Letter From the Publisher As the publisher of Dine Magazine, I truly do get to experience what the South Florida restaurant scene is all about. From trying caviar and lobster at the opening of Chops Lobster Bar to getting to know chef Edgar Leal as he prepared dinner at Johnson & Wales University to tasting the spirits that are featured in this issue, the best is brought before me and I want to share that with my readers. That is what Dine Magazine is all about, sharing new finds and trends, and compiling culinarybased articles for many to enjoy, while also including an outstanding dining guide for you to carry with you. The launch of the first issue of Dine Magazine created a “buzz” around South Florida and things have been stirring ever since. We were so happy to hear all of the positive remarks from our readers and restaurants alike. Hearing that Dine is the new “hotness” in South Florida is an inspiring thing and we are so glad that you want to be a part of that. With this issue, we will be launching our very own Dine-Wine Club with the help of our Wine & Spirits Editor Patrick Sullivan. Classic, of course, is the dry Martini, but the explosion in the styles and number of brands of liquors and liqueurs, and the constant increase in premium brands has fueled an explosion too, in the type of cocktails and even the number of alcoholic beverages consumed straight…neat or on-the-rocks. A sampling of just a few of the “new sips on the block” showed us that we don’t yet have too much of a good thing.

A sampling of just a few of the “new sips on the block” showed us that we don’t yet have too much of a good thing. Let’s begin and end with vodka, most popular club liquor and, at least in the U S A, the preferred liquor for the Martini. Of course, vodka is not just for Martinis; a neutral spirit, it is, perhaps, the most mixable of alcoholic beverages, accenting the flavors of cocktails instead of competing with them. The proliferation of flavored vodkas, however, from only one in 1986, to hundreds today, has dressed the beverage in new clothes, so that it may assert its own personality in the drink. No new line of liquors better illustrates, not only flavored vodkas, but also, flavored rums and tequilas, than 267 Infusions. This brand uses premium alcohols brought in from various locations around the world,

and uses a secret method to infuse them with fresh fruit and other flavors. In fact, the flavor infusion is such a critical part of the beverage that, 1) the natural flavoring agent used is actually suspended “fresh” in the bottle, and 2) the degree of flavor component in the liquor is so pronounced that the alcohol level of this line is 21% by volume, about half the normal level. What it produces is an alcohol that needs little, if any, mixer to yield a “mixed” drink. For instance, Vodka Infusion Cranberry, fresh cranberries filling the top third of the bottle, smells like fresh cranberries, and with very little cranberry juice…or none…makes a terrific Cosmo. Want a regular Martini? Pour yourself a glass of Vodka Olives & Pearl Onions Infusion…a semi-classic with about half the alcohol. Rum more to your liking? Rum Mango or Rum Pineapple Infusion will jumpstart your tropical cocktail with its own rush of tropical fruit. And if you like a spicy Mexican-style Bloody Mary, start it with Tequila Chili Pepper Infusion, hot enough to elicit a, “¡Caramba!” from us! There is also a Vodka Lemon Infusion, Vodka Orange Infusion, and Tequila Orange Infusion (which made a dynamite

Margarita, with a little lime juice and salt. All in all, an interesting, versatile and delicious concept, and something a bit different in a market filled with followers. And, to answer the obvious question, no, there are not 267 infusions; that is the home address of the owners. Beautiful graceful bottles, tasty flavors, clever name. Speaking of flavors, the huge adult beverage conglomerate Pernod Ricard USA has three new succulent entries, Malibu Tropical Banana, Kahlúa Hazelnut, and Kahlúa French Vanilla. Malibu already makes the best-selling coconut-flavored rum, and this one, if you could chew it, you could mistake for a banana soaked in very good Barbados rum. Pleasant to sip, but in tropical cocktails, it rocks! Try a banana Cosmo substituting Malibu Tropical Banana for vodka, or a Bananarita, with half and half Tequila and Malibu, along with the rest of your recipe. My favorite, though, was a Piña Colada, using Malibu Tropical Banana in lieu of regular rum. Talk about tropical! The Kahlúas…Is there a better way to have coffee? Or a better use for half and

half? No and no. If you agree with that, then, you will love these new flavored versions. The French Vanilla smells and tastes of the finest pure vanilla extract married to the finest espresso coffee. The Kahlúa Hazelnut is the closest you can get to hazelnuts soaked in coffee without actually soaking hazelnuts in coffee. These are a great accompaniment to or substitute for dessert, and they add a complex flavor dimension to mixed drinks. Switch either for the regular coffee-flavored liquor in a Buttery Nipple, Kickstand, Kinky Orgasm, or Black Russian, and see for yourself. Coffee never tasted better. But, let’s not forget “unflavored” liquor. The best have the complexity, nuance, and individuality of fine wine, and one of the best I have tried lately is Tequila Tezón. The first thing you notice is the

bottle, looking like a recovered Aztec artifact, with metallic silver bars covered in hieroglyphics bonded to two sides, and a cork cradled by a piece of hand-hewn charred wood. Even the tag fits the feeling, made of black leather, and tethered to the bottleneck with a leather thong.

This limited-availability 100% blue agave Reposado is as good as it gets. This is tequila of such elegance that it can be sipped from room temperature to ice cold, tasting clean and strong, but gentle. It’s the feeling you get when you know you are being seduced, but it is so skillfully done, you don’t care. And this is the exemplification of skill in a bottle…its every element bespeaks handcrafting and quality, from the individually chosen 8 to 12 year old agave plants, to the bottle design, to the taste.

Cocktail. Stoli elit is the hottest new überexpensive vodka in the market, selling in liquor stores for upwards of $70. One skeptical sip, and we said, eyebrow raised, “It just may be worth it!” The company celebrated its hundredth anniversary in 2001, having begun in Moscow State Wine Warehouse No. 1. The basic Stoli was considered the first premium vodka imported into the U.S.; then, the brand had the distinction, in 1986, of being the first flavored vodka in the market; now, they score again with the most expensive.

