our success has been consistency” says deMarco. “We occasionally drop a few items from the selection of dishes that we offer, but basically we remain consistent with our

choices. People are familiar with the menu, and that keeps them coming back.” Ta-boó’s choices are impressive. Lunch specials vary, from pan roasted Chilean Sea Bass to Margherita Pizzas and Cheeseburgers. Starters include a southwest combination of Gulf Shrimp, Crabmeat and Peppers, served with a tangy Mango sauce, to a wheel of warm Brie covered with toasted Almonds, fresh Fruit and crispy French bread. If you’re in the mood for a power lunch try the warm Steak Salad. The chef will grill strips of marinated Filet Mignon for you, and surround the meat with mixed Salad greens, Mushrooms, Tomatoes, red and yellow Peppers, Gorgonzola Cheese and red Onions, smothered with the house dressing. Another favorite is the Grilled Chicken with Goat Cheese that is served on a bed of Field greens, Pine nuts, Mushrooms, sun-dried Tomatoes, Carrots and is topped with balsamic vinaigrette. You’ll find many of the Starters, Soups, Pizzas and Salads on both lunch and dinner menus for the same prices. Dinner specials include a live Maine Lobster (1 1/2 lbs.) with melted butter or Grilled Swordfish with a lemon-caper-dill sauce. Both dishes

Ta-boó’s wine list ranges from light Napa Valley Chardonnay to a rich Chateauneuf de Pape to La Grande Dame Champagne (Clicquot) from France. Pianist Don Scherzi entertains seven nights a week with an assortment of Cole Porter melodies and other popular American classics. The music is enjoyable and soothing. On Fridays and Saturdays one of the dining rooms is cleared after 10:00 p.m. and guests can dance to their favorite tunes. Sit back, relax and just enjoy the great food, comfortable furnishings, fine spirits, professional wait staff and tropical surroundings that can be found at Ta-boó. Ta-Boo is located at 221 Worth Ave. in Palm Beach. For reservations please call (561) 835-3500. Visit them online at www. taboorestaurant.com.•

Johnny

H

Be Good

e’s been dubbed the “Caribbean Cowboy” among culinary crowds. He’s successfully married barbeque and boniato. He also incorporates Cheez Whiz into his eponymously named restaurant’s menu. He’s Johnny Vinczencz, owner of Johnny V Las Olas, and soon, Johnny V South Beach restaurants.

Top: Executive chef/co-owner Johnny Vinczencz (P: Jeffery Salter) Below:Mojito rum cake,Executive pastry chef Malka Espinel (P: Ian Maguire)

34

Born and raised in Missouri, Vinczencz (pronounced vin-SENZ) is a good ol’ midwestern boy. Sticking to his midwestern roots, Vinczencz’s menus are heavily influenced by an American favorite pastime: barbequing. Swayed by South Floridian flavor, Vinczencz added a tropical twist to his barbeque approach. “BBQ has always been an influence on my food. Smoking, grilling, hand made dry rubs — these are ingredients and techniques I apply to contemporary American cuisine. At Johnny V South Beach I wanted to take this a step further. I love South Florida and wanted the new restaurant to serve the type of food I feel could only come out of a place as culturally and ethnically diverse as Miami,” Vinczencz says. Miami, it turn out, is where he hurdled into the national culinary scene. At the age of 15, he was offered a job in the kitchen at an Ohio Sheraton. As his skills developed, he relocated to South

Florida where he landed a job with the successful restaurateur and founder of Unique Restaurant Concepts, Dennis Max. “I would say that working at Unique Restaurant Concepts was the first big stepping stone I had,” Vinczencz says. Vinczencz was soon named executive sous chef at two celebrated restaurants, Maxaluna and Max’s Grill and was later anointed as executive chef at SoBe hotspot Astor Palace in ’95. Well-seasoned and prepared to take the heat in his own kitchen, Vinczencz launched Johnny V Las Olas in December 2003. The contemporary, 200-seat restaurant in the heart of Fort Lauderdale prides itself on soul-satisfying savors. “Fresh ingredients are key but my style mostly consists of the techniques I use and the way I apply them. For example, with the simple tomato soup served at the Las Olas restaurant, I first smoke the tomatoes, which gives them an extra depth of flavor. I serve the soup with little brie-cheese sandwiches. You don’t get more American than tomato soup and cheese sandwiches. But it’s about taking something familiar and then giving it an interesting twist,” Vinczencz says. Other fascinating choices on the carte du jour include barbequed duck breast “meatloaf” with smoked apple bacon, mango barbequed braised short ribs,

