Jak jsme se již v úvodu zmiňovali, toto číslo bude věnováno výhradně míšeňskému porcelánu. Míšeň je vlastně nejstarší a nejslavnější manufaktura na výrobu porcelánu. O míšni mluví i Milan Knižák: „Porcelán přesto, že je z hlíny, působí velmi vznešeně a nalézám v něm důstojnost i jemnost“. Jen těžko by se tyto skvosty daly popsat lépe. A právě pan Knižák, spolu s paní Koenigsmarkovou a Šustkovou, se stal kmotrem úžasně zpracované knihy Richarda Šubrta Míšeňský porcelán, která nemá obdobu na celém světě. Popisuje zde míšeň od jejího samotného zrodu, přes všechny etapy jejího vývoje až k dnešním dnům. Křest této knihy proběhl dne 13.10.2009 v kavárně Uměleckoprůmyslového muzea. Podpořit knihu přišly řady významných osobnosti z řad starožitnických odborníků - např. ředitelka Uměleckoprůmyslového musea Helena Koenigsmarková, presidentka Asociace starožitníků Simona Šustková, kmotr knihy Milan Knižák, Petr Weigl, Jiří Pilka a zástupci mnoha muzeí či galerií.

As we have already mentioned in the introduction, this issue will be devoted solely to Dresden china. Dresden porcelain is actually the oldest and most famous porcelain manufacturer. Milan Knížák says this about it „Porcelain, despite being clay, looks very noble and I find in it both dignity and gentleness.“ It would be hard to describe these gems better. It was Knížák who became the godfather of the wonderful book Dresden China by Richard Šubrta, which has no equivalent in the world. It describes the Dresden porcelain from its very birth, through all stages of its development to the present day. Tle book launch took place on the 13th of October 2009, in the cafeteria of the Museum of Decorative Arts. A number of personalities significant among antiquity experts came to support the book, for example the director of the Museum of Decorative Arts Helena Koenigsmarková, the president of the Association of antiquity experts Simona Šustková, the book’s godfather Milan Knížák, Petr Weigel, Jiří Pilka and representatives of many museums and galleries.

Historie porcelánu sahá do Číny před více než tisíci lety. O překrásném jemném materiálu vyprávěl Evropě cestovatel Marco Polo, který se s ním setkal na svých cestách na dvoře Kublaj Chána.. Dovednost výroby vlastního porcelánu však dorazila díky pečlivému střežení tajemství do Evropy až na počátku 18. století. The history of porcelain dates back more than a thousand years ago to China. The beautiful fine material was introduced to Europe by the traveller Marco Polo, who saw it on his travels in the court of Kublai Khan. The skill of producing porcelain reached Europe in the early 18th century, because of careful secret keeping.

Sousoší u klavíru v modrém, Německo, Antique Andrle, 68 000,-

Na konce 17. století pobláznění tímto materiálem vedlo k pokusům hrnčířů vyrábějících kameninu zvanou majolika nebo fajáns a sklářů na celém našem kontinentu, pomyslný závod vyhrál v roce 1708 mladý německý lékárník, chemik a alchymista J.F.Bottger.(přehlas. o). Zanechal kvůli tomuto cíli snah vyrobit zlato, ostatně byl pro své vynálezecké schopnosti uvržen saským kurfiřtem Augustem Silným do vězení a klíčem od cely přeměněné na laboratoř byl právě recept na výrobu porcelánu. Původní hmotu červené barvy zdokonaloval, až docílil v březnu 1709 zvláštní kombinace kaolínu a živce, ve které spočívalo tajemství čínského porcelánu a cesta k založení nejslavnější porcelánky v Míšni byla otevřena. Stalo se to právě před 300 lety, 23. ledna 1730. Díky Míšni se stal v Evropě nejpopulárnějším figurální porcelán. Začal ho navrhovat a modelovat J.J.Kandler, mladý a velmi talentovaný sochař, který byl jmenován v roce 1731 modelérem míšeňské továrny a brzy se stal vůdčí osobností královské porcelánky. Továrna vyráběla nepřeberné množství luxusních jídelních souborů a figurálních stolních ozdob. Některé modely, které tento autor navrhl, jako například alegorické postavy ale i žánrové výjevy, jako postavy zahradníků a harlekýnů, se vyráběly opakovaně v továrně další staletí. Figurky byly malovány jasnými emailovými barvami, Kandler navrhoval i figurky ve skupinách, nejčastěji v párech, On a Ona, pastýř a pastýřka, rybář a rybářka, ale i alegorické postavy např. Čtyři ročních období vyobrazené jako děti, Sedm můz nebo Alegorie světadílů. Slavná je i Opičí kapela, která má 26 figur včetně dirigenta. Jeho „Dračí servis“ se vyrábí v Míšni dodnes. Pro nás v Čechách také není bez zajímavosti, že kolem roku 1739 vznikl tzv. cibulový vzor, který se později vvráběl i u nás v továrně v Dubí u Teplic.

Sousoší postav u klavíru, 19. století, Míšeň, stejný kus v muzeu porcelánu v Míšni, 195 000,- Kč, Antique Andrle Pro sběratele je míšeňský porcelán spojen se známou značkou zkřížených mečů provedenou podglazurní modří. Značka, která se užívá od roku 1724, nebyla jedinou značkou užívanou pro značení, v ranném období setkáme se i se značkami KPM a AR . Protože dno bylo u nejstarších modelů neglazované, značilo se modrými meči na soklu sošky a na dnešní poměry byla tato značka tak malá, že je snadné ji přehlédnout, později se značilo na dně figur, značka je však často díky špatné glazuře rozpitá. V druhé půlce 18. století se pak užívala ve značce ještě tečka mezi držadly mečů. V tomto období měl na tvorbu továrny již vliv klasicismus. Další sběratelsky oceňované období tvorby probíhalo pod taktovkou hraběte Maroliniho a je značeno hvězdičkou mezi držadly mečů. Kromě toho měla továrna promyšlené další doplňující značení svých výrobků, a to číselnými kódy vtlačenými nebo vyškrábané podglazurně do podstavce, později ještě značkou malíře, kterými se originály odlišují od padělků. Každá významná manufaktura si vytvořila nezaměnitelný dekorativní styl, v oblasti Míšně a Drážďan je to slavný míšeňský (někdy též drážďanský styl). Až na jedinou výjimku (Vídně, která podplatila zaměstnance míšeňské továrny) si tajemství pravého tvrdého porcelánu udržela továrna čtyřicet let, až do poloviny 18. století,a až po roce 1750 se recept na výrobu rozšířil z Vídně do Nymphenburku a později do Berlína a dalších míst. Čeští sběratelé se soustřeďují zejména na figurky a porcelán z 19. století, který je pro začínajícího sběratele přehlednější z hlediska značení, pro skutečné odborníky jsou však vyhledávanou lahůdkou právě míšeňské starožitnosti z 18. století a je skutečně prestižní záležitostí mít je ve své sbírce. Na knižním trhu je v prodeji nově neocenitelná pomůcka pro všechny, kteří Míšeň již sbírají i pro ty, kteří se k tomu chystají. Náš nejrenomovanější restaurátor a znalec umění, oceněný mnoha meziná-

rodními cenami, Richard Šubrt Dr., vydal na sklonku letošního roku knihu Míšeňský porcelán, která sběratele provede vybranými modeléry a značkami této továrny a dále na fotografiích ukáže značky tak, jak se měnily v průběhu doby. Jeho dílo je unikátním a nejkomplexnějším pohledem na významný modeléry a kniha mohla vzniknout jen díky jeho mnohaleté práci restaurátora a experta na porcelán. O významu této publikace pro sběratele i odborníky vypovídá i fakt, že předmluvu ke knize napsal ředitel Národní galerie Milan Knížák a doslov ředitelka Uměleckoprůmyslového muzea v Praze Helena Koenigsmarková. Co se týká výroby porcelánu v Čechách , našem území se silně projevil vliv Vídně, která se vyznačovala zejména jemnou malbou na porcelánu (vídeňský styl). Podobně se také rozvíjela berlínská porcelánka. V Čechách došlo k trochu pozdějšímu rozvoji výroby porcelánu, dlouho totiž nebyl rakousko-uherskými zákony povoleno zakládat porcelánky na našem území. Ve Francii bylo nejznámější centrum výroby v královské porcelánce Sevres, kde zpočátku vyráběli neglazovaným, tzv. biskvitový porcelán, později se specializovali zejména na velké malované vázy s kvalitní malbou a zlacením a ovlivnili francouzskou výrobu. V Itálii byl nejvýraznější styl Capodimonte. Za zmínku rozhodně stojí bavorský porcelán z továrny Rosehthal, která vznikla v roce 1879 a vytvořila si vlastní styl, sběratelsky velmi vyhledávaný. Kromě vysoce kvalitního jídelního pocelánu, který se vyráběl zejména v období secese a art deca, přinesl novinky v podobě různých figurek, hlavně zvířátek, které se skvěle sbírají. Hlavním vodítkem pro určování porcelánu je kromě stylu, v jakém je vyroben a ozdoben, hlavně značka. Neznačené výrobky jsou automaticky považovány za neautorizované a tudíž jsou i méně cenné. Nejstarší výrobky se sice neznačily, ale velmi brzy si

každá porcelánka vytvářela vlastní systém značení, tovární značky se pro určení stáří určitého modelu většinou kombinovaly s číselnými kódy. U jídelních servisů se v 18. A 19. století často neznačil každý kus, ale často jen některý, např. konvička. Každá továrna má několik značek, které se postupně měnily, jak šel vývoj. Tato skutečnost nám usnadňuje dataci porcelánu, protože některé továrny, např, Míšeň, opakovaly výrobu stejných modelů po uplynutí několika dekád. Porcelán má obrovský potenciál k tvoření sbírek. Vyskytují se totiž předměty v naprosto různých cenových hladinách a je tedy na každém, na jakou oblast se chce orientovat. Člověk by měl sbírat takové předměty, které si může dovolit, aby mu sběratelství přineslo radost. Drahé předměty se lépe zhodnocují, než ty levné, nejstarší značené kousky Míšně dosahují dnes astronomických částek. Každá země obvykle preferuje věci, které pochází z továren na jejím území. Někteří sběratelé se zaměřují na určitou továrnu či naopak na určité historické období. Vznikají sbírky talířů, hrníčků, zvířátek či dětských figurek. Začínajícím sběratelům můžeme doporučit návštěvu starožitnických obchodů, v Praze můžete najít krásné míšeňské kousky například v Křížovnické ulici ve Starožitnostech Andrle, dále v Mikulandské ulici v Pražských starožitnostech, rosenthalské figurky najdete zase ve Valentinské ulici ve Starožitnostech Alma. Ochotný personál začínajícímu sběrateli rád ukáže zajímavé kousky, vysvětlí značení sošek a cenu. Pěknou možností na nedělní výlet pak může být Muzeum porcelánu v Klášterci na Ohří, kde je nainstalována vzácná sbírka Umělecko-průmyslového muzea v Praze, od ukázek japonského porcelánu přes sbírku nejstaršího míšeňského po roce 1710, ucelenou sbírku starého čínského porcelánu až po 21 sálů českého porcelánu od jejich počátků do současnosti. Pro cestovatele pak můžeme doporučit například muzea v Římě, Florencii, Vídni či New Yorku. Sběratelství je totiž dobrodružstvím.

