Carlton Tower Jumeirah opens in Knightsbridge following complete redesign Jumeirah Group, the global luxury hospitality company is proud to announce that its European flagship hotel in the heart of London’s fashionable Knightsbridge, The Carlton Tower Jumeirah, will open its doors June 2021. Following a 18-month closure for refurbishment, the hotel has undergone the most extensive makeover in its history, at a cost of over £100 million. Every corner of the 17-story building has been redesigned, creating a new foyer and reception, 186 new bedrooms and suites reduced from 216 to offer larger accommodations, a new health club and spa with London’s largest naturally lit swimming pool, a restaurant, Lobby bar and lounge, ballroom and meetings rooms. Aaron Kaupp, General Manager of The Carlton Tower Jumeirah said: “We are thrilled to welcome back our valued guests following a significant investment and a complete renovation of the hotel with new rooms, restaurant, food and beverage offerings, spa and lobby entrance. This landmark, international opening is set against the backdrop of a pandemic,
6
which has seen the world and our beloved industry face extreme difficulty. The Carlton Tower Jumeirah will be a beacon of hope during a very difficult time for us all. We will be a place to be seen once more, a cornerstone for the local London community as well as a leader of luxury hospitality in the world.” Located overlooking the world-famous Sloane Street and key London landmarks, The Carlton Tower Jumeirah is a modern classic and sophisticated destination with a rich history. The hotel maintains its worldrenowned reputation for first class service and meticulous attention to detail, and has been reinvented for a new generation of discerning guests. The five-star property originally opened in 1961 as London’s first tower hotel and was celebrated for being the tallest in London at the time. The Carlton Tower was the epitome of glamour: the place to see and be seen, where international stars came to stay and Chelsea socialites flocked to play. Originally designed by Henry End, also responsible for the interiors of the Plaza Hotel in New York, the hotel is now transformed by esteemed
Hotels
interior and architecture design studio ‘1508 London’. The design practice has drawn on the hotel’s glamorous heritage and location to create a modern classic with a timeless, refined interior and sense of grandeur. Respectful of the building’s original, clean Modernist style, 1508 London has layered the eclectic mix of the architecture of the surrounding mansion blocks and homes, adding soft curved edges, pops of bright colour and organic inspired forms throughout. The hotel’s enviable position overlooking Cadogan Gardens, the private gardens designed in 1804, is further reflected throughout the hotel, reminding guests of their unique access to this covetable green space and tennis courts, normally only open to residents. Rooms and Suites The 186 beautifully appointed guest rooms have all been renovated to the highest standard, designed to offer a sense of tranquillity with an emphasis on light and space. Almost 50% of the keys at The Carlton Tower are suites, reflecting the hotel patrons’ historical preference for increased
space and longer stays. 87 of the rooms and suites have the fantastic benefit of a balcony, taking advantage of the stunning views across London. Combining a modernist aesthetic with minimal style, the accommodations feature textured wall panelling, furnishing in softer forms and accents in a warm colour palette influenced by British heritage hues in deep blue, greens and maroon as well as floor to ceiling marble bathrooms with toiletries by Grown Alchemist. Newly created is the Royal Suite, the hotel’s most exclusive residence featuring three bedrooms with the option to privatise the entire floor for the utmost in security and discretion. Arrival and Public Spaces Heralding its arrival and marking the hotel’s position as an important modernist building in London at its opening was the commissioning of a large external sculpture by Dame Elisabeth Frink (1930-1993), a sculptor at the beginning of her career in 1961 and now acknowledged as one of the most important English artists of her era. This sculpture has been retained and restored, a highlight of the ‘porte cochere’ entranceway that continues to the redesigned turntable glass doors. Through these doors the design echoes a classical British grand hall with the creation of a striking double-height space. Within it is suspended a bespoke fluted chandelier which incorporates an abstract interpretation of a chrysanthemum, inspired
by Cadogan Gardens’ history as a botanical garden. Accessed from the lobby is ‘The Chinoiserie’, the hotel’s much-loved all-day dining area, now transformed with an elegant and light design. With the innovative cake-o’clock concept serving Afternoon Tea all day, as well as a wide range of international favourites and an extensive beverage list this lounge will reclaim its rightful place in Knightsbridge’s social scene. Additionally, a newly created lobby bar offers a refined cocktail and spirits experience in glamorous surrounds. Al Mare Restaurant The hotel’s destination restaurant ‘Al Mare’ offers a sophisticated yet informal dining experience in the heart of vibrant and exclusive Knightsbridge. Al Mare, which translated from Italian means ‘at the sea’ offers light and modern Mediterranean dishes alongside a carefully curated wine list and artisanal cocktails. Al Mare allows a convivial, gastronomic experience, taking guests on a journey between the French Riviera and Northern Italy and features a theatre kitchen, private dining room and al fresco dining. The hotel’s Executive Chef and Al Mare’s Head Chef is Italian native Marco Calenzo who joined the hotel from Zuma where he was Executive Chef, prior to this Marco worked for Four Seasons Hotels internationally as well as the Lanesborough in London.