Yes, it’s a sipping tequila, but since my favorite mixed drink is the Margarita, I tried several versions, loving every one. The purity of the liquor lets the limejuice hold your attention while it plays like an orchestra around it, subtly but obviously supporting the mixture. Try one part

A South Florida Tradition…

The Las Olas Wine & Food Festival By Marguerite Gil

Let’s see, you get to taste a variety of specialties, prepared by some of the best chefs anywhere. You also get to spend a glorious time clinking glasses, filled with superb wines and spirits and this special occasion is organized to benefit a very worthy cause. What’s not to love? Now in its 12th year, the annual Las Olas Wine & Food Festival in Broward County is one of the social highlights of the season. Over a decade ago the first Festival took place in November, to commemorate the arrival of the Beaujolais Nouveau wine cases flown in directly from France. After a few years it was moved to March and last year, organizers decided to celebrate the Festival in May, when it’s still cool and breezy outdoors.

The American Lung Association of Florida serves three counties including MiamiDade, Broward, and Monroe. Its mission is to prevent lung disease and promote lung health in South Florida through patient services, programs, public education and research.

Festival organizers stated “This year we capped it at 1,500 guests. Last year it was 1,200 guests but since we’ve have an overwhelming amount of restaurants who want to be involved with the festivities, we decided that it would be beneficial to increase our guest list for this great cause. We’re not like other food festivals that want to ‘cram’ in as many people as possible. We don’t want our visitors to be on long lines waiting for the tastings, that’s not what we’re about. We want people to be served rapidly, get to taste all of the world-class cuisine and be pampered by local eateries and our sponsors.” Presented by Premier Beverage Co., one of the largest distributors of fine wines and spirits in Florida, the affair transformed part of the city’s most charming and fashionably thoroughfare into four blocks of exceptional wines, excellent restaurants (50 plus at last count) and encourages guests to get involved, meet, mingle and enjoy live entertainment. Premier Beverage Co. presented select vintages from some of the most preeminent wineries anywhere. Proceeds from the event benefited the

American Lung Association of the FloridaSouth Area. In 2007 the VIP reception was moved to the street. Over the years, many changes have taken place to improve the function. Paula Ettline, Director of Development at the American Lung Association of Florida Inc. said “Although it (the event) has grown tremendously, we try to control the numbers so that everyone has a pleasant experience. Great food, fine wines and musical entertainment all contribute to a spectacular evening under the stars along Las Olas Boulevard, one of the most picturesque venues in town.” South East 8th Street was transformed into an ultra chic lounge. Honorary Chairman Marc Buoniconti, Development Advisor for the International Bronchitis Center and Ambassador for the Miami Project to Cure Paralysis greeted each and every guest at the exclusive reception.* After experiencing the Bacchus specialties and fine dining cuisine provided by The Capital Grille, guests received a luxury gift bag and admission to the ongoing street festival. Chef Dean Max of 3030 Ocean, who has been involved with the Festival for the last four years said, “I love this experience. Last year several chefs including myself gave demonstration cooking classes right on Las Olas Boulevard. This year there will be musical entertainment so we’ll be manning our booth. While the music’s is playing, I’ll be serving Hawaiian Wahoo delights and plenty of ceviche made with, fresh fish, seaweed, chili and other goodies. We want to support the entire endeavor and keep exciting things happening at Las Olas.” What can I possibly add except… Bon Appetit and Cheers for a great cause! ‰

As a young ballerina, Michelle Bernstein considered food the enemy. The enemy won. After a nutrition course fed her fascination with the “science of food,” Bernstein’s mother encouraged cooking classes at Johnson & Wales University’s Miami campus, where Bernstein received a Doctorate in Culinary Arts, and ballet became a distant memory. As a Miami native Bernstein’s passion for food is rooted in her Jewish-Latino background. “Food I love to create is simple, satisfying and healthy,” says Bernstein. “Pure flavors melded with traditional accents.”

D

avid Bouley, age 53, was born and raised near Storrs, Connecticut. From early on he was strongly influenced by life on his grandparent’s farm, drawing upon their French heritage and instilling a love of the land, an appreciation for fresh products and care in their preparation. David worked in restaurants from an early age in Santa Fe, New Mexico, Cape Cod, and, eventually, France and Switzerland. While in Europe, after studies at the Sorbonne, David had the opportunity to work with some of Europe’s most acclaimed chefs including Roger Vergé, Paul Bocuse, Joel Robuchon, Gaston Lenôtre, and Frédy Girardet. David then returned to work in New York City and wore the toque at leading restaurants of the time including Le Cirque, Le Périgord, and La Côte Basque. From there, David became chef of Montrachet restaurant when it opened in TriBeCa in 1985. The restaurant quickly drew attention and earned a three-star review in The New York Times.

Bernstein’s Miami restaurant, Michy’s, is an intimate restaurant that uses fresh ingredients and features her husband David Martinez’s wine list. Bernstein joined Delta Airlines, creating menus for their global Business Elite Class, and partnered with Jeffrey Chodorow, opening South Beach’s Social Sagamore and Los Angeles’ Social Hollywood.