chipotle barbequed pulled chicken and Jamaican jerk spiced seared tuna. As for the “must-eat” item on the menu Vinczencz suggests, “At Las Olas, it’s the ‘Florida Thanksgiving’ — pan-seared dolphin with plantain stuffing. It’s always a homerun and people go nuts for cheese menu.” Customers also go nuts for Johnny V’s exceptional service. When asked, “What’s the secret to your success?” Vinczencz answers, “It’s a simple equation — great food and service, plus value equals a loyal customer.” He adds, “First and foremost I think the food is very approachable and that automatically puts diners at ease. As for the restaurant itself, it has a cool, contemporary vibe but also happens to be very informal. The bar has a great energy and with the outdoor patio it’s great for people watching on Las Olas. When not brewing over restaurant-related responsibilities, he loves spending time with his son and girlfriend. As for the future, Vinczencz is busy with the slated November opening of Johnny V South Beach inside the Hotel Astor and is also working on a book. He jokes, “I have a couple other projects I’ve been working on that might see the light of day in a couple years.” Whatever they may be, we know Johnny will be good. Wish For A Star… Four Stars For Wish By Marguerite Gil

South Beach is host to a vast assortment of delicious restaurants. One, which easily breaks away from the pack, is Wish at The Hotel. A recipient of the Mobil Travel Guide Four-Star Award 20012005, Wish treats their clients to a romantic indoor/outdoor dining experience that is, to say the least, memorable. Under the guidance of award-winning executive Chef Michael Bloise, this elegantly decorated restaurant, offers a classic American cuisine interwoven with sensual Asian accents and spices. Since its opening, the handsomely designed eatery at The Hotel has been a proving ground for some of the nation’s top culinary talents. Called a “Rising Star” by Restaurant Hospitality, Bloise’s preparations reflect the great pride he and his staff take in providing guests with the freshest and healthiest ingredients and combining them into unimaginably tasteful dishes. Using locally grown organic products, they strive to provide an exemplary meal, while being environmentally responsible. The interior décor created by fashion designer Todd Oldham, is both cool and inviting. The exterior offers al fresco dining in a tropical garden setting. Magical and without a doubt, very romantic, the “Inner Garden” also evokes the soothing outdoors, by incorporating exotic garden plants and lush vegetation, which surround the intimate dining space. This hot

spot has attracted such celebrities as Mick Jagger, Jon Bon Jovi, Lenny Kravitz, Oliver Stone, Susan Sarandon, Claudia Schiffer and Cameron Diaz among others. Hotel guests and clients are enticed to sample the Spire Bar & Lounge on the rooftop before dining, or just about anytime for a SoBe nightcap. Mixologists prepare neon-colored electronic cocktails or serve traditional glasses of full-bodied wines, which can be sipped, while taking in a perfect backdrop of ocean waves and swaying palm trees. Once your table is ready, prepare to be pampered by a consistently efficient and professional wait staff. Appetizers include pan-seared Foie Gras with black pepper Marshmallow, Cascabel roasted Banana on a bed of Arugula and Honey Wheat. A Roaring Forties Blue Cheese starter is served with Gala Apples, Watercress leaves Walnuts and a scrumptious Fig Jam Vinaigrette. The seafood inspired Tomato-Lime soup with chilled Main Lobster chunks, Avocado, grilled Chayote Squash, toasted Corn and

Basil leaves, is a refreshing start before you tackle your main course. As an entrée, savor the Fennel crusted Ahi Tuna with Yuca Gratin, Calamata Olives surrounded by a healthy serving of stewed Plum Tomatoes. One of the favorite dishes, chosen by meat lovers who visit Wish, is Above Right: Wish’s interior décor by fashion designer Todd Oldham is both exotic and cozy. (p. the Black Angus, 16 oz. Bone in New York Strip, flavored with Italian Sausage, creamy Potatoes, Onions and Peppers. It qualifies as a hearty meal unto itself. Another favorite is the pan roasted Chicken, known as the “Happy Pancake” Crepe. Their tasty moist Chicken is smothered with Chayote Squash, Oyster Mushrooms, sprinkled with Cilantro and served with a Chile Beurre Blanc inside a very happy pancake. For the vegetarians amongst us, Chef Bloise offers a Multi-Component, custom crafted (as you Wish) helping of your preferred veggies. Surf lovers can enjoy the crispy skinned Snapper that includes grilled Shrimp, Chinese Sausage surrounded by Jasmine Rice and Vietnamese Tea Foam.

