Drawing upon Lady Northampton’s professional experience as a Psychotherapist, Counsellor and Yoga Teacher; as well as their joint personal lifestyle centred around physical and mental wellbeing, they have created a totally new hotel concept that marries mindfulness and activity linked closely to nature. This connection will be at the core, with The Falcon’s surrounding restorative landscape forming the inspiration for the guest experience, cuisine and interior design. Guests can unwind in peace
whilst benefiting from special access to the nearby Castle Ashby Gardens (designed by Capability Brown) and a multitude of wellbeing and meditative activities including wild swimming, yoga, cycling and designated private nature walks. With health and wellbeing of paramount importance at The Falcon, all government guidelines and safety procedures in regard to protecting the public and staff from Covid-19 will be followed meticulously. From preserving the earth energy lines to channel positive energy through the site, to designing a programme of activities for guests to engage with the Castle Ashby community and village life; together with General Manager Douglas Cooper they have consciously considered every aspect. Lord and Lady Northampton have developed a series of podcasts with the aim of enhancing guest experience and bringing a taste of The Falcon to people from afar. Carefully curated content will include interviews with themselves alongside experts connected to them through the Castle Ashby estate and their personal journeys with wellbeing. As well as eight calm and comfortable bedrooms which are located in the main hotel there are a further 14 rooms set apart in the adjacent Cottages.

The bedrooms in the Cottages vary in size and design but are all filled with natural light and a sense of calm. Some have the ability to be taken individually or together depending on the size of the group and the space required. The bedrooms in the main hotel are all unique. Bedroom 5 has a private terrace and wonderful views down to the fishing lakes and ivy laden woodland beyond. A roll top bathtub, period features, and a palette inspired by the surrounding countryside complete the restorative experience. Under the direction of Chef Mark Lawton, the hotel’s Restaurant ‘Eyas’ (meaning a young Falcon learning to fly) will have 56 covers inside with a further 32 on a large sun-filled terrace, and a private dining room within the restaurant for 16 can be requested. The menu inspiration comes from the local Northamptonshire landscape and all that it provides. The kitchen will work hand-in-hand with local farmers, estate gamekeepers and nurseries, creating a menu that is gentle on carbon footprint and sensitive to its surroundings, wherever possible. Lord Northampton says, “We hope to give people a new culinary experience. It is not so much about what will be on the menu but why it is on the menu.
Wherever possible, the food will be organic and focused around produce with a nutritious value.” The East Wing is where afternoon tea and cocktails happen, for those looking to indulge. It can be privatised for weddings and events, with stunning floor-to-ceiling windows and views over the rolling landscape. The room leads directly on to the picturesque East Wing Terrace which overlooks a triple-tier lawn, an orchard, woods seasonally scattered with bluebells and tulips. Marquees can also be constructed on the lawn. The quaint Cellar Bar hidden beneath will hold up to 30 people providing guests and locals with a cosy bolthole, as it has done for generations. The Falcon’s juice bar further connects nature and healthfulness by providing fresh, plant-based juices for guests and locals, that offer the power to re-energise, rebalance, and heal. (Currently closed due to Covid-19 restrictions, the juice bar will re-open when safe to do so.) Bicycles and a boot room stocked with Hunter wellies will enable guests of The Falcon to fully immerse themselves in the beauty of the countryside and embrace the local community. Visitors will benefit from being within arm’s reach of the historical Castle Ashby Gardens itself. Walking, running and mindfulness routes taking you through ancient woodland have been developed by Lord and Lady Northampton and a map will be available to all guests. Staff are wholly dedicated and trained to provide a thoughtful, attentive and bespoke approach to service at The Falcon, considering every aspect of guests’ needs, safety and wellbeing. Prior to their stay they will be consulted on what they would like to take away from the trip. With this in mind, they will be guided towards online meditations, specific activities available to them, from pottery and art classes to wild swimming and culinary experiences. Through a programme of talks and activities that explore mind-body connections, guests and the local community are encouraged to go on their own journey of discovery. As an extension of this, The Falcon have partnered with the renowned holistic wellness retreats, Silver Linings, to offer their first UK based retreat in January 2021. A stand-alone Wellness Centre is also due to open in 2021. The interior design of The Falcon has been overseen by Interior Designer and personal friend of Lord and Lady Northampton, Jackie Blakey. Jackie sought to create an environment where guests can connect deeply with nature whilst honouring the legacy of the properties history and origins. She selected an earthy colour palette comprising of three main colours sienna, ochre and green, in various comforting tones. The colours have a strong influence on promoting a sense of rest and renewal, green being the colour most associated with growth, rebirth and renewal and a great balancer of the heart and the emotions. A connection to nature is visible throughout, seen in botanical wallpapers, petrified log furniture and wooden effect tiles. All the finishes are natural with materials such as wood,
stone, wool and leather, marking again a connection with the outdoors. Interesting items of furniture such as Yeti chairs and Yoga floor lamps add character, making each space completely unique. Jackie Blakey says, “The interior design was created to provoke the senses and provide an atmosphere where guests have a different experience from any other hotel. Every bedroom will have a different aesthetic - there is little uniformity and symmetry. Beautiful fabrics and textured wallpapers have been used to cocoon guests and make them feel able to sit back and take some time out from their busy lives.” The Castle Ashby archive provided a source for artworks with prints of drawings by Capability Brown being used to provide a connection to the historical setting. In addition, two main artists’ works are featured: Aigana Gali has produced two large pieces of work that are thought provoking, with a spiritual and ethereal feel. ‘Tomris’ holds centre stage in ‘Eyas’ and will be hung on a distressed bronze-coloured venetian plastered wall, providing the perfect backdrop. The other piece by Aigana will feature in the East Wing. Rachel Dein, who creates botanical works of art set in concrete and plaster
was commissioned to create seven bespoke pieces using plants from around The Falcon garden. Considering each of the senses, Lord and Lady Northampton have also selected music to make guests feel good. Lady Northampton has also worked with aromatherapists to select oils and fragrances, designed to both invigorate and aid relaxation and calm. Douglas Cooper says, “The Falcon is a very special property in the beautiful Northamptonshire countryside. A place to pause, unwind, contemplate nature and reconnect with yourself. We want our guests to feel like they are at home, relaxed and content with great food, high quality accommodation and a team that feel like family. The greatest reward for us is to create memorable guest experiences that exceed customer expectations.” Lady Northampton says: “I would love people locally and from all over the world to come and enjoy The Falcon. I would like to invite them to experience something new that represents our love of nature, wellbeing and many of the other things we enjoy.” Lord Northampton says: “I would like guests to come away having discovered something different from their usual experience of life. Whether it is listening to a lecture or experiencing the beauty and sacredness of nature first-hand; attending a workshop or walking round the formal gardens, I want them to have an epiphany moment and see an alternative way of being to the one they are used to. If they go away having experienced that then we will have succeeded!” The Falcon is a long standing and recognised landmark in the Castle Ashby area and the county of Northamptonshire. The idyllic village, which dates back to the 16th Century, is less than a two-hour drive from Central London or accessible by train to Northampton or Wellingborough stations with a quick journey time of less than an hour from Euston or St Pancras. Navigating EPOS Technology Decision Making EPOS systems provide businesses
with the tools to monitor and control a range of Hospitality environments from restaurants and bars, to pop-up events. With many EPOS options on the market, choosing the right system for your hospitality business can feel like an overwhelming task especially if you are looking to move towards Mobile, Tablet or Smart Device base software platforms for added flexibility. Double Dutch launches innovative cocktail soda range