Bernstein was trained by Chef Jean Louis Palladin in Washington D.C., attended Alison on Dominick and New York’s Le Bernardin and has worked with Red Fish Grill, Strand, Tantra and Azul at Miami’s Mandarin Oriental Hotel. Bernstein co-hosted The Food Network’s “Melting Pot” and became a winner on “Iron Chef America”. Bernstein has appeared on “The Today Show”, featured in The New York Times and praised by Elle, Redbook. In 2004 Bernstein was nominated by The James Beard Foundation, the nation’s premier honor for chefs, for “Best Chefs in America: Southeast Region” category. She has just been nominated again in 2007. Michy’s, has been named among the “Top 50 Restaurants in the Country” and “Best New Restaurant 2006” in major dining and culinary publications throughout the country. Chef Bernstein received the Glass Ceiling Award from the Jewish Federation, and her first cookbook hits shelves in 2007 with Houghton Mifflin. ‰

In 1987 David opened his own restaurant in TriBeCa. Bouley quickly became known as the most notable dining experience in New York earning four-star review in The New York Times. In 1997, Bouley Bakery opened and immediately became enormously popular, prompting an expansion in 1999 and earning a four-star review in The New York Times. hat does it take to run an awardwinning restaurant in South Florida? What about taking control of 3 in a matter of months? Just ask Burt Rapoport of Rapoport’s Restaurant Group, Inc.. Like many successful restaurateurs, Burt was born into the business with his family owning a kosher dairy restaurant in Manhattan called Rapoport’s. At an early age, Burt became involved in the family business. Burt learned the industry from the bottom up and in doing so, it has helped him relate to every individual that he works with. He is a hands-on person who interacts daily with his customers and staff, hence refusing to even have an office. Although Rapoport has opened up numerous restaurants, he currently focuses his business on the Boca Raton and Delray Beach markets. Although Henry’s has been open in Delray since 2000, Burt added Opus 5, Bogart’s and Gotham to his plate all in 2006. While Burt was working hard on Henry’s, he spent two years planning for the opening of Opus 5. During this time, he was approached by Muvico, and couldn’t pass up the opportunity to take

Chops Lobster Bar is his first restaurant outside of Atlanta, Georgia and it combines a great steakhouse and a great seafood restaurant on one level. Pano, a true family man who is generous with charities including the March of Dimes and Share Our Strength, is considered one of the United States’ premier restaurateurs and is often credited with putting Atlanta on the “culinary map.” He develops the concepts of each of his independent restaurants, oversees the day-to-day operations of his restaurants as well as regulates the food, personnel, and décor quality standards.

He went on to hold numerous positions including ones at the DeSoto Hotel in Savannah, Georgia; the Palm Beach Everglades Club in Palm Beach, Florida; and the Gstaad Palace Hotel in Gstaad, Switzerland; in 1968, Pano met Chef Paul Albrecht while working in Washington D.C. They both greatly admired each other’s talents and commitment to excellence; therefore, after years of working for other people, Pano decided to establish a restaurant of his own, with Paul as Chef/ Partner at the flagship restaurant Pano’s & Paul’s. Pano’s & Paul’s opened in 1979 and became the first of an important culinary empire that now includes Pano’s & Paul’s, Bluepointe, Kyma, Veni Vidi Vici and of course, Chops Lobster Bar.

Pano began working in the restaurant industry at a young age where his father ran a restaurant import food business called Pano’s Food Shop in Savannah, Georgia. Pano continued to be involved in the industry and later attended school at the renowned Culinary Institute of America.

Pano uses a simplistic, yet profound philosophy in operating his restaurants, “Running a restaurant is not a big thing, it’s just a thousand little things.” He places priority on innovative menus, well-drilled staffs, attention to detail and consistency to service. ‰

In August of 2006, he brought in a new executive chef and crew, created a new menu comprised of favorites from his past and present restaurants, and renamed the restaurant Bogart’s Bar & Grille. In December of 2006, Burt took over Gotham City, where he spruced up the interior, brought in a new executive chef and general manager, and created a fabulous new menu. Why has Rapoport been so successful? He claims that part of his success lies in the value he places on open communication and teamwork. This sets him up for success. Since Burt has worked in all parts of the industry, he is able to empathize with people and he knows what is important for growth. One reason that Rapoport has taken advantage of all of the growth opportunities is so he is able to offer his employees a place to grow, and in doing so, many of his employees have worked for him at more than one of his restaurants. What will Mr. Rapoport surprise us with in the next year? He’s one to keep your eye on. ‰

hen I think of Italian food, I remember strolling through New York’s Little Italy and watching mozzarella pizzas twirled high into the air, or see a waiter serve a slice of thick lasagna filled with meats, pasta, herbs and cheeses. The fragrances, the breads the atmosphere made it all a memorable experience. Recently I was able to revive all of those Italian recollections, when we discovered a new and exciting Italian restaurant East of Federal Highway and South of Palmetto Park Road. Il Marco in Boca Raton is perfectly located in ‘Restaurant Row.’ Several restaurants are all situated on a wide plaza/street and definitely make the area a dining destination. The marquee simply states Il Marco… a landmark if you will. The front sidewalk is furnished with chairs and tables on one side of the terrace, white sofas and deluxe seating are set up

around the Palazzo Bar on the other side. Clients are enticed to come in, relax and indulge. A doorman pulls open the doors and guests step into a sultry setting with soft lighting everywhere and ceiling to floor curtains gently swaying in the breeze. To the left a musician plays some favorite tunes on a baby grand piano while a talented singer belts out her high notes. The dining area is large (5,500 square feet) with a burgundy and white color scheme. Each table has an over head spot light that makes reading the menu and seeing the plates easy. Otherwise the rest of the lighting is subtle. Design elements include an open kitchen, personal wine lockers with illuminated wine racks, wood paneling and flagstone columns. Numerous black and white photographs of the restaurant’s family and friends decorate the cherry wood walls. The inside bar is well stacked with wines and spirits for every occasion.

We sat at a comfortable booth and listened to live music, as our waiter quickly brought out glasses of iced water and a basket full of delightful breads. Table clothes are a crispy white and each table contained a pint size bottle of rich olive oil and a vase full of tiny orchids.

The well-rounded, delectable and diverse Southern Italian menu selection ranges from made to order homemade mozzarella, to handmade pastas and fresh daily specials. Many of the recipes come from the Italian kitchens of family and friends of Il Marco’s owners and staff. Chef Rich Garcia is executive chef for both Il Marco and MoQuila, another popular eatery in Boca. He suggested that we try the antipasto platter which was spectacular and practically a meal unto itself. It included a variety of cured meats, hard salami, and a small center dish of Bel Paise Fonduta (fondue) for dipping.