The Peak Fitness Club & Spa The hotel’s famous health club ‘The Peak Fitness Club & Spa’ is set across three floors and has been completely redesigned. New treatment rooms have been created at the Talise Spa on the second floor and the swimming pool area revitalized. This pool is London’s largest in a hotel with natural daylight and its bright interior is complemented by views through its double height glass ceiling, lined with poolside cabanas for relaxation. Additionally, The Peak offers studio classes, and a gym featuring bespoke ‘Technogym’ equipment on the ninth floor which overlooks The Peak’s light-filled cafe with breath-taking panoramic views across the capital. With its new design and features as well as a strictly limited membership, The Peak looks set to retake its position at the forefront of London’s luxury wellness world. COVID-19 Considerations Following government guidelines in response to the COVID-19 pandemic, The Carlton Tower Jumeirah will offer the impeccable service for which it is known, positioning the reception discreetly to one side, with thermal imaging cameras, to minimise service and congestion in the foyer. All bedrooms have windows that open to allow natural ventilation, and the hotel’s public spaces will adhere to regulations, including the appropriate PPE for restaurant and hotel personnel.

Allergens vs intolerances: Why businesses must understand the difference If you have a food allergy or intolerance, or your child does, chances are you’re forever finding yourself looking for the free-from section in the supermarket, scanning packaging labels to figure out if the contents might spark an allergic reaction, and asking restaurant staff “does this have eggs in it?”. Many people also find themselves confused when it comes to differentiating between allergens and intolerances. But there is one very important distinction; whereas one is more of an uncomfortable and albeit painful experience, the other can be deadly. Here, Kirstie Jones, health and safety expert at Navitas Safety, the single destination for digital food safety, explains why it is so important for restaurants and hotels to understand the difference between allergies and intolerances and what businesses should be doing to uphold customer food safety standards. Intolerances: all you need to know To put it simply, an intolerance is when people have difficulty digesting certain foods, which causes several uncomfortable and often painful side effects. 14
The most common food intolerances include; - Dairy - Gluten - Caffeine - Salicylates; often found in fruits, vegetables, spices, and nuts - Amines; found in a wide variety of foods - FODMAPs; a group of short-chain carbohydrates - Sulphites; preservatives often found in a variety of food and drink As well as foods, stress can also be a contributing factor to intolerances. However, the likes of irritable bowel syndrome and celiac disease are among the most common causes of food intolerances. Although not usually harmful, food intolerances tend to come with a variety of unpleasant side effects including bloating, cramps, irritability, skin rashes and itching. Whilst it isn’t a legal requirement for businesses such as hotels and restaurants to label foods for intolerances, we do recommend it.
