Blackened Pork Chops

(and Those Special Nudges)

Life is much more fun if we adapt.

Before we get to the recipe though, I wanted to talk a little bit about an experience I had recently with nudges. :) We all get them from time to time and I’m sure I’m not the only one who stands in awe of what happens when we follow them – those little nudges in our hearts to act, to do something. Say a kind word, approach someone with a hug, or simply open our eyes and take notice. A month or so ago my youngest, Katy Rose, decided she wanted to go into the church service with us instead of her usual Sunday school. My husband started with our usual “But Katy Rose, you’ll miss your friends!” but I felt a sense of let it be and shook my head discreetly at my husband. “It’s fine, let her come with us.” My son went on to his class because it is ultimately cool since they let them read the bible on their ipods (amazing how the tiniest concessions can get kids fired up about the things you want them fired up about) and the three of us remaining headed into “big church”.

Ingredients 4 - 3/4 to 1” thick, boneless pork chops (about 2 pounds) 1 teaspoon salt 1 teaspoon garlic powder

We have a great church and an amazing music staff. As we sing, the air just feels charged with joy and hope and a spirit of wecandothisness (new word, my gift to you, no charge ~winks~). I was holding Katy Rose’s hand as we lightly swung our arms to the music. She turned to face me and I smiled down at her and took her other hand, both of us singing and grinning into each other’s eyes as we swung our arms back and forth to the beat. I felt a nudge. Get down there with her. Katy was looking up at me with such love in her eyes, the same look I gave my mother at her age. That look that says “You are who I am watching. You are who I want to be” and I got down on my knees so that we were the same height, still holding her hands as we sang and swung our arms facing one another.

Katy’s smile was so big it just about filled up her face and I couldn’t help but match it as I knelt in front of my little girl. Once the song was over I stood again and we turned our attention back to the service as we took our seats. I didn’t think too much more about it until last week when Katy came and got into bed with me early in the morning and put her arms around me.

“Mama, you remember that time when you got down on your knees so we were the same height and we held hands and sang together in church?”

1 teaspoon ground cumin 1 teaspoon cayenne pepper 1 teaspoon paprika ½ cup butter, melted

“Sure do” I said. “Mama, that made me so happy my heart cried.” She sniffed and I looked down to see tears pooling in her little seven year old eyes as she smiled up at me “and every time I think of it my heart just gets that happy all over again.” I pulled her close and held her. “I know just how you feel Katy. So many times you and Brady make my heart feel that exact same way.”

It was a moment that she caught in her heart, like a photograph of a loved one we always keep close. We never know when moments like this will happen, but seeing how much it meant to my baby, I’m so grateful for the nudge that day. Instructions 1. In a large skillet, add vegetable oil to a seasoning mixture before placing in hot oil. depth of ¼ inch and place over medium heat while you prepare the chops. 4. Repeat with remaining chops. Cook in oil until each side is dark and crusty, about 3-4 2. In a pie plate or shallow bowl, combine minutes, then turn and repeat with opposite all seasonings. side and continue cooking until pork is no longer pink in the center, another 4-5 minutes. 3. In a separate pie plate or shallow bowl, pour melted butter. Dredge each pork chops in 5. Remove cooked pork chops and allow to butter on both sides, then press each side into drain on paper towel lined plate. Serve hot. This recipe works just as well for chicken as it does pork, but blackened chicken will take a back seat when you pat this spicy rub on a juicy, thick cut, boneless pork chop.

Wild Pigs; A parable and a fact. One day while in class at a large college, a professor noticed one young man, an exchange student, who kept rubbing his back and stretching as if his back hurt. The professor asked the young man what was the matter? The student told him he had a bullet lodged in his back. He had been shot while fighting communists in his native country who were trying to overthrow his country's government and install a new communist regime. In the midst of his story, the student looked at the professor and asked a strange question, "Do you know how to catch wild pigs?" The professor thought it was a joke and asked for the punch line. The young man assured the professor that his question was no joke and went on to say. "You catch wild pigs by finding a suitable place in the woods and putting corn on the ground. The pigs find it and begin to come every day to eat the free corn. When they are used to coming every day, you put a fence down one side of the place where they are used to coming. When they get used to the fence, they begin to eat the corn again and you put up another side of the fence. They get used to that and start to eat again. You continue until you have all four sides of the fence up with a gate in the last side. The pigs, which are now used to and want the free corn, eventually begin to come through the gate to get to the free corn. When all the pigs get inside, you slam the gate and catch the whole herd. Suddenly the wild pigs have lost their freedom. They are confused and run around inside the fence, but soon they go back to eating the free corn. They are so used to it that they have forgotten how to forage in the woods for themselves, so they accept their captivity." The young man then told the professor that is exactly what he sees happening in America. The government keeps pushing us toward Communism/Socialism and keeps spreading the free corn out in the form of programs such as supplemental income, tax credit for unearned income, tax exemptions, tobacco subsidies, welfare entitlements, medicine, drugs, etc., while we continually lose our freedoms, just a little at a time. Food opens the door to the rest of the world and makes room for perspective, one of the best gifts we can offer our family. Our dinner table can become a pulpit where we open God’s Word and compare and contrast and consider truth with a verse here and Bible story there. It’s not about quantity (and with kids, it’s often not about quality), it’s about consistency. Breaking Holy Bread at the table is a significant way to say to our children– this matters as much as eating. It’s imperfect and messy, and it’s important. It’s life.

