Total design overhaul includes all three Restaurants, Lobby and all West Wing Rooms The Grove, Hertfordshire, will unveil the results of an extensive renovation project when the hotel relaunches on 17th May 2021. The complete redesign has been masterminded by award-winning interiors studio, Martin Hulbert Design and incorporates all three dining spaces – The Glasshouse, The Stables and The Lounges – as well as the lobby area and all 189 West Wing guest rooms. The refurbishment represents a significant investment for The Grove over the past two years and has been completed during lockdown. Guests can expect a transformed and elevated experience at The Grove, which will relaunch as a new hotel in late Spring, rather than a reopening of the property which closed in December. London-based designers Martin Hulbert and Jay Grierson of Martin Hulbert Design, who have worked with The Grove since the hotel’s launch in 2003, were charged with updating the property while retaining its signature warmth, character and luxurious modern touches. Whilst the new interiors reflect the evolution of the brand, many of

the original furnishings still feature in the designs, albeit with a re-imagined look. This regenerative approach was taken not only to retain some of the hotel’s original character, but also to champion sustainability – a theme which is evident across the property. The Glasshouse Bar & Lobby The Grove’s signature restaurant, The Glasshouse, has been entirely reimagined with the ultimate vision of bringing the outside in. The striking glasshouse exterior, which overlooks a manicured courtyard and the lush grounds beyond, provides abundant natural light. This complements an interior colour palette of warm, ochre yellow and rich earthy tones to create a sense of eternal sunshine, whatever the weather. Plush velvets and rich leathers provide a welcoming setting in which guests can enjoy The Glasshouse’s theatrical gourmet dining experience, with seating arranged around the restaurant’s open kitchen and live cooking stations. Bespoke, kinetic sculptures are suspended from the ceiling to create a gentle energy, while light and airy voile drapes provide a sense of intimacy.

The theme continues at the neighbouring Glasshouse Bar, which features a brandnew mirrored bar area. The ambient space has been seamlessly incorporated into the hotel’s lobby area through the use of glass walls. This brings warmth to the newlyrefreshed lobby and provides an immediate welcome for guests as they check in. The Lounges and The Stables Also part of the total design overhaul are The Grove’s much-loved Lounges, a series of characterful drawing rooms at the heart of 18th Century Mansion. Here, Hulbert’s team was tasked with creating three unique but cohesive spaces in which guests can relax with a cocktail or enjoy stunning views of the gardens over a traditional afternoon tea. The first of the three rooms has been brought up to date with jewel-like teal blue hues, contrasting with the light, minimalist interiors of the lobby and providing a warm and inviting feel. Rich, textured fabrics including tweed and velvet have been used for upholstery, drapery and soft furnishings, while handmade Irish linen and eclectic artwork by emerging artists adorns the walls.


The second of the three Lounges, known as the Newspaper Room, enjoys a neutral yet opulent colour palette, where gold combines with gentle creams, browns and blues to create a soothing, sumptuous environment. A brand new mirrored and marble cocktail bar has been installed within an original feature alcove and in a nod to traditional Georgian interior styles, the walls have been decorated in a hand-finished painterly striped fabric. The Library completes the trio of rooms and invites the verdant garden surrounds of The Grove inside, with a scheme of tonal greens and earthy hues. A hand-painted, bespoke fabric covers the walls of the curved, oval space, complemented with dark panelling and contemportary artwork. The Grove’s Stables restaurant, currently the setting for Alpine-style pop-up restaurant ‘Jimmy’s Lodge at The Grove’, has also received a complete refresh, with warm tan leather seating and equine artwork as a nod to the late George Stubbs. West Wing Bedrooms Perhaps one of the largest projects for the hotel since its opening, all 189 of

The Grove’s West Wing bedrooms have been completely remastered. Hulbert has employed a bright and airy scheme of neutral tones in tandem with seasonal green and rich sepia, inspired by the endless English countryside outdoors. Bespoke, handwoven wall hangings sourced from Italy frame king size beds while velvet soft furnishings offer luxurious comfort and the ideal setting in which to unwind after a day spent exploring the grounds. Research finds desire for travel remains strong A survey of British adults to determine attitudes towards resuming travel once the Coronavirus restrictions are lifted has revealed a strong desire to travel, with the UK and Europe top of the ‘must visit’ list. The online survey* carried out by international lodging owner-operators, The Ascott Limited, found that more people (60 per cent) wanted to book a holiday when restrictions are over, than visit family and friends (22 per cent) or visit a restaurant (15 per cent). The research echoes the findings from Visit Britain’s latest consumer sentiment research, where a third of international travellers surveyed stated they are ‘in the mood’ for travelling abroad in 2021. When asked what they would most like to experience in 2021, the majority of the Ascott survey respondents said they would like to visit a capital or key gateway city (66 per cent). The trend for staycations remains strong, with many people expressing a desire to stay within the UK. A large majority

