WITH A SMILE For Concierge Darrel Smith, Serving Others is as ‘Effortless as Breathing’

f you feel at home at Hilton Sandestin Beach Golf Resort & Spa, it just may be because Darrel Smith is at home here, too — quite literally. Turns out, this lead concierge lives in a condominium on the resort property. So, to say he is familiar with all the area offers is something you can count on. “Yes, this is my backyard,” Smith boasts flashing a mega-watt smile. You can count on Smith’s warm smile, which accompanies the exceptional service he ably delivers to guests and

co-workers. But, he admits, he shares his smile with everyone he engages with and even cracks a smile before making telephone calls. “It’s just effortless for me,” Smith says with yet another smile. “If you find something you have a passion for, you are just lucky.” Hilton Sandestin Beach guests are lucky as well, because no one is more delighted to do what they do than Smith. “I’m a natural people person and enjoy getting people to smile — that puts me in a happy place.”

TRIED & TRUE A seasoned 35-year veteran of the hospitality industry, Smith was born in Knoxville, Tennessee, and raised in Northern California. His passion for service has taken him to Mandalay Bay in Las Vegas, the Ritz Carlton in Atlanta, a private boutique hotel in San Francisco, plus Hawaii and Puerto Vallarta, Mexico, among others. As a self-professed globetrotter and foodie, Smith doesn’t make any suggestions lightly, because he knows guests rely on him to provide the best options. “I don’t recommend a company I don’t know or a restaurant I have not visited,” he says. His word is his bond, so Smith does his research and keeps up with the market. It’s a point of pride for Smith to personally know the people who are delivering the goods and services he recommends. “If I am recommending a fishing charter, I want to get to know not only the fisherman, but his wife, too, so I can fully understand who they are and the experience our guests will have.”

One of Smith’s many talents can’t be taught or learned in school. “I read people well,” he says. “It’s a gift, and I really enjoy that part.”

INSIDER TRADING The most common question Smith gets is for food and restaurants. Having seven dining options on-site at Hilton Sandestin Beach makes Smith’s job easy. If the guest is seeking an exceptional dining experience, Smith is proud to suggest Seagar’s Prime Steaks & Seafood, located on the lower lobby level of the Emerald Tower. Smith’s personal favorites from the fine dining restaurant, the Dover sole and the filet mignon. “A table-side service makes for quite a memorable dining experience,” he says. “There is great value in seeing the dish come together before your eyes. A traditional Caesar salad made before me never gets old, and bananas Foster, well” … he stops and simply ends that thought with a wry smile. With a full-service resort property at their beck and call, Smith’s guests don’t have to go far to enjoy amazing amenities. “It’s a resort you can enjoy without having to leave,” he says. Smith has a bounty of “insider” knowledge. For example, staying on property on Saturday is suggested, because of heavy traffic around town. Beyond that special dining experience at Seagar’s, if you are looking for al fresco dining, consider Barefoot’s Beachside Bar & Grill, which you can enjoy seasonally without leaving the pool deck. If you don’t want to change out of your swimsuit, you might opt for a graband-go deli sandwich from Picnix just off the pool deck. If you choose to go shopping at Silver Sands Premium Outlets, the resort’s shuttle will happily ferry you free of charge.

GOING BEYOND Beyond being an encyclopedia for local activities and amenities, Smith comes to the rescue in many other ways. There was the anxious mother of the bride whose luggage didn’t arrive. So he supplied her with a list of local designer boutiques and personally travelled with her to get a dress for the wedding. There are special circumstances. Like the son and daughter who recently reached out to explain that their parents were both battling a terminal disease. Smith ensured that they were booked in a suite with floor-to-ceiling windows that would provide a great view, in addition to making a reservation so they could enjoy a quiet dinner. Over his 14-year tenure, Smith has gotten to know many of the guests. He has helped arrange several marriage proposals on the beach — complete with hidden photographers. “They get married at the hotel, then they return to visit with their family — it’s so wonderful to see the legacy of their lives unfold and to have been able to play a small part in it” he says. Of all the guests Smith serves, he admits he has his favorites. “I love the kids,” he says, blue eyes twinkling. “When a toddler comes in and sees the indoor swimming pool, they are so wowed. And then when you tell them there are three pools, it just blows their little minds, and the look on their face is priceless!” Smith’s sage advice is priceless, too. He knows not everyone is as comfortable talking to a stranger as he is. But he hopes guests do take his suggestion to come talk to him and the rest of our concierge team. “We’re your own personal Alexa, use us to ask questions as you would at home” he invites, yes, with a smile.