At the end of the 17th century the infatuation with this material led to attempts by potters and glass makers all over the continent producing earthenware called maiolica or faience; the imaginary race was won in 1708 by a young German pharmacist, chemist and alchemist J.F. Bottger. He abandoned his efforts at producing gold to concentrate on porcelain, moreover he was thrown in the jail by the Saxon elector Augustus the Strong for his inventive skills and the cell converted into a laboratory, which was the key to the recipe for porcelain production. He improved the original material of red color and in March 1709 he achieved a special combination of china clay and feldspar which was the secret of Chinese porcelain and so the way to establishing the most famous porcelain factory in Meissen was opened. It happened just 300 years ago, on the 23rd of January 1730. Thanks to Meissen, figurative porcelain became the most popular in Europe. It began to be designed and modelled by J.J. Kandler, a young and very talented sculptor, who was appointed in 1731 the designer of the Meissen factory and soon became a leading figure of the royal porcelain factory. The factory produced a huge amount of luxurious dining sets and figural table decorations. Some items designed by the author are for instance, allegorical figures as well as genre scenes, such as gardeners and harlequin figures were made repeatedly in the factory for centuries. The pieces were painted with bright enamel paints. Kandler designed figures in groups, usually in pairs: He and She, a shepherd and shepherdess, a fisherman and his wife as well as allegorical figures such as Four Seasons portrayed as children, Seven muses or Allegory of continents. The famous one is Monkey

band which has 26 figures, including the conductor. His „Dragon‘s Set“ is produced in Meissen even today. For us in the Czech Republic it is also interesting to note that around 1739 the so-called onion pattern was created which was later also produced in a factory in Dubí near Teplice. For collectors the Meissen porcelain is known as the brand associated with crossed swords, made in enamel blue. The brand, which has been used since 1724, was not the only brand name used for production, in the early period we can find also the marks KPM and AR. For the bottom was unglazed in the oldest models, they were marked by the blue swords on the statue base. For today‘s situation the mark was so small that it is easy to overlook it. Later, figures were marked on the bottom, the brand is often without clear margins due to bad glaze. In the second half of the 18th century, a spot between the handles of the swords was used. In this period the production started to be under the influence of classicism. Another period appreciated by collectors was conducted by Earl Maroliniho and it is marked by an asterisk between the handles of the swords. In addition, the factory used further additional labelling of their products, by numerical codes pressed or scratched under the glaze into the base, later by a painter‘s mark which makes originals different from fakes. Every major manufacture created an unmistakable decorative style, in the area of Meissen and Dresden it is the famous Meissen (sometimes Dresden) style. With one exception (Vienna who bribed employees of the Meissen factory), the secret of the true hard porcelain was kept in the factory for forty years, until the mid-18th century and after 1750 the recipe for the production spread from Vienna to Nymphenburg and later to Berlin and other places. Czech collectors concentrate particularly on figures and porcelain from the 19th century which is easier for a novice collector in terms of marking; but the real experts look for Meissen antiquities from the 18th century and it is indeed a matter of prestige to have them in a collection. On the book market there is on sale, a new priceless tool for all those who have collected Meissen porcelain and even for those who are about to start. Our most renowned restorer and art connoisseur, awarded with numerous international prizes, Dr. Richard Šubrt published the book Meissen Porcelain, at the end of this year which guides collectors through selected modellers and marks of this factory, then it shows in the photographs the marks as they changed over time. His work is unique and the most comprehensive view at major modellers and the book could only come out because of many years of his work as a restorer and expert on porcelain. The significance of this publication for collectors and experts is confirmed by the fact that the preface to the book was written by the director of the National Gallery, Milan Knížák and the epilogue by the director of the Museum of Decorative Arts in Prague, Helena Koenigsmarková. As for the production of porcelain in Bohemia, our territory was heavily influenced by Vienna, which was characterized by a particularly fine painting on porcelain (Viennese style). The Berlin porcelain factory was developing in a similar way. In

Bohemia there was a little bit of delay in the development of porcelain production because for a long time the Austro-Hungarian laws prohibited establishing porcelain factories in the country. In France, the most famous centre of production was in the royal porcelain factory of Sevres where initially it produced unglazed, so called biscuit porcelain and later they specialized especially on large painted vases with quality painting and gilding; they heavily influenced the French production. In Italy, the style of Capodimonte was most significant. The Bavarian porcelain from the factory Rosehthal is definitely worth noting. It was established in 1879 and created its own style, highly sought-after by collectors. In addition to high-quality dining porcelain which was produced mainly in the Art Nouveau and art deco periods, it brought novelties in the form of various figures, especially animals, which make perfect collectibles. The main guideline for defining porcelain is the style in which it is designed and decorated and especially the mark. Unmarked products are automatically considered unauthorized and are therefore less valuable. The oldest products were not marked but very soon each porcelain factory created its own marking system. For determining the age of a model the factory marks were usually combined with numerical codes. As for dinner sets, in the 18th and 19th century not each piece was marked, but often only one, for example a pot. Every factory had several marks that were gradually changing. This fact make the dating of porcelain easier because some factories, for example Meissen, repeated the production of the same models after several decades. Porcelain has a huge potential for the formation of collections. There are objects in totally different price levels and therefore it depends on everybody as to which level they want to concentrate on. One should collect such objects which are affordable so that collecting brings joy. Expensive objects are easier to valorize than cheaper ones; the oldest marked pieces of Meissen porcelain reach astronomical prices nowadays. Every country usually prefers things that come from the factories in its own territory. Some collectors focus on a particular factory or inversely on a certain historical period. This creates collections of plates, cups, animals and children‘s figures. We can recommend to burgeoning collectors a visit to antique shops, in Prague you can find beautiful Meissen pieces for instance in Křížovnicka street in Antiquities Anderle, then in Mikulandská street in Prague Antiquities, rosenthal figurines can be found in Valentinská street in Alma antiquities. Helpful staff will gladly show to new collectors something of interest and will explain the marks of statues and prices. A nice option is also a Sunday trip to the Museum of Porcelain in Klášterec nad Ohri where a rare collection of the Museum of Applied Arts in Prague is installed, from the examples of Japanese porcelain to a collection of the oldest Meissen porcelain after 1710, a complex collection of ancient Chinese porcelain and 21 halls with Czech porcelain from the beginnings to the present. To travellers we can recommend for example museums in Rome, Florence, Vienna and New York. For collecting is an adventure.

A number of potential customers from the ranks of mere mortals, instead of enjoying sports, only bow to these monstrosities and go back to the pleasant comfort of their home living rooms and studies. Among these individuals there are often women, who are not interested in being possibly mocked by the „stronger“ sex or stressed by the overbearing crowd.

The building company, BIG Architecture noticed this unflattering trend and decided to act vigorously. In the heart of the Swedish city of Malmö a remarkable building is projected to be built named ‚World Village of Women Sports‘ (WVOWS). The sprawling complex over a respectable 100 000 square meters can be described as a truly independent village in the city centre. The emphasis is mainly placed on complying with the specific requirements of women, regardless of age or origin. Nevertheless, it is open to men as well. WVOWS should be an oasis of mental and physical well-being in the middle of today‘s hectic world, with no machine based gyms or training centers with their chilly atmosphere. Its main motto is variability and diversity. At the center of the complex is a soccer field, completed with a handball hall, gymnasiums, fitness gyms and various facilities for fitness, wellness and healthy living. A special emphasis is put on the possibility to relax and meet people. The complex is interwoven with a system of paths, little squares and parks. The special pull-out gardens can change the face of the building according to actual needs. In the parks, you can find plants from all around the world. The very

central square is surrounded on all sides by flowers, bushes, trees and vines evoking a harmonious feeling of peace and fusion with mother nature. The whole area is lined with buildings which, according to their designers, should resemble the silhouettes of Alpine peaks. This so-called urban landscape will be a blend of architecture and nature. It is in these mountain peaks where (not only) women can find other important aspects of human life, such as shopping. The ground floors of the peripheral buildings are thus used as shopping galleries, on the upper floors we can find offices, hotels or private housing units. For example, the lower floors of the south-west „peak“ is reserved for a local school, while in the North Massif there will be places for a local publishing house. The whole object is interwoven with pedestrian zones. All cars must be left behind at the gates of the village or in underground garages. The central soccer field can easily be used as a space for cultural events, large concerts, exhibitions and women‘s favorite, flea markets. A soccer match can be watched by up to 5,000 spectators, for concerts the capacity of seating doubles and there are four times more places for standing. The central promenade stretching from

west to east can smoothly accommodate and regulate masses of people coming and going. The unique architecture exposes each point of the complex at least once a day to the sunlight (assuming of course that is not behind clouds). This fact, improves the quality of the atmosphere in the buldings and lightens up visitors‘ minds, second it makes WVOWS an energy independent unit, as the roofs of the buildings are covered with solar panels. Moreover, geothermal energy is used for the heating of the buildings. The ecological nature of the complex is underlined by construction materials, as the ceramic facing is entirely recyclable and thus makes the buildings attractive not only from the aesthetic and financial point of view, but also ecological. The proud architects denote the project WVOWS as „a balanced combination of kindness and profitability, sporting and shopping, parks and parking“. Ačkoli na místě dnešního velkoměsta samozřejmě lze vystopovat osídlení původními obyvateli na tisíce let do minulosti, městu, tak jak si jej představujeme my, byl položen základ někdy kolem roku 1860. Toto relativní mládí má pro Evropana zvyklého na historická centra evropských měst za důsledek, že se mu Vancouver (stejně jako většina severoamerických velkoměst) může zdát z architektonického hlediska poněkud fádní. I přes malý počet historických budov, reprezentovaných například katedrálou Christ Church z devatenáctého století, je však ve Vancouveru na co se dívat. Právě díky absenci historického centra v evropském smyslu slova, jíž by bylo třeba podřizovat další výstavbu, zde mohlo vzniknout hned několik zajímavých moderních budov, zejména pak pro nás exotických mrakodrapů. Skutečnou zajímavostí je pro návštěvníky čínská čtvrť, největší v celé Kanadě, jejíž vstup střeží typická orientální brána. Přestože by po přečtení předchozích řádků mohl Vancouver působit poněkud chladným dojmem, opak je pravdou. Je zde mnoho romantických zákoutí a nádherných parků - nejlepší způsob, jak je objevit, je zeptat se místních. Všichni Kanaďané se totiž vyznačují mimořádně přátelskou povahou. Pomáhat lidem kolem sebe je zde něco jako národní zvyk. Zcela běžná je například situace, kdy zoufalý turista zmateně tápe v rozložené mapě a během chvíle má kolem sebe několik místních, kteří se snaží poradit mu správný směr. Pokud někdo nemůže nastartovat auto, ostatní mu jej pomohou roztlačit bez jakéhokoli předchozího vyzvání. Ruku na srdce, kdy jste něco podobného naposledy zažili třeba v Praze? Je- li Praha mimo jiné výjimečná svým historickým panoramatem, pak Vancouver nabízí, zejména při pohledu z moře, panorama zcela odlišné, avšak neméně dech beroucí. Je tvořeno majestátními štíty pohoří North Shore. Dobrodružnější povahy v horách naleznou nespočet způsobů trávení volného času. V zimním období jsou samozřejmě nejaktuálnější veškeré sporty, jež jakkoli souvisí se sněhem - od lyžování až po výlety na sněžnicích či se psím spřežením. V létě by rozhodně byla chyba nechat si ujít horská kola, ať už vás spíše zajímají projížďky po okolí, nebo extrémní sjezdy. Ve všech ročních obdobích North Shore Mountains přitahují horolezce všeho druhu. Jedna z prvních věcí, které si na obyvatelích Vancouveru všimnete, je, že téměř všichni jsou v přímém rozporu s tvrzením o obézní Severní Americe spíše sportovních postav. estu plnou gurmetských zážitků započneme v nejzápadnějším cípu Švýcarska ve městě Ženeva. Ta je známá jako gastronomické centrum světového významu. Jako důkaz o tom svědčí neuvěřitelných sedm restaurací v tomto městě, které se těší oceněním jednou či dvěma Michelinskými hvězdičkami. Velkou měrou se na jejich úspěchu podílí kvalitní tradiční kuchyně tohoto regionu. Jedním z tradičních pokrmů je ostrý sýr Vacherin Mont-d’Or, který je speciální především kvůli své netradiční úpravě. Někdy se o něm hovoří jako o „minifondue“. Sýr se totiž podobně jako fondue nechává roztavit a konzumuje se rozteklý. Vacherin Mont-d’Or ale zůstává ve své dřevěné krabičce a není tak k jeho tradiční přípravě potřeba speciální fondue rendlík. Ruku v ruce s dobrým jídlem jde i výborné víno. Ženeva se pyšní 2000 let starými vinicemi, ze kterých zpracovává lahodné víno různých odrůd. Cestou na východ kolem Ženevského jezera nesmíme minout dvě více než zajímavá místa. Prvním z nich je škola čokolády v Nyonu, kde můžete spolu s hlavním cukrářem poznávat výrobu čokolády a absolvovat kurz, který je zakončen certifikátem. Druhým místem je pak muzeum jídla Alimentarium v malém městečku Vevey. Toto mezinárodně známé muzeum prezentuje mnoho rozdílných aspektů výživy. Prohlídka je rozdělena do čtyř okruhů s tématy vaření, konzumace, nákup a trávení. Ač možná toto téma nepatří k nejpopulárnějším, muzeum vše předkládá zábavnou formou pomocí audio-vizuálních prezentací a nejrůznějších aktivit. Muzeum Alimentarium leží kousek od města Montreux, které bývá označováno za perlu švýcarské riviéry. Je vyhledávaným letoviskem především díky své skvělé poloze. Nachází se na břehu Ženevského jezera a za zády se mu zvedají vysoké vrcholky Alp. Hlavní místní předností z gurmetského odvětví je víno z kraje Lavaux. Lavaux, rozkládající se mezi městy Montreux a Lausanne, je považován za nejkrásnější kraj vinic v celém Švýcarsku. Také proto byl označen za kulturní dědictví UNESCO. Díky vlídnému podnebí a ideálnímu slunci se zde daří odrůdám Dézaley, Epesses a St-Saphorin. Necelou půl hodinu od Montreux narazíme na solný důl v Bex. Sůl bezesporu patří ke stravování a návštěva solného dolu k nezapomenutelným zážitkům. Ve svých útrobách skrývá 50 km tunelů, šacht a gigantických jeskyní, které můžete prozkoumávat buď vlakem, nebo pěšky. Osvěžení po náročné prohlídce dolů hledejte ve starobylém městě Martigny, které bylo původně římskou osadou. Tato historická tradice zde nyní souzní se švýcarskou vášní pro kvalitní stravu. Švýcarskou a francouzskou specialitu, sýr Raclette a jeho nezvyklou přípravu, již každý dobře zná. Málo kdo už ale ví, že vznikla v kantonu, kde se momentálně nacházíme, ve Valais. Podle legendy vznikla tradice konzumace Raclettu náhodou. Horal, který zde žil, se jen snažil efektivně odstranit okoralý sýr. Přiložil ho k ohni a rozteklé kousky odkrajoval nožem. Od té doby se v celém Švýcarsku a ve Francii takto sýr Raclette upravuje a konzumuje. Kombinuje se s vařenými brambůrkami a nakládanou zeleninou. Kde jinde byste si měli na jazyku se rozplývající výrazný sýr vychutnat, než právě v místě jeho vzniku. Po dlouhém hodování jistě přijde vhod také výtečná kořalka zdejšího kraje – meruňkovice. Cesta z Martigny do Brigu, kam nyní směřujeme, je zážitkem sama o sobě. Vede zde železnice i mnoho cyklostezek a na konci cesty čeká zasloužená odměna. Nejlepší odměnu zaručuje víno ze zdejších vinic Visperterminen. Ty jsou nejvýše ležícími vinicemi v Evropě, najdete je ve výšce 1.150 metrů. Daří se zde odrůdě Heida, která se nepěstuje téměř nikde jinde na světě.