We also tried a plate of rich green and black olives, perfectly seasoned in herbs, oil and lemon. Interestingly enough, their oil did not taste “oily” and the chef is very careful about not drenching his cuisine with sodium. Next we had the jumbo shrimp, caressed with seasonings, placed on a hearty slice of toasted, buttery bread and brought to the table with a glass of white wine. Heavenly! Chef Garcia stated “We bring in the freshest ingredients everyday. I choose the best products and I have a great staff, who knows how to make every dish, excellent. We use extraordinary ingredients in everything that we prepare.” We finished our Italian dining adventure with an ample bowl of mussels soaking in a warm spicy, herb filled broth, topped with white wine and some pats of butter. Amazing! The chef brings his experience and know-how to this menu. The Antipasti includes selections

of calamari, roasted eggplant, truffle rice balls and grilled baby veal chops. Soups and Salads range from $6.95 to $9.95. Pastas are smothered with sun-dried tomatoes, roasted mushrooms, sausages, garlic, proscuitto and just about anything that you can think of adding to the mixture. They also offer meat dishes and vegetarian side plates. Although we had eaten a wonderful meal, our waiter convinced us to taste a sliver of chocolate cake. Decadent! Every dessert is homemade by Mexican pastry chefs and the quality is top notch. Whether it’s a refreshing cocktail, specialty martini or just some Italian beers on the terrace or a full dinner with all of the extras, inside the cool, music filled interior, you’ll be saying “magnifico, splendida, il ultimo!” ‰ Il Marco is located at 99 SE Mizner Blvd. in Boca Raton, Florida. Located directly across from the historic Barnacle House State Park right on Main Highway, this new and eclectic eatery offers clients, variety entertainment, comfort yummies and a delicious variety of beverages. The atmosphere is casual and the neighborhood is finally happy to have good eats and talented bands just around the corner from their tropical abodes. Loic, one of the three owners of 3484 said, “Coconut Grove is an international city. People all over the world know the Grove. They visit the area and look for good food at reasonable prices. We give them that and much, much more.” Potted palms, background laughter and an over all funky bunch of regulars make this new addition to the Grove a welcoming detour. Meander into 3484 and discover a 360 degree granite bar. Outside seating puts guests in touch with the ongoing parade of people who are walking and talking and just enjoying the Main Highway surroundings. Step inside and find the remnants of a Tuscan Villa left there by a previous owner. Red brick columns, with carved out niches that once held small statues and well enjoyed bottles of Chianti and architectural arches reminiscent of ancient Roman constructions, blend into the modern day atmosphere of the place. Music lovers can share good times in the sitting area towards the back, while

overlooking a candlelit wall where the center stage turns into a dance floor after dark. Loic said, “We try not to be complicated, in fact that’s why it’s called 3484. It’s not just our place, it’s your address. You can listen to live music performances and just sit back, nibble and vent or have a big meal and feel like you’re relaxing and sipping spirits, in a back yard with all of your neighbors. ” Chef Brian Ross is at 3484’s helm. This 29 year-old Southern gentleman is charming, polite and loves preparing down home dishes for his clients. With ample cooking experience in Dallas, Atlanta, Charleston, and Miami, he makes sure that Southern hospitality is a prime ingredient on the menu. Ross has studied with French Master Chef Jean Blanchet as well as numerous Michelin star chefs and stated “I’ve had three solid years of catering in Georgia and I’m all about quality and freshness. I shop at fresh food outdoor markets and always try to find organic products for the menu. I love preparing prime ribs or wings, smoked with hickory chips, but I want my customers to know that I care about food and I’m always trying to improve our dishes to suit them.” The dinner menu is as colorful as the ambience. Opening Act appetizers include Down by the Sea, lightly breaded yummy Pacific Oysters served with a homemade Bloody-Mary dipping sauce or the Crispy Calamari that comes with a spicy citrus sauce.

For the more adventurous, The Big Easy has a Southern flare much like the chef. He combines Crawfish tails with Shrimp, Andouille Sausage, roasted corn, Reggiano and Mozzarella cheeses which easily pair with one (or several) of the 23 domestic and international beers available at the eatery. When the chef says spicy, you might want to bring it down a notch. The Margarita Pizza is very good and yes…spicy. Not a dish for the faint of heart. Café Emunah, an organic kosher café in Fort Lauderdale, adds a dose of spirituality to healthy eating and elevates the term comfort food to a whole new level. Billed as a “Kabbalistic Lifestyle Lounge and Tea Bar,” Café Emunah sounds like a Bond Street hotspot where Madonna and friends might hang out. But the restaurant, located in one of the few oceanfront blocks still in the midst of gentrification on North Ocean Boulevard in Fort Lauderdale, is not at all pretentious.

That’s not to say it’s not luxurious. Though the environment is relaxed—the furniture consists of natural woods, recycled plastic and ergonomic chairs—the food is as fine as it gets. “When you see the greens, I always say they look like jewelry because they’re so vibrant and beautiful,” says Dr. Marla Reis, co-founder. “All the