Desserts are beyond decadent. If there is still a little room left in your tummy, try the warm Valrhona Chocolate Cake. Along with a rich chocolate outside, this cake has a Pistachio center, layered with spiced Compote. It is presented on a plate, with a scoop of Pistachio Ice Cream gently caressing the chocolate and this treat just beckons to Chocoholics everywhere. From the savory to the sublime, Wish also offers an untraditional Tiramisu made with sweet soy and rosemary, two unusual flavor combinations that help balance out the earthy coffee flavor. Besides an excellent selection of Champagnes and Sparkling Wines, Wish also offers after dinner Portos and Liquors. Champagnes include Bouvet, Brut from the Loire Valley, Perrier Jouet, Grand Brut from the Epernay area and a Pommery, Pop, Extra Dry. Dessert wines include Moscato D’oro and Sauternes. Chef Bloise has created a cuisine which concentrates on innovation and natural flavors while highlighting freshness, local produce and classic American dishes. The kitchen as the main room of the house:

new trends in kitchen design By: Gustavo Arcia

48

www.floridadine.com

The transformation of the kitchen has been dramatic. The kitchen, long seen as the place where family and friends gather to share the day and to enjoy informal meals, is now the new family room, combining formal dining and entertaining with cooking and sharing. The key to the success of the new design is the layout of the functions associated with food, and the quality of the materials.

Imagine your own greenhouse inside your loft. The designer redefined the meaning of gourmet cooking by installing an indoor herb garden right in the middle of the kitchen.

In South Florida the baby boomers brought new life into kitchen design. Boomers have high incomes, good education, are more traveled, and more interested in experimenting with high design and new technology. New luxury buildings aimed at the boomer market are frequently associated with world class architects, like Antonio Citterio, Phillipe Starck or Richard Meier. The great design names of the fifties and sixties are back in the headlines and dropping the names of Mies van der Rohe, Eames, Saarinen and Aalto at cocktail parties is part of a normal conversation about real estate and furniture. Maria Ysabel Comella, the kitchen designer at Arclinea Miami, explains further: “The new design follows a natural flow: food storage leads into the cooking area, which in turns leads into the enjoyment area, ending into the clean up area. Together, these functions are combined into a room that looks natural, comfortable, accessible and, most importantly, beautiful. The kitchen is now a room where everyone wants to be in when not sleeping; a room in which a person can be cooking and the guests can be sitting in the same room at a table that is elegant enough for formal dining.” Antonio Citterio, one of the leading architects and industrial designers in the world today, has led this design trend with his Convivium concept, where teak and stainless steel combine to create a design statement that it is also very cozy and intimate. Now that the housing market is tilting more and more in favor of consumers, builders and developers are rethinking the kitchen space to stay ahead of the competition. Here is a short list of trends that are transforming the kitchen into the most important room in the house:

The kitchen jus isn’t another room in the house – it’s a warm, nurturing place that is ideal for social gatherings and conversation.

Stainless steel is proving to be the versatile new neutral in the kitchen.

a. Brands are important. Anyone reading an ad for a new luxury building will find that the names Gaggenau, Miele, Sub Zero, Thermador, Viking or Wolf are touted as indicators of the quality of the kitchen, since they all are excellent. Now consumers have started to pay attention to the brands of the kitchen cabinets: Arclinea, Boffi, Bulthaup, Ernestomeda and Varenna are just a few examples of cabinets with great design and excellent quality. Once exposed to a name brand, consumers tend to visit the brand’s web site and get better acquainted with its quality and design. By the way, this only works with good cabinetry, since cheaply made cabinets tend to have websites to match. A good brand has a website that helps consumers to become better informed about design and functionality. b. Kitchens are emotional. Kitchens provoke deep emotional responses in people. The new designs allow household members to sit in the kitchen—even a small one—and partake the enjoyment of the moment with family and friends while being next to the source of food and drink. A kitchen with emotion will always be recognized immediately by consumers as more desirable. Kitchens should remind you more of Renée Zellweger and less of Kate Moss. c. Spend wisely. A brand name European cabinet is certainly more expensive than a knockoff from China or Brazil, but they last a lot longer and have a wow factor that no cheap cabinet can reproduce. From the quality of the hinges and the sound of the closing door, to the color combination of doors,