GURMET/FINE DINING

Další kanton, který nyní navštívíme, je místem lahodných sýrů. Podle řeky Emme získal název dutinný sýr, který se v tomto úrodném kraji zrodil. Ementál, někdy považovaný za krále sýrů, patří do velké rodiny sýrů tvrdých. Tvrdé sýry jsou odedávna vyráběny tam, kde bylo nutné nějakým způsobem konzervovat a tím uchovat suroviny jako například mléko na delší dobu. Proto je samozřejmostí, že tvrdé sýry nalezneme především v horských a podhorských oblastech. Ementál v tomto směru není výjimkou. V horských oblastech v kantonu Bern je mnoho drobných sýrových továren. Mají nedostižnou atmosféru, a to právě kvůli své netradiční poloze. Procházka zelenými loukami v ničím nerušené krajině obohacená o ochutnávku výtečných sýrů může být nezapomenutelným zážitkem. Pokud byste stále ještě neměli sýrů dost, v Gsta-

adu je ještě jeden sýrový unikát. Jedná se o sýrovou katedrálu. Odkrývá více než 3 000 bochníků sýrů, z nichž některé jsou historickými raritami. Kromě zpracování mléka zde kvete další potravinářské odvětví – zpracování čokolády. V malebné vesničce Bulle naleznete tu nejstarší továrnu na čokoládě v celém Švýcarsku. Pod názvem Cailler z těchto míst již po dvě stě let proudí tradiční čokoláda, která se významným způsobem podílela na výjimečné švýcarské reputaci, co se čokolády týče. Aby toho nebylo málo, v Gstaadu se každoročně koná týden gurmetů. Je sice až v červenci, ale rozhodně se vyplatí si cestu na něj dobře promyslet. Ve Švýcarsku je totiž tolik míst, které by byla škoda nenavštívit. Jedním z nich je Basilej - město známé jako centrum hudby, umění, architektury a kultury. Kromě

polévky Flour a dalších laskomin, které se těší oblibě v celém Švýcarsku, zde najdete typicky basilejskou záležitost – Leckerli. Leckerli je specifický druh perníku, který se nevyrábí nikde jinde na světě. Tradice jeho výroby sahá více než 600 let zpátky do minulosti, ale na oblibě neztrácí. Naopak, mnoho turistů jezdí do kouzelné Basileje prohlédnout si město a zintenzivnit zážitek sladkým dezertem. Jiní sem směřují kvůli dalšímu unikátu tohoto kraje, kvůli absinthu. „Zakázaná voda“ se zde po dlouhá léta vyráběla, nyní je ale její konzumace zakázána. A je dobře známo, že právě zakázané ovoce chutná nejlépe. Nedaleko od rušného města Neuchatel plného drobných kaváren a útulných restaurací se nachází destilérka absinthu. Zde se za doprovodu průvodce můžete o tomto pozoruhodném nápoji dozvědět vše, co Vás bude zajímat.

Ani další region nezůstává v oblasti labužnické stravy a tradičních výrobků zahanben. Okolí města Curich je známé perfektními lyžařskými podmínkami a četnými lanovkami. Nabízí ale také mnoho dalšího. Curich jako největší město ve Švýcarsku je pulzující metropolí, která v sobě kombinuje kulturu, uměleckou scénu a báječné nakupování. Zároveň je ekonomickým centrem a středem kulinářství a restauratérství celého státu. Málokdo ví, že je místem vzniku konzumace müsli. Doktor Bricher-Brenner před sto lety přišel s nápadem zdravé snídaně.

Smíchal vločky, oříšky a jablka, vše zalil kondenzovaným mlékem a vymyslel tak kultovní pokrm zastánců zdravé stravy a ekologie. Již méně zdravým, ale o nic méně chutným pokrmem, který kdekoliv v Curichu seženete, jsou Rösti. Rösti jsou tradičním švýcarským pokrmem připravovaným z hrubě nastrouhaných brambor, vařených či syrových, které se následně opékají nebo smaží. Původně byly rösti běžnou selskou snídaní kantonu Bern, ale s velikým ohlasem se rozšířily do celého Švýcarska. V Curichu se připravuje ze slaniny, rajčat, cibule a kmínu a jsou opravdovou lahůdkou. Cestou do Lucernu, kam zamíříme nyní, se jen krátce zastavíme v destilérce Ette Sohne. Je vyhlášená výtečnou višňovicí a dalšími ovocnými likéry. Za malou zajížďku jistě stojí také návštěva malé vesnice Kahlbrunn, kde je ukrytý opravdový poklad. Skrývá se zde cukrárna Isler, jež nabízí zábavnou formou detailní pohled do světa čokolády. Nejen, že se zde dozvíte vše o její výrobě a zpracování, ale cukrář nabízí také čokoládový workshop. Díky němu se naučíte vytvářet a dekorovat své vlastní čokoládové postavičky. A to jen tak někdo neumí. Samotný Lucern, kam jsme konečně dorazili, je považován za město dobrodružství. Ne však, co se jídla týče. V gastronomii se o žádné dobrodružství

jednat nebude, můžete se spolehnout na zaručené a vyzkoušené dobroty. Obyvatelé Curichu se pyšní výtečným masovým koláčem, masovými kuličkami a zpracováním višní na všechny způsoby. Město Chur se nenechá zahanbit. Je nejstarším švýcarským městem, jeho stáří sahá až do období před více než 5 000 lety. Toto původně malé biskupské sídlo se díky výhodné pozici rozrostlo až v hlavní a největší město kantonu Graubünden. e begin the journey full of gourmet experiences in the westernmost corner of Switzerland, in Geneva. It is known as the gastronomic centre of a world importance. The evidence is that there are unbelievable seven restaurants in this city awarded by one or two Michelin stars. The traditional high quality cuisine of the region contributes much to their success. One of the traditional dishes is a spicy cheese, Vacherin Mont-d‘Or which is special mainly because of its unusual preparation. Sometimes it is referred to as „minifondue“. The cheese, like fondue is melted and then consumed. But Vacherin Mont-d‘Or remains in its wooden box and for the traditional preparation there is no need for a special fondue pot. Excellent wine goes hand in hand with good food. Geneva boasts about 2000-year-old vineyards which process different varieties of delicious wine. On the way to the east around Lake Geneva, we cannot miss two more interesting places. The first one is a chocolate school in Nyon, where you can learn about chocolate production together with the main cook and undergo a training which culminates in a certificate. The second place is the food museum Alimentarium in a small town of Vevey. This internationally known museum presents many different aspects of nutrition. The tour is divided into four areas with the themes of cooking, eating, shopping and digestion. Though perhaps this topic is not the most popular one, the museum presents everything in an exciting form of audio-visual presentations and various activities. The museum Alimentarium is located near the city of Montreux which is called the pearl of the Swiss Riviera. It is a popular destination mainly thanks to its excellent location. It lies on the banks of Lake Geneva and behind it there are the high peaks of the Alps. The main local advantage of the gourmet sector is wine from the Lavaux region. Lavaux, lying between the towns of Montreux and Lausanne, is considered the most beautiful region of vineyards throughout Switzerland. That is also why it was designated a cultural heritage of UNESCO. Thanks to the ideal climate and the gentle sun, varieties of Dézaley, Epesses and St. Saphorin thrive here. In less than half an hour from Montreux we run across a salt mine in Bex. Salt is undoubtedly a part of the diet and visiting the salt mine is an unforgettable experience. Inside there are 50 km of tunnels, shafts and gigantic caves hidden that you can explore either by train or on foot. After the intensive search into the depths, look for refreshment in the ancient city of Martigny, which was originally a Roman settlement. This historical tradition here now resonates with the Swiss passion for good food. The Swiss and French specialty, Raclette cheese and its unusual preparation is well-known to everybody. But only few know that it originated in the canton where we currently find ourselves, in Valais. According to a legend, the tradition of eating Raclette was an accident. A mountaineer who lived there was just trying to effectively remove stale cheese. He put it in fire and cut melted pieces with a knife. Since then, throughout all Switzerland and France Raclette cheese is prepared and eaten like that. It is combined with boiled potatoes and pickled vegetables. Where else should you enjoy the strong melting cheese, than in the place of its origin. After much feasting the excellent spirits from apricot of this region will certainly come in handy. The journey from Martigny to Brig where we are heading now is an experience in itself. Railways and many cycle paths go through here and at the end of the road there is a deserved reward waiting. The best reward is guaranteed by wine from the local vineyards Visperterminen. They are the highest-located vineyards in Europe, you will find them at the height of 1,150 meters. The variety ‚Heida‘, thrives here. It is not grown almost anywhere else in the world. Another region which we visit now, is a place renowned for delicious cheeses. The river Emme gave the name to the cheese with holes that was born in this fertile region. Emmental, sometimes regarded as the king of cheeses, belongs to a large family of hard cheeses. Hard cheeses are made from time immemorial, where it was necessary to somehow preserve and maintain raw materials such as milk for a longer period. Therefore, it is obvious that the hard cheeses can be found mainly in mountainous and foothill areas. Emmental is no exception. In mountainous areas of the region of Bern, there are a lot of small cheese factories. They have a unique atmosphere, mainly because of its unusual location. A walk in the green meadows, in the undisturbed landscape enriched with an excellent tasting of cheeses can be an unforgettable experience. If you still don’t have enough of cheese, in Gstaad there is still a cheese rarity. It is a cheese cathedral. It reveals more than 3 000 loaves of cheese, some of which are historical rarities.