The introduction of new allergen laws An allergy is entirely different to an intolerance. Whilst some symptoms may be relatively similar, allergies must be taken more seriously as they can be extremely dangerous and often, deadly. Food allergies occur when the body’s immune system reacts to certain foods, causing an allergic reaction. Currently, there are an estimated two million people in the UK living with a diagnosed food allergy. There are 14 key allergens that businesses must inform customers of; - Cereals containing gluten - Shellfish or Crustaceans - Eggs - Fish - Peanuts - Soya and Soybeans - Milk - Nuts - Celery and Celeriac
- Mustard - Sesame Seeds - Added sulphur dioxide and sulphites - Lupin - Molluscs Unlike intolerances, food allergies can cause rather severe reactions, including difficulty breathing, swelling and even a drop in blood pressure. Despite how mild an allergy may be, the potential consequences must not be taken lightly, and the food and hospitality industries are ramping things up when it comes to food safety. As of October 2021, the government will be introducing Natasha’s Law. Currently, businesses are required to provide a summary of the allergenic ingredients contained within a food rather than the entire ingredients list. However, with the impending Natasha’s Law labelling requirements, businesses will now have to include all ingredient information for the product, whether they are allergenic or not and on all pre-packed foods for direct sale (PPDS). Pre-packed food is fully or partly enclosed by packaging, cannot be altered without opening or changing the packaging in some way and is ready for sale to the consumer. Even if your item is not classed as PPDS, consider taking an extra security measure and apply allergen labels across all items. After all, there’s nothing wrong with being too careful.
As well as grab & go style operations, takeaways and fast-food restaurants will also need to comply as part of Natasha’s Law. Ultimately, the safety of consumers is paramount, and businesses must now do everything that they can to prevent allergic reactions and anaphylaxis caused by their foods and products. The first port of call to do so? Digital food safety. How businesses can keep up Following the introduction of Natasha’s Law, businesses must ensure that all PPDS products are labelled with a detailed description of the item alongside a full ingredients list, highlighting any of the 14 key allergens. Digital food safety and allergen management can aid businesses by digitally storing all allergen and ingredient information for menu items, as well as supplier information, in a single central destination that can be accessed anywhere and is great for tracking and traceability. It also removes the chance of human error by automatically creating labels based on the information with the system. A digital allergen management system also keeps a permanent record of all labels and creates an efficient and reliable service for businesses within the food and hospitality industries. Visit: www.navitas.eu.com/digitalfoodsafety to find out more about digital allergen management. 15

We’ve been locked up for way too long and we all want to get back out there and be wowed by life again. We want to taste life and all that it has to offer, experiment with excitement and adventure into the unknown. It’s true, it’s been a turbulent 18 months for us all. Brand new to the market and to be launched this summer, will be our single serve sachets, perfect for the home users, cafés, restaurants, gyms and hotels. With the expected increase of people embarking on staycations this year, we need to ask the question - are the same old selection of non-alcoholic drinks really going to cut the mustard?! Expectations have elevated, quality over quantity is what people are looking for and the Great British public are on the hunt for ‘health’ orientated products after nearly two years of being told that we’re all sick as a dog! Thankfully, at Blendsmiths we create delicious plant-based, vegan drinks that have many advantageous health and medicinal benefits, although we do blend with the emphasis of taste at the forefront of what we do. We have a healthy range of powders that can be used in a variety of ways. They can be made into hot drinks, iced beverages ready for those summer months, or the powder
can be used in milkshakes, ice cream, baking and even cooking. Our storage jars, point of sale material and ‘how to make’ video demonstrations, will help every stockist get the most out of our wonderful blends. But most importantly, by stocking our range, you will show your customers that you are ready to cater for the wider more adventurous audience and keep-up with the ever-evolving drinks scene. Our blends arrive in beautifully hand designed, recyclable bags that any establishment would be proud to display. We have committed ourselves to creating shared values with our suppliers. We ensure that the ingredients we source are produced without both human and animal suffering, with a strong emphasis of being cultivated and produced with minimum impact to the environment. As part of our ‘Better Together Program’, we also donate a % of revenue to Mustard Tree. This life-changing charity, from our home city of Manchester, supports and creates opportunities for communities in the local area, tackling both causes and consequences of poverty. 