brand name cabinets will convey to consumers that the entire kitchen is a quality kitchen. A well designed kitchen should be in tune with the quality of its cabinets and its appliances.

Large, open-plan kitchens increase the size and functionality of the area.

d. Efficiency and functionality. Europeans have been dealing with tight spaces for decades. As a result, their kitchen cabinets are very efficient. They have developed ingenious ways of dealing with dead spaces, such as corners and the areas close to the ceiling. Years of dealing with cramped apartments have produced kitchen designs that feel like a glove: warm, comfortable and unobtrusive. Cooks feel good in those kitchens, but they do not really notice why. This should be a clue to consumers: invest in good design and in good quality of materials, because the rewards are immense. photos courtesy of Arclinea. Dionysian Delight By Maria Tettamanti

From Santorini’s black-sand beaches to Mykonos’ jet-set attractions, the Greek Islands are breathtakingly amazing. Travelers can discover ancient sites, museums, tavernas and wineries while basking in the Greek Islands’ mystic beauty. And as a fellow Greek myself, I know foodies will also love visiting the isles thanks to its Mediterranean fare which is delicious, uncomplicated and surprisingly healthy. Amongst the Hellenic hoi polloi, food is a celebration and a constant source of amusement and joy. Opa!

from Santorini to Mykonos Greece is a culinary paradise

64

www.floridadine.com

While isle hopping in Greece, do introduce yourself to new tastes. Greek cuisine is generally the same throughout the mainland and islands, so the following guide will help you pick the best selections from any menu while abroad. Prepare your palate for the distinctive flavors of garlic, oregano, lemon juice and olive oil in every bite you take.

sipping a glass of chilled ouzo or retsina wine while making small talk, teasing and laughing around a table in the open air is something that any Greek would never trade for any entertainment in the world. It’s also a custom to which visitors to Greece quickly become addicted. So when choosing any Greek appetizer, be sure to sample: Tzatzíki: cucumber and yogurt dip Taramosalata: fish roe, crumbled bread, olive oil and lemon juice dip Melitzanosaláta: eggplant dip Skordaliá: hot garlic and beet dip Keftédes: fried meatballs Spanakópita: spinach and feta cheese pie Tirópita: feta cheese pie Dolmádes: stuffed grape leaves Saganáki: fried salty cheese

Kreata Kreata are meats and should always be accompanied by a traditional horiatiki “village” salad of cucumber, tomatoes, feta cheese and olives. Compliments of Greece’s mountainous terrain, the land is better suited for raising sheep and goats rather than cattle. With that said, lamb and kid have traditionally been preferred over

This page (clockwise): Olives are the soul of Greek cooking, eaten as an appetizer or incorporated into dishes; grilled souvlakia; and stuffed grape leaves

Mezedes Simply said, mezedes are appetizers and are so appealing that one can make a whole meal of them. In fact, there are even restaurants, known as ouzeris or mezedopoleia, where the menu consists of nothing but appetizers. Mezedes are a selection of hot and cold dishes served on small plates perfect for sharing. The local tradition of picking at appetizers and slowly

Opposite page (clockwise): Outdoor terrace of a Café in Santorini. The English menu caters to the tourists, but the flavors our 100% Greek. A specialty, fresh grilled octopus is servered simply with local extra virgin olive oil. The views from the cliffside restaurant of Santorini offer breathtaking views of the Meditarranean.

65

south beach to palm beach Clockwise: The bounty of the Meditteranean is available at local markets. The fish is fresh as can be and an assurance that the local restaurants are always stocked with a plentifull supply. Go off the beaten path and discover secret coves where the waters are crystal clear. Baklava is the ideal closing to a luscious Greek meal.

