Pride of Britain Hotels welcomes three new Scottish members Recent research by Pride of Britain

Hotels in light of the COVID-19 crisis reveals that consumer confidence in the luxury end of the market is buoyant. Over half of the consortium’s customers (51%) hope to take a luxury UK hotel break in the next three months, with 80% of guests happy to travel three hours or more for that long-awaited, muchdreamt-of hotel stay. Furthermore, 62% of guests hope to visit a Pride of Britain hotel to enjoy a special meal within the next three months, with 95% of all hotel stays being planned for leisure, rather than business, purposes. With the UK hotel industry largely preparing to open to customers in July, the research found, unsurprisingly, that customers rated extra cleaning measures to be key, followed by the maintenance of Pride of Britain’s usual levels of outstanding service and hospitality. The third most-requested points in the survey were professional training of staff in virus-specific hygiene, availability of hand sanitisers at key points around hotels and the provision of plenty of wide, open spaces. Guests also specified the need for reduced occupancy in hotel and dining rooms. Interestingly, 25% of those surveyed said they would like as little visible change to normal (pre-COVID) operations as possible. Pride of Britain Hotels is looking forward to welcoming guests once again to its 50-strong luxury collection, none more so than its three new members – The Fife Arms, Fingal and Ness Walk, all located

in Scotland; details of each new member follow: The Fife Arms, Braemar, Cairngorms, Scottish Highlands Located in the spectacular village setting of Braemar (home to the prestigious Highland Games), in the heart of Scotland’s Cairngorms National Park, The Fife Arms opened its doors, after a much-anticipated refurbishment, 18 months ago. The former Victorian coaching inn is owned by Iwan and Manuela Wirth (co-presidents of the prestigious Hauser & Wirth art galleries) – so, unsurprisingly, the hotel provides a beguiling backdrop for Scottish artists and eclectic art and artefacts from around the world. The interiors were designed by Russell Sage, with a house tartan adorning the walls of The Drawing Room – a perfect spot for morning coffee or afternoon tea – and the glorious gardens were designed by Chelsea Flower Show medal winner, Jinny Blom. There are just 46 sumptuous guest bedrooms and suites – each one dedicated to a local place, person, event or theme, be it Robert Louis Stevenson, who began writing Treasure Island in Braemar, or Lord Byron, who spent time in Braemar recuperating from scarlet fever. The Clunie Dining Room takes its name from the local river and is overseen by Executive Chef Tim Kensett. Using wood-fired cooking techniques and seasonal produce, dishes such as Scottish

squid risotto and Shetland mussels are served up in the striking space which has a distinctive river mural, hand-painted by Argentinian artist Guillermo Kuitca in his “cubistoid” style. The hotel is also home to The Flying Stag, a public bar, which offers hearty Scottish fare, real ales and an extensive whisky menu. For a more glamorous alternative, Elsa’s, the art deco cocktail bar serves artisan cocktails, pre-dinner aperitifs and nightcaps. A range of Scottish-inspired spa treatments are available, including pedicures, manicures, massages with Hot Cairngorm Stones and a ‘Laddies Highland Refresh’ facial for men. The hotel’s ghillie team is on hand to advise guests on the surrounding castles, whisky distilleries, coastlines and walks, and there is a trained gamekeeper who leads the outdoor pursuits programme. Fingal, Leith, Edinburgh Owned and run by the award-winning team at The Royal Yacht Britannia, Fingal started life as a lighthouse tender, helping maintain lighthouses and transporting vital equipment to some of the most treacherous locations in Scotland from its original base in Oban. In January 2019, Fingal opened as a luxury floating hotel, permanently berthed in the historic port of Leith, just


two miles from the centre of Edinburgh. There are 23 luxury cabins - many with direct access to the decks – perfect for stargazing or an indulgent glass of Champagne. With an Art Deco-inspired interior, The Lighthouse Restaurant & Bar serves drinks and cocktails, plus breakfast and dinner. Fingal’s salmon is smoked on board, and Head Chef Brendan Wills’ creations include Isle of Gigha Halibut and Rhubarb & frangipane tart. How will businesses cope with the new government guidelines? As announced by the prime minister

