Working with Reed Interiors, a traditionalist goes against the grain and discovers her dream modern kitchen

LAIRE DESCRIBES HERSELF AS SOMETHING OF A TRADITIONALIST, so when she and her husband, Mark, thought about sprucing up their kitchen, which Claire describes as “needing some TLC,” she wasn’t envisioning the gleaming, highly functioning modern marvel of a kitchen they have now. But then one day she was shopping for flooring at Reed Interiors in Carpinteria and saw the showcase kitchen that was being built to spotlight Reed’s new kitchen-design division. Spearheaded by Michel Clair, who had recently arrived in the U.S. after 25 years of designing in France, the new arm of the company takes its cue from the exciting European trend of reworking outdated interiors of historic buildings to embrace contemporary design and functionality. “I fell in love with that kitchen,” Claire recalls. “I saw the Armony cabinets, with their clean lines and beautiful glossy finish, and had to have them.” And so Claire, who liked modern design but could not see how to incorporate it without a room becoming cold or austere, found herself jettisoning the traditional in favor of the sleek, the clean, the contemporary. But she and Mark still had doubts. “We wondered if it would be too modern,” Claire recalls. “I needed an expert, and in Michel Clair and [Reed owners] Romain and Myriam Doussineau, I found them. The lines are cleaner now. The room is more open and wonderful to cook in. This kitchen fits the house, and everyone who sees it loves it.” The job was completed without removing any of the now-white walls, which nearly match the bone-colored lacquer cabinets that line one wall and support the island, which contains a 1.5-size Wolf oven and an 8-burner stovetop. to keep every utensil, pot and pan in place. Recessed ceiling lighting is supplemented by additional lighting, such as that in the brushed stainless steel hood, which is suspended from the ceiling by four steel rods. All the cabinets have brushed stainless steel counter tops, corner bumpers, backsplashes and kick plates. A dark-brown plank floor from Reed provides a striking contrast and links the kitchen to the rest of the house. At one end of the kitchen, warm, knotty-oak cabinetry hides a gaggle of Gaggenau chilling devices: a refrigerator, a freezer and a wine cooler. A rectangular knotty-oak dining counter fronted by black-cushioned stools defines the kitchen’s boundary at the other end of the room. “I like a cool, simple aesthetic, and I don’t like clutter,” says Claire. “So I said just go. Downey’s: 30 Years of Farm-to-Table Fare In Santa Barbara, the origins of the burgeoning farm-to-table movement date back not five or ten years, but more than thirty, to 1982, when John Downey opened his eponymous State Street restaurant. He soon became the first local chef to put the name of a farm - that of organic pioneer Tom Shepherd - on his menu, and Downey still scours the farmers markets seeking produce and inspiration for his daily-changing carte. “In the early days, there were only a few farmers and not a great variety, but now you can get practically anything grown in the universe,” he says. With fall approaching, the British chef, who has cooked for Queen Elizabeth and was mentored by James Beard, will be turning those unparalleled ingredients into fantastically comforting food prepared with care, precision and enthusiasm. Lobster ragout, available only for a few weeks in winter, features fresh-lobster stock, chunks of lobster, chanterelle mushrooms, smoked bacon, flageolets or other beans, tomatoes, leeks and white sea bass or other fish. Whale Watching Gray, Blue and Humpback Whales all migrate through the Santa Barbara Channel, breaching, spy hopping and spouting as they make their way up and down the coast. Take a Hike Santa Barbara's close proximity to the Santa Ynez Mountain Range makes for some great hiking opportunities. The most popular trails are found in the front country. Try a local favorite, Inspiration Point via Jesusita Trail. At around 2.5 miles round trip, this hike is doable for most hikers and rewards with one of the most stunning views of the city and Pacific. Take Tunnel Road all the way to the end parking is limited. The trail begins on a paved fire road and at the end of this road, head straight up the dirt road. T’S HARD TO MISS A JEFF SHELTON–DESIGNED BUILDING. IN A WORLD OF CAREFULLY ALIGNED CONFORMITY, HIS BUILDINGS ARE THE ONES DOING THE LIMBO TO A CASCADE OF SLIGHTLY BENT JAZZ NOTES. THEY CAN SEEM TO TILT OR CAREEN. THEY WINK, BREAK RULES AND DEFY EXPECTATIONS AT EVERY TURN. THEY ARE TREASURE TROVES OF ARTFUL SURPRISES.