Food for Thought

When in the Greek Isles, visit the following hot spots

beef and veal. So when choosing the meat portion of your meal, do order: Arní Soúvlas: spit-roasted lamb Souvlákia: meat kebabs Kokorétsia: grilled lamb entrails Kotópoulo soúvlas: spit-roasted chicken Moussaká: meat and eggplant casserole Pastítsio: baked pasta with meat Yemistá: meat-stuffed peppers and tomatoes

Thalassina Immersed in the deep-blue Aegean Sea, the Greek Isles are infamous for tasty thalassiná — seafood. Since ancient times, fish and seafood have been a fundamental part of the Greek diet and are considered the most exquisite and delicate dishes amongst locals. Restaurants specializing in seafood fare are called psarotavernas. Do try the following Grecian gastronomical goodies: Oktapódi: octopus in vinegar Kalamarákia: fried squid Bakaliáro: fried salted codfish Garídes souvlaki: grilled shrimp

Every meal should end on a sweet note, and Greek meals are no different. Order some baklava (filo soaked in honey) to satisfy your sweet tooth. And lastly, any trip to Greece is incomplete without a swig of ouzo — an 80- or 100-proof anise-flavored aperitif, served with water or ice. Do toast to life with the Greek word for cheers — Stín iyá sas!

66

• When in Santorini, visit the Boutari Winery. Boutari is the island’s largest winery and Greece’s best-known wine export. As far as restaurants are concerned, Selene in Fira is the best and prides itself on using local produce in a creative manner. • Mykonos bound? After a night of partying, head over to Antonini’s — it’s one of Mykonos’ oldest restaurants and is a local fave. • While in Naxos, dine at Nikos. The owner, Nikos Katsayannis, is a fisherman, and the range of seafood will amaze you.

UTAH STYLE

Fantastic cross country trails, snow cats traversing through unspoiled landscapes and pristine wilderness sites, make skiing in the state of Utah an unforgettable adventure. Leave Florida’s warm temperatures behind and head northwest, towards those frosty peaks, for a cool winter vacation.

68

www.floridadine.com Previous Page: The venison entree at the Sorrel River Restaurant; The spa pool at the Cliff Lodge in Snowbird Right: Located inside the Cliff Lodge and Spa, Aerie restaurant, lounge and sushi bar serves up the best contemporary Asian food in Utah and offers spectacular panoramic views of Snowbird through its fifteen foot windows

One resort which sets itself apart is Deer Valley Resort at Park City. Known for its restaurants, lodgings and family programs, this place aims to please and makes sure that guests are handsomely pampered during their stay. Although the 3,000 foot, vertical drop, is not amongst Utah’s highest slopes, according to visitors, it is perfect for fast, fall-line cruising on groomed, smooth snow. Intermediate and advanced skiers will find challenging powder shots everywhere. After a morning of sliding and traversing, head for some dining spots, which include a lunch break on the sundeck of the Royal Street Café or later at the upscale Mariposa Restaurant. Deer Valley Resort offers great ski options, exclusive and high-end amenities, and the service is paramount. About an hour’s drive from the Salt Lake airport, you’ll find the Snowbird Resort. Nestled in between mountains which reach an elevation of just over 11,000 ft., the area’s facilities and routes will please skiers of all levels. From beginners to die-hard enthusiasts, the well manicured slopes are exciting, but are also deeply divided. On one side, expect reasonable hikes upward and easy down hill trails. The other mountains offer challenging steep faces where down hill racers will sometimes find themselves in chin-shot-deep snowfalls and open bowls. Snowbird Resort has a selection of more than 300 routes down its 2,500 acres. After an exciting day on the slopes, be sure to stop by the Cliff Spa where you can unwind and enjoy the breathtaking view of Little Cottonwood Canyon while being pampered to the fullest with a mountain glow scrub or an herbal wrap. If you enjoy this first