(70 per cent) also hoped to travel within Europe, perhaps reflecting the fact that further afield destinations may need to stay on the wish list for the time being. UK, France and Spain topped the respondent’s travel wish list, and while location was cited as the most important criteria when booking a future trip, unsurprisingly, hygiene and cleanliness came a close second, followed by flexible sales conditions. Barons Eden completes £14 million investment in Hoar Cross Hall refurbishment Barons Eden, the luxury hotel and spa group, is set to begin reopening its Staffordshire property, Hoar Cross Hall, from 12th April following the group’s largest investment ever, in excess of £14 million. The 150 year old property has seen the retreat’s 97 bedrooms, each with its own classic aesthetic with modern detail, full-service spa and communal areas, all receive significant upgrades - the most extensive refurbishment in the history of Barons Eden. The objective behind the multi-million overhaul, that spanned over two years, was to update the property in line with its luxury offering, whilst maintaining the property’s rich history and heritage. Making 2021 the year of water and human wellbeing A growing number of studies point to increasing drinking water pollution by microplastics and a range of chemicals from plastic and other sources, which Stockholm-based international water company Bluewater describes as a significant concern. Bluewater, a world leader in drinking water technologies and solutions for homes, hospitality operations such as restaurants, hotels, and public dispensers at events and in supermarkets as well as sustainable drinking water bottles, believes consumers and business organisations need to take increased self-responsibility if they are serious about taking healthy lifestyle and water drinking habits to the next level in 2021. An incredible 500 billion plastic bottles are used by people every year, with most not being recycled and instead ending up in landfills or the oceans to leech their chemicals into the soil, rivers, and seas. The pollution price created by plastic bottle use, from oil extraction, transportation, use of scarce

freshwater resources, production processes, to end-of-life dumping, is sobering. Plastic is now in the ocean’s deepest reaches, in remote Arctic sea ice, and on mountain pastures. “Evermore scientific research indicates that microplastics, and the chemicals leaching from them, are now in the water we drink, the air we breathe, and the food we eat,” said Bluewater spokesperson Dave Noble, public relations and communications director. He added that while Bluewater is optimistic human ingenuity can be harnessed to benefit humankind, the water pollution challenges the world currently faces indicate the future may not be as rosy as we want it to be. “Life and health depend upon access to freshwater. We are what we drink, so it’s kind of a good idea to get into the mindset of ensuring the water we hydrate benefits our overall health, rather than increasing the risk of illness due to chemical pollution,” Noble said. He added more research is urgently needed into the impact of plastic chemicals on human health and wellbeing

Consider these developments: – As the new year commenced, a team of Italian scientists published a study in January’s 2021 issue of the journal Environment International saying they had found microplastic particles in human placentas. Noting that plastics contain endocrine disruptors that could cause long-term effects on human health, the researchers said studies need to assess whether microplastics in the human placenta trigger immune responses or lead to the release of toxic contaminants able to harm pregnancies. – In the USA, a study published in the journal Environmental Monitoring and Assessment in October 2020 concluded that water contamination by nitrates is now a public health risk. The researchers, affiliated with the organizations Clean Wisconsin and the Environmental Working Group, pointed out that nitrate exposure may be behind many cancer cases and poor birth outcomes in Wisconsin every year. Nitrates are used in many fertilizers and are found in soil and groundwater almost everywhere farming is practiced.

– A study of tap and bottled in Europe by researchers at the University of Hull in the UK, published by the Plos One scientific journal in July 2020, spotlighted the ‘omnipresent microplastics contamination of drinking water’. The researchers concluded ‘the weight of the current evidence suggests that the time may have come to implement protective measures against the ingestion of microplastics.” – The Washington-based Environmental Working Group wants to halt the spread of PFOS contamination, which it says is now found in the blood of 99% of Americans. PFOS has been linked to cancer, thyroid disease, weakened immunity, and other health problems. The EWG says its research indicates over 1,500 drinking water systems across the USA may be contaminated with the non-stick chemicals PFOS and PFOA and similar fluorine-based chemicals.

– In Europe, the PFOS (and PFOA) problem has been described as ‘widespread’ by the European Environment Agency (EEA), but, worryingly, the body says the risks posed by the chemicals ‘are still poorly understood’. Bluewater has published a white paper jointly with Portugal’s leading science-led Mirpuri Foundation detailing the profound impact plastics pollution has on people’s health and well-being. The white paper – entitled ‘The Global Plastic Calamity’ – details how the unmitigated pollution of the planet’s oceans, land, and air releases hormone-disrupting chemicals that may be responsible for a worrying rise in multiple illnesses.