on June 23rd, indoor hospitality can re-open from July 4th. This is a longawaited event, there are still government guidelines to follow, inevitably meaning a new way of trading. Many hospitality businesses have already diversified to survive, and it is widely accepted that hospitality will need to adapt. The emergence of more delivery channels presents strong evidence of the changing trends. But, as well as takeaway, there is clearly still high demand for inhouse dining, although the operation will be quite different. Alongside the announcement, the prime minister emphasised that the safety of customers and staff was paramount, and that infringement of that obligation could result in a reversal of the decision. To be precise, the guidelines are to provide table ordering and to limit staff and customer contact as much as possible. Customers should be able to order and pay for food remotely or at the table, and possibly even using their own devices, so creating a faster and safer food service. There are already APP’s and other solutions to help restaurants operate within the guidelines but the TISSL solution is different, it has been developed as an evolving platform with a technical focus. TISSL have always considered technology to be as important as the as

their extensive hospitality expertise, so the HORZION EPOS platform has been developed from the ground up, always using latest technology and thus limiting the constraints of older legacy systems.

Customers can also order from wherever they are in the restaurant, an important option with more social distancing. There is no delay hoping to catch the eye of the waiter, and the customer can now take responsibility for letting you know about any allergies or special requests. The customer has more control and it is simple, they can amend the order at any time and pay simply using digital wallets as well as cards. Though this doesn’t remove waiter engagement entirely, there will still be customers who want to engage and even run a tab, because COP is part of our HORIZON EPOS system all this is possible. HORIZON is a cloud-based solution so hardware dependency is also drastically reduced, this flexible platform can operate on most modern operating


systems allowing sites to re-use their existing hardware in some cases, which means they can simply download the software and pay for it on a monthly subscription. The scalability of the platform is key due mainly to the unique user licensing, unlimited sites and devices can be added as required without any additional licence cost. Users simply log onto any device on any site using their unique log on. How Cloud Technology and Mobile Apps are helping the hospitality sector to get back on its feet As lockdown restrictions begin to

ease somewhat the hospitality sector is thinking about how to protect customers and staff under social distancing rules. Creating a safer, more contactless environment ironically goes against the very nature of hospitality but from enclosed dining pods to temperature checks, we have already seen diverse ideas for maintaining safety. The uptake of BYOD technology and ordering directly from table to kitchen is becoming more common place. Digital menus allow venues to instantly modify the menu online in response to customer comments while optimising costs and processes. Although we have seen the limit for contactless payments raised, this may still prove a problem when dining out. Online payment or even QR code payment provide the option for customers to scan a digital QR code or a printed QR code located at the end of the receipt and pay directly via their phone. All this can, in turn, provide an enhanced customer experience. Marie Jeanne Rapigeon of Versailles was the daughter of a French captain who became the owner of South Ormsby Estate from 1835 to 1863 and was described as “a wonder of the world”.

It is run by Master Distiller, Tristan Jørgensen who began his career as a mash and stillman at Laphroaig Distillery before producing drinks for several leading craft distilleries across the UK. Tristan now lives next door to his distillery in Driby on the Lincolnshire

Marie Jeanne’s Pink Gin is named after Marie Jeanne Rapigeon of Versailles who fled the French Revolution to become a governess for the family which owned South Ormsby Estate in Lincolnshire for almost 400 years. She later married the heir to the estate, Charles Burrell Massingberd and the couple set about investing in the local area, expanding their estate and transforming the family home, South Ormsby Hall to reflect their more modern tastes. After her husband passed away, Marie Jeanne continued to run the estate, building a school and a rectory which survive to this day. Throughout her life, Marie Jeanne was an inspiring figure who was presented to French royalty including Louis XIV, Marie Antoinette, Napoleon, Louis XVIII, Charles X and Louis Philippe. She also dined with the likes of Alfred, Lord Tennyson and was described in the diary of Liberal Party MP and High Sheriff of Lincolnshire, Weston Cracroft Amcotts as “a wonder of the world… a thro’ French woman - exquisitely dressed - with such complete command.” Maries Jeanne’s Pink Gin and Burrell’s Dry Gin are now available from the South Ormsby Estate website at www. southormsbyestate.co.uk. WSET to branch out into beer qualifications