In addition to the milk processing another food industry is blooming here – chocolate. In the picturesque village of Bulle you can find the oldest chocolate factory in the whole of Switzerland. Under the name Cailler the traditional chocolate has been flowing from these places for two hundred years, which significantly contributed to the outstanding reputation of Switzerland as for the chocolate. To add more, a week of gourmets takes place in Gstaad every year. Although it is as far as in July, it is definitely worth the trip. In Switzerland there are so many places that would be a shame not to visit. One of them is Basel - the city known as the centre of music, art, architecture and culture. Besides the Flour soup and other delicacies which enjoy popularity throughout the whole Switzerland, here you will find a typical Basel thing, Leckerli. Leckerli is a specific type of gingerbread which is not produced anywhere else in the world. The tradition of its production goes back more than 600 years into the past, but does not lose popularity. Conversely, many tourists come to visit the magical city of Basel and intensify the experience by a sweet dessert. Others come here because of another unique product of this region region, absinthe. The „forbidden water“ was produced here for many years, but nowadays its consumption is prohibited. And it is well known that the forbidden fruit tastes best. Not far from the bustling city of Neuchatel full of small cafes and cozy restaurants there is a distillery of absinthe. Here following a guide, you can learn everything about the interesting drink which you want to know. Even other regions of this country not famous for gourmet food and traditional products, need be ashamed. The surrounding of the city of Zurich is known for its perfect ski conditions and numerous lifts. But it offers much more. Zurich as the biggest city in Switzerland, is a vibrant metropolis that combines culture, art, scene and fabulous shopping. At the same time it is an economic centre and the centre of cooking and catering throughout the country. Few people know that eating muesli originates from here. A century ago, doctor Bricher-Brenner came up with the idea of a healthy breakfast. He mixed flakes, nuts and apples, poured condensed milk on the top and so invented the cult dish of all fans of a healthy diet and ecology. A less healthy, but no less tasty dish that you can get anywhere in Zurich, is Rösti. It is a traditional Swiss dish prepared from roughly grated potatoes, cooked or raw, which are subsequently roasted or fried. Originally rösti was a common peasant breakfast of the Bern region but with great acceptance it has spread all over Switzerland. In Zurich it is prepared from bacon, tomatoes, onion and cumin and it is a true delight. On the way to Lucerne, where we are going now, we have just a short break in the distillery Ette Sohne. It is renowned for excellent cherry spirits and other fruit liqueurs. A visit of the small village Kahlbrunn where a real treasure is hidden is certainly worth a small detour. The Isler patisserie is hidden here, it offers a detailed look into the world of chocolate in a funny way. Not only here you will learn everything about the production and processing of chocolate, but it also offers a chocolate confectioner workshop. It helps you learn how to create and decorate your own chocolate figures. Not anyone can do that. Lucerne itself, where we finally arrived, is considered a city of adventure. But not for the food. The cuisine won’t be an adventure at all, you can count on guaranteed and proven delicacies. The inhabitants of Zurich boast about excellent meat pie, meat balls and processing cherries in all ways. The town of Chur would not be ashamed by others. It is the oldest Swiss city, its age dates back to more than 5 000 years ago. The small episcopal office grew due to its good position in the capital and largest city of the canton of Graubünden. It is located in a place where the Rhine river, just after the junction of the Front and the Back Rhine, turns north and flows freely into the Lake Constance. The nature here is beautiful and fertile. The specialty of this region is dried beef. The best one is dried for ten to fifteen weeks in the fresh alpine air. This fact is well known, but the secret of spices used for this delicacy however, remains hidden. Perhaps for this reason, the local dried meat is so much in demand. Towards the south, we cannot miss the picturesque brewery in Monstein, the highest brewery in Europe. Here you will feel like you are in paradise. The delicious beer, in combination with a breathtaking view and serenity evoke a wonderful atmosphere. Quickly moving to the second last place on our long journey of gourmet locations. It will be in St. Moritz. The luxury ski resort is both modern and elegant. Here many innovative ideas and dishes for the most demanding visitors are born. Chocolat Stela SA comes also from here – the organic chocolate without sugar which builds on the fair trade. This area gave birth to many adaptations of polenta and the merlot variety of grapes are grown here. For the completion of our trip we will go back to Lucerne. Above the Lucern lake the monumental Mount Rigi stretch to the sky, the town is situated near the foot of it. There is a cable car going to the top, and here we will experience a gastronomic adventure that is the imaginary icing on the cake of our journey. Kvalita špičkového doutníku však závisí na mnoha dalších faktorech, především na kvalitě tabáku. Ta je ovlivněna půdními a povětrnostními podmínkami, způsobem sušení a fermentací, dále způsobem namíchání listů a ubalením. Podle kvality se pak ručně balené doutníky rozdělují do tří kategorií. Doutníky Premium mají náplň z dlouhých tabákových listů, u některých se provádí plnění a lisování strojově a ručně se váže pouze krycí list; u kategorie Super Premium se na náplň a krycí list používá vybíraný tabák, který je podroben speciálnímu postupu vyzrávání. Doutníky Vintage jsou pak prvotřídní doutníky vyrobené výhradně ze sklizně jediného roku. Do kategorie Vintage tak samozřejmě patří nejlepší a také nejdražší doutníky na světě. Při výrobě doutníků se používají suché a zralé tabákové listy a předcházející proces zrání a sušení trvá i desítky dní. Faktory jako vlhkost a teplota vzduchu mají totiž zásadní vliv nejen na pozdější chuť a vůni doutníku, ale i na délku jeho hoření. Po dokončení procesu zrání a sušení se jednotlivé listy třídí na náplň, krycí listy a vázací listy. Tabák, který se ve výsledku použije jako náplň, dodává doutníku jeho chuť a vůni. Tato náplň je smíchána ze tří různých typů listů: tmavé listy z vršku rostliny mají výraznou chuť i vůni a hoří pomalu, světlejší listy ze středu rostliny pak toto výrazné aroma zjemňují, třetí typ listů se proto, že dobře hoří, používá jako vnějšek náplně. Pokud se tabák na náplň zpracovává strojově, je doutník naplněn sekaným tabákem, při ruční výrobě jsou jednotlivé druhy listů varhánkovitě poskládány, čímž vytváří síť průduchů. Vázací listy pak tento středový tabák svazují dohromady a dávají doutníku tvar. Na povrch doutníku se používají krycí tabákové listy. Ty musí být jak vysoce kvalitní, tak i příjemné na pohled: musí být tedy hladké, pružné, ohebné a musí mít příjemnou vůni. Je však nutné zdůraznit, že výroba doutníků je opravdové umění. Tabákové listy musí být dostatečně vlhké, aby se nelámaly, přesto dost suché, aby rovnoměrně hořely. Jak už bylo řečeno, všechny tři druhy listů, tady náplň, vázací a krycí listy musí být zkombinovány ve správném poměru. Také osoba baliče je nesmírně důležitá. Nejprve balič vytvoří takzvaný smotek, který poté balí do krycího listu, kdy se smotek položí napříč přes roh oříznutého krycího listu a od jednoho konce se začne jemně balit tak, aby se jeho kraje po každém otočení překrývaly přes sebe. Po zabalení se doutník poválí tak, aby se rovnoměrně zakulatil. Poté se doutníky ukládají do temperovaných skladů, kde dále zrají a kde se vyrovnává jejich chuť, vůně, aroma a upravuje se jejich vlhkost. Teprve dostatečně vyzrálé doutníky se třídí podle barev, jsou označeny takzvaným prstýnkem, jakousi malou etiketou, a poté se skládají do cedrových krabic. Barva doutníku je pak vlastně barvou krycího listu. Celkem se rozlišuje sedm barev a více než šedesát odstínů: Claro Claro je nazelenalý list, Claro list světlé, krémové až hnědé barvy, list Colorado claro je středně až tmavě hnědý, Colorado má barvu spíše načervenale hnědou, Colorado maduro pak tmavě hnědou. Listy Maduro jsou tmavě hnědé až černé a nejtmavější černý list se nazývá Oscuro. Obecně se pak dá říci, že čím světlejší barvu má krycí list, tím je jeho chuť slabší, a naopak, čím tmavší barva, tím sladší a plnější chuť. Veškeré doutníky se také dají dělit do dvou kategorií podle tvaru. Rovné doutníky se nazývají Pajeros a dále se rozdělují na Coronas, které jsou brány jako jakýsi standard a podle kterých se ostatní doutníky měří, na delší a tenčí Panatelas a na Lonsdales, jakýsi přechod mezi předchozími typy. Doutníkům, které mají nepravidelné tvary, se pak říká Figurados. Na závěr se ještě hodí připomenout pár tipů od pravých znalců a milovníků doutníků. Čím je doutník delší, tím více chuti poskytne a tím čerstvější bude kouř; pokud bude doutník širší, bude pomaleji hořet a celkově vyprodukuje více kouře s intenzivním aroma a příchutěmi. Užší doutník se pak sice vykouří rychleji, ale více soustředí své příchutě v ústech a nabízí ostřejší chuť.

f you want to enjoy a cigar and have a guarantee that your choice is not a mistake, experts recommend to evaluate the following basic criteria: the cigar must be hand-made by traditional companies with a good reputation, must be attractive to the eye and feel comfortable sitting in the hand. It must be made from the best ingredients, which resonate together; the smoke must be a pleasure not only to the taste, but all other senses also. However top quality cigars depend on many factors, but mainly it is based on the quality of the tobacco and itâ&#x20AC;&#x2122;s production. This is influenced by soil and weather conditions, drying and fermentation methods and the method by which the leaves are rolled together. According to quality, hand rolled cigars can be divided into three categories. Premium cigars are filled from long tobacco leaves, but in some of them the filling is made and pressed mechanically and only the wrapper is hand bound, the Super Premium category the filler and wrapper leaf is collected from selected tobacco which is subject to special maturation processes. The vintage cigars class are the top class, which are made entirely from the harvest of a single year. In the Vintage category, of course, is the best and most expensive cigars in the world. In the manufacture of cigars dry and mature tobacco leaves are used and the process of maturation and drying can take many weeks. Factors such as humidity and temperature have major impacts not only on subsequent taste and smell of a cigar, but also the duration of combustion. After completing the process of curing and drying of individual leaves they are classified into cover leafs or capas and binding leafs. Tobacco, which is used as the filler, in effect gives the cigar its flavor and aroma. The content is often mixed from three different types of leaves: leaves of darker colour from the top of the plant which have a distinct taste and smell and burn slowly, paler leaves from the center of the plant will significantly soften the aroma, a third type of leaf, is used because it burns well and it is used for the outside of the filler. If the cigar is made mechanically it is filled with chopped tobacco, while during the rolling of the handmade cigar separate leaves are carefully selected and blended to ensure the proper burn. Each individual leaf is carefully folded onto itself prior to bunching. This promotes an even burn and draw when surrounding by a coarse binder leaf to hold it together. On the surface of the cigar a separate leaf of tobacco called the capa is used cover. They must be of the highest quality, and pleasant to the eye: it must therefore be smooth, elastic, flexible and have a pleasant smell. It should be stressed that the production of cigars is a true art. Tobacco leaves must be moist enough not to be brittle, yet dry enough to burn evenly. As already mentioned, all three types of leaf, the filler, binding and capa must be combined in the correct proportions. The packer is an extremely important person. First, they create the so-called fillers, which is then wrapped in a coarse binder leaf. This is placed into a cedar cigar mold where it will remains for 30 to 45 minutes in the cigar press. After cautiously inspecting the capa leaf, the packer places it with the veins up on the rolling board and prepares to roll the filler into the capa. This ensures the veins of the leaf are on the inside of the cigar to present a smooth external appearance. After the cigars are stored in temperature controlled warehouses where they are aged, this will offset their taste, aroma, flavor and regulates their moisture. Only sufficiently mature cigars are sorted by color, marked with a so-called ring, a kind of small label and then packed up in cedar boxes. The color of a cigar is due to the sheathing leaf color. Overall seven colors can be distinguished with more than sixty shades: Claro Claro is a greenish leaf, Claro leaf light, cream and brown leaf Colorado Claro is a medium to dark brown, Colorado has a more reddish-brown color, Colorado Maduro then is a darker brown. Maduro leaves are dark brown to black and the darkest black list is called Oscuro. In general, the more lighter color is a wrapper, so that its flavor is weaker, and vice verse, the darker the color, the sweeter and richer the flavor. All cigars can also be divided into two categories according to shape. Equal cigars are called Pajeros and further divided into Coronas, which are taken as a sort of standard by which other cigars are measured, a longer and thinner Panatelas and Lonsdales are a sort of transition between the previous types. Cigars, which have irregular shapes, are called Figurados. Finally, a few useful tips to recall from the right experts and lovers of cigars. The longer the cigar, the more flavor it will provide and are fresher to smoke; if a cigar is wider, it will burn more slowly and generally produces more smoke with intense aromas and flavors. The narrower the cigar, it will smoke faster, but have more concentrated and sharper flavors in your mouth.