Kitchen tech: The trends transforming the industry in 2021 The pandemic has irrevocably changed the food and hospitality sector and, with government restrictions set to be lifted in the not-too-distant future, food safety challenges are at the forefront of the minds of businesses gearing up for the sectors reopening to the public.

Throughout the three UK lockdowns, it comes as no surprise that the hospitality and food & beverage industries have been hit the hardest. But, during the last twelve months, almost all industries have seen a rapid change in technology and digital aids and for many this is now the only way to progress and remain both open and relevant within their sector. In this piece, Ben Gardner, CEO of Navitas Safety, discusses the rise of kitchen technology and the trends that are set to transform and futureproof the industry throughout 2021 and beyond. Finding the perfect balance It is safe to say that technology will continue to play a vital role within all industries, and whilst it improves speed, efficiency and reduces human error, it is important to strike the perfect balance between tech-enabled kitchens and a personalised customer experience. Technology should be used to enhance the role of humans, not replace them entirely. The importance of software and technology Going forwards, having a digital allergen management and tracking system is going to be essential for businesses within the food and beverage sector. This will ensure that the seller can always prove that they have clearly labelled all allergens within the food they produce for direct sale. If businesses fail to do so, they will be putting themselves and their customers at risk. A digitised system, which maintains a record of all allergen labels printed, will guarantee that businesses are entirely protected. And, with Natasha’s Law coming into force as of October this year, it is more apparent and important than ever before. brands and businesses within the food and beverage sector follow suit. Now, many of Samsung’s fridges are somewhat of a family hub. Although integrated with WIFI and the ability to watch TV, they are much more than that. Utilising SmartThings technology, these fridges allow people to see what is inside their fridge, wherever they may be. Aiding the weekly food shop, such technology also allows homeowners to limit food waste, helping with the all-important sustainability efforts within the UK. Whilst these are transforming the homes of thousands, they could now be used to benefit and transform restaurant and hotel kitchens too. COVID-19 may be the pandemic that has taken over the world recently, but there are a number of other crises that will continue beyond the effects of coronavirus. Food waste and, of course, global warming are just two of them. By introducing technology into kitchens, this will help contribute positively to both of these incredibly important issues, as well as reducing the UK’s carbon footprint. Improving consumer confidence 2021 is the year to go digital and food businesses need to do more with less. Consumers are going to be even more sensitive to food hygiene standards and will choose not to dine with businesses if they feel they are not conforming to the highest levels of safety. Aiding safety and transparency, remote technologies such as in-app ordering and digitised menus should be continued to help limit the need for human contact and disease transmission. By going digital, food businesses can focus on the customer experience and let technology innovate, and take care of, many food safety procedures. How to meet new legal requirements for food labelling in the UK Natasha’s law or the UK Food information amendment comes into play from the 1st October 2021 in England, Wales and Northern Ireland with similar standards being introduced in Scotland by Food Standards Scotland. The new law requires businesses to label foods with their product name and provide a full list of ingredients highlighting allergens. The new law is aimed at businesses who prepare prepacked for direct sale (PPDS) foods for direct sale on their premises. These type of foods are packaged before they are selected by the consumer and can be found in display units, behind counters or sold in mobile/temporary outlets. What labelling options are out there? The new law effects small cafés to larger hospitality chains bringing in new technological printing requirements. Batch buying pre-printed labels or handwriting sticky labels can be time and cost consuming. They are also hard to update if recipes are revised using new ingredients which by law need to be updated immediately. An alternative option is to look into self-label printing. Loui Blake backs Embargo as startup launches online delivery Serial entrepreneur and angel investor Loui Blake has become the latest hospitality expert to invest in Embargo. London-based startup Embargo has experienced significant growth during the pandemic, with over 200 coffee shops, cafés and restaurants signing up to its plug-and-play loyalty solution. Integration is the way forward The value of technology is rarely about a single product, but instead bringing multiple technologies into the whole seamlessly integrated customer experience AI is fast becoming an integral part of our lives. Within the hospitality sector the use of AI is still in its infancy, but we are beginning to see practical applications of this technology that will have real impact and benefits for hospitality providers and customers. As with any new technology, there are several key considerations that restrict the commercial application of AI. These include: cost, customer acceptance, security and Return on Investment (ROI). It would be fair to say that until now, a cashierless, vision-based AI checkout was limited by these restrictions. However, through steadfast integration with the full Lolly digital commerce offering, we have developed a solution that makes AI a reality for hospitality. In this article, we will review how end-to-end integration provides the answer when it comes to issues regarding the commercial application of an automated checkout. We will also highlight the benefits of integration for customers and hospitality providers - that go far beyond the point of sale. How does integration make AI and automated checkout a reality? Previously the commercial application of automated checkouts was limited by the fact that no provider was offering payment, management and receipting within one single service. This therefore meant transactions could not be completed securely or quickly, in a way that would have measurable benefits for either the hospitality provider or customer. Creating a closed loop payment environment makes the automated checkout completely seamless for all parties.