The Table is Where We Talk About Current Issues (or the latest kid’s movie) | Gathering around the table affords us the chance to talk. Sometimes it’s goofy and silly and seemingly insignificant. (Don’t believe that.) But some nights, it’s family communion where we connect with each other and God on a deep level. When we make this time a priority, we make room for this to happen. Talking about our day at school and work one day leads into praying about the bully on the playground and the stress of a tough boss on another. When we linger at the table and lay our thoughts and opinions on it, it becomes the perfect place to talk about what’s going on in our world.

Murder is okay inside the womb, but not out. We have freedom to live however we want, unless our religious convictions make someone uncomfortable. “God’s word is truth.” (John 17:17) If we explain to our children what the Bible says about right from wrong, we are teaching them truth that doesn’t change.

The Biggest Small Town LOCAL NEWS NEWS in Texas By Susan Skains

They genuinely care about their customers and their community.

I grew up in many cities, towns and states. My mother was a single mom raising my sister and me to the best of her ability. We moved and changed schools frequently, dependent on where her latest job would take us. We didn’t make friends easily and relationships were often short-lived and never permanent. I didn’t know this was unusual. From grade school through high school, I went to eight different schools in almost as many towns. I don’t remember living anywhere for more than two or three years. I eventually married and my husband and I started looking for a place to build a home in Galveston County. My husband’s sister and her family lived in Santa Fe and told us about some property for sale on her street. We did our research, really liked the area, bought the property and started building our dream house. My love affair with Santa Fe began almost immediately during our home-building process. The first people we met were to eventually become our best friends. We had just built our foundation and needed to water it to help the concrete cure. This couple lived across the street and offered to let us to hook up our hoses to their water spigot and run it across the road. They told us to use as much of their water as we wanted or needed. They didn’t even know us! That was the first of many kindnesses they showed us and other neighbors were just as generous. We used the local hardware store, "Galco Hardware" on an almost daily basis while we were building. We came to know the couple that own the store on a first-name basis. They are the nicest, most Christian and caring people in town. Even now, 13 years later, I cannot go into the hardware store without them taking the time to ask me how my fruit trees are growing, or how my dogs or husband are.

When it came time for us to have landscaping planted around the house, I contacted a local nursery in the neighborhood. Jimbo’s was recommended by many people in town, so I called them. They came out and recommended plants and an affordable landscaping plan. They did a phenomenal job. They stayed and had iced tea with us and told us about their family and asked about ours. The following spring, they called to see if I needed help with the flower beds. When I told them I was short on funds, they came out and did the work anyway and asked me to just pay them as soon as I was able to. This type of service was totally unknown to me! They trusted me <gasp>! Every year they call me just to see if I need advice on any of my plants and to see how everything is growing. They love what they do and they treat their customers like family. When I decided to raise a few cows, I was very ignorant about cattle and needed help and advice. Luckily I had Tibaldo’s Feed Store in Santa Fe to educate me and help me through the process. Every week that I would show up for feed, the family that runs the store would graciously talk me through Continued on Page 35.

This way they covered and protected themselves; but the quills of each one wounded their closest companions. After awhile, they decided to distance themselves one from the other and they began to die, alone and frozen. They had to make a choice: either accept the quills of their companions or disappear from the earth.

So many more people deserve an honorable mention in this article though. Every citizen that waves at me driving down the road (daily!), to the convenience store, Amigo Mart, at the beginning of my neighborhood that offers me a free bag of ice every time I buy a bunch of sodas for a BBQ. And I cannot fail to recognize the unknown older gentleman that sits on his front porch on Birch Street and waves at every single car that passes, every single day, sunshine or rain. When I’ve had a bad day at work, this man smiles and waves at me and makes the world right again.

We had been living in our home for several years through one of the worst droughts Texas had ever seen. Our beautiful pond had been dry for 4 years. When the rains finally came back we had local area flooding. The ditches were running over, yet the pond was not seeing any significant rise. My husband had an idea to pump the water from the ditches into our pond. We needed several lengths of fire hose (more Finally, I want to tell you than we had) to make the distance about Santa Fe’s Finest. Then your German shepherd jumped on the outside of the car and pinned us in and wouldn’t let us out. We finally got the Boxer out of the car, but you will have to come down to the station to get your license plate!”