class treatment and romance is in your agenda, be sure to check out The Aerie Restaurant, voted Utah’s most romantic restaurant where you can savor the Panko Crusted Ahi Tuna Roll or indulge in the Winter Crème Brulee. Located within the Manti-La Sal National Forest in Moab, Utah, The La Sal Ski area, offers numerous routes open to cross-country skiing, sledding and various risky, but interesting snowmobiling trails for our “warm weather snow birds.” The LaSal Mountains offer miles of groomed trails and accessible deep meadows. Some areas are quite steep; in fact, steep enough for telemarking, which often lead to higher terrains, where experienced backcountry explorers and mountaineers can find long descents equal to any in the state. Looking to spend several days exploring the outdoors, but want to be pampered at the same time, stay at the Sorrel River Ranch & Spa. This four-diamond hotel and spa is recognized for its luxury lodging accommodations, outdoor activities, and for the gourmet food served at The River Grill Restaurant. Overlooking the Colorado River, some claim that The River Grill Restaurant offers the best view for dining in all of Moab. This restaurant exhibits panoramic views from nearly every seat in the room and features salads, steaks and pasta in an environment that is perfect for both an intimate dinner and a large gathering among friends.

ow will the baby-boom generation reshape the definition of middle age? According to demographers, economists, and sociologists, this generation has a major impact on all aspects or society as those in it mature: so how will the “Boomers” redefine aging? Getting older doesn’t have to mean getting old. We certainly don’t have to accept the traditional concept that aging means declining strength, health and quality of life. We can choose to maintain and create healthy, strong, vital bodies and minds. For 5,000 years, yoga has been a path to health and living consciously in these bodies we inhabit. We’re just discovering what has been known in India for thousands of years: that yoga is a personal “fountain of youth” because of its rejuvenating effects on the body and its calming influence on the mind. It’s a pathway to heightened awareness of ourselves physically, mentally, and spiritually. Yoga is adaptable to any age or physical condition, and it’s more effective than pumping iron for building strength and flexibility. It’s more effective than aerobics for building stamina and breath control, it’s more relaxing than jogging, and it has been clinically shown to lower blood pressure, increase circulation, build muscle tissue, increase flexibility, relieve stress and stress-related symptoms, and strengthen the respiratory system. Yoga offers relief from symptoms of menopause, it can counteract osteoporosis, cleanse internal organs, energize the nervous system, balance out the digestive system, and relieve headaches and lower back pain. As a spiritual practice, yoga can be a pathway to greater enlightenment. It benefits the body mind, and soul Yoga is an adventure into ourselves and into our health. Health is a choice, and attitude, a state of mind. What do you want 50 to look like? It’s all up to you. Through yoga we have the opportunity to redefine ourselves at 50, and at any age.

to Casa Casuarina, Spa Eleven brings the utmost customized, lavish experience to each guest. There are eleven treatments to choose from and guest’s choice of Cristal champagne or a Casuarina exotic fruit elixir is provided upon arrival. Dine Magazine took a particular liking to the “Galassia” treatment — a twilight facial, tuberose massage and neroli body ritual performed on Casa’s rooftop palazzo. Guests can also travel to Northern Africa with the “Morocco” ritual — a languid journey to Morocco with headto-toe rose petal warm oil massage, body envelopment and exotic rose facial complete with a warm rose petal foot bath from the spa’s bath butler. And for men only, there’s the “Medici” service — a menthol hot-stone massage, barber facial and exclusive gentleman’s manicure and pedicure. Adding on to the luxe factor, lavish embellishments are most welcome, and the spa is pleased to adapt treatment lengths to fit any guest’s desires. Maria Tettamanti

t’s the playground for rich and famous. Located in the center of it all on Ocean Drive, South Beach, Casa Casuarina is where champagne wishes and caviar dreams aren’t just figments of the imagination — such activities are the norm here. And so are delectable spa treatments, thanks to the private invitation-only membership club’s recent addition: the sumptuous Spa Eleven. Spa Eleven Casa Casuarina, which opened in March, is lead by Nicole Oden, the brainchild behind the original Spa Eleven in Delray Beach. A vast departure from the modern Delray Beach-based flagship, Oden says the Casa location does offer

some perks, “It’s the key to getting into the Casa with out being a member as our spa is open to the public by appointment.” The setting for Spa Eleven Casa Casuarina is all that is over-the-top opulence. The Spanish palace by the sea boasts a 1,000tile mosaic pool, airy courtyard and lush gardens. Oden adds, “The ambiance is mystical and magical with an erotic vibe. The Casa is truly one of the most beautiful properties in Miami Beach and the pool courtyard is one-of-a-kind.” While there are two esthetics rooms designed specifically for facial and body services, guests’ pampering needs can be met almost anywhere on the posh property. And with a menu purely exclusive