The Wine & Spirit Education Trust

(WSET), the world’s largest global provider of wine, spirits and sake qualifications, has announced its intention to develop a suite of beer qualifications. WSET already offers qualifications in three subject areas – wine, spirits and sake – and plans to add two beer qualifications (Levels 1 and 2) to its portfolio, both online and in the classroom. While development of these new qualifications is still in the early stages, WSET is working in partnership with the Institute of Brewing & Distilling (IBD) on this initiative. IBD, a global provider of technical education to professional brewers, distillers and associated suppliers, is lending its expertise to WSET in the creation of its beer qualifications. Beer is not a totally new subject stream for WSET as, prior to 2005, it was included in its intermediate wine and spirits qualification (equivalent to today’s Level 2). WSET Level 1 and 2 Awards in Beer will be created with both trade professionals and consumer enthusiasts in mind. The courses will

explore the main types and styles of beer, key methods of production, tasting technique and food and beer pairing, following the same well-established principles as the Level 1 and 2 courses in wines and spirits. Courses will initially be developed in English before being translated into other languages. Furthermore, a big focus of the rebuild is to ensure efficient operation and design, with careful thought given to the wildlife that occurs in the area. The new low walkways are designed to allow free movement of smaller reptiles and invertebrates, and the waterholes on the Reserve are pumped using solar, providing a vital source of water to wildlife, with minimal disturbance. With the scarcity of water in the desert, every effort is made to conserve this precious resource by installing water efficient devices in camp for both guests and staff. Water usage is carefully managed and monitored on a daily basis. In addition, Little Kulala will use a Natura three-stage advanced reverse osmosis filtration system to provide guests with chilled, high-quality still and

sparkling drinking water. This filter will significantly reduce bottled water usage, as well as the indirect impacts associated with the production of conventional bottled water. It also forms part of Wilderness Safaris’ waste management programme that aims to completely eliminate the use of plastic in its camps, encouraging local and farm-to-table products as well as more efficient packaging in the kitchens. In extremely remote camps such as Little Kulala, this also ensures the reduction of fossil fuels by decreasing the frequency of food transportation to and from the camp. “Minimising our footprint and maximising our conservation impact forms the cornerstone of our sustainability ethos, and we are proud of our long history and ongoing efforts at Little Kulala to preserve the biodiversity of the area. Back in 1996, when Wilderness Safaris first started operating here, the locale had previously been used for subsistence goat farming, and precious little


indigenous wildlife remained. We undertook a comprehensive and careful rehabilitation programme to restore the degraded land to its original habitat, removing fences to allow for the natural movement of wildlife and ensuring that endemic fauna and flora could thrive in the area once again. Today, the reserve encompasses 27 000 hectares of pristine wilderness, home to a range of fascinating arid-adapted and specialised wildlife”, says Alexandra. The Kulala Wilderness Reserve is situated in the Pro-Namib and adjoins the Namib Sand Sea – a UNESCO World Heritage Site. Found on the immediate eastern border of the Namib-Naukluft Park, the reserve is part of the Greater Sossusvlei-Namib Landscape, a collaborative conservation initiative, which today encompasses freehold land predominantly used for low-impact tourism. First opened at the end of 2019 on Le Chaland Beach, an untouched stretch of coastline on the south east corner of Mauritius, Anantara Iko Mauritius is the newest resort on the island. Guests can also navigate the terrain on a guided quad bike trip along the wild coastline and untouched beaches close to the resort or choose to reconnect and unwind at the Vortex, 30 minutes inland, feeling recharged by the earth’s Chakra point, magnifying the energy correlated to your body’s individual chakras. Anantara Iko Mauritius will be fully in line with WHO and local health authority regulations and is also introducing additional measures to ensure the highest standards of health and safety at all times including enhanced sanitation and disinfection throughout the property, in-room hygiene kits for guests, increased social
