trajectory, not just locally, but globally. We have a strong leisure guest business and a large incentive group travel business and working in partnership with our industry colleagues and stakeholders, the city is firmly back on the international map.”
Northern Ireland’s largest hotel pledged to bring a new era of luxury to Belfast and it has firmly delivered on this promise. The Grand Central has welcomed dignitaries from across the world including Presidents, the now King Charles and Queen Camilla, global music stars and international football players.
“I am extremely proud to lead an exceptionally talented and dedicated team of people, who have worked hard over the last five years to get the Grand Central to where it is today. It has been fantastic to see so many of my colleagues progress through the hotel and be rewarded for their efforts. For example, Jarmila Simova initially started part-time through an agency just before we opened and over the last five years, she has worked hard and has led by example and is now our assistant head housekeeper having successfully taken part in Hastings Hotels Management Ambassador Programme.
Last year the hotel was awarded a five-star rating by the AA and the Seahorse Restaurant was awarded an AA Rosette. Stephen Meldrum, General Manager of the Grand Central Hotel said: “Over the last five years, the Grand Central Hotel has gone from strength to strength. The hotel was open less than two years when the pandemic hit so it’s fair to say that we have already experienced a lot of challenging times in our time. Despite this, we are proud to have engrained ourselves in the local community and are proud to be a key player in Belfast’s success story. After Covid, we have continued to work hard to rebuild the business and I am delighted to say that we are going in an upward

ILIV enhances public spaces and seating at the refurbished Hilton London Croydon ILIV is honoured to have been part of the refurbishment of the sophisticated Hilton London Croydon. The contemporary interior was created to encourage guests to relax and stay awhile in the public areas and was unveiled in December 2020. ICA Studio, specialists in hotel interior design, were selected to reimagine and recreate all the public areas. The hotel wished to keep certain existing elements, so the design gracefully balanced these with fresh, refined enhancements. The hotel is located directly across from Croydon Airport, this historic site was the birthplace to so many aeronautical firsts. It was the first ever commercial airport, the birthplace of both air traffic control and the Mayday signal, as well as being the groundbreaking starting point for heroic and adventurous pilots including Amy Johnson who set off from Croydon in 1930 on her historic solo flight to Australia, plus it’s heroic part in the Battle of Britain. With this wealth of history, so close to the hotel the design team drew inspiration from this legacy in an abstract and subtle way. Including elements of shape, form and pattern, with inspired graphical prints, decorative shelving units and back bar design, all the way through to

the heritage colour palette. The designers wanted to draw upon the areas’ history but not over power the space so their approach was subtle and sophisticated, which made leading British fabric manufacturer, ILIV the perfect choice for the polished new interiors. ICA Studio chose seating fabrics from ILIV’s Burghley and Casa collection for their tonal colours and complementary textures of smooth vinyl and luxurious velour Burghley Mist and Casa Marine, used for the public space seating, and Burghley Oatmeal for the bespoke dining chairs, sit together as an evocative reminder of the heritage airport colour palette which inspired the design. Shortlist announced for Independent Hotel Show Awards 2023
10
The Independent Hotel Show, taking place on 16-17 October at Olympia London, has unveiled the shortlist for the 11th annual Independent Hotel Show Awards, in partnership with Preferred Hotels & Resorts. Launched to celebrate excellence in the world of boutique and independent hotels, the awards recognise prominent hotel and promising hoteliers in two categories: Independent Hotel of the Year and GM of the Future, sponsored by The Master Innholders. After several hours of discussion and debate, the shortlist for Independent Hotel of the Year was whittled down to a final eight from over 100 entries. Jane Pendlebury, awards judge and Chief Executive of HOSPA, commented: “It was an absolute pleasure and honour to judge the awards, albeit a challenging process! With an impressive number and standard of entries, whittling them down was enormously difficult – especially given the diversity of properties in the mix. From urban to rural, boutique to large, we saw the full spectrum of hospitality on display. “Given the high quality of the entries received, those who have made the shortlist can feel very proud, knowing that, should they win, they’ll be a very worthy winner – with making the shortlist a significant achievement in itself.”