1881 Gin Distillery A Spring to Spirit Distillery in the heart of the Scottish borders... Our story begins in 1881, when Peebles Hydro, in the Scottish Borders opened its doors inviting city dwellers to escape to the country and “take the waters”. In other words to indulge in trendy treatments of the time. From that day to this, water is at the heart of Peebles Hydro. The source of our natural spring water supply then and now, is Shieldgreen in the hills just behind us. It really is from Spring to Spirit. Whilst we continue to welcome guests, our story now moves on to a new chapter featuring our water - and we can think of no better ingredient for the 1881 Gin range. Two years planning and some huge learning curves along the way - we’re open for business. Born at the end of 2019, we combine our lovely spring water with top quality botanicals, many from our doorstep in the hills and forests around us. Our location is in the hotel in what was originally the swimming pool – it’s that water connection again. Website: 1881distillery.com Stand: T159

Integration is the way forward The value of technology is rarely about a single product, but instead bringing multiple technologies into the whole seamlessly integrated customer experience AI is fast becoming an integral part of our lives. Within the hospitality sector the use of AI is still in its infancy, but we are beginning to see practical applications of this technology that will have real impact and benefits for hospitality providers and customers. As with any new technology, there are several key considerations that restrict the commercial application of AI. These include: cost, customer acceptance, security and Return on Investment (ROI). It would be fair to say that until now, a cashierless, vision-based AI checkout was limited by these restrictions. However, through steadfast integration with the full Lolly digital commerce offering, we have developed a solution that makes AI a reality for hospitality. In this article, we will review how end-to-end integration provides the answer when it comes to issues regarding the commercial application of an automated checkout. We will also highlight the benefits of integration for customers and hospitality providers - that go far beyond the point of sale. How does integration make AI and automated checkout a reality? Previously the commercial application of automated checkouts was limited by the fact that no provider was offering payment, management and receipting within one single service. This therefore meant transactions could not be completed securely or quickly, in a way that would have measurable benefits for either the hospitality provider or customer. Creating a closed loop payment environment makes the automated checkout completely seamless for all parties.
How does AI come into it? Through a simple app sign up, hospitality customers can top-up credit or connect their card to their account. In the canteen, cafeteria or restaurant, they can select their packaged or fresh items and bring their tray to the AI kiosk. Items placed on the kiosk will be scanned by visionbased technology powered by AI, and payment then authorised by the customer scanning their in-app QR code, or RFID enabled security badge. In order to deliver an almost instantaneous checkout, our own Snapserve AI kiosk uses delayed product recognition and payment, thereby significantly speeding up queue throughput time. Delayed recognition works to ensure 100% accuracy, without complicated setup, ongoing operational burden, or the requirement for pre-training. The image captured by the kiosk at checkout is reviewed by AI to identify the products purchased and take payment accordingly. Human annotation processes the first few transactions and is used at the beginning of the loop to identify products when recognition is low, but as the AI is fed more data (in the form of image samples of menu items placed on the kiosk), it will develop confidence, so supervision is gradually removed. Customers can move on quickly to enjoy their meal once their transaction has been authorised, which can take just three seconds. Their receipt is then sent in-app (including visuals of their menu items), following the delayed recognition process and allows the customer to review the payment taken when convenient for them. What benefits does integration have for hospitality providers and customers? Affordable As the whole process is brought into one loop, under one provider, costs are brought down. ROI is high, due to reduced queuing and faster checkout times (fueled by delayed payment and receipting), enabling greater numbers of customers to be served, whilst cashier costs and wastage can be reduced. Ease of management The system is immediately operational with 100% accuracy. As everything is easily managed via the integrated app system, minimal training is required for staff.