Master distiller fulfils lifelong dream with new gin launch
Tristan Jørgensen’s first craft gin is now on sale. Massingberd-Mundy Distillery, based in the Lincolnshire Wolds has launched its first artisan craft gin. Produced and bottled on the 3,000 acre South Ormsby Estate in the Lincolnshire Wolds, Burrell’s Dry Gin is named after local historical figure, Charles Burrell Massingberd. The gin has been created by expert distiller, Tristan Jørgensen who’s previously worked for internationally renowned drinks company Laphroaig Distillery as well as craft distillers, Chase Distillery, Newton House Gin and Avalon Distillery. Despite his extensive experience, Burrell’s Dry Gin will be the first gin Tristan has created from scratch at his own distillery. Head Distiller of Massingberd-Mundy Distillery, Tristan Jørgensen said: “Throughout my career, I’ve helped to produce a wide range of craft gins, but this is certainly my proudest achievement to date. It’s a big moment for me and my family.”

Don’t delay combi-cleaning, warns Rational
Market leader says kitchen staff deferring cleaning routines is leading to increased service call outs Rational is warning that it’s essential
for kitchen staff to follow the cleaning procedures recommended by their machine’s manufacturer in order to keep combi steamers operating safely and efficiently. The market-leader says that, in the wake of the COVID-19 pandemic, some operators are choosing to delay cleaning in order to save money. “We are already seeing an increase in service call-outs arising from this,” says Trevor Lath, national service director of Rational UK. “It’s a problem that will be affecting all combi steamer brands,” he adds. Typically combi steamers should be cleaned every day as part of the kitchen routine. Most quality machines have self-cleaning programs that make what would be a time consuming and unpleasant chore effortless. On Rational’s new iCombi Pro the iCareSystem tells operators when they need to run the programme to clean the combi, so it minimises the use of chemicals – because it only asks for a clean when it’s necessary. The iCareSystem also deals with scale, so there’s no need for a separate water treatment system, or for expensive professional descaling. “The problem is that some operators are ignoring the
iCareSystem’s alerts, on the assumption that delaying a clean and descale will save them money and won’t really do any harm,” says Lath. “This is not the case.” Deferring cleaning routines will lead to the build-up of dirt and scale, which may compromise cooking results, increase energy consumption and running costs and ultimately lead to equipment breakdown. If a descale becomes necessary it could cost hundreds of pounds. There are additional risks: the Rational detergent cleaning tablets don’t just clean and descale the machine, they also break down fats and grease, preventing drains from blocking and subsequent kitchen floods. “At the very least, you’re looking at unwanted costs and unwanted downtime,” says Lath. “Worst case scenario, you could block drains, flood the kitchen and damage the appliance permanently.” By making the equipment unsafe, not cleaning the combi may even compromise HACCP. “The answer is simple,” says Lath. “Follow the machine’s alerts, or the manufacturer’s guidelines, and run the cleaning program when it’s required.”