•
Stuart Procter, COO at The Stafford Collection and winner of 2022’s Independent Hotelier of the Year Award, added: “I’m delighted to have been a part of the judging panel for this year’s Independent Hotel Show Awards. The quality of nominations was outstanding, with entries from people and hotels at the top of their game and I think we have been able to select those who really embody the best of the best in the independent hotel industry.” The Independent Hotel of the Year Award is now open to public industry vote, with the ultimate winner decided through a combination of judges ranking and the public vote and unveiled in an exclusive ceremony on day one of the Independent Hotel Show on 16 October. Cleaning & Hygiene
Cleaning and Hygiene Practising good hygiene upkeep ensures a safe and clean environment for facility users. Consistent, proactive cleaning minimises the need for intensive deep cleaning, allowing facilities managers to refocus their efforts. Kärcher’s PDIR method simplifies and enhances cleaning standards by dividing it into four parts: Preventative, Daily, Interim, and Restorative. Preventative cleaning Preventative cleaning focuses on stopping the outside dirt making its way into corridors, entrances, and common walkways. By preventing dirt from coming into the building it can reduce the build-up of unwanted dirt and debris inside the facility by up to two thirds, keeping the hygiene levels up. Walk-behind scrubber dryers are a popular solution for many facilities managers. Ideal for covering vast surface areas - they offer great performance. The Scrubber Dryer BD 50/55 W Classic features an easy start to the machine with operating errors almost ruled out thanks to the self- explanatory concept. The scrubbing deck and the brush are manually positioned using levers on the machine, allowing the user to easily set them at the right height for different flooring heights offering greater flexibility for working across a range of floor surfaces. As it is impossible to completely remove all dirt when it comes into the facility, it is essential to ensure that the floors are protected appropriately. Kärcher’s FloorPro Wipe Care RM 780 is a powerful cleaning agent for water-resistant floors, offering surface protection to make them more hardwearing. Similarly, the RM 735 works as a strong disinfectant as well as cleaning the floors and all surfaces too to ensure maximum cleaning care. Daily maintenance cleaning Daily maintenance cleaning should allow facilities managers to keep things in order and stay on top of dirt build-up. It helps to keep patients and hospital workers at ease by enabling them to enter a clean environment. One area to focus on during daily maintenance cleaning is floorcare maintenance. As people move throughout the day, dirt can easily spread and if it is left to build-up it can result in damage to the surface. From Kärcher’s classic range, the SG 4/2 Classic steam cleaner is the most compact professional steam cleaner
Cleaning & Hygiene
in its class making all smaller sized surfaces easy to clean whilst being as effective as the scrubber dryers. The compact, robust, durable steam cleaner is also extensively equipped, very easy to use and a very lightweight machine, weighing only 7.5 kilograms. The SG 4/2 Classic steam cleaner impresses with excellent cleaning results, a superb price/performance ratio and maximum efficiency. Intermediate cleaning Intermediate cleaning is needed intermittently, but it should not be required every day such as with maintenance cleaning. Opting to do intermediate cleaning every so often helps to maintain a high standard of cleanliness and can save time and costs when it comes to deep cleaning. It is vital to select the right method when doing intermediate cleaning to minimise disruption. For instance, excess water on corridors becomes a health hazard should there be an emergency. Instead, orbital and cylindrical scrubbers are ideal for scrubbing hard floors to remove dirt from the surface without the area being left soaked and inaccessible as a result. Restoring the original condition Surfaces can become damaged due to the movement of people, large equipment, and general wear and tear throughout the facility and will need to be deep cleaned at some point. Utilising the other three cleaning methods, the frequency of deep cleans will reduce saving time, materials, and staff resources keeping the overall hygiene of the facility to a high standard. To restore floors back to their original condition, they will need to be stripped and recoated with a new protective layer. Kärcher’s FloorPro Intensive Deep Cleaner RM 752 and RM 735 are both effective solutions that can be used in conjunction with its scrubber dryers to powerfully remove care films, wax and polymer coatings, dirt and grease, allowing facilities managers to recoat the flooring to return it to a “like new” state. When paired with the PDIR cleaning process, the Kärcher system offers innovative cleaning solutions that improve the overall cleanliness and maintenance of hygiene in healthcare facilities. 25

Get Ready for Christmas with Alliance’s Festive Ranges Ensuring your establishment is appropriately decorated and furnished during the festive period is a necessity for the hospitality industry. In turn, restaurants, bars and pubs will all want to capitalise on the seasonal influx of business which is available. The best way to do so is make your establishment as appealing as possible during this period. Eco-Crackers As a business, sustainability and our impact on the environment are at the forefront of how we operate, as such this year we have opted for an initiative which ensures our crackers are fully recyclable. The way
this has been achieved is by removing the silver fulminate which is used to achieve the traditional snap. Now when the cracker is pulled it will instead break apart with the audible crack of cardboard meaning you can still enjoy a cracker with your meal whilst knowing you are doing something right for the environment. Decorating the Room When looking to decorate an eating or drinking area for Christmas you should first
consider where your fire exits are and that all customers will still have a clear route to an exit. Once you have done this check, you can begin to decide how you want your festive design to look. We would always recommend a tree, go for a larger one if you can as this can be quite a statement piece, attracting party photos in front of it which can act as great free publicity across social media if your venue gets tagged. In addition to Christmas trees, garlands and wreaths give you the option to add a subtle hint to areas such as toilet doors, mantles, shelves and other places. Equally, fairy lights, tinsel, baubles and balloons are also all great ways of adding some festive cheer to your hospitality business this year. Dressing the Tables There are many ways to dress your table to add a hint of Yuletide style. Firstly, if you have a colour scheme or a set theme for Christmas which features one particular colour, replicate that in your table setting. You could do this by incorporating the colour into your tablecloth, or if you want a white tablecloth then possibly a coloured table runner with matching napkins. For tableware you could opt for classic whiteware or go for something more modern which can be a way of introducing colour to your table. Glassware we’d suggest sticking with classical looks to add a sophistication to the drinks you’re serving. Finally, if you’re finding you’re being booked up with groups looking to celebrate a Christmas works party, you could offer party accessories to go with the meal. Whether it be party poppers, a festive mask kit, artificial snow spray, all are great for adding a party vibe for customers. With winter on the immediate horizon, restaurants, pubs and other such businesses should look to start ordering Christmas decorations and planning for the festive period now. Alliance Online offers a wide range of Christmas options which will be perfect for your establishment this year.