His newest downtown project, El Jardin, fits right

in, with one foot rooted firmly in the classic Spanish vernacular that informs much of Shelton’s work, while the other dances through a Carnival street wearing yellow foam shoes and a checkered blue suit. The mixed-use Garden Street property has a ground-floor garage, a first level of commercial space and a residence that includes two interior levels plus a rooftop deck with a hot tub, a fire pit, a dining area and an outdoor kitchen. An elevator services all levels. Likes its predecessors, this Shelton building wants its owners to have fun. “I like them to have a little bit of life, a little bit of humor and enjoyment, a little bit of celebration,” he says of the 50 or 60 buildings he has designed in Santa Barbara. By now, Shelton has heard people refer to all of the references they think they see in his work - Gaudí, Dalí, Dr. Seuss. “I love Gaudí, I love Dr. Seuss, I love sand castles,” he says, adding that other influences include Rube Goldberg and MC Escher. “And everything does droop a little bit. There’s a little bit of melting.”

The distinctive look of Shelton’s buildings is born in his own mind, but the execution he credits to his collaborators, a core group of artists and craftsmen he hires for every project. Among them are contractor Dan Upton, glass blower Saul Alcaraz of Santa Barbara Art Glass, iron worker (and brother) Dave Shelton, woodworker David Moseley, and sculptor Andy Johnson. The signature plaster work that gives his buildings their “droop” is created by a group of plasterers who have mastered Shelton’s preferred irregular surfaces and wiggly vertical edges where walls meet while embracing his general opposition to straight lines and right angles in the plaster realm. There are many plasteriffic touches here. Some exterior walls have groupings

“We have a shared language,” Shelton says of his crew. “A common denominator is that they’re all artists and artisans, and I get to spend my day with them. We get into messes together and solve them together and end up with something where we can say ‘Look at that detail!’”

of 24-inch-long perforations shaped like lazy exclamation points, while yellow-orange Spanish style caps top the walls. At roof level, a plaster clock tower fronting the street is topped by one of Andy Johnson’s modern gargoyles. The cartoonish face grins broadly while pointing at the clock dial below, the numbers of which are wildly out of sequence and don’t lay on the face, but stand straight out from it.

“Why make plaster perfectly straight?” Shelton asks rhetorically. “That’s for steel. Plaster is plastic and has hands on it. You should be able to see that.” As a lover of Spanish vernacular architecture who also believes it should be made new, Shelton uses a lot of his brother’s wrought iron, often in light fixtures that include blown-glass from Saul Alcaraz, whose chile-pepper-shaped sconces are everywhere. The wrought iron for this building appears in details that call to mind the bulbous, globular forms of spilled viscous liquid or the morphing blobs in a lava lamp. They show up as footings along several stairways, which have wavy wrought iron railings that suggest black ribbons rippling in a breeze. Off the kitchen, the globules appear as part of a vertigo-inducing balcony treatment. Each of four doors leads to a cantilevered wrought-iron container that fits about two people comfortably and vaguely resembles the basket on the cherry pickers used by utility-line workers. The circular “wall” of the bucket consists of closely spaced, not-quite-vertical wrought-iron rods (echoed elsewhere as stairway balasters), and those in turn are topped by the black globule-shaped iron railings, each supporting a brightly colored flower pot from California Art Pottery, another regular Shelton supplier. Tiles of Shelton’s own design - hand-drawn, often during plane flights - are another through line of his work, and they are on vibrant display in El Jardin. An entire 20-foottall front-facing exterior wall is covered with blue-and-white rose-motif tiles, and the top edge of many windows is adorned with tile work that does trompe l’oeil duty, appearing to be a rolled-up awning. A street-level front door is framed by tiles having an assortment of circular motifs that could represent dishes, flying saucers, fish eyes or stylized blood platelets. Stairway risers are tiled, and the traditional Spanish red-tile

living-room floor is adorned by a pair of tile “rugs.” Whether grunion, stars, abstract geometrics or squiggles, Shelton’s designs are always asymmetrical; the tiles line up no matter which way they are oriented to each other, but the design never repeats. As if coming to terms with his own pursuit of architectural punch lines weren’t enough of a challenge, in this building he also had to incorporate more than 200 design dictates issued by the owner’s Feng Shui expert. The entrance, for instance, had to be positioned exactly in the center of the house, and the back door ended up being, well, in the front. But maybe that’s the perfect touch for a house designed by the man who never saw a design “rule” he didn’t want to tweak just a little.