• “My favorite part about working as a concierge is helping guests discover new and exciting things to do along the Emerald Coast. There is so much to do and see in this area that for a first time visitor it can be a bit intimidating to figure out where to go first. One of my favorite memories from this summer was helping a guest find the perfect restaurant for their wedding rehearsal dinner. They came back the next day to inform me of how much they enjoyed their evening. It felt great to have played a part in helping to make their special weekend memorable.” Moses McKnight, Concierge

I worked at Hilton Sandestin Beach from 2005–08 and returned here for a job in the summer of 2018. I was amazed how many of the employees were still working here, and how much it felt like I was coming home. It wasn’t long before I started recognizing guests of the hotel who I’d met 10 years ago. It’s incredible how much of a timeless and family-like atmosphere exists here, between both employees and the guests we serve.

Working in the accounting office, most of my interactions with guests are over the phone. One of my fondest memories was last summer when a family had just departed before realizing they still had a couple of questions regarding their final bill. I was able to assist with their questions while they were driving home, to help clarify the charges. Over the car’s speaker, I could hear the family’s excitement in their voices (especially the kids) as they relived their past week with us. The family explained how beautiful our property was and how they could not have had a better vacation anywhere else. They were so grateful for the hospitality and customer service they received. They stated this was their first time here and decided the Hilton Sandestin Beach would be their annual summer vacation spot. They thanked us for the prompt assistance they received from the moment they walked through the doors all the way to the help they received after they had departed. Moments like these are what being in the hospitality industry is all about.

My favorite Hilton Sandestin Beach memory is when I helped a little boy locate his parents after the elevator he was on closed before his parents could get on. He was crying and upset, so I immediately went into “mommy mode” to calm him down. I assured him that everything would be OK as we searched for his parents, whom we located in the lobby. That made me so happy.

I remember one day answering a call from a woman looking to book services at Serenity by the sea Spa. She wasn’t sure of what she was hoping to book, and was very inquisitive regarding details of the services, what order she should book them in, and general scheduling. I was more than happy to discuss her plans for the day and ensure her services would allow enough time for her to enjoy our Spa. After some time, she noticed that we had been on the phone for over 20 minutes. She went on to thank me for being so patient with her. She was very grateful that we were so accommodating, and once she arrived for her services, she asked to speak with our director so she could reiterate her sentiments. We see many guests at our Spa, and they come from all over the country and the world. Going that extra mile for our guests is a standard for us, and it is always heartwarming when you know you’ve made a positive impact on someone’s day.

I’ve had many great interactions while working at Hilton Sandestin Beach, but one in particular is by far a favorite. Football is a great passion for me, and one of the groups we were lucky enough to have come to our property was the Southeastern Conference. Coaches and players I’m very familiar with were staying with us, and I was privileged to interact with some of them throughout my workdays. I was happy to help them whenever I was asked because it’s not something everyone gets to experience during their work day. That memory will definitely remain with me.