Tequila’s butterfly effect Tim Dunlop, European commercial director, Biggar and Leith. Tequila’s butterfly effect Agave drinks have attracted an army of followers that are exploring the tequila category and this shows no sign of slowing down in the winter months. Offering playful, refreshing and tasty cocktails is a simple and effective way to maximise tequila sales, especially as we approach the festive party season. Spice up punches with pomegranate or cranberry juice, orange wedges and cinnamon sticks, or add seasonal cocktails to the menu such as Winter Spiced Margaritas or the Butterfly Cannon Blue Paloma to place visually appealing, good quality drinks in the spotlight. The Butterfly Cannon is a range of three unique tequila expressions from Mexico.
All are 100% agave using quality blue agave from the finest seven- and eight year-old plants in Jalisco, Mexico. Its most eye-catching variant, The Butterfly Cannon Blue, changes colour from a vibrant blue to a dazzling violet when mixed in the glass – adding a sense of theatre at the bar. Infused with prickly pear and clementine, it has a fresh citrus nose and tropical flavour, with a long, rich and refreshing finish. For those embracing Barbiecore, Butterfly Cannon Rosa is infused with Mexican pink grapefruit, resulting in a bright rose-coloured tequila. It’s a silver tequila with a blend of grapefruit skin, agave, fresh citrus blossom, natural pulp flavour, with a rich agave taste. Serve with soda and a slice of grapefruit to create ‘a drop of blood’, deep red in colour. The Silver Cristallino brings a bright and crystal-clear tequila with warm aromas of roasted agave, oak and vanilla. For a winter serve that works well at Christmas, create a ‘Woodsman’ by mixing with lemon juice,
cranberry juice and honey before garnishing with a lemon twist and Maraschino Cherry. Those with an eye on conservation will love the fact that Butterfly Cannon donates to the Monarch Butterfly Conservation Fund. Monarch Butterflies have a unique lifestyle – American Monarchs go through three regenerations – and then migrate all through the US, via Texas and into Northern Mexico where they overwinter in trees for around five months. Sadly, more and more of their habitat in Mexico is being destroyed by intensive and often illegal farming. The Monarch Butterfly Conservation Fund aims to conserve the magic of the monarch migration. The Butterfly Cannon tequilas are available to hospitality venues and operators now via UK distributor, Craftwork. Bring the heat with dark spirits Tim Dunlop, European commercial director, Shanky’s Whip from Biggar and Leith. Bring the heat with dark spirits Tim Dunlop, European commercial director for Shanky’s Whip from Biggar and Leith, shares his tips and tricks for making the most of dark spirits this season. Throughout the festive season, consumers tend to dial up and elevate their usual tipples when out in pubs, bars and restaurants. Dark spirits come into their own in the winter months, as the longer nights and colder weather fuel consumer appetite for richer drinks With the backdrop of the festive season, drinkers tend to indulge and treat themselves when visiting venues, often dabbling in new categories. Dark spirits are therefore prioritised in elevated cocktail menus where operators can highlight the season, grab customer attention and maximise sales by encouraging them to trade up to more exciting, premium serves. Venues should work on refreshing menus early on, as drinkers seek to be inspired with richer, more indulgent dark-spirit based drinks as they transition seasons and naturally graduate into new categories. Approachability and accessibility Shanky’s Whip meets proven and wellestablished demand for flavoured dark spirits as consumers explore the category further. Historically, it has been challenging for Scotch and Irish whiskey to resonate with younger drinkers, but bringing together a flavour-led and modern brand proposition straddling two vibrant, buoyant categories is a great way to make the category more approachable and accessible. Shanky’s Whip is a natural next step for pub-goers stepping out of their comfort zone and is well positioned to capitalise on these moments with its warmer flavour profile.