30
EPOS
Engaging with only one provider brings streamlined service and ensures efficiency. Integration with the back-office keeps things simple for stock management. Secure The whole AI and app network utilises a secure, cloud-based server to store data. Reducing costs/wastage No shrinkage, as items placed on the kiosk will be billed correctly. Back-office integration with the kiosk Point of Sale (POS) means stock management will be accurate and easy. Removing cashiers from the transaction process reduces costs or frees up staff time to focus on adding more value to the customer experience. Hygienic Removing the touchscreen and human contact elements at the checkout helps improve hygiene and social distancing. Speed Queuing can be eliminated, so corporate caterers and hospitality can provide faster, better customer service, particularly important for busy staff in a large facility. Accessible and engaging Customers are increasingly demanding of a seamless experience. Whether online, mobile ordering, or in-store, customer expectations are of a fast, simple, error-free transaction. Automated checkout meets and exceeds these high expectations. The process is very simple and requires little education or time investment on the customers’ part to set up. Beyond the transaction, the integration which comes as a part of automated checkout, improves the customer experience. Loyalty programmes are linked with the customer account so their points, discounts and offers are automatically applied. With top-up and receipts provided in-app, customers can also manage their money and keep track of their orders. Future technology ceases to become futuristic when it is delivered with relevance. When brought to market at the right time, with issues relating to accessibility, security, and affordability addressed, technology becomes beneficial and relevant. The value of technology is no longer in a single product, but in the whole seamlessly integrated customer experience. For more information please visit: www.itslolly.com or call 0800 038 5389

Snowflake’s artisan luxury gelato reaches The Middle East Already satisfying the UK’s yearning for sweet temptations, using only the finest and 100% natural ingredients, the brand collaborated with a franchisee to open a first Snowflake store in The Middle East, within the salubrious Mall of Arabia in Jeddah. Having previously worked with Snowflake to develop its concept and implement an expansion plan that could be fuelled by its existing success, rpa:group was engaged to bring the new concept to life for this store and to evolve it to captivate the local market. Drawing from traditional Italian and art deco themes, that are a genteel nod to the origin of the product, yet infused with contemporary influences, the new store focuses heavily on creating a sumptuous and evocative experience for its customers. Every fixture and fitting has been carefully considered to reflect the quality of the brand offering. To access the store, customers pass beneath an impressive series of pink pergolas, framed with blossom, and through a large seating area, surrounded by a pink picket fence.
36
At the entrance, customers are greeted with the ‘WOW wall’ with bright neon signage and a quintessentially British telephone box, rebranded in ‘Snowflake’ pink, and a nod to the brand’s birthplace in London. This area allows customers to take their photos in the telephone booth with their sweet treat and upload them to their social media platforms, tagging the brand, which, in turn, optimises Snowflake’s presence online. Within the store, the wide and welcoming counter is divided into hot and cold areas by the till point and order station. In the cold area, the splendidly colourful gelato draws the eye from a colourful and abundant display case, while from the hot area, customers can watch the theatre of the waffle and crepe making. The feeling of being participatory to the entire process is further enhanced by a “Snow wall” along one side of the store, with vision through to the Gelato Lab, where customers get a peek behind the scenes of ‘Snowflake Luxury Gelato’. Behind the counter, an aperture featuring ‘Mondrian’ style brass pigeonhole shelving for merchandising and
Interior Design & Decor
planters also allows visibility to the Gelato Lab. Having such integrated access to the product creation process not only provides entertainment, but serves to enhance brand engagement and credibility. The overall palette is a combination of dusky pinks and warm greys, used throughout and in the wall finishes and geometrically pattered tiles. Marble effect counter tops reflect Italian luxury and cleanliness, while softening effects come from wooden elements with the use of linear slats and the oak chevron flooring. Antique brushed brass adds reflective texture for skirtings and detailing, as well as framing for protective screens. A vast array of pendant lighting above the counter illuminates the product. The all important ‘Insta Moment ’ comes from a customer perch bar, which is set beneath a beautiful pink blossom tree entwined with cascading pendant lights. This forms an eye - catching feature and a great focal point of the store. www.therpagroup.com

Halo capsules are designed to provide consumers with a sustainable capsule alternative filled with specialty coffees of the highest quality; hence our promise to deliver the “World’s Best Coffees, In a Way That’s Best For The World.”