At the same time it reduces running costs. The option of cooking different products at the same time in a combi steamer isn’t new, but iProductionManager takes the whole concept to a higher level. On the other hand, chefs may want each food cooked as quickly as possible. In this case, food is loaded onto the different shelves and iProductionManager simply lets staff know when each shelf ’s load is ready. As one shelf ’s food is being taken out, iProductionManager automatically compensates for the loss of temperature due to the door opening, and recalculates the cooking times for food on all the other shelves. Energy efficiency is increasingly important and iProductionManager can help here, too, by creating the most energy efficient schedule for multiple different foods. The iCombi control panel makes everything simple. Once the chefs have selected what type of schedule they want – synchronised, speedy or efficient – they simply drag the relevant icon, such as sausages, onto the appropriate shelf on the panel, so the system knows which food is where and can monitor it accordingly. With iProductionManager chefs can even split shelves, so that two different foods can be cooked on the same shelf, with the system monitoring each to ensure they are perfectly cooked.

region. These final honours, including the Great Taste 2020 Supreme Champion, will be announced at the virtual Great Taste Golden Fork awards event, set to take place in October. Recognised as a stamp of excellence among consumers and retailers alike, Great Taste, organised by the Guild of Fine Food, values taste above all else, with no regard for branding or packaging. Whether it is cake, coffee, kippers or kombucha being judged, all products are removed from their packaging before being tasted. The judges then savour, confer and re-taste to decide which products are worthy of a 1-, 2- or 3-star award. This year’s winners have been found through a combination of remote judging and socially distanced judging sessions, after the lockdown began just one week into the schedule. This necessitated a swift and comprehensive reinvention of the Great Taste process to ensure that robust judging standards were maintained and the quality of
feedback was not compromised, all in time to provide a muchneeded boost for food and drink producers during the all-important Christmas period. The panel of judges included; cook, writer and champion of sustainable food, Melissa Hemsley, cook, writer, stylist and voice of modern vegetarian cooking, Anna Jones, celebrated Spanish chef, José Pizarro, Kavi Thakrar from Dishoom, food writer and cook, Xanthe Clay, and baker and author, Martha Collison, as well as food buyers from Selfridges, Fortnum & Mason and Waitrose. These esteemed palates have together tasted and re-judged the 3-star winners to finally agree on the Golden Fork Trophy winners and the Great Taste 2020 Supreme Champion. Facts and figures about Great Taste 2020: • Great Taste is widely acknowledged as the most respected food accreditation scheme for artisan and speciality food producers • A record breaking 12,777 different products were entered in 2020 • Entries were sent in from 106 different countries, including Estonia, Greece, Italy, Japan, Latvia, Madagascar, the Philippines, Portugal, Singapore, Spain, Switzerland, the USA and Vietnam • 144 judges took part this year. Less than usual, due to the pandemic and to ensure social distancing in both locations. However, the same number of judging layers were applied, to maintain the rigorous and robust process. Judges included the most demanding palates, belonging to food critics, chefs, restaurateurs, retail buyers, cooks, producers and a host of food writers, journalists and social media influencers • Judging took place over a total of 14 weeks. Having begun as planned in March 2020, the process was then halted due to COVID-19. No plastic plates or cutlery were used during the judging rounds, reducing plastic waste by almost 100%. The Guild of Fine Food also donates surplus computer equipment, used to record the judges’ comments, to community-based projects across the UK, which are then refurbished and used to facilitate after school clubs and many other initiatives designed to support underprivileged families. Smoke & Salt’s ethos celebrates the ancient techniques of smoking, curing and preserving, combined with bold, global flavours and modern influences. “Our cuisine is an awesome reflection, representation and re-imagination of the modern dining scene in London, bridging ancient food cultures and traditions.” Says Co-Founders Aaron and Remi Remi and Aaron are famed for innovation, creativity and skill
using unusual ingredients that have either been foraged or supplied by independent producers to create sensational and seasonal dishes and drink. Their opening menu includes House Charcuterie (£6) smoked and preserved on the premises; Smoked Chalkstream Trout - dehydrated tomato and blackberry vinegar (£6); Roasted Pheasant Breast woodland mushrooms, porcini rice cracker (£15); and famed Crispy New Potatoes chimichurri, gorgonzola, (add beef heart… supp.3) (£5) has of course made it to their first menu in Tooting. For a traditional cheese course, Aaron and Remi have instead imagined a fascinating alternative of Savoury Pastel de Nata aged Cornish gouda, pickled onion (£4).