vegetables are hydroponic and grown on an organic farm in Boca Raton. Right before they go on the plate, they’re still in plant form and still alive.” Reis, a practicing psychotherapist, has led an organic lifestyle for more than 15 years, and Café Emunah is the culmination of her attempts to introduce people to the idea of conscious living. This endeavor is reflected in Café Emunah’s menu, which hosts a list of Foresights, Revelations and Soul Stirrings, rather than the banal categories of appetizers, entrees and drinks one might see at other eateries. “Speech is such an important part of spirituality, and I wanted all of the dishes to resonate with the concept,” Reis says. “It’s just another way to bring conscious living into the whole experience.” Another way in which Reis and her business partner, Rabbi Moshe Meir Lipszyc, integrate spirituality into the culinary experience is by offering customers “sides” of “table talk.” These mini-therapy sessions with Reis cost $20 for every 15 minutes, while conversations with the rabbi are free of charge and are usually scheduled by appointment. “Any topic is welcome,” Reis says. “People approach a rabbi or a psychologist to speak about anything. It’s just a casual conversation with a professional source.” “Marla is a psychologist, and she can also talk to people who want to learn more about organic food and conscious living. I can offer spiritual guidance,” Lipszyc says. “I was recently here with a girl who was about to go on a date, and she just wanted to have a conversation with me prior to it.” “Because of the atmosphere, we tend to keep things upbeat, but that’s not to say that someone can’t come to us with an issue,” Reis adds. Regardless of whether you’re in the mood for professional advice, the food itself serves a higher purpose, Reis and Lipszyc say. Aside from the proven health benefits of consuming organic food that is free of preservatives and potentially malignant ingredients, “the energy coming from the food itself opens you up spiritually,” Reis says. “The idea is once you start thinking and talking about what you’re eating, and if you’re mindful in your dining experience and attentive to detail, it makes you more open to bring spirituality into your life.” “Kabbalah is not only made for the Jewish people, and it does not matter what race or religion you are. accept life, and life consists of spiritual energies, but it also consists of physical energies, such as food. We have to enjoy both, and this place is about being able to connect the two.” With “biblically-influenced” dishes like Inspired Miso Soup, Genesis Salad and the unforgettable Enlightened Encrusted Salmon Cakes, as well as delectable sushi rolls including Rabbi Rolls and East Meets West, the cuisine at Café Emunah is certainly heavenly. “We cook all of our dishes with reverse osmosis water, which is the purest water,” Reis reveals, and the same is true of the café’s extensive coffee and tea offerings. Reis and Lipszyc have also started a virtual forum where people can discuss organic food and conscious living, and a series of events featuring guest speakers and poetry nights are in the works. “What I really want to do is create a feeling of community,” Reis says. “We’re going to have the café community, the online community, the religious community, and I want people to be able to communicate with each other about what’s going on here.”

The 4,200 square foot space brings a taste of nature indoors with its wood-paneled walls, palate of browns, grays and burnt oranges, eclectic branch-like chandeliers, flowing cream curtains and oversized images of fruits and vegetables. Cocao also boasts a private dining salon and wine cellar, where friendly sommelier Rich DiGiacomo gladly shares his expertise on wine parings at his monthly wine tastings. And, if asked, DiGiacomo will tell a story or two about his favorite wine, like the Darioush Chardonnay from Napa Valley, as well as the history behind it. Michelin rating’s three star, also in Spain. Since the age of 17, Leal says he knew he wanted to dedicate his life to food. After establishing his own successful restaurant in his native Caracas, Venezuela, Leal craved something a bit more cosmopolitan. “We wanted to try to compete in a more challenging market with world exposure. We thought that Coral Gables was the right place to start since it is a perfect example of the Latino melting pot,” Leal explains. From the Pumpkin Foam and Corvina Ceviche to the Warm “Cachapa” Corn Soufflé, Cocao’s culinary delights are a whirlwind tour of Latin cuisine. “My wife and I are from Venezuela and we love our culture. We had always researched as much cuisine in South America [as possible] to cook it for the rest of the world,” says Leal, who is working on a cookbook due out next year. He gathered recipes from South American classical cookbooks, friends and family, even travels abroad to help make Cacao’s menu as authentic as a trip to South America. Leal also admits it is important

But every dish is my favorite, and after I eat them a lot, I create new ones, and then those are my favorite,” Leal admits pleasurably. With cooking close to his heart, it seems only fitting that Leal would find the love of his life, Mariana Monetero De Castro, in, where else, but the kitchen. The two met while working in Caracas and eventually turned their passion for cooking into a love affair. Today Montereo De Castro serves as Cacao’s pastry chef, and she mixes just the right amount of love in her Warm Chocolate Soufflé Cake with white molten chocolate center—perhaps another reason why her husband was so inclined to name his restaurant after the special treat. By surrounding himself with family and friends, Leal managed to create a vibe

pscale contemporary American cuisine and neighborhood charm in a quiet location? Not a typical combination or easy to pull off. The Hi-Life Café in Fort Lauderdale does this with imagination, style, and panache. Don’t be thrown off by the unassuming location in the 3000 Plaza on the corner of Oakland Blvd. and Federal Highway. Owners Chuck Smith and Carlos Fernandez have designed and run their restaurant with care. Their founding philosophy is maintained even after twelve years: reasonably priced cuisine of exceedingly high quality with true neighborhood feel.

Helping his mother cook as he grew up in Hoboken, New Jersey, Chef Carlos only dreamt he could someday work as a chef for a living. But from this self-taught chef’s experiences in New York’s French bistro Chez Josephine, to his exposure on Bravo’s Top Chef in 2006, Chef Carlos’ creative culinary inspirations have become a delicious reality for all to enjoy. So what’s next? Chef Carlos has been tapped to do a weekly cooking demonstration segment on Telemundo’s “Cada Dia con Maria Antoinetta”, and is talking about returning to Top Chef season 3 this summer. Smith, a Texas native, spends most of his time maintaining the smoothly running, warm, and friendly atmosphere that is

Hi-Life Café. He tells us that the name “Hi-Life” was chosen in memory of their favorite bar and grill in New York, a place especially known for its camaraderie and fun atmosphere. Determined to emulate the same friendly and relaxed atmosphere and personal feel, the restaurant is replete with personal touches designed by Smith and Chef Carlos themselves, with the help of some artist friends. The eclectic but not overbearing music ranging from modified bar beats to smooth jazz tunes provide a hip yet subdued musical backdrop. The walls are various sponged shades of burgundy on theatrical canvas and are dotted with frosted glass candlelit sconces that give the restaurant a romantic glow. However, it’s the menu which most impresses. Several dishes, we were told, are menu staples that regulars come back for. And who could blame them. Dishes such as the Hi-Life Salmon, topped with a light Dijon sauce and served with fingerling potatoes and the classic Crab Cakes in a light, sweet mustard sauce with a hint of raspberry were sure to become instant favorites. We also tried the moist and meaty Hawaiian Butterfish, which was very lightly crusted with cashews and coconut and accented with a spicy red curry sauce. Butterfish, or Escalar, sometimes called White Tuna is cooked to perfection and a perfect choice for anyone desiring a light moist fish that isn’t too heavy, rich, or dry.