How does AI come into it? Through a simple app sign up, hospitality customers can top-up credit or connect their card to their account. In the canteen, cafeteria or restaurant, they can select their packaged or fresh items and bring their tray to the AI kiosk. Items placed on the kiosk will be scanned by visionbased technology powered by AI, and payment then authorised by the customer scanning their in-app QR code, or RFID enabled security badge. In order to deliver an almost instantaneous checkout, our own Snapserve AI kiosk uses delayed product recognition and payment, thereby significantly speeding up queue throughput time. Delayed recognition works to ensure 100% accuracy, without complicated setup, ongoing operational burden, or the requirement for pre-training. The image captured by the kiosk at checkout is reviewed by AI to identify the products purchased and take payment accordingly. Human annotation processes the first few transactions and is used at the beginning of the loop to identify products when recognition is low, but as the AI is fed more data (in the form of image samples of menu items placed on the kiosk), it will develop confidence, so supervision is gradually removed. Customers can move on quickly to enjoy their meal once their transaction has been authorised, which can take just three seconds. Their receipt is then sent in-app (including visuals of their menu items), following the delayed recognition process and allows the customer to review the payment taken when convenient for them. What benefits does integration have for hospitality providers and customers? Affordable As the whole process is brought into one loop, under one provider, costs are brought down. ROI is high, due to reduced queuing and faster checkout times (fueled by delayed payment and receipting), enabling greater numbers of customers to be served, whilst cashier costs and wastage can be reduced. Ease of management The system is immediately operational with 100% accuracy. As everything is easily managed via the integrated app system, minimal training is required for staff.

Online ticketing holds key to control in pandemic A 90-acre country park and adventure centre in Devon has introduced on-line ticketing technology to support its re-opening plans as it gears up for a rush of visitors when lockdown ends. CRS Adventures is an outdoor activity business based at River Dart Country Park. Activities include a treetop high ropes course and water-based activities such as kayaking and canoeing. It turned to advance ticketing online last year when Covid-19 restrictions completely changed visitor patterns. They are now using the TygTickets system to take advance bookings so that they can ensure social distancing; plan staffing levels in advance and be certain car parking facilities are not overwhelmed when the expected rush of visitors occurs. Adam Habasinski, Chief Instructor at CRS Adventures said: “We had previously only used TygTickets for our annual Picnic in the Park and Fireworks Events. Day visitors would arrive, and we would estimate numbers based on the weather forecast.”

“Last year when social distancing regulations were issued, we wanted to eliminate queues as much as possible as it is not good for the customer experience. Prior to using the TygTicket system we found there were days when it was all hands to the pump to cope. Now we are turning to people booking their tickets in advance and the TygTickets system has been invaluable to us putting us in control, rather than the customer controlling how we operate.” “In the months ahead, it is going to be even more important as we believe people will want to get out into adventure parks like ours and enjoy the summer, and we are expecting unprecedented demand. XSafe is a totally natural sanitation system which is fully integrated inside the ice machine. It operates automatically 24 hours a day 7 days a week to keep your ice making equipment clean and safe substantially reducing the formation of mould, mildew, yeast and slime within the machine. Even with the current more frequent handwashing advice and regulations, don’t be tempted to cut corners and touch the ice when collecting from the storage bin or serving. Don’t give customers the opportunity to touch ice, either.

Essential 4: do follow the manufacturer’s advice on cleaning and maintenance of the ice machine and associated storage bin, and have the machine regularly serviced. Essential 5: do regularly train and update staff on the correct procedure for storing and serving ice. This is especially important when staff are bouncing on and off furlough as lockdown restrictions are raised and eased. While these staff specifically might get rusty with hygiene requirements, all staff can benefit from regular refresher sessions.

Essential 2: don’t store the scoop on top of the ice machine or inside the storage bin on top of the ice. It’s recommended to store the scoop in a tub of sanitiser to ensure it is hygienically clean and ready for use. This prevents transference of bacteria from the handle of the scoop to the fresh ice.