I’ll always remember the Meffert Family. I met them in early August on a Monday night while working in Picnix. This family of six from Texas, came in shortly before 7 p.m. and were planning to do a movie and pizza night in their room. Picnix offers Pizza Hut personal pan pizzas, but they were actually looking for a larger size, so I directed them to Sandcastles and In-Room Dining. The next night I was closing in the Coffee Shop when the Mefferts came in, and one of their children recognized me right away. They all got ice cream cones and were happy to find out that a single serving was actually two scoops. When they returned to the Coffee Shop for more ice cream and café mochas Wednesday night, Mr. Meffert asked that I explain our unique serving terminology, that a single serving equals two scoops. “See, I told you!” he said to his wife. Explaining they had some discussion about this the night before and I had settled it in his favor. Later that night, the missus returned with one of her children to make sure she had my name correct. I was appreciative thinking she would mention my service in a review, and I jumped up and down when I received the notification from my supervisor. On Friday night, while I was working in Picnix, they went out of their way to see me as they returned from the beach. The Mefferts made my first season working at the Hilton Sandestin Beach very memorable, and I look forward to running into them next year. 22 HILTON SANDESTIN BEACH 2020

My most memorable guest experience took place when I was working as a front desk agent. I had a guest check in that had a miserable trip down. She not only got a flat tire, but also didn’t have a spare to put on. She had to wait hours for a tow truck to come and fix it. When she was finally able to get to our property, she was exhausted and extremely upset to say the least. I was able to upgrade her to one of our suites, which absolutely made her day and her stay. We stay in contact to this day, and when she’s in the area, she always stays with us at Hilton Sandestin Beach. Being at the front desk truly allows you to make a guests stay a memorable one.

I had an interesting interaction with a guest this summer that really stuck with me. The woman stopped me in Sandcastles one morning and said she had been here a week, and every day at 2 p.m., she would watch the guys in the blue and yellow shirts set up tables and chairs for the special events taking place. She told me she noticed we were very organized, and that she appreciated how hard my crew works. It was nice to hear her kind words and share those with my teammates.

My most memorable moment here at Serenity by the sea Spa was when I was able to help accommodate a guest who was experiencing some pain. Ms. Reeves needed an 80-minute massage, and we were fully booked for the day. I asked her if she wanted to book an appointment for the following day. Ms. Reeves replied, “I am leaving tomorrow. I really need one today because my back is hurting so badly! I desperately need one. I’m in tears.” I spoke with one of our massage therapists to see if she was able to stay late to perform an 80-minute massage, and she said absolutely. When I told Ms. Reeves the great news, she was over the moon happy. She explained she had the best spa experience and was grateful that I went out of my way to accommodate her. hanelle Lucas has worked with Hilton brand hotels for 16 years, including her current job as director of spa services for Serenity by the sea Spa. But she has another unofficial title. “They call us ‘day makers,’ because we like to make people’s days,” says Lucas. A 14,500-square-foot, sea-inspired facility, Serenity lives up to its name, not only because of the beautiful surroundings, but also because of the passionate and caring wellness team led by Lucas. “I believe if you take care of your employees, they’ll take care of the guests,” says Lucas. With upwards of 150 reservations a day, Serenity is one of the most popular spas on the Gulf Coast. “People come in because they are looking for an escape, have sore muscles in need of care, or just to relax and unwind,” Lucas says, “and then you see them come out completely transformed. It makes it all worthwhile when you get to leave each evening feeling like you’ve made a difference.” And by people, Lucas means everyone. “We see entire families: mom, dad, brothers and sisters,” Lucas says. “They are taking spa-cations. That’s what’s trending — people coming to the property for the sole purpose of a spa retreat.” By making appointments and spreading them out all week, Lucas says spa goers can take full advantage of all of Serenity’s amenities — such as the relaxation lounges, whirlpools, steam rooms, saunas and fitness center. “I see our guests really embracing the spa as a lifestyle,” she says. “It’s not just about one service anymore.” And Serenity isn’t just for the grownups. Here, little ones are guests of honor. With customized treatments designed with kids in mind, such as the Sherbet Splash Pedicure and Swirls & Curls salon service, kids as young as 5, when accompanied by an adult, can indulge in “me time.” Teens are also coming in for skin care focused services. Those under 18 are welcome to schedule massages as long as an adult accompanies them. And the gentlemen are not letting women have all the fun. “Self-care is big now with men, too,” Lucas says. This spirited spa director keeps an eye on the latest spa products and trends by attending global industry conferences. “I love learning new techniques and bringing back new ideas for our guests and members to enjoy,” Lucas says. One of the latest crazes is CBD (cannabidiol) oil, which is used to ease inflammation and help with pain. Metals also are trending. Lucas listens to feedback from spa guests and members alike, and sometimes it results in a new offering or service. Eldoa yoga, a technique that helps strengthen the spine, is a class that was inspired by a spa member. It’s perfect for people that sit for long durations, the elderly with sciatic issues, or golfers looking to improve their swing. Once a limited-time special, the Moroccan body melt is now featured on the spa service menu after a flood of positive guest feedback. Another signature service, the HydraFacial, is in such high demand that Lucas has added a fourth treatment station. If you want more from your HydraFacial, you can opt for the deluxe or the platinum version, which Lucas describes as a “90-minute ultimate facial experience,” complete with a serum booster, customized mask and LED light therapy to reduce signs of aging. “I love what I do,” Lucas says. “People feed off energy, and Serenity by the sea Spa has positive energy … for everyone.”