Granny Smith’s Chicken, which many diners erroneously believe comes directly from Granny Smith herself, is actually another delicious Chef Carlos creation, and is stuffed with fresh herbs, almonds, raisins, and, of course, tangy Granny Smith apples. A Granny Smith does exist however, in the person and many borrowed recipes of Chuck Smith’s mother and grandmother, whose Texas recipe book has been raided for several superb desserts. We sampled the orange coconut pie, a kind of Southern Chess Pie blooming with orange essence and shredded coconut. Southern Derby Pecan Pie, also stolen from his mother’s recipe book, melts in one’s mouth. The sugarless whipped cream pairs perfectly with the slightly warmed, creamy center resembling the best chocolate puddings. There were many other surprises in this menu: Coca Cola Cake (from a recipe direct from the original Coca Cola bottling plant cookbook in Atlanta, GA), Frog Legs, bacon wrapped jalapeno peppers stuffed with shrimp and carrying a challenging kick and a Caesar salad bravely sporting a distinct anchovy flavor.

Despite requests to expand and open other locations, Chuck and Carlos are dedicated to doing what they’ve been doing very well for the last 12 years: not sacrificing the personal touch of running their establishment. On our evening out, we were effusively greeted and personally checked up on by the owner several times and felt like we were neighborhood friends. I watched as all night long, Chuck, clearly enjoying himself and having a great time, circulated amongst his guests new and regular.

under the heading of “La Tradition”, the classic dishes of French cooking, “La Saison”, seasonal local specialties, “Le Potager”, a celebration of the vegetable garden and “Le Voyage”, the travels that have introduced Daniel to the exotic flavors of world cuisines. From simply basic starts to much-heralded accolades, he successfully fuses flavors and textures and finely weaves historical and organic ingredients into amazing dishes and desserts. The menu almost parallels that of its sister restaurant on East 76th Street in New York except for the additional fresh local South Florida ingredients. French favorites are prominent but entrees like Pompano, Florida fruits and veggies give his creations that special Southern drawl. He mixes products, that while celebrating the roots, spirits and fundamental flavors of a particular place, also intermix with offerings from elsewhere.

Technology today permits chefs everywhere to interact with their kitchen staff on a daily basis. Accepting his first position as a Chef at Café Boulud, NYC, Chef Zach Bell has returned home to Florida where he made his culinary start. Trained by Daniel, Chef Bell has more than demonstrated the maturity, depth of culinary knowledge, organizational skills, and above all a great palate needed to tackle the restaurant challenge. Constantly in touch with his mentor, Zach discusses his approach to poultry, fish, seasonings, garnishes, sauces, etc. and an obsession to detail on a daily basis with Daniel. Zach perceives cooking as a craft where technical skill is melded with a love of food, and in which every step must be respected. squab leg and sautéed squab liver accompanied by roasted squab breast and an a la minute jus, finished with foie gras butter and a delicate salad. Waters around Florida provide some of the finest fish available and Zach is especially fond of mahi-mahi. Also on the dinner list is Swordfish ‘a la Grecque’ stuffed with tiny artichokes, grilled radicchio, baby arugula and black pepper-lemon glaze. Another favorite is apple stuffed Berkshire Pork chops accompanied by collard greens, white hominy grits and covered with a luscious maple glaze. Roasted Natural Chicken includes, super green creamy spinach, topped with cippoline onions and truffled potato croquettes. For the turf lovers, the chef prepares a Provencal Beef Duo, Short Rib ‘en Daube’ with herb-roasted Hangar steak that lovingly embraces a basil polenta and local heirloom tomatoes.

Lead designer Callin Fortis, of Big Time Design Studios, took the entire building down to the bare walls before starting the club’s makeover. Downstairs, the Cameo Nightclub has been transformed from a dance club into a true glitzy nightclub. As you enter the venue, you are greeted by a gigantic monolithic sculpture. This plexi-glass LED illuminated grid rises thirty feet to the ceiling and spans the entire width of the room. The main dance floor is flanked on all sides by stadium style banquette seating finished in luscious red velvet — this is the place to be seen. “Dance where you are” is the motto at Cameo. Enjoy European bottle service in the VIP area or saddle up to one of the bars for nightime favorites. Cameo is first and foremost about the music. From the glittering 12 foot disco ball DJ booth and animated Marilyn Monroe backwall to the multi-

million dollar sound and light system, Callin Fortis has created an environment that pays homage to the almighty music god. On the second floor of the building sits a completely different club concept — Vice. Just as in the past, the two clubs will function together on the weekends, but the more intimate Vice will now be open during the week. Inspired by the bad boy/ bad girl image of 1980’s Miami, Vice is all about sexy. Callin Fortis took this concept to the next level with sculpted wavy white walls washed with high-tech LED lighting, walnut stained bamboo floors, fishnet stocking banquettes and erotic art installations. With its own sound and light system, patrons can groove to a completely different atmosphere within the same venue. Cameo/Vice has only been open for a couple of months and it is already one of the hottest club venues in Miami. Patrons will easily locate the entrance on Washington Avenue by the throngs of clubgoers lined up at the door waiting for a chance to get in, dance and do some celebrity sightseeing. After enjoying a recent performance at the Carnival Center For The Performing Arts, I suggested to my friend that we stop for a late bite. “There’s no place around here to eat,” he said, as we passed a Burger King and a Checkers. It was late and we saw a few interesting but closed-for-the-day places on our way to drop him at home. I started thinking about his comment, and guessed that there must be dozens of eateries within a few miles…a short drive…from the Carnival Center. The next day, I counted them.