It also works well paired with an Irish Stout – either as a chaser on the side, or dropped into an ice cold pint for the ultimate Irish duo. Winter warmers The Shanky’s Whip Pumpkin Spiced Latte puts a fun, boozy spin on the classic drink that enjoys widespread popularity during the colder months. It includes equal parts Shanky’s Whip and Vodka with a shot of espresso, milk and a teaspoon of pumpkin spice to create an irresistible serve that’s sure to capture attention on menus, especially around Bonfire Night, Thanksgiving and the colder winter months. For sharing online Shanky’s Whip is instantly recognisable with its vintage style label reflective of a box of matches, and the distinctive visual of a man, bearing a whip, mounted on an ostrich. It stands out on the back bar and invites curiosity – plus, the bottle shape, styling and branding and will appeal to the TikTok and Instagram generations looking to share their latest boozy finds on their channels.
Classic serves
Diverse appeal
It can be enjoyed neat over ice as a digestif, with cola or ginger beer as a spirit mixer drink or added to a coffee. Menus can feature Shanky’s Whip in go-to classic cocktails such as Espresso Martini or Old Fashioned – both of which are well established in the on-trade – or in more experiential serves.
Whiskey drinkers will enjoy the nuanced flavours, while fans of dark spirits and spiced rums will appreciate the vanilla and caramel notes. It can also serve as an alternative to cream liqueurs so will certainly appeal to a range of taste preferences and bring something out of the ordinary to drinks menus.

Shanky’s Whip Distilled in County Cavan, and blended and bottled by Shanky and Shireman under bond in Ireland, Shanky’s Whip is perfectly positioned to bridge the gap between Irish whiskey and liqueur – two prominent categories in the on trade which are showing promising growth. It brings a contemporary twist to traditional Irish tipples and classic serves. Using a blend of Irish spirits and aged pot still whiskey, Shanky’s Whip uses the natural flavours of vanilla infused with caramel to create a dark and distinctive spirit that is creamy and smooth with buttery, vanilla notes and a sweet spice and butterscotch finish with long Irish whiskey notes. Shanky’s Whip (700ml bottle / 33% abv) is available to pubs, operators and venues now via UK distributor, Craftwork. The Scarlet Hotel Launches Four Ayurvedic Journeys Inspired By The Cornish Coast The Scarlet Hotel, an eco-inspired sanctuary nestled on the clifftops of Cornwall’s Mawgan Porth, has launched four new wellbeing journeys inspired by Ayurvedic wellness principles.
Each journey focuses on balance and rejuvenation, drawing from ancient practices to promote deep relaxation and healing. Available from two-, three- and four-night packages, and for solo travellers and couples alike, guests will be treated to a programme of whole-body therapies and rejuvenating treatments, complete with the Scarlet’s nourishing seasonally inspired cuisine and sea-view accommodation. Inspired by its natural coastal setting, the Spa at Scarlet Hotel draws on the ancient healing power of Ayurveda – a 5,000-yearold natural science that offers pathways towards health and harmony. Set on the Cornish clifftops exposed to the five elements: fire (sun), water (Atlantic Ocean), air (sea-breeze), ether (great expanse of sky) and earth (dramatic clifftops), the Scarlet Spa expresses the wisdom of Ayurveda. The four new wellness packages are designed to encourage guests to embark on a journey of healing in tune with the surrounding natural landscape. The four-night Restoring Ayurveda package is designed to support guests in finding complete natural balance and rejuvenation, immersing themselves into a journey of complete discovery. Following an initial consultation with an Ayurvedic specialist, guests will be provided with a bespoke programme of treatments unique to their wellbeing needs and doshas (energy in the body). The package also includes a fourhour Solo or Couples Journey: a tensionreleasing bathing treatment, a therapeutic massage in a tented treatment room, and
time to simply be near the crashing Atlantic waves to promote deep relaxation and inner harmony. The package also includes a three-course dinner on two evenings and each morning with a leisurely breakfast paired with breathtaking views of the Atlantic Ocean, setting the tone for a day of relaxation and renewal. The three-night Nurturing Spa Break combines the hotel’s most popular experiences, including a 60-minute Attuned Massage, an adaptive treatment to release tension in the body, or Tula Facial, an exfoliation treatment using Ayurvedic massage techniques to relax the muscles and encourage signs of a natural face-lift. The packages also include a 30-minute clifftop rustic hot tub session, and a trip to the hotel’s soothing heated rhassoul chamber. Combining wellness with good food, an exquisite bottle of English fizz is presented upon arrival, alongside a candlelit three-course dinner in the esteemed Scarlet Restaurant on two evenings. For guests seeking a shorter break on the Cornish coast, the two-night Spend Time Together package includes a choice between Scarlet’s seasonal rhassoul scrub or an invigorating Hammam paired with a coffee scrub.