As a growing industry, the levels of waste being created will not be brought under control unless the priorities of capsule manufacturers shift and sustainable materials become more widely utilised. Halo’s commitment to compostability has been the driving force behind our mission to rid the world of polluting plastic and aluminium capsules.
Even though a large proportion of capsules can be recycled, the industry average rate of recycling is only 20%. This means that nearly 60 billion capsules have ended up in landfills and in our oceans. Even when they are recycled, the carbon footprint of recyclable pods can be an issue. This is because coffee capsules produced by industry leaders contain materials like silicone, plastic and aluminium. These materials require specialist facilities to remove and process each individual component. Consequently, this adds to the

We set out to challenge conventional methods of pod production by using a sustainable alternative. Halo capsules address the negative environmental effects of capsule production by utilising a byproduct of the sugar cane industry to create a home-compostable pod. solution. Unlike industrially compostable materials, home compostable alternatives degrade quickly in naturally occurring environments without the assistance of specialised machinery and specific conditions to aid the degradation process. Home compostable products degrade easily regardless of where they are disposed of, such as in a garden, food bin or home compost. With home compostable products, there is no requirement for additional transport to waste management facilities or energy to power machinery, factors which increase the product’s overall carbon footprint post-use. Halo capsules can degrade in as little as 28 days in a home compost and will break down into natural fertiliser. Our capsules support circular economy by breaking down into organic components that re-enter ecological processes. To find out more visit: www.halo.coffee or contact hello@halo.coffee

217 designer bedrooms, an osteria offering a mixture of Mama’s signature flavours and traditional Roman cuisine, a rooftop restaurant and bar with breathtaking views of the Eternal City, and for the first time ever for the Mama Shelter group, Mama Baths: a spa with indoor pool, sauna and Hammam room. Close to the famous Avenida da Liberdade, Mama Lisboa is arriving in the heart of Lisbon in November. Encapsulating a playful and edgy design, the hotel will house 130 bedrooms and a stunning rooftop open for guests to eat and drink whilst enjoying a bird’s-eye view of Lisbon and the Tagus. An all-day restaurant, with its interior patio and the brick oven pizzeria for locals to take away Mama’s famous pizzas, will also be available. Mama Shelter’s third Parisian address, Mama Paris La Défense will open in the city’s lively finance district in November, welcoming business guests and locals alike. With 211 bedrooms, highlights include two all-day restaurants, a sports bar, a coffee shop and an arcade room. A trademark rooftop with a remarkable view on all Paris and its monuments will be available. Mama Shelter won’t stop there, as its last two openings of the year take us to the Orient: Mama Bahrain and Mama Dubai. Bringing its affordable hospitality and edgy style to Dubai’s trendy business bay area, Mama Dubai will house 197 bedrooms and be perfectly located: just a stone’s throw from the desert, sea water sports, cultural activities and shopping centres. The idea of a resort in the middle of the city will take inspiration from the Trigano family origins: founders of the Mama Shelter group and co-founders of Club Med. In addition, Mama Bahrain will become a new social centre in Manama’s financial district, well-known for its delicious food and social atmosphere. Encompassing views of glass towers and skyscrapers shimmering over the emerald green waters and lush palm groves, Mama Bahrain will offer 160 colourful and vibrant bedrooms. Mama Shelter looks forward to re-welcoming loyal guests, and welcoming new travellers, to celebrate moments of sharing, love and good Mama vibes! All Mama Shelter hotels and restaurants will adhere to enhanced security and cleaning protocols measured by Bureau Véritas. MamaShelter.com - #MamaShelter @MamaShelter