t’s all fun and games for adults and children visiting Hilton Sandestin Beach Golf Resort & Spa, where everyone’s a kid at heart. As the area’s largest fullservice resort hotel fronting the Gulf Coast’s famous sugar-white sand beaches, Hilton Sandestin Beach is a virtual family-friendly playground with endless ways to maximize fun in the sun. As director of recreation Tiffany Howell says, “If you can’t relax at the beach, we have an issue.” But with an array of activities and programs to choose from every day of your stay, the only issue is deciding which fun activity to do first. “Kids are always king here,” says recreation manager Caidan Cryar. Not sure where to start mapping out your time? With 17 years of experience running the resort’s recreation program,

Howell has plenty of helpful suggestions for your visit to the Sunshine State, beginning simply with … “get outside and play!” For children ages 5 to 12, Hilton Sandestin Beach’s seasonal Kids Krew program provides an exciting daily schedule of energetic and creative activities under the watchful eyes of the resort’s 20-member recreation staff. From 9:30 a.m. to 1:30 p.m., kids rule the roost, whether it’s a Wild West Showdown with pony express races to mateys “walking the plank” during Pirate Pandemonium, “These kids love taking over during our themed parties,” Cryar says. “The main rule is to have as much fun as possible.” The program includes lunch and a Kids Krew keepsake T-shirt. — we even brought in Build a Bear creation station so kids could make their very own plush toys,” Howell says. “We really get into the themes and wear costumes, it’s a lot of fun for everyone.” This year, families can look forward to the Kids Krew Fourth of July fair, free to hotel guests. As Kids Krew’s biggest bash of the year, this extravaganza boasts a kickball tournament on the beach, stiltwalking balloon artists and traditional carnival games, before an al fresco feast and patriotic glow-stick pool party capped with a booming fireworks finale.

But before you set out, Howell suggests a pit stop at the Beach Hut to gear up. “We have everything you need for a day of fun in the sun, including complimentary beach towels for use during your stay,” she says. With three sparkling swimming pools, two whirlpools and a kiddie pool, plus eight private poolside cabanas, it’s easy to relax, unwind and feel like the VIP that you are. “When we see big smiles on those little faces, we know we’ve succeeded,” Cryar says.