Within three miles of the CPA are more than 650 places to eat, from Dunkin’ Donuts to Karu & Y, many of which are open late, and most of which are open early evening, preevent. Available are choices as varied as soul food, Ethiopian cuisine, hamburgers and fish. There is just about anything one might want to eat, from fancy to funky, from pennies to stratospherically expensive. Some are well known and easy to find; some are hidden delicious little secrets. The ample selection of food is simple and tasty…empanadas, sandwiches (I loved the fresh pork.), croquetas, etc., and a classic, rich café cubano to keep you awake for the drive home. Prices mostly $1 to $5…almost inexpensive enough to soften the sting of the exorbitant parking prices at the PAC.

The casual light continentalfusion cuisine, e.g., wild salmon with rice and vegetables is priced reasonably, and usually accompanied by live music performed by local musicians. That, along with the pretty and perky setting, creates a pleasant beginning to an evening out.

There is a well chosen, well priced selection of wines by the glass, several boutique-style beers, several cheese choices, and a very reasonably priced menu of delightful, simple dishes, which (phrase omitted here) will not weigh one down during a long opera or concert. Excellent service that will get you to the event on time, or let you linger afterward in the soft rich ambiance as long as you like. A favorite of “beautiful (but real) people”. Open late most days, but call to be sure. Miami’s only Ethiopian restaurant, warmly and fascinatingly decorated, will have your head spinning with the exotic seductive aromas coming from the kitchen, and your taste buds dancing with the luscious and comforting flavors coming from your menu selection. The list of entrees ranges from $12 to $25, and includes their special versions of chicken, beef, lamb, seafood, and vegetarian. (If you like lamb, try the Beg Alecha, tender pieces of lamb seasoned with ginger, rosemary and a touch of jalepeño, slow-cooked in an herb reduction.) Valet available, but usually plenty of metered parking nearby, and a meal that will give you something to talk about at intermission.

Soyka’s Restaurant Café & Bar Ten minutes up Biscayne to 5582 NE 4 Court. 305.759.3117 Mark Soyka’s hot cool pioneering Upper East Side eatery is a satisfying stop before or after performances, open until 11 p.m., and Friday/Saturday until midnight. It gets loud when busy, but, at least, it is busy with the Beautiful and the Important, so if not conducive to intimate conversations, it is conducive to people watching. The food is dependably delicious, from the “comfort” selections like Meatloaf with Mashed Potatoes and Chicken Marsala & Mushrooms over Linguini, to clever dishes, such as Corriander Crusted Mahi over Polenta Cake, Red Pepper Couli & Corn Salsa and the Soyka Salad – Mixed Greens & Diced Vegetables with Mustard Shallot Vinaigrette. Attending a Saturday or Sunday matinee? Try the 11 to 4 brunch with a plethora of egg choices, as well as the variety of Smoked Salmon, Chopped Liver, Cheese Blintzes, and more. A couple of hard-to-find favorites: Croque Monsieur and Smoked Duck Breast Salad. (My mouth is watering!) Easy nearby metered parking.

FEAST Cruises that cater to culinary crowds are the industry’s latest way to hook potential passengers. When in Rome, dine as the Romans do. You can expect high-end cruise ships to literally and figuratively adhere to this philosophy, as gourmet offerings become another way to stay afloat in an increasingly competitive industry. With the average passenger checking in at 49 years old, the cruise industry faces an aging core customer group, as well greater competition brought on by the introduction of 12 new cruise ships in 2007. Every ship is looking for new ways to lure voyagers on board, and some companies have chosen to target lower-budget

customers and scale down on amenities and costs. The British company easyCruise, for example, offers $19 cabins but excludes meals, maid service, tours and other traditional amenities from the cruise price. Other lines are opting to offer more instead. Two Atlanta-based lines, Groove Cruise and Rock Boat, offer what amounts to Spring Break at Sea—themed parties, raves, concerts and poker tournaments. And action adventure cruises like The Discovery include passenger activities that range from a dog sled ride through a rainforest in Alaska, to shark dives at the Melbourne Aquarium in Australia. But luxury cruise lines know that even more important than the course the ship charts through the waters is how it navigates the path to a customer’s heart. The easiest route, as the adage goes, is often through his or her stomach. Crystal Cruises, a high-end cruise operator that has been named “World’s Best Large-Ship Cruise Line” by Travel + Leisure and Condé Nast Traveler, incorporates the culinary arts into each of its voyages. For passengers seeking a deeper culinary immersion than that which comes with exquisite meals, Crystal offers Wine & Food Festival cruises, which revolve specifically around degustation. On the Festival cruises, A-list chefs such as Neal Fraser and Andrew Carmellini, and influential winemakers such as André Soltner, host cooking demonstrations and wine tastings. In March, the Chef Table program debuted on Emerald Princess. For $75, gourmands get the opportunity to visit the ship’s galley during dinnertime and observe the kitchen staff’s busiest time—all while sipping on champagne and noshing on appetizers. The Maitre d’ personally introduces the passengers to the executive chef, who then previews the menu he’s created exclusively for the evening. At a special table in the dining room, the group enjoys a multi-course menu not offered elsewhere on the ship. The fare is up to the whimsy of the chef, who might be inspired by regional cuisine or might instead showcase indigenous ingredients from a recent port. Each course is accompanied by extensive explanations of preparation methods and tasting suggestions, as well as red or white wine selected by the Maitre d’ to complement the meal. During dessert, the chef rejoins the group’s private table to answer any questions regarding either the evening’s meal or secrets of the culinary craft or sea-borne life at large. In addition, this spring, Princess Cruises launched its Jr. Chef@ Sea Program on all of its ships. In what is also an attempt to create a family-friendly environment (another popular way of marketing cruises these days), a series of hands-on food preparation workshops are hosted for junior passengers in the mail galley areas of the ships. During the workshops, the young participants get a behind-the-scenes look at the workings of shipboard kitchens and learn the art of rolling sushi, decorating cakes or making dishes such as fruit pizza. “The Junior Chefs even suit up in mini toques and chef’s aprons, and receive a special certificate of achievement and photo at the end of the workshop, touting their culinary achievement,” Susanne Ferrull, a Princess representative, says. in Seattle, operates CETC (Culinary Expeditions Tour Company), which offers culinary cruises in the Pacific Northwest. CETC’s cruises introduce passengers to the regional cuisine and wines of Seattle, Portland and Victoria and Vancouver in British Columbia. During a CETC cruise, passengers not only visit each city’s best restaurants, but also engage in experiences off the beaten path—such as shopping at a local market with a renowned chef, or taking part in a private class on the regional cuisine. And while cruise-caused weight gain is parleyed about as much as the oft-referenced “holiday five,” a gastronomically geared cruise need not be unhealthy, and you can indeed get more exercise than just walking around the buffet line. Healthy Adventures, a travel company in West Palm Beach focusing on healthy living, set sail with its first organic, vegan cruise in January of this year, which toured the U.S. and British Virgin Islands. Sample meals included hazelnut-crusted French toast with organic maple syrup and stewed blueberries and bananas for breakfast, and slow-baked ginger tofu with hedgehog mushrooms, sea beans and fried basil in a sesame-sake reduction for dinner. The cruise was so popular that Healthy Adventures scheduled an equally successful organic, vegan cruise around the Florida Keys weeks later. We, by name and by design, are a publication about dining. We write about restaurants throughout South Florida; we write about restaurants in travel destinations; we write about what to do between bouts of dining both in South Florida and while traveling. And dining, whether out or at home, whether here or there, has a constant companion not written, but implied in our name…wine. Most memorable meals include memorable wines. For, as most Europeans know, wines complement food as lyrics complement music. Either, well done, can stand alone, but oh, put together well, they sing! So, there are books and books about how to pair the two well, but let us begin with just the one that must be fashioned elsewhere, then travel to join the food… the wine. How does a memorable wine reach the table? How does it reach the restaurant? How does it reach our shore, for that matter? To gain an insight into the journey and what prompts the journey, we sat down with Stephen Bloom, President of Tesori Wines, in Miami twice recently,