Každý z nás si pravděpodobně několikrát denně dopřává šálek kávy a bereme ji jako samozřejmý a všude dostupný nápoj. Přesto toho ale o ní moc nevíme, neznáme legendy, které se k ní vážou, její původ nebo způsoby pěstování. Uvařte si tedy svůj obvyklý šálek a spolu s ním si vychutnejte i malé seznámení s touto zajímavou plodinou. Za jakousi pravlast kávy je považována etiopská provincie Kaffa, odkud je pravděpodobně odvozeno i její jméno. Odtud také pochází i asi nejstarší legenda o objevení kávy lidmi. Ta vypráví o pastevci, který si povšiml, že jeho kozy neobyčejně ožijí potom, co spasou bobule z neznámého keře. Tyto účinky pak po ochutnání bobulí zpozoroval i sám na sobě. O svůj objev se podělil s mnichem z místního kláštera. Ten však rostlinu považoval za dílo ďábla a bobule hodil do ohně. V něm se uvolnila známá aromatická vůně kávy a mnich změnil svůj názor. Od té doby prý v místním klášteře pili kávu pravidelně. Jako o každém nápoji, a tedy i o kávě, takovýchto legend koluje nespočetně. Jisté však je tedy jen to, že pravdu se asi nikdy nedozvíme. I o rozšíření kávovníku nemáme zcela jasné informace. Předpokládá se, že asi ve 13. století ji z její pravlasti Etiopie přenesli válečníci do Jemenu a začali ji pěstovat. Až do 18. století bylo pěstování výsadou obyvatel Arabského poloostrova, pro které znamenalo velký zdroj příjmů, kterého se samozřejmě nechtěli vzdát. Přesto se však holandským obchodníkům podařilo odvézt několik keříků a vysadit je

ve svých koloniích v Asii, tedy především v Indii a na Cejlonu. Odtud se pěstování rozšířilo i na ostrov Jáva. Ani Holanďané si své keříky nestřežili dostatečně a díky lstím se kávovník postupně dostával do zámořských kolonií všech tehdejších evropských mocností. Nyní se keře kávovníků pěstují ve více než padesáti zemích světa, především v pásu mezi obratníkem Raka a Kozoroha. Největším pěstitelem je v současné době Brazílie, která vyprodukuje celkem kolem dvou a půl miliardy kilogramů kávy ročně. Celá produkce Střední a Jižní Ameriky, kromě Brazílie tedy ještě Kolumbie, Kostariky, Jamaiky, Mexika, Peru, Ekvádoru, Kuby, Panamy, Venezuely a Guatemaly, dohromady tvoří přibližně sedmdesát procent objemu celosvětové sklizně. Asi dvacet procent se vypěstuje v Asii, kde jsou nejvýznamnější producentské země Indonésie, Jáva, Sumatra, Papua Nová Guinea, Vietnam, Filipíny, Laos, Srí Lanka a Indie. Na africkém kontinentě jsou nejdůležitější plantáže v Etiopii, Keni, Ugandě, Angole, Zairu, Togu, Madagaskaru, Jemenu a Tanzánii a dohromady zde roste asi deset procent ze všech kávových keřů.

A jak vlastně takový keř vypadá? Kávovník je stále zelený polotropický keř, který vyžaduje stálé teploty mezi 18 a 22 stupni Celsia. Keříky se nejprve takzvaně předpěstují v bavlněných obalech a poté, co dosáhnou výšky mezi 30 a 50 centimetry, jsou přesazeny na plantáže. Květ kávovníku je bílý a rychle se mění v plody. Ty pak zrají 9 až 14 měsíců po odkvětu. Jeden keř ročně vyplodí asi dva a půl kilogramu zelených bobulí. Z takového množství se po upražení získá asi půl kilogramu kávy. Celkem existuje asi 60 druhů kávy. Nejčastěji se ovšem pěstují pouze dva druhy – Arabica a Robusta. Arabica je vysoký, až třímetrový keř, který plodí dvakrát až třikrát ročně a sklízí se ručně. Káva Arabica má výraznou, velmi variabilní chuť a je méně hořká. Více než sedmdesát procent celkové produkce kávy připadá právě na druh Arabica, který se pěstuje především ve Střední a Jižní Americe. Druhý druh, Robusta, je keř či spíše strom, který dosahuje až patnáctimetrových výšek. Jeho plody jsou sice menší než u druhu Arabica, mají horší kvalitu, ale zato obsahují třikrát více kofeinu a jsou také více hořké. Tento druh se často používá do kávových směsí. Cesta, kterou musí plody kávovníku urazit, než se dostanou na naše stoly, je ještě velmi dlouhá. Nejprve se musí samozřejmě sklidit. To se dělá buď ručně, nebo strojově. Ještě ten den, co se plody sklidí, se třídí a přebírají. Tím se odstraní veškeré nečistoty. Poté se plody umyjí a nechají proschnout na slunci. Po třech týdnech se usušená káva oloupe. Z plodů tak zůstanou pouze malá zelená kávová zrnka. Ta se roztřídí podle velikosti a jsou připravena k pražení. Pražení kávy je nejdůležitějším procesem v úpravě a je opravdovým uměním. Své charakteristické vlastnosti, jakými jsou bohaté aroma, jemná kávová vůně a různé odstíny v barvě, totiž káva získává právě až svým pražením. Kávy s dlouhou dobou pražení získávají obecně tmavší barvu a méně výraznou vůni. Nejkvalitnější kávová zrna mají jemnou kyselou příchuť, která se ještě zvýrazní krátkým pražením. Odborníci tvrdí, že světle pražená kávová zrnka se nejlépe hodí pro kávu podávanou s mlékem, tmavá zrnka jsou nejlepší pro přípravu černé kávy a zrna, která byla pražena nejdéle, jsou nejvhodnější pro espresso. Tím pravým uměním je pak namíchání jednotlivých zrn a vytvoření kávových směsí, kdy je nutné, aby se zrna spojila v harmonický celek. V některých zemích se při pražení do kávy přidávají další ingredience, například skořice, hřebíček nebo zázvor, které pak výrazně mění celkové aroma kávy.

Čerstvě upražená káva má vždy výraznější a bohatší chuť než ta, která byla dlouho skladována. To ostatně platí i o mletí – mletá káva totiž rychle své aroma ztrácí. Pro to, aby káva mohla plně rozvinout své aroma, je tedy nejvhodnější použít čerstvě umletou kávu. Tím se dostáváme k přípravě kávy, tedy k činnosti, kterou většina z nás provozuje každodenně. Málokdo z nás si ale uvědomuje, že vliv na výslednou chuť nemají pouze použitá kávová zrna, ale také další ingredience, především voda, a také způsob přípravy. Sílu chuti kávy určuje samozřejmě množství namleté kávy. Obecně se doporučuje pro běžný šálek o obsahu dvou deci asi 5 až 15 gramů kávy, což odpovídá dvěma plným kávovým lžičkám. Chuť však také ovlivňuje kvalita použité vody, obsah minerálů, hodnota pH a celková čistota. Odborníci doporučují středně tvrdou vodu. Její teplota by pak měla být asi 95 stupňů Celsia. Při přípravě turecké kávy však musí voda vařit. Ideální je pak podávání všech druhů kávy v předehřátém šálku. Nejčastějším způsobem přípravy kávy je espresso, tedy malý šálek silné kávy. Ta je připravena ve vysokotlakovém kávovaru protlačením horké vody přes porci kávy. Klasická porce je 7 gramů kávy na 30 mililitrů vody, silnější káva, takzvaná Ristretto, se vyrobí ze stejného množství kávy, ovšem jen z 20 mililitrů vody. Oblíbené je také cappucino, u kterého je velice důležitá přísada kvalitní mléko. Z něj se pomocí horké páry našlehá mléčná pěna, která se smíchá s espressem a teplým mlékem ve stejném poměru. Dalším způsobem přípravy kávy s mlékem je Latté, které tvoří jeden díl kávy a dva až tři díly teplého mléka. U nás netradičním a nepříliš využívaným způsobem přípravy kávy je Mocca. Ta se připravuje ve speciální dvoudílné konvici, kdy pára ze spodní části proniká přes sítko do horní části konvice. Rozšířeným druhem kávy u nás je takzvaný „turek“. Ten však nemá s pravou tureckou, nebo také arabskou, kávou nic společného. Pravá turecká káva se totiž připravuje v džezvě, ve které se směs kávy a vody nechá třikrát projít varem. Oblíbené jsou také kombinace kávy s různými druhy alkoholu, například Alžírská s vaječným krémem nebo Irská s whisky, správně doplněná třtinovým cukrem a zjemněná smetanou. Ať už dáváte přednost jakémukoliv druhu kávy a způsobu přípravy, nezapomeňte, že pití kávy je velmi starým a tradičním rituálem, který by měl probíhat v klidu a pohodě. All of us probably indulge ourselves in a cup of coffee several times a day and we take it for granted, considering coffee a drink accessible everywhere. None the less, we don´t know much about it, we don´t know the legends connected with coffee, we don´t know about its origins and ways of growing. Make yourself a regular cup of coffee and enjoy not only that, but also a little introduction into the world of this interesting plant. The Ethiopian province Kaffa is considered to be the place of coffee´s origin, from which its name has probably been derived. From this region comes also the oldest legend about discovering coffee by people. It talks about a shepherd who noticed that his sheep become extremely active after eating berries from an unknown bush. When he tasted the berries he could see the same effect on himself. He shared his experience with a monk from a local monastery, who regarded the plant to be the devil´s creation and he threw the berries into the fire. The well-known aromatic scent of coffee appeared and the monk changed his mind. They drank coffee in the local monastery ever since. Legends like this are numerous about every drink and also about coffee. The only fact is that we can probably never know the truth. We don´t even have clear information about the spread of coffee plants. It is supposed that it was brought in the 13th century from its country of origin Ethiopia, to Jemen by warriors who started to grow it. Until the 18th century coffee growing was the privilege of the Arabian Peninsula inhabitants, for whom it was an important source of income and they naturally didn´t want to renounce it. Nevertheless, Dutch salesmen succeeded in taking away several bushes and they planted them in their colonies in Asia, namely India and Ceylon. From there coffee growing spread to the island of Java. Even the Dutch didn´t guard their bushes sufficiently and due to tricks coffee plants subsequently came to overseas colonies of all powerful European countries of the time. Nowadays coffee bushes are planted in more than fifty countries in the world, especially in the zone between the Tropic of Cancer and the Tropic of Capricorn. At the present time the world´s biggest coffee grower is Brazil, which produces the total of 2,5 million kilograms of coffee a year. The whole production of Central and South America in addition to Brazil also Colombia, Costa Rica, Jamaica, Mexico, Peru, Ecuador, Cuba, Panama, Venezuela and Guatemala, create approximately 70 per cent of the world´s coffee harvest. Cca 20 per cent is grown in Asia, where the most important producing countries are Indonesia, Java, Sumatra, Papua New Guinea, Vietnam, Philippines, Laos, Sri Lanka and India. On the continent of Africa the most significant plantations are in Ethiopia, Kenya, Uganda, Angola, Zaire, Togo, Madagascar, Yemen and Tanzania. And what does such a coffee bush look like? A coffee plant is an evergreen polo tropical bush, which needs stable temperature between 18 and 22 degrees Celsius. The bushes are first pre-planted in cotton covers and when they reach a height between 30 and 50 cm, they are replanted to plantations. The bloom of a coffee tree is white and it turns fast into berries. They ripen 9 to 14 months after the bloom fades. A tree can produce about two and a half kilograms of green berries. From such an amount we can get approximately half a kilo of coffee after roasting. There are around 60 kinds of coffee plants altogether, but the bulk is grown from only two kinds – Arabica and Robusta. Arabica is a high, up to three metres high bush, with berries two or three times a year and is harvested manually. Arabica coffee has a distinct, variable taste and it´s not so bitter. More than 70 per cent of the overall coffee production is regarded as the Arabica kind, which is grown mainly in Central and Southern America. The other coffee kind, Robusta, is a bush or rather a tree, which can reach up to 15 metres in height. Its berries are smaller than those of Arabica, the quality is lower, but they contain three times the amount of caffeine and they are bitterer. This kind is often used for coffee mixtures. The process coffee has to take before it reaches our tables is very long. First of all, it has to be harvested. It is done manually or with the help of machines. The day the berries are harvested they are also sorted and picked. All impurities are removed this way. The berries are then washed and dried in the sun. After three weeks the dried coffee is peeled. Only small green coffee grains remain from the berries. They are then sorted according to their size and are ready to be roasted. Roasting coffee is the most important process in its cultivation and it is a real art. The characteristic features of coffee, its rich aroma, mild coffee smell and different colour shades, are gained just by roasting. Coffee with a long time roasting, usually become darker in colour and a less distinct in smell. The best coffee grains have a mildly sour taste, which is even more emphasized by a short roasting. Specialists claim that light-roasted coffee grains are best to be served with milk, dark grains are best for black coffee and the grains that have been roasted longest are most suitable for espresso. The real art is then mixing different grains and creating coffee mixtures, when the grains have to create a harmonic complex. In some countries more ingredients are used when they roast coffee. Cinnamon,

