We have the best of both worlds at our fingertips right now. We have all the advancement in technology and access to the knowledge of all of our forefathers. You would think that we could combine the two and create an awesome world. We have both sliced bread and the internet and yet we are suffering through all this negativity and fear like we don’t have any choices in the matter. Knowledge is power. Part of Hosea 4:6 says “My people are destroyed for lack of knowledge, because thou hast rejected knowledge” KJV. I am a very motivated person. I get these ideas and I get EXCITED and I run with them. The bad thing is, I generally get a few miles down the road before I get ANOTHER idea and then I get excited about IT and then I want to abandon first idea, because it was cool but I’ve already done it at that point, and then I run with idea #2 because it is new and exciting. Welcome to adult ADD, never a dull moment here :) So I have had to learn self control and acquire the ability to stand back and examine an idea for feasibility. Still, even though the majority of my ideas get filed away these days due to lack of time and energy, others I still allow myself to enjoy for a bit even though it is too impractical to put into practice. This morning, as I pulled my tenth loaf of bread out of the oven in two days, I thought of how nice and simple life would be if I baked bread for a living out of my home. Think about it. Get up in the morning, knead the risen dough and shape into loaves, place it in pans and allow it to rise while I worked up the dough for the following day’s bread. Hours Continued on page 6.
Is it possible to create a future we can look forward to that’s BETTER than the “good old days”? We have life coaches, personal trainers, self help books, seminars and online classes to help us create good lives for ourselves. Is it possible for us to expand on those ideas and create a virtual utopian society for ourselves and our families to live in? A utopian society is an imagined community or society that possesses highly desirable or nearly perfect qualities. We now know that we create our own world inside our heads. What we think about and dwell on creates the framework for our lives, so why can’t we create our own utopian type society as well? We cannot control the world we live in, but we can control our little corner of it. The peace we have and the love we share is up to each of us and each of our families. We are either contributors to the NEW world we want or just bystanders in the old world everyone is currently complaining about. The next time you feel like complaining about the world, do something about your little piece of it instead. You have the power to change the world just by making your little corner of it BETTER. Use the power you have and encourage your family to stand up and make a difference too!
You do have the power to make a whole NEW world for yourself and your family, don’t miss the opportunity.

GOOD FOOD Continued from page 4. later pull golden loaves out of the oven and turn them out to cool while I washed my loaf pans (my husband will be particularly excited to see this dream - since it includes me washing dishes). Then, once the loaves are cooled I would package them and head out of the house to deliver to all of the people just sitting at home waiting on me to bring them fresh baked bread. Of course, there would have to be a movie soundtrack playing in the background, an upbeat little piano number, and I’d have to be one of those people who never wears makeup, but always looks good (I’m pulling out the serious fiction for myself here). My initial thoughts were that I’d hop on a bicycle to deliver them, but in my head I can’t help but picture this as some sort of an eighties movie and I’m in a mini van wearing mom jeans and a sweater vest over an oxford shirt. I dream big.
~tries to think of a fancy expensive car brand and fails~ Well, a fancy expensive car just doesn’t go along with the happy piano soundtrack and at this point I’m picturing myself looking like more of a Krystle Carrington – because I can’t imagine this invisible rich man having the good sense to appreciate a woman in mom jeans and a sweater vest – and then I can’t imagine Krystle Carrington baking bread. Popped that dream bubble real quick. So in lieu of me riding a bicycle and devoting my life to bad eighties fashion and flour acquisition, I’m just gonna share this bread recipe with you and let you make it on your own. I’ve seen recipes for bread like this all over the internet and several months back I made it for the first time, loved it, made it two or three more times, loved it again, and then forgot about it. How often do you do that with a recipe? I never considered posting it because it had been on someone else’s food blog and I know firsthand how much it costs to run a blog so the last thing I want to do is post someone else’s recipe and take away the traffic that helps them pay the light bill. So I never intended to share this delicious bread with you because other folks had shared it elsewhere….then I got my issue of Grit magazine and saw the bread again in there.