for the Great Wines of Italy tour, and as a donor of wine to the Miami Wine and Food Festival, and annual charity event which, this year, netted more than $1 million for the local community. Dine: Steve, your background is in a completely different industry: industrial baking machinery and equipment; how did you come to be in the wine import business?

SB:An Italian colleague from my other business announced to me in 1999 that he had just spent a fortune on a vineyard in Barolo, and was going to start making wine, Well, I was already a judge on several wine competitions; I just never thought I would get involved in wine as a business., but my respect for both his business acumen and his passion for wine left me with only one thought…”this is an opportunity that doesn’t come twice!”

My friend is Amabile Drocco, and the property is Cascina Adelaide…I decided on the spot to begin importing wines and began with his spectacular wines from Northwestern Italy, and have never looked back. Since then, I have added other small production wineries from all over Italy, so that, currently, I have about forty different labels. Dine: All right, we know how you found your first wines. How about the others? SB: It’s funny…I don’t go looking for wines to add – the few times I have tried I have not found wines that truly capture me…The really special wines, the ones that make it into the Tesori portfolio, just seem to present themselves to me in a way that I can’t resist Each of these hand-made, small-production wines wine speaks to me about its region, its quality, and its personality. And, interestingly, when I “fall” for one of these wines, there is almost always a spot for it in my portfolio, where it does not duplicate another wine already there. That’s how they’ve all come to be there, and each of them are special for that reason. Dine: That being said, there is not an ‘ordinary’ wine in your portfolio… Every one is a ‘hand sell’. You have to explain it to the distributors, who have to explain it to the restaurants and

wine shops, who have to explain it to their customers. Doesn’t that make for labor-intensive marketing?

There are other countries, though, with similar traditions, where I am exploring for more hidden wine jewels.

SB: It does. All through those layers, people have to have an understanding, even a passion for the wines to show them properly, but these are wines that inspire passion. And once tried, these are wines that instill admiration, loyalty, and…repeat business. So, yes, I have to work to sell them, but once sold, they continue to sell themselves.

Dine: If you had to advise someone perusing a wine list how to select something new to try, what would you say?

Dine: Your wines are all from Italy…Do you have plans to add wines from other countries? SB: Yes. We have our first non-Italian coming aboard this summer. Italy has so many different winemaking regions, and each has wineries that take pride in the regionalism of their wines, so it has been a fertile ground for my portfolio-building.

SB: I would tell them to ask the sommelier or server for a recommendation, telling him or her to ask for something, 1) that pairs well with the dishes to be ordered; 2) is a wine that reflects the wine region it’s from; 3) is a ‘boutique’ or small production wine; and 4) is in a certain price range. That’s the way to have an interesting dining experience, and that’s the way to discover your own wine tesori…treasures. Dine: Thank you, Steve. You’ve made me very thirsty. ‰

ntering the grounds of the Ritz Carlton Grande Lakes in Orlando is less like entering a hotel in the middle of Florida, and more like being swept away to a remote European Chateau. Standing proudly next to the J.W. Marriott on Central Florida Parkway, barely a ten minute drive from Sea World and International Boulevard, it’s close enough to the lights and energy of the theme parks, but far enough away to truly feel like an escape. Travelling through the long corridors, down the stairs and out to the lush gardens, one is guided towards the spa doors by what looks like fine granite, but what is actually crushed seashell tile, used in both the walkway and the columns aligning it. Enter the 40,000 square foot spa (voted #1 spa in America by the readers of Travel and Leisure Magazine) and you are immediately swept away into a world of luxury and comfort. A new level of luxury has entered Miami’s South Beach Art Deco Design District with the renovation of the Fairfax. The Fairfax is a 49-suite high-end boutique hotel located at 18th Street and Collins Avenue and they will be offering fractional ownership where each owner will have a guaranteed usage of 13 weeks per year (Approximately 1 week per month) with the ability to add on more time. The hotel’s renovation was spearheaded by world class designer, Todd Oldham who most recently designed The Hotel, also in South Beach.