Oden attributes the spa’s success to her never-say-no policy. She says, “My motivating personality helps keep my team strong and long lasting — the real secret to Spa Eleven’s success is the staff.” And as for the spa’s name, “It’s simple — 11 is better than a 10!”

estled in South Beach’s exquisite Sagamore Hotel, Social Miami at Sagamore is a gem within a gem. Outside, the lush, tropical landscape is dotted with private VIP cabanas, enormous plush couches and a pool lounge. Social Miami’s menu is designed and maintained by Chef Michelle Bernstein—formerly of the Mandarin Oriental’s Azul, now at Michy’s. Executive Chef Sean Mohammed (Blue Door at Delano) oversees the kitchen itself. The result is a worldly collection of small plates that are so much fun that they can’t help but be shared: Korean-style chicken lollipops, tuna, watermelon and ginger ceviche, jerk spiny lobster skewers and Kobe beef sliders with Gruyère cheese are just the beginning. There’s also an equally opulent wine list to complement all of the menu offerings. Eclectic fare and a sleek setting are seamlessly fused here, creating a culinary lounge experience like no other: ultra-relaxed, modern and fun.

hef James Wierzelewski, formerly of Chicago’s highly acclaimed Aria, brings his exciting and culturally inspired cuisine to Vix restaurant at South Beach’s HOTEL VICTOR. Chef James’ unique culinary flare stems from his travels around the world, and he refers to his signature style, which is inspired by many cultures, as the Four Flavor Palettes: Aisia, Latin America, the Middle East/India and the Mediterranean. While the menu reflects the flavors of various cuisines, each dish has a purity that respects the ingredients and cultural background on which it has been based. The symphony of flavors each diner experiences at Vix is perfectly complemented by the décor of the restaurant, which exudes designer Jacques Garcia’s customary luxurious sensibility. The décor of the dining room is lavish, with a large aquarium of rare live jellyfish and a beautiful mosaic floor of tile, wood, carpeting and stone. With a stunning open kitchen and a talented and multicultural staff from around the globe, Vix introduces “eatertainment,” to South Florida – a combination of fine dining and culturally inspired flavorful entertainment.

oscano Grille is introducing Miami’s first Tuscan style restaurant concept authentic regional Italian cuisine that uses a genuine custom-built oak-fired brick oven to prepare its menu of fresh fish, meat and poultry dishes as well as select pasta plates, for a distinct, but mildly smoky flavor. As a unique addition, and following the true essence of a family-run Italian bistro, Toscano Grille offers local patrons a classic a la carte menu as well as the option of any “off the menu” Italian specialty of their choice. The concept stems from the collaboration of Toscano Grille’s Executive Chef Ricardo Davila (formerly of Café Abbracci) and Corporate Chef Jose Davila (formerly of Amalfi Ristorante). The two brothers, originally from Nicaragua, share 32 years of combined experience in regional Italian cuisine. With the strategic business development acumen of Alcides Davila, the oldest of the three brothers, Toscano Grille is destined to become not only a perfect spot for the business lunch or dinner, but the ideal and quieter family alternative to the pricey and difficultto-book restaurants of South Beach. www.toscanogrille.com

uthentic Milanese cuisine comes to Miami at this internationally celebrated restaurant. Spare and polished, it’s a perfect setting for elegance, combined with the flair of a true Miami hotspot. Breakfast includes a light selection of French pastries and standard fare. Lunchtimers come for the tagliatelle tossed in Bolognese meat sauce, since pasta is strictly homemade. Dinner features braised veal shank “Ossobuco” with Saffron Risotto and the company’s Pappardelle al Telefono di Bice Milano. The solid Italian fare hails back to its roots with quality ingredients, but also looks forward with a touch of nouvelle creativity; Desserts run the gamut from tiramisu to a refreshing seasonal fruit platter with lemon sorbet. For a truly Italian experience, order the cheese plate for dessert, which comes with a trilogy of hard, soft and blue cheeses; a trio of chestnut, acacia and millefiori honeys; and freshly roasted walnuts. The textural and flavor counterpoints of these combinations energize rather than weigh down the palate.