Instructions: 1. In large mixing bowl combine flour, salt, and yeast. Stir together until well mixed. Add water and stir until a sticky dough forms and there are no dry patches. Cover with plastic wrap or an airtight lid and place in a warm place to rise 12-18 hours. 2. Turn risen bread out onto a floured surface and dust with more flour. Cover with cling wrap and then a dish towel and allow to rise for another two hours. 3. Thirty minutes before bread is finishes rising, preheat oven to 475 and place cast iron dutch oven, lid and all, into oven to preheat for thirty minutes. 4. LOCAL Kitchen Table CHATTER Have you been to the Randall’s in Galveston lately? If you haven’t, you are in for a breath of fresh air! We have not been there in years because we don’t live on the island or frequent it as much as we did when we were younger, but we will be back. We went one evening on our way home and buying groceries there is awesome! Really. It was quiet and clean, but what made it so nice was that every single employee was so polite I thought I had stepped back in time. Even the conversations I overheard other people having were polite. How Can We FIX America? By Electing People Who Have Our Values 1. We have to elect people who have integrity, there is no other way to fix it. They don’t put everything on a ballot for us to vote for or against. We elect them to speak for us. If they have to call us to make every decision, we might as well go do the job ourselves. So we have to elect people who have our values.

2. Keep in touch by showing up at their offices, calling, writing, emailing, Facebooking and becoming squeaky wheels. They only listen to the ones who are telling them what they want done. The majority of people do not contact them therefore no legislation gets passed that benefits the majority. Only those who speak get listened to.
4. Stop voting for the lesser of the two evils. Find someone you can feel good about voting for and if theye lose, so be it. YOU did what you could to help turn the tide. And tell your friends to too! If you keep doing the same thing and expecting it to fix anything, you will be disappointed.

MORE GOOD STUFF Every little boy of my generation wanted to be a cowboy. I was able to get pretty close because my parents believed that kids should have horses to attend to and deal with daily. We had barrel horses, roping horses, trail ride horses, and even one race horse, but nary a cow on the place. How could I be a real cowboy with no cattle to drive? I grew up watching TV trail boss Gil Favor and Rowdy Yates drive thousands of Longhorns across raging rivers, arid deserts and Indian infested prairies weekly on Rawhide, so I just knew I could do it. I'd sit on our old roping mare and swing a loop at the family dog. I was pretending he was a stray doggie that I was dragging out of a gulch to get him back to the herd. This was all great fun until I actually caught him one day and the old mare drug him from one end of the roping arena to the other while he was yelping in pain. All I'll say about now is that it was a bad day at black rock for my behind after that. McMurtry TV mini-series called Lonesome Dove. I was afire with a burning desire to drive cattle up north again. The wife drug home this magazine last week and said we should think about knocking that desire off of my bucket list. I looked at the glossy cover with Cowboy emblazoned across the top and I thought it was hunting magazine. I was confused. It looked like the paint horse was carrying a big set on critter horns (elk I believe) and my interest wasn't piqued much. I put it in the reading room beside the big white reading chair to peruse later. Now that I’ve had a chance to read it - I believe she’s right, I'm not too old to do it. The wife is looking for a family vacation that we can take everyone on, our grown kids, their spouses and our grandson. It sounds like it might be a good thing because all my family rides horses (or used to)like they were born mounted. Based on the articles it appears that they do some things a little different up north than we do here in the Lone Star state, but I'm sure we can make ourselves into top hands in no time. More laws are not the answer, better solutions are needed. Someone has complained about too much manure in town and City Hall is attempting to fix the problem. Their solution is to pass an ordinance limiting the number of animals you can have on your property inside the city limits. Here’s the problem - most people move to rural areas because they love animals and manure doesn’t bother them much, because it’s just part of the package. City Hall is not trying to hide anything... as some have said. They are doing what government does - they are attempting to fix the problems of the few people who are upset and complaining. In doing so they are pleasing a few people and taking away the rights of the majority of people who live in the city with animals. If we don’t like it - we need to tell them so.
Let ’s respectfully ask our city officials to find a better solution to this problem and help them serve us better. See the bigger picture on page 16.