I laughed all the way from my house to the station! Now, every time I see one of Santa Fe’s Finest around town, I wave like crazy. I feel like I know every one of them, and they are here to protect and serve me personally. I feel like they are family. I’ve mentioned to my husband several times over the past dozen years that we’ve lived here, how lucky we are to have chosen Santa Fe as the place to settle down, build our house, raise our family, and retire. He just humors me. He was raised in a small community and went to the same schools his whole life, and has friends he’s known since childhood. He’s never felt the absence (and then fulfillment) of community and fellowship that I have felt since living here. I feel like I have finally found "My Place" and that place is Santa Fe, Texas. Santa Fe is small by most standards, but it has everything and everyone we need. We are smack dab between Houston and Galveston as the crow flies. We have great weather, beautiful sunrises and sunsets. We can still see the stars at night, unlike bigger cities that have lights that can be seen from space. We still have fireflies. We still have hay rides for the kids and Little League is the biggest sport in town. This town puts God, family and friends first. Our children and our animals are the most important things to us. I regret that I wasn’t born and raised here and I am jealous of my friends and neighbors that were. I wish I knew more people in town and it wasn’t just “strangers” waving to me all the time. I wish that I had been a Fighting Indian and not just a supporter of the next generation of the Green and Gold. Colt King Cobra The Indian and Southeast Asian King Cobra is one of the world’s longest venomous snakes. It’s been said that this deadly snake can attack and strike the entire length of its body. Everyone is familiar with the image of this reptile and the turban clad Indian snake charmer playing his flute for the amazed crowd as the large hooded snake rises and sways to his hypnotic tune. America also has a King Cobra whose strike can be just as deadly. In keeping with the Colt tradition of naming their premium revolvers after snakes, they chose to call this beefy revolver the King Cobra. I’m talking about the Colt King Cobra .357 magnum revolver. Like its namesake - it’s big, weighing in at 2.6 pounds with a 4” barrel. Barrel lengths of 2, 2.5, 4, 6, and 8 inches were also available on models with the matte stainless finish from 1990 to 1992; they returned to the product lineup from 1994-1998. First introduced in 1986, the Colt King Cobra is a medium frame double-action revolver featuring a six round cylinder which was designed and produced by the Colt Manufacturing Company. It was marketed to law enforcement agencies, individual officers, and civilian firearms enthusiasts. Available in blued and stainless steel finishes in a variety of barrel lengths and chambered for center fire .357 Magnum ammunition, the King Cobra can also fire the .357's precursor, the .38 Special cartridge. Back in the 90’s I traded my stainless 4” Python for a Glock 21 and I was suffering some buyer’s remorse over the trade. While the Glock was a great duty weapon, it just wasn’t near as cool as the Colt Python. I was hanging out at the gun shop one day on the deer skin covered couch when UPS delivered the King Cobra. As soon as it was unwrapped and put out in the display case, I had it in my hands. I hefted it to feel it's weight and then I sighted it in on a nearby animal mount and checked it's balance. It felt good in my hand and since I couldn’t afford another Python right then, I decided that the King Cobra was an acceptable replacement. A deal was made and I took it home.


Naturally I had to buy a new duty holster, speed loaders, and a speed loader pouch. I use all Bianchi equipment on my duty gun belt, so I chose a Bianchi high-rise thumb break model and a double Bianchi speed loader case and a pair of Safariland speed loaders. Within a few days I was properly equipped and wore my new Colt King Cobra to work. Within about four hours of sweltering heat during a southeast Texas summer, I quickly found out that the King Cobra is really heavy. I didn’t have to worry about any rust though, because I bought the matte stainless steel version. After about two weeks I began to believe that the Glock 21 was lighter, offered more firepower and was a better fit for my needs. I continued to carry it for a while because I couldn’t get over the cool factor and being the only person in my department to have one was pretty great too. The King Cobra was carried for a season before retiring to the gun safe. It remains there except for an occasional outing and someday will be given to one of the kids. It looks cool, but unless your back is strong enough to carry it or your department mandates a revolver, there are better alternatives for duty wear.

King Cobras came equipped with either oversized walnut target-style or hard rubber black finger-grooved combat-style grips and an enlarged target hammer and trigger. I intended

on carrying mine on duty, so I opted for the hard rubber black grips. The King Cobra's sighting system consists of a fixed iron red insert front sight and a fully adjustable iron white outline rear sight. It also has tapped and threaded scope mounts on the back strap for those so inclined. It was offered in very hi-grade carbon steel with Colt’s signature bright and highly-polished deep royal blue finish. This is the same royal blue finish on the Colt Python and

it’s quite beautiful. I chose the matte stainless steel version because frankly, that’s what I had access to, but there was also a highly polished stainless steel version called the Ultimate Stainless. Of course that did cost more. Face it, pretty guns just cost more. Back then we qualified once every quarter. The PPC style course we fired was double action only and the majority of the rounds were fired at short distances, (15 yards or less). The King Cobra’s double action trigger pull was about eight pounds and I could stack the trigger pull and make it seem like a single action pull on the longer distance aimed shots, (which is something I liked about the Colt). It’s accuracy is quite good, and I had no problem shooting a high 290’s score consistently in the 300 point course. I recently checked my copy of Guns & Prices (2010 edition) and the list prices for the Colt King Cobra, matte stainless, ranges from $400 in very good condition to $975 new in box condition.