When you meander in Eden Gardens State Park, you travel back in time. The first thing you see is an alabaster mansion known as the Wesley House. Dating to 1897, the plantation-style house is now inhabited by antiques and vintage furnishings that provide snapshots of a bygone age. Take a guided tour or feel free to roam the grounds. Weeping willows and oaks overhang impressive, green acreage ideal for picturesque picnics on the grounds or under the pavilions and for outdoor recreation. UNDERWATER MUSEUM OF ART

Bringing together two of Florida’s most beloved attractions — the arts and the Gulf of Mexico — the UMA is the first underwater permanent sculpture exhibit in the U.S. The UMA is the first presentation of the Cultural Arts Alliance’s Art In Public Spaces Program and supports South Walton Artificial Reef Association’s mission of creating marine habitats and expanding fishery populations. The UMA is located in approximately 60 feet of water and at a distance of .7 miles from shore. Visitors traveling by car can access the museum via Grayton Beach State Park. A BLOSSOMING PARTNERSHIP It’s a Perfect Day Wedding Florist Celebrates 15 years of Partnership BY ZANDRA WOLFGRAM

P

atty Bilbo didn’t catch a bridal bouquet at a wedding, but her foray into the florist industry was about as serendipitous. When her husband, Stoney, retired from the U.S. Air Force and they relocated to the Emerald Coast, working as a florist was something flexible she could do while raising three children. It takes a special kind of family to own and operate a business together, and Patty has that with It’s a Perfect Day Wedding Florist, which she established in Freeport in 2003. “There’s really no boss; we’re all partners and we work well as a team. Being military, you learn to depend on each other,” Patty says. Everyone has a key role in the Bilbo family business. Her 37-year-old daughter, Amber, is her right hand. Amber’s husband, Jerrold, is a woodworker and makes custom sand kits for unity ceremonies, among other things. Dad (Stoney) officiates. Brother Paul helps with building arbors and designing flowers. In 2005, Patty designed florals for the sister of a bride whose wedding was held at Hilton Sandestin Beach Golf Resort & Spa. The resort team was duly impressed, and It’s a Perfect Day became a preferred vendor following that. During the ensuing 15 years, Patty’s business blossomed. Not only does It’s a Perfect Day deliver beautiful wedding flowers for Hilton Sandestin Beach brides, but it also provides florals for large group events, special events, employee appreciation, lifestyle photo shoots, resort VIP guests and more. “We work seamlessly as a team,” Patty says. “The hotel’s banquet set-up team, their 78 HILTON SANDESTIN BEACH 2020

wedding crew, the banquet staff — everyone at the Hilton Sandestin Beach is absolutely wonderful. We count on them, and they know they can count on us.” On wedding days, Patty and Amber are admittedly in a floral flurry, but being on a first-name basis with everyone from the concierge to the valet is part of what makes a Hilton Sandestin Beach wedding come off without a hitch. “There is a mutual respect,” says Patty. “We are treated as though we are an extension of the staff, not just a vendor.” Though this florist insists “nothing is the same” about any of the year-round destination weddings she designs and “every single bride is different,” the one constant is Patty’s simple approach. She reviews her bride’s Pinterest page to get a feel for their vision and then shares It’s a Perfect Day’s Facebook page, where the bride can browse the 5,000 images of their work. Patty asks the bride to choose 10 final photo favorites. “Inevitably, I can see the patterns emerge in what a bride is looking for,” Patty shares. “We start with the color theme, and pretty much everything goes from there.” Last year, Amber designed 700 bridal bouquets. Beyond bouquets, they also design wearable flowers, flower girl baskets, centerpieces, décor, cake flowers; offer beach set up and rentals of everything from arbors to vases. But as much as Patty knows, this “flower girl” says there is always more to discover. “I still learn something new every day, and there’s always new ways to do things,” she says.

For the past 17 years, they have chosen to hold the company’s annual convention at Hilton Sandestin Beach Golf Resort & Spa because of the high quality of service, staff dependability — and an overall good time had by all. “We have been coming to Hilton Sandestin Beach since 1986 and are booked again for 2020,” said Mary John Biedenharn, office administrator for the Mississippi Trucking Association. “Why would we go anywhere else when they continue to do everything right?”