clove or ginger then distinctly change the whole aroma of the coffee. Fresh-roasted coffee always has a stronger and richer taste than the one that has been stored for a long time. And it is also true about coffee grounding – ground coffee loses its aroma fast. For the coffee to fully develop its aroma it is best to use fresh grounded coffee. Now we get to the topic of preparing coffee, the act that most of us do every day. Few realize that the final taste is not affected only by the coffee grains we use, but also by other ingredients, especially water, and also the method of preparing the coffee. The power of the taste of the coffee is determined by the amount of grounded coffee used. It is commonly recommended to use 5 to 15 grams of coffee for a usual cup of two decilitres, which means two full tea spoons. The taste is also affected by the quality of water we use, the minerals it contains, pH value and its purity. Specialists recommend medium hard water. Its temperature should be around 95 degrees Celsius. To prepare Turkish coffee the water must be boiling. The best way to serve coffee is to use a warm cup. The most common way of preparing coffee is espresso, or a small cup of strong coffee. It is made in a highpressure coffee machine by pressing hot water through coffee. Typical portion is 7 grams of coffee and 30 millilitres of water; stronger coffee, called Ristretto, is made with the same amount of coffee but only 20 millilitres of water. A popular kind is also cappuccino, for which good milk is an important ingredient. Another type of milk coffee is Latté, which is made of one part coffee and two to three parts of warm milk. Uncommon and not widely used way of making coffee in our country is Mocca. It is prepared in a special two-part kettle, where steam from the lower part is pushed through a strainer to the upper part of the kettle. A popular kind of coffee is the so called Turk. It has nothing in common with Turkish or Arabic coffee. The real Turkish coffee is prepared in a pot (cezve), where the mixture of coffee and water is boiled three times. Very popular are also combinations of coffee and different kinds of alcohol, for example Algerian coffee with egg-whisky or Irish coffee with whisky, where cane sugar should be added and cream is used to smooth the coffee. Whatever kind of coffee and method of preparation you prefer, don´t forget that coffee drinking is an old ritual that should take place in peace and quiet. Známe to každý: „Už bych si tu kávu neměl/a dávat, ale jeden dva šálky denně přece nemohou ublížit,“ obhajujeme se donekonečna. Jen málo z nás ale tuší, že to co si namlouváme, je pravda, a že pití kávy v malém množství může opravdu pomáhat. Za největší zdravotní přínos kávy lze považovat její vysoký obsah antioxidantů. Káva se dokonce pyšní jejich nejvyšším množstvím z běžně dostupných potravin. Dohromady jich má více než ovoce, zelenina a čtyřnásobně více než zelený čaj. Dle odborných odhadů je tak káva schopná dodat tělu neuvěřitelných 70 procent všech antioxidantů, které zkonzumujeme. Pozitivní vlastnosti a účinky kávy jsou častým tématem výzkumů a těší se zájmu odborníků. K vyzdvihovaným vlastnostem kávy patří také látka alkaloid kofein, která je klíčová pro stimulaci centrálního nervového systému. Kofein v kávě, pokud mluvíme o množství asi jednoho či dvou procent z celkové hmotnosti, tak může zvyšovat fyzický i psychický výkon. Pražením se navíc síla antioxidantů umocňuje. Stimulační účinky kofeinu dále podporuje řada dalších látek obsažených v kávě. Mnoho z nich zatím nebylo chemicky identifikováno. A není se čemu divit. Jen antioxidantů je v tomto lahodném moku obsaženo na tisíc druhů. Z dobře známých látek obsahuje káva vodu, tuk, bílkoviny a vlákninu. Zajímavý je obsah cukru, který tvoří až polovinu hmoty usušených kávových bobů. Z vitamínu pak je asi nejvýznamnější niacin (B3), jehož obsah je již v syrové podobě kávy, tedy v zelené nepražené kávě, poměrně vysoký. Tepelným opracováním pak jeho množství stoupá až 25tinásobně. Ve všeobecném povědomí o kávě je již známo, že káva má schopnost výrazně nabudit lidský organismus. To je bezesporu pravda, vědecké studie a pokusy to v jednom kuse dokazují. V kávě ale zůstávají skrytá ještě mnohá tajemství, z nichž některá pomalu vyplouvají na povrch. Zatím zřejmě poslední odhalila studie vědců z University of South Florida. Z jejich výzkumů vyplývá, že konzumace kofeinu navrací paměť. Studie spočívala v tom, že vědci podávali starým myším trpícím Alzheimerovou chorobou kofein, a výsledky byly oslnivé. Jejich paměť se mnohonásobně zlepšila. Z jiného výzkumu, který proběhl na Harvardské škole, vyšlo najevo, že konzumace kávy velmi významně snižuje riziko cukrovky typu II. Snížení rizika u žen se pohybuje okolo 30ti procent, u mužů o neuvěřitelných 50 procent. Zkoumaný vzorek byl velice rozsáhlý, údaje výzkumu se tedy zdají být opravdu věrohodné. Další zajímavostí, která z tohoto výzkumu vzešla, je to, že žádné jiné kofeinové nápoje takový účinek nemají. Káva je v tomto směru naprosto jedinečná. I další výzkumy prokázaly jednoznačně kladné vlivy kávy. Podle nich pomáhá káva při prevenci rakoviny, Parkinsonovy nemoci (v tomto případě se pravděpodobnost vývoje nemoci snížila o neuvěřitelných 60 až 80 procent), cirhózy jater a astmatických záchvatů. Těchto účinků si při jejím vychutnávání asi příliš nevšímáme, ale povzbuzení nálady a tišení bolesti hlavy si jistě každý konzument kávy uvědomuje. Káva se tak zdá být lékem skoro na všechno. Nic ale není tak jednoznačné. Známé klišé „všeho moc škodí“ se dá totiž samozřejmě aplikovat i na tento případ. A platí možná dvojnásob. Stejně jako u konzumace téměř všech potravin a nápojů platí i v případě kávy, že její vliv je na každého člověka jiný. I množství pozitivně působících látek se mění podle typu kávovníku a dispozic člověka. Přehnaná konzumace kávy se negativně projevuje především jako vyplavování zdraví prospěšných látek z těla a celkovým odvodňováním. Výsledkem může být stárnutí pokožky, nadměrná tvorba vrásek a vyšší zatížení jater. Proto je ideální doplňovat při pití kávy tekutiny. Konzumace kávy má tedy své plusy i mínusy. Pokud ale udržíte její množství na uzdě, můžete se spolehnout na její blahodárné účinky a dopřát si za ospalých zimních dnů trochu energie a povzbuzení. Bude se hodit.

high content of antioxidants is considered to be the greatest health benefit of coffee. Coffee even boasts with the highest amount among commonly available foods. All together it has more of them than than fruit, vegetables and four times more than green tea. According to expert estimates, coffee is able to deliver to the human body an incredible 70 percent of all antioxidants which we consume. Positive characteristics and effects of coffee are a frequent topic of researches and attract the attention of experts. There is a substance called alkaloid caffeine included in the extolled coffee characteristics which is crucial for stimulating the central nervous system. Caffeine in coffee, as we talk about the quantity of one or two percent of the total weight, can increase physical and mental performance. Moreover the power of antioxidants is enhanced by roasting. Stimulant effects of caffeine are also supported by a number of other substances contained in coffee. Many of them have not been chemically identified so far. It is no wonder because there are thousands of antioxidant types in the delicious beverage. Among the well-known substances coffee contains water, fat, proteins and fiber. What is interesting, is the sugar content, which makes up a half of a dried coffee bean. The most important

vitamin is probably niacin (B3) the content of which is already relatively high in the raw form of coffee, i.e. the green unroasted coffee. Its quantity grows 25times through roasting. In general there is an awareness that coffee is known to have the ability to significantly activate the human body. That is certainly true, scientific studies and experiments demonstrate it at all times. However, in coffee there are still many hidden secrets remaining, some of which slowly begin to come to the surface. The last one was probably revealed in a study by scientists from the University of South Florida. Their research shows that the consumption of caffeine restores memory. The study was based on the scientists giving caffeine to old mice suffering from Alzheimer‘s disease, and the results were brilliant. Their memory was greatly improved. In another research conducted at Harvard, it became clear that the consumption of coffee very significantly reduces the risk for diabetes type II. The risk is reduced by around 30 percent for women and by staggering 50 percent for men. The examined sample was very large, therefore the data from the research seem to be really credible. Other matter of interest which emerged from this research is that no other caffeine drink has such an effect. In this respect coffee is absolutely

unique. Even other researches have showed clear positive effects of coffee. According to them, coffee helps in preventing cancer, Parkinson‘s disease (in this case, the likelihood of disease development decreased by staggering 60 to 80 percent), liver cirrhosis and asthma attacks. We probably don’t notice much of these effects while enjoying coffee but every consumer is certainly aware of enhancing mood and relieving a headache. Coffee seems to be the cure of almost everything. But nothing is so definite. The well-known cliche that „too much of anything is bad for you“ can of course be applied also to this case and it is perhaps double true. As with the consumption of almost all food and drinks, even coffee has a different effect on each person. The number of substances having a positive impact varies according to the type of coffee and the dispositions of a consumer. An excessive consumption of coffee mainly drives out healthy substances from the body and causes an overall dehydration. It can result in skin aging, excessive wrinkling and increased liver burden. Therefore, it is ideal to drink liquids while enjoying coffee. To sum it up, drinking coffee has its pros and cons. However, if you keep the amount drunk in check, you can rely on its beneficial effects and enjoy a little bit of energy and encouragement on sleepy winter days. It will come in handy.

