That’s because he’d made it the night before, and it was chilling so that the ingredients became deliciously soft and digestible. His name was Dr Bircher. Although you can buy instant Bircher Muesli nowadays, this recipe pays respect to Dr Bircher’s Swiss levels of organisation.

1. Preheat oven to 200 °C. Line a baking sheet with the silicone

PEANUT SAUCE

1. Start with the sauce. Heat the oil in the pan and add the garlic,

1. Boil some water and add the orecchiette. Boil until al dente.

Pampoen Fritters Here we’ve married together the South African classic pampoenkoekies, and a best-selling pumpkin fritter recipe at our Rude Health Café in London. We think it’s a happy harmony. Make it a three way affair by adding Canadian maple syrup.

Buko Pie A Filipino twist on an apple pie, but with native ‘buko’ young coconuts. If you ever find yourself in Laguna head to the Pahud sister’s Original Orient Buko Pie Bakeshop. It’s the Buko Pie homeland. And a classic.

Take one part of the dough and place it on a surface and roll it out thinly to fit the pie pan.

Let the dough chill for 15 minutes and divide in two equal parts, one for the top and one for the bottom.

Pour the filling on the pie crust.

9.

Unroll the second crust dough over the filling.

10. Brush some Coconut Drink on the crust. 11. Bake the pie for 45 minutes. 12. Remove from oven and allow to cool slightly before slicing. You can style it with some extra coconut.

1. Preheat the oven to 180 °C.

Pour some oil in the baking tin

4 tsp baking powder 1 tbsp apple cider vinegar ½ tsp salt 6 tbsp sesame seeds ½ tsp saffron 3 tsp cardamom

2. Mix all ingredients and pour in the tin. 3. Bake for 90 minutes in the preheated oven.