Biedenharn credits Hilton Sandestin Beach for having the space and the staff to accommodate the company’s 400-plus attendees for four days full of activities. Being a familycentric conference, having plenty of spacious and comfortable rooms alongside a variety of desirable amenities is key. “While our convention is about business, it’s also very fun and family-oriented,” said Biedenharn. “Our attendees love it because during the day they attend informative meetings, then in the evening, it’s like a vacation with their families because everyone loves being on the beach.” During the convention, Hilton Sandestin Beach’s professional staff takes care of guest room reservations, meeting coordination, catering needs, audio/visual services, entertainment coordination, set-up, takedown and everything in between. The staff is also on hand to help arrange spa services for the guests, in addition to executing the annual MTA family pool party. “Jon Lovett, director of events, does a fabulous job in training his staff to be polished and ready to go above and beyond to meet any need,” said Biedenharn. “They expertly handle every facet of making an event occur flawlessly, which makes us feel at ease and able to fully enjoy the convention.” As soon as the convention is complete, Biedenharn is back in touch with the staff planning for the next year. Where every convention is a highly anticipated event, the staff constantly strives to make changes for the better, ensuring each year exceeds the last. “We have had other places call and want to host us, but Hilton Sandestin Beach is already the best fit for us,” said Biedenharn. “We want our convention to be the best it can be, and the spacious facility, professional staff and beautiful beach ensure just that.”

As an Events Planner with PowerSouth, I’ve had the pleasure of working with the Hilton staff since for almost 20 years. We average three-to-four meetings a year at their hotel. What keeps us coming back? The staff. The Hilton Sandestin Beach facilities are great, but there are great facilities everywhere. FAMILY VACATION VICTORY Hilton Sandestin Beach caters to families big and small JENNY REIMOLD FAMILY

Having spent most of my life living on the beaches of Florida, there aren’t too many corners of the state that I have not seen. In journeying to the Florida Panhandle from our new home in Nashville, I expected to view the same white sand and emerald green waters I had become accustomed to … yet I was completely blown away by the clear blue water and white sand beach behind the Hilton Sandestin Beach Golf Resort & Spa. I knew the Destin area was famed for its family atmosphere and white sand beaches, but spending a weekend at the Hilton Sandestin Beach was a unique and special experience that I had to share. As the mother of seven, it is often a challenge finding a vacation destination that appeases my active teens but still is engaging for five children under 9 years of age. Hilton Sandestin Beach did not disappoint as kayaks were available for my older children, while my younger kids took advantage of the beachside, enclosed toddler pool and clear Gulf waters. As a bonus to parents who may need a break from parenting, the Kids Krew activity center offers day and evening childcare with a variety of creative and educational activities. This program is available in spring and summer and offers parents a much-needed day or night out alone while their kids are safely cared for in the comfort of the resort. Another feature unique to this resort is the Emerald Tower’s standard nautical bunk bed available in every room. When traveling with a large group, we often struggle to fit our family into one room and typically are burdened with purchasing two rooms to fit our children. Our room easily fit all five children with room to spare. There were no children fighting to climb into bed with mom and dad; they were excited to have their own sleeping arrangement perfectly designed for them. In addition to spending our day at the beach, we ventured out to the nearby outlets and Baytowne Wharf, a beautiful area with a variety of boutiques, restaurants, galleries and nightlife — plus an amazing schedule of outdoor festivals and special events for the entire family. on their beautiful, ocean-themed, wooden playground, went ice skating at their small rink and enjoyed an outdoor Mexican lunch. There is also zip lining, an aerial park and remote control boats for children. And all of this is a short shuttle ride away. As a frequent traveler and mother to seven, I cannot recommend this resort enough. We have rented a home in the 30A area before, but this was a much more enjoyable experience for our family. My children were constantly entertained, and there were enough adult activities to keep our family wanting more. From freshly made beds with a sunset view to custom omelets before a day at the beach, this resort has it all. In fact, many of Hilton Sandestin Beach’s team members are family and have passed the hospitality culture on to their children who now work with us. Our staff has seen many children grow up through the years, returning to the resort each year a few inches taller and ready to explore another part of the resort.