RED LENTIL SOUP PREP TIME 45 MINUTES • SERVES 6-8

INGREDIENTS 1 1/2 Tbsp olive oil 1 medium onion, finely chopped 2 carrots, finely chopped 3 stalks celery, finely chopped 2 garlic cloves, finely minced 1/2 tsp cumin 1/2 tsp red chili flakes 1 tsp turmeric 1 tsp smoked paprika 1 tsp pink Himalayan sea salt 1/2 tsp black pepper 1 cup chopped tomatoes (use canned if not in season) 1 cup red lentils, rinsed and picked through for stones 1/4 cup fresh cilantro, chopped (you may sub Italian parsley if you’re not a cilantro fan) 6 cups veggie or chicken stock • Heat oil in a large stockpot over medium heat. Add onion and cook until softened. • Add carrots, celery, garlic, chili flakes, cumin, turmeric, paprika salt, and pepper. • Cook for 5 minutes and continue to stir. • Add tomatoes, lentils, cilantro and stock. • Bring to a boil, then reduce heat to low and simmer, covered, until lentils are soft, about 30 minutes. • Garnish with cilantro sprigs & serve.

SPIKED HORCHATA PREP TIME: OVERNIGHT PROCESS, MAKE A DAY AHEAD • SERVES 8-10

INGREDIENTS 1 cup dry white rice • 11 cinnamon sticks (1 for horchata recipe, 10 for garnish) 2⁄3 cups blanched & roasted almonds • 8 cups water (split into batches) • 1 Tbsp vanilla 3/4 cup sugar PLUS 1/4 cup boiling water • 1 package of cheesecloth • 8-10 shots of white rum • Combine rice and 1 cinnamon stick in a blender or spice grinder and pulverize into a fine powder. The finer the powder the better the horchata. Put in large bowl. • Put almonds into the blender/spice grinder and do the same thing. Make sure not to let the almonds turn into almond butter. Pulverize until they are powdery. Add into bowl with rice/cinnamon combo. • Add 6 cups of hot water, mix with wire whisk, cover and let stand overnight at room temperature. • The next day, transfer half of mixture into blender and add 1 additional cup of cold water. Blend well, pour into new large bowl, set aside. • Add the second half batch into blender and repeat. It’s critical to blend all the lumps out. Add second batch to large bowl. • Get yet another bowl or pot and pour mixture through a fine sieve lined with cheesecloth, using fresh cheesecloth every time. Repeat this process 4 times for optimal smooth horchata. • Once horchata is strained, add vanilla and whisk by hand until completely blended. • In a large measuring cup, dissolve sugar into boiling water to make into simple syrup, let cool and mix into horchata. • Fill a highball glass with crushed ice, add 1 shot of rum, and pour in 6-8 oz. of horchata, mix with cinnamon stick, grate fresh cinnamon on top. Cocktail Culture We asked Jeremy Bohrer, mixologist, self-proclaimed bar geek and owner of Still, the retail space for elevating your ethanol, to offer up the perfect fall cocktail. The result is an artisanal play on one of his favorite drinks, The Boulevardier, created in 1927 by Harry McElhone, the founder and proprietor of Harry’s New York Bar in Paris. The tasty concoction, found in the epilogue of McElhone’s book Barflies and Cocktails, was inspired by regular customer, Erskine Gwynne, a wealthy young American lad who flitted off to Paris to start a literary magazine, which was of course, titled The Boulevardier. Jeremy’s take on it includes a little cranberry shrub to infuse an aromatic fall/winter vibe and Bittermen’s Orange Cream Citrate to finish it off with a bit of acid. Cheers and without further ado…