Napa je velmi úrodnou půdou, daří se zde především vinné révě. V údolí je více než 400 vinařství, nachází se zde dokonce více vinic než v jakémkoliv jiném regionu Spojených států. Není se tak čemu divit, že Napa Valley je jedním z nejznámějších vinařských regionů vůbec. Patří také k nejvíce vychvalovaným. Far Niente se svou pověstí v této velké konkurenci neztratí. Síla společnosti je mimo jiné v dlouholeté tradici výroby vína. Vinici Far Niente založil v roce 1885 John Benson. Název zvolil podle italské fráze „Dolce Far Niente“ – sladké nic nedělání. Přitom vinice se vyznačuje právě opakem nic nedělání. Víno vyžaduje celoroční péči a lásku, bez nich nikdy nemůže dosahovat opravdových kvalit. Sen Johna Bensona se plnil a jeho firma prosperovala. Ovšem jen do roku 1919, pak přišla prohibice a vinice byla na šedesát let zavřena. Labužníkům se Gil a Beth Nickelovi rozhodli obnovit tradici tohoto vinařství a po dlouhých a náročných úpravách vinici znovu otevřeli. Úsilí Gila, Beth a jejich partnerů o obnovení vinice z 80. let 19. století byla oceněna jak vinaři, tak organizací Napa Country Landmarks. Gil Nickel byl jmenován „ochranářem památek roku 2003“. Téměř neuvěřitelné propojení s historií nastalo roku 1998. Bylo totiž objeveno víno Sweet Muscat z roku 1886 s originálním korkem, pouzdrem i etiketou. Toto víno z vinice Far Niente je považováno za nejstarší dochované víno v Kalifornii. Vzácná událost dodala novým majitelům odhodlání a neutichající energii. Jejich láska k vínu a k místu jeho vzniku

je patrná z každého doušku jejich produktů. Kromě přirozené lahodné chuti v sobě nese pocit klidu a pohody domova. Zatímco většina vinařů produkuje víno různých kvalit a typů, Far Niente se soustřeďuje pouze na dvě vína. Může jim tak věnovat největší možnou péči a stvořit nejluxusnější vína svého druhu. The truth of these words is proved not only by satisfied customers but also by professional public. The products of this winery were last year awarded as the ‚most prestigious premium wines.‘ Far Niente winery can be found in Napa Valley in sunny California. For the original habitants of this area – Indians Wapo, Napa meant the place of wealth. And they knew why. Napa is a very rich soil and mainly grapevine grows here very well. In the valley there are more than 400 wïneries and this number is higher than anywhere else in the United States. Therefore it is clear why the Napa Valley is one of the best known wine regions all over the world. It also belongs to the ones most celebrated. Far Niente cannot get lost with its name and legend. The power of the company is besides others in a very long tradition of wine manufacturing. The Far Niente winery was set up in 1885 by John Benson. The name was chosen by him having in mind Italian phrase ‚Dolce far Niente‘ – sweet doing nothing. And still the very opposite of doing nothing is typical for the winery. Wine needs whole – year care and love, without which it can never reach real qualities. The dream of John Benson was fulfilled and his company was successful. However only till 1919 when there was prohibition and the winery was closed for sixty years. Luckily for the gourmets, Gil and Beth Nickel decided to rebuild this winery and after long and tiring renewals they opened the winery again. The effort of Gil and Beth

and thier partners to renew the winery from the 80s of the 19th century was celebrated by vinedressers and also by Napa Country Landmarks organisation. Gil Nickel was awarded as the ‚savior of monuments in 2003‘. Almost unbelievable connection with history happened in 1998. Wine Sweet Muscat from 1886 was discovered with original corc, cover and tag. This wine from the winery Far Niente is assumed to be the oldest wine in California. The dear event gave the new owners determination and endless energy. Thier love to wine and to the place of its origin can be felt in every draugh of their products. Besides natural delicate taste it carries in it the feeling of piece and comfort of home. Whilst the most of the vinedressers produces wines of all different qualities and types, Far Niente concectrates on two wines only. Therefore it can give them the biggest possible care and produce the most luxurious wines of their type. Toto je jeden z mála amerických supersportů, které dokáží potrápit plnokrevnou evropskou konkurenci. Jeho historie se začala psát už v roce 1992, kdy vznikla první generace pod rukama legendárního stavitele Carrolla Shelbyho a elitního týmu pětaosmdesáti techniků. Mělo jít o vzdálený odkaz na americkou legendu z šedesátých let minulého století, vůz Shelby Cobra. Srdcem auta je vidlicový desetiválec, jehož kořeny je možné vystopovat až k nákladním vozům. Takový motor ale byl pro sportovní stroj příliš těžký. Koncern Chrysler, vlastník automobilky Dodge v té době však vlastnil i italské Lamborghini. To původně ocelový blok motoru vyrobilo z hliníkové slitiny a přidalo také hliníkové hlavy válců. Zbytek Viperu byl tvořen ocelovým rámem a karoserie byla z laminátových panelů. Po této generaci následovaly ještě tři další, každá s řadou zásadních vylepšení. A teď se představuje finální verze, během let vyšlechtěná téměř k dokonalosti. Pod kapotou najdete typický desetiválec o objemu 8,4 litru. Oproti první verzi jeho výkon narostl ze 400 na celých 600 koní. Točivý moment je pak 760 Newtonmetrů. Viper SRT-10 je pak na stokilometrové rychlosti za méně než čtyři sekundy a dosáhne až k 325 km/h. Výkon proudí na zadní kola přes šestistupňovou manuální převodovku a novou odolnou spojku ZF Sachs, která omezuje nežádoucí efekty odstředivé síly o osmnáct procent. Now is the last chance to get your hands on this brutal American supercar. The contemporary Viper generation is going into retirement, ending with this limited series edition. This is one of the few American super sports cars which can stand up to full-blooded European competition. Its history began back in 1992 when the first generation was created by the hands of the legendary designer Carroll Shelby and an elite team of eighty-five technicians. It should have been a remote reference to the American legend from the sixties, the Shelby Cobra. At the heart of this car is a V-ten engine, the roots of which can be traced back to the working class vans. However, such an engine was too heavy for a sporty car. The Chrysler Group, who at that time owned the Dodge car company, also owned the Italian made Lamborghini. They produced an original steel engine from an aluminum alloy and added also aluminum cylinder heads. The rest of the Viper was made up of a steel frame and the body from laminate panels. This generation was followed by three more, each with a number of significant improvements. Now they introduce the final version, bred almost to perfection over the years. Under the hood you will find a typical ten-cylinder engine with an massive 8.4 liters. Unlike the first version, its performance has grown from 400 to a full

600 horses. The torque is 760 Newton-meters. Viper SRT-10 gets to 100 kmph in less than four seconds and it can reach up to 325 kmph. The power goes to the rear wheels via a six-speed manual gearbox and a new resistant ZF Sachs clutch which reduces the adverse effects of centrifugal force by eighteen percent. The gearbox has a short ratio of the fifth grade, the result of this adjustment is a better acceleration at high speeds. The newest offering comes in two new exclusive colours for the 2010 model - pearl orange Toxic and light gray Clear Coat. Together with another ten exterior colours and options with the rims, interior and plates you have your Viper in 7600 different variants. Viper SRT-10 is really fast, but if you want to own a fully-blooded road race car, you need the ACR version. It is the work of the division Street and Racing Technology which develops additional parts for the car manufacturer Dodge. The adjusted body produces at a speed of 240 kmph the pressure of 680 kilograms - nearly ten times more than the standard SRT-10. which increases the pressure on the front axle by about one third. However, it is intended exclusively for the use on racing circuits. This version contains a durable six-speed Tremec TR6060 gearbox and an intelligent self-locking differential GKN ViscoLok. The engine has a specially shaped combustion chamber and larger valves with variable timing. A two-piece suction piping is made of aluminum and together with the revised airbox and new air filters this enables the engine to breathe better. Dodge Viper SRT-10 ACR received recognition when in 2009 it made a record in the hands of the driver Tom Coronel at the legendary north loop of the Nurburgring circuit. Still hesitating? Konkurenční automobilky BMW a Mercedes-Benz mají o starost navíc. Proti jejich výrobkům, limuzínám řady sedm a třídě S, právě nastupuje Audi A8 modelového roku 2010. Podle předsedy správní rady Audi AG Ruperta Stadlera jde dokonce o nejsportovnější limuzínu současnosti. Představení této novinky proběhlo ve velkém stylu, v předvečer zahájení výstavy Design Miami na americké Floridě. Když z vystavených vozů konečně zmizely neprůhledné plachty, mohli se hosté této akce konečně pokochat největší novinkou segmentu luxusních vozů roku 2009. Audi A8 je široké téměř dva metry a jeho délka hodně přes pět metrů dává tušit, že nabídne nebývale prostorný interiér. I přes svou velikost je však velmi lehké, pod jeho karoserií se skrývá hliníkový prostorový rám. Pokud by byla k jeho konstruci použita ocel, vážil by o 40 procent více. Na předních světlech najdeme pouze LED diody, díky kterým je tento vůz jasně rozpoznatelný jako Audi i za dne. Automobilka z Ingostadtu patřila k průkopníkům použití světelných diod a u její nové A8 byste marně hledali klasické tubulární světelné moduly. Toto je budoucnost. This gives competitive car factories BMW and Mercedes-Benz something to think about. The 2010 model Audi A8 is coming out against their products, the number 7 and S class limousines. According to Rupert Stadler, Chairman of the Board of Management of Audi AG; it is currently the sportiest limousine in its class. The presentation of this new model happened in stylish fashion, the day before the opening of Design Miami exhibition in Florida. After the non-transparent covers had finally disappeared, the visitors could feast their eyes on the hottest news for the luxurious cars class of 2009. Audi A8 is almost two metres wide and with the length being more than five metres we can anticipate that the car offers an unusually spacious interior. Despite its size the car is very light, having an aluminium space frame under the body. If steel had been used for the construction, the car would be 40 per cent heavier. LED diodes were used for the headlights, which makes Audi distinguishable even during the day. The Ingolstadt car factory was among the pioneers using light diodes and now, there is no use trying to find conventional tubular light modules, this is the future. When the A8 will be launched into the market, customers will be able to choose from two types of engine. There is a petrol engine, 4.2 FSI with 372 horsepower and the diesel engine, 4.2 TDI with 350HP. Later a three-litre turbo diesel with 250 HP will be available. All engines offer higher load and torque, but the consumption is between 13 and 22 per cent lower compared to other versions. V létě letošního roku bylo otevřeno dlouho očekávané hřiště, jenž si již navždy ponese přívlastek „první 18ti jamkové hřiště v Praze“, přestože leží těsně na samém katastrálním okraji hlavního města. Stačí však vyjet na Barrandovský most a následně se vydat cca 5km směr Lipence. Cesta z centra Prahy vám zabere pouhých pár minut a rozhodně nenajdete zatím žádnou jinou 18ku, na kterou byste se dostali rychleji.

