What's in a Name Alma translates as soul and suggests heart, as well. Fina means fine and refers to quality and care, while fondas are small family-run restaurants in Mexico serving homemade food. Here, they add up to sophisticated, soulful Mexican food in SB.
Ceviche Done Differently Velazquez uses citrus not to “cook” his ceviche, but “express marinate” as it's done in Peru and Japan. He cleans sushi-grade fish and air-dries it very cold overnight. The bones become broth for other dishes.
Menu Mix The menu includes soups, sushi-grade fish crudo and oyster, steaks cooked carne asada style, fish specials, chicharrones (pork belly slowly braised with sugar, salt, and star anise, then pan seared to a crispy finish) and, of course, tacos.

Renaud Gonthier is clear about his raison d’être, the true north informing his production of phenomenally delicious cakes, tarts, eclairs, croissants, macarons, plus fine savory breakfast and lunch dishes at his three bistros and one bakery in Santa Barbara. It is simple: he wants to spread joy.
“We want to make people happy,” he says. “We want to give them a nice break from their day, in a setting that encourages them to enjoy each other and experience French pastries made with patience, care and love. We want this to be a joyful and social place.”
More joy is coming. Having recently occupied the space adjacent to the flagship store in Loreto Plaza, Renaud’s is expanding The new, larger space will have a fresh look, with timeless touches such as bistro chairs and Carerra marble round tables. (“The more nicked they get from use, the warmer they seem to feel,” Gontier says.) A big window will enable customers to see croissants and other pastries being made.
Recently, Gonthier added a new Charlotte to the display case. Production of the first batch took three days—and will for every batch. Day one: make the sponge cake. Day two: make the fresh raspberry jam from scratch (filling the kitchen with the heady scent of boiling berries). Day three: “build” the little layer cakes. Oh, yes, the final step: deliver the joy.

Perched high above the city with views to the Channel Islands, the partially open-air dining room feels at once elegant and remote—far removed from the everyday, yet effusing intimacy, friendliness and warmth that make the experience thoroughly and sweetly inviting.
Details matter here. From the welcoming guitarist on the walkway to the entire restaurant serving staff, everything is easy, relaxed and perfectly professional. You feel cared for. Mini LED flashlights on your table make menu reading easy after dark. And when your server sautés a mushroom reduction sauce tableside for your perfectly cooked steak Diane, a tiny light on a nearly invisible fixture ensures that the preparation is fully visible. You might start your “vacation” indulgently with Royal Osetra caviar served with minced egg whites, egg yolks, chives, creme fraîche and featherlight buckwheat blini. Or, perhaps, some famous Santa Barbara sea urchin accompanied by celery leaf salsa verde and Meyer lemon. His diverse interests have enriched his life and informed his art, blending original and traditional techniques with a quest for technical mastery.
SHERRI BELASSEN credits her inspiration in design and composition to flights she took with her father in their twoseater airplane growing up. The patterns, shapes and colors of the landscape seen from the sky formed the artistic style later reflected in her work. Her technique is distinguished by extensive underpainting, layering and surface scratching, creating a tactile history.
KAREN SIMON works with a combination of acrylic, gouache, ink, and thread. She begins with a piece of unstretched canvas, painting washes of color that stain and bleed across the canvas in loose forms. Karen then brings out the details in each image with embroidered thread, often leaving long strings loose and floating across the canvas.
GREG MILLER , a contemporary artist hailing from California, draws inspiration from the rich tapestry of cultural and geographic influences that shape his artistic vision. His work delves into the complexities of urban existence, seeking to convey a distinctly urban experience through the interplay of paint and collage. ACULTURED Coast TAKE A HIKE
Santa Barbara's proximity to the Santa Ynez Mountain Range provides some great hiking options. The most popular trails are found in the front country, and Inspiration Point, via Jesusita Trail, is at the top of our list. At around 2.5 miles round trip, this hike is doable for most hikers and rewards with stunning views of the city and Pacific Ocean. Directions: Take Tunnel Road all the way to the end, where the trail begins on a paved fire road. At the end of the paved road, head straight up the dirt path. Earthy Orecchiette
by Chef Ayda RobanaThis springtime pasta dish serves up out-of-this-world flavors with kale pesto, charred broccolini, crunchy roasted hazelnuts and salty ricotta salata.
Kale Pesto
1 head dino kale, washed and stemmed
2 cloves garlic
2 cups basil leaves, stemmed
½ a preserved lemon, seeded
Juice of 1 lemon
½ teaspoon kosher salt
1 cup freshly grated pecorino romano
¾ cup of good-quality olive oil
Bring 6 cups of generously salted water to a boil in a large pot. Blanch the kale in the boiling water for 60 seconds until wilted and bright green. Rinse in cold water and squeeze out any excess water. Coarsely chop the kale and add it to the food processor with the garlic and basil leaves. Pulse in the food processor until roughly chopped. Add the preserved lemon (use both the skin and the flesh), lemon juice, kosher salt and pecorino romano. Pulse again until mixed. Then, process fully as you drizzle olive oil in through the feed tube until all the ingredients are well combined.
Pasta
Cook 1 package of orecchiette in salted water. I typically cook the pasta for 1-2 minutes less than the package instructions to ensure it’s al dente. Drain the pasta, but reserve up to 1/3 cup of the pasta water to add to your sauce. Add the pesto to the drained pasta. Stir in some of the pasta water as needed for texture. Add salt to taste.
How to brown butter
Put butter in a medium hot pan until the solid butter particles turn golden brown and there's a slight nutty smell (usually about 2-3 minutes for this quantity)
Broccolini
1 bunch of broccolini
Juice of ½ a lemon
1 tablespoon olive oil
Pinch of salt
1 lemon, halved
Season the broccolini with lemon juice, olive oil, and salt, then char on a hot grill (typically around 3-4 minutes) until it is wilted. Add two lemon halves to the grill and cook until grill marks appear on the flesh.
Brown Butter Toasted Hazelnuts
½ cup hazelnuts
1 tablespoon butter
Spread the hazelnuts in a single layer on a rimmed baking sheet and place in a preheated 350 degree oven. Stir several times for about ten to fifteen minutes until they are golden brown. Let them cool a bit then rub the skins off, roughly chop, and set aside. Take 1 tablespoon butter and brown it in a pan. Then add the chopped hazelnuts and brown the mixture a little more. Set aside.
Assembly
In a shallow bowl, start with a bed of broccolini. Lay the pasta on top. Garnish with shaved ricotta salata, toasted hazelnuts and a sprinkling of red chili flakes. Serve with half a grilled lemon.