V prvním momentě vás překvapí rozlehlost areálu, jenž skýtá spousty možností. Celý resort o rozloze 156 hektarů počítá do budoucna s 2mi mistrovskými 18ti jamkovými hřišti. Zatím je však v provozu pochopitelně pouze jedno. Vzniku samotného hřiště paradoxně dopřála velká povodeň, jenž zasáhla Českou republiku včetně hlavního města v roce 2002. Sandy wastes, jenž jsou na českých hřištích vcelku raritní záležitostí. Jedná se o plochu tvořenou červeným pískem, která však není považována v pravidlech za překážku (bunker). Odehrát z takového místa není nic nereálného a je to již tradičně jen o silných nervech hráče samotného. Dále vás čekají dva pětipary, dva čtyřpary, jeden 150m dlouhý třípar a jamka číslo 9 podél klubovny, jež uzavírá první polovinu hřiště. Zrovna ta je typickým příkladem jamky, která se zdá zprvu velmi snadnou avšak ve skutečnosti tomu vůbec tak není. Po jejím (doufáme úspěšném) zvládnutí se vydáte na další procházku k odpališti jamky číslo 10, již je pětipar, na kterém se dá vcelku snadno skórovat – v případě že se vám podaří ignorovat vodní plochu

se Sandy wastes po levé straně fairwaye. Pokud jste se červeno-pískové ploše úspěšně vyhnuli, můžete se těšit na následující jamku, kde je pravděpodobnost střetu s nimi ještě větší. Jamka číslo 12 pro změnu potěší vodní plochou do 2/3 celkové délky fairwaye. A když už jsme si na ty vodní překážky zvykli, máme tu 2 jamky dokola mega obří vodní plochy – pardon navozeného kamení a zeminy v obří díře, která je však dle pravidel označována za vodní plochu. Pokud zde však jednoho dne vodní plocha vznikne, bude se nejspíše jednat o jednu z největších na hřištích v ČR. Pokud již teď jásáte, že vás překážka díky absenci vody nemusí děsit, jásáte zbytečně. Bohužel je zasypána takovou směsí kamení a zeminy, že se z ní prakticky hrát nedá a vám tedy nezbude nic jiného než dropovat, jak jinak než s jednou trestnou ránou. Máte již dost vodních překážek? Pak se můžete opět těšit ze Sandy wastes na jamce číslo šestnáct. Na jamce číslo sedmnáct naleznete pro změnu obojí a když už vám přijde, že již neexistuje větší nástraha, objevíte kouzlo posledního tříparu na jamce číslo osmnáct, která dokáže zdeprimovat každého golfistu, v případě že jeho míček spadne do některé z hlubokých děr po stranách greenu. Prague City Golf Club na Zbraslavi není sice ještě zdaleka úplně hotové hřiště, ale již teď je znát, že zde byla perfektně odvedena práce architektů i shaperů. Až se doladí všechny detaily, bude toto hřiště patřit rozhodně mezi českou špičku.

From the start, the vastness of the area will surprise you, which offers lots of options. The entire resorts area of 156 hectares provides for the future with two masterful, championship, 18-hole golf courses planned for the future. However, thus far only one is in operation. Ironically the course got the green light after the massive floods which swept the country, including the capital city in 2002. After wards the city of Prague gave consent to the change in land use of flood areas, which the whole resort is located on. Among other things, it is also one of the main reasons why the greens are all elevated above the fairways, making the course unique and also a bit amusing. The design of this course was taken on by Mr Jeremy Ford (chief architect of Ford Golf Design), Mick McShane - a major golf course shaper, who is dubbed the „Leonardo da Vinci of excavators „and finally the famous Czech native from Marianske Lazne, now with German citizenship, who was active in and drew attention to himself due to an excellent performance in the U.S. PGA - Alex Cejka. He is also a kind of face for Prague City Golf Club and as he said himself, his goal is to help make this course recognized to the organizers of the European PGA Tour. Talking about architecture, we must not forget also Barbara Hamplová, whose work includes the design of the stylish clubhouse, which is really wonderful. After you enter into the reception, you will find the only disadvantage of this golf resort. If you want to warm up before the game, you have to do a one-kilo-

meter trip to the driving range and back, plus a stretch of about 500 meters from the clubhouse to the tee-off at the first hole. However, on your way you can start to enjoy the beautiful outlook of well-prepared and pleasantly wide fairways. One of the few minuses here is that if you do not enjoy the view of the industrial area and a television transmitter, don’t expect romantic views of the surroundings. Instead, you can enjoy amazingly vast and wavy greens. The first hole is a long, relatively straight par-four, as well as the hole number two. However, hole three tests your player’s qualities because it is a 170-meter-long par-three ending on a difficult green. Moreover, here for the first time you encounter so-called sandy wastes which are quite a rarity on Czech golf courses. It is an area consisting of red sand which the rules don’t consider as an obstacle (bunker). To play from such a place is nothing impossible; it usually tests only the strong nerves of the player. In addition, there are two par-five, two par-four, a 150-meter-long par-three and hole nine along the clubhouse which closes the first half of the course. Number nine is a typical example of a hole which seems very easy at first, but in reality it is not at all. After you pass it (we hope successfully), you can go for another walk to the tee-off of hole ten, par-five, on which it can be quite easy to score if you succeed to ignore the water surface with Sandy wastes on the left side of the fairway. If you have successfully avoided the red-sand area, you can look forward to the next

hole where the probability of collision with the wastes is even bigger. Hole twelve, for a change, delights you with a water surface 2/3 of the total length of the fairway. Even if you got used to the water obstacles, now there are two holes around a huge water surface, actually around a giant hollow full of rocks and soil which is according to the rules is described as a water surface. But if one day there is a water area, it will probably be one of the largest on the Czech courses. If you have started celebrating the fact that you don’t have to be scared of the obstacle due to the absence of water, don‘t be so excited. Unfortunately, it is filled with such a mixture of stones and soil that it is practically impossible to play from. You are left with nothing more than to drop, of course with a penalty shot. Have you had enough of water obstacles? Then you can again enjoy Sandy wastes at hole sixteen. At hole seventeen you find both water and wastes and when you think that there can be no more dangers, you will discover the magic of the last par-three at hole eighteen, which can dishearten all golfers if their ball falls into one of the deep holes on the sides of the green. Prague City Golf Club in Zbraslav is quite far from being a fully prepared course, but already now it is clear that architects and shapers have done perfect work. When all the details are fine-tuned, this course will definitely be included amongst the Czech top courses. Praguecitygolf.cz

Vlna zájmu o mladé autory se pomalu zvedá už celé roky. Sice je nemožné na pár řádcích poradit – běžte a kupujte Honzu Sváčka, ani by to od ekonoma s rozlišovací schopností na úrovni baroko versus renesance nebylo fér, ale jakési mantinely tu vytyčit jde.Slavná jména jsou sázkou na jistotu. Ovšem vykoupenou vyšší pořizovací cenou. Například taková Zaha Hadid je světová extratřída, jejíž dřívější oceněné výtvory se dnes prodávají za desítky milionů korun. Její světelná skulptura „Vortexx“byla nejednou oceněna směrem ke dvěma stům tisícům eur. Se současnými mladými umělci to je samozřejmě složitější. Když jsou osvědčení, mohou přinést i velice dobré zhodnocení. Pokud však z některých výtvarníků stvoří galeristé módní ikonu, často z daleka jiných důvodů, než je jejich talent, ceny jejich děl se mohou rychle vyšplhat vysoko a stejně rychle spadnout. Největší potenciál výnosu spočívá právě v generaci současných mladých malířů. A stejně tak je i riziko investice asi nejvyšší. Výhodou je, že počáteční investice na nákup jejich děl bývá minimální, a pokud se umělec nakonec prosadí, zisk může být mnohonásobný. Čekání na profit se ovšem může protáhnout i na desítky let. A do toho je nutné započítat i náklady na údržbu a pojištění díla. Z technického hlediska je daleko výhodnější nakupovat přímo od autora. Speciálně český trh je malý a každý tu zná každého. Nákup od autora může výrazně dopomoci ziskovosti investice, protože galeristé si přirážejí často až padesát procent ceny. Výstavy a galerie by tedy měly sloužit především k orientaci

na trhu a posouzení obvyklé cenové hladiny. Po posouzení vývoje ceny v čase zase dostatečně poslouží starší aukční katalogy. Kromě lidí z oboru, kteří bývají často právě kvůli velikosti či spíše malosti zdejšího trhu nepříliš objektivní, je vhodné se s odborným poradenstvím obrátit na banky. Většina z nich vlastní nějakou sbírku, má lidi, kteří se na tomto trhu orientují a je schopna v případě potřeby nabídnout i financování složitějších transakcí. Laik má také možnost realizovat své investice do umění či designu prostřednictvím specializovaných uměleckých fondů. Ty se orientují čistě na zisk a se sběratelstvím či vytvářením sbírek nemají nic společného. Investoři sami často ani netuší, jaká díla fond za jejich prostředky nakupuje, vyjma obecné investiční strategie, kterou se fond prezentuje. Manažeři fondu se orientují na trhu s uměním a díla průběžně prodávají a nakupují zase jiná. Investoři tedy mohou své prostředky zhodnotit, aniž by se v umění vyznali. Za průměrný výnos u moderního umění lze považovat deset až třináct procent za rok. Platí však, že investice do umění je obecně více riziková než investice do akcií. Problémem může být i likvidita děl. I v období největšího vzestupu poptávky se stává, že investor neprodá. Například v situaci, kdy nabízí Zrzavého, ale majoritní zájem míří k Toyen. A naopak, už po pár měsících budou díla Toyen těžce obchodovatelná a Zrzavý bude mizet z galerií jako horké rohlíky. Z toho plyne, že běžný laický investor, který nemá ambice budovat sbírku, by do umění neměl investovat více než patnáct procent portfolia.

The wave of interest in young artists has been building up for years. It is not possible to say in a couple of lines that you should start buying Honza Sváček, and it also wouldn’t be relevant from an economist who can only distinguish between Baroque and Renaissance. But we can definitely set certain borders. Famous names are usually a safe investment but the purchase price is higher. Zaha Hadid for instance, is a world class and her earlier valued pieces are sold for tens of millions of Czech crowns. Her light sculpture „Vortexx“has been several times valued up to two hundred million Euros. The case is not so easy with young artists. If they are proven, they can bring a very good betterment. But if some of them are changed into a fashion icon by the galleries for other reasons other than their real talent, then the prices of their artifacts can climb fast, but it can also fall again just as rapidly. The greatest potential of pay-off is in the generation of today´s young painters. But also the risk of the investment is highest here. The advantage is that the initial investment of the purchase is minimal, and if the artists win their recognition, the revenue can be a multiple of the original value. Though, waiting for the profit can take tens of years. And we have to include the expenses for maintenance and insurance of the artwork. From the technical point of view, it is better to purchase right from the artist. Especially the Czech market is small and people know each other. The purchase from the artist can help a lot to achieve profitability of the investment, because galleries usually add up to fifty per cent of the price. Exhibitions and galleries should be used more to get oriented on the market and to survey the usual price level. To see the price moves through the time, it is good to have a look at old auction sale catalogues. In addition to specialists in the field, who aren´t often very objective because of the size of the market here, it is advisable to ask banks for counselling. Most of the banks have their own collections and they have people, specialized in the market, and they are also able to offer financing of more complex transactions if needed. Nonspecialists can also realize their investment in the arts through specialized art funds. They are strictly oriented on profit and they have nothing to do with collecting. Investors themselves often have no idea which artifacts are bought with their money, except from the general investing strategy which the fund represents. Managers of the fund are oriented in the art market and they continuously buy and sell different pieces. The investors can then make profit without being specialists in art. An average profit in modern art is considered to move between ten and thirteen per cent in a year. But we have to be aware that investment into art is generally more risky than investment into stocks. The liquidity of the artwork can also be a problem. Even in the times of the greatest demand rise, it sometimes happens that the investor cannot sell the product. For example, in the situation when they offer Zrzavý, but the major interest is in Toyen. On the other hand, when a couple of months later Toyen is hard to sell, Zrzavý can keep on disappearing from galleries very quickly. It means that a common nonspecialist investor, who doesn´t have the ambition to build up art collections, should not invest more than fifteen per cent of their portfolio into art.
